I love everything about summer – the heat, the beach, the long days and the balmy nights. Most of all, I love the holiday vibe. For many of us, life slows down as we make the mental shift to relaxation. This summer, I plan to make the conscious effort to put the phone away and reconnect with friends and loved ones. Instead of looking at Facebook and Instagram, I hope to get up close and personal with the faces I know and love. Of course, the familiar faces in my life include my fur pal, Bond. My gorgeous Moodle doesn’t care what I am doing, what I am wearing or whether I have lipstick on my teeth. He can’t send me messages on Facebook and Instgram, but he is the one who is always by my side. As anyone with a pampered pooch knows, dogs teach us a lot of things but none more important than to love unconditionally. Speaking of puppy love, our cover girl is crazy about her Jack Russell Terrier, Pippi. Earlier this year, Academy Award winner Jennifer Lawrence reportedly took Pippi along as her date to a music gala in New York. Check out the photography of J-Law in her latest Dior campaign. I am sure you will agree that it is as jawdropping as her performances on the silver screen. Our summer issue is all about self-love. We reveal the tips to getting a good night’s sleep, as well as showcasing the latest looks in sleepwear. Do you find that the stress of modern life seems overwhelming sometimes? Our meditation expert, Tiffany Jackson, urges you to give meditation a go. While we’re on the wellness wagon, I’ve just discovered that one of my favourite desserts is actually good for me and costs less than a McDonald’s soft serve. Thanks to Sarah Wilson, the founder of the I Quit Sugar Movement, we can now whip up a choc top ice-cream using a frozen banana, melted coconut and a teaspoon of raw cacao powder. Oscar-winning actress Jennifer Lawrence, or J-Law as we’ve come to know her, has come a long way since her humble beginnings. The 28-year-old grew up on a horse farm in Louisville, Kentucky, where her parents raised unbroken stallions because they were cheaper. When she was a toddler, Lawrence was hit by a car and later injured her tailbone after being thrown from a horse. Neither incident warranted a trip to the doctor’s office because, as Lawrence told Jimmy Kimmel Live, her parents didn’t believe in seeking medical treatment. Lawrence has two older brothers, Ben and Blaine, and her mother Karen raised her to be “tough” like them. Karen did not allow her daughter to have many play dates with other girls in preschool as she deemed her “too rough” with them. Her wardrobe used to be comprised of her brothers unwanted clothes and whatever Karen would find at garage sales. Now the face of Dior, Lawrence

The first Dior collection I attended by Raf Simons blew me away.” During her childhood, Lawrence performed in church plays and school musicals. At 14, Lawrence dropped out of middle school never went back to finish school. She achieved wider recognition for starring as the mutant Mystique in X-Men: First Class (2011). Lawrence’s fame continued to grow with her starring role as Katniss Everdeen in the Hunger Games film series (2012–2015), which established her as the highest-grossing action heroine of all time. Emotional Eating Food vs Feelings Tips on how to Develop a Healthy Relationship with Food If you reach for the Tim Tams every time you feel like a pick-me-up, you’re not alone. Emotional eating affects people of all ages and is one of the key factors in weight gain. Understanding the triggers can help overcome the problem, as clinical nutritionist Jessica Sepel explains. How do you define emotional eating or stress eating? I can only speak from personal experience as I’m not professionally trained in the field of psychology around emotional eating. For me, emotional eating means rewarding and punishing yourself with food based on your emotions. If you turn to food as a form of comfort when you’re sad, lonely, happy or anxious, that’s a form of emotional eating. Often, emotional eating is caused as a reaction from limiting your food intake or depriving yourself. Have you ever been an emotional eater? Yes, absolutely. Those who are familiar with JSHealth (nutrition app) will know that it started as a way for me to document my troubled past with food. For 10 years, I had an unstable, damaging and extreme relationship with food. I was obsessed with my body image and was constantly critiquing and putting myself down. This led to restricting my food intake, leading my body to the point of extreme hunger and then rebelling by bingeing. This caused a vicious, recurring cycle that continued well after my teenage years. When I started studying nutrition at university, I finally realised the damage I had been inflicting on my body. I realised that instead of feeling hateful for my body, it was time that I started feeling grateful for how hard my body works for me every day. This shift in my mindset was the catalyst for starting

Why do people become emotional eaters?

In my personal experience, emotional eating is rarely about the food we’re eating. It’s usually a response to deeper underlying feelings that haven’t been explored. To free ourselves from emotional eating, we need to first understand the behavioural causes behind it. From that place, we can empower ourselves with the knowledge to begin the healing process. Mindful eating is a practice that’s centred in the science of mindfulness, which is essentially being aware of the present moment. When we’re not thinking of the past or worrying about the future, we’re able to be present in the here and now. That’s key for making healthier food and lifestyle choices in our everyday lives. I have documented several steps to mindful eating that include tuning into how you’re feeling, practising deep belly breathing, removing judgement around the food you’re going to eat, putting down your phone, switching off devices, considering what you feel like eating and making mealtimes a pleasurable experience. We’re placing too much stress and pressure on our bodies. It’s time to slow down, tune in and consider what our bodies really need to thrive. Are you able to recommend any healthy and fulfilling pantry or fridge staples that busy people can grab rather than going for the Tim Tams? It’s important to follow a balanced, wholefood diet that’s rich in fibre, good fats, protein and complex carbohydrates. This will help to keep your blood sugar levels stable throughout the day and prevent you from experiencing the ‘slump’ that will have you reaching for the nearest chocolate bar. That said, some of my favourite snacks include: Overnight chia pudding; Greek yoghurt mixed with protein powder, cinnamon and berries. (You can also put this in the freezer for 10 minutes to make your own healthy frozen yoghurt); handful of mixed nuts and seeds; almond butter smeared on green apple slices; dark chocolate and almonds. OF SLEEP AND HOW TO GET

By Natasha Martin A vital part of being human is enjoying the regenerative powers of sleep that give you renewed energy each day. Unfortunately getting to sleep or staying asleep is not as easy as it should be for some. Typically, we need at least seven hours of quality sleep each night to amply rest and regenerate our bodies and prevent cell damage. Quality sleep helps to promote a good mood and concentration throughout the day and assists us to maintain a healthy weight. Not sleeping well increases insulin resistance and has us reaching for carbs just to maintain our energy levels. People who don’t sleep well often find it hard to lose weight. Stress has always been the number one enemy to a good night’s sleep. Chronic stress impacts all hormonal cycles and can result in a sleep/wake cycle that is the opposite to what it should be. This is often the case in so-called ‘adrenally-stressed’ patients who ironically need more rest to recover from stress, but struggle obtain a decent night’s sleep. Sitting on a computer or device that emits blue light at night after 8pm is a big no-no as this adversely affects the production of the sleep hormone, melatonin. Melatonin is produced from the pineal gland at night when it is dark so excessive light later in the evening can disrupt natural melatonin secretion and keep us awake for longer. People who are largely inactive are missing out on the many benefits of exercise including its regulatory effect on hormone secretion that can help promote quality sleep. Those having caffeine late in the day may have delayed sleep onset. Some people are genetically fast caffeine metabolisers while others are slow caffeine metabolisers. The latter should have no caffeine after midday or risk a restless sleep. Chinese medicine charts the liver as being the most active in its detoxification processes between 1am and 3am. Interestingly, those who consume excess alcohol often experience restlessness between these times as the liver is put under more pressure to detoxify. As mentioned, a critical factor for a good night’s sleep is ample periods of darkness as this lets the body know it is time to sleep but it is also important to be exposed to natural

light during the day as it aids in the production of melatonin at night once the lights go out. Studies show that internal lighting such as fluorescent lights don’t have the same brightness intensity as natural daylight so those who are not exposed to natural light during the day could have sub-optimal melatonin levels. For office workers, going outside for a lunch break is a good way to get extra light exposure. As we age, melatonin levels decline which is believed to contribute to a general deterioration of health in the elderly. As well as promoting sleep, melatonin provides a host of other benefits such as antiinflammatory, antioxidant and immune support. As a potent antioxidant, it has even been used in supplement form as an adjunct in diseases such as cancer to help prevent further cell damage and tumour progression. What you can do naturally to help support a healthy sleep pattern •

Go to bed at the same time each night to establish a regular sleeping pattern.

Try to be in bed by 10pm – the earlier the better as it is thought that the most restorative sleep cycles occur before 2am.

Avoid caffeinated drinks late in the day and try to keep alcohol intake low.

Deep breathing, relaxation tapes and reading with a muted yellow bedside light can help make us more relaxed and induce sleep.

Avoid devices emitting blue light. If you find yourself using your device regularly at night, you can download an app, such as Twilight or Lux, to cut down on the blue light emitting from screen.

It’s a brilliant backdrop to run a global business because you can return and immediately unwind. After working in cities like London and New York and Madrid over the past five years, to return to the Gold Coast fresh air, blue skies and the coastal lifestyle is second to none. How did you get into the event business? I was lucky that at a young age, I knew exactly where I wanted to take my career. After completing a sports science degree, I realised I wanted to be in the business of sports and entertainment so I moved to the USA and acquired a Masters in Sports Administration and Marketing from Ohio University. After that I returned to the Gold Coast and landed a job with IMG. What do you love about your job? I love the diversity, the pressure and the creativity I can bring. What career achievement are you proudest of? Producing the Rolling Stones Exhibition (being held in Sydney until February 3). Working alongside Mick Jagger and Keith Richards over two years, designing a stunning world-class exhibition on their amazing career and unlocking their private archives was a real once-in-alifetime experience. He parked up in Sinatra’s manager’s office for five days to land a meeting with his manager and Sinatra. Through his perseverance he landed the meeting with Sinatra and did the deal to bring Sinatra back to Australia. What is your favourite room in your house? Why? The library. It’s a great little hideaway nook and the perfect winter spot. I still haven’t read half the books in there but my goal is more time to myself in 2019 so here’s hoping! What is your “go-to” quick family meal on a weeknight? Fish and salad – boring but it’s healthy and easy. Is Tony handy in the kitchen? I’m so lucky that he is! Tony loves to cook and throw dinner parties as much as I do. If you could invite three celebrities to a BBQ, who would they be and why? The current Dalai Lama, JFK and Mick Jagger. I think the three of them together would spark fascinating and deep conversations.

How do you achieve a work-life balance? Balance being the key word here – with the optimum achievement of finding guiltfree balance because balance implies that you carve time out for yourself (enter mothers’ guilt). I think the key to balance as a working mother is that you must carve out time for yourself, get comfortable with handing over a degree of control, asking for help, and then trusting people. I am fortunate to have built a great support network to assist with the daily ‘balance juggle’, plus an amazing and supportive husband. You’re supportive of women in business. Do you think women can have it all? 100 percent women can have it all, just like men. “Having it all” means something different to everybody. I think the reason some women think that they can’t have it all – for example, a successful career, children and a family, comes down to a confidence thing and believing in yourself. THE BENEFITS OF MEDITATION AND HOW TO START A DAILY HABIT By Tiffany Jackson In today’s fast paced, ever-changing society we are caught up in constant activity and trying to tick off our to-do list before we have even finished writing it. We are hyperscheduling our lives and our children’s lives as we race from appointment to appointment, from school to work to activities to the shops. We are managing households, looking after our families, trying to hold jobs – to do them well. At the same time, we are trying to be good mothers, fathers and partners and striving to be a friend that is always there. We are trying to do it all and have it all. Great, why not, but is this sustainable? For most of us, no. How can we maintain the life we are living or better still, how can we enjoy the life we are living?

Fortunately, it is possible to enjoy the chaos we call life but in a controlled, calm and present way. The key is learning to control our minds instead of allowing our minds to control us. The ancient eastern art of meditation relaxes the mind and therefore the body. It releases unwanted stress that affects our nervous system and hence our wellbeing. Do you find that you respond more emotionally than is justified in stressful situations? Facing deadlines at work and the thought of an afternoon in the car taking children to their activities can be overwhelming. Through meditation, you can learn to avoid overreacting and to respond to conflict in a calm, controlled, thought-out way. The advantages of meditation are no secret. Benefits include clearer thinking and improved memory, greater energy, happiness, creativity and intelligence. People also experience enhancements in their careers and relationships, along with reduced stress levels and an improvement in sleep quality. Devotees report relief from depression, anxiety, migraines, phobias, eating issues, obsessive compulsive disorder and pain management. So why meditate? Stress, tension and fatigue build up in the nervous system and this affects our minds, our health and everything we do. Meditation is designed to systematically reduce stress and allows the body to work at its optimum level more regularly. A 15-20-minute meditation session equates to three to four hours of deep rest. Think you don’t have time? Meditation gives you more time. You respond to situations with more clarity and become more efficient. Your thought process isn’t clouded with other thoughts, so productivity increases. TOP 5 TRICKS To build your booty at home By Cat Walker

Booty, butt, derriere, peach or behind – let’s talk about your glutes. Your booty consists of the gluteus minimus, medius and maximus, making it one of the largest muscle groups in the body. The benefits of building strong and powerful glutes run deeper than looking good in a bikini. Your glutes make up a substantial part of your posterior chain, the muscle group responsible for not only posture but overall strength. By building strong glutes, you can help improve posture, as well as athletic performance and decrease the risk of injuries and lower back pain. To train the glutes effectively, try to exercise them at least once to twice a week using mostly compound, multi-joint exercises. These include squats, deadlifts, lunges and hip thrusts. These exercises are called functional movements because they mimic real-life movements, thus creating strength when it comes to moving in day-to-day life. Here are top 5 movements that you can do anywhere, at home or at the gym, to help build strength and volume into the glutes.

GLUTE BRIDGE – Start by lying on your back and bringing your heels in close to your butt so your legs are bent. As you raise your hips up, push through your heels and squeeze your glutes throughout the whole movement. Add a challenge by placing a resistance band around both knees and at the top of the glute bridge push your knees out.

CLAMS – Lying on your side with your feet and knees together, bend your legs so your knees are in line with your torso. Raise one knee up, squeezing the outer glute then slowly return back down. Challenge yourself by adding a resistance band to both legs, placing it just above your knees.

STANDING KICKBACKS – Standing on both feet, squeeze the glute of one leg as you kick it back behind you making sure you do not recruit your lower back or swing through your hips. Make sure you keep your leg slightly straight and aim your heel to the ceiling. For a challenge, add a cable or resistance band to the movement.

SQUAT – The most fundamental and important functional movement there is. The squat is a compound movement which means that you are using more than one muscle group to execute the movement correctly. When done right, the squat can help not only build the booty but also strengthen the legs and core. If you’re looking for a challenge, place a resistance band around the top of your knees or hold a weight.

SINGLE LEG RDL – The singleleg Romanian deadlift is performed by standing on one leg, hingeing at your hips to send your glutes back while bending slightly at your knee as you go down. It is crucial you keep neutral spine alignment and a straight back so if you find your back curving, bend your knees more. Simply touch the ground with the opposite hand of the leg that you are using, then as you stand up squeeze the glute of the leg you are standing on. Once you are stronger you can add resistance by holding a weight.

How mother-of-three Jacqui Drescher lost 56 kilograms Name: Jacqui Drescher Age: 42 Occupation: Prep School Officer, Guardian Angels Primary School, Ashmore Children: 3 – ages 11, 16, 19 Current weight: 95kg Weight when you were at your heaviest: 151kg Current BMI: 32.1 Did you endure bullying as a child? I attended a very small country primary school. When I began high school, going from being one of 30 to one of 900, highlighted my differences. I filled my school lunch breaks with arts and music and avoided social situations by assisting the ladies in the tuckshop. As I approached the senior years of 11 and 12, I lost weight, gained confidence and new friendship circles. It changed my life. How has your weight fluctuated over the years and how did you feel emotionally and physically when you were overweight? My weight has fluctuated since the age of 16. You are open to judgement each time you lose and regain. The losing would bring on newfound confidence, however if things turned bad or I lost the new confidence, my mindless snacking returned, and slowly but surely the weight would return. Every time I lost weight, it came back with a little bit more. When I was overweight 34 SLIM MAGAZINE SUMMER 2018-2019

I felt uncomfortable, beaten and lacked confidence that could only be masked by “personality and a nice face”. That was the common saying amongst family and friends. I was known as the talker, the personality, but never as someone that people would find attractive or even suggest the words of sexy, stunning or feminine. Physically I was always too injured or too sore to participate in normal life. After having three children, simple tasks of fulltime work, running a household and being an active mother was always in the too-hard basket. In my mind I wanted to achieve so much but physically I was struggling to get out of bed. Pain in my back, legs and feet was robbing me of pure happiness. I have been a Gold Coast resident for over 20 years and prior to my weight-loss surgery I had swum at the beach probably five times. As someone who loved the beach, holidays and body boarding as a child, this was sad. What methods did you use to try to lose weight and were they effective? My initial weight-loss at 16 was following a milkshake diet. Then I was in and out of Weight Watchers, gym memberships, shake programs, and even spent a lot of money on personal training. They were all effective in the short term. However, I was never able to continually sustain a result, or I would get so far and there would be a special occasion which would bring the mindless eating back.

Did you experience health problems? My health problems due to my weight worsened as I got older. In my late teen years my knees were bad due to sports injuries and my legs began to develop varicose veins. I also developed Atrial Fibrillation (a type of abnormal heart rhythm) and asthma. I later developed swelling in my legs due to poor circulation, and plantar fascia (inflammation of a thick band of tissue that connects the heel bone to the toes). Prior to surgery the ability to go for a walk was almost in the too-hard basket. A simple walk or day at work would leave me exhausted, out of breath, sore and in pain. When I trained, I was constantly at the osteopath or physio to get relief for lower back issues and feet problems. At your heaviest, what did you weigh and what made you decide to undergo bariatric surgery? I weighed 151kg at my heaviest. My legs were swollen, and my clothes didn’t fit. Working in a job I loved was very hard. I wanted to go to the gym and eat right but I was so beaten by the failures of my previous attempts that even attempting to start again was overwhelming. I was always against bariatric surgery, claiming surely eating right and exercising would be the answer. However, I needed a tool that would get me through the long term, not a quick fix, a change that would give me back the life my mind had always wanted but my body couldn’t deliver.

What type of procedure did you choose? At my consultation, my doctor and I discussed the options available. Due to my high BMI, I was a great candidate for the SIPS procedure (also known as Loop Duodenal Switch). I call it the Gastric Sleeve with a little bit of a kick. As someone who had only ever had a knee operation, the thought of any procedure made me nervous, but I knew this was a decision that had to be made, for me, for my life. When did you have your procedure? 16th January 2017 How did you feel in the weeks and months following the surgery and would you describe your surgery as a success? I adapted to a new way of life in the weeks following the surgery. Food was no longer the centre of the world. My scars soon healed to basically non-existent and my energy began to increase. As the weight dropped, I suddenly found my new passion, op-shopping. As my body was changing quite quickly, transforming from the layers and layers of years of dieting, I was finally wearing the clothes I had wanted to wear. I was able to get through my work day and still have the energy to walk, cook dinner, and even clean. Socially, I gained new confidence as I no longer considered myself as the elephant in the room. My surgery is a success as now my family have become active campers. Instead of sitting on a chair and watching my husband unpack and set up the tent, I am more likely to pitch in and I feel more like an equal in the relationship. What do you say to people who say weight-loss surgery is the “easy way” to lose weight? There is no easy way to lose weight. Weightloss surgery brings with it a commitment to your own health and well-being. The weight-loss has enabled me to chase bigger life goals which had always seemed unachievable.

How has weight-loss surgery changed your life? I feel like a new person. I share my story daily about the decision that I made to save my life and how it has been the positive step forward I needed – to not only increase my energy now but to live a lot longer than the outlook I had as a morbidly obese person. The energy I have now in my career and life makes me able to look at working towards life goals, like gaining my bronze medallion for surf lifesaving. I no longer live every day in pain. I now get out of bed at 4.30am instead of 7.30am. I am organised for my day and I am no longer the bear with an angry head before school. I love to run with my class, play games and be an active school officer. Has it been difficult to adjust to smaller portion sizes and other lifestyle habits? Post-surgery and even during pre-op I became aware of how much of my life was controlled by food. Catching up with friends over coffee and cake, large family dinners, snacks with drinks, and special treats. Now my life is more about active options. I still enjoy cooking and entertaining, but I look for smarter, tastier options. I focus on foods high in protein, low in carbs and high in flavour. I have lost the cravings for overly sweet foods, including takeaway foods. My days of consuming an entire doner kebab or a works burger are over. However, with correct portion control, you can adjust. The dietary outlines make it easy for me to

adapt in any situation. I order entrée meals or share my meal with other friends who have been sleeved. I am also not afraid to ask for a kids’ meal. It is not about missing out; it’s about making choices to feel good. Food does not control me; great company and activity make any social occasion a great event. Are there any people who have inspired you along the way? As I have always been open about my surgery, it makes it easy for friends and colleagues who have questions about my choice for SIPS surgery to come to me privately and ask questions. For many it is a very private journey, but I am hoping that the normality of my choice makes them feel less abnormal. Every single day, every step pre-op and post-surgery is a positive step forward to a lifestyle I could never have imagined. It is a life free from pain and restrictions. Yes, it is a mental struggle, however the strength I have gained has allowed me to deal with many issues which stemmed from the years of being overweight. My active lifestyle and healthy food choices have inspired my younger daughter to be more active and make healthier food choices. In my education studies I wrote a paper on ‘physical literacy’ highlighting the decrease in physical activity in pre-teens. One of the common factors I found was a decrease in an active and healthy lifestyle by parents who are the role models for their pre-teens. I am thankful my weight-loss has enabled me to be a role model to my children, showing the benefits of a happy, healthy and active lifestyle.

Thinking about Weight-Loss Surgery? Here’s what you need to know

T

here are many factors that can affect weight, including genetic makeup, gender, age, diet and physical activity. According to bariatric surgeon Jason Free, “eat less, exercise more” isn’t the answer for weight-loss and saying that obesity is only a matter of willpower is nonsense. “The old-fashioned theory that overweight people eat too much and don’t exercise enough is not true,” he said. “These days we are much more aware of many genetic factors for patients being overweight, which people cannot control.” Science has proven that burning more calories than you consume will result in weight-loss. The trouble is that this only has short-term results. For long-term weight-loss, Dr Free says it simply doesn’t work. “Recent studies demonstrate the difficulty patients have at losing weight with conservative measures,” he said. “For example, the chances of an average person with a BMI of over 40 obtaining a healthy weight for a period of 12 months is about one in 400.” Bariatric surgery is the most effective way to lose excess weight and keep it off in the long-term. It is also called weight-loss surgery or obesity surgery. If a patient with obesity is young, reasonably fit and healthy, Dr Free advises them to first modify their lifestyle and diet, and increase their motivation. However, if the patient has a comorbidity, often bariatric surgery is the first and safest option. “Around a third of bariatric surgery patients suffer from Type-2 diabetes,” Dr Free said. “You don’t want to be trying numerous diets over time only to get organ damage as a complication of Type-2 diabetes.” The earlier a patient who is newly diagnosed with diabetes has a weight-loss operation, the higher their chances are of eliminating the diabetes. For those with a strong family history of diabetes; i.e. a direct relative, or two or more relatives, with being overweight your chances are about 10 to 20 times the average person of getting diabetes. “Many people these days in this situation are having weight-loss surgery to prevent the development of diabetes,” Dr Free said.

“Evidence does demonstrate that people in this category will have a longer life-span than those who don’t undergo weight-loss surgery.” Dr Free’s view backs up a joint statement by the International Diabetes Federation. An IDF Taskforce on Epidemiology and Prevention of Diabetes reported that due to its positive impact on glycaemic (blood sugar) levels, bariatric surgery is an effective treatment for Type-2 diabetes in morbidly obese individuals. Weight-loss reduces insulin resistance in the body, a key component of Type-2 diabetes. People who undergo weight-loss surgery often experience other health benefits, including relief from hypertension, high cholesterol, sleep apnoea and arthritis. In many cases, medical conditions are often eliminated. Apart from the obvious physical benefits of undergoing weight-loss surgery, there are many psychological benefits. The Swedish Obese Subjects (SOS) trial involving 2010 obese patients demonstrated a significant decrease in depression and anxiety after surgery compared to obese controls treated with diet and exercise counselling. A recently published review of the literature also suggests that weight-loss surgery improves self-esteem, self-confidence, mobility, vitality, sexuality and lifestyle. Am I eligible for weight-loss surgery? If your BMI is over 40, or you have a BMI over 35 with associated obesity-related disorders – such as high blood pressure, diabetes, high cholesterol, sleep apnoea and arthritis – the Australian National Health and Medical Research Council recommends you have weight-loss surgery. Some people who have had certain procedures on their gastrointestinal system may be unable to have certain types of weight-loss operations. Before undergoing a bariatric procedure, a patient needs to psychologically understand that weightloss surgery is not a quick fix, but a tool.

The Power of Platelet-Rich Plasma Sport and Exercise Medicine Specialist Dr Ryan Kohler explains how Platelet-Rich Plasma (PRP) is revolutionising the treatment of sports injuries.

Our blood contains many properties that promote healing. When we inject components of our blood, namely platelets, into an area that is causing pain it can stimulate a healing process in damaged or injured tissues. The therapy is often done for people who suffer from tendinopathies, including Achilles, patella, elbow common extensor origin (tennis elbow), elbow common flexor origin (golfer’s elbow) and shoulder rotator cuff. PRP can also relieve osteoarthritis of the knee, hip, shoulder, ankle, elbow and wrist, along with acute and chronic muscle strain injuries, acute joint injuries and joint osteochondral injuries. Dr Ryan Kohler said clinical studies had shown that PRP was an effective therapy and could prevent or delay joint replacement. “Blood contains plasma, red blood cells, white blood cells and platelets,” he said. “Platelets are small discoid cells with a life span of about 7-10 days. Platelets contain clotting and growth factors. During the healing process, the platelets are activated and aggregate together. They then release the granules which contain growth factors which stimulate the inflammatory cascade and healing process.” Dr Kohler explained that blood typically contains 6 percent platelets, while PRP has a significantly increased supraphysiological platelet concentration. Although this level can vary depending on the method of extraction and equipment, studies have shown that clinical benefit can be obtained if the PRP used has an increased platelet concentration of four times greater than normal blood. 40 SLIM MAGAZINE SUMMER 2018-2019

However, Dr Kohler warned people to be careful as not all practitioners deliver the correct PRP concentration to give you a successful treatment outcome. He advised patients to “think outside the square” when considering treatment options for pain and injuries. “Sport and exercise physicians have experience looking after elite athletes as well as exercising individuals at recreational level – the so-called ‘weekend warriors’,” he said. “Many of our patients get injured and go straight to the physiotherapist without getting an accurate diagnosis from a sports physician. This can lead to time loss and frustration. Our diagnostic and treatment skills include diagnostic ultrasound and ultrasound-guided injection treatments, which include PRP, cortisone, prolotherapy, Botox and others, all of which are selected and customised to the presenting condition that the person has.” Dr Kohler worked at the Australian Institute of Sport (AIS) in Canberra from 2010 to 2015 and set up a dedicated concussion programme for all Australian Olympic athletes at the AIS. A full facelift procedure has been the standard operation for many years. The operation improves the loose skin of the neck, jaw line, deeper wrinkle lines and the corners of the mouth. ‘Tired Bra Syndrome Are you providing your precious assets with the support they need? If you’ve never had a professional bra fitting or can’t remember the last time you had one, you’re not alone. An independent survey has uncovered the bra behaviours and trends of Australian women, revealing 42 percent have never been measured by a specialist. The survey of 1000 women, commissioned by lingerie brand Triumph, revealed that one in five women (21 percent) said they had not bought a new bra in five years or more. Over two thirds (77 percent) said they had never been professionally fitted for a sports bra. Add to this the fact that most women wash each bra up to 1000 times and you have bra burnt-out. Paula Svoboda, a Sydneybased bra fitting specialist, said tired bra syndrome occurs when you wash and wear your bras for years on end. “If you’re wearing the same bra frequently, say two to three times per week over a period of six to 12 months, it’s highly unlikely to be offering the correct support,” Paula said. “The elastic fibres weaken with each wash and wear. It is recommended to be fitted every six months due to body changes, particularly during menstrual changes, but also hormonal changes that can change the shape, feel and size of our breasts.” If you are currently wearing a bra and it is uncomfortable or the wire is digging in, it is probably the wrong size. In the survey, 48 percent of women aged 45-55 said underwire digging in was their biggest bra problem. “It’s entirely realistic to expect the right bra to be comfortable,” Paula said. “They’re not instruments of torture to be endured throughout the working day, only to be ripped off the minute you walk through the door at night.” Paula added that if the underwire is digging into your front or back, your bra is riding up at the back or you have neck or back pain, it

can be that you’re wearing the wrong-sized bra. “Ill-fitting bras are not only uncomfortable but they can lead to back, shoulder, breast or neck pain,” she said. “Even worse, not getting the right support can cause irreversible breast sag. Women believe that sag is often due to the size of your breasts, but it’s not. “The stress of movement on the breast is what causes the fatty tissue and ligaments to stretch and sag over time, irrespective of your size. Even if you are an A cup, it’s as important to wear a correctly supportive bra as if you were an E cup.” Up to 40 percent of Australian women have a cup size of DD or larger, and Paula says your average D-cup breast can weight around 500 grams. That means if you’re wearing an ill-fitting bra, around a kilo of breast weight is being distributed incorrectly across your back and shoulders, your bust isn’t being supported, and you’re prone to experiencing pain and discomfort.

INVEST IN GREAT BRAS AND GORGEOUS YOGA GEAR Tracksuits and ill-fitting bras are a definite no-no, according to style guru Trinny Woodall. Woodall, an English TV celebrity, designer and founder of Trinny London makeup, is amazed that so little importance is attached to the bra, a key staple in women’s wardrobes. “In the shows we’ve done where we check women’s bra sizes, we find 80 percent of them are wearing the wrongsized bra,” she said. “If you don’t know the size you are, get fitted at a department store.” Trinny says tracksuits should be banned and replaced by well-fitting activewear because if you look good, you’ll feel good – even when you’re just hanging around the house. HERE’S THE ANSWER Is it safe to workout while pregnant? Does pregnancy massage increase the risk of miscarriage? Obstetrician-gynaecologist Dr Drew Moffrey, an expert in women’s sexual and reproductive health, answers some of the most Googled questions about pregnancy.

Meghan Markle is currently 37 years old and pregnant with her first child. Her pregnancy is considered ‘geriatric’. What does that mean? Any woman over the age of 35 is considered a higher risk pregnancy because of their age. The term geriatric pregnancy is a colloquial term that incorporates any woman over the age of 35. Women in this group have a greater chance of pregnancy complications. There is an increased risk of miscarriage, preterm labour and stillbirth, and increased risks of gestational diabetes and hypertensive disorders such as pre-eclampsia. Women of an increased age should have their labour induced early because of the risks associated with their pregnancy. What are the chances of a woman over 35 having a healthy pregnancy with no issues? Still very good. If a woman stays healthy, does not gain too much excess weight, regularly exercises and receives adequate obstetric care, then most women over the age of 35 will have a healthy normal pregnancy without complication. What are your tips to help women stay healthy during pregnancy? Stay active and have a balanced healthy diet. There is no such thing as eating for two. You don’t need to eat any more calories in the first 20 weeks. After 20 weeks you need around 200 calories a day more which is only a small amount. Other than that, keep exercising. You can continue to do any exercise you were doing before pregnancy during your pregnancy with some modifications your doctor can tell you about. Pregnancy is not the time to get fit so no need to join a gym once pregnant. If you have never done exercise

before, a half-hour walk every second day during the pregnancy is enough. Walking provides moderate aerobic conditioning with minimal stress on your joints. Drinking water is the other important thing. You need to drink at least 2.5 litres a day of water. This does not mean soft drink or juice. Soda water is okay if you feel the fizzy drink can settle your stomach. See your doctor early and get the necessary investigations performed so that all is on track for a healthy pregnancy. Why does a woman’s fertility decrease with age? Women are born with all the eggs they will ever have. They do not create eggs like men create sperm. Each month numerous follicles start to develop and then the biggest and best follicle takes over and releases a hormone that kills off the other follicles and that turns into your egg that is then released. Because of this finite amount of eggs, as a patient ages her quality of eggs decreases and the frequency of which they are released also decreases. This is why it is harder to fall pregnant and also there is an increased risk of miscarriage in older patients. What is the most common chromosome problem that occurs in babies of women who get pregnant past age 35? The most common chromosome problem is still trisomy 21 – Down syndrome. This is by far the most common. The incidence of this happening increases with age. A 25-year-old woman has a 1 in 1,200 chance of having a baby with Down syndrome; by 35, the risk has increased to 1 in 350; by age 40, to 1 in 100; there are numerous tests now to check for the occurrence of this condition, the earliest being a blood test around 10 weeks that can detect the abnormality. A 2018 Canadian study looked at the risks to mothers and babies related to age and length of time between pregnancies. Its findings suggest that 12-18 months between birth and a new pregnancy is enough time to sufficiently reduce health risks. That’s slightly sooner than the World Health

Organisation’s recommendation of 18-24 months. What are your views on this? It’s well known that short interpregnancy intervals can increase risks for the second pregnancy. Most doctors would recommend the 18-24 months period so that the mother’s body has time to recover from one pregnancy and birth before having the stress of a second pregnancy placed on it. The risks associated with a short interpregnancy interval are preterm labour and low birth weight of the baby. The study shows the time could be reduced but as with all research one study should never guide clinical decisions until further research is done to confirm the original results. I think waiting till 18 months is the appropriate time frame. It is also known that a long interpregnancy interval can also add to the risks of a pregnancy. Pregnancy over four years apart increases the risks of low birth weights and the mother having blood pressure issues. The study, which followed nearly 150,000 pregnancies in Canada, also found that pregnancy intervals of fewer than 12 months appear to be associated with adverse outcomes for women of all ages. Should women take these findings on board when planning their families? Definitely. Women need to be aware of the risks and understand that pregnancies closer than 12 months carry additional risks. Preterm labour and low birth weight are the largest two risks. Is it safe to have a massage during pregnancy? Yes, if the masseuse understands what to do. There is one school of thought that says you cannot have one in the first trimester because of an increased risk of miscarriage but this is not correct. After 20 weeks it is best to have a special table that has a space for the pregnant belly or have the woman have the massage on her side. A deep tissue massage is not advisable as it releases lots of inflammatory cells that aren’t beneficial. Massages are great for relaxation and stress relief.

Meet Dr Andrew Letchford Dr Andrew Letchford is a specialist in hip and knee orthopaedic surgery, with an interest in joint replacement, knee reconstructions, sports injuries and acute orthopaedic trauma. After gaining his medical degree from Sydney University with First-Class Honours in 2000, Dr Letchford conducted his orthopaedic training in Queensland. In 2009, he founded Pacific Orthopaedics, consulting at the Pacific Private Day Hospital in Southport and performing surgery at Pindara Private Hospital and Gold Coast Private Hospital. What advancements have you seen in orthopaedic surgery since you embarked on your career two decades ago? Are there any breakthroughs that stand out? Medicine has been at the forefront of technological advancement from very early stages and this has been especially so over the last decade. As I am moving more towards restoring people’s function, because of degenerative disease, such as arthritis of the hips and knees, we have seen advancement beginning to plateau in terms of the metallurgy in materials used and directed more towards advancement in trying to improve a patient’s personal outcome to a procedure and this has involved finetuning solutions. No better is this illustrated than with the progress to robotic surgery, which is principally a tool for navigating in implants very accurately, allowing fine adjustments at a level that was previously very difficult to achieve. The addition of robotic navigation into our arsenal is still in relatively early stages and as yet, full scientific assessment is still progressing. I feel it is likely that in time we will see, with the help of independent research and the national joint registry data, the benefits of this for patients. Robotic joint replacement is now my procedure of choice for hip replacement, knee replacement and partial knee replacement surgery. 54 SLIM MAGAZINE SUMMER 2018-2019

What were the ages of your youngest and oldest patients for arthroplasty ( joint replacement)? Arthroplasty needs to be individualised and consequently, fixed rules in determining who is appropriate and at what time, requires some flexibility. I have certainly performed Arthroplasty surgery in people well into their nineties who ticked all the boxes of good health and function, limited simply by degenerative joints. I have also performed Arthroplasty surgery of people in their thirties that have had significant other medical issues causing severe limitation of their function. One memorable case was a young lady with severe rheumatoid arthritis requiring bilateral knee replacements. As we become better able at managing degenerative joint disease, with nonoperative measures, this allows us to delay Arthroplasty. Making these decisions and assessments based on the individual, after building a level of trust with each person regarding future and current recommendations of their arthritic joints.

You have an interest in acute orthopaedic trauma. Are you able to describe your most challenging case and the outcome? Trauma is one of the more satisfying areas of orthopaedic surgery. You can never be certain what you are presented with in trauma and it requires thinking outside the box to find solutions. Often likened to Forest Gump’s quote “life is like a box of chocolates”, but consequently, identifying the main issues and finding a solution in being able to restore function can be highly satisfying. There are many memorable cases. I guess the commonality with those is that often severe trauma involves a journey involving the patient and the surgeon over a significant period, often years, as we work towards trying to recover function. What are the worst sports for knees? I would encourage all people to be involved in sporting endeavours, but certainly to be aware of trying to minimise trauma within their endeavours. I see a lot of injuries from netball, rugby, basketball and soccer – principally ligament strains, Meniscal tears, and cruciate ligament ruptures. There has been a lot of work with physiotherapists and studies in trying to reduce anterior cruciate ligament ruptures through training sport participants in how to avoid compromising situations to the knee, particularly in terms of landing jumps in netball by maintaining the strength around the knee. This should obviously be encouraged to avoid trauma to the knee and downtime for individuals playing sports. Nevertheless, with cruciate ligament ruptures, a good solution with single tendon reconstruction is usually achievable.

‘Nicecream’ Dreams

Looking Lo oo for a way to use up all those bananas? Sarah Wilson shares six s non-dairy ‘nicecream’ recipes you can whip up in minutes. You don’t d need an ice cream maker – just a food processor or blender. Summer desserts don’t get healthier than this. Bananas should never be left to rot. As soon as you see the skin start to brown, peel it, break or cut it into small pieces and freeze in a large ccontainer. You can break off a few of these chunks to toss into smoothies or… to make nicecream. Bananas have the right balance of sweetness and creaminess for an ice cream base, and they work well with all kinds of flavour add-ins. As Sarah Wilson explains, “This stuff is creamier, goobier, smoother and sweeter than you can imagine. It’s a little-known fact that bananas taste way sweeter when frozen. Weird, hey.”

BASIC NICECREAM INGREDIENTS ½ – 1 frozen banana per person, in 2 cm pieces METHOD If you’re making more than one serve, blend in a high-powered blender or food processor. If you’re making it for one, blitz with a stick blender in a wide cup or jar. If the chunks are super-frozen you might need to let them thaw a little, or you can add a splash of milk to get things going. The chunks will blitz to crumbles at first, then will become smoother before magically transforming into a thick, almost foaming soft-serve texture. Pause after a few seconds to scrape down the sides. Scoop into bowls or into a container and pop in the freezer for a bit to freeze things back up a touch, until you’re ready to serve. Of course, you can jazz things up a little…

USE YOUR PEELS How clever are these hacks? •

Place a ripe banana peel under your meat when cooking a roast – it will keep the meat moist. To soothe an itchy bite, rub the inside of the peel against it. The polysaccharides in the peel seep into skin cells to halt swelling and inflammation. Lightly rub scuffs on leather shoes with the inside of the peel, then wipe with a clean cloth. The peel’s potassium (a key ingredient in leather polish) will be absorbed into the leather. Scuffs be gone!)

FRIDGE BANANA TRICK •

You can also put bananas that are about to become too ripe in the fridge. This will prolong their eating life by 5 days (compared with bananas left out on the counter). The skin blackens but the banana is fine.

NUTELLA FUDGE When blitzing your banana, add 1 tablespoon raw cacao powder and 1–2 tablespoons chopped hazelnuts (this will only work in a high-powered blender).


CHOC TOP Place 1 tablespoon melted coconut oil and 1 teaspoon raw cacao powder in a small cup and mix until well combined. Pour over the scoop of banana nicecream.

SALTY SPICE Sprinkle with a pinch of ground cinnamon and sea salt.

STRAWBERRY JAM For every banana add 1 cup chopped frozen strawberries (blend ¾ cup along with the banana, then add the remaining berries right at the end for a chunky texture).

PEANUT BUTTER For every banana add 1–2 tablespoons natural peanut butter and then a pinch of ground cinnamon in the final blitz. Sprinkle with roasted peanuts to serve.

EGGPLANT PARMIGIANA SERVES 6

SWEET POTATO WAFFLES WITH GUACAMOLE AND FRIED EGG SERVES 2

INGREDIENTS sea salt and freshly ground black pepper 1 tablespoon coconut oil or good-quality animal fat, plus extra for greasing 2 eggs coriander leaves, to serve chilli oil, to serve (optional) Sweet potato waffles 300 g (about 1 ½ cups) peeled and grated sweet potato 3 eggs 1 tablespoon coconut flour 1 tablespoon coconut oil, melted 1 teaspoon baking powder Simple guacamole 1 avocado, halved, stone removed and peeled 2 teaspoons lime juice, or to taste 1 teaspoon olive oil METHOD Preheat a waffle maker. To make the guacamole, mash the avocado in a bowl and mix through the lime juice and olive oil. Season with salt and pepper and set aside. To make the waffles, combine the sweet potato, eggs, coconut flour, coconut oil, baking powder, ¾ teaspoon of salt and ¼ teaspoon of pepper in a large bowl. Generously grease the waffle maker hotplates. Spoon a quarter of the sweet potato mixture into the centre of the waffle iron. Close the lid and cook for 5–8 minutes, or until the waffle turns golden brown. Repeat with the remaining batter until you have four waffles. Meanwhile, melt the oil or fat in a non-stick frying pan over medium heat. Crack the eggs into the pan and cook for 2–3 minutes, or until cooked to your liking. Season the eggs with salt and pepper. Divide the waffles between two warm serving plates, then top with the guacamole, a fried egg and a sprinkle of coriander. Drizzle with the chilli oil, if desired.

INGREDIENTS 4 large eggplants, cut lengthways into 1 cm thick slices sea salt and freshly ground black pepper 100 ml melted coconut oil or good-quality animal fat 1 quantity Italian Tomato Sauce 2 handfuls of basil leaves, plus extra to serve 4 hard-boiled eggs, peeled and sliced 170 g cashew or macadamia ‘cheese’ METHOD Preheat the oven to 200°C (180°C fan-forced). Line two large baking trays with baking paper. Place the eggplant slices in a colander and mix through 1 tablespoon of salt. Allow to stand for 15 minutes for the bitter juices to drain. Rinse well and pat dry with paper towel. Place the eggplant on the prepared trays in a single layer, brush with 90 ml of oil or fat and sprinkle on a little salt. Bake for 25 minutes, or until lightly golden. Brush a 2 litre casserole dish with the remaining oil or fat and cover the base with a layer of eggplant, followed by a layer of tomato sauce and a scattering of basil leaves. Repeat this process until you have four layers, using the eggs in the centre layer. Scatter the nut ‘cheese’ over the top. Reduce the oven temperature to 180°C (160°C fan-forced) and bake for 30 minutes, or until golden. Sprinkle over the extra basil leaves, finish with a grinding of black pepper and serve.

CAULIFLOWER PAKORA WITH CORIANDER AND MINT SAUCE SERVES 2

INGREDIENTS sea salt and freshly ground black pepper 100 g cooked cauliflower rice, chilled 1 leek, white part only, finely chopped 1 long red chilli, thinly sliced 2 garlic cloves, finely chopped 1 teaspoon ground coriander 2 tablespoons almond meal 1 tablespoon coconut flour 4 eggs, beaten coconut oil, for deep-frying Coriander and mint sauce 1 large handful of coriander leaves 1 handful of mint leaves 2 long green chillies, halved, deseeded and roughly chopped 1 garlic clove, roughly chopped ½ teaspoon ground cumin 1 ½ tablespoons apple cider vinegar 200 g mayonnaise METHOD For the coriander and mint sauce, place the coriander, mint, chilli, garlic and cumin in the bowl of a food processor and process until finely chopped. Add the vinegar and process until smooth. Pour the mixture into a bowl, then stir in the mayonnaise. Season to taste with salt and pepper and refrigerate until needed. Combine the cauliflower rice with the leek, chilli, garlic and ground coriander in a bowl. Add the almond meal, coconut flour and egg and mix to form a thick doughy batter. Season with salt and pepper. Melt the oil in a large saucepan over medium–high heat until the temperature reaches about 160°C. (To test, drop a teaspoon of batter into the hot oil; if it starts bubbling straight away, it is ready.) Using a soup spoon, shape the batter into balls and carefully lower them into the hot oil in batches of six to eight. Deep-fry, turning occasionally, for about 2 minutes, or until the pakora are golden brown and cooked through. Drain on paper towel. You should get about 20 pakora. Serve hot with the coriander and mint sauce for dipping.

SMASHED AVO AND SALAD SANDWICH SERVES 2

INGREDIENTS sea salt and freshly ground black pepper 4 sandwich-cut slices of your choice of paleo bread 1 ebanese cucumber, sliced ½ baby cos lettuce, leaves separated and torn 1 tomato, sliced 1 small carrot, grated 100 g macadamia ‘cheese’ Smashed avo 1 avocado 2 teaspoons lemon juice METHOD To make the smashed avo, mash the avocado with a fork until creamy but still slightly chunky. Add the lemon juice and mix until combined, then season with salt and pepper. To assemble, spread the smashed avo on two slices of bread. Top each slice with half the cucumber, cos lettuce, tomato and carrot and season with salt and pepper. Spread the macadamia ‘cheese’ on the remaining slices of bread and then place, spread-side down, on top of the salad to form a sandwich. Cut the sandwiches in half and serve.

EASY PRAWN SAN CHOY BAO SERVES 4 PREP TIME: 10 MINUTES, COOK TIME 5 MINUTES

INGREDIENTS 500g prawns, shelled and deveined, roughly chopped 2 tsp sesame oil 1cm knob of ginger, finely grated 2 garlic cloves, finely crushed 2 tbsp soy sauce/tamari 1 large red chilli, seeds removed and finely chopped ½ bunch of coriander, washed and finely chopped, including the stems ½ bunch mint, chopped 1 avocado, pip removed, diced 4 tbsp raw cashews, roughly chopped 1 lime, cut into wedges 8 iceberg lettuce leaves, as cups METHOD Marinate the prawns in a bowl with sesame oil, soy, garlic, ginger and chilli. In a large pan, cook the prawns for about 5 minutes. Leave to cool. Once cooled, roughly chop them and place in a large bowl with the avocado, coriander and mint, and mix through. Serve in a lettuce cup with a couple of spoonfuls of the prawn mixture topped with the chopped cashews and a squeeze of lime.

LEMON THYME CHICKEN WITH DESERT LIME STUFFING SERVES 8

PART 1 1.7kg cannellini beans 1 bay leaf 1 thyme sprig 2–3 flat-leaf (Italian) parsley sprigs 1 pork hock 680g pork skin, cut from the shoulder 1 onion, peeled and stuck with 2 cloves PART 2 900g coarse cut, smoked pork sausages 1.8 kg pork shoulder, skin removed 225g thick cut smoked bacon, cut into lardons 4 garlic cloves, finely chopped 8 preserved duck legs 500g tinned chopped tomatoes good-quality virgin olive oil METHOD You will need a great, deep casserole dish for this recipe. Soak the beans for 3-4 hours. Drain them and put them in 2 litres of cold water with the bay leaf, thyme, parsley, ham hock, the pork skin cut in strips and tied in a bundle and the onion. Cover, and cook very gently until the beans are tender. Drain off and reserve the liquid. Don’t season the beans at this stage, the salt will prevent them softening properly. If you’d care to cheat a little, you can bypass this entire paragraph and use canned cannellini beans instead, you naughty corner-cutter you! Fry the sausages in olive oil for 8-l0 minutes, lift out of the oil and cut into 10cm pieces. Cut the shoulder of pork into 5cm cubes and brown them quickly on all sides. Put the pork into a saucepan with the bacon and garlic, add 1 litre of water and the tomatoes, bring to a simmer, cover and cook until the pork is tender. Drain the pork, mix the liquid with that drained from the beans and set aside (if you cheated with the beans, use vegetable or even chicken stock instead). In the casserole dish, put a layer of beans, then a layer of the pork, bacon and sausages, another layer of beans and then the preserved duck legs, in turn finished with a final layer of beans. Pour the reserved liquid into the pot, cover and simmer over a very low heat for about 1 hour 30 minutes. Check and adjust the seasoning at this point, and stir in any crust that may have formed. Turn up the heat to about 160°C and cook for a further 30 minutes. Halfway through, check it again and stir in the crust. The duck leg bones are sometimes brought through the crust for presentation. The texture can be adjusted at this point, by finishing it with the lid off, or by adding a little stock.

BASE ¾ cup hazelnuts ¾ cup walnuts ⅓ cup almond meal ½ cup Medjool dates 2 tbsp virgin coconut oil melted

INGREDIENTS ½ punnet strawberries, whole and stems removed 1 large ripe banana, sliced into 6 ½ punnet blueberries (large size preferably as easier to skewer) Tip: rockmelon, honeydew melon and pineapple also work well.

CREAM 1 cup raw cashew nuts (soaked for 6 hours) ½ cup almond milk ¼ cup maple syrup 2 tsp vanilla extract ¼ cup espresso coffee 6 dates, seeds removed (soaked for at least 6 hours) 2 tbsp raw cacao powder GARNISH coffee beans METHOD In a food processor blend all the base ingredients to a rough dough. Place ½ of the mix into 4 lined medium sized ramekins, spread evenly and press down to compact. Place in the fridge and set remainder of dough to one side at room temperature. In the food processor add the cashews, almond milk, maple syrup and vanilla, blend until smooth. Pour half of the vanilla cream in a bowl and set aside. To make the coffee cream keep the other half of the vanilla cream in the blender and add the coffee, dates, cacao powder and blend again to combine all the ingredients. To assemble the individual tiramisus, layer coffee cream on top of the base, followed by a layer of vanilla cream and repeat twice. The top layer should be of vanilla cream. Top with a tiny coffee bean to decorate. Refrigerate for 2 hours or more so the tiramisu can set.

SAUCE ½ cup coconut oil ½ tsp chilli powder ½ tbsp honey ¼ cup shredded coconut, to roll 1 lime, zested 1 lime, juiced METHOD Wash and dry the blueberries and strawberries with stems removed, set aside. Peel banana and cut into 6. In a saucepan, melt the coconut oil, lime zest and juice, and honey. Pour into a bowl and add the chilli. Dip the fruits into the mixture and quickly roll over the shredded coconut and thread onto the skewers. Place on the grill of 2-3 minutes each side.

LOW CARB Healthy Fat SUPER-EASY COCONUT ICE-CREAM I frequently make this when the weather warms up, but it’s a simple and versatile treat you can enjoy any time. Just five ingredients and five minutes of prep time – it’s easy to see why this is a favourite! SERVES 4 PREP : 5 MINUTES FREEZE : 2 HOURS

INGREDIENTS 400ml coconut cream ¼ cup coconut butter 1 teaspoon cinnamon 1 teaspoon stevia 1 tablespoon organic rice malt syrup METHOD Place all the ingredients in a high-powered blender and start blending on low, gradually increasing to high. Blend until creamy. Make sure you don’t blend on high for too long, as this acts as a heating function. Pour into a shallow dish and freeze for 2 hours. Serve into bowls using a large ice-cream scoop, and enjoy. Keep leftovers well-sealed in the freezer and use within a few days.

LOWER-CARB SMOOTHIE BOWL Smoothie bowls are notoriously high in carbohydrates and often packed with high-sugar fruits such as bananas and dates. My smoothie bowl is just as delicious as a shop-bought version, with a fraction of the carbs. The addition of gelatin is fantastic for gut healing, immune support and skin integrity. SERVES 1 PREP : 15 MINUTES

INGREDIENTS 250ml unsweetened nut milk 1 tablespoon chia seeds ½ cup frozen raspberries ½ cup frozen blueberries 1 or 2 tablespoon grass-fed whey protein powder 1 tablespoon nut butter 20g spinach leaves 1 teaspoon grass-fed gelatin ¼ teaspoon cinnamon TO SERVE 1 or 2 teaspoon unsweetened coconut flakes 1 or 2 teaspoon cacao nibs 1 tablespoon goji berries METHOD Place nut milk and chia seeds in a blender and let sit for 5 minutes for the chia seeds to go to work. Add remaining smoothie ingredients to the blender and blend until creamy and thick. If the consistency is too thick, slowly blend in a little extra nut milk. Photo: Chris Middleton Leave the gym behind, stop counting calories and start training and eating like an A-lister. Luke Zocchi, the personal trainer responsible for carving out the bodies of Chris Hemsworth and other Hollywood heavyweights, has released a book, The A List Diet & Fitness Plan. We share some of his wisdom: Carbs are not the Enemy Despite what popular diets suggest, our bodies need carbohydrates. Luke chooses high-carb meals only after exercise. If he doesn’t train, he doesn’t eat as many carbs and chooses Core (low-carb) meals throughout the day. Carbs are the body’s main form of energy – fuelling muscles, the brain and the central nervous system. When we exercise, we deplete our storage levels of carbs, so the best time to eat them is after we train. However, when we eat an excess of carbs the storage levels overflow and spill into our fat storage. Fats are Important Luke considers good-quality fats to be part of a healthy diet. They are a source of energy and are vital for regulating hormones and transporting the fat-soluble Vitamins A, D, E and K. There is a common misconception that eating fats will make you fat. The only time Luke reduces his fat intake is for a post-training meal. The reason for this is that fat takes a long time to digest and will slow down the digestion of protein and carbs as well. Here is how Luke uses fats: Butter (raw and for cooking), Canola oil (for cooking), coconut oil (for cooking), extra-virgin olive oil (for cooking and in dressings), ghee (for

cooking), goat’s butter (use raw), grapeseed oil (for cooking). Fasted Training If you’re training in the morning, Luke recommends doing so on an empty stomach. Choose a post-workout meal high in carbs after your training session, whether that is in the morning or afternoon, and Core meals at all other times. Our body’ main source of energy, carbs, are depleted overnight. When we get up in the morning and train, before eating, we tap into our fat stores much quicker. Eat Three Main Meals Per Day Stick to three main meals per day plus up to two snacks (but only if you need them). This keeps your body’s blood-sugar levels stable and prevents you from having a drop in blood sugar, which often leads people to make bad food choices. Luke recommends eating every three to four hours to avoid this.

HIIT Me Up HIIT stands for high-intensity interval training. This means that you do short bursts of high-intensity exercise with alternating rest periods. Luke says training like this is more effective for fat loss than steady-state cardio and it’s done in half the time. Studies have shown that sustained HIIT training improves cardiovascular fitness and reduces the risk of Type-2 diabetes. Here’s a HITT workout you can do at home: 20 seconds running / 40 seconds rest x 20 repetitions.

Don’t have time to Exercise? Luke has a solution and it works, no matter how busy you are. Do 20 squats then 20 push-ups on the hour, every hour, for the duration of the day. If you’re a beginner and are finding it difficult, lower the reps and do push-ups on your knees. Essentially, you ‘snack’ on exercise, getting it in when you can. This could mean a run up the stairs, squatting while brushing your teeth, or doing push-ups during ad breaks. Cook with Herbs and Spices Fresh or dried herbs and spices are great for adding flavour to your food and most have wonderful nutritional properties as well. For example, turmeric is a natural

handful of kalamata olives, pitted and halved sea salt and freshly ground black pepper, to taste METH0D Place a large saucepan over medium heat and add the ghee. Add the onion and garlic and sauté for 2–3 minutes. Add the harissa and spices and stir for 1 minute. Add the lamb, stir to ensure it is coated in the spice mixture, and cook until browned. Add the tomatoes, broth, bay leaf, capsicum and olives. Reduce heat to low, pop the lid on and cook for 1½ hours, stirring occasionally. Remove the lid and simmer to allow the sauce to thicken, about 20 minutes. Remove from the heat, season with salt and pepper, and serve.

METHOD Preheat your oven to 140°C. Place a frying pan over medium heat and add the coconut oil. Add the onion, shallots, ginger, garlic, curry powder and eschalots. Sauté for 4–5 minutes, or until the vegetables have taken up the colour of the curry powder. Remove from the heat and set aside to cool. In a lidded casserole or baking dish big enough for the fish, combine the coconut milk, coconut flesh if using, fish sauce,lime juice and honey. Make 3–4 incisions on the snapper, cutting deep enough to hit the backbone. Using your fingers, rub the cooled onion mixture into the incisions. Place the fish in the baking dish. The liquid should cover at least 80 percent the fish; add more coconut milk if needed. Pop the lid on and bake for 1½ hours. Remove from the oven and season with salt and pepper. Add the chopped coriander before serving.

GREEN BREAKFAST BOWL SERVES 2

2 tablespoons coconut oil 1/3 bunch of Tuscan kale, trimmed and roughly chopped 2 garlic cloves, sliced ½ teaspoon chilli flakes 2 eggs ½ avocado, cut in wedges 2 tablespoons sauerkraut handful of snow pea sprouts juice of 1 lemon 1 tablespoon olive oil sea salt and freshly ground black pepper, to taste METH0D Place a frying pan over medium heat and add the coconut oil. Add the kale, garlic and chilli and sauté for 4–5 minutes, or until softened. Remove from the heat and set aside. Place the eggs in a small saucepan, cover with cold water and bring to the boil. Reduce the heat to a simmer and cook for 6 minutes (soft boiled). Remove the eggs, run under cold water and peel. In a large bowl, combine the kale mixture with the avocado wedges, sauerkraut, snow pea sprouts and eggs. Drizzle with lemon juice and olive oil, season with salt and pepper, and serve.

Preheat the oven grill to high and line a large baking tray with foil. Place the chicken, olive oil, turmeric, mustard and maple syrup (if using) in a large bowl and toss until the chicken is well coated. Season to taste with freshly ground black pepper. Transfer to the prepared tray and cook under the grill, turning once, for 12–15 minutes until the chicken is golden and cooked through. Transfer to a chopping board, cover loosely with foil and rest for 3 minutes, then cut on the diagonal into thick slices. Meanwhile, to make the Indian slaw, whisk together the yoghurt, ginger, lemon zest and juice in a large bowl. Season to taste with freshly ground black pepper. Add the remaining ingredients and toss well to combine. Divide the chicken evenly among 4 plates and serve with the Indian slaw. You can marinate the chicken mixture for up to 2 days. Just cover it tightly and keep it chilled.

SPICE-ROASTED CHICKPEA AND PEA ‘POPCORN’ SERVES 4 | PREP: 10 MINUTES | COOKING: 40 MINUTES

INGREDIENTS 2 cups (240 g) frozen peas, thawed 1/4 teaspoon smoked paprika 1 teaspoon extra virgin olive oil SPICE-ROASTED CHICKPEAS 1 × 400 g tin salt-reduced chickpeas, drained, rinsed and patted dry 1/2 teaspoon ground cumin 1/4 teaspoon sumac olive oil spray, for cooking METHOD Preheat the oven to 190°C (170°C fanforced). Line 2 baking trays with baking paper. To make the spiced chickpeas, place the chickpeas in a bowl.

Combine the cumin and sumac in a small bowl, then add to the chickpeas and toss to coat. Spread evenly over a lined tray in a single layer and spray with olive oil, then roast, stirring occasionally, for 35–40 minutes or until golden brown and crisp. Meanwhile, gently pat the thawed peas dry with paper towel and place in a bowl, then add the paprika and olive oil and stir to coat. Gently spread out on the second lined tray, then add to the oven with the chickpeas. Roast for 30 minutes or until crisp, stirring them occasionally. Leave the chickpeas and peas to cool on the trays, then store in separate airtight containers for up to 3 days.

recipes WATERMELON AND ASIAN HERB SALAD Watermelon is normally best eaten by itself, but every now and then it’s nice to mix it up and serve it in a salad. I can think of no better accompaniments than the herbs of Asia and this to-die-for dressing. SERVES 4

INGREDIENTS 1 large sweet potato, peeled and very thinly sliced 400 g watermelon, cut into medium chunks 1 bunch mint, leaves roughly torn 1 bunch coriander, leaves roughly torn ½ bunch Thai basil, leaves roughly torn 4 spring onions, cut into julienne 1 Lebanese cucumber, cut into chunks pepper DRESSING 1 bunch coriander, leaves and stalks 1 jalapeno chilli, seeded and roughly chopped ½ cup lime juice ½ cup extra virgin olive oil 1 spring onion, trimmed METHOD Blanch the sweet potato slices in a bowl of boiling water for 4 minutes. Refresh in a bowl of iced water for 4 minutes. Meanwhile, combine the watermelon, fresh herbs, spring onion, cucumber and a grinding of pepper in a large bowl. Drain the sweet potato and add it to the salad. To make the dressing, place all the ingredients in a blender and blend until smooth. Pour the dressing over the salad and gently toss to combine.

KITCHEN KIMCHI FRIED RICE SERVES 4 Fried rice is one of those dishes you can whip up after a busy day when you don’t know what else to make. Everyone loves it. It is eaten throughout Asia, and this is our play on it, bringing in the much-loved kimchi flavours. It’s a great way to use up leftover cooked rice, and feel free to add any extra vegetables you may have in your fridge.

INGREDIENTS 2 cups jasmine rice (or you can use quinoa) 1 tablespoon coconut oil 5 cm piece of ginger, peeled and grated 1 teaspoon sesame oil 1 cup kimchi 1 cup fresh peas (or thawed frozen peas) ½ cup tamari 2 spring onions, sliced on the diagonal METHOD Cook the rice or quinoa according to the packet instructions and set aside to cool completely. Heat the coconut oil in a wok or large frying pan over medium heat and gently cook the ginger for 1 minute or until fragrant. Add the rice or quinoa, sesame oil, kimchi, peas and tamari and cook for 3 minutes or until heated through. Top with spring onion to serve.

Running on Empty The link between obsessive-compulsive exercise and eating disorders

For Holly, exercise became a rigid and ritualised part of her daily regime. For two hours a day – no more and no less – the 27-year-old accountant would hit the gym for weights and cardio sessions until eventually the ritual took over her life. On one occasion, Holly didn’t turn up to a job interview as it was the same time as her gym class. Holly eventually reached out to a psychiatrist after staff at her gym said that she could no longer attend due to concerns that her body weight was too low. To treat her compulsive drive to exercise, as well as her very restrained approach to eating due to a fear of being overweight, Holly’s therapist used cognitive behaviour therapy (CBT) to help change her attitude and obsessive behaviours and equipped her with coping strategies. With help from Holly’s personal trainer, Holly’s doctor promoted exercise that is ‘healthy’ to help her gradually reduce the amount and intensity of exercise. Rather than solitary weight lifting in the gym, Holly was encouraged to join a tennis club where she could enjoy physical activity in a more social environment and moderate her exercise according to others. After six months, Holly’s weight stabilised. Although still underweight, she had markedly reduced the intensity of exercise. She went on to become treasurer of her tennis club and her general health and wellbeing improved. Holly sees her therapist bimonthly for a ‘check-in’ and recently built up the courage to ‘come out’ to her family, after going on a date with a woman from the club. Holly is not alone. According to prominent psychiatrist Dr Phillipa Hay, a renowned eating disorders academic and Director of Wesley Eating Disorders Centre at Wesley Hospital in Ashfield, there is a strong link between obsessive exercise and eating disorders. A compulsive drive to exercise excessively may often stem from underlying weight or food-related issues. Together, they can be detrimental to physical and psychological health.

According to Dr Hay, studies have shown that compulsive exercise occurs in half of all patients with an eating disorder, up to 80 percent of anorexia nervosa patients and up to 57 percent of patients with bulimia. “The combination of the two disorders is associated with poorer outcomes and longer hospitalisations, and is a predictor of relapse,” Dr Hay said. “Obsessive-compulsive exercise also causes higher levels of psychological distress, including depression and anxiety, in people with an eating disorder, and in some studies, it has also been related to increased rates of suicide and self-harm. “For this reason, it’s important to get help if you or a loved one is showing symptoms, which often include increased anxiety and mood changes if unable to exercise, rigid and unrealistic exercise rules or goals, and the drive to exercise even when ill or injured.” To treat obsessive-compulsive exercise symptoms and establish a healthy relationship with physical activity, body image and diet, Dr Hay recommends cognitive behavioural therapy (CBT). “CBT can help change a person’s attitude, beliefs and behaviours towards a difficultto-manage behaviour such as physical activity, to promote exercise that is ‘healthy’,” she said. “This therapy also equips people with more effective coping strategies and the skills to prevent relapse. While exercise therapy is not often included in the treatment of eating disorders, studies have found that ‘healthy’ exercise for patients with anorexia can reduce eating disorder symptoms, facilitate weight gain and improve body perception, mood and quality of life. “Exercise has many benefits for health, both physically and psychologically. Just 20 minutes of exercise a day is known to be anti-depressive and reduce anxiety. However, over-exercising can become an addiction that has negative consequences on health. Specialised clinics such as Wesley Eating Disorders Centre can help in the recovery, management and prevention of obsessive-compulsive exercise in people with eating disorders.”

Dr Phillipa Hay’s six signs and symptoms of obsessive-compulsive exercise 1. Mood changes. Feelings of guilt, anger or irritability may arise when a person is unable to engage in physical activity. 2. Fear of stopping or reducing exercise. People may have an overwhelming fear of the negative consequences that may result if they stop or reduce exercise; such as becoming fat, feeling an inability to cope and heightened levels of anxiety when they are unable to exercise. 3. Strict exercise rules. A common sign of obsessive-compulsive exercise is following rigid exercise rules to avoid negative consequences. These are often linked with food consumption. For instance, a person might decide they should spend extra time exercising if they ate something unhealthy or miss a meal if they do not exercise. 4. Setting difficult exercise goals. A fitness goal such as losing excess weight, training for a race or gaining muscle is healthy. Exercise goals become unhealthy when they are unrealistic and inflexible. Failure to meet high standards often leads to self-criticism, heightened anxiety and negative feelings. 5. Skipping other engagements. Exercise becomes compulsive when physical activity becomes the central focus of a person’s thoughts to such an extent that it takes precedence over other responsibilities. People may spend too much time thinking about, planning and engaging in exercise that they miss social engagements, or it gets in the way of work or study. 6. Exercising in poor health or circumstances. While an injury or illness may cause a healthy exercising person to rest and recover, an obsessivecompulsive exerciser will continue to work out even when it is detrimental to their physical health. The compulsion will motivate them to exercise even in bad weather despite the increased risk of other infections or ailments.
