I recently had a scare with a lump in my breast. Thankfully, I was lucky and the results came back as benign, but it highlighted for me the need to be ever vigilant with our health. Early detection is the key to a successful outcome. So, if you have been putting it off, please have yourself and your loved ones checked out. Meet Amber Walker Amber Walker spent the past three decades experiencing the highs and lows of life, from debilitating depression through to being a multiple World Champion athlete and mother. SKIN AGEING through the YEARS 20s
At this age, if sun protection has been adhered to as a child and teen, there should not be a lot of evidence of skin ageing. The first evidence of ageing starts around mid-20s with fine lines under the eye area as elastin starts to decrease and a reduction in fat under the eyes begins. Under eye dark circles may be hereditary but can often be exacerbated by iron deficiency. Crows feet may start to become apparent. OBJECTIVES: Prevention: caring well for your skin at this age sets you up for beautiful skin for a lifetime. BEST PRODUCTS: A gentle cleanser and moisturiser based on Vitamin A such as Environ Skin Essentia, sunblock and eye cream.
BEST TREATMENTS: Unless there is a skin condition like acne that needs to be treated by a professional, a simple but effective routine for daily care at home is all that is needed. AVOID: Sun exposure without protection, energy drinks, iron deficiency and harsh skin treatments. Wrinkle relaxants and fillers are normally not required as the skin is youthful and plump naturally.

In our thirties, our skin appears to thin and has a less plump appearance. Collagen, which began decreasing in the 20s, continues to decrease as does our elastin production. With lower estrogen levels and the continued decrease in collagen and elastin production, our skin has increased dryness and sensitivity at this age. With the possible onset of menopause, skin can become sensitive, reactive, and possibly suffer from acne. Lines around the eyes and mouth become deeper and furrows begin to form on the forehead. Pigmentation of the skin may also be present. OBJECTIVES: This is the ‘look after it or lose it’ decade. If you haven’t already, now is the time to seriously ramp up your skin routine and treatments. BEST PRODUCTS: I love to see vitamins, fats, protein peptides and antioxidants in skin care formulas for this age group. If it’s healthy for your body it’s going to be great for your skin. It’s more of the same for fifty-something skin with the skin taking on a rougher texture and a possible dull sallow tone begins to develop. A lack of oestrogen causes the skin to become drier and thinner. Wrinkles become more settled, sun spots and pigmentation is increased and the skin around the eyes and jaws begins to droop and sag. Necks also become problematic in this decade. OBJECTIVES: Address damage before it becomes skin cancer.

Beauty and the Blake She’s the beautiful star who seemingly can do no wrong, but for Blake Lively, mystery is the key to movie stardom.
T
here is something about Blake Lively that offers a calm familiarity. Maybe it’s her easy smile, perhaps her laughing eyes or those enviable lustrous locks. She seems like an excellent best friend, a loyal confidant, a person you can rely on when you need someone at two in the morning. According to reports, including a gushing accord from bestie Taylor Swift, Lively is all that. She is also a loving wife and mother, a great philanthropist and oh, an accomplished actress. But Lively is also an illusionist. We think we know her, but do we really? She and husband, popular actor Ryan Reynolds, are rather active on social media. They seem open and funny and quirky during interviews offering little tidbits and anecdotes in a way that makes us feel as if we know them. They share pictures of them with friends, of things they like, of some milestones in restaurants. Yet they are intensely private too. The things that really matter stay hidden. Photographs of their wedding day, or their children, even the name of their new baby Ines was kept tightly under wraps for months. “The thing that I miss about old Hollywood,” says Lively, “is that back then you got to watch movie stars and imagine they were that person. Now, we’re inundated with stories about people picking up their dog’s poop, or stories that aren’t even true. I mean: how many times has Jennifer Aniston been pregnant? Dear God!” “The media is remorseless and mystery is the victim. People want to know more, and that’s a really dangerous thing. With cinema, it means the greater narrative isn’t what you’re seeing on screen, it’s what you’re seeing off screen.”

Yet the strains of Hollywood are not new to Lively. Her mother is a talent manager and her father an actordirector and as a child Lively and her four older siblings were regulars at the acting classes her parents taught. She has been on our screens since making her debut as a 10-year-old in the 1998 movie Sandman but it was her casting as Bridget in the Sisterhood of the Travelling Pants in 2005 that truly boosted her star. A couple of smaller parts followed before Gossip Girl came along in 2007 keeping Lively on our small screens as Serena van der Woodsen until the teen drama ended in 2012. Lively has kept busy, with acclaimed performances in, amongst others, Oliver Stone’s Savages, Green Lantern where she met Reynolds and The Age of Adaline where she plays a woman who lives forever. But it is this year’s releases, including the Marc Foster thriller, All I see is You, that Lively rates as some of her most professionally trying and satisfying. The Shallows, which pitted a stranded surfer against a killer shark was far and away the 29-year-old’s most physically challenging. She had to wear a bikini for much of the Australian-shot movie and with filming just eight months after her first baby, Lively had to work to ensure she was toned and fit. “The struggle is that I am doing a movie in a bikini eight months after having a baby and there is a level of insecurity and vanity that comes with that,” she said. “You don’t want to be the person in the magazines that they are saying ‘ugh, look at her’ rather than ‘wow, look at her’. “That’s a shame because there shouldn’t be that negative ‘ugh’ after someone has a baby. Your body is so beautiful.

“You couldn’t walk a Victoria’s Secret runway but it’s beautiful in a completely different and incredible way and I do wish I had the bravery to go out there and represent women as they actually look.” It took an intense exercise routine and a restricted diet to get that body and Lively is still not sure she didn’t overdo it. “I did no gluten and no soy. Which seems like ‘Oh, that’s really easy to cut that out,’ but you realise, there’s soy in everything, like, everything you eat, there is soy,” she said. “Even if it’s healthy, organic stuff, there’s always soy in it. So once you remove soy, you realise you’re eating just like, no processed foods. “I was still able to have sugar and all of those things. It’s all in moderation. You know, you just have a balance of protein, carbs, and vegetables. It wasn’t the worst. Like, I was eating rice and sushi and you know but just no soy and no gluten. Watch how hard that is!” Lively was out and about at the Cannes Film Festival this year doing promotional work for Café Society, a Woody Allen film in which she plays a funny, captivating divorcee socialite in the 1930s. Working with Allen was an experience she coveted but is still pinching herself that it actually came true. While she makes her presence felt in her few scenes, it’s not a huge role for Lively.
cover story “I didn’t care if it was one line, one scene, or playing a janitor,” she says. “He’s one of the few filmmakers who really, really writes to women. They’re fully realised women; they’re not one thing or the other. You’re not hired to be the intellect or the bimbo... so you’re not thinking, ‘I’m going to be the tart of the film’ or ‘I’m going to be the intellectual b**ch.’ You know that the woman will be multi-faceted and not thin-sliced.” Lively is more than a pretty face that can light up a screen. In fact her interests far from the limelight are varied and somewhat surprising. She is a tragic foodie with a love and penchant for interior design. She raves about a course she did at Le Cordon Bleu in Paris and counts Martha Stewart, who lives within spitting distance of the LivelyReynolds farmhouse in Pound Ridge, upstate New York, as a dear friend. “I’ve only ever found her to be completely generous and kind,” says Lively of Stewart. “She’s one of those people who connect people with each other. She’s there for you. Our wedding was becoming a disaster, and we didn’t know what to do, so we called Martha! She said, ‘Don’t worry. I’ll handle it.’ She sent her team down to save us. Then she called her friends who have a home in South Carolina and set us up at the most amazing getaway. This is the day of our wedding!” Despite her professional successes, it is time with her family that the mother-oftwo holds most dear. Her daughter James is almost two and the couple recently welcomed a second girl, Ines. “All my eggs are in one basket, and that’s my family. That’s where my heart is. That’s where my everything is. That’s the thing that I feel most protective of and the thing that I feel is the most exposed when I feel exploited,” says Lively. “Ryan had a nice, normal upbringing, and we want our kids to have the same normal life that we had. We don’t ever want to rob them of what we had, because we’d feel really selfish. “We’ve both given up projects that we really love because we can’t keep our family together. This is a career that’s like the stock market: You’ve got to stay hot while you’re hot. But your family, that’s the real thing that gives you security and success and happiness.”

Coconut oil is one of her go-to staples with Lively swearing by its moisturizing properties. “Rubbing coconut oil on the ends before I shampoo is a must,” she says. “It’s great in winter when the air can be dry.”
While it is easy to imagine that the actress’s beauty regime includes weekly facials and hours of pampering, the truth is that Lively prefers to keep her routine simple and spend time with her family instead. “I don’t rely on professional skin maintenance,” she says. “In winter, I focus on hydration, in summer, I go with lighter moisturisers, and regardless of the season, I am always focused on sun protection. On a day-to-day basis I just normally wear sunscreen, tinted moisturiser and nothing else really. Nothing really make-uppy. “A tip I learned that from a make-up artist years ago - you take blush and put it on your cheeks, on the tip of your nose and wherever your parting is, as that’s where you get the most sun. Obesity is now one of the world’s biggest killers, and here in Australia we have reached epidemic proportions. Here, we look at the causes, and explore weight-loss surgical options, which many experts say hold the key to turning the crisis around.
O
besity and other non-communicable diseases (NCDs) such as cardiovascular diseases, cancers and diabetes are now the world’s biggest killers, causing an estimated 35 million deaths each year, 60 percent of all deaths globally, with 80 percent in low- and middle-income countries. According to the ABS Australian Health Survey, for Australian adults 18 years and over, the prevalence of overweight and obesity has increased over time, by over 10 percent in 10 years. If we continue at this rate, the future does not look great for our national health. Obesity increases the risk of many diseases. Fat is deposited on our bodies when the energy (kilojoules) we consume from food and drink is greater than the energy used in activities and at rest. Small imbalances over long periods of time can cause you to become overweight or obese.
What is considered overweight and obese? Overweight and obesity are defined by the World Health Organisation using the body mass index (BMI). BMI is a measure of body size and is used to indicate level of risk for morbidity (disease risk) and mortality (death rates) at the population level. It is calculated by dividing your weight in kilograms by your height in metres squared. For example, a person who is 165 cm tall and weighs 64 kg would have a BMI of 24. People with a BMI of 25 or more are classified as overweight. People with a BMI of 30 or greater are classified as obese.
BMI calculations used for adults are not a suitable measure of weight for children or adolescents. A dietitian or your doctor can assess your child’s weight using a special BMI chart, together with weight and height growth charts. The distribution of fat is important when assessing overweight and obesity, and the associated disease risk. Increased abdominal obesity is related to a higher risk of cardiovascular disease, Type-2 diabetes and cancer. Abdominal obesity is measured using waist circumference.
When identifying health risk in adults, it is recommended that you combine BMI with waist circumference as a measurement of disease risk. A waist circumference above 94 cm in men and above 80 cm in women is regarded as overweight and an indicator of serious chronic disease risk. Why can some people maintain their weight and others can’t? SLIM expert Jason Free, one of Australia’s leading names in weightloss surgery, says there are a variety of reasons some people seem unable to lose weight. “Without knowing a person’s history and specifics I obviously couldn’t say precisely,” Dr Free says. “However there are general reasons which may be applicable. One such reason is our body’s ‘starvation mode’ which is discussed a lot, but often misunderstood. “The human body has evolved over thousands of years to survive long periods of starvation. “Scientific evidence increasingly points to the problem that confronts dieters: cutting out calories changes your metabolism and brain, so your body hoards fat and your mind magnifies food cravings into an obsession. The human frame contains about ten times more fat-storing cells relative to body weight than most animals - even hibernating polar bears which have to endure long periods when food is unavailable. Our calorie-hoarding bodies have evolved strong mechanisms to stop weight-loss, but weak systems for preventing weight-gain. If you manage to lose 10 percent of your weight, your body thinks there’s an emergency, so it burns less fuel by slowing your metabolism. “It is a very real factor that must be taken into account with any weight-management program. “These days science has shown there is so much more to obesity than just overeating and lack of exercise. There is a huge genetic component to obesity. For a doctor to blame a patient for their weight and suggest dietary reduction is advice that will almost certainly fail. “In fact recent a recent study looking at several hundred thousands of people in the UK showed that a person with a BMI of 40 has about 1/200 chance of getting down to their healthy weight with conservative measures. This explains the frustrations all of my patients have.”
Why should we care? It’s not about being skinny, it’s about being healthy. Obesity simply isn’t healthy. Obesity increases the risk of many chronic and potentially lethal diseases. Generally speaking, the more body fat you’re carrying, the higher your health risk. However, the amount of weight gained throughout your adult years also contributes to the risk. For example, a middle-aged person who weighs 10 kilograms more than they did in their early 20s has an increased risk of high blood pressure, stroke, diabetes and coronary heart disease. Weight-loss surgery: is it the answer? Weight-loss surgery was once thought of an extreme solution, reserved only for the rich and famous, or the morbidly obese with no other options. In recent years, more and more experts and health professionals around the world, including SLIM expert Dr Free, believe surgical options are the most viable solution for many people. In fact, The National Health and Medical Research Council recommends bariatric surgery as the most beneficial and costeffective management option for motivated individuals. Dr Free says that unfortunately, despite a lot of research there is no simple solution to obesity. “Currently surgery is the only scientifically proven intervention that
provides robust long term benefit,” Dr Free says. He says over recent years, patients have changed from being almost exclusively the morbidly obese, to the overweight who do not want the problem to progress further. “Evidence is overwhelming worldwide that patients losing weight after surgery have a significantly greater and longer lasting weight-loss, as well as significantly improved quality of life and actually have improved long term survival compared to those who try dieting for weight-loss, even with professional help,” Dr Free says. “Almost everyone I see has been struggling with weight for many years. They’ve tried multiple diets and other interventions all with no long lasting effect. “Most people will be able to lose a few

Remember your loved one probably already feels a degree of shame. Be mindful of their feelings. • Encourage them to speak. kilos however almost everyone regains the weight they’ve lost in a short period of time, and often rebound and end up getting larger. “I explain to my patients that there is a ‘set-point’ mechanism in the body genetically programmed which predetermines weight-gain, a mechanism the human body has evolved over thousands of years. The body will go to extremes to protect this which unfortunately means gaining weight. Surgery for weight-loss has the ability to change this set-point (via it’s physiological and hormonal changes) to a much lower value.”
The future of weight-loss surgery Dr Free says weight-loss surgery is constantly evolving. “There are many new and evolving procedures being developed,” Dr Free says. “What I see as the most important advancements in weight-loss surgery are the dramatic improvements in the surgical process. These include extremely short hospital stays, patients undergoing an operation these days often spend only 24 hours in hospital, with rapid return to good oral intake, early return to work and normal function. peak to anyone who is, or has been, seriously overweight, and they will all tell you the same thing: it’s no fun. Even those with the strongest self-confidence succumb to feelings of inadequacy and insecurity. Even those with the fullest of lives regret the things they simply cannot do, and even those with the most positive of outlooks can give in to dark and depressing thoughts. Being overweight is not an easy way to live your life. The physical restrictions alone are difficult to live with, and the way an overweight person is received out in the world is even more difficult. Eating is public is often hard as people stare and judge, trying on clothes is an exercise in humiliation, and attending events can bring up dread and embarrassment.

Why don’t they just lose weight? Harder still for an overweight person, is knowing that most of the people they encounter will have one thought, somewhere in the back of their mind: why don’t they just lose weight. Not so long ago, it was thought anyone who was overweight was simply lazy. Modern medicine is teaching us now that that simply isn’t the case (see our report The Heavy truth on page 25). There are many people for whom weight-loss has been unattainable, despite very legitimate and dedicated attempts. Living life overweight is hard enough; not being able to fix it is soul destroying.

The National Health and Medical Research Council recommends bariatric surgery as the most beneficial and cost-effective management option for motivated individuals. SLIM weight-loss surgery expert Dr Jason Free agrees, saying “Currently surgery is the only scientifically proven intervention that provides robust long term benefit.”
A very personal journey For most of us, surgery is a daunting prospect, and a decision not to be taken lightly. Kerrie Kaminski, Chris Berger and Lesley-Anne Hoare are three people who each took that decision, and while they all had different reasons, different surgeries and different experiences, they have one thing in common: they all say it is the best decision they have made. Kerrie was not morbidly obese when she chose to undergo surgery. In fact, if it wasn’t for a myriad of other health complications, she may not have met the criteria for the surgery. Mildly overweight, Kerrie suffered from a hernia, sleep apnoea, and persistent reflux. The combination of these ailments, which had persisted for decades, had slowly started to erode her quality of life. Doctors and specialists suggested weight-loss may assist in reducing her symptoms, but yo-yo dieting and a naturally slow metabolism limited her ability to lose weight, and it started to take its toll on her positive personality. “I wasn’t depressed,” Kerrie told SLIM Magazine, “but certainly it was impacting on me. “I was also tired of seeing specialists and doctors who really knew their stuff, but didn’t seem to genuinely care.” Weight-loss surgery came to Kerrie’s attention and she decided to meet with Dr Free to discuss her options (“I had seen so many specialists, one more couldn’t hurt,” she jokes). “Not only was Dr Free incredibly knowledgeable, he was also the most caring doctor I’ve ever met. Weight-loss is a very personal subject and from the moment I met Dr Free I felt comfortable and cared for. I also knew I was in the best possible hands.” Kerry acted quickly, undergoing a gastric bypass, and the results were immediate. The reflux was gone and her other symptoms slowly abated as well. Over time she lost the excess weight, and is now a very slim and stunning woman. New wardrobe, new life, new you Another patient whose results have been good, to say the least, is Lesley-Anne. To see Lesley-Anne today you would never guess that she has ever been anything other than a fit, friendly and fabulous woman.
However, the beautiful summer dress she wears when we meet, was an unthinkable fashion choice for Lesley-Ann just six months ago, when she was almost 30 kilos heavier. “It’s funny you know, I still shop for clothes at the ‘overweight’ stores,” LesleyAnne says. “It’s a habit I need to break, but for so long shopping for clothes was just an unpleasant experience. I had two or three stores I was comfortable going to, and now that I can shop almost anywhere, I still find myself gravitating to those stores.” Lesley-Anne, who underwent gastric sleeve surgery six months ago, had been overweight for at least 15 years. “People don’t take the ‘I have tried everything’ line very seriously, but I really had tried everything,” she says. “No one was harder on me than me. I kept thinking if I just tried harder or had a different attitude I would lose the weight. Finally, I knew that wasn’t the case, and if I wanted to start really living I needed some help. “I knew about weight-loss surgery,” Lesley-Anne says. “I did a lot of research and discovered that Dr Free was unanimously considered the number one name in the field. Once I met with him, I could see why. Yes, he had all the qualifications and the skills, but more importantly, he had a lovely manner. No judgement, no talking down to me. I just felt like he was right for me.” Lesley-Anne had the surgery soon after, and she says it was life-changing. “The first couple of weeks after surgery took some concentration and organisation, but really it was actually very easy,” Lesley-Anne says. “The weight-loss started immediately and has continued. Wheel of fortune He may be just a couple of months postsurgery, but Chris Berger already knows it’s the best thing he has ever done for himself. An avid motorsports enthusiast, Chris had to say goodbye to this and many other of life’s pleasures, simply because at 65, his weight and diabetes were ruling – and ruining - his life. “I couldn’t drive, I was so big,” Chris admits. “That was a pretty sobering realisation. My son had been through a similar experience and had undergone
gastric bypass surgery and lost 70 kilos, so I decided I would explore that option for myself.” Like Kerrie and Lesley-Anne, Chris’ research led him to Dr Free. “From what I could see, he was just the best bloke in the business,” Chris says. “When I met with him he was straight forward, honest and caring. I had no hesitation in putting myself in his hands.” Eight weeks later and 40 kilos lighter, Chris is completely off his diabetic medication. It’s an outcome that Dr Free says is to be expected, with almost 100 percent of diabetics requiring no further medication after surgery. For Chris, who was struggling to do the simplest things prior to surgery, his life has changed immeasurably, and the weight-loss will continue for many months to come. “My biggest problem these days is my son,” Chris says. “He keeps saying ‘I told you so’!”
Rewarding work For these three patients, weight-loss surgery was never just about the weight; it wasn’t about fitting into a sexy little dress (although Kerrie and Lesley-Anne both fit that description perfectly), or conforming to a size that is accepted by society. It was always about their health, their wellbeing and their quality of life. They took a brave step, and are now reaping the rewards. Seeing these kind of life-changing results is what drives Dr Free. “It’s an enormous feeling of satisfaction seeing how happy my patients are following the operation.” Dr Free says. “Almost everyone in the few weeks after the procedure are so excited about the result they say it’s the best decision they’ve ever made. People often wish they’d made the choice years earlier. “It’s often a huge decision a person makes to undergo an operation for weight-loss, however the results are so impressive that they have generally forgotten their anxiety they were initially feeling. “It’s not just the loss of weight that impresses me, but the improvement in general health and quality of life. r Jason Free, a specialist in gastric bypass, sleeve gastrectromy and weight-loss surgical procedures, is based at Surgery Gold Coast opposite Pindara Hospital. Through the life-changing surgery he performs, he has helped thousands of patients turn their health around. Educated in Perth and Brisbane before relocating to the Gold Coast 20 years ago, Dr Free says: “I’ve always wanted to be able to improve people’s lives by surgery and this is the field in which the benefits are so dramatic and obvious and really improve people’s wellbeing.” The Gold Coast surgeon, who has spent time in weight-loss centres in Australia and at the University Medical Centre of Vienna, University College Hospital London and Queen Alexandra Hospital, Portsmouth UK, says everyone who comes to see him has generally spent many frustrating years tackling obesity. They may also have had to battle with ill health directly attributable to being overweight including hypertension, heart disease, asthma, obstructive sleep apnoea, diabetes, back pain and osteoarthritis. “Other issues relating to young people and especially women include reduced fertility.” They may have also faced discrimination in the workplace. “There is well- documented evidence that weight-based discrimination consistently

affects every aspect of employment, from hiring to firing, promotions, and even pay allocation,” says Dr Free. “Some company human resource management staff even overtly say that hiring obese individuals is detrimental to their company finances because statistics show obese people have more sick days, and make more workers compensation claims.” For these patients, the most striking result post-surgery is “the huge change in their demeanour and attitude and self esteem”. “They need less medications, are able to exercise more and those on analgesics for back pain or arthritis often can eliminate these. People with sleep apnoea are able to develop better sleep patterns and feel much more awake during the day. “Almost everyone states they wish they’d had the operation years earlier.” As part of his surgical career, Dr Free has volunteered in remote areas of Nepal and, as part of his ongoing development, every
year he spends some time with weight-loss surgeons around the world observing their techniques and discussing health issues in their region. “There are always new developments in weight-loss surgery, as with any other medical field,” he says. “I have always emphasised the importance of performing a procedure that has been proven to be safe and with good results.” Before undergoing weight-loss surgery, all patients receive detailed information, including diagrams, photographs and videos of procedures. FRUCTOSE DIETARY VILLAIN OR UNJUSTLY DEMONISED? Fructose has been the subject of much attention recently, most of it negative. Critics link dietary fructose with health risk markers such as obesity, high triglyceride (blood fat) levels and insulin resistance, and claim it is less satiating than other sugars. The fact it’s processed in the body via a different metabolic pathway is often blamed.
WHERE IS FRUCTOSE FOUND? Fructose is a type of carbohydrate naturally found in fruit, fruit juice, vegetables, syrups (such as m43SDaple syrup) and honey. Fructose also makes up half (50 percent) of sucrose, or ‘table sugar’ (the other 50 percent is glucose). In Australia, foods such as biscuits, cakes, chocolate and lollies, and sweetened beverages such as carbonated soft drinks and sports drinks, contain added sucrose of which fructose is a part. Highly-processed foods such as these are major dietary sources of fructose in Australia. In some countries, high fructose (55 percent) corn syrup is used to sweeten foods, whereas in Australia, manufacturers use sucrose (cane sugar) and glucose syrup (from wheat).
SO IS FRUCTOSE REALLY A PROBLEM IN AUSTRALIA? Some studies suggest the source of fructose in foods – whether naturally present or added –could make a difference. That is, high intakes from added sources may adversely affect body weight, insulin sensitivity, and blood lipids – but this pattern is not seen with naturally-occurring fructose. However, results are not consistent between studies.

Like most nutrients or food components, the quantity we eat or drink is key. Most of the research looking at the effects of fructose has used very high doses of pure added fructose – much more than what people would typically eat. Research tells us that a moderate fructose consumption of less than 50g per day or around 10 percent of energy has no adverse effect on lipid and glucose control. Similarly, less than 100g per day does not influence body weight. In other words, to be harmful to health, people would need to eat at least 50g of pure fructose on top of their regular diet. The reality is that few Australians eat pure fructose, let alone in the amounts required to cause adverse health problems.
HOW MUCH IS TOO MUCH? There are no specific recommendations for fructose intake, but there are for free and added sugars in general. The World Health Organisation (WHO) recommends cutting free sugars (which includes added sugars, honey, syrups and fruit juices) to less than 10 percent of total energy (or kilojoule) intake, preferably 5 percent. For an adult eating around 8,700 kilojoules a day, this means no more than 51g, which is about 13 teaspoons a day. Children, who have lower energy requirements, would need to eat fewer teaspoons to meet WHO recommendations. The latest Australian Health Survey tells us that in 2011-12, Australians were eating, on average, 60g (about 14 teaspoons, or 10.95 percent of energy) of free sugars a day. But this is an average – and some people, including children and teenagers, are eating a lot more.
SOME ANTI-SUGAR ADVOCATES WARN AGAINST FRUIT, DUE TO ITS FRUCTOSE CONTENT But many Australians need to eat more fruit, which contains naturally-occurring sugars including fructose and glucose, along with important nutrients like fibre, vitamins, minerals and phytonutrients.

In fact, the dietary fibre in whole fruit helps to fill us up, which prevents us from eating too much. So we only obtain a small amount of fructose from fruit, which is not going to blow the fructose budget. Our most recent National Health Survey found just 52 percent of Australians meet the minimum recommendations for fruit (two serves per day for most adults). In line with the recommendations of the Australian Dietary Guidelines, the Dietitians Association of Australia (DAA) recommends limiting fruit juice and dried fruit. If you have these, choose juice with no added sugar and limit this to no more than 125ml per day, and eat dried fruit only occasionally. Both are concentrated sources of sugars, and are easy to overconsume.
A NOTE ON FRUCTOSE MALABSORPTION Some people have difficulty absorbing fructose in their small intestine, which can result in side-effects such as bloating, abdominal distention and wind. A hydrogen breath test can be used to diagnose fructose malabsorption. Limiting foods with fructose, such as by following a low FODMAP diet, can improve symptoms. For people who are concerned about fructose malabsorption, DAA recommends seeking advice and support from a health care professional. For example, an Accredited Practising Dietitian can assess an individual’s diet and provide tailored dietary advice (including guidance on a low fructose diet), while also ensuring nutrition needs are met.
LIMITING ADDED SUGARS IS THE KEY DAA believes all added sugars need to be the focus. That is, people should aim to limit added sugars (such as glucose/ dextrose, sucrose, rice syrups etc), including (but not only) added fructose. Table sugar, or sucrose, is made up of glucose and fructose (50:50) and is in fact a huge contributor to fructose consumption. Many people use it at home and it’s also used to sweeten many commerciallyproduced foods, such as cakes, biscuits and sweetened breakfast cereals. In fact, the Australian Dietary Guidelines specifically recommend limiting intake of foods containing added sugars such as confectionary, soft drinks, fruit drinks, cordials, vitamin waters, energy drinks, sports drinks, biscuits and cakes. Sadly, recent figures indicate that Australians are consuming nearly a third of their daily energy (or kilojoules) form discretionary foods, which includes foods containing added sugars. 75 percent of 9-18 year olds currently get more than 10 percent of their kilojoules from added sugar, but fail to consume even the minimum recommended quantities from other core food groups such as fruit, vegetables, wholegrains, milk, cheese or yoghurt. So the key issue in Australia is ‘added sugars’, rather than fructose. A total avoidance of fructose, as recommended by some anti-sugar crusaders, is unnecessary.
BOTTOM LINE Focussing on a single ‘dietary villain’ is easy, but the concept has major flaws. You don’t need to avoid sugars (or fructose) completely for good health, but it’s sensible to limit intake of foods which contain added sugars (whether that be fructose, glucose, sucrose or any other form of added sugar), and also provide little or no nutritional value. ong or short, blonde, red or brown, curly, straight or spiky, your hair is a big part of your identity because it is both personal and public. Aside from being with us for as long as we can remember, we become accustomed to its texture and colour and quickly learn how to wear and style it to flatter. As we age, however, our hair changes too in ways that go beyond just greying. For some women the hair ageing process may start in their 20s for others, not until their 50s but it is inevitable.
COLOUR
It is melanin that gives your hair its colour. It is produced by follicles which also make and grow your hair. As time passes the follicles make less melanin which causes grey hair. The greying starts at the temples and extends to the top of the scalp. For most people, grey hair often begins in their 30s but is also dependant on genes and ethnicity.
THICKNESS
A single hair generally lives between two and seven years. When it falls out, it is replaced by a new one. Nearly everyone has some hair loss with age and the rate of growth also slows. Hair strands become smaller, thinner and lighter coloured. Many follicles stop producing new hair altogether.

As you age your hair’s protective outer cuticle becomes thinner and the decline in keratin protein levels leaves the hair weaker and less elastic causing it to snap.

We seem to think of grey hair as the preserve of grannies but the truth is that almost one third of Australian women start turning grey before the age of 30. Experts tend to agree that pulling out grey hairs won’t bring more but neither will they stem the tide of time. Grey hair can occur as a result of ageing and stress bit it is also greatly dependent on your genes. Noticing and pulling out a grey hair will make you more aware that they are there but the surrounding hair will not turn grey until the pigment in them dies. If you do pluck them out, they will grow back coarse and are likely to stick out while the hair is growing back. Pulling the hairs out can also destroy the follicle and there is a greater chance of bald patches. Your hairdresser will be able to advise on the perfect colour, cut and products to use but you can also decide to embrace your grey locks instead of colouring it. If you chose the latter, remember that grey hair has no pigment and become dull and yellow over time. It can also become dry and wiry. Professional hairdressers suggest a hydrating shampoo and regular hair masques to help keep it smooth. A silver shampoo will also help with the dullness and give you shiny, soft hair.

We all have bad hair days right? Those days when nothing you try with your tresses seems to work and a paper bag starts looking like an attractive option? But if you are suddenly having more bad days than usual, doctors suggest taking a closer look at your hair as they can offer insight on what’s going on inside your body and can help prevent bigger health problems. Falling hair – We usually lose 80 to 100 strands of hair a day but if it looks if you are losing more than usual, this can indicate a period of higher stress. Reversible hair thinning can be brought on by pregnancy, illness and depression and may not be noticeable until three months after the event. If a big stressor is behind your hair loss, don’t panic and concentrate on your overall wellness. Seek help for depression, get at least eight hours of sleep a night and do stress-busting activities. It may take between 3-6 months for your hair to get back to normal. Poor diet – Healthy hair is shiny so if yours is starting to look a bit dull, perhaps it is time to take a look at your diet. Eating too much processed food over a long period of time will make your hair brittle and dry. Stick with a diet heavy on whole foods with plenty of fruit and vegetables. Not enough fats – We are talking here about the right kinds of fats – monounsaturated and Omega-3 fatty acids. Choosing healthy options when ordering in
I
t comes as little surprise that the recommended dietary guidelines for fruit and vegetables continues to prove illusive for most Australians. Despite our overwhelming obesity statistics and the constant push by government and medical groups to consider healthier options, many of us are falling by the wayside. In fact only 5 percent of adults are hitting the daily target of two serves of fruit and five serves of vegetables with that number dropping to just 3 percent for 18-24 year olds. While age and socio-economic status are obvious factors, it is long work hours and the general lack of time that are usually blamed for our poor eating choices. A recent survey by online food delivery platform Menulog revealed that the more Australians earn and the busier they are, the less time they have to cook and the more they seek convenient meal options. But now, it seems, that takeaway dinner you grab on your way home or that meal you have delivered may actually aid your vegetable intake, provided of course you opt for the lower fat varieties and supplement your main with fresh nutritious sides. According to leading nutritionist and dietitian Geraldine Georgeou, there are a

number of take away dishes which already contain up to three serves of vegetables, 60 percent of your daily intake, which can be increased with little thought. Now, unfortunately we are not talking here about a tray of hot chips slathered in tomato sauce. One serve of vegetables is typically half a cup of cooked green or orange vegetables like broccoli, spinach, carrots and pumpkin or half a cup of cooked dried or can beans or one cup of if leafy or raw vegetables. “Aussies have really been criticised over their poor eating habits. They need to be armed with practical guidelines on how to get their vegetable intake from convenient meal choices within their busy lives,” Geraldine says. “Five serves seems likes a great amount of vegetables, but it’s not as much as we might think. “Ordering a healthy takeaway dish can be a really easy way to help you meet your five a day as long as you follow some simple rules, such as adding a side salad, choosing a stir fry option or extra steamed greens to a main meal.” Some of Geraldine’s top high-vegetable takeaway meal choices include Vietnamese rice paper rolls with Beef Pho soup which has half a cup each of vegetables, bean
sprouts and leafy greens or Thai beef salad teamed with chilli pork and broccoli stir fry which will give you a cup of salad, half a cup of mixed vegetables and half a cup of broccoli. Even ever popular favourites – Green Thai curry, Pasta Primavera and Beef in black bean sauce – can taking on a healthier hue by adding steamed vegetables or a salad on the side. Australians eat take out dinners an average 2.5 times a week and that is unlikely to change. But by working with what you have you don’t have to sacrifice health for convenience. Choose steamed or grilled dishes, brown rice if possible and avoid cream and coconut-based sauces. Check that your local takeaway is using vegetable oil rather than palm oil, ask for less salt and control your portion sizes and of course go big on the vegetables. “Once you’ve got your 60 percent of vegetables covered, it’s easy to make up the 40 percent in the rest of the day,” Geraldine says. “Make sure you snack on vegetable sticks and hummus, add extra salad to your lunchtime sandwich, but it will have to be at least a fistful, or choosing a roasted vegetable wrap or vegetable soup.”

hen it comes to getting the most out of your workout and avoiding injury while you are doing so, stretching plays as important a part as the weights you are lifting or the type of routine you are completing. Stretching can improve your range of motion, increase circulation and even give you a better night’s sleep. It increases blood and nutrients supply to the muscles thereby reducing muscle soreness and can also assist in correcting posture. But it is not just before and after exercise that stretching is beneficial. Studies tell us that it helps with balance too, that yoga stretches can dull the symptoms of PMS and can help relieve stress and improve energy levels. You can deepen the stretch by exhaling slowly but stop if you feel strain or pain.
Try these if your arms are feeling the effect of heavy bicep curls. You should feel the stretch between your inner elbows and shoulder. • Standing upright bring both hands behind your back and clasp your fingers. • Drop your shoulders and lift your clasped hands away from your back towards the ceiling. • Hold for 15 - 30 seconds. • Release and repeat.

Reach one arm to the ceiling and bend towards your shoulder blades until it is touching the top of your back. • Put your opposite hand on your bent elbow and pull backwards until you feel the stretch. • Hold for 15 – 30seconds. • Release and repeat with other arm.

These are the heaviest muscle in your body and you should feel this stretch in your bottom and lower back. • Lie on your back and bend both knees so your feet are resting on the floor hip-distance apart. • Lift your right leg off the ground and cross it over the left so that the right ankle is resting on the left knee. • Reach hands through and grab the back of the left thigh. Lift and pull left leg towards the chest until you feel the stretch. • Hold for 15 -30 seconds. • Release and repeat with other leg.

During surgery, Dr Letchford guides the Robotic-Arm based on your specific plan. This allows him to remove only the diseased bone, preserving healthy bone and soft tissue, and assists him in positioning the implant based on your unique anatomy. “Robotic-Arm Assisted Surgery affords us absolute accuracy,” Dr Letchford told SLIM. “The surgeon’s hand is guiding the arm, however we cannot go outside the boundaries we have set. It is accurate to 0.2 millimetres. “Post-operatively, what it means is that because we are creating a much smaller incision, so the patients really do recover a whole lot quicker. “It used to be that this type of surgery required a patient to be in hospital for about a week. Does your partner make you sick? Relationship expert, best-selling author and global speaker Dr Dain Heer shares his advice on how to be ‘need-less’ and avoid a truly unhealthy relationship
I
f you’re not in a great relationship, your partner is probably making you sick. That’s the astonishing conclusion of a study by the University of Buffalo in the USA. According to the study, individuals stuck in an unhappy partnership are damaging their health so severely, they would actually be better off single. Dr Heer says he has observed “too many people stay in miserable relationships for the fear of being alone”. His observation is backed by additional research, which suggests a very real correlation between the fear of being single and the act of settling for less in relationships. The key to a successful relationship, according to Heer, boils down to one thing; being need-less. “If a partnership exists purely out of the fear of being alone, you end up with a codependent relationship that is based on the ‘need’ to be together,” Dr Heer says. “It’s a relationship based on the fear of losing your partner and the idea that you can’t be complete without somebody else.” In contrast, Dr Heer advises that the happiest – and healthiest – relationships are built when both parties are in the relationship out of choice; when they have no fear of being on their own and are together because they want to be. “Even though it’s contrary to popular belief, the people that create the most success in their relationships have no need of their partner. When you have no need of your partner, you can have gratitude. When you have need of your partner, gratitude goes away. So, being need-less in your relationship is actually a key to creating a
great relationship.” Dr Heer says these three tips will help you regain your romantic edge and create a relationship that truly works for you: 1. Define what’s true for you Our relationships are often based on the points of view of others. If you want to be needless in your relationship you have to find out what’s true for you. Dr Heer advises writing down the points of view about relationships that you have absorbed from your mother, father, girlfriends and boyfriends by the time you were twenty. Then write down the points of view you picked up from stories, romance novels and fairy tales. Look at your list and ask, “How many of these points of view have I tried to create in my relationships?”, and “If I had no past and had bought none of these points of view, what would I like in my relationship right now?” Write down a list of everything you’d like your partner to have and everything you’d like them not to have. This process will help you clarify what is true for you. 2. Stop divorcing yourself Divorcing yourself is when you give up parts of yourself, to be in the relationship. When you divorce yourself to make the relationship work, you eventually create an enormous burden on your partner to be everything for you – something they cannot be nor provide. Don’t expect your partner to be everything. Have outside sources that contribute to you such as friends you share
different interests with, and things that you like to do. These are sources of energy for you. They will allow you to bring energy back into the relationship which, in turn, allows the relationship to be greater for you and for your partner. 3. Start each day anew Destroy and un-create your relationship, every single day. Destroy and release all of the judgements, expectations, projections, separations, and everything preventing you to recognise that it is your choice to be there, with this person. When you make a daily choice to be in the relationship, you are no longer functioning from need but rather from the choice of desire. “If we could get over the fear of being alone, if we could let go of the romantic ideal of needing to find someone to complete us, if we were truly needless in relationship, that is when we can create phenomenal relationships that add to the quality of our life,” Dr Heer says.

health update Causes of Alzheimer’s disease Despite extensive research in this area scientists have yet to determine why people develop the disease. There are some familial indicators but medical professionals also believe that environmental factors and general health can also play a part. What scientists do know is that the disease kills cells in the outer layer of the cortex first – the area of the brain involved in memory, language and judgement – causing it to shrink. People with Alzheimer’s also have a deposit called plaque outside the brain cells which prevent signals flowing between cells and a deposit inside the brain cells called neurofibrillary tangles which prevent the cells from accessing food and water.
Types of Alzheimer’s disease
Sporadic – this accounts for more than 90 percent of cases. It can affect adults of all ages but usually occurs in people over the age of 65. Familial – this is a rare genetic condition caused by mutation in one of several genes. The presence of the gene means that person will develop the disease in their 40s or 50s.

hances are that all our lives have been touched by dementia in some form. Perhaps you have watched a loved one succumb to the terribly debilitating disease or comforted friends and colleagues who have family members waging their own battles. The struggle seems endless and senseless and the result is always devastating. Alzheimer’s disease is the most common form of dementia in Australia accounting for almost 70 percent of cases. It is a progressive degeneration of the brain which affects memory, reasoning, emotions, behaviour and mood. While Alzheimer’s affects people in
46 SLIM MAGAZINE SUMMER/AUTUMN 2017
different ways, it generally starts off slowly and with subtlety. It may begin with lapses in memory or difficulty in finding the right words for common everyday things but soon progresses to loss of enthusiasm for usual activities, deterioration of social skills, the inability to process questions and instructions and emotional unpredictability. Symptoms vary as the disease attacks different parts of the brain and it is common for someone with Alzheimer’s to be able to perform a task on one day and not the next. It is the loss of recognition of familiar faces that families usually find hardest to deal with.
There is currently no single test to identify Alzheimer’s disease. The diagnosis is made only after careful clinical consultation. The clinical diagnosis might include: • A detailed medical history . • A thorough physical and neurological examination . • A test of intellectual function . • Psychiatric assessment . • A neuropsychological test. • Blood and urine tests. • Lumbar puncture for cerebral spinal fluid tests. • Medical imaging (MRI, PET). These tests will help to eliminate other conditions with similar symptoms such as nutritional deficiencies or depression. After eliminating other causes, a clinical diagnosis of Alzheimer’s disease can be made with about 80 percent to 90 percent accuracy if the symptoms and signs are appropriate. The diagnosis can only be confirmed after death by examination of the brain tissue.
How do people die from Alzheimer’s
This is a complex disease and always fatal. While it starts with memory failure as it progresses it also affects higher brain functions. At the later stages autonomic functions like heart rate, breathing, digestion, sleep cycles and balance and coordination are severely affected. Eventually the person is unable to perform the tasks that keep our bodies functioning. Secondary illnesses like pneumonia, heart attacks, stroke, kidney failure and injuries caused by fractures and falls can combine to cause death.

Alzheimer’s disease was first recorded in 1907 by Dr Alois Alzheimer. He reported the case of his patient Auguste Deter, a middle-aged woman with dementia and changes to her brain in specific areas. For much of the next six decades Alzheimer’s was considered a rare condition that affected people under the age of 65 until the 1970s that is when Dr Robert Katzman made the link between “senile dementia” and Alzheimer’s.

1. Look after your heart – a healthy brain needs a healthy heart. Diabetes, high cholesterol, high blood pressure and obesity can affect your heart. If you smoke, quit.
2. Physical activity – regular physical activity increases
blood flow to the brain and stimulates the growth of new brain cells.
3. Mental challenges – new skills and activities grows
new brain cells. Learn a language, take up a new hobby or start a new course.
4. Healthy diet – your brain needs nutrients to function
properly. Eats lots of vegetables and fruit, good fats and fish.
5. Social activity – Spend time with family and friends
or mix with new groups to help strengthen connections between the brain cells. Volunteer, join a book club, take up dancing.
Treatment
Currently, there is no cure for Alzheimer’s but researchers are working on ways to slow down the disease. There has been some success with improving cognitive function temporarily with cholinergeric drugs in mild cases of the disease. At present, doctors treat the secondary symptoms of the disease prescribing medication for things like restlessness and depression. There is community support for people with Alzheimer’s and their carers which is vital in negotiating the disease.
Carers As the Alzheimer’s progresses the person with the disease needs round the clock care because leaving them on their own can, and does, have negative consequences. This task often falls to partners and family. Caring for someone with Alzheimer’s can physically and emotionally exhausting and stressful. It is often difficult for these carers to be persuaded to take a break – have a rest, attend to business, go on a holiday – but it is vital for their wellbeing that they do. Other family members may be able to help out and the Australian Government funds a number of respite programs for regular, occasional and emergency breaks. They include respite at local day activity centres, in-home respite and residential respite. It gives the person with Alzheimer’s a chance to have new experiences and gives carers time to relax and recharge. Tips for talking to people with Alzheimer’s People affected by the disease often repeat the same snippet of conversation over and over again or fail to recall important past events. It can be frustrating for all concerned but these tips can help when communicating. Eye contact – use the person’s name and make sure you establish and keep eye contact. Diminish distractions – people with Alzheimer’s can find background noise, even a fan, distracting so find a quiet place where you can talk. One-on-one – it is easier for the person with Alzheimer’s to keep track of the conversation if too many people are involved. Simple – conversations should be short and to the point. Use the name of the noun like dog instead of it. Refrain from clear of open-ended questions. Visual cues – body language can be a powerful communication tool. Pay attention to facial expressions and body positioning.
Indigenous Australians have always celebrated the Kakadu plum for its medicinal properties. Now the fruit’s high Vitamin C content and antioxidant capabilities is attracting worldwide attention as part of a holistic treatment for Alzheimer’s. Chair of Edith Cowan University’s Foundation of Ageing and Alzheimer’s Disease, Ralph Martins says early indications are the Kakadu plum could have antioxidant properties up to seven-times greater than curcumin—the chemical compound in turmeric currently in clinical trials as an Alzheimer’s treatment. While testing to see whether the Kakadu plum can protect the brain neurons from toxic agents like beta-amyloid which kills brain cells and leads to Alzheimer’s is still to get the green light, most people need no convincing. According to Tamar, the way we see ageing is the problem. “Ageing may be inevitable, but that doesn’t seem to make it any the more palatable for the vast majority of Western civilisation,” Tamar says. “We fight it every step of the way using a variety of methods, ranging from the more sedate actions of hiding our date of birth on Facebook and investing in expensive creams, through to more invasive procedures of injectables, fillers and facelifts.” There is, however, another way, Tamar says. “It may sound crazy, and is most definitely contentious, but how about embracing ageing and accepting it as a welcomed part of your life cycle?”

This will enable you to stay stimulated and add value. Once you retire, you will be looking for things to do, hobbies are best used to complement your life, not fill it. Breast implant illness – what you need to know
B
reast surgery forms almost half of Dr Widdowson’s plastic surgical work. For over 30 years, he has been involved in a wide range of breast surgery, including augmentation, uplift (mastopexy), reduction and reconstruction after a mastectomy. In most of these procedures a breast implant may be used. Breast Implant technology has improved significantly over the years. The outer membrane has become tougher and less likely to rupture; the internal silicone is more cohesive; and the outer membrane is formed with a texturing called nanotexturing (a very fine texturing). While breast implants are safer than previous years, complications may arise in the short and long term. Studies have shown that 30 to 40 percent of patients who have breast implants inserted will have another operation on their implants or breasts in their lifetime. Complications can include: • Capsular contracture causing hardness, distortion, or poor positioning of the breast. • Rupture of the implant. • Inflammation or infection of the capsule of the implant causing swelling, pain, redness and hardness of the breast. • A.L.C.L – a low grade lymphoma cancer of the capsule. • Breast implant illness (BII) BREAST IMPLANT ILLNESS While breast implants and silicone do not appear to cause any systemic illness, there appear to be a small subset of woman with breast implants (both silicone and saline) who have a range of similar systemic problems. The common problems are usually chronic fatigue, variable body pain, often in the breast(s) but also in the muscles and joints, or headaches.

Mental issues such as haziness of the mind (brain fog), poor memory, lack of motivation and depression may also be present. Other areas of the body may also be affected, such as the hair, gut and nails. Overall, the patients seem to be in a state of hyper inflammation and low immunity. I have seen an increasing number of patients – both younger and older - over the past two years who have breast implants and these symptoms. Most of them have seen “conventional doctors” and “integrative doctors” and have had a multitude of tests and treatments. They come to me for removal of their breast implants without replacement. The accepted technique for removal in these cases is En Bloc Explantation, taking care to remove the implant and all the surrounding capsule preferably with the implant still contained within the surrounding capsule - although this is not always possible. The capsule (scar tissue) internally contains a “microbiome” which is a thin layer where bacteria, fungi and body inflammatory cells may exist. Such a microbiome exists in the intestine, and research is proving how much an imbalance in the bacterial flora of this thin gut layer can affect our general health. Certainly, the microbiome in the breast capsule of a patient with implants may act the same in some patients. There have been several books and articles written on breast implant illness, most notably is Dr Susan E. Kolb’s book The Truth About Breast Implants. However, reports of breast implant illness should not discourage a potential patient from having breast implants. Ensure your surgeon is fully qualified with experience in a variety of breast procedures to ensure you receive the best possible advice and surgical care.

With so many milks to choose from, what’s best for you and your family?
I
t was not that long ago that choosing the milk to pour over your cereal was a simple, almost rudimentary task. The milkman would leaving those cold, smoothly shaped glass bottles at your front door, the drops of condensation making a small puddle of at the base in the early morning air. If your parents had been feeling particularly happy that week, there was even a small bottle of flavoured milk alongside the white goodness. The fight to get to the front door first was fierce – to the victor went the cream seal, a thing of such delicious beauty it could be used, and often was, as an exchange for the scooter that worked or the Barbie with moving arms. Ah, the good times. Now, though, the choice on offer can make it a confusing and difficult task. Do you go full fat or low fat, dairy or nut free, lactose or gluten free? The benefits of dairy have long been lauded. Cow’s milk, or real milk as most of us know it, contains Vitamin A and B12, riboflavin, phosphorus, potassium, magnesium and zinc as well as the bone and teeth-building calcium. But with so much on offer, does the cream really rise to the top? COW’S MILK Remember that ad with the old lady at the corner store offering up the alternatives to a dazed looking customer, a seemingly endless list of low fat, no fat, full cream, high protein high calcium, soy, light, skim, Omega-3… Of course you can’t help but laugh yet she is right on the money. Even cow’s milk has been categorised within an inch of its life and regular milk (3.5 percent - 3.8 percent) is no longer your only choice or in fact the most popular one. With just 1.3 percent fat, it is low fat milk that gets the kudos amongst cow milk drinkers. The reduced fat content also helps keeps cholesterol levels low and improves heart health but it lacks the Vitamins D, A, E and K found in whole milk. It often has added skim milk powder to improve creaminess and boost protein and calcium content. Watery and almost see through, skim milk has just 0.15 percent milk fat and is favoured by those watching their weight.
Milk solids or milk powder is added to help the taste and it is enriched with calcium, protein and iron. Cow’s milk is also available lactose free, where the lactose is processed and broken down so it is more easily digested. Good source of protein, calcium, vitamins and minerals and comes in low fat varieties too. GOAT’S MILK This is milk from well, a goat, fairly selfexplanatory really and while it is similar to cow milk it is different too. Goat milk contains different proteins and fats making it easier for some people to digest and is also high in phosphorous, zinc, magnesium, iron and calcium. It is higher in calories and fat than cow’s milk but is lower in sugar SOY MILK Made from soybeans, it was one of the earliest alternatives to those intolerant to cow’s milk. It is very popular with vegans and vegetarians too and given that it comes from plants, it is cholesterol free and low in saturated fat. Soy milk is a good source of potassium, protein and calcium when fortified. However, too much soy has been linked with disrupting hormone production. RICE MILK A good option for people with a host of allergies because rice milk is the most hypoallergenic of the milk offerings. It is made from milled rice and water and commercial varieties are usually fortified with calcium and Vitamin D. It is very high in carbohydrates and very low in protein and not the best choice for athletes, the elderly and those with diabetes. OAT MILK The mild flavour of oat milk is welcomed by lactose-intolerant people who don’t like the taste of the nut-based alternatives. It is high in fibre, folic acid and Vitamin E and research shows the antioxidants in wholegrain oats can help lower cholesterol levels and prevent coronary heart disease. But remember oat milk is not gluten free, has less calcium than cow’s milk and generally has added sugar. ALMOND MILK Almond milk has quickly become the milk of choice for the lactose and soy intolerant and is widely available in supermarkets and
health stores. Made from ground almonds it is free of cholesterol and saturated fats. It is a poor source of protein, usually has added sugar and has no calcium unless it is fortified. It takes five litres of water to grow a single almond and the nut we get here are largely imported. COCONUT MILK Everything coconut is all the rage now but while the rich creamy milk is lactose free and vegan friendly it is calorie dense with a high fat content. It does, however, also contain contains lauric acid, antimicrobial lipids and capric acid, which have antibacterial, antifungal and antiviral properties. It is known for the beneficial effects it can have on skin and hair and is a good base for smoothies, milkshakes and in baking. HOW TO MAKE ALMOND MILK? Are you a fan of almond milk? Yes, it is now easily available in most supermarkets but a quick glance at the ingredients shows that it usually contains just 2 to 5 percent almonds with water and sugar making up the rest. Making almond milk at home is easy and healthier too. • Soak one cup of almonds in water for six hours or overnight. • Drain and throw away water. • Blend the almonds with three cups of fresh water in a food processor until smooth. • Strain with a cheesecloth or muslin and store in fridge for up to four days. • The leftover meal can be used in baking or pancakes. HANDLING FRESH MILK • Keep milk refrigerated at 4°C in the original package as temperature fluctuations will shorten its shelf life. • The use-by date gives the expected shelf life (usually 10 days) when refrigerated at 4°C. • Milk containers should always be covered as milk will absorb other flavours and become tainted. • Freezing milk can destabilise the main protein, casein. FLUFFY HOTCAKES WITH ZESTY LEMON CURD

OK, so I might appear to be a strict fitness enthusiast, but I also have a massive sweet tooth. For me, when it comes to indulging, it is about swapping out any ingredients that might not make me look, feel and perform at my best, and replacing them with nutrient-dense equivalents. That’s why these fluffy hotcakes are amazing – they have the most incredible texture without any of the naughty ingredients. This is one lazy weekend breakfast I put on repeat! SERVES 2 9 eggs 2 tablespoons maple syrup 500ml (2 cups) Vanilla Almond Milk or Homemade Coconut Milk 1 vanilla pod, split and scraped 130 g (1 cup) coconut flour, plus extra if needed 2 teaspoons baking powder 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 2 teaspoons maca powder pinch of sea salt 2–4 tablespoons coconut oil Whipped Coconut Cream or coconut yoghurt, to serve (optional) 20g (1/3 cup) coconut flakes, lightly toasted, to serve ZESTY LEMON CURD (makes 360g) 2 tablespoons finely grated lemon zest 250ml (1 cup) lemon juice 1 tablespoon maple syrup 2 tablespoons arrowroot flour 150g unsalted butter or ghee, melted 2 egg yolks
Preheat the oven to 180°C. For the lemon curd, place the lemon zest, lemon juice and maple syrup in a saucepan over medium heat. Bring the mixture to a simmer, then remove the pan from the heat and whisk in the arrowroot flour until smooth. Return the pan to the heat and whisk for a further 2–3 minutes, or until the mixture becomes thick, then remove the pan from the heat again and whisk in the butter and egg yolks to form a smooth, sticky sauce. Set aside to cool slightly. In a large mixing bowl, beat the eggs until they are really light and airy. Add the maple syrup, almond or coconut milk and vanilla seeds and whisk again until really well combined. Steadily add the dry ingredients to the bowl and mix everything together well to form a thick batter, adding a little extra coconut flour if the batter is looking too wet. Melt 1–2 tablespoons of the coconut oil in a small, ovenproof frying pan over medium heat (you don’t want the pan too hot or your hotcakes will burn before they are cooked through). Pour half of the batter into the hot pan and cook for about 2–3 minutes. Transfer the pan to the oven and cook for 10 minutes or until cooked through. To get a nice colour on the top, cook for a further 2 minutes under the grill. Keep warm and repeat with the remaining batter, greasing the pan lightly first to prevent sticking, to make two large hotcakes. Place the hotcakes on serving plates and spoon over the warm, zesty lemon curd. POPCORN CHICKEN WITH AVOCADO AND MACADAMIA SALSA GREEN BREAKFAST SALAD WITH HERBED EGGS Who said you can’t have salad for breakfast? The great thing about this dish is that, due to its cold nature, it doesn’t have to be cooked fresh in the morning – it’s perfect made the evening before, ready to be grabbed and eaten on the go. Avocados are a great source of good-quality fat that have an amazing way of keeping us feeling satiated for longer, meaning that after this breakfast you won’t be reaching for any naughty mid-morning snack. SERVES 2 4 eggs 1 tablespoon finely chopped flat-leaf parsley leaves 1 tablespoon finely chopped coriander leaves 1 tablespoon sesame seeds 1 tablespoon roughly chopped hazelnuts 1 tablespoon roughly chopped cashew nuts 1 tablespoon roughly chopped almonds 1 tablespoon pumpkin seeds 2 large avocados, roughly chopped 1 small handful of kale, stalks removed and leaves finely chopped 2 tablespoons avocado oil finely grated zest and juice of 1 lemon sea salt and freshly ground black pepper Lower the eggs into a saucepan of boiling water, reduce the heat to a simmer and cook for 3–6 minutes depending on how firm you like them – I like mine extra runny so I don’t cook them for too long. Drain, then peel off the shells under cold running water. Leave to cool. Place the parsley, coriander and sesame seeds in a bowl, add the peeled eggs and roll them in the herb mixture to coat them all over. Set aside. In a separate large bowl, toss together the chopped nuts, pumpkin seeds, avocado and kale until well combined. Dress evenly with the avocado oil and lemon juice, and season with salt and pepper to taste. Divide the salad between two serving bowls, top with the boiled eggs and garnish with the lemon zest. For extra visual amazingness, cut the boiled eggs in half to allow the yolk to ooze all over the delicious salad before serving. 58 SLIM MAGAZINE SUMMER/AUTUMN 2017
Who doesn’t love the crunch of crispy popcorn-style chicken? It was a bit of a staple of mine back in the days when I wasn’t so clean living and before I understood what my poor food choices were doing to my wellbeing. That’s why I’ve come up with this healthy popcorn chicken recipe, which contains all of the expected crunch and flavour without any of the unnecessary nasties. SERVES 4 60g (½ cup) white chia seeds 45g (½ cup) desiccated coconut 3 tablespoons almond meal 3 tablespoons arrowroot flour 3 teaspoons dried chilli flakes 3 teaspoons sweet paprika 3 teaspoons sea salt 2 teaspoons freshly ground black pepper 600g chicken thigh fillets, roughly cut into thumb-sized pieces 2 egg whites, beaten 3 tablespoons coconut oil, melted AVOCADO AND MACADAMIA SALSA 3 avocados 240g (1 1/2 cups) toasted macadamia nuts 4 garlic cloves, grated juice of 3 limes 2 bunches of basil, leaves picked sea salt and freshly ground black pepper Preheat the oven to 180°C and line a large baking tray with baking paper. In a large bowl, mix together the chia seeds, desiccated coconut, almond meal, arrowroot flour, dried chilli flakes, paprika, salt and pepper until well combined. Coat the chicken pieces in the beaten egg white and then toss them in the coating ingredients until really well covered. (It’s best to do this in two or three batches to ensure you get an even coating.) Arrange the coated chicken pieces on the prepared baking tray in a single layer and drizzle with the coconut oil. Bake for about 15–20 minutes, turning halfway through cooking, until crispy, golden brown and cooked through. Meanwhile, prepare the avocado and macadamia salsa by pulsing all the ingredients in a food processor until well combined. Season to taste. Pile the popcorn chicken into a serving bowl and serve with the salsa for dipping.
CRUNCHY APPLE AND FENNEL SALAD WITH ROASTED BEETROOT This great little salad is perfect for pulling out when entertaining. I simply love the combination of the earthy beetroot, sweet apple and bitter fennel – there’s something for everyone – and you can’t go wrong with the added crunch of toasted walnuts and sunflower seeds. SERVES 4
RAW ‘SNICKERS’ CAKE This is a no-bake cake that will leave you wanting more. There are a few different processes involved but it’s worth it, and once you’ve finished you will be so impressed with what you have created. I can’t promise it will last long, but hey, food was designed to be enjoyed! BASE 155g (1 cup) cashew nuts 60g (1 cup) shredded coconut 2 tablespoons cacao powder 1 tablespoon maple syrup 3 tablespoons coconut oil, melted 1 vanilla pod, split and scraped pinch of sea salt ‘SNICKERS’ FILLING 240g (1 1/2 cups) macadamia nuts, soaked for 2–4 hours or overnight, then drained and rinsed 250ml (1 cup) Vanilla Almond Milk 125ml (1/2 cup) coconut oil, melted 12 medjool dates, pitted 1 vanilla pod, split and scraped pinch of sea salt 70g (1/2 cup) hazelnuts, toasted and crushed 50g (1/2 cup) cacao powder TOPPING 125ml (½ cup) coconut oil, melted 3 tablespoons cacao powder 75g hazelnut butter 1 tablespoon maple syrup 1 vanilla pod, split and scraped pinch of sea salt 70g (1/2 cup) hazelnuts, toasted and crushed cacao nibs, to serve
Grease and line a 22 cm springform cake tin with baking paper. To make the base, put all the ingredients in a food processor and pulse together until the mixture resembles fine breadcrumbs. Press the mixture into the base of the prepared tin in an even layer, being sure to get it right into the edge all the way around, then chill in the freezer for 10–15 minutes. For the filling, place the macadamia nuts, almond milk, coconut oil, dates, vanilla seeds and salt in the food processor and pulse to a smooth paste. Remove the tin from the freezer and pour half the filling mixture over the base. Sprinkle over the toasted hazelnuts and return to the freezer to set for a further 20 minutes. Add the cacao powder to the remaining filling mixture and pulse again until well combined. Remove the tin from the freezer, pour the mixture over the first filling layer, then return to the freezer to set. For the topping, place the coconut oil, cacao powder, hazelnut butter, maple syrup, vanilla seeds and salt in the food processor and pulse together for 3–5 minutes, or until everything is smooth and creamy. Remove the cake from the tin and drizzle the chocolate topping in a zig zag pattern over the top. Scatter over the toasted hazelnuts and some cacao nibs to finish, then chill in the fridge until the topping is set. To serve, leave the cake at room temperature for 5 minutes before cutting with a warm knife.
75g kale, stalks removed and leaves roughly chopped 2 tablespoons coconut oil, melted sea salt and freshly ground black pepper 2 large beetroot, peeled and quartered 6 garlic cloves, roughly chopped 1 tablespoon fennel seeds 2 tablespoons avocado oil 2 fennel bulbs, thinly sliced and fronds reserved 2 red apples, cored and finely sliced 1 bunch of flat-leaf parsley, leaves picked and roughly chopped 1 bunch of coriander, leaves picked and roughly chopped 3 tablespoons extra-virgin olive oil 2 tablespoons apple cider vinegar juice of 1 lemon 3 tablespoons sunflower seeds, toasted 3 tablespoons crushed toasted walnuts Get started by preheating the oven to 200°C and lining two baking trays with baking paper. Spread out the roughly chopped kale on one of the prepared trays in a single layer, massage the leaves with the coconut oil and season with salt. Bake until the leaves turn crispy – you’ll be looking at 10–15 minutes. Meanwhile, place the beetroot on the other baking tray with the garlic and fennel seeds. Drizzle over the avocado oil and mix everything together well. Cover with foil and bake for 20 minutes. Remove the foil and bake for a further 20 minutes, or until the beetroot is beautiful and tender. Set aside to cool completely. To assemble, place the fennel, apple, parsley and coriander in a bowl and mix together really well. Toss with the extra-virgin olive oil, apple cider vinegar and lemon juice, then pile onto a large serving platter. Top with the roasted beetroot mixture, scatter over the kale chips, sunflower seeds and walnuts and garnish with a few of the reserved fennel fronds. Season with salt and pepper and dig in! SWEET POTATO GNOCCHI WITH KALE AND CHERRY TOMATOES
BAJA FISH TACOS WITH GUACAMOLE Last year I had the incredible opportunity of being the ambassador for Santa Monica. Part of what I learnt was that, being so close to the Mexican border, California has a sensational Mexican food culture, especially when it comes to street food. Every Friday night, food trucks would park along Marine Parade and serve real-deal stuff that had me smiling from ear to ear. One of those delights were real Baja fish tacos – here’s my clean-living take on them. SERVES 4 130g (1 cup) arrowroot flour 4 eggs, lightly beaten together with 3 tablespoons water 200g (2 cups) almond meal 90g (1 cup) desiccated coconut 600g whiting, flathead or snapper fillets, skinned, pin-boned and cut into 8 pieces in total sea salt coconut oil, for deep frying coriander leaves, to serve lime cheeks, to serve GUACAMOLE 2 ripe avocados, mashed 1 garlic clove, grated 1 teaspoon ground cumin 1 teaspoon sweet paprika finely grated zest and juice of 1 lime 1 small red chilli, deseeded and finely chopped 1 tablespoon extra-virgin olive oil SOFT TACOS 3 tablespoons coconut oil, melted 3 tablespoons coconut flour 4 eggs, whisked 2 tablespoons extra-virgin olive oil 1 teaspoon baking powder juice of 1/2 a lime 1 teaspoon sea salt Preheat the oven to 100°C. To make the guacamole, simply combine all the ingredients in a bowl and set aside. For the tacos, whisk 1 tablespoon of the coconut oil with the flour, eggs, oil, baking powder, lime juice, salt and 170 ml (2/3 cup) of water in a large bowl. Leave to stand for 60 SLIM MAGAZINE SUMMER/AUTUMN 2017
5 minutes to allow the batter to thicken. Heat 2 teaspoons of coconut oil in a non-stick frying pan over medium– high heat. Pour 80 ml (1/3 cup) of the batter into the middle of the pan and, using the back of a spoon, spread out the mixture so it’s nice and flat. Cook for 1 minute or so until firm enough to flip, then cook for 20 seconds on the other side. Repeat this process, adding a little more oil each time, to make eight soft tacos. Keep the tacos warm in the oven while you prepare the other ingredients. Place the arrowroot flour in one bowl, the beaten egg mixture in another, and the almond meal and coconut in a third bowl. Season the fish pieces well with salt and dust lightly with the arrowroot flour, then dip them first into the egg mixture and then into the almond and coconut mixture to coat well. Half-fill a large, heavy-based saucepan with coconut oil and set over medium heat. Heat the oil to 180°C. To test if it is hot enough, simply drop a small piece of bread into the oil – if it sizzles and bubbles you’re good to go. Working in manageable batches, fry the fish for 90 seconds, or until golden and cooked through. Drain off any excess oil on paper towel and season with salt. To assemble, simply load the warm tacos first with the guacamole, then top with the fish, a sprinkling of coriander leaves and a squeeze of lime juice.
Since transitioning to a primarily paleo lifestyle, I haven’t had the opportunity to indulge in traditional pasta-based meals. I love gnocchi and am so excited to share with you this clean-living version packed full of flavour and vibrancy. SERVES 4 800g (about 2 large) sweet potatoes 300g (2 cups) quinoa flour, plus extra for dusting sea salt and freshly ground black pepper 1 egg yolk 40g butter 2 tablespoons coconut oil 1 garlic clove, finely diced 1 long red chilli, deseeded and finely diced 200g cherry tomatoes, halved 100g baby kale leaves finely grated zest and juice of 1 lemon Get started by preheating the oven to 180°C and lining two baking trays with baking paper. Arrange the sweet potatoes on one of the prepared trays and roast for 1 hour until they are lovely and soft and the skin starts to crisp. Cut them open, scoop the flesh into a bowl and mash it with a potato masher or fork until smooth. Stir in the quinoa flour and season with salt and pepper, then add the egg yolk and gently mix everything together to a dough-like consistency, adding a little water if the mixture is too dry or a little extra quinoa flour if it’s looking too wet. Turn the dough mixture out onto a floured work surface and divide into four equal-sized pieces. Roll these pieces into long logs about 5 cm in thickness and cut into 5 cm lengths. Press each cut piece gently with a fork to create indentations. Bring a large saucepan of salted water to the boil, add the gnocchi in batches and cook for 1–2 minutes, or until the gnocchi float to the surface. Remove with a slotted spoon and set aside on the other lined baking tray. Once you’ve boiled them all, melt the butter in a large frying pan and fry the gnocchi in batches until crisp and golden. Set them aside and keep warm while you crack on with the topping. Melt the coconut oil in a large frying pan over medium–high heat, add the garlic and chilli and fry for 2–3 minutes until softened and caramelised. Add the cherry tomatoes, stir to coat with the chilli and garlic and cook for a further 2 minutes until softened, then stir in the baby kale leaves and cook until slightly wilted. Remove from the heat and drizzle with lemon juice. Divide the gnocchi among four plates, spoon over the kale and cherry tomato topping and sprinkle with the lemon zest.

Take the rind off the watermelon. Cut the watermelon flesh into 3cm pieces, reserving the offcuts. Put watermelon offcuts (approx. 200–300g) into a blender with turmeric, ginger, coriander, cumin, honey, chilli and garlic. Blend until smooth. In a wok or pan heat the coconut oil and fry the curry leaves, whole cumin seeds and mustard seeds until they pop – it will not take long. Add watermelon puree and kaffir lime leaves. Bring mix to the boil then simmer for 5 minutes. Add diced watermelon to the pan and warm through tossing carefully for another 3 minutes. Adjust seasoning. Serve warm or refrigerate in a sealed container overnight. Serve with lime wedges and fresh herbs.
Mindful Eating
Eating in a mindful way is about paying attention to the food we eat, slowing down to eat and being aware of the impact that food has on our health and wellbeing. Focus your complete attention on why, what and how you eat. When we do this, we become more aware of our emotions and how eating non-nourishing foods can affect the delicate balance of our internal health and body composition. How we think about eating is just as important as what we eat. Being stressed whilst eating compromises our digestion, therefore we encourage you to open all your senses when you eat: bring your mind into the present moment. Look at your food and think about how this food is going to nourish each cell in your body. Take some time to enjoy the aromas and with each mouthful notice the flavours, the textures. Always aim to chew slowly. Try putting down your utensils and swallowing the last mouthful before you take another one. We also recommend to avoid drinking water or caffeinated drinks with your food. Ideally only have these drinks 10–20 minutes before or after your meal. The practice of mindful eating is the way to break unhelpful habits and move forward in life with a healthy relationship with food and drink. Think about how this beautiful food is going to nourish your body and support you to be well and thrive in life. Your mind uses the brain to send messages to your body. Pay attention to how you are using your mind because this develops the brain and within a couple of months, this awareness of mindful eating becomes normal and will form a new habit. There is a strong sense of self respect that accompanies this habit and you will feel empowered to make better choices for your health and wellbeing. Approaching food with a mindful focus will also retrain your brain to perceive the act of eating from a different perspective. We can train ourselves to enjoy eating and yet still eat to meet the nutritional needs of our body.

Cucumber and Zucchini Noodle Salad with Coriander Pesto DELICIOUS SERVED WITH POTATO KOFTAS. SERVES 4 INGREDIENTS
3 medium-large zucchinis 1 large continental cucumber, peeled 2 garlic cloves piece of fresh turmeric, approx. 3cm, peeled piece of fresh ginger, approx. 2cm, peeled 1 eschallot, chopped 1 bunch coriander, leaves and stems, and extra for garnish 1 small red chilli, seeded (or to taste) 1 tsp sesame oil ¾ cup roasted cashews, and extra for garnish 1 tbsp tamari ½ tsp raw honey ¼ cup extra virgin olive oil 1 lime, juiced pinch of sea salt and cracked black pepper METHOD
Using a julienne peeler or spiraliser, make ‘noodles’ with the zucchini and cucumber. In a mortar and pestle (or blender), pound garlic, turmeric, ginger and eschallot together. Add coriander stems, chilli and sesame oil and continue to pound until it becomes a paste. Add coriander leaves, cashews, tamari and honey. Continue grinding, gradually adding olive oil until it comes together and is similar in consistency to pesto. Finish with lime juice and pepper. To serve, toss the noodles with pesto and place on a serving plate. Sprinkle with extra coriander and cashews.
Prawn and Pumpkin Bobo with Kale Rice SERVES 4 INGREDIENTS
1 small brown onion, chopped 2 garlic cloves, chopped 1 tsp chipotle peppers (available in good delicatessens), chopped, or chilli, chopped 2 tbsp extra virgin coconut oil 500g pumpkin, peeled, seeded and cut into 5cm pieces 200g tomatoes, diced, or half a tin of tomatoes 400ml coconut milk sea salt and pepper, to taste 800g green prawns, shelled and deveined, tails on ½ lemon, juiced ¼ bunch coriander, chopped KALE RICE
2 garlic cloves, chopped 2 tbsp extra virgin olive oil 200g brown rice 2 cups filtered water pinch of sea salt 2 cups kale, chopped 1 cup spinach leaves ⅓ cup Brazil nuts, chopped 62 SLIM MAGAZINE SUMMER/AUTUMN 2017
METHOD
Gently sauté onion, half the garlic and chipotle peppers in a pan with 1 tablespoon of the coconut oil until softened. Add pumpkin and cook for a further 4 minutes. Add tomato and coconut milk and cook until pumpkin is soft, stirring occasionally. Puree sauce in a blender. Add salt, pepper and extra chipotle if desired. Marinate prawns with remaining coconut oil, garlic and half the lemon juice. Set aside for 10 minutes. Season and grill until just cooked. Toss with fresh coriander and the remaining lemon juice. To make rice, sauté garlic in olive oil for 2 minutes then add rice. Cook for a further 2 minutes. Add water and salt, cover and cook on low heat until liquid is almost all absorbed, approx. 45 minutes. Add kale, spinach, Brazil nuts and stir through rice. Cover for 5 minutes before serving. To serve, place rice on serving plate with prawns and pumpkin sauce. Garnish with fresh tomato and a wedge of lemon or lime.

COCONUT BANANA FRITTER WITH COCONUT LIME SORBET SERVES 4-6 This is dish evolved from a Chinese takeaway stalwart from back in the ’80s which was basically a battered banana smothered with golden syrup. The Scottish people loved it where I grew up! Here’s our version. FOR THE BATTER 375g glutinous rice flour 400g coconut cream 80g sugar 250g desiccated coconut 150ml milk 40g sesame seeds • Mix all ingredients together until combined.
FOR THE BANANAS 8 ripe bananas 3 tablespoons superfine (caster) sugar ½ teaspoon cinnamon powder • Peel the bananas and cut each in half diagonally. • Dip into the batter and deep fry at 165°C (330°F) until golden brown. Do this over four batches. Drain on paper towel. • Combine the sugar and cinnamon powder and sprinkle on the banana fritters. TO FINISH palm sugar syrup coconut lime sorbet (store bought, or recipe in China Doll) • Serve with a drizzle of palm sugar syrup and scoops of coconut lime sorbet.

24-HOUR BEEF SHORT RIB WITH CITRUS SOY GLAZE This is based on Japanese teriyaki but we’ve applied it to a slow-cooked cut to achieve a smoky crust with meltingly tender meat inside. For this recipe you will need a Sous-vide machine (sous vide is a method of cooking in which food is sealed in airtight plastic bags then placed in a water bath or in a temperature-controlled steam environment). FOR THE BEEF SHORT RIB 50g sake 50g liquid kombu extract 100g tamari 125g mirin 2 x wagyu beef short ribs, bone in, about 800g each • Mix the sake, kombu extract, tamari and mirin together to make the marinade. • Vacuum seal or ‘zip lock’ the beef ribs individually with half of the marinade in each bag. • Sous vide at 70°C (160°F) for 24 hours.

• Let cool at room temperature for 10 minutes. Then chill completely in iced water. At this stage, you can keep the ribs in the refrigerator for up to 4 days. TAMARI CITRUS GLAZE Part A 100ml tamari 40ml orange juice 80ml mirin 2 teaspoons liquid kombu extract 120g brown sugar Part B 4g bonito flakes (available in most Asian supermarkets) Part C pinch of xanthan gum 50ml olive oil 2 teaspoons lime juice carrot and daikon pickle, to serve (recipe in China Doll)
• Bring ingredients in Part A to a simmer. Turn off heat and add bonito flakes. Let stand for 1 minute. Strain into a tall circular container. • Use stick blender on high speed to create a vortex and gradually add the xanthan gum until fully dissolved. • Next gradually blend in the olive oil. Finally, blend in the lime juice. TO FINISH • Heat a charcoal grill to low/medium. • Remove the ribs from the bags. Brush off any congealed fat. • Grill the ribs on all sides until a crust has formed. Lightly brush on some of the glaze and continue grilling until caramelized and sticky. • Take off the grill and leave to rest for 5 minutes. • Plate up and drizzle more of the glaze over. Serve with carrot & daikon pickle on the side.
ALASKAN CRAB WITH BLACK PEPPER CHILLI & LIME SERVES 4 This is huge on flavour but not that difficult to cook. Lots of customers request this dish when booking at the restaurant. 1kg raw Alaskan king crab legs • Chop the crab legs into 4 cm lengths. • Use a pair of scissors to snip along the length of the segments for ease of eating.

SPICE MIX 2 teaspoons black sesame seeds 4 tablespoons bonito flakes finely chopped 1 teaspoon dried chilli flakes 2 teaspoons ground black pepper • Crush the black sesame seeds in a mortar and pestle and combine with the bonito flakes, dried chilli and black pepper. vegetable oil, for frying 4 egg whites 200g potato starch 150g unsalted butter 4 tablespoons vegetable oil 4 tablespoons garlic, finely chopped 2 long red chillies, deseeded and finely chopped 2 long red chillies, deseeded and julienned 4 tablespoons light soy juice of 2 limes 2 teaspoons superfine (caster) sugar 2 spring onion stalks, julienned 4 tablespoons spring onions, finely chopped • Bring enough oil to 180°C (355°F) in a wok or large pot to fry the crab legs in two batches. • Briskly whisk the egg whites. • Coat the legs in the egg whites and then coat in the potato starch. Shake off the excess starch. • Fry the legs for about 3 minutes until crisp over two batches and drain on paper towel. • Heat the butter in a wok on medium heat until it starts to foam and turn a light nut brown. • Add the vegetable oil, garlic and diced chilli. Cook for 30 seconds. • Add the spice mix, soy, lime juice and sugar. Check for seasoning and balance. • Add the crab legs and sliced spring onions. Toss quickly to coat the crab in the sauce. • Transfer to a large warm platter. Garnish with julienned spring onions, julienned chilli and a wedge of lime.

ellow in your hummus, in your soup, in your moisturiser, in your ice-cream and of course in your latte. The latter, a golden concoction complete with aerated froth and finished with a sprinkle of cinnamon has been embraced by cafes around the world with celebrities flooding social media feeds with their perfect images of yellow bliss. In fact, such is turmeric’s immense popularity that Google has reported the spice featured in almost 60 percent of food searches this year. The main reason, aside from the celebrity endorsement, is that turmeric contains a group of polyphenol plant pigments called curcumin, a compound renowned for its anti-inflammatory and antioxidant properties. Studies show turmeric can help alleviate joint pain, may reduce the risk of Alzheimer’s and in some cases is even able to kill cancer cells and prevent them from growing. It is also known to be a good immune booster and is five times more potent than Vitamins C and E. The spice’s healing properties is no secret for the Asian populations that use it as a staple. Far from just being an ingredient in a good curry, they have long used turmeric (mixed with honey) for sore throats, in powder form mixed with water for tummy ailments and bladder infections, and as a mask to soothe tired skin.
CHICKEN MASALA SERVES 4
Ingredients 2 tsp each: ground cumin, coriander, garam masala, turmeric ½ tsp cinnamon 3 cloves garlic, crushed 2 tbs grated fresh ginger 1 tbs vinegar 2 tbs tomato paste 2 tbs oil ½-1 red chilli, chopped 1 onion, diced 600g chicken breast, diced 200g tomato puree 1 tsp brown sugar ¼ cup coriander, plus extra for garnish Hot rice and greens to serve

Ingredients 2 cups almond or coconut milk 1 tsp raw honey 1/2 tsp vanilla bean extract 1 tsp ground turmeric 1/4 tsp ground ginger 1/4 tsp ground cinnamon or 1 cinnamon stick 2 cardamom pods Method Put milk, honey, vanilla, turmeric, ginger and cinnamon in a pot. Place over a low heat and whisk until combined. Heat the milk and aromatics until hot. Pour the milk into 2 serving cups, sprinkle with cinnamon and enjoy. 66 SLIM MAGAZINE SUMMER/AUTUMN 2017
Method In a small bowl mix cumin, coriander, garam masala, turmeric, cinnamon, garlic, ginger, vinegar, and tomato paste. In a heavy-based pan, heat oil. Add chilli and onion and cook for 2-3 minutes until softened. Add spices and continue to cook for 3 or 4 minutes until fragrant. Add chicken to the pan and stir to coat in spice mix and cook until lightly browned. Add tomato puree and sugar. Stir through and continue to cook for 20 minutes until chicken is cooked through and sauce thickened. Stir through coriander. Serve with hot rice and greens.

Feeling all white The SLIM and Label White Lunch, which raised over $6000 for the Gold Coast Community Fund, was a chic affair, where guests dressed in all white enjoyed the spectacular waterfront location that is Pier Marina Mirage. Hosted by Olivia Scott, the lunch featured a divine three-course lunch plus Chandon S and Pier cocktails with Belvedere Vodka.
