ach passing year I always try to gain a little more insight and wisdom, and this year has been an enormous year of learning and reevaluating for me.

One of my key learnings from this year has been the importance of gratitude. It’s a word we see pop up on our Facebook feeds, and we hear thrown around, but this year is the first time I have truly understood its meaning and the power of expressing gratitude. To me, gratitude is about understanding the many blessings that I have been given. It means focusing on all of the positive aspects of my life and refusing to give in to negativity. More than just being grateful, for me practicing gratitude also means recognising how much I can do for others, whether it is my family and friends, my community or something more global. Knowing that I can make a difference inspires me to do so, in whatever small way I can. So in 2016, I plan to build on what I have learned about gratitude and do my best to give back some of the good fortune my family and I have been blessed with. Speaking of giving… this issue we are giving you what we believe is our best issue yet. She’s the girl next door Australia has fallen in love with. Rachael Finch talks to SLIM. SLIM. What is a typical day’s exercise like for you? RF: No two days are the same for me and I like to incorporate exercise into my day based on how I feel. This can range from anything like smashing out a high intensity cardio workout one day, to going for a power walk with my daughter Violet in the pram with a Pilates session afterwards. I also love to dance and since meeting my husband Michael on Dancing with the Stars I have been dancing ever since – it’s a very fun, full body workout.
SLIM. There is so much focus on diets such as Paleo, Zone, and Atkins … do you follow a particular diet? RF: I believe in the 'healthy' diet. Good quality ingredients, mainly vegetables, lots of variety and cooked with love. I have never really followed a strict eating regime and don't believe in dieting. I think everything in moderation is key and we shouldn't get caught up in food otherwise it turns into a physiological issue. I try to eat food as close to its natural state as possible so there are lots of fruits, vegetables and protein sources in my fridge, but when I feel like a treat I’ll try to create something. I love chocolate and the sweet potato fries at Hurricane's. SLIM. How do you stay motivated to exercise and eat well? RF: Quality of life motivates me. I love getting out of bed feeling amazing every day and I like to know that I'm doing everything I can to stay illness and disease free. I want to look back in 40 years’ time and say that I am fitter now than I was back then! SLIM. What is your ‘treat food’? RF: I have lots. It depends on my mood and the time of year. At the moment I love the new Coyo frozen yoghurt made with coconut milk. SLIM. What’s your favourite pick-meup when you’re tired? RF: A massage, salt bath or at-home face mask.

SLIM. How important is your physical wellbeing to your mental wellbeing? RF: Both physical wellbeing and mental wellbeing are just as important as each other, and I think food plays a big role in that. Eating healthy is both a physical and mental shift, and as I’m getting older, I’m focusing more on the quality of ingredients and what effect these have on my body. SLIM. Being in the public eye must be tough at times, how do you stay positive? RF: My positivity and constant striving for inner happiness is a lifestyle choice. I don't tend to let working in the media and in the public eye, worry me. SLIM. How do you balance your family life with such a hectic schedule? RF: Preparation and planning is important in my household so everyone knows what's going on before the day begins. I like to think ahead when planning meals, schedules and exercise times. I'm also blessed to have an amazing husband and mother in-law who help me a lot. SLIM. Tell us about the Impressed Juices range you have co-created? or a long time, there was a misconception that weight-loss surgery was a drastic and expensive measure, available only to the morbidly obese or Hollywood stars with access to the best care money can buy. But thanks to new, safer, more effective techniques, weight-loss surgery is becoming a very real option for those who have spent their years on unsuccessful diets. One of Australia’s leading weight-loss surgery experts, Dr Jason Free of Surgery

Gold Coast says the typical patient undergoing weight-loss surgery has changed in recent years, in an effort to combat what he calls Australia’s obesity epidemic. “Patients who undergo weight-loss surgery are changing,” says Dr Free. “It used to be considered an option only for the morbidly obese. But now, with emerging techniques and a variety of surgical options, many people are coming to us before they get to that stage.” Dr Free’s views are supported by a host of health industry experts, many of whom are calling for weight-loss surgeries to be offered through public health, given its effectiveness at resolving weight-loss issues, preventing the onset of Type-2 diabetes and other weight-related illnesses. Dr Free believes that the fast recovery and safety of weight-loss surgeries makes it a very viable option for those who are struggling to manage their weight. “While any operation is of course a serious matter, these surgeries are quite low impact in terms of downtime and recovery. Almost all patients are up and about the next day, and resuming normal activities quite quickly, so they are able to undergo the operation without interfering too much with their daily lives.

“Unlike many other forms of weight-loss or weight-control, surgical intervention has an incredibly high success rate, which makes it a very good option for people who have tried and failed many times to lose weight. Being overweight presents very serious physical issues such as diabetes, which is now at epidemic proportions in Australia with more than 10 percent of adults in this country affected – most of them overweight or obese. “Being overweight and obese also greatly increases your susceptibility to coronary heart disease with the build-up in the arteries preventing oxygenated blood from reaching the heart as well as high blood pressure and your chances of a stroke,” Dr Free says. “There is also an increased risk of Osteoarthritis, certain kinds of cancer, gallstones, reproductive issues, sleep apnoea and abnormal blood fats.” For these reasons, Dr Free believes surgical intervention is a very viable option for anyone with a long term weight problem, even if they are not morbidly obese. “We don’t want people to wait until they are morbidly overweight. WEIGHT-LOSS SURGERY EXPLAINED Gastric Bypass What it is: The upper part of the stomach is divided and the small intestine is attached to it (the upper part of the stomach) so that food bypasses most of the stomach and upper small intestine where the digestive juices are formed. What this means in practice is that the amount of food you can eat is dramatically reduced. Who it suits: A high number of patients but particularly those who have health conditions such as diabetes, high triglycerides or cholesterol or reflux disease. What to expect: Robust long term weight-loss and improvements in diabetes and metabolic syndrome. Some diabetic patients are able to eliminate all diabetic medications within days or even hours of the operation. It is also extremely effective at treating gastrointestinal reflux. Downside: While there is a slightly decreased absorption of carbohydrates and fat, there is minimal chance of developing deficiencies. It is important, however, to have long-term follow up with your surgeon.
Sleeve Gastrectomy What it is: A resection of about 85-90 percent of the stomach, leaving only a 15mm tube of stomach and decreasing the amount of food that can be eaten. Who it suits: This procedure can suit most people, especially younger obese patients. It is also a common choice for super obese patients as a first step procedure leading to a gastric bypass later. What to expect: Extremely good, rapid weight-loss. In fact, expect to see about 70 percent reduction in excess weight. Most
people say their appetite is reduced after this surgery. Another benefit is that there are minimal long-term problems with this type of procedure. Downside: You should be aware that this procedure is irreversible since, in effect, a large amount of the stomach is permanently removed.
Adjustable Gastric Banding What it is: A band is placed around the upper part of the stomach to create a small pouch which restricts the intake of food to varying degrees. It is intended to provide a feeling of fullness. The benefit of this procedure is that the stomach is not removed or stapled, and it is completely reversible. Who it suits: Again suitable for most people but commonly those who do not want a more invasive procedure. Patients at high risk for other procedures, those who understand the commitment to band maintenance and eating habits. What to expect: Minimal invasion compared to other procedures and very satisfying weight-loss. Downside: Achieving the correct amount of restriction is a fine-tuning process to maintain adequate weight-loss without causing too much restriction and leading to problems and a poor quality of life. You will need to work with the surgeon to adjust the band to vary the amount of restriction until a perfect level is achieved and be committed to the process.
Revisional Bariatric Surgery What it is: This is the correction of a gastric band to make it work better, it can
also be a conversion from a gastric band or sleeve gastrectomy to a gastric bypass. Who it suits: Some patients who have already undergone gastric banding might be unsatisfied. Some have problems such as reflux or regurgitation that affect the quality of their life; others may have insufficient weight-loss following prior gastric band and sleeve gastrectomy. Revisional surgery can help address these problems. What to expect: There is evidence that a gastric bypass after a band provides better and more sustained weight-loss as well as improved food tolerance and quality of life relative to conversion to a sleeve gastrectomy. Simply removing a gastric band will alleviate problematic symptoms a patient may experience due to the band, a conversion to another procedure will prevent weight regain after the band is removed.
What you need to know: Many patients may not have been left feeling fully satisfied following their primary procedure, whether due to lack of weight-loss or problematic symptoms. There are solutions to almost every problem. Patients whom feel they have to live with disturbing symptoms affecting the quality of life should be reassured that we can do things to improve their wellbeing. SLIM-MAGAZINE.COM.AU 25

t 52, Tracy Hames is gorgeous. Enthusiastic, energetic, and full of life, it is hard to believe that this dynamic woman once suffered from low self-esteem. Having spent most of her life fit, slim and healthy, Tracy gained weight after the birth of her children. As the children grew, so did Tracy, and shifting the weight proved impossible. Hard enough for any of us, but working in the fashion industry made it all the more difficult for Tracy, who often felt judged and look down on, even if only in her mind. “I used to not eat in public,” Tracy says, “and avoid buffets and things like that because I was worried that people would say ‘oh look at the fat lady pigging out’. “Working in fashion made being larger really challenging, being surrounded by a lot of very trim women. “I did feel really insecure a lot of the time.” However it wasn’t fitting into a size 10

The side effects weren’t good, so I stopped that and never tried them again. “Then there was the hospital diet, that was mainly a cabbage soup mixed with other veggies. It didn’t take long to tire of that one! “I tried Weight Watchers at different stages in my life too. I would go really well for the first month but my weight-loss was always very slow and I found it very frustrating and I would slowly go back to my old ways.” Then Tracy heard about Dr Jason Free and the weight-loss surgery he performs. After an initial meeting, Tracy decided to
undergo gastric sleeve surgery. Since the surgery she has lost almost 40 kilos, and in doing so has completely changed her life. The surgery itself, she says, was far easier than she expected. “A few days after the surgery I couldn’t believe how great I felt,” she says. “Which is amazing when you’ve just had 85 percent of your stomach removed ... the body is an amazing thing.” These days, life is very different from the years spent worrying about being “the fat lady”. “Life is really wonderful,” Tracy says. “I wish I had done this years ago. “I really love just walking into a store and buying an outfit in size 12, and of course it feels great to know you look good in what you are wearing. But it’s really not about how I look in a particular dress – it never was. I feel so full of energy and ready to take on the world. It is the best thing I have ever done.”
GOING SLIM Magazine talks to Gold Coast specialist anaesthetist Philippa Hall about her extraordinary career SLIM: How long have you been a specialist anaesthetist? PH: 23 years. SLIM: What are the main tasks involved in your job? PH: Assessing each patient prior to their surgery so that I can individualise their care. Anaesthetise the patient for their operation, taking into consideration their medical problems; and ensuring that they wake up safely with minimal pain and nausea. I also supervise their post-operative pain management. SLIM: What do you love most about your job? PH: I meet new people every day. Some patients are so interesting I am often reluctant to put them off to sleep as I have so enjoyed chatting to them! I am lucky in that I usually work with the same teams with the various lists that I do. So we are all good friends as well as colleagues. This actually improves patient outcomes as we all know each other so well that we know what is required for each operation and can look out for the little things that sometimes can go wrong. Some of the lists I do are repeat procedures and I have been looking after some patients for almost 20 years so they have become friends too. SLIM: One of the people you work with regularly is our own SLIM expert, Dr Jason Free. Why do you enjoy working with him? PH: I first got to know Jason when we were both working in Nepal on a voluntary mission. You really get to know colleagues when you

are working under difficult conditions: no operating lights, no air conditioning, bugs flying around, minimal surgical and anaesthetic equipment. Jason was able to cope with these conditions with a smile on his face and no complaints. Working with him at Pindara I get the impression he is very patient focused and is always very concerned with achieving the very best for his patients. He is a great communicator
which is great for anaesthetists. SLIM: What is something about your job that would surprise people? PH: Our safety checks are based on the aviation industry so, just like a pilot at take-off and landing, we have a safety check before we start the anaesthetic procedure. SLIM: You work on a lot of bariatric patients, could you tell us your thoughts on the procedure?
PH: It’s great to see these patients coming in, motivated to lose weight. It’s even better when you see them later, they are shadows of their former selves. SLIM: What is your favourite thing to do when you aren’t working? PH: Travelling, especially trekking. My personal best is making it to Everest Base Camp (and back again).

4. Watch your appetite if you are beginning an exercise regime; often an increase in physical activity causes a ramping up of appetite disproportionate to the actual calories burnt. Rather than increasing your food intake, go for good quality high protein meals, have a piece of fruit before exercising and drink plenty of fluid throughout the day.

er first name alone brings to mind the epitome of the word supermodel: Cindy. The all American girl who rose to fame as one of the original ‘glamazons’ has for decades been a symbol of beauty. Her infamous mole and thick, flowing hair, teamed with that incredible bone structure and natural beauty made her the most famous of all the famous models who were at the height of their power in the 80s and 90s. Her iconic status was solidified with pop culture moments such as starring in the Pepsi ads, which were a phenomenon; her Shape Your Body workout videos, which were worldwide best sellers; her lip-syncing role in George Michael’s Freedom video; and her time as the partner of Richard Gere. These moments all cemented her place in the hearts and minds of men and women everywhere.
While many of her peers seemed to flounder with very public problems, Cindy has remained through the decades, dignified and flawless. It’s hard to believe she will turn 50 this year. Certainly her stunning good looks have not diminished with the passing of time. Rather, she has become even more beautiful (with, she admits, a little help). In the years since her modelling career was at its most prolific, Cindy has kept a much lower profile, choosing instead to focus on other things such as her beauty line Meaningful Beauty, her furniture range and a host of other endorsements. Married to entrepreneur Rande Gerber, she has two beautiful children, Kaia and Presley, and a variety of business ventures. To celebrate her upcoming milestone birthday, Cindy has released Becoming, a book that chronicles her life and career, published in Australia by Hardie Grant. In it she shares stories and lessons learned, and her most memorable images, looking back, photo shoot by photo shoot, on a remarkable career and various life lessons she absorbed. 32 SLIM MAGAZINE SUMMER 2016
The photographs span her entire career, beginning from the mid 1980s, and feature unpublished images from Cindy’s personal archive in addition to images by every top name in fashion photography, including Annie Leibovitz, Arthur Elgort, Helmut Newton, Irving Penn, Patrick Demarchelier, and Herb Ritts. In Becoming, Cindy discusses her earliest modelling years and learning how to become less self-conscious in front of a camera; trusting her own instincts about creating positive messages about a healthy and strong body image that she knew would reach women of all ages; her feelings about becoming a wife and a mother; and her thoughts about turning 50 this year and what she would tell her younger self if she had the chance. “A couple of people in my life had been trying to get me to do a book for the last 10 years and I was like, ‘I don’t want to do a workout and beauty tips book,’” Cindy has said of the book. “This idea of 50 iconic images married to 50 essays about the lessons learned along the way, to celebrate turning – and I can’t believe I’m saying this – 50. “Hard as I try not to, I am growing older. I’m also maturing and gaining insight, becoming more my authentic self. I want to honour and acknowledge the girl I once was while embracing the woman I am today, and I even look forward to the wise woman I hope I will become in future decades. “Maintaining this attitude can be challenging in our youth-obsessed culture. The process of compiling all these images and putting this book together has been an introspective journey for me. In looking back, I see how so much of the confidence I have now was gained through my life experiences. I’ve been working for a long time to get to the place where my interior self matches the exterior you see in these images. I, too, want to feel like the
confident, strong, powerful woman I see on these pages. Even though I may look a little older than she does, I am starting to feel more and more like her every day.” As to what comes next for her, Cindy is still working that out. “I didn’t know it at the time but in some way [writing the book] is the end of a chapter of my life,” she told attendees at a launch function in New York. “People are like, ‘Are you still going to model?’ To me, if I get my picture taken, that’s modelling. If I have to get my hair and makeup done, that’s modelling. So I’m going to continue to do that for Meaningful Beauty and my furniture line but I do think that I’ve finally realised I don’t really have to prove anything in terms of the fashion modelling part of my life any more. But then I said to my husband, ‘What am I going to do when this book’s over?’ It’s taken up so much time over the last two years and I love working. I like being busy, so I don’t know. For ultimate overall wellbeing, we all know we need to keep an eye on diet and exercise, but a good night’s sleep is vital to our wellbeing – and most of us aren’t getting it.
leep disturbance is endemic. We are now sleeping one to two hours less per day than 100 years ago – and it is doing us significant harm. The Resilience Institute recently released the findings of a three year study measuring the resilience of 16,000 people across 250 organisations. The results show a significant problem in the area of sleep health with 43.3 percent of all respondents ranking highly on questions relating to tiredness and fatigue. Lack of quality sleep creates a host of health problems such as exhaustion, fatigue, anxiety and more generally, a lack of motivation and effectiveness. Good decision making, productivity and general wellbeing are all hindered by exhaustion. The cost to our development, lives, health and productivity is enormous. When our bodies are not properly rested coordination, attention, decision making and impulse control all suffer, while cardiovascular risk, blood pressure, metabolic disorders

(obesity and diabetes) and immune system dysfunction increase. “Sleep and rest are vital to our health and wellbeing,” says Stuart Taylor, Founder of The Resilience Institute Australia. “Technology, among other factors, has disrupted our body clocks and the first step to getting a good night’s sleep is understanding the science behind it,” says Taylor.
The science of sleep
Sleep is subject to biological clocks. Our circadian rhythm is a 24.5 hour cycle, built into the suprachiasmatic nucleus (SCN), a small group of brain cells that controls our circadian cycles. Sitting just behind the eyes, the SCN ‘clock’ is paced and regulated by light, in particular, requiring blue light in the early hours of the day to effectively re-set. When we wake up our body temperature rises, cortisol is released, blood pressure rises,
testosterone peaks and we are alert, coordinated and effective. During the day, we build up adenosine, which in high levels increases our propensity for sleep. After 7pm our body temperature drops and at 9pm melatonin secretion begins and we (should) drop into a deep sleep somewhere between 10pm and 2am. Growth hormone is active during this stage, facilitating repair, growth and immunity. A good night’s sleep rejuvenates our cells, builds muscle and repairs the brain, while REM sleep (dreaming) is essential to memory and emotional intelligence. Our suffering today is largely due to a disrupted circadian rhythm. We are perpetually desynchronised by artificial light, heating, electronics and sleep debt. Additionally, we are not exposed to adequate blue light in the early part of the day.
Getting a good night’s sleep is essential to our good health, so it is vital for our wellbeing that we make sleep as much of a focus as we do with fitness and diet. It is time we reset or body clocks and started getting the rest our bodies need.
TWELVE TIPS TO HELP YOU GET A BETTER NIGHT’S SLEEP
1. Commit to a regular
wake up time – preferably around dawn. 2. Get vigorous exercise early in the day. 3. Take powernaps – approximately 15 minutes after lunch. 2. Avoid caffeine after 2pm. 5. Have an early and light evening meal. 6. Limit alcohol and protein intake. 7. Ditch TV, laptops and gadgets after 7pm (or at least two hours before bed). 8. Cool, darken and quieten your bedroom – make it a sleep sanctuary, not a busy place. 9. Remove TV, phones and laptops from bedroom. 10. Develop a relaxation routine before sleep. 11. Get rid of ‘sleep debt’ by going to bed early (rather than sleeping in the next day). 12. Aim for seven to eight hours sleep per night.

ong or short, curly or straight, styled, slicked back, tied up or hanging loose, coloured, pinned or plaited – hair has always been a woman’s crowning glory. For many it is a reflection of identity, an extension of personality and inextricably linked with self-esteem. We spend an awful lot of time choosing the best products, washing, blow-drying, straightening or curling as we attempt to keep those bad hair days at bay. We spend an awful lot of money too, with studies showing the average women will part with more than $70,000 over a lifetime to tame her tresses. Of course most of us look to the red carpet and celebrity magazines as an indication of the latest on-trend hairdo, marvelling at their dramatic cuts and changes in colour. Then, against all hope, we try to replicate it at home, caring not a bit that stars have an army of stylists at their disposal and have certainly not created their new looks with blunt scissors and a bottle of hair dye in front of the bathroom mirror.
eating YOUR WAY TO HEALTHY HAIR
What you put into your body is just as important to the health of your hair, perhaps more so, than the products you use on your luscious locks. Like your skin, a good head of hair – genetics aside – starts with the inclusion of essential nutrients, drinking plenty of water and getting rest and exercise. Iron – Foods filled with iron will help create strong hair, preventing unnecessary hair loss. Include foods like red meat, chicken and fish as well as green leafy vegetables such as spinach, broccoli and salad greens. Sunflower seeds, peanuts and flax seeds are good too. Vitamin C – You need Vitamin C to absorb the iron. It also helps strengthen the hair. Try blueberries, kiwi fruit, oranges, strawberries, broccoli and sweet potatoes.
True, you and I may not have 10 stylists on speed dial, but we can still incorporate some of the advice these professionals offer their celebrity clients into our hair routines to ensure our locks are the shiniest, healthiest and trendiest around. There are the out-of-the-box tips like spraying dry shampoo on bobby pins to prevent them from sliding out of your updo, or using paper towelling instead of a towel to wring the water from your hair to prevent frizzing (yes, weird) or even back combing the roots of fine hair with a new toothbrush to add volume. But there are more conventional ones too. There are so many haircare products out there that sometimes it is difficult to know where to start. Hollywood hairstyling sensation Jen Atkins, who looks after Jessica Alba and Sofia Vergara amongst others, says that you have to make time to find the right products. “Product is key,” she says. “Many times people complain about their hair not working how they want it to. In this day and age, there’s a product for

Omega-3 – Your body can’t make its own Omega-3 fatty acids which help line the scalp and hydrate the hair so get yours from oily fish like salmon, trout and mackerel as well as avocados, walnuts and pumpkin seeds. Carbohydrates – Yes, ditching the carbs can lead to thinning hair but get yours from wholegrains and fruit rather than big chunks of bread. Biotin – Banish brittle hair with wholegrains, egg yolks, yeast products and beans.

He also advises his clients to stay away from the blow dryer and hair straightener on days when they have no official engagements, embracing the natural texture of their tresses for a few days during the week. Dry Shampoo, says George, is one of Hollywood’s best kept secrets, as it not only keeps your scalp fresh between shampoos but also adds texture and volume. If Oscar Blandi is good enough for Drew Barrymore, Naomi Watts and Emma Stone, then he is good enough for me. Celebrities also have bad hair days, says Oscar, they just disguise it
better. He suggests either blow drying the hair sleek and straight and then spritzing a little with a water bottle for a wavy beach hair look without the frizz, or some dry shampoo and a hairdryer for a messy but considered look. He also advises frequent trims for a thicker, healthier more even look. The right tools and insider tips can also do the trick. “When you are blowing out curly hair to straight, any time you want the hair to be really smooth you should use a natural bristle brush,” says Dan Sharp, stylist to Kate Winslet, Charlize Theron and Hillary Swank. “When you pull your hair back in a ponytail, spray a very light mist of hairspray on the brush and brush through the hair to prevent flyaways.” But more than anything, deciding on a new hair style, colour, or attempting a new do, should be fun. After all that’s the whole point isn’t it?

ver since I experienced this treatment I knew it was the biggest breakthrough in skin health that we have seen in decades. Not surprisingly, skin needling has become one of the most popular treatments around the world, and for one very good reason – it gets results. Very real results. Simply put, skin needling is a process whereby a sterile medical roller with very fine needles is used to create microscopic channels deep into the dermis of the skin, stimulating the body to produce new collagen and elastin, resulting in skin that is thicker, plumper and more youthful. VIOLENCE THE FRIGHTENING FACTS YOU NEED TO KNOW
M
ost people in intimate relationships disagree about things from time to time. Disagreements are a normal part of a healthy relationship, and both parties should be able to put forward their different points of view or concerns and feel comfortable discussing them together. In a healthy relationship both parties treat each other as equals and compromise to seek solutions to overcome their problems. However, in a relationship where domestic and family violence is occurring the situation is very different. One person in the relationship uses abuse and/ or violence to control the other person through fear. The victim feels threatened too frightened to argue back or too scared to disagree or express her opinion. The perpetrator has power over the victim. In the majority of cases of domestic and family violence the victims are female. Generally women affected by domestic and family violence do not enter a relationship believing it will become violent. Sometimes, however, women will choose to make a long-term relationship commitment when there is abuse occurring, often believing marriage or moving in together will put a stop to his extreme jealousy and possessiveness. There are also occasions when women enter longer term commitments out of fear, concerned about the consequences for their safety or for others if they don’t. In many abusive relationships the

physical and sexual violence does not begin until after the relationship is well established and for many women their first experience of physical violence will be during pregnancy. Perpetrators of abuse and violence are often initially very controlling and dominating over their partner and this behaviour may mistakenly be interpreted as jealousy or considered a compliment by the woman or a sign of his love for her. In some cases domestic and family violence can continue long after the relationship has ended. People who experience these acts of abuse or violence often feel fearful and unsafe. Domestic and family violence is not restricted to any particular socioeconomic, racial or cultural group. It can occur between people in a range of domestic relationships including spousal relationships, intimate personal relationships, family relationships and informal care relationships. Domestic violence is a gender issue and should be understood in the context of social structure and inequality between men and women, not the dynamics of individual relationships. Male violence towards women results from patriarchal norms in our society where men believe they are superior to women and that it is their innate right to dominate. Sex role stereotypes, homophobic attitudes among men and cultural traditions that devalue women are all elements of this culture of violence.
What constitutes ABUSE? D omestic violence is any of the forms of abuse listed below. All types are unacceptable while some are criminal offences.
CREATING FEAR Fear is a key element in domestic violence and is often the most powerful way a perpetrator controls his victim. Fear is created by giving looks or making gestures, possessing weapons (even if they are not used), destroying property, cruelty to pets - or any behaviour that can be used to intimidate and render the victim powerless. INTIMIDATION Includes smashing things, destroying her possessions, putting a fist through the wall, handling of guns or other weapons, using intimidating body language (angry looks, raised voice), hostile questioning of the victim or reckless driving of a vehicle with the victim in the car. It may also include harassing the victim at her workplace either by making persistent phone calls or sending text messages or emails, following her to and from work or loitering near her workplace. VERBAL ABUSE Using words as a weapon to cause significant damage. This may include screaming, shouting, put-downs, namecalling, swearing, using sarcasm or ridiculing her for her religious beliefs or ethnic background. Verbal abuse may be a precursor to physical violence. PHYSICAL ABUSE Behaviour such as pushing, shoving, hitting, slapping, attempted strangulation, hair-pulling, punching etc. It may or may not involve the use of weapons. It could also be threats to destroy or actually destroying her prized possessions. It can range from a lack of consideration for her physical comfort to causing permanent injury or even death.

• The Domestic Violence Prevention Centre. A not-for-profit community based organisation providing specialist domestic violence support services on the Gold Coast. Established in 1992, The Domestic Violence Prevention Centre provides a wide range of programs to support women and their children affected by domestic and family violence. They also work with men who perpetrate domestic violence. • Through the Gold Coast Domestic Violence Integrated Response they partner with government agencies, non-government agencies and other women’s services to continue
EMOTIONAL ABUSE Behaviour that deliberately undermines her confidence leading her to believe she is stupid or that she is ‘a bad mother’ or useless or even to believe she is going crazy or is insane. This type of abuse humiliates, degrades and demeans the victim. The perpetrator may make threats to harm the victim, her friends or family members or to take her children or to commit suicide. The perpetrator may use silence and withdrawal as a means to abuse. SOCIAL ABUSE This involves isolating the victim from her social networks and supports either by preventing her from having contact with her family or friends or by verbally or physically abusing her in public or in front of others. It may involve continually putting friends and family down so she is slowly disconnected from her support network. FINANCIAL ABUSE The perpetrator takes full control of all the finances, spending and decisions about money so the victim is financially dependent on her partner. Also denying her access to money, including her own, and forcing her and her children to live on inadequate resources and demanding she accounts for every cent spent. This type of abuse is often a contributing factor for women becoming ‘trapped’ in violent relationships. SEXUAL ABUSE Any unwanted sexual behaviours. This may include forced sexual contact, rape, forcing her to perform sexual acts that cause pain or humiliation, forcing her to have sex with others or causing injury to her sexual organs. CONTROLLING BEHAVIOURS Dictating what she does, who she sees and talks to, where she goes, keeping her

This can include preventing her from going to work, not allowing her to express her own feelings or thoughts or to make decisions for herself and not allowing her any privacy or forcing her to go without food or water. SPIRITUAL ABUSE Ridiculing or putting down her beliefs and culture, preventing her from belonging to or taking part in a group that is important to her spiritual beliefs or practising her religion. SEPARATION VIOLENCE Often after the relationship has ended violence may continue. This can be a very dangerous time for the victim because the perpetrator may perceive a loss of control over the victim and may become more unpredictable. During and after separation is often a time when violence will escalate, leaving the victim more unsafe than previously. STALKING Sometimes the victim is stalked by the perpetrator either before or after separation. Stalking includes loitering around places she is known to frequent, watching her, following her, making persistent telephone calls and sending mail including unwanted love letters, cards and gifts although the relationship has ended. Stalking is a criminal offence. Under the stalking legislation more than one type of behaviour has to occur or the same type of behaviour has to occur on more than one occasion. DOMESTIC HOMICIDE The victim and/or her children are killed by the intimate partner as a result of domestic violence. CREDIT: The Domestic Violence Prevention Centre

verybody has secrets, and many keep them because they believe holding onto them will be more beneficial than sharing them. Shared secrets can lead to relationships and friendships ending; their impact can be lasting, however holding onto secrets can be equally damaging to your health and wellbeing.
THE TRUTH IS BETTER FOR YOU Internationally renowned human behaviour expert and best-selling author, Dr John Demartini, explains that every conscious decision you make is based on the belief in that moment, that the choice you’ve made will give you greater benefits than drawbacks. If you are holding onto a secret, it is partly because you are assuming there will be more advantages than disadvantages to keeping that secret quiet. In reality, there are just as many drawbacks to keeping a secret, and secretkeeping is a great way to fast-track illness and disease in the body. Keeping a secret can become very internally conflicting, leaving you in a disempowered state, and can lead to progressively elevating degrees of distress. As most psychologists would agree, repressing information because of fear or internal conflict can create a neurosis and psychosis that can actually result in symptoms. These psychological and physiological symptoms though are actually feedback mechanisms to get you to finally let the secret out, to speak up – to dissolve the internal conflict. Sharing the secret may have just as many benefits as keeping it.
THE HONEST TRUTH ABOUT KEEPING SECRETS A survey of 278 adolescents* found that those who admitted to keeping a secret to themselves experienced a wide range of psychological problems, including low self-control, depression, loneliness, and overall poor relationships with people. When checked on six months later, those who chose to confide their secrets felt dramatically better, and those who still held on to their secrets felt worse.

There are two primordial fears that can lead to the illness inducing stress response from holding onto a secret – they are the fear of losing something you want to keep (e.g. friendship, lover, trust) and the fear of gaining something you don’t want (pain, rejection, untrustworthy reputation). These two polarities can cause an emotionally induced stress response, releasing higher levels of cortisol in the body and ageing you.
IT’S TIME TO SHARE THE SECRET If you have a secret that is causing you stress or worry, make a Pro and Con list to gain a more balanced view on the impact that sharing your secret will have. If you are keeping a secret to protect someone else from pain, you are disempowering them. Some of the most common secrets include love affairs, financial secrets and addictions. In the case of relationships, not telling your partner that you’ve had an affair disrupts the equilibrium in the relationship and can come through and destroy that relationship in other ways. Telling them may end the relationship, but giving them the choice to make that decision is right by them, and by you. With addictions, people become quite clever in concealing their habits and thus often prevent themselves from getting the help they need. The best thing you can do with a secret is share it, taking away the stress and guilt which can lead to prolonged stress on your body and diseases.
HOW TO SHARE YOUR SECRET SUCCESSFULLY Dr Demartini says that when it comes to sharing your secret - and freeing yourself of the pain that comes with keeping it – the key is to carefully think through how you are going to discuss the matter. Choose a private place where you can talk freely and do your best to keep the conversation calm. How the other person reacts is not within your control; what is in your control is how you respond. Be empathetic and compassionate and remember that this may be a shock for the other person. Even if the conversation is a difficult one, in the long run honesty is always better than deceit. What to do when you are faced with workplace bullying

Take time to think about what you need to say and how you will go about it. Ask for the advice and support you need from other leaders, HR people on the team, your colleagues, or people outside of your organisation. Be prepared for how your boss may respond to the points you intend to bring up.

Act with conviction. There is no excuse or justification for bullying, regardless of who you are and the role you play. So take a firm stand and speak with confidence when you ask your boss to take responsibly for the unnecessary and damaging impact their behaviour has on other people.
INFLUENCE AWARENESS
Understand that they may not be aware. As much as you think common sense suggests they should know better, some people don’t appreciate the extent to which their behaviour negatively impacts on others. Help your boss to understand why their

Matching a bully’s behaviour is neither appropriate nor effective. Maintain your own behaviour at a standard you can be proud of and calmly take steps to deal with the issue. Your aim should be to influence your boss’s thoughts, feelings and actions by delivering honest feedback with respect and sensitivity. A support person in the meeting may help keep things on track.
If despite your best efforts to improve the situation, you continue to be bullied, you can take your concerns to Fair Work Australia. On 1 January 2014 new laws were introduced that provide anyone who reasonably believes that he or she is being bullied at work the right to apply to the Fair Work Commission for an order to stop the bullying. The Fair Work Commission can only make an order for bullying to stop when there is a risk that the bullying will continue. Therefore you need to apply for a bullying order whilst still employed. If you are no longer at risk of being bullied because you no longer work there, no order can be made. You also need to be employed by a ‘constitutionally covered business’. Not all behaviour that makes a person feel upset or undervalued at work is classified as workplace bullying. Examples of behaviour, whether intentional or unintentional, that may be considered to be workplace bullying if they are repeated, unreasonable and create a risk to health and safety include, but are not limited to: • Abusive, insulting or offensive language or comments. • Unjustified criticism or complaints. • Deliberately excluding someone from workplace activities. • Withholding information that is vital for effective work performance.
• Setting unreasonable timelines or constantly changing deadlines.
• Setting tasks that are unreasonably below or beyond a person’s skill level. • Denying access to information, supervision, consultation or resources to the detriment of the worker. • Spreading misinformation or malicious rumours. • Changing work arrangements, such as rosters and leave, to deliberately inconvenience a particular worker or workers. A single incident of unreasonable behaviour is not considered to be workplace bullying, however it may have the potential to escalate and should not be ignored.

OVEMENT 50 percent of age-related joint degeneration is thought to be related to disuse. So keep in mind the old adage of use it or lose it. USCLE Maintaining muscle strength prevents abnormal and dysynchronous joint movement, which leads to rapid, sometimes exponential joint degeneration, the same as in any mechanical setting. So maintaining muscle strength is imperative in reducing joint wear. ASS Excess body mass increases joint reaction forces, so try to keep to a healthy weight range. Be as fit and as healthy as you can while maintaining a happy and healthy lifestyle. AINTENANCE Appropriate exercise is important, so run if you can; when you can’t run, walk; when you can’t walk, swim; when you can’t swim, cycle. At age 50 many people’s knees don’t like running but walking, swimming and cycling are effective substitutes. Finding a low impact exercise that works for you is the key. ERRIMENT All of the above is much easier if it is done in a fun, friendly environment. There is a quote in Christopher McCandless’s story ‘Into the Wild’ that fits: “Happiness isn’t real unless it is shared”. So organise yourself to be with a group of friends and find a common shared love of exercise or some form of energyburning activity. This will turn a resolution into a permanent lifestyle choice.
KNEE REPLACEMENT
Total knee replacement surgery involves the replacement of an arthritic knee joint with prosthetic components. Total knee replacement surgery, also known as knee arthroplasty, refers to the replacement of the end of the thigh and shin bones (femur and tibia) and the insertion of metal/polyethylene composites and kneecap (patella) substitutes by a knee surgeon. Total knee replacement surgery is recommended when pain and loss of function can no longer be effectively managed by other non-surgical treatments (e.g. rest, physiotherapy and medication). Surgery is typically deemed as necessary when you are suffering from severe or chronic symptoms, such as: uncontrolled pain; loss of daily function; persistent swelling around the knee capsule; thinned or absent cartilage lining; narrow or irregular joint space; bone spurs or thickening around the joint edges. HIP REPLACEMENT Hip replacement surgery is one of the most important surgical advances in modern medical history, and has one of the highest success rates of any procedure. As one of the body’s primary loadbearing joints, the hip is prone to injury and degradation over time, including osteoarthritis, rheumatoid arthritis and trauma-induced arthritis. Hip replacement surgery involves replacing all or part of the damaged ball-and-socket joint with an artificial joint, with the goal of reducing pain, restoring mobility and generally improving joint function. Hip replacement surgery, also known as hip arthroplasty, is recommended when other non-surgical treatments (e.g. physiotherapy and medication) have failed to yield satisfactory results. Usually, conditions that can be a sign that surgery should be considered by a hip surgeon are: uncontrolled pain; stiffness and loss of function; significant swelling around the hip joint; thinned or absent cartilage lining; narrow or irregular joint cavity; bone spurs or thickening around the joint edges.
SPORTS INJURIES AND LIGAMENT RECONSTRUCTION The Medial Patello-Femoral Ligament (MPFL) is a ligament on the inside of the kneecap that stablises the patella from lateral dislocation. When this ligament is torn, ruptured or otherwise damaged, the kneecap can go out of joint. MPFL reconstruction surgery restores stability to the knee by replacing the MPFL with a hamstring tendon, preventing the kneecap from repeatedly going out of joint and/or the knee dislocating. Surgery is usually recommended when a severe injury is sustained and dislocations become recurrent, or when a loose body or other disorder is detected within the joint. This surgery is typically undertaken in high-level athletes, or in patients who otherwise engage in high levels of activity. Meniscal tears are a very common form of knee injury, usually suffered while playing sports or by twisting the knee. Patients tend to report a slipping, popping, locking or ‘giving’ sensation when the injury happens. Meniscal repair surgery is a keyhole procedure (arthroscopy) designed to remove or repair tears in the meniscus. The Anterior Cruciate Ligament is a fibrous stabilising ligament that connects the femur and tibia (thigh and shin bones), providing support and stability. Can hypnotherapy help stop bad habits and cure your fears?
F
or many of us who suffer from conditions such as anxiety and insomnia, or want to overcome an irrational fear, quit smoking or stop other bad habits, we tend to opt for medication to assist, which can often come with nasty side effects. But there is a chemical-free alternative that many people are finding useful - hypnotherapy. While many of us think of hypnosis as a sort of trick, or something we see in the movies, clinical hypnotherapy can be a powerful way to change patterns, behaviours and feelings in a natural, drugfree way – and quickly. That’s the message from Yildiz Sethi, a Brisbane-based clinical registered hypnotherapist, who says that just three to five sessions is all it takes for permanent positive change. So, how does hypnosis actually work? “Hypnosis is a trance state and in itself is not therapeutic, other than relaxing; while hypnotherapy is a therapeutic process that takes place while in a trance state to make positive changes relatively quickly. “Hypnosis is a natural state,” Yildiz says. “We each go in and out of trance many times each day. This is why hypnotic

trance is a natural state to use. The mind is made up of only 15-20 percent conscious thoughts and feelings and the rest is unconscious. We make good rational decisions with our conscious mind, but most of the problem beliefs and feelings are in the unconscious mind that is not possible for us to access. This is why hypnosis is so useful. It can allow the conscious mind to relax so that the unconscious thoughts and feelings may be located and positive change can take place.” Trust is paramount in hypnotherapy, and Yildiz advises to thoroughly research the credentials of those you may consider seeing. “Always choose a clinical registered Hypnotherapist who is a member of the NHRA (National Hypnotherapy Register of Australia). In this way you can be assured of appropriate training, effectiveness and ethical standards,” said Yildiz. “Losing weight on one level is simple - eat less and exercise more. However, for many it is not so simple, as low self-esteem or comfort eating can sabotage good intentions. Hypnosis can be very effective in clearing up sabotage patterns and helping to improve self-esteem.”

hat’s not to love about summer? The weather is warmer, the days are longer, hair turns lighter and skin gets darker. What’s more, getting up for the gym doesn’t involve putting on three layers of clothes in the dark, hooray! With all the time we will be spending outdoors, sweating and soaking up the sunshine, we tend to forget about drinking water. Your body depends on water to survive. Every cell, tissue, and organ in your body needs water to function. Your body needs water to control temperature, to remove waste, toxins and to lubricate joints. As water makes up 45 to 75 percent of your weight, you can understand why it’s so important to keep our fluids up. For many people, (especially active people like yourselves) maintaining a healthy fluid balance can be difficult, however, keeping your body hydrated is vital for proper body function! Have you ever noticed that sometimes having a drink before you eat supresses your appetite? That may be because you’re actually thirsty, not hungry! Keeping well hydrated ensures that you’re focused, energised and your concentration is maintained. It also assists to keep skin moisturised and helps to reduce headaches and drowsiness. I know myself; it’s hard to drink water. I know it sounds silly but I often forget to drink water and by the time I remember, I’m dying of thirst- a clear indication I’m already dehydrated. We lose water every day and it’s not just from the obvious (going to the toilet). We also lose water through sweat, being sick and even just by breathing. A strong sign that shows we are dehydrated is the colour of our urine. A clear sample indicates that we are hydrated, whilst a very yellow test shows that we are dehydrated – so if you notice this, start sipping! Symptoms like this indicate to us that we have a strong need for
water and everything it contains. Wait a second? Everything it contains? I thought water was… just water? The elements in water contain magnesium, calcium, potassium, sodium and minerals, which have various benefits for our bodies and control balance. I have been searching for new ways to hydrate my body as I’m an active person and like my fair share of sunshine. We speak to Bikram Yoga devotees Linda Reynolds, Tracie Anderson, Tricia Tewaaka and Jen Walkerdene When did you start Bikram Yoga and why? LINDA: I started Bikram Yoga just over three years ago. I attended my first class in a vain attempt to convince a dear friend (and recent Bikram convert) that I wasn’t the yoga type. I was a runner and a gym junkie. I assumed it was going to be similar to all the other yogas I had tried over the years: too slow, too soft, too airy-fairy. I couldn’t have been more wrong. Upon leaving the hot room for the first time I knew this was a totally different ball game. The intense heat challenged both my body and mind. The feelings of euphoria after class, addictive. I was hooked! TRACIE: I started in May 2014. I had come from a 24 year marriage with three kids, and yoga was helping me to deal with things. My youngest daughter and I had done a few classes together of other styles of yoga and she suggested we try it. TRICIA: I heard it was very challenging and helps develop your physical and mental strength so I thought ‘Great! I am trying this out!’. I’ve now been doing Bikram Yoga
for four years and I can honestly say in this time what I was told has been proven right. JEN: I started just over three years ago after sustaining injuries from running and sports. Stretching in a hot room is kinder to the body. How has Bikram changed your life? LINDA: Bikram Yoga has completely transformed my life. I am (thankfully) a very different person today. Emotionally, spiritually, physically. My flexibility has increased, dramatically eradicating my sciatic pain within weeks. My posture, strength and spinal alignment has also improved. Once I became used to the heat, my mental strength, self-esteem, determination and focus sharpened. Deep feelings of stillness and peace grew and I began judging myself and others less. TRACIE: Bikram Yoga has changed my life in a huge way. My life has completely transformed. I have learnt to push my boundaries and to listen to the quietness within. It has taught me to be calm in the ‘eyes of life’s storms’ and that no matter what, I will always be ok, and I can do and

be anything I want. I have left the past behind and I am eternally grateful and happy every day. Every day I feel like I am transforming and getting to know my body and myself. JEN: It allows me to switch off, and to be challenged physically and mentally. Emotional eating expert Magic Barclay shares her four steps to losing weight and keeping it off
W
e live in a world of convenience foods, packaged meals, diet shakes and reality weight-loss shows, and yet, obesity statistics are the highest they have ever been. We are in the grips of a pandemic in our health system and in our lives. Every story has its villain, in this case it’s the kilograms that tend to join us in our lives without invitation. However, for every villain, there is a hero: and in this case the hero is you. By following these simple steps, you can take control of your weight with a healthy, holistic approach. Who are you? The most vital step in losing weight and keeping it off is to identify who you are. How many times have you heard someone say “I’m fat”? Almost everyone does it. The problem with these words is that you are identifying yourself as fat. What you should be doing is saying “My name is ‘. . .’ and I’m carrying some extra weight for
now”. This not only makes the weight-gain a temporary matter in your conscious mind, but separates the weight from you as an individual in your subconscious mind. Once you’ve identified yourself as an individual separate to the weight, you can go about dealing with the situation with minimal trauma to your self-esteem. One of the most common triggers to weight-gain is a lowered self-esteem. It is imperative to stop this cycle of psychological trauma and weight-gain, before other health issues arise or deepen. The 4P challenge: Plan, Pre-empt, Perform, Prevail. When you discuss weight-loss, you are often overloaded with advice, research and fads. Much of this is focused on diets and exercise. The most achievable approach to permanent weight-loss is to take the 4P challenge. The 4P challenge encompasses two segments. The first segment of the challenge is to Plan and Pre-empt. The second is to Perform and Prevail.
Plan: Make a plan of your day. Allow sufficient time in your day to rest, work, sleep, eat and exercise. Include exercise opportunities (no matter the scale of them). When deciding what to eat to support your weight-loss, include preparation time for healthier foods. Do your best to avoid convenience foods and other fads. As tempting as they are, there is little to no nutritional value in them. As Hippocrates famously said, “Let food be thy medicine and medicine be thy food”. Foods deficient in nutrients cannot and will not sustain weight-loss, optimum health nor recovery from illness. Pre-empt: When planning your day, preempt any obstacles that may arise. Feeding a family, attending functions and running out of time in your day are all common obstacles that you may face on a daily basis. Envisage your most difficult day, allow for every eventuality to ensure success in your weight-loss. Perform: When setting out to lose weight, lofty ideals can be par for the course. At no point should you cut corners. Perform to the best of your ability. Allow yourself to make mistakes, allow yourself to overcome them and allow yourself to learn from them. Prevail: Celebrate each win that you have, no matter how small. Reward yourself along your journey, keep a gratitude journal to reflect on in tough times. Success breeds success. When you create a reward system for yourself (not food based), you will strive to succeed rather than revert to old patterns. Hydrate and refresh The one piece of the weight-loss puzzle that is paramount is to hydrate yourself adequately. Weight-loss can release toxins within the body. Hydration will aid in cleansing your body and allow you to feel well, not resentful of your new path. For sufficient hydration, try to drink a litre of water for every 22 kilograms of bodyweight. Making hydration a part of each day will help your body refresh by eliminating all toxins and regulating your hormones. Our preoccupation with what greets us on the scales each morning has become alarming. The good news is that following these four simple steps will give you back the control of the situation. You have the ability to halt the kilograms from piling on, you have the ability to regain your life and your health.

arolyn Hartz, Australia’s first sugar-free pioneer, began her sugar- and gluten-free journey 27 years ago when she was diagnosed with pre-diabetes and gluten intolerance. The now 67-year-old found the natural sugar-free sweetener she’d been looking for in xylitol, a 100 percent all-natural, sugar-free sweetener that is derived from birch trees, the husks of corn cobs and found in many fruits and vegetables that we can eat on a daily basis. INGREDIENTS Butter or oil to grease 250g raw almonds, ground 80g shredded coconut 4 X-large eggs 100g Perfect Sweet® xylitol Pinch of salt 20g cacao or good quality cocoa powder 150g coconut oil, melted 100g fresh or frozen raspberries Dairy Free Ganache 3 ripe avocados 100g coconut oil, melted 60g cacao or good quality cocoa powder 75g Perfect Sweet® xylitol 1 teaspoon pure vanilla extract 250g raspberries Dark Bitter Chocolate (recipe at sweetlife.com.au) or good quality sugar-free dark chocolate, shaved to decorate.
TIP: If you
cannot find sugar-free chocolate and your lifestyle allows you to have a little sugar, you can use a good quality 70 percent dark chocolate.
Preheat oven to 140˚C/120˚C fan-forced. Brush 4 x 17cm spring form cake pans with butter to grease. Line with baking paper. Combine the ground almonds and coconut in a large bowl, then set aside. Place the eggs, xylitol and salt in a clean bowl and, using an electric beater on high speed, whisk until pale. Add the cacao and beat on slow speed until combined. Gradually add the coconut oil and beat on medium speed. Add the almond and coconut mixture and fold into the egg mix to combine. Pour a quarter of the cake mixture into each cake pan. Then place a quarter of your raspberries (25g) into each pan and push down into the cake mixture. If you only have 1 or 2 cake pans, bake 1 or 2 cakes at a time until you have four layers. Bake 15 minutes or until a skewer inserted into the centre comes out clean. Cool for 10 minutes in the pan then turn onto wire racks to finish cooling. Dairy Free Ganache Process all ingredients until smooth and shiny.
TO ASSEMBLE Use a quarter of the ganache and spread over the first cake layer, top with 50g raspberries. Add the second cake layer, use a quarter of the ganache and spread over the second cake layer, top with 50g raspberries, repeat for the third layer. Top with the fourth layer, cover with remaining ganache and decorate with the remaining 100g raspberries. Finish with shaved/ grated chocolate and serve.

INGREDIENTS Butter or oil, to grease 200g almond meal 50g arrowroot 30g flaxseed meal 30g chia seeds 1 tsp bicarb soda ½ teaspoon salt 60ml coconut oil, melted 30g Perfect Sweet® xylitol 2 X-large eggs 250g ripe mashed bananas (approx 2 large bananas) 1 tsp pure vanilla extract 125ml coconut milk Powdered xylitol for dusting

METHOD Preheat oven to 150˚C/130˚C fanforced. Brush an 18cm x 28cm slice tray with butter or oil to grease. Line with baking paper. Mix the almond meal, arrowroot, flaxseed meal, chia seeds, bicarb soda and salt in a large bowl. Use an electric beater to beat the coconut oil and xylitol in a separate bowl. Add the eggs and beat well on high speed. Add the mashed banana, vanilla and coconut milk and beat together on medium speed until combined. Add to the almond mixture and whisk on medium speed to form a batter. Pour the batter into the lined slice tray and bake for 30 minutes or until a skewer inserted into the centre comes out clean. Cool and cut into 18 slices. Before serving dust with ground Perfect Sweet® xylitol
CHOCOLATE BIRTHDAY CUP CAKES MAKES 6 LARGE CUP CAKES
INGREDIENTS 2 X-large eggs 70g Perfect Sweet® xylitol 100g almond meal ½ tsp gluten free baking powder Pinch of salt 70g unsalted butter, melted 100g Dark Bitter Chocolate (recipe at sweetlife.com.au) or good quality sugar-free dark chocolate, chopped

METHOD Preheat oven to 180˚C/160˚C fan-forced. Line a 6 large cupcake pan with cupcake papers. Use an electric beater to beat the eggs and xylitol in a large bowl, on high speed until pale and creamy. Add the almond meal, gluten free baking powder and salt and beat on medium speed until well combined. Fill a small saucepan with water and bring to the boil. Meanwhile, place the chocolate in a bowl large enough to cover the saucepan and set aside. Once water is boiling, remove from the heat and place bowl with chocolate on top, stirring gently to melt. Once melted, add the chocolate mixture to the egg mixture and stir until combined. Divide mixture into 6 large cup cake papers. Bake for 20 - 25 minutes or until a skewer inserted into the centre comes out clean. Raspberry & Cream Cheese Frosting Use an electric beater to beat cream cheese, butter and xylitol in a medium bowl until smooth. Add the strained raspberry puree, if using, and mix well. Spread or pipe frosting onto cupcakes. Decorate as desired.
BAKED LIME CHEESECAKE SERVES 8
INGREDIENTS 250g light fresh ricotta 220g light cream cheese 250g low fat natural yoghurt 90g Perfect Sweet® xylitol 2 X-Large eggs Zest of 1 lime, finely grated 2 tsp pure vanilla extract
TIP: Leaving the cheesecake to cool in the oven helps prevent the surface from cracking.
METHOD Pre-heat oven to 160˚C/140˚C fan-forced. Line the base of a 20cm spring form pan with baking paper. Place all ingredients in a large bowl. Use an electric beater to beat at medium speed until smooth. Pour mixture into prepared pan and bake for 50 minutes or until set and a round bladed knife inserted in the centre comes out clean. Turn oven off and leave cheesecake to cool in oven with the door slightly ajar. Run a knife around the edge of cheesecake to loosen, remove the side of the pan and refrigerate the cheesecake to chill until cold, preferably overnight.
VARIATION:
Lemon Cheesecake - Replace the lime zest with zest of 1 lemon.

METHOD Line the base of a 17cm spring form baking pan with baking paper. Open vanilla pods and scrape seeds, with the blunt side of a knife into a saucepan. Add pods and milk and bring to the boil. Remove from heat. Using an electric beater, beat the egg yolks and xylitol in a bowl on high speed until pale and creamy. Using a balloon whisk, gradually pour the boiling milk mixture over the egg mixture, while quickly whisking. Remove pods. Pour mixture back into the saucepan and heat gently, stirring constantly until the custard thickens enough to coat the back of a wooden spoon. Raspberry Layer Pour 200ml of the custard mixture into a bowl, add the raspberry puree, rosewater and cream. Mix well and refrigerate. Vanilla Layer Pour in 250ml of the custard mix into another bowl. Add the cream, mix well and refrigerate. Chocolate Layer Pour the remaining 200ml warm custard and the chocolate into a clean bowl and mix well. Add the cream and mix again. Refrigerate. Follow the instructions on your ice cream maker to first churn the Raspberry Layer. Spoon into the prepared pan and smooth over with a spatula. Freeze. Repeat for the Vanilla Layer then smooth mixture over the Raspberry Layer. Freeze. Lastly, churn the Chocolate Layer. Spoon on top of Vanilla Layer and freeze, preferably overnight. To serve, turn onto a serving dish and decorate with fresh berries and shaved chocolate.

Preheat oven to 180˚C/160˚C fan-forced. Brush a 22cm spring form pan with butter or oil to grease. Line base and sides with baking paper. Place the chocolate, butter and orange zest in a saucepan. Stir over a low heat until chocolate melts and mixture is smooth. Set aside to cool. Use an electric beater to beat the egg yolks and xylitol in a large bowl until pale and creamy. Gently fold in the chocolate mixture and almond meal. Thoroughly clean your electric beater, then whisk egg whites in a clean bowl until soft peaks form. Use a large metal spoon to fold half the egg whites into the chocolate mixture to loosen. Fold in remaining egg whites. Pour mixture into prepared pan and bake for 50 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 15 minutes, then turn onto a plate to finish cooling. Cut into shapes using a heart cookie cutter. Dust with cacao, cocoa or powdered xylitol before serving.

onfusion surrounding which foods are good for us, and which aren’t, is at an all time high, in line with our obesity levels. According to Sheila Zhou, a scientist with USANA, a producer of high quality supplements, “It’s easy to get confused by the various ‘healthy’ food options available these days. Whether something is ‘fat free’, ‘all-natural’ or ‘organic’, we are often tricked into consuming foods that aren’t as nutritionally balanced as we think. In fact, sometimes the calories and chemicals in these ‘health foods’ are higher than in our favourite junk foods.” To help you make the right healthy food choices, Ms. Zhou shares her expert tips on a few of the most common products people have nutritionally incorrect misconceptions around:
2. SMOOTHIES
What could be wrong with blended fruits, veggies and milk or ice? Yes, smoothies are primarily made with those ingredients, but they can also be full of chocolate, peanut butter, frozen yogurt and syrups. All of those additives decrease the nutritional value, and can make drinking a smoothie just as bad as slurping on a milkshake. Instead, products such as USANA’s Nutrimeal, for example, are great
4. SOUP On a cold day people want a quick and easy meal that will warm them up. A simple option is canned soup, but it can also be a big mistake. Canned soups are typically high in salt, which can cause bloating and fluid retention. 1. SALAD Most people are likely to order a salad at a restaurant if they are looking for a healthier option on the menu. However, not all salads are created equal! In fact, many can have toppings that make eating a salad just as unhealthy as choosing a burger. Adding croutons, shredded cheese, dried fruit, and select types of dressings can make your salad an unhealthy alternative. By opting for veggies and lean meats as toppings, with oil and vinegar to top it off, you can save yourself from eating as many as 500 calories per serve – so don’t think that just because something has lettuce in it, it’s in the clear.

5. MUESLI BARS Many people have the belief that muesli bars are healthy snacks, with some even calling them a ‘breakfast staple’. superfood chocolate tart RECIPE FROM LOUISA LARADO, WA SERVES 8. FREE FROM: DAIRY, GLUTEN
INGREDIENTS
1/2 cup (75g) hazelnuts 1/2 cup (90g) Bioglan Chia Seeds 1/2 cup (75g) sunflower seeds 1/2 cup (50g) desiccated coconut 2 tablespoons Bioglan Coconut Oil 2 tablespoons rice malt syrup Filling 1 large ripe avocado 3 heaped tablespoons Bioglan Cacao Powder 125g Bioglan Coconut Oil 3/4 cup (185ml) rice malt syrup 1 cup (140g) fresh or frozen berries, lightly crushed
METHOD
Grease a 20cm springform cake tin and line the base and side with baking paper. Add hazelnuts, seeds and coconut to a food processor and process until fine. Add coconut oil and rice malt syrup, and process until well combined. Press onto the base and side of the tin to reach 1cm below the top. Put the base in freezer while you prepare the filling. To make the filling, scoop avocado flesh into cleaned food processor with cacao powder, coconut oil and rice malt syrup. Whiz until well combined. Fold in the crushed berries. Pour the filling into the base and put it back in the freezer overnight or until firm. Remove tart from freezer and bring to room temperature before serving
chia sweet potato rissoles with beetroot cream RECIPE FROM ZOE FITZPATRICK, NSW SERVES 4-6 FREE FROM: DAIRY, GLUTEN, NUTS
INGREDIENTS Rissoles 400g orange sweet potato, steamed and mashed 2 spring onions, chopped 1/4 cup (15g) chopped fresh coriander 400 g can organic chickpeas, rinsed and drained 2 tablespoons sunflower seeds 2 tablespoons pumpkin seeds 2 tablespoons Bioglan Chia Seeds, plus extra for coating 2 tablespoons Bioglan Coconut Oil, melted plus 1 tablespoon for cooking 1 teaspoon ground turmeric 1 teaspoon ground cumin 1/2 teaspoon celtic sea salt Black pepper, to taste
Beautiful beetroot cream 1 avocado, halved and peeled 1 heaped teaspoon Bioglan Beetroot Powder Juice of 1–2 limes 1–2 tablespoons olive oil
METHOD
To make the rissoles, simply mix the sweet potato with all the other ingredients until well combined. Ideally, leave the mixture to sit for an hour (or longer if you have time) so the chia seeds can work their magic and bind the mixture. Take ¼ cup of the sweet potato mixture, roll it into balls and coat with a sprinkle of chia seeds. Repeat to make eight rissoles in total. For the star of the show – the beetroot cream – throw all the ingredients into a blender and blend until smooth and creamy, adding the lime juice and olive oil to taste. Melt the remaining coconut oil in a frying pan over medium-high heat. Cook the rissoles for about 5 minutes on each side or until golden and heated through. 1 cup (110g) hazelnut meal 1 cup (100g) desiccated coconut 1/3 cup (65g) Bioglan Chia Seeds 1/3 cup (45g) Bioglan Cacao Powder pinch of sea salt 1/2 cup (100g) Bioglan Coconut Oil, melted 1/3 cup (80ml) rice malt syrup or pure maple syrup 1 teaspoon vanilla bean paste 3/4 cup (175g) coconut chocolate spread
METHOD
Grease a 16 x 26cm slice tin and line the base and sides with baking paper extending 4cm over the sides. Combine hazelnut meal, coconut, chia seeds, cacao powder and salt in a bowl. Put coconut oil, rice malt syrup or maple syrup and vanilla bean paste in a separate bowl and whisk until combined. Pour into the dry ingredients and mix well. Press mixture into the slice tin and smooth over with the back of a spoon. Spread a decent layer of coconut chocolate spread over the top and place in the freezer for 30 minutes to set. Cut the brownie into 18 pieces. Store in the fridge for up to a week. Bring to room temperature before serving. Yum!
kofta with tabouleh & tahini RECIPE FROM JODY VASSALLO, NSW SERVES 6. FREE FROM: DAIRY, GLUTEN, NUTS
INGREDIENTS
500g lamb mince 250g beef mince 1 onion, grated 2 cloves garlic, crushed 1 tablespoon Bioglan Cumin + Coriander Meal Booster 1 teaspoon ground allspice 1 teaspoon ground cinnamon 2 tablespoons chopped fresh flatleaf parsley 1/4 cup (60ml) olive oil 1 tablespoon tahini, at room temperature 2 tablespoons lemon juice 1/4 cup (60ml) water
Tabouleh 1/2 cup (100g) buckwheat 1 cup (50g) chopped fresh flat-leaf parsley 1 cup (50g) chopped fresh mint 200g cherry tomatoes, chopped 1/4 cup (60ml) lemon juice 1/4 cup (60ml) extra virgin olive oil 1 tablespoon Bioglan Kale Powder 2 cloves garlic, crushed
METHOD
Preheat the oven to 200째C (Gas 6). Put the lamb mince, beef mince, onion, garlic, meal booster, spices and parsley in a bowl. Massage the ingredients together using your hands until well combined. Form into torpedo shapes and place on a baking tray. Heat the oil in a large frying pan over medium heat. Cook the kofta in batches for 5 minutes or until browned all over, then place on a clean baking tray. Transfer the kofta to the oven and bake for 5 minutes more to ensure they are cooked through. Whisk the tahini, lemon juice and water in a bowl. You may need to thin it down with a little extra water, depending on how thick the tahini is to begin with. To make the tabouleh, cook the buckwheat in a saucepan of boiling water for 20 minutes or until tender (do not overcook or it will go mushy). Drain and rinse under cold water, then transfer to a bowl with the parsley, mint and tomatoes. Whisk the lemon juice, olive oil and garlic, pour over the tabouleh and toss to combine. Arrange the kofta on a bed of tabouleh, drizzle with the lemon tahini, serve with your choice of accompaniments. 64 SLIM MAGAZINE SUMMER 2016

DUKKAH CHICKEN, QUINOA AND ROAST PUMPKIN JAR SERVES 4
INGREDIENTS 600g Kent pumpkin, skin on, cut into wedges ⅔ cup red quinoa, rinsed ⅓ cup store bought dukkah ¼ cup olive oil 2 x 200g chicken breast fillets, trimmed 350g frozen broad beans 3 cups mache lettuce or baby spinach 50g marinated Persian feta in oil, plus 2 tbsp oil, reserved 2 tbsp lemon juice 1 tbsp honey
METHOD
SALADS IN A JAR
Preheat the oven to 180°C. Coat the pumpkin with half of the olive oil, season with a pinch of sea salt and place onto an oven tray lined with baking paper. Roast the pumpkin for 30–35 minutes, or until the pumpkin is tender. Remove from the oven and set aside to cool. Meanwhile, place the quinoa in a pot, cover with 320ml of cold water and place on a medium-high heat. Bring up to the boil, then turn down to a gentle simmer and cook for 12–14 minutes, or until the quinoa is fluffy and all the water has been absorbed. Set the quinoa aside to cool. Coat the chicken with the dukkah and remaining oil. Cook the chicken in a non-stick frying pan for 3–4 minutes each side, or until cooked through. Remove the chicken from the heat, cool for 5 minutes before slicing. Cook the broad beans in a pot of boiling salted water for 3–4 minutes, drain and refresh under cold water. Slip the outer skin off from the broad beans and discard. Whisk the reserved Persian feta oil together with the lemon juice, honey and a pinch of sea salt. Pour the dressing over the quinoa and mix through. Place the quinoa in the base of serving jars and layer the roast pumpkin, broad beans, chicken and mache lettuce on top of the quinoa.

Place all the pesto ingredients into a small food processor and blend until well combined. Cook the Orecchiette pasta in a large pot of salted boiling water according to packet instructions. Drain and toss through half of the olive oil to stop it from sticking together. Set aside. Heat a non-stick frying pan or chargrill pan over a high heat. Toss the zucchini with the remaining olive oil and a pinch of sea salt flakes and grill for 1 minute each side, or until tender. Set aside to cool. To serve place the pesto into the base of serving jars. Layer the pasta, zucchini, baby spinach, tomatoes and baby basil leaves into the jar.
SPICED STEAK WITH CARROT AND QUINOA JAR
SERVES 4
INGREDIENTS 3 large carrots, roughly chopped 1 red onion, sliced into wedges 2 tbsp honey 1 tbsp cumin seeds 80ml olive oil 70g mixed coloured quinoa, rinsed 2 x 280g porterhouse steaks, trimmed, at room temperature 1 tsp cracked black pepper 1 tsp dried chilli flakes 100g baby rocket leaves ½ bunch coriander, leaves picked juice and zest of 1 lemon ¼ cup whole roast almonds, chopped
METHOD Preheat oven to 200°C. Combine the carrots, onion, half of the honey, half of the cumin seeds, 20ml of olive oil and a pinch of sea salt flakes in a large bowl. Toss to coat, then spread out mixture onto a lined oven tray. Roast for 20 minutes, or until the carrots are tender and fragrant. Remove from the oven and set aside to cool. Meanwhile, place the quinoa in a small pot over a medium-high heat and cover with 160ml of cold water. Bring up to the boil, then turn heat down to a gentle simmer, cover and cook for 12–14 minutes, or until quinoa is fluffy and all the liquid has been absorbed. Set aside to cool. Heat a non-stick frying pan over a medium-high heat. Coat the steaks in the remaining cumin seeds, black pepper, dried chilli flakes, 20ml of the olive oil and a pinch of sea salt flakes. Cook the steaks for 2–3 minutes each side, or until cooked to
your liking. Remove the steaks from the heat and allow to rest for 5 minutes before slicing into strips. Whisk together the lemon juice, lemon zest, remaining honey, remaining 40ml of olive oil and a pinch of sea salt until well combined. Toss the lemon dressing through the cooked quinoa and place into the base of serving jars. Layer the roast carrots, coriander, onions, steak slices, rocket and almonds on top of the quinoa.
SPICY PRAWN JAR WITH JALAPENO SALSA
SERVES 4
½ cup Greek yoghurt ¼ cup whole egg mayonnaise 60g sunflower sprouts (or other sprouts) 1 lime, cut into wedges to serve Jalapeno Salsa ¼ cup pickled jalapenos 2 green spring onion, sliced 2 tbsp white vinegar ¼ bunch coriander, leaves picked 2 tsp caster sugar or honey 1 tbsp olive oil
METHOD
INGREDIENTS 24 green king prawns, peeled, tail on 1 tbsp olive oil 1 tbsp store bought Cajun seasoning 3 cups cabbage, finely sliced 1 cup kale leaves, finely sliced
Heat a non-stick frying pan over a medium heat. Coat the prawns in the olive oil, Cajun seasoning and a pinch of sea salt flakes. Cook the prawns for 2–3 minutes, or until just cooked through. Remove from the heat and set aside to cool. Meanwhile, place all the jalapeno salsa ingredients into a small food processor and blend until smooth. Place the salsa into the base of serving jars. Mix together the cabbage, kale, yoghurt, mayonnaise and a pinch of sea salt and place on top of the salsa in the jars. Layer on top the prawns, sprouts and lime wedges.
