We’d love to give a huge shout out to the incredible Kayla Hanna, a young Gold Coaster who volunteers her skills and time to brew cups of coffee for the homeless and those in need. Having also undertaken extensive barista training Kayla is now passing her knowledge along to anyone willing to learn to try and help them in gaining employment. here isn’t much Kate Hudson can’t do. An A-list actress, fashion icon, humanitarian, Academy Award nominee, Golden Globe winner, businesswoman and mum of two, Kate was in the spotlight from an early age. The daughter of actress-producer Goldie Hawn and comedian Bill Hudson, Kate was raised by her mother and Hawn’s partner, actor Kurt Russell, after her parents divorced when she was 18 months old. Surrounded by Hollywood heavyweights, it is little wonder Kate was drawn to the world of entertainment. After dipping her toes in the acting pool in a few smaller roles (including a guest role on the smash television show Party of Five), she burst onto the world stage with her breakout role of Penny in the hit film of 2000, Almost Famous, a role for which she won a Golden Globe and was nominated for an Academy Award for Best Supporting Actress. “I didn’t just wake up one day understanding how to take care of myself,” Kate said. “I had to learn how to do so over time, and I continue to learn—each and every day. “This is a process, and my body is constantly changing. And when I learned how to accept that I will always be like this, I relaxed.” In Pretty Happy, Kate shares the knowledge she has gathered over the years. “Our bodies do not stand still for time,” the stunning actress says. “When you understand yourself and connect to how you can become body smart, you realise pretty quickly that the perfect, the ideal is not the goal. SLIM weight-loss surgery expert Dr Jason Free and four of his patients sat down with SLIM to share their inspirational stories.

W

eight-loss surgery is often misunderstood. Many people believe it is the ‘lazy way out’ or an ‘easy option’. This simply isn’t the case; in almost all cases, these surgical options are usually arrived at after years – sometimes decades – of trying every other alternative available. The people undergoing these treatments have often suffered disappointment, judgement, unkindness, self-loathing and loss of hope. The surgical options offered to them by specialists such as SLIM weight-loss surgery expert Dr Free are life-changing and often life-saving. Recently SLIM joined Dr Free and four of his patients, who generously shared their very personal stories. While each of them has a unique journey, and they are all at different stages of their weight- loss, there is a common thread between them. They are all strong, hopeful and determined people who have taken charge of their health and wellbeing. It’s our pleasure to share their stories with you.

Sandra Seddon Looking at Sandy, it’s hard to believe this petite, bubbly, gorgeous woman was ever overweight. Animated, friendly and full of life, Sandy has faced a barrage of health problems over the years. 14 years ago, Sandy weighed 130 kilos more than double her current weight. Sandy underwent a Vertical Banded Gastroplasty, an early weight-loss procedure which is rarely performed these days. While Sandy’s weight went down to 74 kilos, she suffered ongoing problems with pain and weight regain many years later when the staple line fell apart. Sandy was almost 100 kilos when she met Dr Free in 2015 and underwent a Gastric 28 SLIM MAGAZINE WINTER 2016

Bypass. The pain with the problematic staple line disappeared and her weight went down to her current weight of 60kg, her ideal weight. “It was very difficult being overweight,” Sandy told me over lunch. “People often don’t believe you when you tell them you are eating well and exercising, but that was the truth. I exercised a lot, I was a runner, and I was very careful about what I ate, but my weight just stayed the same. “When the staple line from my previous operation fell apart I was in a lot of pain and I put a lot of weight back on. That was really hard and disheartening.” After undergoing the Gastric Bypass, Sandy finally saw the results she had been looking for, for so long. She is at her ideal weight, she looks sensational, and, more importantly, she feels fantastic. “For me, surgery really was the only option,” she said. “And it has worked. It’s changed my life.” Dr Free says he is thrilled for Sandy. “Sandy has just done so well,” he said. “She was in a fair bit of pain when I first met her, so I’m very happy to see how great she feels – and looks.”

Raymond Wenzel Ray was 135 kilos when he decided to undergo a Sleeve Gastrectomy with Dr Free. Unlike many others, Ray’s weight had not caused him any emotional distress. Rather, it was causing him physical and health problems. “I wasn’t an unhappy person,” Ray told me. “The weight actually didn’t bother me too much in terms of my attitude or how happy I was; I still lived a really active life and I was always pretty happy. “I was a lot like Sandy; I really didn’t eat a lot of the wrong foods and I was exercising

When we met over lunch, Simon was just five week’s post-surgery. Already he had lost a staggering 25 kilos, going from 183 kilos down to 158 kilos, and losing more weight each week. Talking to Simon he openly shares some of the struggles he has faced over the years. He has dealt with depression to the point of a suicide attempt; several serious health concerns; and a barrage of day to day humiliations and cruelties which have impacted on him. Despite the hardships, Simon is upbeat, hopeful and making great progress. The day we meet, Simon is, for the first time in years, able to wear his beloved All Blacks shirt, something he hasn’t been able to fit into for a long time. “It feels great,” Simon said. “I was at the point where I knew if I didn’t do something to address my weight, it wasn’t going to be pretty. “Something was going to give, whether

a fair bit, but I’d been that big for so long I just couldn’t seem to shift it. That was frustrating. “And there were some health issues caused by my weight, so after discussing it with my wife, I underwent the surgery in September 2015.” Ray has already lost a substantial amount of weight and is under 100 kilos now. He continues to slowly and surely drop weight each week. He says his breathing and sleeping has improved, and getting around and doing the things he loves is a whole lot easier. His upbeat attitude and optimism are evident from the second you meet him, qualities which Dr Free believes have undoubtedly aided in him doing so well. “Ray has a great attitude,” Dr Free told me. “He has since the day I met him. He’s a really positive guy and he is determined. He does everything he is supposed to and he is seeing the results.” For Ray’s part, he says there is part of him that wishes he had done this year’s ago. “I think what surprised me was how easy it was,” Ray told me. “I was up and about so quickly and I found adjusting to the new way of eating pretty easy. I thought it would be a lot harder than it was. “It’s definitely one of the best things I’ve done for myself.”

If there was an award for the best smile and outlook, Steven would surely take it out. Exuding happiness and warmth, Steven is a builder who underwent a Sleeve Gastrectomy in June last year when he weighed 179 kilos. Since the surgery he is down to 125 kilos and is still losing weight. “It isn’t easy being overweight,” Steven told me. “I found myself just losing motivation to do anything because it’s so hard. It does get a bit embarrassing you know. People are always looking at you and saying things. I’m a pretty happy bloke but it does get you down a bit. “Physically it just gets harder to do things. Being a builder, I just found it a lot harder to get on with things.” Steven says even his seemingly unshakeable positivity took a hit during the times when he was at his heaviest. “I’ve always been a pretty happy, positive guy,” he said. “But yeah it can get you down. You can get a bit down on yourself and feel pretty useless because you can’t seem to lose the weight. Of course, people can be pretty judgemental if you’re overweight, and that makes it a bit hard.” Since the surgery and the subsequent

I haven’t looked back.” Simon underwent the very latest surgical technique, SADI (see our special feature on SADI on the following page of this issue). Dr Free said Simon’s results are impressive and he is looking forward to following his ongoing success. “Simon has done extremely well in the first week’s post-surgery,” Dr Free said. “We expect that to continue. He is losing weight, his mental health is improving and he is breathing better. He’s been through quite a lot so I’m really happy to see him doing so well.” For Simon’s part, he is simply looking forward to a fitter future. “It’s really wonderful,” Simon said. “I’m starting to feel like me again and I’m really looking forward to what the future holds.” Simon and a friend are even planning a trip to Everest once he is down to his goal weight. Having spent the day with him and seen his determination, I think if anyone can do it, it’s this guy.

I feel a lot happier within myself, and it’s just so much easier to get in and do the things I want to do. “I’ll be honest, eating the really small portions of food does take some getting used to. It’s not really that hard, it’s just a change that you need to adapt to. But that’s a small thing when you compare it to how great you feel. I still enjoy all the food I love, just in smaller sizes.” Dr Free said Steven is doing all the right things to ensure his long-term health. “Steven is such a great guy,” Dr Free said. “He’s actually our builder. The Laparoscopic SADI (Single Anastomosis Duodenoileal bypass) procedure is an extremely safe and effective surgical weight-loss procedure which is delivering exceptional results. Dr Free has introduced the procedure in Australia after training in the technique in North America. “The SADI procedure, also known as SIPS (Stomach Intestinal Pylorus Preserving) has the greatest weight-loss of all the commonly performed weight-loss procedures,” Dr Free told SLIM Magazine. “SADI has the longest lasting effects, with less late weight regain, something which has become noticeable in patients who have had sleeve gastrectomy in the past.” Dr Free has already performed several SADI procedures here in Australia, with patients travelling from all over the country to his Gold Coast clinic to undergo the revolutionary procedure. “The procedure, which has evolved over many years, is a modification of the original Duodenal Switch (DS) operation,” Dr Free says. “The problem with the original DS operation was that because such a long segment of intestine was bypassed it led to many patients having malnutrition and vitamin deficiencies, as well as loose bowel motions as a result. “In recent years, a group of Spanish and American surgeons developed the loop technique reducing two anastomosis (surgical connection sites) down to one, and bypassing less intestine. Subsequently the operation is safer, with less effects of malnutrition, diarrhoea and vitamin deficiencies. “The procedure has been developed to such an extent that it provides the most weight-loss, the longest lasting weight-loss, and the most beneficial effect on medical problems associated with obesity, compared to all other procedures. “It has been refined to the point at which the long term problematic issues have been minimalised making it an extremely safe and effective operation which is performed at many leading specialist weight-loss centres throughout the world.”

what is SADI/ SIPS is an operation incorporating a sleeve gastrectomy, bypassing part of the intestine. It is a weight-loss operation that provides the most dramatic amount of weight-loss relative to all the currently performed procedures, with no increase in side effects. It has the greatest effect on improving medical disorders associated with obesity such as diabetes, hypertension and high lipids and cholesterol. As such, it is generally reserved for patients with a very high BMI (BMI>45) and those with

significant medical complications due to obesity. As with all weight-loss procedures, it is a laparoscopic (keyhole) procedure performed under a general anaesthetic. The operation involves two parts: First, part of the stomach is removed making a smaller stomach similar to a sleeve gastrectomy. Then the first part of the intestine (duodenum) is divided just below the stomach and reattached to a loop of intestine about two metres further downstream. This has the effect of decreasing appetite, restricting meal sizes, and bypassing food away from the metabolically active part of the intestine, resulting in beneficial hormonal changes which have a positive influence on the body’s metabolism. “A key point of difference with the SADI procedure is that the bowel is divided below the pylorus (the opening from the stomach into the duodenum), so the pyloric valve and its function is preserved (unlike in the

gastric bypass or mini-gastric bypass),” Dr Free says. “This is an important factor as the pyloric valve plays an important role in regulating the rate at which food and acid enters the intestine from the stomach. It also prevents bile from refluxing from the duodenum back up into the stomach which can cause stomach irritation. “The preservation of the pylorus in this procedure maintains its important function, and the problem of bile entering the stomach (which can occur with the mini-gastric bypass) is prevented in the duodenal bypass. “The preservation of the pyloric valve also eliminates the ‘dumping syndrome’ which can occur with standard gastric bypass procedures. Glucose fluctuations after a meal do not occur after this procedure, and there is also a dramatic reduction in the formation of ulcers at the connection site, which can happen in standard gastric bypass.”

Dr Free says the procedure is proving extremely effective for patients who have had a prior sleeve gastrectomy and either have not had as much weight-loss as expected, or have lost weight and regained weight later on. “In the past these patients have often had their sleeve gastrectomy converted to a standard gastric bypass, however evidence shows that this also may not provide robust long term weight-loss,” Dr Free says. “The SADI/SIPS procedure is showing extremely promising results after previously failed sleeve gastrectomy.”

he obesity epidemic has grown to seriously alarming proportions around the world. Here in Australia, more than 14 million Australian adults are overweight or obese. Think about that number: more than 14 million people – that’s more than the combined populations of Denmark, Singapore and Ireland. Weight-loss surgery specialist Dr Jason Free says the physical and emotional burdens that come as a result of excess weight cannot be underestimated. “Being overweight and obese greatly increases your susceptibility to coronary

The National Health and Medical Research Council recommends bariatric surgery as the most beneficial and cost-effective management option for motivated individuals. Experts say weight-loss surgery provides a tangible alternative for those who have failed to lose weight through conventional diet and exercise or simply have too much weight to lose. It also presents the ideal opportunity for the vicious obesity cycle to be broken. “If a parent is overweight there is a greater chance for their children to also have weight problems,” says Dr Free. “We do not want poor eating habits and a lack of activity to be passed from generation to generation. Conversely, a patient who loses weight and is then leading a healthy, active lifestyle can pass on these lessons to their children, and teach the next generation a better way of doing things so this obesity epidemic can be stemmed. "It's not all lifestyle factors that lead kids

from overweight parents to become obese. Recent evidence from epigenetic studies reveal that children born to mothers who have undergone a weight-loss surgery are less prone to developing obesity than their siblings born before their mothers had the procedure. Researchers have demonstrated changes in the genes that are passed on to their kids after weightloss procedures." In an interview with The Huffington Post Australia Dr John Jorgensen described weight-loss surgical procedures as “proven medicine” for weight-loss and weight management. “Whilst it doesn't turn a person who is morbidly obese into a person who can eat whatever they like and be skinny, it turns them into a person who, with effort, can now succeed -- whereas before, with effort, they couldn't,” Dr Jorgensen said. “We need to cut out this concept that the patient is weak and lazy... It is becoming more accepted as people start to understand that obesity is a consequence of the environment that we have created for ourselves.”

What are some of the most rewarding aspects of your role?

The joyous parts of this job can be separated between the technical and social aspects. The technical aspects are really quite nerdy - the sense of achievement after resecting and reconstructing is similar to say, baking the perfect cake; and it can be enjoyed over and over again. The social aspect is a little more serious though working with experienced surgeons and co-ordinating with allied health staff in achieving a common goal (whether that be getting patients out of serious medical trouble or improving their quality of life with a surgical procedure) is the greatest privilege that I enjoy every day. Occasionally I receive letters or pictures from patients six months down the track after weight-loss surgery, and to see the change in their physical appearance, and more importantly, their positive outlook in life reinforces that joy.

What are some of the most challenging aspects of your role?

Being on-call is always a source of much stress. Surgeons are trained to take out as much uncertainty out of any situation as possible, but the very nature of on-call makes this impossible. However, what needs to be highlighted is that there is always someone who is available to help contingency planning mitigates that factor of uncertainty. I also tell residents that when you're oncall at 2am, it feels like the most lonely time of the day. Though after long nights, the sunrises are the most spectacular things you look forward to seeing. There is always a bright shining beacon that we look out to in the darkness!

What are some of the most exciting developments in your industry? What is your job title?

As part of my fellowship training in bariatric surgery, I assist Dr Jason Free at Pindara Hospital in Gastric Sleeves and Gastric Bypass surgeries. In addition, for my component in Upper GI and endocrine surgical training, I practise under the supervision of Dr Leigh Rutherford at the Gold Coast University Hospital and Pindara. Fellowship training is an opportunity to have exposure to leaders in their field and to gain from their experience. It is an exciting part of a surgeon's career as they make their

transition from a newly-trained surgeon to specialist practice.

How long have you been working in your current role? Nine months.

What was your journey to get to your current role?

I completed a post-graduate of medicine at the University of Queensland and an internship at the Gold Coast Hospital. During most summer holidays, I would travel to Seattle, Washington to complete research working towards publications and presentations at international conferences. It was very hard work as a resident seemingly drowning in projects that I wasn’t sure were going to bear fruit. I was fortunate that I got accepted into surgical training very early, and I completed my training at various posts throughout South East Queensland.

I'm excited that there is a growing awareness from the public and government of the downstream benefits of weight-loss surgery. I am looking forward to seeing the day that it is made readily available to a broader community, as an accepted preventative health measure. There is still a lot of work needed on that. However, change also needs to be made from within; surgery can only get you so far in the context of long-term weight-loss. The field of bariatrics is currently like the age of sailing when we were searching for the way to the EastIndies - there are various routes we can take, with its associated advantages and pitfalls; and mysteries and uncertainties - however, it’s the discovery of the unknown that will be the most valuable and surprising.

What do you enjoy doing when you aren’t working?

DISCIPLINE

for effective and appropriate discipline. It is worth SLIM readers noting that these techniques are best used in conjunction with the techniques discussed throughout Parenting for a Happier Home. If the parent–child relationship is fractured or struggling, or you are not practicing effective parenting skills, you run the risk of causing further harm to the relationship and becoming little more than an authoritarian parent. This can and often does increase difficult and aggressive or non-compliant behaviour in children, particularly boys, and is said to increase and condone aggression toward others.

vs PUNISHMENT

Discipline must be clearly distinguished from punishment. Parents who use punishment often argue it is appropriate and necessary to control a child’s misbehaviour. However, more often than not, punishment is little more than an angry parent lashing out at their child for some unacceptable behaviour. Punishment often (but not always) involves some form of corporal punishment such as smacking. Professional literature describes corporal punishment as hitting, striking, wounding or bruising your child as a means of discipline or punishment. Parents can become emotionally aroused when their child is ‘pushing all their buttons’ and can be unaware of the force with which they are actually striking a child as opposed to how much force they think they are using. There are many other problems with punishment. Professionals, laypeople and parents are increasingly questioning the long-term efficacy. Apart from the very real risk of harming the child and the relationship becoming abusive, current research and actual experience informs us that smacking a child only modifies the behaviour in the short term or in that moment; it fails to modify a child’s misbehaviour in the long term. Discipline, on the other hand, is viewed as teaching, guiding, explaining and training the child ‘in the ways he should go’, not just when the child engages in misbehaviour. Prominent researchers have provided us with a clear distinction between discipline and punishment, suggesting that any form of effective discipline is a positive and beneficial way of deterring your child from

unacceptable behaviour through the use of various consequences in conjunction with setting your child very clear boundaries for acceptable behaviour. Discipline has at its foundation absolute respect for the child with an understanding that while it may indeed incorporate negative consequences for a child’s misbehaviour, such consequences only play a small role in modifying a child’s misbehaviour overall. The discipline program discussed here will show you how to clearly differentiate between discipline and punishment and help you to step back from getting caught up in an emotionally charged situation when needing to discipline your child. The discipline program in Parenting for a Happier Home is designed to serve a number of purposes. First and foremost, it allows parents vital space from becoming emotionally involved and striking out in anger, thus not only potentially harming the child physically, but also potentially harming the parent–child relationship. Because parents are able to step back from an emotionally charged situation, discipline is managed in a controlled and calm way using consequences that are predetermined rather than an angry parent lashing out in desperation trying to find some kind of punishment that will work. In other words, parents are given an opportunity to reduce their emotional and physical involvement in disciplining their children and focus on being able to respond in a calm and controlled manner.

Children and adolescents become quite distressed by their out-of-control behaviour and feel so much more secure and happy when their parent takes control. You need to be aware, though, that there is a chance your child’s problematic behaviour may increase or ‘spike’ when you first introduce this discipline program. It’s as if your child is testing you to see if you really mean what you say. Be warned, if your child’s misbehaviour spikes and you fail to enforce the program, your child’s misbehaviour will be reinforced. If your child’s misbehaviour does spike, don’t give in, maintain your resolve and your determination, and simply continue the discipline program. Sometimes the consequences may need to be adjusted or altered if the behaviour doesn’t appear to be changing, but that’s okay. Just keep on applying the discipline you have decided on.

You are not bound to run around after your selfish, aggressive or abusive teenager and you are not bound to continue to give them all their wonderful privileges if they are not earning those privileges by respecting you.

DISCIPLINE: LISTING FIVE BEHAVIOURS

Your first step is to choose the five most troublesome behaviours shown by your child that need to be changed. Write them down under the heading, ‘Behaviour’. No more than five behaviours should be listed as there is a risk of overwhelming your child with too many expected changes. On the flip side, it does not matter if fewer than five behaviours are listed. Essentially, the list of behaviours begins with the most troublesome behaviour and moves down to the least. It is important to break down the descriptions into actual behaviours. Essentially, what you will be doing is ensuring your child has a very clear understanding of the offensive behaviour that needs to be changed.

LIST FIVE CONSEQUENCES

Once you have worked out and listed your child’s most problematic behaviours, the next step is to complete a comprehensive list of potential consequences. This simply requires you to make use of the many privileges that your child has as a means of deterring unacceptable behaviour. I cannot stress enough, however, that under no circumstances are you to use a child’s rights (for example, warmth, food, shelter, clothing, unconditional love, the right to be respected, the right to be safe, and so on) as consequences. However, there are many, many privileges you can use. The problem is that as privileges are a part of everyday life for many children it can be quite difficult to think of appropriate privileges to use as consequences. Whatever consequences you decide on they should suit the behaviour (as it were), and need to be harsh enough that they will serve as a permanent discouragement, but at the same time not be overwhelming for the child.

LEARNING SELF CONTROL .

This is also an issue of helping your child develop self-control. Self-control is the current, trendy new term for what was once called strength of character. When children are learning selfcontrol, they are also developing self-discipline and moral behaviour at the same time. Self-control, selfdiscipline and moral behaviour are considered to be the most important foundations to becoming a welladjusted adult. This is because children are learning how to replace, restrain or stop socially unacceptable and undesirable behaviours.They are learning how to control their behaviour, thoughts and feelings.

Disciplining the

YOUNGER CHILD

For the younger child it is recommended you use a time-out approach. This simply means placing a chair in the corner of a room where there are no distractions (for example, pictures, television, etc.) and having your child sit there for no more than one minute per year of life. For example, if your child is four years old they would sit on the time-out chair for no longer than four minutes. However, the time should be guided by the parent, and by the misbehaviour. You will need to select an appropriate corner in your home to place the chair. Then you will explain to your child each step of time-out in an age-appropriate manner. Using appropriate examples, you would explain that when your child misbehaves (for example, hits out) they would be sent to the time-out chair. You then take your child to the time-out chair and have them sit on the chair while you explain the rules. For example, ‘When you hit me, you will have to sit here until Mummy [or Daddy] comes to you. You are not to get off the chair until Mummy [or Daddy] comes to you.’ When the time limit is up, you are to return to your child and explain again in simple terms why they were placed in timeout. At this point you can request an apology if the preceding misbehaviour necessitated such a response. Before placing your child into time-out, you need to provide time for your child to try self-control or comply with your request. This step is exactly the same as for the older child. For example, ‘If you don’t pick up your toys you will be sent to time-out. One … Two … Three.’ If your little one has not made an attempt to comply with your request in that time, you would escort them to the time-out chair.


Disciplining the

ADOLESCENT

family meetings Once you have completed the behaviour and consequence list, it’s time to call a family meeting. In this family meeting you will sit down with your child and the behaviour and consequences list and explain what it all means, in simple terms. This is the reason why you had to be very clear about describing the behaviours you wanted modified. You need to inform your child of the behaviours that are upsetting and unacceptable and explain how the consequences will work. At this point you can also ask your child if there are any problematic behaviours they are aware of, as some children are both aware of and concerned about their misbehaviour. Finally, effective parenting also teaches the child to be aware of how their behaviour impacts others. So during this family meeting you will also discuss with your child how their behaviour impacts you and the other members of the family.

AWAY FROM home The same principles of using privileges as consequences apply equally for the adolescent (and even the adult child at home) as they would for a younger child. Again, a consequence means removing a privilege of importance to the adolescent, and they have many privileges that can be used. Supposing your fifteen-year-old adolescent wags school — again. How do you discipline him in light of all the information you have read so far? The discipline program is about finding an appropriate consequence that has meaning to your child. For instance, some parents have not permitted their child to use screens (computer, internet, electronic games, mobile phone, etc.) unless it is for school use only, as all these items are privileges. With the adolescent you would also take the opportunity to teach them how their problematic behaviour is destructive and can have negative consequences for them and impact the parent–child relationship. For example, you might say something along the lines of ‘I find it very hurtful when you say xxx to me’ or ‘I find it very hurtful when you treat me this way. Why should I drive you to your friends’ homes or to the movies or buy you expensive clothing or pay your mobile phone bills or cook you a nice meal if you treat me in such a disrespectful manner? If you want me to continue doing these things for you, you will respect me in the manner that we have discussed.’ Parents are not their children’s slaves and children need to learn to respect all the things parents do for them as privileges not rights. There are times when you may have to be tough with your decisions when it comes to disciplining the adolescent. Why should you cook them nice meals, buy takeaway for them, drive them to their friends’ homes or wash their clothes when they insist on disrespecting you? Why should you allow them to use your electricity to play on their computer or watch their television in their room, and why should you have to pay their mobile phone expenses or allow them internet access on their mobile phone if they are aggressive or abusive towards you? You are not bound to run around after your selfish, aggressive or abusive teenager and you are not bound to continue to give them all their wonderful privileges if they are not earning those privileges by respecting you. Yes, you are bound to ensure they are fed (but that doesn’t mean they must eat the roast dinner you had; it does mean they can eat a bowl of broccoli instead), they are to be clothed (but you don’t have to buy those expensive jeans or runners), they are to be warm, protected and loved but that doesn’t mean you have to be their personal taxi or ATM. It’s simple: if the adolescent wants all these wonderful things from you, they can earn them or go without!

Over the years many parents have asked me how to manage their child’s misbehaviour outside the family home. As conduct problems in children tend be expressed across different situations and different environments such as the classroom, the school playground, grandparents’ homes, friends’ homes, or in the shopping centre and so on, having a discipline program that only addresses problematic behaviour in the family home is insufficient. The simplest answer is that the discipline program needs to be applied to each area of the child’s life. For example, if your child is misbehaving at school, you may need to contact the classroom teacher and request to be informed of any misbehaviour from your child during the course of the day. Further, your child is to be informed that if you are contacted by their teacher they will be subjected to the designated consequence that evening at home. I often inform children of all ages that the discipline program will follow them everywhere they go. So if they misbehave at school not only will they suffer the consequences the teacher may dish out, but they will also have consequences at home. At the family meeting you must inform your child that the consequences are in place across all situations. Finally, it is very important you remember that once the consequences have been applied, that is the end of the discipline. All too often a parent may remain angry with the child and can withhold love and affection. Apart from this being rejecting in nature, there is also a great risk of sending the underlying message to your child of ‘You are only acceptable to me when you do what I want you to do’. Once the desired behaviours become the norm, the initial problematic behaviours can be ‘wiped’ from the behavioural list to symbolise a clean slate. When it comes time for you to do this, make sure your child is with you and give them the opportunity to wipe off the behaviour themselves. If that initial troublesome behaviour returns, simply place it back on the board or if new problematic behaviour emerges, and after discussing it with your child, simply place that troublesome behaviour on the board.

Journalist Tracey Hordern has been reporting on the emotional and controversial issue of vaccination for almost a decade. Here, she tells SLIM readers why it’s vitally important to find the facts.

T

he very word vaccination can emit an emotional response, so to clarify; vaccination is a broad term that applies to various vaccines that are made using a variety of different processes. There’s only one suggestion I would convey to anyone who cares to research or read further on the topic of vaccination – apply critical thinking – and stick to the known facts. The practice of immunisation in fact dates back hundreds of years, with Buddhist monks drinking snake venom for immunity to snake bites and the Chinese smearing cowpox to impart immunity to smallpox in 17th century. In the West, we consider Edward Jenner the founder of vaccines. He famously inoculated a 13 year-old-boy with cowpox in 1796 and demonstrated immunity to smallpox. There are several different types of vaccines available now and with new technology, and there will no doubt be more. But this is where the water muddies; depending on how you think and what you believe, the motivation to develop vaccines will be money, corporate greed, or a desire to heal and create a safer world - and in between these beliefs are fertile grounds for controversy. While vaccination programs are varied across all ages of our lifetime, it is childhood immunology that has become the focus of most of the media attention and tempers. Australia’s vaccination rate, which averages 92 percent, still sits under the World Health Organisation’s recommendation of 95 percent. According to a new study by the Medical Journal of Australia, vaccination objectors tend to be in geographical clusters such as South-East Queensland and Northern New South Wales. The same study also stated it was these clusters that posed the greatest risk of disease outbreaks. In Australia, the federal government response has led to new repercussions for parents who choose not to vaccinate, which is further fuelling the debate, including what many view as the heavy-handed, ‘no jab, no pay’ policy. According to a spokesman for Federal Health Minister Sussan Ley, State and Territory health departments are reporting they are being inundated with calls from GPs and health nurses about how to implement catch-up schedules, particularly for children who have never been vaccinated, as parents flock to immunisation providers to avoid financial repercussions. The director of public health for the NSW North Coast, Paul Corben, in a recent interview with the ABC, said a lot of parents were now seeking immunisation

advice and vaccines since the ‘no jab, no pay’ policy had become law. Mr Corben however, said many of these parents were likely to be those previously ambivalent, while he was not sure the policy would sway local, hardline anti-vaccination parents. An extreme example can be found in the 2015 National Health Performance Authority report, where they found that less than 50 percent of one, two, and five-year-old children in NSW’s Mullumbimby postcode were fully immunised. Meanwhile, Paul Corben stated the region’s three local government areas with the highest vaccination rates, Port Macquarie-Hastings, Clarence Valley and Coffs Harbour had the lowest rates of whooping cough. Paediatrician Dr Chris Ingall said he believed that, “vaccinations were the victim of their own success”. This is a commonly held belief, believing many Australian parents have become complacent about childhood vaccinations as they no longer see diseases such as polio - now eradicated due to vaccination programs. While informed decisions are paramount, many well-meaning parents do their research on the Internet to make an enormous decision, often landing on commercial and dubious websites that have little to no factual evidence to back their claims and often with business models that are not entirely altruistic.

An example is the Australian Vaccination Network (AVN), a commercial website and organisation based in the Northern Rivers of NSW. The AVN is a dominant Australian anti-vaccination voice with a media savvy spokesperson, Meryl Dorey. Combined with a high ranking online presence and a paid subscription newsletter, the AVN is a site many concerned Australian parents can inadvertently land on. Studying the AVN website reveals few figures – or facts to back claims and opinions. There are links to Meryl Dorey’s many interviews, plus an emotive focus on the vendetta against the organisation and Dorey personally. There are also many commercial links, including a shop and links to join the AVN on a paid membership basis or the option to become a paid sponsor. The AVN has a long and litigious history with the authorities. Until October 2010, they were the holders of a charitable fundraising authority in NSW. However their authority to “fundraise” was revoked by the NSW Office of Liquor, Gaming and Racing after an audit found their fundraising was not conducted in good faith for charitable purposes, nor was it properly administered or in the public interest. A common link people connect is between childhood vaccination and autism – and sadly, there’s an understandable reason for this. The most obvious signs of autism tend to emerge between 12 and 18 months of age, the same time most children receive their MMR (Measles, Mumps and Rubella) vaccination. In 1998, the discredited medico, Andrew Wakefield hypothesised that the MMR vaccine caused autism. The study was famously published in the respected medical journal, The Lancet and the connection was sealed thanks also to wide media coverage. But in 2010 after serious conflicts of interest were revealed and proven, The Lancet publically withdrew the paper. It was revealed Wakefield failed to disclose accepting £55,000 from lawyers representing autistic children attempting to sue vaccine companies. He also failed to disclose he had a patent pending on a competing vaccine. In May 2010, he was struck off the British medical register following an investigation found he was, “dishonest, violated basic research ethics and rules,” while showing, “a callous disregard for the suffering of children involved in his research”. The causal link between MMR and autism that Wakefield promoted has since been disproved many times over, under rigorous conditions. The MMR vaccine was replaced with single vaccines in 1993 in Japan, however the rates of autism have continued to rise in that country. That’s not to say vaccines are perfect. According to information on many Australian state government health websites, it is explained in detail that no vaccine is 100 percent effective - and like any drug, there are risks and side effects. For reasons related to individuals’ genetics, not all those vaccinated will develop immunity. Most routine childhood vaccines however are proven to be effective in 85 to 95 percent of recipients. Personal choice to vaccinate or not, is often cited as a reason to object. While childhood vaccination is not compulsory in Australia, the fact is, if you live in a community, your choices affect others. Smallpox and polio was eradicated in our communities in Australia due to the high uptake of vaccines. On the other hand, in Wales, large numbers of children did not have their MMR vaccines in 1998. The population was directly influenced by significant and ongoing local media coverage of the false Wakefield claims about the safety of MMR. Three years ago, there was a concerning outbreak of measles in Wales, resulting in 1,219 reported cases, many of these cases with serious complications and one death resulting. This event also somewhat discredits the ‘good hygiene should cover it’ antivaccination hypothesis. There’s a journalistic term to describe giving more time to opposing viewpoints than the evidence actually supports – it’s called false balance. Or as ABC’s Media Watch, Jonathan Holmes recently stated in response to an example of vaccination media coverage in Australia, “It’s a journalist’s job to distinguish between them (the facts), and not to sit on the fence and bleat balance, especially when people’s health is at risk.” SLIM-MAGAZINE.COM.AU 39

A

couple of years ago I ran my first long distance race. Granted it was a 10km night fun run, but it was the first step in my plan to becoming physically fit. Before I entered the race, my exercise regime was almost non-existent; my health was suffering and my clothes were becoming tighter. Two very good reasons to start exercising. The race became my excuse to exercise. You need to have the same sort of endgoal motivation to become financially fit. Financially fit means different things to different people, but essentially it should mean you can pay your credit cards in full each month, you have savings in the bank for at least a month worth of expenses, you are contributing extra to super, you have an investment plan and are starting to build wealth through assets. The problem with most of our finances though is the same problem that happens to our waistlines. They’re simply not what they should be and we’re not really sure where to start in order to get back on track.

So how do you start becoming financially fit? • Set a goal. Whether it is saving for retirement, paying off your credit cards, contributing to super, or starting to invest – it’s much easier to work towards something if you know what you are working towards and the time limit you have set yourself to get there. • Make a plan. Once you’ve set a goal you need to work out how you are going to get there. Work out how much you need to reach your goal, where it is going to come from and how much you need to put aside each week. • Be prepared to sacrifice. Becoming financially fit might mean you need to bring your lunch in to work a few times a week, see one less movie a month, or cut down on your shoe purchases. Work out what you can do without, prioritise the rest and keep your eye on the goal you set yourself. • Be prepared for setbacks. You may find that you have car repairs or you might fall into temptation when you go window shopping. Don’t throw in the towel, just work out what you need to do in order to meet your goals and keep going. • Celebrate. If your goal was to pay off your credit cards maybe don’t celebrate with a shopping spree, but make sure you acknowledge that you achieved your goal.

• Start the process again. Once I completed my 10km run I immediately looked for the next challenge, which will be a half-marathon in the next 12 months. Once you’ve achieved your first goal in becoming financially fit, pat yourself on the back and then set your next goal. It’s important to remember that there will be surprises and your finances are no exception. The trick after you’ve had an unintended spending binge, a major client has left, your car needs expensive repairs or you’ve paid out thousands in medical bills, is to dust yourself off, take a deep breath and start again. It’s the starting again that’s the important bit. Of course, I think what’s missing from all of this is the reward. My reward to become physically fit will be more energy, less stress and being able to keep what is in my wardrobe for years to come. Oh and a daily chocolate hit. Your reward to become financially fit will be financial independence, security, stability, options and a comfortable retirement. I think all of these rewards are worth striving for. ver one in three Australians with sight problems may be the unhealthy and unhappy poor cousins of those with 20-20 vision, according to new research released by Australia’s leading network of eye clinics, PersonalEYES. After surveying over 780 Australians who have, or have had vision issues, 35 percent of respondents admitted to reducing their exercise and some cut back on social activities due to poor sight. One in three women have had to reduce their exercise, while 38 percent of men cut back physical activity due to sight problems. More alarming still, close to three in four contact lens wearers said they exercised less because of sight problems before getting help with their vision. Dr Chandra Bala, an eye surgeon with PersonalEYES says, “You don’t imagine that poor vision will have such an impact across so many aspects of a person’s life, but this study proves sight issues effect overall physical and mental wellbeing.” The study also found that Australians with poor sight may go out less to see friends, with one in five women reducing their social activities because of sight issues and 13 percent of men curbing their social lives because of sight problems. Physical and mental wellbeing among the thirtysomething age group is the hardest hit by poor vision – sight issues forced 45 percent of these Australians to reduce their exercise and one in five cut back on social activities. Sight issues take a toll across the board with close to one in 10 men reporting they had to change jobs due to their sight problems, while 6 percent of women changed jobs because of their eye problems. Dr Bala says, “We also found that one in 10 respondents had ongoing health problems such as headaches and sore eyes due to 42 SLIM MAGAZINE WINTER 2016

eat for your eyes Boosting your intake of dark leafy greens always helps but it’s a little known fact that avocados are more than just a delicious food for heart health. Filled with vitamins C, B6 and E, avocados are rich in lutein, an antioxidant that helps your macula shield intensive and damaging light and can help ward off diseases such as cataracts. Cold water fish like mackerel, salmon and sardines play an important role in sustaining the quality of your lipid tears. When you sleep your eyes are lubricated and irritants collected throughout the day removed. Ensuring you give your eyes a break from the computer screen is another important way of keeping your eyes fresh and clear. Take breaks when using screens such as laptops, computers, tablets and even the phone because prolonged screen use can cause dry eye symptoms, tiredness and can affect the focussing ability of the eyes. Also, keeping a healthy lifestyle, quitting or not smoking, using lubricating eye drops and annual checks with your optometrist will aid in keeping your eyes healthy.

watch for the warning signs Many eye conditions might not show signs until it is too late so it’s important to go for regular checks, even if you think your eyes are fine. Conditions such as Type 2 diabetes, MS, high blood pressure and even tumours can be picked up at an eye test, so it’s well worth doing.

t may sound like something from a science fiction movie, but Robotic-Arm Assisted Surgery is here, and one of the first surgeons to embrace the technology is our own SLIM expert, Dr Andrew Letchford. Dr Letchford has long been a leading name in arthroplasty ( joint replacement), knee reconstructions, sports injuries and acute orthopaedic trauma. Now he is breaking new ground with RoboticArm Assisted Surgery for partial knee replacements, a procedure that is only available at seven hospitals in Australia and two in Queensland, including the Gold Coast Surgical Hospital, part of the Pulse Health network.

WHAT IS IT?

Robotic-Arm Assisted Surgery is, as the name suggests, a robotic arm and associated computer software used by Dr Letchford during a partial knee replacement, a procedure designed to relieve the pain caused by joint degeneration due to osteoarthritis in one or two compartments of the knee. By selectively targeting the part of your knee damaged by osteoarthritis, Dr Letchford can replace the diseased part of your knee while helping to spare the healthy bone and ligaments surrounding it. The Robotic-Arm Assisted Surgery software provides Dr Letchford with a 3D model specific to your knee, which he uses to pre-plan your partial knee replacement. During surgery, Dr Letchford guides the Robotic-Arm based on your specific plan. This allows him to remove only the diseased bone, preserving healthy bone and soft tissue, and assists him in positioning the implant based on your unique anatomy. “Robotic-Arm Assisted Surgery affords us absolute accuracy,” Dr Letchford told SLIM. “The surgeon’s hand is guiding the arm, however we cannot go outside the boundaries we have set. It is accurate to within millimetres. “Post-operatively, what it means is that because we are creating a much smaller incision, the patients have the potential to recover a whole lot quicker. “It used to be that this type of surgery

required a patient to be in hospital for about a week. With Robotic-Arm Assisted Surgery, my patients are routinely going home on the second day after surgery. “Then, when they come back to see me two weeks after surgery, they are moving a whole lot more normally, with a much greater range of motion.” Dr Letchford says that Robotic-Arm Assisted Surgery is a genuine breakthrough that could see a reduction in the amount of full knee replacements being performed. “It is a treatment option that is much more user friendly for the surgeon and can give a better result for the patient much earlier in the diagnosis, without going through a full knee replacement.

“For patients with osteoarthritis isolated to a single compartment of the knee, we can alleviate pain without having to perform a full knee replacement, and increase the chance of delivering a knee that functions better. “Last year approximately 96 percent of all knee surgeries were full replacements, but I think with this technology allows us to be a lot more accurate, we are going to see that number change, and a real increase in partial knee replacements.” If you are privately insured there is no extra cost for the patient utilising this technology. how it works 1. Make a plan

It all begins with a CT scan of your joint that is used to generate a 3D virtual model of your unique anatomy. This virtual model is loaded into the software and is used to create your personalised pre-operative plan.

2. In the operating room

In the operating room, Dr Letchford will use the Robotic-Arm to assist in performing your surgery based on your personalised pre-operative plan. The system allows Dr Letchford to make adjustments to your plan during surgery as needed. Brain fitness doctor Dr Jenny Brockis shares her tips on eating to improve brain function.

I

t seems hardly a day goes by without us being bombarded with new advice on what to eat, what not to eat and the next big thing guaranteed to keep us healthy. Much of this is often contradictory, making it hard to know the difference between fact, fiction and wishful thinking. Years of nutritional research have revealed how our choice of foods influences our memory, general cognitive skills, mood and mental wellbeing. Getting it right is important to boost focus and thinking at all ages. Our food choices influence how well our kids learn (and behave) at school; it affects how well we operate in the workplace; and of course how well we maintain our cognition as we age. In 2014 researchers at Yale University School of Public Health undertook a meta-analysis of all mainstream diets to see if one diet really did provide a significant advantage. What they discovered was that most diets had some merit, however the one most important attribute that stood out by the proverbial mile was this: eat real food. This means enjoying a wide selection of different foods, that are preferably fresh, locally sourced and unprocessed. Living in Australia we are blessed with ready access to high quality seasonal produce at any time of year. Eliminating certain food groups carbohydrates, fats or proteins just makes it harder to eat in a balanced way. Adding in a bucket-load of vitamins doesn’t substitute for healthy food choices either and the so-called super-foods are insufficient on

46 SLIM MAGAZINE WINTER 2016

their own. If you feel compelled to purchase the latest superfood sourced from a remote jungle location, carried by a yak for ten days before being transported urgently to your nearest grocery store, that’s fine; as long as you are also including other brain healthy foods. The top contenders for boosting focus, memory and better cognition are the Mediterranean and MIND diets. SLIM readers will already be familiar with the Mediterranean style of eating. Leafy greens, cold water oily fish such as salmon or mackerel or other lean protein, deeply pigmented berries such as blueberries and strawberries, some seeds and nuts, some whole grains, a good dollop of olive oil, a small glass (125 mls – I did say small!) of red wine and you are good to go. Following the Mediterranean diet has, in longitudinal studies been linked to better cognitive health, improved mood and better memory. Beyond the crystal clear waters of the Mediterranean, the new kid on the dietary block is the aptly called MIND (Mediterranean-DASH Intervention for Neurodegenerative Delay) diet. What’s particularly exciting here is that studies of this way of eating (which is very similar to the Mediterranean diet) have been associated with a 35 percent lower risk of Alzheimer’s disease. It incorporates all those foods shown by the research to be good for the brain and it’s easy to follow.

BERRY DELIGHTFUL. Two or more serves a week of blueberries, strawberries, blackberries, or cherries to pack a powerful anti-oxidant punch. 5. BEANS. Lentils, chickpeas, kidney beans or baked beans. Eat beans three times a week. 6. WHOLE GRAINS. For those not allergic or Coeliac, three servings a day. 7. GO FISH. Naturally fish would have to be included for the Omega-3 content - once a week. Too easy! 8. CHICKEN. Chicken or turkey twice a week.

t’s become a global epidemic, and health authorities are warning we are losing the battle. Here’s what you need to know about diabetes. Australia recorded another grim diabetes milestone in 2015 with the number of people newly diagnosed with the condition topping 100,000 for the second year in a row, according to figures released by Diabetes Australia. The figures were released as part of World Health Day, a World Health Organisation (WHO) awareness day held earlier this year. This year WHO chose to highlight diabetes as the major global health challenge of the 21st century and one of the biggest threats to economies across the globe. Diabetes Australia CEO Professor Greg Johnson said that the 100,000 people diagnosed in 2015 took the total number of Australians now living with all types of diabetes to 1.2 million. “In the last decade the number of people diagnosed annually has been increasing but 2014 was the first time we topped 100,000 and the 2015 figures are a grim reminder that we are not making progress,” Professor Johnson said. “This is in contrast to some other chronic conditions including cardiovascular disease and some cancers where we are seeing a reduction in the burden of these as prevention, treatment and management improves. “On top of this Diabetes Australia estimates there are hundreds of thousands of Australians with silent, undiagnosed Type 2 diabetes and around two million adult Australians with pre-diabetes (early stage disruption of glucose metabolism)

who are the high risk population likely to develop Type 2 diabetes.” Professor Johnson said strong evidence showed that a coordinated, comprehensive diabetes prevention program could help slow the diabetes epidemic. “We have very strong evidence that intensive lifestyle behaviour changes including alterations to diet, increased physical activity and a reduction of 5-7 percent of body weight can reduce the risk of Type 2 diabetes by around 60 percent for people at high risk,” he said. “What Australia doesn’t have is a National Diabetes Prevention Program like the United States where they are systematically identifying high risk individuals and helping them access affordable prevention programs in the community. “The Victorian Government has funded a diabetes prevention program since 2008 and the Queensland Government is now funding a similar program. “Now it’s time to create a national program with all states and territories working together with the Federal Government.” We’d like to see the same cooperation for diabetes that’s happening with the National Plan to Reduce Violence against Women and their Children which is driving coordinated responses between the Federal Government and the states and territories.” Professor Johnson pointed to the new Australian National Diabetes Strategy 2016 – 2020 released by Federal Health Minister Sussan Ley on World Diabetes Day late last year. “We are very pleased the Strategy has been referred to all state and territory Health Ministers and that there will be a discussion around action but I can’t stress

enough how important implementation is,” he said. “Diabetes is the biggest challenge confronting Australia’s health system and the longer we put off coordinated, comprehensive action - the more the numbers continue to skyrocket.” Professor Johnson said it was important discussion covered the cost to individuals and communities as well as the financial cost. “The financial cost is staggering and there is a very real risk it could bankrupt our health system, but the human cost is just as devastating,” he said. “Diabetes is the leading cause of preventable blindness in working age Australians. Thousands of Australians lose their site every year and tragically 98 percent of this is preventable. “Diabetes is also the leading cause of lower limb amputation with around 70 Australians undergoing diabetes-related limb amputations every week.” The size of the problem, Professor Johnson said, required involvement of every sector of Australian society. “The response to diabetes must extend beyond Federal and State Governments. Everyone has a stake in reducing rates of preventable Type 2 diabetes,” he said. “We need the private sector and employers to do more to build healthier workplaces and give their workers all the opportunities they need to stay healthy and reduce their risk of diabetes. “At a community and an individual level we need people to take control of their lives and ensure they are eating healthy, getting regular physical activity and maintaining a healthy weight.”

In Type 1 diabetes the pancreas, a large gland behind the stomach, stops making insulin. Without insulin, the body’s cells cannot turn glucose (sugar), into energy and burns its own fats as a substitute. Unless treated with daily injections of insulin, people with Type 1 diabetes accumulate dangerous chemical substances in their blood from the burning of fat. This is potentially life threatening if not treated. To stay alive, people with Type 1 diabetes depend on up to four insulin injections every day. They must test their blood glucose levels several times daily. The onset of Type 1 diabetes typically occurs in people under 30 years, but can occur at any age. About 10-15 percent of all cases of diabetes are Type 1.

Cause of Type 1 Diabetes The exact cause of Type 1 diabetes is not yet known, but we do know it has a strong family link and cannot be prevented. We also know that it has nothing to do with lifestyle, although maintaining a healthy lifestyle is very important in helping to manage Type 1 diabetes. At this stage nothing can be done to prevent or cure Type 1 diabetes.

Managing Type 1 Diabetes While there is currently no cure for Type 1 diabetes, the disease can be managed through maintaining a healthy lifestyle, regular blood glucose testing and insulin replacement through lifelong insulin injections (up to six every day). The aim of treating your diabetes is to keep blood glucose levels as close to ‘normal’ as possible.

Type 2 is the most common form of diabetes, affecting 85-90 percent of all people with diabetes. While it usually affects older adults, more and more younger people, even children, are getting Type 2 diabetes. In Type 2 diabetes, the pancreas makes some insulin but it is not produced in the amount your body needs and it does not work effectively. Type 2 diabetes results from a combination of genetic and environmental factors. Although there is a strong genetic predisposition, the risk is greatly increased when associated with lifestyle factors such as high blood pressure, being overweight or obese, insufficient physical activity, poor diet and the classic ‘apple shape’ body where extra weight is carried around the waist. Type 2 diabetes can often initially be managed with healthy eating and regular physical activity. However, over time most people with Type 2 diabetes will also need tablets and many will also need insulin. It is important to note that this is just the natural progression of the disease, and taking tablets or insulin as soon as they are required can result in fewer complications in the long-term.

Cause of Type 2 Diabetes While there is no single cause of Type 2 diabetes, there are wellestablished risk factors. Some of these can be changed and some cannot. You are at a higher risk of getting Type 2 diabetes if you: • have a family history of diabetes • are older (over 55 years of age ) - the risk increases as we age • are over 45 years of age and are overweight • are over 45 years of age and have high blood pressure • are over 35 years of age and are from an Aboriginal or Torres Strait Islander background • are over 35 years of age and are from Pacific Island, Indian subcontinent or Chinese cultural background • are a woman who has given birth to a child over 4.5 kgs (9 lbs), or had gestational diabetes when pregnant, or had a condition known as Polycystic Ovarian Syndrome.

Symptoms of Type 2 Diabetes In Type 2 diabetes, many people have no symptoms at all, while other signs are dismissed as a part of ‘getting older’. By the time Type 2 diabetes is diagnosed, the complications of diabetes may already be present. The symptoms of Type 2 diabetes can be the same as the symptoms for Type 1 diabetes, with the added symptom of gradual weight gain.

Preventing Type 2 Diabetes It is estimated that up to 60 percent of Type 2 diabetes can be prevented. People at risk of Type 2 diabetes can delay and even prevent this disease by following a healthy lifestyle. This includes: • Maintaining a healthy weight • Regular physical activity • Making healthy food choices • Managing blood pressure • Managing cholesterol levels • Not smoking.

Managing Type 2 Diabetes Type 2 diabetes can sometimes initially be managed through lifestyle modification including a healthy diet and regular exercise. However, as the disease progresses, people with Type 2 diabetes are often prescribed tablets to control their blood glucose levels. The aim of diabetes management is to keep blood glucose levels as close to ‘normal’ as possible, as this will help prevent both short-term and long-term complications. Regular blood glucose monitoring is necessary to see if the treatment being followed is adequately controlling blood glucose levels.

uke Hines, CEO of The Paleo Way, questions why Aussie’s are comfortable with adopting a new build-your-own-burger menu at the local fast-food joint, but not of a lifestyle that promotes quality foods, nutrition and exercise. “The Paleo Way isn’t about restriction, but about exploration,” says Luke, “It isn’t a strict routine of watching what goes in your mouth but about adjusting your mindset to explore the endless possibilities that food has to offer us. The Paleo Way challenges you to change your path and adopt a healthier, tastier and hopefully happier life.” According to Luke, many people automatically assume that joining The Paleo Way will involve cutting out all their favourite foods and limit them to rabbit food and an enormous amount of meat and eggs, but this simply isn’t the truth. “The Paleo Way is all about discovering exciting healthy and nutritious alternatives to staples in your diet. Of course, for many giving up dairy is such a huge part of the transformation, but making this simple sacrifice may reward you with reduced gut inflammation and bloating.” SLIM-MAGAZINE.COM.AU 51

The battle between Paleo proponents (most notably, Pete Evans) and the Dietitians Association of Australia (DAA) has been well documented. DAA CEO Claire Hewat says the scientific evidence to support eating like our Palaeolithic ancestors just doesn’t stack up. She goes as far as to call the diet potentially dangerous. “A recent search of the published studies looking at Palaeolithic diets revealed no more than ten studies, all with very few participants over very short timeframes

– most less than three months. “Some proponents of ‘Paleo’ suggest we avoid all grains, legumes, certain dairy products, conventionally-raised meats, non-organic produce, and genetically modified and processed foods. This simply isn’t practical for many Australians,” said Ms Hewat. “Any diet excluding whole food groups should raise suspicions. The idea of cutting out grain based foods and legumes is not backed by science, and eating more meat than is needed by the body certainly has risks, according to the World Health Organisation,” said Ms Hewat. The Heart Foundation, too has taken issue with Paleo, questioning whether the high saturated fat in the Paleo diet increases the risk of heart disease. Paleo supporters, in particular Evans, have been highly critical of the DAA saying it is misleading the public through “corrupt promotion of so-called health foods”; accepting donations from corporate partners including “big sugar” companies Nestlé and Campbell Arnott’s.

No dairy = no calcium

According to Luke, giving up dairy doesn’t mean sacrificing calcium, in fact, other sources of calcium from plants such as kale and spinach, canned fish such as salmon and sardines, dates, figs, nuts and even olives are all fabulous sources of calcium that won’t cause unnecessary inflammation. If coffee’s your concern, then swapping cow’s milk for almond or coconut milk may take some getting used to, but is something you’re guaranteed to learn to love.

What about my precious carbs?

Paleo has, and never will focus on carbohydrates; it is simply an exploration and discovery of how food affects your body by providing it with nutrient dense, balanced and quality food. Satisfy your mind, body and taste buds when you switch rice for cauliflower and zucchini for pasta. And while swapping your much loved carbohydrate favourites for alternatives may seem daunting at first, you’ll feel less bloated and have lasting energy by making these simple and easy to prepare changes.

I can’t afford to go Paleo

“If you’re used to stocking your pantry full of pre-packaged food and freezer full of precooked meals, then yes, Paleo will cost a little more,” says Luke, “But long term, you’ll end up spending less on medical care later if you opt for a healthier lifestyle now.” Buying local from your farmers markets will not only save you in the hip pocket, but provides you with a direct link to where your food is coming from and allows you to shop seasonally to save extra money. If a farmers market isn’t in your local area, making informed produce choices by reading up on the Environmental Working Groups Dirty Dozen and Clean 15 (fruits and vegetables that are the most and least contaminated by chemicals and pesticides during harvesting) will allow you to know what produce is OK to buy conventionally. Finally, I would suggest shopping around your local stores and be informed about upcoming sales so you can bring home extra when you find a good deal.

What about my Friday night drinks?

For those who enjoy a glass of wine with friends after a long day, relax, Paleo doesn’t mean you have to stop completely. “In an ideal world, alcohol should be avoided altogether given its toxicity to our livers,” says Luke, “If you’re attempting to stick to 52 SLIM MAGAZINE WINTER 2016

The Paleo Way’s 10 week program then alcohol is an absolute no-no, however once you’ve come through the other side an occasional glass of tequila and lime is OK, just stay away from grain-based alcohol like beer, bourbon and gin that make you feel bloated.”

It all just seems too hard

“It’s true, meal planning, writing a shopping list, visiting the grocery store and prepping your meals is definitely harder than dialling your local takeaways phone number, but eating Paleo isn’t harder than dealing with being overweight, suffering diabetes or other diseases caused from poor diet and lack of exercise,” says Luke. It may take some adjustment but once you’re on your way there’ll be no looking back. Successful people always plan on making their days different, better, more exciting, more purposeful, more meaningful. Tony Robbins says that action without a higher degree of purpose is otherwise just a waste of time. How much of your life is being designed by you?

Details will always serve you well because it means being able to track results and make improvements based on facts, not guesswork. However, sometimes we get lost in the ‘doing’ and not enough on ‘building or creating’. We spend too much time IN and not ON our lives and business. If you are not designing and creating a better life for yourself, who will? Never lose sight of the big picture and work hard on your WHY.

Successful people seem to thrive when they are stretched. They are the top achievers, the one percenters. They are always pushing the boundaries of what’s possible and not prepared to settle. It’s human behaviour to procrastinate. The only difference is how much we can control it. Successful people have a laser-like focus when it comes to getting things done. At times they can be obsessed and selfish, making sacrifices most of us would not be prepared to make. This is why they can get more done in a day than some of us can do in a month. Prioritise better, set time aside and leave distractions behind like Facebook, TV, doing the dishes, etc. Focus on an ‘achievement list’, not a ‘to-do list’.

Some of the world’s leading entrepreneurs like Bill Gates, Steve Jobs, Richard Branson and Mark Zuckerberg all had a great team around them right from the beginning this was crucial to their success. In a team environment, everyone achieves more – it’s true. Collaboration allows you to refine your thinking and challenge yourself. We become the average of the 5 closest people we surround ourselves with. Who are you spending most of your time with?

Do you feel at times like the wind has been sucked out of your sails and you are staring down the barrel? When we hit a wall, it’s the end of the road and we tend to give up. Few go past and only the stubborn and dogged amongst us will persevere long enough to climb that mountain. Successful people look to scale these mountains even before they begin. Think of the Wright brothers trying to make humans fly! They were the laughing stock back then. Today we wouldn’t be able to imagine a world without planes. Have you got a dream you want to explore?

7. Always look to grow and learn One of our great capacities as human beings is to learn. Unfortunately, most of us stop actively learning once our formal education stops. We allow ourselves to remain stagnant in our jobs and family lives. One of my mentors Dale Beaumont once said “If you are not green and growing, you are ripe and rotting”. Elon Musk, founder of Tesla co-founder of PayPal says ‘I think it’s very important to have a feedback loop, where you´re constantly thinking about what you’ve done and how you could be doing it better”. How much of your week do you dedicate to learning? So there you have it. Success breeds success. Take these tips and make your life great. Challenge yourself on a daily basis. Never give up and surround yourself with great people who will encourage you to move forward.

CREAMY SEMI-DRIED TOMATO DIP WITH PARMESAN CRACKERS Prep time: 20 minutes Cook time: 12 minutes Serves: 2 Ingredients: 1 tbsp light cream cheese 3 tbsp reduced-fat Greek natural yoghurt 2 tbsp semi-dried tomatoes, finely chopped 1 garlic clove, crushed 1 ½ tsp dried Italian herbs Salt 1/3 cup plain wholemeal flour 1 tbsp grated parmesan Method: 1. Preheat oven to 200°C. 2. Combine cream cheese, 1 tbsp of the yoghurt, semi-dried tomatoes, garlic, 1 tsp of the dried herbs and a pinch of salt. Mix together well and set aside. 3. Tip flour onto a board or bench top and make a well in the centre.

4. Add remaining yoghurt to the well and sprinkle over a pinch of salt. Gently fold flour and yoghurt together and knead until a dough is formed. 5. Lightly dust board with extra flour. Roll dough out to 1mm thickness. Cut dough into small squares or use a small cookie cutter to make approximately 24 shapes. Gently prick each dough shape with a fork all over. 6. Combine parmesan and remaining dried herbs. Sprinkle mixture over crackers. 7. Transfer crackers to a lined baking tray. Bake for 12 minutes until crackers are starting to brown on the edges. Remove from oven and cool on wire rack. 8. Serve crackers with semi-dried tomato dip. Store any leftover crackers in an airtight container in the pantry for a few days. Leftover dip can be stored in an airtight container in the fridge for a day or two.

BEANS & CHEESE QUESADILLA Prep time: 5 minutes Cook time: 10 minutes Serves: 1 Ingredients: ½ cup tinned mixed beans, rinsed and drained 1 tsp tomato paste ½ tsp dried oregano ¼ tsp ground cumin Salt Pepper 2 small corn tortillas ½ cup baby spinach ¼ cup grated reduced-fat cheddar cheese Olive oil spray 2 tbsp store-bought tomato salsa Method: 1. Mash the beans with a fork. Mix in tomato paste, oregano and cumin, and salt and pepper to taste. 2. Spread the bean mix over one of the tortillas. Top with baby spinach and sprinkle with cheese. Place second tortilla on top. 3. Heat a non-stick frying pan over medium heat and spray with oil. Place the tortilla in the pan and cook for a couple of minutes until golden, then carefully flip to cook the other side. 4. When both sides are golden, remove from pan, slice into triangles and serve with salsa.

TASTY VEGGIE FRITTERS Prep time: 10 minutes Cook time: 8 minutes Serves: 1 Ingredients: 1 free-range egg 2 tbsp reduced-fat milk 2 tbsp plain wholemeal flour ¼ tsp ground turmeric ¼ tsp ground cumin ½ cup broccoli, finely chopped ½ cup green beans, finely chopped Salt Pepper ¼ red onion, diced 1 garlic clove, crushed ½ tomato, chopped ¼ Lebanese cucumber, chopped 1 cup mixed lettuce leaves 1 tsp lemon juice 1 tsp extra virgin olive oil

Method: 1. Whisk together egg, milk, flour and spices into a smooth batter. 2. Add broccoli and beans to the batter and season with salt and pepper. 3. Heat oil in a non-stick frying pan over a medium-high heat. 4. Scoop batter into hot pan to make four fritters. Cook for 3-4 minutes on each side until golden. 5. While fritters are cooking, combine tomato, cucumber, lettuce leaves, lemon juice, salt and pepper. Serve fritters with salad on the side.

LENTIL CHILLI CON “CARNE” Prep time: 10 minutes Cook time: 60 minutes Serves: 1 Ingredients: ¼ cup brown rice (uncooked) ½ tsp extra virgin olive oil ¼ brown onion, finely chopped 1 garlic clove, crushed ½ red capsicum, chopped ¼ tsp chilli powder ¼ tsp smoked paprika ¼ tsp ground cumin ¼ cup tinned brown lentils, rinsed and drained 125g tinned tomatoes ¼ tsp salt Pepper Method: 1. Cook rice according to packet directions. 2. Heat oil in a saucepan and sauté onion for 3–4 minutes until translucent. Add garlic and cook for 1 minute. Add capsicum and spices, and sauté for another minute. Add tomato, lentils and salt and simmer for 5-10 minutes, until sauce starts to thicken. Season with pepper to taste. 3. Serve chilli with the rice.

recipes CREAM OF MUSHROOM SOUP Prep time: 5 minutes Cook time: 35 minutes Serves: 1 Ingredients: 2 tsp butter 3 cups sliced mushrooms ½ leek, finely sliced ¼ brown onion, finely diced 2 cups reduced-salt liquid vegetable stock 2 tsp wholegrain mustard ¼ cup reduced-fat Greek natural yoghurt 1 slice wholegrain bread Method: 1. Melt butter in a saucepan over a mediumhigh heat. Sauté mushrooms, leek and onion for 5 minutes, stirring continuously. 2. Add vegetable stock and mustard and simmer for 30 minutes. 3. Stir through yoghurt. Use a stick blender to process until soup is smooth. Alternatively, allow to cool slightly before blitzing in a blender or food processor, then reheat to serve. 4. Toast bread and serve with soup.

QUINOA & FETA SALAD Prep time: 20 minutes Cook time: 10 minutes Serves: 1 Ingredients: ¼ cup uncooked quinoa ½ cup water ½ apple, finely sliced ¼ red onion, finely sliced ½ carrot, finely sliced 1 tbsp fresh parsley, chopped 1 cup mixed lettuce leaves ½ tbsp lemon juice 2 tbsp reduced-fat feta Pepper

Method: 1. Rinse the quinoa well. Place in a saucepan with the water and simmer with the lid on for 10 minutes or until all of the liquid has been absorbed. Take pot off the heat, keep the lid on and allow to rest for 10 minutes. 2. Combine apple, onion, carrot, parsley and lettuce leaves. 3. Add cooked quinoa and lemon juice to the salad and toss to combine. 4. Crumble over feta and season with pepper to serve.

Place quinoa into a small saucepan with the water. Bring to the boil. Reduce the heat, cover and simmer for 10 minutes until all the water is absorbed. Remove from the heat and cool. the remaining quinoa for later use—it freezes beautifully.) 2. Squeeze as much moisture out of the cucumber as you can. Roughly mash the avocado and place into a bowl with the cucumber, carrot, chia seeds, herbs and chicken (if used) into a bowl and gently mix together. 3. Stir in about a third to half of the cooled quinoa and the rice vinegar. Season with salt and pepper. Divide mixture into 8 portions. 4. Fill a large shallow bowl with warm water and dip each wrapper, one at a time, into the water to soften, about 20 seconds (or as per packet instructions). 5. Place the softened wrapper flat onto a damp tea towel on the kitchen benchtop. Place a portion of the quinoa mixture in a straight line across the centre of the wrapper leaving about a 5 cm (2 inch) edge uncovered. 6. Fold the uncovered sides over the filling and gently roll into a tight roll to enclose the filling. Repeat this process with all the paper rolls. 7. Serve the rolls with some soy sauce or your favourite dipping sauce.

Cos/romaine lettuce works really well in this recipe Ingredients 4 stalks kale 2 tablespoons peanut/olive oil 500g chicken or pork mince 4 shallots, finely sliced 2 cloves garlic, finely grated 1 tablespoon fresh ginger, grated 90g fresh beans, finely sliced ½ capsicum, finely chopped 1 small carrot, finely diced 1 teaspoon palm or coconut sugar 2–3 tablespoons fish sauce 2 tablespoons gluten-free soy sauce 1 teaspoon sesame oil 3 tablespoons water

2–3 tablespoons fresh coriander, optional 150g bean sprouts juice of 1 lime (optional) 6 lettuce leaves Method 1.Thoroughly wash the kale. Remove and discard the lower thick part of the stalk. Chop the leaves finely and set aside. 2. Heat oil in a wok or a large frying pan. Add mince and sauté until it is sealed all over breaking up any lumps as it cooks. 3. Stir in shallots, garlic and ginger and cook for about 1 minute until fragrant, stirring constantly.

4. Add the beans, capsicum, carrot and kale and stir well. Stir in the fish and soy sauce, sesame oil and water cook for about 5–7 minutes until the vegetables are tender and the chicken is cooked. 5. Chop coriander and stir through with bean sprouts and as much lime juice as you like. 6. Trim lettuce leaves with scissors to form cups. Choose crisp tender leaves. 7. Serve the mince in the lettuce cups.

CRANBERRY AND ALMOND BITES Amaranth is an ancient grain that has been around for centuries. Puffed amaranth is used just as you would puffed quinoa and is available at most health food stores.

This is a twist to the well-known and muchloved Asian fried rice, made with quinoa instead of rice. It is so much lighter to digest than the usual fried rice. You can use prawns instead of the chicken and bacon. Ingredients 180g quinoa, rinsed and drained 500ml water 1 tablespoon oil 2 eggs 1 teaspoon tamari soy sauce 1 tablespoon water 2 tablespoon oil, extra ½–1 teaspoon sesame oil 600g chicken breast fillets, thinly sliced 3 rashers bacon, rind removed and diced 8 shallots, sliced 125g frozen peas 200g fresh baby corn spears or 1 x 400g can, drained 2–3 tablespoons tamari soy sauce Method 1. Place quinoa in a small saucepan with the water. Bring to the boil, then reduce the heat, cover and simmer for 10 minutes or until all the water is absorbed. Remove from the heat and spread out on a tray

to cool and dry out completely. You can always do this in advance or use leftover cooked quinoa. 2. Lightly whisk the eggs with the soy sauce and water. Heat the oil in a wok until hot. Add the beaten eggs and swirl around to form an omelette. 3. When the eggs have set, tilt the wok away from you and using a spatula, carefully roll up the omelette. Remove from the wok and slice into thin strips. Set aside. 4. Heat extra oil and sesame oil in the wok. Add the chicken and toss for about 3–4 minutes. 5. Add the bacon and continue cooking on high heat stirring constantly until the chicken is completely cooked and the bacon is crispy. 6. Add the shallots with as much of the green parts as possible. Add peas and corn spears and continue stirring for 2–4 minutes until peas have thawed. 7. Stir in the soy sauce and the quinoa and continue cooking for 3–4 minutes until quinoa is heated through. Stir in the egg strips and serve with an extra drizzle of soy sauce and chopped shallots.

Ingredients 125g raw almonds with skin on 125g dried cranberries 90g golden raisins 1 teaspoon fresh orange zest 2–3 tablespoons organic raw coconut oil, melted 15g puffed quinoa or puffed amaranth Method 1. Place almonds into a food processor and process until finely chopped. Add the cranberries, raisins, orange zest and coconut oil and continue processing until the nuts and fruit are all finely chopped and you have a slightly sticky mixture with a little texture to it. 2. Transfer this mixture into a bowl and add the quinoa or amaranth puffs. Mix all the ingredients together—your hands are probably best for this. Press the mixture together as you mix so that it holds firmly together. 3. Roll the mixture into bite size rounds or a size that best suits you and refrigerate until set. 4. Store in a covered container in the refrigerator for up to 3–4 weeks.

METHOD 1. Mix all ingredients for beef patties thoroughly, using a tablespoon form 12 balls and flatten into patties between palms of hands. Make 6 patties for one meal for 2 adults and 2 children, the other 6 can be frozen in an airtight container with greaseproof paper between them for another night, as long as the mince hasn’t been frozen previously. 2. In a non-stick frypan, cook patties over a medium heat until well browned on one side, flip patties over and place a cheese slice on the cooked side of each to enable it to melt slightly. 3. Assemble sliders with spinach leaves, tomato, beetroot and beef pattie, topping with a good quality tomato sauce or mayonnaise. 4. Serve with chunky chips.

Chip Cups 1. Preheat oven to 180°C/160°C fan forced. Line a large muffin tray with baking paper or muffin papers. 2. Cut wholemeal pita or Lebanese breads into quarters with kitchen scissors. Press firmly into lined muffin tray to form individual cups and bake for 5-10 minutes until crunchy but not brown. Set aside. 3. If the bread pops out of tray simply weigh down with pastry weights or small ramekins.

Chip Cups 3 large wholemeal pita or Lebanese breads Guacamole 1 large avocado 1 teaspoon freshly squeezed lemon juice 1 heaped dessertspoon Greek style yoghurt Salsa 2 large ripe tomatoes ¼ red capsicum (pepper) (optional) Mince 1 onion, finely diced 1 clove of garlic, minced or finely chopped 250g beef mince 2 teaspoons of ground cumin seeds 125g of chopped frozen spinach (defrosted in the fridge the night before) 125 ml passata 1 teaspoon vegetable spread (yeast extract) 260g Greek style yoghurt 80g cheese, grated

Guacamole 1. Mash all ingredients together and store in fridge until serving. Salsa 1. Dice tomatoes and capsicum and place in a small bowl and store in fridge until serving. Mince and Nachos 1. In a large deep non-stick fry pan, fry onion until transparent. 2. Add garlic, mince and spices, stir and fry over a high heat until mince is well browned. 3. Add spinach, half of passata and vegetable spread, bring to boil, then simmer for 5-10 minutes uncovered until sauce has reduced. 4. Spoon mince mixture into chip cups in muffin tray. 5. Pour balance of passata over mince, followed by half of yoghurt and top with cheese. 6. Place under grill or at the top of hot oven until cheese is melted and golden. 7. 90g rolled oats 200g mixed nuts, chopped roughly 40g cornflakes 60ml boiling water 2 tablespoons honey (if you have a sweet tooth you can double the amount of honey) 1 large egg white, whisked lightly

METHOD 1. Preheat oven to 180°C/160°C fan forced and line a 20 x 20 x 5 cm (8 x 8 x 2 in) baking tin with baking paper. 2. Place oats and nuts in a non-stick frypan and stir over a medium heat until nuts and oats begin to roast slightly. These can also be roasted lightly in the oven. 3. Place nuts and oats in a large mixing bowl and add cornflakes, combine well. Set aside. 4. In a small bowl or jug mix boiling water and half of the honey until honey has dissolved into the water. 5. Add honey mixture to dry ingredients and mix thoroughly. 6. Add whisked egg white and mix through quickly. 7. Pour mixture into baking tin and spread out evenly. Push mixture down hard with a spatula or clean hands to ensure the mixture is dense and firm. Drizzle with balance of honey. 8. Bake for 20–30 minutes, or until firm and golden brown. 9. Cool completely and cut into fingers.

EASY CHEESY QUICHE SERVES THREE ADULTS AND TWO TODDLERS

INGREDIENTS 250g packet of chopped frozen spinach (defrosted in the fridge the night before) ½ small onion, finely diced 100g raw pumpkin, grated 5 eggs 80g cheese, grated 80g Danish feta cheese, crumbled roughly 125ml milk

Serve with a garden salad and fresh bread rolls. Substitute spinach and pumpkin with corn kernels and bacon, or leftover roasted vegetables for easy alternatives. Leftovers can be eaten cold the next day. This dish can be prepared during the day, stored in the fridge and popped in the oven before dinner.

METHOD 1. Preheat oven to 180°C/160°C fan forced and line a pie dish with baking paper. 2. Snip the corner off the spinach bag and squeeze out excess moisture. 3. Mix all ingredients, pour into lined pie dish and bake for approximately 1 hour or until firm and golden. 4. Allow to cool slightly before serving.

CHOCOLATE SALAMI SERVES 6-8 Chocolate salami reminds me of my childhood and even now I consider it one of my favourite desserts. You only have to try one slice and you’ll be craving more. The unique thing about this recipe is the Sicilian dessert wine Marsala which gives a special and delicious taste to the dessert. If you prefer, you can replace it with another fine Sicilian dessert wine like Passito di Pantelleria. Ingredients: 150g dry digestive cookies, palm oil free 4 tbsp raw sugar 50g cocoa powder 100g chopped roasted hazelnuts 100g roasted pistachios 1 large egg 300g 70 percent dark chocolate 150g butter 2 tbsp Sicilian dessert wine Marsala or Rum (to be avoided if the dessert is made for children). 66 SLIM MAGAZINE WINTER 2016

Method: 1. Chop the cookies and add them to the sugar, cocoa powder, hazelnuts and pistachios. 2. Lightly beat the egg with a fork and add to the cookie mixture. 3. Melt the chocolate in a double boiler with the butter. When cool add the Marsala wine and stir into the cookie mixture. 4. Pour the dough onto parchment paper, sprinkle with more cocoa powder and work it into a sausage shape. Keep the dough wrapped in parchment paper and store in the refrigerator for 4–5 hours. 5. Remove the salami from the refrigerator 20 minutes before serving. 6. You can present it in its entirety on a serving dish (adding, if necessary, another dusting of cocoa powder) or serve it sliced.

ASPARAGUS AND ZUCCHINI CAKE SERVES 4-6 Spring is asparagus season, time for outdoor meals and recipes to be enjoyed cold for picnics or brunch. This is one of my most popular savoury dishes with wild asparagus. Not always easy to find, wild asparagus is as precious as its distinctive flavour. Ingredients: 4 zucchini (3, if large) 1 onion 15 asparagus Sea salt and white pepper, to taste 2 large eggs 75g grated Parmigiano cheese Extra virgin olive oil, to taste 1 sheet puff pastry

PASTINA WITH VEGETABLE BROTH SERVES 4 Another staple food of the Italian winter. The pastina with vegetable broth is not only nutritious, but is suitable for small children or for a light dinner that warms you during the cold winters. The homemade vegetable broth is very easy to prepare and, if made with flavourful vegetables, has a truly unique taste. Also suitable for risotto, it can be prepared in advance and then frozen. My suggestion is that you use it to fill ice cube trays and, once frozen, transfer the cubes into plastic bags for food. In this way, you have broth cubes ready for use whenever needed.

Method: 1. Wash and slice the zucchini, peel the onion and steam cook all for about 15 minutes. 2. Clean the asparagus, removing the ends and blanch in salted water for 10 minutes. Once cooked, mix all the vegetables in the pan and season with salt. 3. In a bowl, beat the eggs and season with salt, pepper and Parmigiano. 4. Roll out the pastry on a lightly floured surface. Grease a baking tray and cover with parchment (baking) paper. Put the pastry on the paper. Add the vegetables on top of the pastry then pour in the egg. 5. Bake, in preheated oven, for 15–20 minutes at 180°C.

SMALL CAKES WITH OREGANO, PISTACHIO AND PECORINO SERVES 10–12 These gluten-free small cakes are one of my favourite afternoon snacks. Accompanied with a soft cheese and/or whole raw vegetables they are a delicious alternative to traditional sweet cake breaks. The flavour of Pecorino matches perfectly with the delicate crispness of pistachio. The fresh oregano, which in early autumn still smells beautiful, finishes a winning combination of ingredients in this recipe.

Ingredients: 1 large egg 75ml extra virgin olive oil 100ml organic milk 100g Pecorino cheese Pinch of sea salt 300g brown rice flour, sifted 15g organic baking powder Fresh oregano, to taste Pistachio, to garnish Method: 1. Preheat oven to 180°C. 2. Beat the egg with the oil and milk. Add the Pecorino, salt, sifted flour, baking powder and fresh oregano and mix the ingredients together. 3. Pour the batter into muffin moulds, sprinkle the surface with pistachios. 4. Bake for 15 minutes.

Ingredients: 1 organic onion 1 organic carrot 1 organic celery stalk 1 litre water Sea salt, to taste 300g pastina pasta Extra virgin olive oil, to taste Parmigiano cheese, to taste Method: 1. Peel the onion and cut in half. Peel the carrot and cut into small cubes. 2. Wash and dry the celery and cut into small rounds. 3. Put the water in a large pot, add all the vegetables and cook for 30 minutes over a low heat with the lid on to enhance the cooking of the vegetables. 4. Once done remove the vegetables from the water. Add the salt and pasta, leaving to cook according to the time suggested on the packet. 5. When cooked, add the oil. Fitness: Miranda credits yoga for her toned figure and for easing jet lag. “I’ve been practising a mix of Hatha and Kundani yoga for 15 years,” she says. She credits her blessed genes for her impeccable physique and boosts her body beauty with exercise. She also dabbles in Jiu Jitsui, which she has formed an obsession for. “You have to find the best workout for your body,” Irina says. “You have to balance between eating and working out.”

Diet: “We eat as raw as we can, eat lots of greens and fish and try to limit meat and heavy dairies,” the Chilean-born Home and Away star told Women’s Health & Fitness Magazine. Nutrition is key to feeling good and ensuring her sons resist the junk food temptation. Fitness: The self-proclaimed sleep advocate combines high intensity cardio with weights, performing a delicate balancing act with low impact yoga and Pilates.
