I

f you could freeze an age, what age would you stay at forever? When I was a kid, all I could think about was how great it would be to be an adult. Adults stayed up late, went anywhere they wanted to, and no one told them what to do. Now that I know better – that being an adult comes with work, bills and other grownup responsibilities – being a child again te Bennett at sounds pretty attractive. I fondly recall my Felicity Cohen and Ka Sea Polo by the carefree youth – a party era spent dancing McLaren Gold Coast to loud beats in nightclubs full of lovedat Main Beach up twenty-somethings with champagne bottles in one hand and disposable cash in the other. Those days of reckless abandon were fun but no better than the decades that followed. They say with age comes wisdom, kindness, confidence, and ease. Health-wise, we live in exciting times. Since 1900, average life expectancy around the globe has more than doubled, thanks to better public health, sanitation and food supplies. I can honestly say that I have enjoyed every year of my life and I don’t struggle with getting older. I’ve changed my mindset by realising that ageing gracefully is a mentality. I acknowledge that there are things I can’t change but accept that there are things I can do to slow the ageing process with smart choices along the way. I first noticed our 50-year-old cover girl, Julia Roberts, in the 1988 movie, Mystic Pizza, and thought she was going to be a massive star. I was right! I had never seen anyone more attractive in my life and that smile – wow! Julia gave me another reason to love her when she told reporters that she was bothered by them asking her about her upcoming 50th birthday as if it was something she should fear or brace herself for. “Really, people? Are we still in that space?” Julia asked. “Did anyone go over this with George Clooney or Brad (Pitt) before their 50th birthdays?” Julia went on to describe ageing as “a privilege”. “I always love my birthday. I celebrate with open arms and gratitude. There’s nothing different about this birthday than any other one.” Getting older is inevitable and should be embraced because it is certainly better than the alternative. Enjoy the issue. The Sustainable Period Project aims to provide free Resource Kits to all secondary schools and health professionals by 2020 across Australia and New Zealand to ignite discussions about modern sustainable sanitary options. There are six million females of menstruating age in Australia and New Zealand. Each of them will use about 22 disposable sanitary products per period cycle – adding up to 11,000 to 16,000 in their lifetime. Maggie Scott, the app’s founder and mother of two, said Parachuute was aimed at alleviating family stress. It takes 20 seconds to request a lift or offer a spare seat. Once accepted, the app takes care of the rest, including reminders, location information and navigation. “I wanted to provide a safe and easy alternative to traditional carpooling and favour giving,” Maggie said. “Parachuute is safe because parents decide who to add to their network. They choose from parents they have got to know through school or sports. These people aren’t strangers to them or their kids. “Parachuute is guilt-free. Dr Gray describes this stage as the “sandwich generation” juggling parenting, ageing parents and our careers. For many 40-somethings, it is the stage where careers are taking off and people tend to sacrifice exercise, however research shows that the 40s is a crucial time to get the heart pumping. In the latest research from the O’Donnell Brain Institute in the US, scientists have suggested that a low level of fitness can speed up cognitive decline. Results show that exercise protects against the deterioration of brain nerve fibres associated with memory retention. Most at risk are those who regularly commute, sit at a desk and stare at a screen. “All these cause stress and inflammation, which decrease the quality and length of our lives,” he said. Dr Gray advises 40-somethings to train more, not just in terms of exercise but in the way you work, eat, relax and sleep. It’s not just about looking good in a bikini. Almost two in three Australians are overweight or obese, and that means rising levels of Type2 diabetes, high blood pressure and higher risk of stroke, cancer and osteoarthritis. The best cardiovascular exercises for 40-somethings include brisk walking, swimming, running and cycling. Flexibility training is also important.

I love the beautiful weather all year round and being close to the beach. I go most days, even if it is just to walk on the sand. But the Gold Coast also has that smalltown feel and laidback lifestyle that you don’t get in a big city. It’s kind of cosy and personal. How did you get into travel writing? I was a photographer when I met my husband at the age of 17 but we moved overseas and for various reasons, the photography stopped. In the early part of his motor racing career, I used to help with press releases and stories for his work – pretty much because we couldn’t afford to use a professional – so that was kind of how the actual writing started. Then we were travelling around the world more frequently and I began writing not only about his work, but the amazing places we travelled to. Then, because of my love of travel, it just kind of developed from there. What do you love about travel writing? The travel of course, but also sharing my stories, hints and tips. I love travelling, but if I’m going somewhere new, I am obsessive about researching and always trying to find the best in a location. I spend a lot of 26 SLIM MAGAZINE SPRING 2018

time planning a journey because I don’t want to miss out on anything, so I guess with my writing I am trying to share that with others. I do the work for the readers, inspire them to travel and make it easy. Please tell us about your blogging career… When I first got back into photography after my children were no longer toddlers, I found the landscape had changed so much. With the introduction of the internet and social media – gosh, that makes me sound old – it was no longer just about imagery, but people wanted to know the story behind the image. With the competitiveness of photography – after all, everyone these days has a smartphone, so they can take their own pictures – I found that writing and blogging was an extension of my pictures and was a way of sharing a whole lot more of a story. Why is your kitchen your favourite room? I’ve always loved cooking, but I guess it’s also because the kitchen is the centre of any home. Growing up in a big, European family, meal times were key to family life and like my mum, I now love entertaining and cooking for my friends. When we designed our house, our kitchen was designed with a huge island bench, so I could be cooking, and my friends always end up sitting around with a glass of wine chatting to me. It’s so social. What is your “go-to” quick family meal on a weeknight? Probably just some barbecued meat with a big, fresh market salad. What are your family’s favourite meals? I live in a house with two teenage girls and a race car driver. They are all so fussy and the “family favourite” changes constantly. Right now, it’s butter chicken, but that’s this week. Next week it could be anything!

Is Russell handy in the kitchen? Russell is a fantastic cook. He just doesn’t do it very often, although the more I am travelling, the more he is left at home with the girls and getting back into cooking which is great. We’re actually a pretty good team in the kitchen because he has a knack of tasting something and knowing an ingredient to add that will give it punch, so when we’re both home, I usually cook and he supervisors and tweaks. If you could invite three celebrities to a BBQ, who would they be and why? Ellen DeGeneres, Prince Charles and Margot Robbie. I think Ellen would be the life of any party and have some great stories to tell of all the people she has met. I just love Prince Charles. He is my favourite royal for so many reasons - what he’s done in the name of duty and what he is doing for his sons. Margot is a fabulous actress and the world needs more classy, stylish women like her. What is your dream holiday destination? For a travel photographer, that is such a tricky question. I love to travel anywhere and have been to many incredible locations. I could never pick just one place, but my three favourite destinations so far and that I want to go back to are Queenstown, New Zealand, anywhere in Canada, and the Greek Islands. Do you have a dinner party recipe that your guests rave about? My secret recipe has always been my lamb shanks. It’s my party favourite. It’s a great winter dish and the best part is, I usually prepare it the day before so I’m not spending hours in the kitchen when friends are over. Brain development and formal learning

In recent years I have seen a push towards formal learning creeping into preschools and day care centres. There are programs for toddlers to make them smarter or teach them how to read, for example. Whilst I understand that the motivation of parents is to offer the very best education to their child, it saddens me to see this ‘schoolification’ of childhood and it is actually detrimental to a child’s physical and emotional wellbeing and, ironically, to their learning. Research into brain development provides more evidence to suggest that we should hold off on formal learning in the early years.

Learning windows

Neuroscience has shown us that the brain has a predetermined biological timetable that creates ‘learning windows’. The learning windows open after an important process occurs called myelination. Simply put, this is when myelin, a fatty substance, grows over the neurons in the brain which are responsible for transmitting information around the brain. When myelination of the neuron occurs, it aids this transmission process, thus opening the learning window so to speak. No amount of instruction can open the window before that process occurs. Therefore, attempts such as early reading programs and the like are futile unless that window has opened, and drilling a child to learn something that they are not biologically ready for only harms their confidence and turns them off learning.

Body brain connection

When we think about learning and brain development it is important to remember that cognitive development doesn’t happen 28 SLIM MAGAZINE SPRING 2018

in isolation. We forget that the brain and the body are so interconnected that development in one area is dependent on the other. When we focus on formal learning too soon we stunt a child’s opportunities to mature physically and emotionally, which has a negative impact on their cognitive development.

The pressure of early academics

Developmental psychology and neuroscience together show us that there is no long-term advantage in pushing formal learning on to children before they are developmentally ready. Unfortunately, there is growing evidence to suggest that the loss of playful experiences and increased pressure towards early academics is actually detrimental in the long term and can negatively impact academic learning. Furthermore, we know that children who receive intensive input prior to school may start school with strong skills in one area but it is usually to the detriment of another developmental area. Other children quickly catch up once they receive input, particularly if they have had positive playful experiences prior to school and come to school when they are developmentally ready. We sometimes forget that children begin learning from the minute they are born and have learnt more in that time than they are ever likely to learn in the same space of time again. Children are born primed to learn, learning is innate and we actually don’t need formal education to learn in the early years. Your child didn’t attend walking school and yet they walk. When you think about all the self-directed learning they have done in this time it really is a marvel. When we push formal learning onto children before they are developmentally ready we overlook the importance of their

emotional state and at a young age we prevent children from learning in the way they were biologically primed to, the way that is vital for their overall development and best for future academics. When we give children the time and opportunity to fully develop they become confident and more competent to deal with the stresses of modern school life.

A BUSY PARENT’S GUIDE TO MAKING A HEALTHY LUNCH

Your Kids Will Eat Coming up with healthy and exciting school lunches each morning can be a challenging and tedious task. It’s even worse when you’re lunchbox shamed.

E

arlier this year, a six-year-old girl was lunchbox shamed by Healthy Harold. It was supposed to be a fun exercise in Life Education but instead, Healthy Harold told her that the muffin in her lunchbox was a “sometimes food”. Piper knew full well that the muffin in question was home-made and sugar free but was too scared to speak out against the imposing giraffe puppet. “I’m sure it was not intentional, but what Piper heard was that ‘sometimes food’ is a bad choice,” the mother said. Piper was so upset by the assessment of her muffin that she threw it away. “When she got home that day Piper told me about the muffin and said that she didn’t think I should put them in her lunchbox anymore,” the mother said. “I was confused. Piper has always loved home baking, even the sugar free stuff. When she eventually explained that ‘Healthy Harold says that muffins are a sometimes food’ I started to understand. When she told me that Healthy Harold had used her muffin as an example to the class I was livid.” She continued: “It’s not that I disagree about the muffin being a ‘sometimes food’. What I object to is using the lunchboxes of small children to make the point. Healthy Harold doesn’t know the kids in the room, let alone their parents. There might be families who struggle financially and opt for cheaper ‘sometimes foods’ or there might be parents who were brought up on ‘sometimes foods’. “It’s not up to Healthy Harold to police lunchboxes. Teach children about good nutrition. Give them some labels that help them navigate food choices. But don’t rifle though their lunchboxes and shame them for the contents.” Lunchbox shaming can come in many forms. It might be from a wellmeaning teacher or your own child complaining that their friends have better lunches than theirs. I can hear my parents telling me that my kids should be making their own lunches but there would be no winners in my house if that happened. I would be taken to task for sending my lazy kids to school with empty lunchboxes, or worse, Nutella dip. We’ve all heard of the child who has themed bento boxes and another whose chef dad makes the most awesome ‘Spring-Wich’ – a cross between a spring roll and a sandwich. (You can learn how to make a Spring-Wich at schoollunchboxblog.wordpress.com). Then there are the kids who get home-made zucchini slice and the occasional piece of Magic Bean Chocolate Cake. For the non-Thermomix users, this cake is made with red kidney beans and cacao and is the toprated cake on the Thermomix Community website. I have tried making protein-packed ‘bliss balls’ and they truly tickle the taste buds, but in my house, they are as unsustainable as dieting. Throwing everything into the food processor is easy; rolling balls is somewhat cathartic. But then there are the days when I am exhausted, I’ve run out of cacao and life throws me a curveball. Suddenly the thought of rolling dates, cacao, oats and coconut into bliss balls turns into give-it-a-miss balls. For busy parents who just can’t bear the thought of rolling balls when there’s good TV to watch, here’s a selection of grab-and-go healthy snack food options recommended by Susie Burrell, a Sydney-based dietitian, author and Shape Me Founder.

GUT HEALTH W H AT YO U N E E D TO K N OW

cott Mathias is known as the ‘Gut Whisperer’. The Certified Holistic Health Coach (CHHC) and author spent 45 years battling numerous health conditions before discovering the antidote – plants. Scott claims that his fourth book, The Ultimate GUTFIXx, is not just a solution to gut issues but a lifestyle for the health of humans and the planet. The Noosabased chef and deli owner has lived for the past 11 years eating only vegan food, as well as no wheat, grains, processed foods or white sugar. The 64-year-old is a member of the American Association of Drugless Practitioners (AADP). His first book, Understanding the Divine Gut – How to Eat Your Way to Ultimate Digestive Health – was published in 2013 and continues to receive glowing reviews. Scott shares his thoughts on gut health. Research indicates that many diseases may start in the gut. What are your thoughts on this? Without doubt. In my own case, I spent 45 years doing my best to manage a number of issues: chronic depression, chronic sinus and thyroid issues; bloating, reflux, heartburn, parasites, diverticulitis, fibromyalgia, arthritic pain, heart issues – arrhythmia and high blood pressure; psoriasis, gout and life confusion. The moment I realised the exact relationship between gut health and general health my overall health improved 1000 percent. What you eat you become 20 minutes later. In other words, what you eat goes into your blood within a very short time. Many long-term diseases such as diabetes and those mentioned above are symptoms. So, what is the cause? I can say categorically my dysfunctional gut was the cause. I fixed it over a 12-month period and all my symptoms disappeared. My depression literally switched off 11 years ago and I have not had a re-occurrence.

The Dukan diet and other diets regard fruit as the enemy for people trying to lose weight. How important is fruit? Fruit was designed by nature for us to take into our bodies. The brain requires the simple carbohydrates – simple fruit sugars called fructose, first thing in the morning. In fact, 60 percent of the simple fruit carbs go to the brain to kickstart the thinking process, especially first thing in the morning. The other job fruit does is release valuable enzymes into the colon 100 percent supporting the elimination process again in the morning. Fruit is a very valuable part of the daily food intake and works more efficiently within the body when the gut is functioning properly. I recommend a bowl of cut fruit with a handful of walnuts or pecans to start the day. My body kicks into life within a matter of minutes – colon release and brain clarity and accuracy. How do you feel about the Paleo Diet? I don’t relate to paleo at all. It involves still eating animal flesh and products and promotes animal soups which tend to be just congealed separates proteins like collagen. Separates protein including plant protein cause stress for the digestive system because the ‘gut computer’ cannot identify the food. Either way I feel paleo is very much a fad and will wane in coming years as more people wake up to the amazing benefits of a plant-based vegan lifestyle. What is healthy waste? Passing waste three to four times a day should be the norm but for many people stress, work life and inappropriate food choices place the colon into a state of constipation for hours and sometimes days on end. This is not health as I believe ridding yourself of yesterday’s


waste by midday the next day is the ideal. Healthy waste is mainly made of used fibre and dead bacteria. The literally billions of bacteria in the body die off over time and are quickly replaced. The dead bacteria must be excreted along with food waste. Retention of bacteria and waste can lead to the formation of discordant cancer cells especially in the colon. The highest levels of colorectal cancer per head of population exist in Australia and New Zealand. Why? High levels of animal protein consumption. What are your thoughts on colonic irrigation? Do you think it is effective for some people? I have colonic irrigations once a year. However persistent use of this method of extracting waste from the body can set up what I refer to as a ‘lapsed memory’ in the colon. Reliable and efficient release of waste by natural means is the key rather than through artificial stimulation. Whilst things like green papaya powder kill off parasites, colonic irrigation can also be very effective over a three to four-week period at getting rid of parasites. I believe the presence of parasites due to higher than acceptable levels of acidity can in turn lead to chronic disease. How effective are probiotics for the gut and should we all be taking them? In short – if the gut is not functioning properly and by this, I mean that there is good maceration (breakdown of food) occurring in the gut, the probiotics are a waste of time and money. Putting good bacteria back into the stomach but continuing to eat high levels of animal products is counterproductive. Optimising gut function with the use of something like green papaya powder, which supports the breakdown of all proteins, will over time enable the gut to regain its strength and return to it optimal state of food breakdown. What makes a good probiotic? A good probiotic is a bowl of beautiful greens. Did you know that on the surface of all greens lives tens of billions of healthy bacteria? Ideally getting good bacteria into the body should be part of your daily diet. I personally don’t take any probiotics except green papaya every few days to support gut function. Because my food intake is clean I get all my good bacteria from the greens I eat.

flours also contain a range of additives including chlorine oxide which is used to bleach the flour. My system reacts so much better to whole fibre-filled living plant food. What is your advice for people battling Crohn’s Disease and ulcerative colitis? Remove all animal products. Crohns and Ulcerative colitis along with diverticulitis and IBS are symptoms associated with the retention of proteins in the small and large intestines. The walls of the intestines become inflamed by bacteria generated from the proteins stuck in the GI tract. Taking whole fibre-full plant-based food into your body can turn these symptoms off over several months. In my own case, I suffered from chronic diverticulitis and an inflamed ileocecal valve simply because my gut wasn’t breaking down proteins well enough. The intestinal tract literally becomes blocked and the retained unprocessed food rots causing the inflammation. Can you explain the increase in food allergies? The level of cellular sensitivities is increasing as the human body is bombarded daily with poor food choices, stressful work life scenarios and aerial spraying. Along with these elements is an increasing level of space energies hitting the planet and our bodies – gamma rays and photonic energy. My belief is these energies are hitting the dense mass of the human body causing it to literally go into spasm which is reflected by the presence of allergies and other disturbances. Any allergic reaction to anything usually brings about increased levels of mucosa and pain. My body can only survive on clean living food, so I don’t suffer from allergies the way I used to. If for some reason I begin sneezing after eating food, I question what was in it and dive for the green papaya powder which can turn around inflammation within minutes. You describe sugar as the “white heroin of our times”. What are the recommended pantry alternatives? Sugar has such a high GI – glycaemic index – which is a measurement for energy in this complex carbohydrate known as

white sugar. Low GI natural sugars such as coconut palm crystals and syrup have a GI of around 28 to 35, so too maple syrup. These are better alternatives. Customers/ clients are changing habits, so the sugar and animal industries will be forced to diversify over the coming years. These industries can look at new, safer and more eco-harmonious products such as growing hemp and moringa (a plant native to India). Do you have a message for those who are stuck in their meat-loving ways? If you care about your health, care about the planet and you love animals, then it’s time to take a long moment to consider the impact eating animal products has on all three. I recommend highly moving away from all animal products. It’s a great feeling know that my body loves clean living food, that the planet is not impacted in any way by my food choices and no animal has been slaughtered to meet my food desires. It is very much a holistic response to the question and yet it is very personal. I know a number of men cannot find the strength to tie all three reasons together for fear their masculinity will be impacted. I am a better and more sensitive lover as a result of going ‘all plant-based vegan’. That is just one of the upsides. The other is I take no medication whatsoever and as a male my prostate works well, I am not a member of the diabetes or cardiac clubs and I feel like I did when I was 35. At your heaviest, what did you weigh and what made you decide to undergo bariatric surgery? At my heaviest I weighed 153.9kg. My doctor told me that I needed a weight-loss procedure immediately, otherwise I would be dead within two months due to the strains that the weight was putting on my body. I quickly realised I needed the bariatric surgery to keep me alive. Additionally, I wanted the surgery to get rid of the pains I was feeling and re-gain my life back. No How has your weight fluctuated over the years? I first started gaining weight in 1991 and since then I have tried many diets where I lost large amounts of weight and then put it all back on and more. When I was overweight, I physically struggled with knee pain and back pain and I always felt lethargic and lacked energy. What methods did you use to try to lose weight? I tried the soup diet three times where I would lose 35-45kgs each time, however once stopping, I would re-gain the weight plus more. What health problems did you experience because of being overweight? I had Type-2 diabetes, high blood pressure, high cholesterol and my liver was encased 34 SLIM MAGAZINE SPRING 2018

Surprisingly, it did not take me long to adjust to my new way of life. I was in and out of the hospital in 21 hours and up and moving well the immediate days following my surgery. After the surgery, I began dropping the weight quickly and my pain started going away as well as all my health issues associated with the weight. What do you say to people who say weight-loss surgery is the “easy way� to lose weight? People may say it is the easy way to lose weight and I did refrain from telling people that I had the surgery as I was worried

people would think I chose the easy way out. I had tried diets many times before and had been successful with losing weight, however, the long-term changes were where I struggled. It got to the point where at my heaviest weight and with my age, I had no choice but to get the surgery to save my life. The surgery is not an easy way out as I had to lose a considerate amount of weight before getting the surgery, and every day following I must make healthy food choices to maintain my healthy weight. How has weight-loss surgery changed your life? I now feel no pain in my knees or back and I have no health issues. I am full of energy and confidence, am so much happier and in better moods, and the fittest I have ever been. I have gone from a size 7XL in shirts to a size medium, and size 132 in shorts to a size 87. Has it been difficult to adjust to smaller portion sizes and other lifestyle habits? No, I have had no issues adjusting to the portion sizes or new lifestyle habits. Are there any people who have inspired you along the way? Secondly is the belief that dieting and exercise regimes will work for weight-loss. These regimes will work partially in the short-term however longer-term evidence shows an obese person who loses weight will almost always regain the weight eventually. Another reason for the low percentage of people undergoing weightloss procedures is the unavailability in the public hospital setting. Unfortunately, in many public health services, weight-loss surgery is still regarded like cosmetic or plastic surgery; only for the rich and vain. In reality, the majority of medical opinion knows weight-loss surgery results in dramatic improvements in health and is cost beneficial to the patient/hospital/ government in the longer term in terms of saving money related to medical comorbidities (the coexistence of two or more disease processes) associated with obesity. The reluctance of the public health system is partially due to the current waiting list problems with other operations for medical problems. If obesity surgery was to be opened to the general public, there would be an even greater strain on the public health system. Is weight-loss surgery safe? It is extremely safe. It is similar to someone going in to hospital to have their gall bladder taken out. The safety profile is a reason why it’s becoming so popular now.

He shares a glimpse into his private and professional world and claims weight-loss surgery should be more accessible to those who could benefit. What is the most common surgery you perform? Sleeve gastrectomy. It’s the simplest weight-loss procedure with the lowest long-term complication rate and is suitable for about 70 percent of the population with weight problems. Have you noticed an increase in morbidly obese patients in recent years? I haven’t noticed an obvious increase in the number of obese patients, however I have noticed over the years more obese patients are more willing to consider it a problem and discuss an operation for it.There appears to be less of a stigma. What were the ages of your youngest and oldest weight-loss surgery patients? The youngest was 13 years old. When I was training in obesity surgery in Brisbane in 2013 I was assisting a colleague and the Channel 9 program 60 Minutes did a documentary on us about the issues of 36 SLIM MAGAZINE SPRING 2018

weight-loss surgery in very young people. It is uncommon for the very young to undergo weight-loss surgery. Over the years there has been a lot of debate about the topic, however these days the evidence shows the improvement in psychiatric health, self-esteem and confidence dramatically improves an obese teenager’s future development if they have weightloss surgery. The risk is extremely low. The oldest generally is late 60’s to early 70’s. This surgery will benefit anyone who has a future lifespan of more than five to ten years, as long as they are fit for a general anaesthetic and the operation. Health experts believe around 30 percent of the national population could benefit from weight-loss surgery but only one to two percent of those undergo procedures? What are the reasons for that? Multiple reasons – mostly stemming from the stigmatism around obesity and having an operation for it. People may feel they have failed if they have an operation.

What are your views on people who travel overseas for cheaper weight-loss surgery? This is uncommon. It’s not much cheaper. I do know many surgeons in areas where people travel to aiming for cheaper surgery, and most of these surgeons are genuinely good. The important issue is follow-up. After a weight-loss surgery there are many things medical practitioners and patients need to be aware of, and follow-up is essential. People seeking cheaper surgery that doesn’t offer adequate long-term assessment have a much higher chance of having problems later. I see many people in this situation. Do you think weight-loss surgery is becoming less stigmatised? Definitely. Most people I see months after the surgery are so excited about their success they are happy to tell their friends and family about it. Even those that initially wanted to keep it secret. Are there any health disorders associated with obesity? There is a massive amount of medical

problems associated with obesity that are improved with weight-loss surgery. The most common are diabetes, high blood pressure, high cholesterol, sleep apnoea, reflux disease and arthritis. Just as important are issues of mobility, improved self-esteem and psychological health, and more energy. There are many other improvements in a person’s well-being and quality of life we cannot easily measure however most people talk about after losing the weight. Can morbidly obese people (with a BMI above 40) achieve weight-loss through dieting and exercise? Most people can lose a little bit of weight with dieting and exercise, however compared to surgery it’s a small amount and almost everyone regains the weight they’ve lost. We see so many fad diets and new exercise programs around these days. The ironic problem is that they all work; a little bit and for short periods of time, so people keep going back for multiple attempts. The big issue is the long-term reduction in weight. Evidence shows that weight-loss surgery is the only intervention with long-term significant reduction in weight. Does genetics play a part in obesity? It plays a huge role in weight problems. Everyone’s body and physiology are different, and that is what is genetically predetermined. Your body has certain ways it deals with the nutrients/energy you eat. Some are more efficient at storing this energy (food) by way of fat than others are. We cannot alter this storage mechanism and physiology.It’s a bit neglectful these days to tell someone they’re overweight because they eat too much and don’t exercise. If an obese woman has a baby, what are the chances that her child will have obesity problems? Generally, it’s above average. There is evidence now showing that obese women are more likely to have children that develop obesity, but what’s more interesting is research showing that those same women after having weightloss surgery, their subsequent children following surgery are less likely to have obesity. The researchers have been able to attribute this to how genes change the way they produce certain proteins and hormones in the body after weight-loss surgery.

Are there any Medicare rebates for obesity surgery? There are Medicare rebates for weightloss surgery. This applies to everyone in Australia with a Medicare card. The rebates do not cover the entire cost of an operation. Unfortunately, they do not cover a hospital admission, operating theatre costs, equipment used etc, which is the major expense of any surgery. What is wrong with the Western diet? Who is to blame? Human evolution is to blame – in two ways. Over many thousands of years, the human species has adapted to live in an environment of starvation. Our bodies have evolved extremely efficient mechanisms to store food, so we can survive long periods of starvation. This stemmed from the origin of the human race where we evolved in Africa and hunted for food. There would often be periods of days to weeks where humans would not eat anything, and only those who had the greatest ability to store energy– as fat–survived.As humans have evolved over the last 200 to 300 years, we have made food much more abundant. Unfortunately, we still have the same genetics; that is, we still have

the same mechanisms where our bodies want to store as much food/energy as fat in order to survive the next famine. This drive to convert food to fat has evolved over thousands of years and will not easily change. Obesity is a result of this imbalance of the body’s perception we’re living in starvation and the actual environment of food abundancy. What is the main culprit: sugar, fat or over-sized portions? Sugar after we eat it is converted to fat once it’s absorbed, so there’s really no difference between sugar and fat. The over-sized proportions are mainly to blame. If we were to live in a desert, and every couple of days chase and kill a pig and eat it, we’d be unlikely to become obese. This is what the human body was designed for. We also try and do a lot of outdoor activities such as camping and bike riding. Favourite sports: Watching AFL. My team is Essendon. Our family try to go to at least one or two games each season. Last year we spent a weekend in Melbourne and went to the MCG and watched Essendon win. School: Christ Church Grammar School in Perth University: The University of Queensland When did you decide to become a doctor and what attracted you to the profession? I actually did Vet Science first, worked for a couple of years and then did medicine to become a doctor. I wanted to specialise in something and work in a much busier, fastpaced environment. Apart from bariatric and HepatoPancreatico-Biliary surgery, are there any other specialties that interest you? As part of my public hospital job I do a lot of emergency and trauma surgery. This can be extremely rewarding and enjoyable surgery. As part of this I get the opportunity to train many junior surgeons which I like. What has been the most rewarding aspect of your career so far? Being able to learn new skills, travel and share ideas around the world. Favourite holiday destination: The best holidays have been cruise ship holidays with the family, especially around the Pacific Islands. I can’t imagine living anywhere more than a 20-minute drive from the ocean. Please describe your ultimate weekend: My 14-year-old son and I recently climbed Mount Barney, camped at the top for a couple of nights, explored around the peaks and then came back down. Weekends where there’s some preparation involved and excitement leading up to it are the greatest. You’re a member of the Southport Surf Life Saving Club. How long have you been involved and what do you enjoy the most about your role? Our family have been involved in the club for over 10 years. We joined so our first daughter could learn to become safe in the surf. After a while we realised we loved the community atmosphere the club provided. We became more involved just because we liked hanging around the club and the great people we met there. The kids have since grown up knowing this same sense of community spirit and have become heavily involved in everything it has to offer, be it competitions, first aid, youth camps, volunteering time doing beach patrols and much more. I also enjoy the half-price

coffees members get at the café, as well as the bacon and egg breakfasts. If you could invite three famous people to a dinner party, who would they be and why? Gene Kranz. He was the NASA Mission Control flight director at the time of the Apollo missions. He wrote the book, Failure is Not an Option. I love his virtue of being thorough, extremely precise, complete and taking responsibility for everything. Jimmy Buffet, songwriter and storyteller. Just an all-round cruisy character who has made a living of sitting on beaches, singing, laughing, playing his guitar and having fun. Orson Welles, a very enigmatic and charismatic character. Initially explorative nd contrite, then bizarre and extravagant later, but always creative and compassionate about his work. I’d just love to see what he has to say about what’s going on in the world today if he were still around. What would you cook for them? A 10-pound brisket on my Texas offset smoker. Light the fire in the morning, hardwood with some hickory and rosewood chips. It takes a full day, tending regularly to the pit temperature. After eight to ten hours you’re rewarded with the greatest meat you’ve ever had! Imagine a barbeque like this with those three famous people above. It would be bizarre!

to store fat), potentially leading to reduced functioning of our adrenal glands, thyroid and nervous system. So, high-intensity interval training (HIIT) is great but in moderation to maintain optimal health.

should train differently

W

hile there is no doubt in my mind that women can do everything men can do, it’s good to note that we may benefit from training differently due to differences in our hormones and our anatomy and physiology. This does not mean that women need to forgo being strong and fit or training hard; it just means that there are ways women can get more out of their training that may differ from their male counterparts.

Our Structure While women should be able to perform the same lifts as the guys, some modifications may be necessary to suit the female body shape. Since women generally have wider hips, a wider stance for certain lifts, like squats and deadlifts, will be beneficial to reduce the valgus (inward) force on the knees. As well, women have a naturally greater anterior pelvic tilt (bum out posture), which accentuates the curve in the lower back. This can lead to a weak posterior chain (hamstrings, glutes and calves) and increased pressure on the lower back during heavier lifts, potentially causing lower back pain. Having awareness on proper form, and appropriate core and hamstring strength is extremely important to avoid injury, so investing in a coach may be worthwhile. Be careful if you regularly wear high heels as this tightens and weakens the posterior chain, making core and hamstring strength even more important. As many men began lifting weights at a younger age than women, it is females commonly have a weaker core and ability to activate certain muscles, especially glutes, when starting out. I like to build core and glute strength with Pilates-style exercises to promote proper activation and reduce compensation, which men would benefit from too.

The Reps In trained men and women, muscle fibre types can have a massive effect on an individual’s athletic abilities. Women generally have more Type-1 fibres, or slow-twitch fibres, which are used for endurance exercises and take longer to fatigue (e.g. distance running, high rep weights). On the flipside, men generally have more Type-2, or fast-twitch fibres, which are used in short bursts and explosive movements but tend to tire more quickly. Higher levels of estrogen, the female sex hormone, means women also tend to recover faster than men as estrogen is an anti-catabolic hormone. Estrogen also aids muscles to repair, reduces the protein breakdown during exercise and protects muscles against damage. Because of this and a larger distribution of slowtwitch fibres, women are therefore more resistant to fatigue than men and can generally do more reps at a given intensity with shorter rest periods. To get the most out of training, women typically benefit from performing more reps per set.

Fortunately for men, they don’t have to deal with the never-ending undulation of hormones that women face with menstruation. Because of the continuous rise and fall of sex hormones, women experience a plethora of symptoms that affect training outcomes and performance. Since women experience these hormonal changes over the course of the month, their exercise plans may need to change as well. Many women feel strong and perform well for the first half of their cycle when estrogen is at its highest. This is a good time to test heavy lifts, increase weights or perform HIIT training, as the body will not only experience a higher pain tolerance, but greater confidence and motivation. Due to high levels of estrogen, the body will respond more efficiently to resistance training leading to greater, faster muscle gains. In the second half of the cycle, estrogen levels decrease and progesterone increases, which can lead to fatigue, mood changes and other symptoms that can affect performance in the gym. During this phase it may be necessary to back off the heavy lifting and increase endurance and cardio training at submaximal loads as the body is more efficient at burning fat in this time. The body will likely retain water in this phase as well, so exercising will help sweat out excess fluid. Despite all these recommendations, it is important to listen to your body and pay attention to how it is feeling. We are all different, so finding an exercise routine that is optimal for your body is all part of the fitness journey! The Intensity While most women can achieve great endurance, our nervous system tends to be less effective than guys when it comes to explosive movements. Men can generate force quicker due to the difference in muscle fibres and having more muscle mass. When it comes to high intensity, women are generally able to maintain a higher intensity for a longer time than men under a submaximal load. Not only that, but women generally recover quicker between intervals than men. Our hormones are highly affected by training intensity, so too much high intensity can take a toll on our bodies. It can result in too much cortisol (a hormone that causes us

WHAT TO DO: Flick through magazines and online sites like Pinterest, Houzz and Instagram for inspiration. Look for rooms you are drawn to. This is furniture that represents your style. Note how these rooms don’t have matching coloured furniture but the individual pieces cleverly complement one another. This may take more time, but you will feel more connected to the space and the results will be worth the effort.

FURNITURE ARRANGEMENT Pushing all the furniture up against the wall. It’s particularly counterproductive in an open-plan setting. I commonly find this flaw in houses with smaller rooms, in the owner’s attempt to create more space. WHAT TO DO: In an open-plan setting, arrange the furniture in a way that encourages social interaction. Bring the furniture out from the walls so the sofa and occasional chairs are close enough to hold conversation. Avoid creating a big open space in the middle of the room. Even in a small room, pulling the sofa a few inches away from the wall will create breathing room and make the space feel larger.

SCALE AND PROPORTION Without sounding like a control freak, I cannot stress how important it is to nail this element when styling a room. If everything is either too big or too small, the room will read like a hot mess, limiting its full potential. It’s a shame when I see clients who want to keep their thickset, oversized, chunky sofa in their tiny apartment because it’s still in good condition. Then there’s the problem of the square eight-seater table pushed up against the wall of the dining room. On the other hand, a lonely sofa in an openplan arrangement is not enough to create harmony of scale in a room. WHAT TO DO: Ask yourself, “Does the piece fit in the room practically?” If not, sell it! It’s important for the room space

to be used but not taken over. If your room is tight on space, choose a sofa that has narrow arms and a lower profile. Any furniture with slender legs that lifts the piece off the floor does wonders in creating an illusion of space. If you have space for a side table, consider one that is different in height, shape and texture to your coffee table and maybe a tall floor lamp to introduce height. A room that looks balanced and harmonious is filled with a combination of heights, shapes and proportion. RUG SELECTION AND PLACEMENT The right rug can make or break a room. It brings everything together. It’s very easy to make the mistake of choosing a rug that’s too small for the space. It then becomes difficult to achieve the ideal rug placement because the proportions are out and this often leaves the room looking unfinished. Sometimes we might love the colours in our rug but can’t work out why it doesn’t look great in the space. It would be a huge mistake to choose a black or white rug when you have pets and children as they are both room-sized magnets for white fluff and dirt. WHAT TO DO: Timing is key when choosing a statement rug. Choose your rug first and build the room around it. If you already love your furniture, buying your rug at the end that supports your existing colour palette is the way to go. Size matters. Choosing a bigger rug can be the difference between bringing the space together or not. Go bigger. It’s worth the expense every time. If you’re unable to visualise the final look, mark the floor out with masking tape and arrange your furniture, making sure placement and size works from every angle. When choosing the perfect colour for your rug, the existing flooring should be considered because some colours work better together than others. Modern, light-coloured timbers

or tiles look best with cool shades of blue, grey and off-white. Warm-toned floors work best with warmer, earthy or rich shades.

LET THERE BE LIGHT If you don’t have neighbours staring directly into your home, using privacy sheers over your windows is just blocking valuable light and making the house feel closed in and dated. It’s surprising how much available light is lost due to placing furniture in front of a window. Making this mistake will completely affect the mood in the room, no matter how it’s styled. WHAT TO DO: Make the most of the light by ditching the sheers and closing the curtains, blinds or shutters at night. This will help ventilate the room and prevent unwanted smells. I’m channeling teenagers’ bedrooms here. Position furniture so it’s not obstructing the window and the view to outside. This is particularly important in a small room. Paint the walls white or a pale colour and hang a mirror. This can double the amount of light in a room, especially when positioned opposite a window. Voila, you have a light-filled home.

Major weight-loss transformations are testament to an individual’s determination, resolve and discipline. But in some cases, the accomplishment of losing weight is diminished because the hard work isn’t reflected in the excess skin. Dr Peter Widdowson, a plastic surgeon with over 30 years’ experience, explains the benefits of body lift surgery.

K

atrina felt like a new woman after bariatric surgery. The 35-year-old mother went from 146kg to 80kg in just 12 months following a gastric sleeve procedure. The kindergarten teacher had more energy and was delighted at how satisfied she felt after eating small portions. Katrina rediscovered her love of clothes shopping and began wearing outfits that showed her new physique. Only one problem remained: excess skin. “I didn’t feel great about the loose skin around my belly,” she said. “It hung over the waist of my clothes. When I saw my reflection as I was standing sideways in front of a mirror, the person staring back at me didn’t match the way I felt.” Loose, hanging skin is a common problem associated with major weightloss. Our skin is an amazing living organ and it adapts to weight gain by expanding or stretching. It has a limited ability to tighten once substantial weight is lost. When it comes to the loose skin around the stomach, the accumulation of fat stretches the skin tight – like an overinflated balloon – so when the fat is lost, the skin can’t snap back to where it used to be. Over time, the skin’s elasticity weakens and stretches the abdominal muscles and connective tissue which are largely responsible for how tight and toned your abdomen is. Sagging skin and folds can not only look unappealing but leave people feeling uncomfortable and cause rubbing and chaffing which can cause further skin problems, including infection. The only effective way to remove this excess skin is through a set of cosmetic procedures collectively known as a body lift. Dr Widdowson has extensive experience in body lift surgery and will advise on which type of lift will best address the problem 42 SLIM MAGAZINE SPRING 2018

areas that concern you most, aiming to restore bodycontour by improving shape and tone of underlying tissue. What is body lift surgery? A body lift is designed to tone and shape areas of the body that have sagging tissue. Body lifts can focus on both the upper and lower parts of the body. A lower body lift focuses on the buttocks, groin, thighs, tummy and lower back. An upper body lift involves the abdominal area and breasts. A total body lift will focus on all the problem areas, removing excess skin, and tightening loose fatty tissue. Who would be considered for body lift surgery? A good candidate for a body lift is an individual who has excess loose tissue, typically due to extreme weight-loss. The operation can be undertaken by both men and women who wish to remove the extra skin that hangs from their frame. Individuals should be in good health, following a regular exercise routine and maintain a balanced diet. The surgery is not recommended for women who are considering pregnancy in the future. How can scars be minimised? As with any surgery, there will be some scarring. It’s important to discuss expectations with the surgeon and find out where the incisions will likely be made. Once the incisions have healed, a scar minimising cream can be applied. What is expected after your body lift surgery? The operation is performed under general anaesthetic and may require a hospital stay of two or more nights. After surgery, there is a specific care routine that must be followed. The incisions and affected area will be wrapped with bandages and dressings, and drainage tubes will be inserted to remove excess fluids and blood. Patients may find that their muscles and skin may feel quite tight, however this gradually passes and within a week or two of surgery, most patients can walk around comfortably. Patients will be prescribed pain medication to reduce discomfort.

A compression garment is fitted a few days after surgery and is worn for four to six weeks post-operatively. Physical activity needs to be limited during the recovery period after surgery. What are the potential risks associated with this surgery? Every surgery comes with risks and the body lift procedure is no exception, particularly as the procedure is performed under general anaesthetic. Some of the most common risks include seromas, where a pocket of fluid forms under the skin. It is also possible to lose sensation or experience temporary numbness of the skin. All potential risks should be discussed in detail with the surgeon prior to the operation so that you are completely comfortable with your chosen surgery. Pre-operation requirements In order to prepare for the surgery, patients may be required to undergo a medical evaluation to ensure that they are in good health. The doctor may also recommend that current medications be stopped or adjusted. It is also important to avoid taking aspirin or blood thinning medications. Smokers are encouraged to quit at least three months prior to surgery. How much does a body lift cost? While the cost of body lift surgery varies, it can be anywhere from $20,000-$25,000 depending on the type of lift that you have performed. This cost usually includes surgeon’s fees, assistant surgeon’s fees, anaesthetist’s fees, hospital and operating theatre costs, and in some cases, follow up visit costs. Medicare and your private health provider (if you’re covered), may provide some refund of the total cost. kinny is out and strong is in. That’s the message Instagram star Natalie Roser wants to share with women. While acknowledging that she is lucky to be naturally slim, the one-time Miss Universe Australia finalist says she is happier and healthier since introducing weights into her training. The sought-after model is close to clocking up a million followers on Instagram and moved to Los Angeles earlier this year to pursue her career. The 28-yearold has fronted campaigns for Bras N Things, 2XU, Frankie Swimwear and her own fashion line Roser The Label. Born in Newcastle, Natalie started modelling when she was 13. She was Fox8’s face of the year in 2014 and has graced the covers of several magazines including Maxim and Women’s Health. Despite her modelling success, there was a time when she felt pressure to be skinny. “When I first started training, I put on muscle really easily, and I had a lot of feedback from agents – this was years ago – saying, ‘You’re looking a bit strong for the fashion world’. “I started to change my training, but I was changing it for them. Now I’m a bit older and I’ve really learnt about how my body works and when I feel the best. I’ve learnt to train just for myself. That’s my philosophy.” Natalie said she noticed the sizes of models varied while working in the United States. “The difference between New York and even the rest of America is quite scary really,” she said. “Some of the girls are quite slender, but they are naturally slender in some cases. I was always slim but now I’m toned, I’m fit,

I’m healthy, I have strength in my body. I can pose better, I move better and I can just hold myself better. I just feel better which looks good in the long run.” Natalie was 14 when she was diagnosed with scoliosis, a curvature of the spine. “That’s why I’ve always struggled with posture, back and muscle pain,” she said. “My workouts are very specific and arranged around treatment of that. If I have a week or two off, I have to gradually build my body back up to the level that I’m able to work out at, because otherwise it can cause me a fair bit of grief – muscular pain. Ab stuff is really good for me. I do a lot of cardio because that’s low-weight-bearing on my back. Weight training is either bodyweight or lightweight with high reps. Anything that’s too heavy in the front puts pressure on the back. Barre work really hurts my back, too. But I enjoy yoga and I’m a huge fan of pilates.” No day is ever the same for Natalie. She is often in different cities, in different hotels, with a variety of activities each day. “The only ritual I have is that I like to start my day with a glass of water with lemon in it,” she said. “My favourite exercises are TRX pikes, slow lunges with floor sliders, a glute bridge with resistance band, and hamstring leg curls with a Swiss ball.” A scroll through Natalie’s Instagram will reveal stunning beauty snaps in exotic locations, enviable bikini and activewear pics and endless fashion inspiration. “The photos I get are usually out and about doing life or on a photo shoot so I’ve already had my hair and makeup done,” she said. “My Instagram is more of an insight in to my life as opposed to a posed situation like my modelling.”

Antenatal Depression:

IS IT A THING?

Women are told that pregnancy is meant to be the happiest time in their lives, but what happens when it’s not? Obstetrician-gynaecologist Dr Drew Moffrey, an expert in women’s sexual and reproductive health, explains pregnancy depression and what can be done about it.

P

regnancy depression is a very real condition and something we need to highlight to lift the shroud of secrecy that covers it. Its correct name is antenatal depression or anxiety. It’s difficult to know its exact frequency but some professionals quote the number as high as one in 10 women will suffer from some form of antenatal depression or anxiety. It is also common for women to suffer from both anxiety and depression at the same time. For years experts felt that the pregnancy hormones protected against depression and anxiety but this has been proven to be false. The causes can be numerous and varied. Women with a history of mental health illness are more predisposed to suffering antenatal depression or anxiety. Those who suffer significant stress during their pregnancy such as relationship breakdown or significant family hardships are more at risk of developing the condition. It can be triggered by any factors and is similar to postnatal depression where it can affect anyone at any time. This condition does not discriminate between socio-economic demographics. The symptoms of antenatal depression are similar to postnatal depression and anxiety.

The difficult thing about antenatal depression is that a lot of these symptoms can be normal in a pregnancy and therefore most women do not ask the question of their health care provider. One of the biggest safety factors of depression is having a partner who is aware of symptoms and keeps a vigil. Depression of all sorts is a difficult condition for people to have insight of. Therefore, the support of a partner and family cannot be understated. Reaching out for help is often the hardest thing for a woman suffering from depression or anxiety. The simple act of asking if people are okay is often the first step that can lead to obtaining the help a woman needs. Thankfully treatment of antenatal depression is readily available and very successful. There are several different categories of treatment. These include counselling with a psychologist, cognitive behavior therapy and relaxation therapy. There are also a lot of medications that have been shown to be safe during pregnancy. There is always worry about any medication taken during a pregnancy but a happy healthy mother taking anti-depression mediation is much more beneficial to their baby then a mother suffering from depression or anxiety. Antenatal depression is a condition that we need to raise awareness of and start conversations about so there is no stigma attached with mental health. We need to start giving our mothers the help they need to ensure that both their physical and mental health are being cared for. Meet Dr Andrew Letchford

r Andrew Letchford is an orthopaedic surgeon with an interest in joint replacement, knee reconstructions, sports injuries and acute orthopaedic trauma. After gaining his medical degree from Sydney University with First-Class Honours in 2000, Dr Letchford undertook his orthopaedic training in Queensland. In 2009, he founded Pacific Orthopaedics, consulting at the Pacific Private Day Hospital in Southport and performing surgery at Pindara Private Hospital and Gold Coast Private Hospital. What inspired you to pursue medicine and why did you choose orthopaedic surgery? When my father was forced off the land in central Queensland, he became an ambulance officer in the Moreton Bay region. He was very devoted and took on his caring role with great earnest and I hope I have inherited some of his commitment to helping others. It is a privilege to see a problem and be part of the solution in fixing it. Because of my experience on the land, which requires a very hands-on approach, orthopaedics has become a natural fit. It is very rare in medicine that you are not just simply managing medical issues, but you are solving a problem and are able to correct it completely, whether it be trauma where you are fixing something that has been broken, or in elective surgery where you are dealing with degenerative issues and trying to restore function.

Dr Letchford is leading the way in orthopaedic care

Born and raised in Queensland, you worked in the marine sciences, with extensive field work experience in the Gulf of Carpentaria and Torres Strait. What kind of work did you do there? My work in marine biology took me to every inhabited island of Torres Strait and I spent significant periods on Groote Eylandt in the Gulf of Carpentaria and around Weipa on the Embley and Hey Rivers, gill netting for research purposes. I was a very young man and it was an absolute delight working in the communities, seeing how people lived and sustained themselves in these remarkable locations. What was it like working in the underground mines in Western Australia? After my work in marine science, I worked in the underground mines in Western Australia in Leinster and Mt Keith. Initially I was driving underground ore trucks before progressing onto explosive works in stope mining and working as an assistant on a jumbo drilling rig, driving shafts. It is absolutely fascinating how humans manage their environment. (Stope mining is the process of extracting the desired mineral from an underground mine, leaving behind an open space known as a stope). How has robotics made surgery more efficient? Robotic Surgery is principally a tool for navigating in implants very accurately, allowing fine adjustments at a level that was previously very difficult to achieve. The addition of robotic navigation into our arsenal is in relatively early stages and full

scientific assessment is still progressing. I feel it is likely that in time we will see, with the help of independent research and the national joint registry data, the benefits of this for patients. Robotic joint replacement is now my procedure of choice for hip replacement, knee replacement and partial knee replacement surgery. At Pacific Orthopaedics, an efficient process has been developed where patients obtain their pre-op medical testing physician review and preparatory CT scanning for robotic navigating. At the time of surgery, it becomes simply a matter of performing the procedure that has already been preplanned with the addition of balancing the joint intraoperatively to improve patient satisfaction postoperatively. Can robotic technology and the ancient art of medicine happily co-exist? Medicine has always co-existed well with the emerging technologies and I see no concerns that Robotic Surgical Navigation will not be the same. Ultimately, we should see a result where, with the assistance of this technology, the results for patients should become more uniform and what can be achieved, for example on the Gold Coast, should be exactly what is achieved in New York, for example, using the same cuttingedge technology. What has been the most rewarding aspect of your career? Dealing with individuals one-to-one. It has always been a pleasure learning the back story to the life of the people I have worked with and operated on. I enjoy this more than operating in many respects.

METHOD Heat olive oil in a large fry pan over medium heat. Add capsicum and onion and cook, stirring occasionally until soft but not brown, about 6 minutes. Add garlic, cumin and paprika and cook, stirring frequently until garlic is soft about 2 more minutes. Add tomatoes and bring to a simmer for 5 minutes. Taste and season with salt and pepper. If necessary, add a splash of water. Make four indents in the simmering sauce with the back of a spoon and break an egg into each. Cover with a lid and gently simmer for 3-4 minutes or until the egg whites are set and the yolks still runny or cooked as desired. Baste whites with tomato mixture if necessary, being careful not to disturb the yolk. Add cheese for the last 2 minutes. Sprinkle over coriander and serve with toasted pita bread, if desired. Variations: For meat lovers, add bacon, chorizo or spicy sausage with the peppers.

INGREDIENTS 800g peeled mixed root vegetables (orange sweet potato, carrots and potatoes) a generous splash of olive oil 2 thyme sprigs, leaves stripped 1 rosemary sprig, leaves stripped sea salt 3 cups (210g) panko breadcrumbs 2 eggs 2 large firm white fish fillets (about 650g), skin and bones removed homemade aioli or tartare, to serve lemon wedges and a crisp green salad, to serve

METHOD Preheat the oven to 220°C (200°C fan-forced) Cut the root vegetables lengthways into 1 cm thick slices and then diagonally into 1 cm wide strips to resemble chips. Place in a baking dish with a good splash of olive oil, the thyme and rosemary leaves and a good pinch of salt. Roast for 30–35 minutes until tender and crispy. Shortly before the chips are ready, pour the breadcrumbs into a shallow bowl and lightly beat the eggs in a second shallow bowl. Heat a few splashes of olive oil in a large frying pan over medium heat. Cut the fish fillets into 3 cm wide strips, about 5–10 cm long. Dip the strips in the egg, then transfer to the breadcrumbs and press firmly to coat on all sides. Quickly add to the pan and cook for 2–3 minutes each side until the crumb is golden brown and the fish is cooked through. Serve the fish and root vegetable chips with aioli or tartare, lemon wedges and a crisp green salad.

BRUSCHETTA SERVES 4–6 PREPARATION TIME: 15 MINUTES COOKING TIME: 5 MINUTES

INGREDIENTS 1 standard breadstick (about 30-40 cm long) 1 large garlic clove, halved a generous drizzle of olive oil sea salt and freshly ground black pepper

METHOD Preheat an overhead grill to medium–high. Cut the breadstick into 2 cm thick slices and toast on both sides under the grill. While the toasts are still hot, rub with the cut side of the garlic. Place the toasts on a serving dish and drizzle generously with olive oil, then season with a little salt. Now simply top with any of the following flavour combinations and season with salt and pepper. Serve while the bread is still a little warm.

Tomato, bocconcini and basil: Top the warm garlic toasts with 6 thinly sliced vine-ripened tomatoes (you want these at room temperature for best flavour), then about 300g thinly sliced bocconcini and 2 large handfuls of basil. Frittata: Spread the warm garlic toasts with about 1 cup (300g) good-quality whole-egg mayonnaise and top each piece with 2 thin slices of leftover frittata.

WHITE BEAN SOUP WITH CRISPY BACON

SERVES 4 PREPARATION TIME: 15 MINUTES COOKING TIME: 30 MINUTES

INGREDIENTS a generous splash of olive oil 2 garlic cloves, finely chopped 2 × 400g tins crushed tomatoes or 500g vine-ripened tomatoes, finely chopped 500g dried spaghetti sea salt grated parmesan and basil leaves, to serve METHOD Heat the olive oil in a large deep frying pan over low heat, add the garlic and cook for 5 minutes or until warmed – you want the garlic fragrant but not coloured otherwise it will taste bitter. Stir in the tomato, then cover and cook for 10 minutes. Meanwhile, add the spaghetti to a large saucepan of salted boiling water and cook for a few minutes short of the time specified on the packet (about 5 minutes). You want the pasta to still be quite firm as it will cook further in the pan with the sauce. Drain, reserving about ½ cup (125ml) of the cooking water. Remove 2 tablespoons of the now very rich and thick tomato sauce (sugo) to a bowl and set aside. Add the drained spaghetti to the remaining sugo in the frying pan. Toss together well, adding the reserved cooking water to loosen it a little. Cook over low heat for another 5 minutes or until the pasta is al dente. Season well with salt and divide among four serving bowls. Top each with a little of the reserved sugo, grated parmesan and basil, and serve.

INGREDIENTS a few generous splashes of olive oil 2 brown onions, chopped 1 garlic clove, chopped 2 × 400g tins cannellini beans, undrained 2 × 400g tins borlotti beans, undrained 1 litre chicken stock 10 sage leaves 2 large handfuls of flat-leaf parsley, chopped sea salt 200g bacon rashers or pancetta, finely diced freshly ground black pepper METHOD Heat a generous splash of the olive oil in a large heavy-based saucepan over low heat, add the onion and garlic and cook for 10 minutes or until softened. Add all the beans and liquid from the tins, the stock, two sage leaves and half the parsley and simmer gently for 20 minutes or until the beans are very tender. Blend with a stick blender until smooth and creamy. Season lightly with salt, remembering that the bacon or pancetta will also add a salty hit. Meanwhile, heat a splash of olive oil in a frying pan over medium–high heat, add the bacon or pancetta and remaining sage leaves and cook until crisp. Remove with a slotted spoon and drain on paper towel. Ladle the soup into bowls and top with another splash of olive oil, the crispy bacon and sage leaves. Finish with a grinding of black pepper.

rench cooking connoisseurs and restaurant owners Cai, Bob and Barbara Ross have released a chic book that is worthy of top spot on your coffee table. In their first cookbook, “La Vie Paysanne —30 Years of French Country Cookery,” Cai, Bob and Barbara Ross tell the remarkable story of how their love of simple French cooking

transformed a humble bistro into a revered Mediterranean restaurant in the UK. It also became one of Sir Roger Moore’s favourite places to visit. Over the pages of the book, Bob and Barbara share some of the many tried and tested recipes handed down through generations. From French classics old and new, including French onion soup, Salade Nicoise, Confit de

canard, and even delicious pastries like the Clafoutis Limousin — the recipes have been written with simplicity in mind to achieve wholesome meals that family and friends can enjoy. In a place known for rich desserts and wine, most of its inhabitants have little trouble staying trim. If you want to learn how to eat like the French, La Vie Paysanne is a good starting point.

CASSOULET

You will need a whacking great, deep earthenware casserole for this. Soak the beans for 3-4 hours. Drain them and put them in 2 litres of cold water with the bay leaf, thyme, parsley, ham hock, the pork skin cut in strips and tied in a bundle and the onion. Cover, and cook very gently until the beans are tender. Drain off and reserve the liquid. Don’t season the beans at this stage, the salt will prevent them softening properly. If you’d care to cheat a little, you can bypass this entire paragraph and use canned cannellini beans instead, you naughty corner-cutter you! Fry the sausages in olive oil for 8-l0 minutes, lift out of the oil and cut into 10cm pieces. Cut the shoulder of pork into 5cm cubes and brown them quickly on all sides. Put the pork into a saucepan with the bacon and garlic, add 1 litre of water and the tomatoes, bring to a simmer, cover and

cook until the pork is tender. Drain the pork, mix the liquid with that drained from the beans and set aside (if you cheated with the beans, use vegetable or even chicken stock instead). In the earthenware casserole, put a layer of beans, then a layer of the pork, bacon and sausages, another layer of beans and then the preserved duck legs, in turn finished with a final layer of beans. Pour the reserved liquid into the pot, cover and simmer over a very low heat for about 1 hour 30 minutes. Check and adjust the seasoning at this point, and stir in any crust that may have formed. Turn up the heat to about 160°C and cook for a further 30 minutes. Halfway through, check it again and stir in the crust. The duck leg bones are sometimes brought through the crust for presentation. The texture can be adjusted at this point, by finishing it with the lid off, or by adding a little stock.

450g smoked bacon, diced 1 onion, finely chopped 4 large field mushrooms, inner stalk removed and chopped 220g Stilton cheese 500g puff pastry 1 egg, beaten sea salt and freshly ground pepper, to season Preheat the oven to 200°C METHOD Fry the bacon in a pan over medium heat. Add the onion and the chopped mushroom stalks. Season and continue frying until the onion is golden. Leave to cool. When it has, mix the bacon and onions with the Stilton using your fingers. Take a handful and pack it into the cavity of the field mushrooms. Roll out the puff pastry into thin discs, about the size of a side-plate and wrap each mushroom in a cocoon of pastry, leaving the Stilton mix exposed. Brush the pastry with the beaten egg, then stick them in the oven for about 12 minutes.

EPAULE D’AGNEAU À LA PROVENÇALE SERVES 4

1.3kg boned and rolled lean shoulder of Welsh lamb (don’t worry about boning or rolling, your butcher will do all that for you) 4 lemon thyme sprigs 1 onion sea salt and freshly ground pepper, to season olive oil FOR THE STUFFING: 115g unsalted butter 55g pitted black olives, finely chopped 170g pared roast capsicum (bell pepper) 2 large garlic cloves, crushed 2 tablespoons chopped rosemary, thyme and marjoram (or 1 tablespoon dried herbs de Provence)

CAULIFLOWER & ALMOND SOUP SERVES 4 -6

1 large cauliflower 75g butter 1 onion 50g flaked almonds, toasted 800ml chicken or vegetable stock 570ml full cream milk salt and freshly ground pepper, to season METHOD Chop the cauliflower florets, discarding the main stalk. Fry the onion in butter in a frying pan over medium heat until soft. Add the cauliflower to the onion and toss quickly in the butter. Add the stock and simmer for 15 minutes or so. Add most of the almond flakes to the soup (saving some to garnish). Remove from the heat and liquidise or blend into a smooth mixture. (Don’t overdo it. You are looking for a bit of texture with this soup. We use one of those handheld blenders.) Add the milk, return to the heat and bring back to simmer without letting it boil. Season with salt and plenty of freshly ground pepper.

METHOD Pre-heat the oven to 200°C. On a roasting tray, lay the sprigs of lemon thyme with the onion in thick slices. Unroll the lamb and season with the salt and pepper. Make up the red pepper and olive butter in a small bowl, mixing all the ingredients, but saving some of the mixed herbs. Spread the mixture evenly onto the seasoned lamb, and reroll the lamb, securing it with string, or elastic meat bands, if you can’t tie knots. Lay the rolled lamb onto the thyme and onions, drizzle with the olive oil and scatter with the rest of the herbs. Roast on a high heat for 20 minutes, then reduce to 175°C and cook gently for a further 45–60 minutes (you want it to be pinkish and juicy). Remove and let it rest for another 20 minutes before serving. If anybody asks you to cook it well done for them, give them a smack with the serving spoon. This great dish will be made greater with roasted potatoes and green beans of course, but if you really want to be a bit more authentic, try roasted Mediterranean vegetables, of which more later. PORK AND PEANUT TACOS

LEMON LAMB TACOS

600g pork mince 1 L water pinch of salt 4 garlic cloves, chopped 50g onion, chopped 165g peanuts, shelled and toasted 320g roasted tomatoes 15g sesame seeds salt and pepper, to taste 4 corn tortillas

4 lamb shanks (approx. 250g each) salt and pepper, to taste 4 corn tortillas

METHOD To cook the pork, add to a large pot and cover it with water until the pot is ž full. Add a pinch of salt, garlic and onion. Bring to the boil and reduce heat. Simmer for 1 hour. Strain the pork and place in a bowl reserving the broth. To make the peanut sauce place peanuts, tomatoes, sesame seeds, salt and pepper into a blender and grind to a paste. You may need to scrape the sides with a plastic spatula once or twice so that all the ingredients are combined well. Add the sauce and the pork to a frypan and cook for 15 minutes. Heat tortillas in the oven for 1-2 minutes. Alternatively, heat a frypan and add the tortillas, one at a time. Cook for 1-2 minutes each side. Keep warm while you heat the rest of the tortillas. Serve the pork with peanut sauce on the hot corn tortillas.

METHOD In a large bowl, add the lemon juice and zest, sherry, olive oil, garlic, parsley and salt. Season the lamb with salt and pepper. Add the lamb shanks to the marinade and place in the refrigerator for 2 hours. Remove the shanks from the bowl. Place the shanks on a baking dish and roast in the oven for 35–40 minutes, basting more marinade every 10 to 15 minutes. Turn them at about 20 minutes to brown on both sides. Remove from the oven and rest for 5-10 minutes. Heat tortillas in the oven for 1-2 minutes. Alternatively, heat a frypan and add the tortillas, one at a time. Cook for 1-2 minutes each side. Keep warm while you heat the rest of the tortillas. To serve, cut into strips and serve on the tortillas.

BEYONCÉ’S VEGAN PIZZA Pizza is one of Beyoncé and husband Jay-Z’s favourite foods. Marco Borges, Beyoncé’s trainer and creator of the “22-Day Revolution” meal challenge, said pizza can be healthy if prepared the right way. This is Beyoncé’s favourite pizza from Borges’ book: THIN-CRUST PIZZA SERVES: 2

FOR CRUST ¾ cup brown-rice flour (can be substituted with white flour or spelt) ½ tapioca flour (can be substituted with white flour or spelt) ⅓ cup water 1 tsp olive oil ½ tsp sea salt

TOPPINGS 2 medium ripe tomatoes ½ avocado 2 basil leaves, chopped black ground pepper, to taste VEGAN CHEESE ½ cup raw cashews, soaked 1 cup water 1 tbsp tapioca flour (can be substituted with white flour or spelt) 1 tsp lemon juice 1 tsp apple cider vinegar ½ tsp sea salt, or to taste

To prepare the cheese, add all ingredients into a high-speed blender and blend until creamy. In a saucepan, cook the cheese stirring often over medium-high heat. Reduce heat and keep stirring to prevent burning. Once consistency has thickened (looks like melted cheese), remove from heat and let cool. Set aside while preparing other ingredients. Leftovers can be stored in fridge for up to 7 days. Preheat oven to 180ºC. Lightly grease and dust a baking sheet or pizza stone with flour. In a mixing bowl, combine the flours with the salt and whisk together. Make a well in the centre. Add the water and oil and mix with a spoon. If necessary, add 1 tbsp at a time of water until consistency is reached. Scoop out the dough onto a baking sheet or pizza stone and use your hands to shape and press down into a desired shape. Smooth with wet fingers and pre-bake for about 20-25 minutes. Wash and slice each tomato into 3 thick slices. Remove the pizza crust from the oven and top with 6 slices of tomato, sliced avocado, vegan cheese and basil. Bake for another 15-20 minutes until slightly crisp. Remove from oven, top with a dash of pepper, slice and serve.

Meghan Markle’s foodie status dates back far before she met Harry. Before the pair met, Meghan was a successful actress, humanitarian, style icon and foodie. She was also a talented blogger, producing content for her “inspired lifestyle” site, The Tig. When royal duties called, Meghan shut down her site. Back in her blogging days, Meghan claimed American chef Ruth Reichl’s pumpkin fondue was her favourite recipe of all time. We wonder if she has served it up for Prince Harry yet. INGREDIENTS 1-3 small sugar pumpkins chicken broth heavy cream ½ tsp dried sage baguette slices toasted olive oil

1-2 cups shredded gruyere, sharp cheddar or another aged cheese you like (per pumpkin) salt pepper

Cut off the tops and scoop out the seeds of the pumpkins. Sprinkle the insides with salt and pepper, then add the dried sage and shredded cheese. Pour equal parts chicken broth and cream into the pumpkins until they are filled about half way to the top or a little over. Replace the pumpkin tops, rub the outside of the pumpkins with oil, and bake pumpkins on a foil-lined sheet at 220ºC for about 1 to 1½ hours, or until pumpkins are soft and browned (if it seems like the skin is burning, cover the pumpkins with foil). Let the pumpkins cool a little, then remove tops and stir the inside so that most of the pumpkin flesh gets mixed in to the cheese/broth mixture. Serve this fondue with chunks of bread or crostini (toasted baguette slices) on a large tray.

200g skinless and boneless salmon fillet 100 percent buckwheat soba noodles to serve 5g grated fresh ginger 1 teaspoon sesame oil 1 teaspoon tamari 1 bunch bok choy or pak choy black sesame seeds Recipes coriander leaves from FODMAP Friendly by Georgia 1 fresh red chilli, finely sliced McDermott.

MISO GLAZE Available now, 2 teaspoons miso paste Macmillan Australia 4 teaspoons boiling water RRP $34.99. 2-4 teaspoons sesame oil 2 teaspoons maple syrup 10g grated fresh ginger chilli sauce, to taste METHOD Preheat the oven to 180°C. Line a baking tray with baking paper. To make the glaze, put the miso paste into a heatproof bowl. Pour the boiling water over and whisk to form a paste. Add the remaining glaze ingredients and whisk again to combine. Place the salmon in the bowl and use clean hands to rub the glaze thoroughly into the salmon. Set aside to marinate for at least 15 minutes – the longer, the better. Put the salmon on the lined tray, spoon over the rest of the glaze and transfer to the oven to cook for 10 minutes, or until the salmon is cooked through. While the salmon cooks, prepare the buckwheat noodles as per the packet instructions, and then drain and set aside, keeping them covered to retain the heat. Place the ginger, sesame oil and tamari in a frying pan over a medium heat. Allow to cook for a minute or two, and then add the bok choy. Toss for a few minutes until the bok choy is cooked to your liking – you can add a splash of water or put the lid on, if you like. When the salmon is cooked, serve with the noodles and vegetables. Sprinkle over some black sesame seeds, coriander leaves and fresh sliced chillies to finish.

LASAGNE SERVES 6–8

600g (½ small) kent pumpkin, peeled and sliced 750g (about 4) red capsicums 600g (about 2) eggplant, sliced lengthways 600g (about 5) zucchini, sliced lengthways 12 sheets of gluten-free lasagne (you may need more or less depending on the baking dish you use) 5 tablespoons of pesto a handful of spinach leaves 50g cheddar, for the top BÉCHAMEL 75g butter 4 tablespoons cornflour (make sure it’s gluten-free!) 625ml (2½ cups) lactose-free milk 100g parmesan, grated 1 teaspoon ground nutmeg sea salt, to taste METHOD Preheat the oven to 180°C and place the pumpkin on one tray and the capsicums on another. Spray lightly with oil, and cook for 30 minutes, or until the capsicum skins are blistered and both the capsicums and pumpkin are soft. Remove them from the oven and transfer the capsicums to a bowl, and cover the bowl with plastic wrap, to encourage them to sweat. Set the pumpkin aside.

Cook your sliced eggplant and zucchini. The easiest way (using the least amount of oil) is to cook the slices in a sandwich press with a light spray of olive oil. Failing that, pan-fry them in batches until they are bendy, pliable and slightly browned. Once the capsicums are cool enough to handle, peel them, discard the seeds and slice into thick, béchamel-holding pieces. To make the béchamel, melt the butter in a saucepan over a medium heat. Once it has melted, add the cornflour and whisk until a paste forms. Pour in the milk and continue to whisk until you have a smooth, thick sauce. Remove from the heat, add the parmesan and nutmeg and season to taste. Set aside.

To assemble, arrange a layer of eggplant and then zucchini in an ovenproof dish about 30 x 25 cm. Next, layer 6 of the lasagne sheets, and gently spread the pesto over the top. Follow this with a layer of spinach leaves, some pumpkin, and finally, the capsicum. Spread half of the béchamel over the top. Repeat the same, or a similar, pattern of vegetables. You should end with a layer of capsicum, over which you can place the last 6 lasagne sheets. Top with the remaining béchamel, then sprinkle over a layer of grated cheddar. Bake in the oven for around 20–30 minutes, or until the top is golden.

PASSIONFRUIT CAIPIRINHA

MAKES 1 DRINK (SCALE UP FOR A PARTY)

2 tablespoons cachaça (cachaça is a distilled spirit made from fermented sugarcane juice) ½ tablespoon coconut sugar 3 tablespoons water 1 lime pulp of ½ a large passionfruit ice, to fill the glass METHOD Combine the liquor, coconut sugar and water in a cold glass, and stir until the coconut sugar has dissolved. Run a slice of lime around the edge of a glass, and then fill with ice and a few lime wedges. Pour the liquor over the ice, and finish with the passionfruit pulp. Stir and serve.

Serve with a side salad for a healthier meal Precooked chicken breast, 250g, thinly sliced 250g yoghurt, reserving some for garnishing 2 tablespoons tandoori paste (available at most supermarkets) 2 tablespoons tomato paste 4 spelt pizza bases 1 tablespoon sweet chilli sauce (optional) 1 teaspoon chia seeds 1 small red onion, thinly sliced 1 cup (30g) rocket or spinach 1 teaspoon sesame seeds ¼ bunch coriander, roughly chopped to garnish METHOD Preheat oven to 180°C. In a bowl, combine the yoghurt with the tandoori paste, chia seeds and sweet chilli sauce. Spread evenly over the pizza bases. Top the pizzas with the chicken tandoori mixture, then add the onion. Place the pizzas onto baking or pizza trays. Place into the oven and cook for 8-10 minutes. Remove pizzas from oven and top with the rocket and coriander. Add the reserved yoghurt over the top, if desired.

ASIAN SALAD WITH NOODLES

Tandoori paste is a staple ingredient in Indian cooking.

SERVES 4

This salad is great served with sliced cooked meat, or as a side salad. You can add nuts and shallots. 2 medium Lebanese cucumbers, halved lengthways, thinly sliced diagonally 1 bunch baby bok choy, leaves only, finely shredded 1 cup bean sprouts 1 bunch fresh coriander chopped 1 small bunch thinly chopped mint leaves, fresh 1 teaspoon beetroot powder (available online or from selected health food stores) 4 tablespoons sweet chilli sauce 2 tablespoons lime juice, freshly squeezed 1 tablespoon hemp oil 100g packet noodles, crunchy

METHOD Combine cucumber, bok choy, bean sprouts, coriander, mint and beetroot powder in a large bowl. In a small jug, whisk together the sweet chilli sauce, lime juice and hemp oil. Just before serving, add the noodles to the salad mixture. Drizzle the dressing over the salad and toss until well combined. Serve immediately. SLIM Editor, Lara Frawley, made this dish. Here’s her verdict: Salad is usually the last thing my meat-loving husband would choose for a main meal but he loved this dish. We both said it was full of flavour and made us feel satisfied. I served it with grass-fed rump, thinly sliced, for a protein boost. I didn’t have beetroot powder so I just used a little beetroot juice from a tin. I rate this recipe 10/10 for flavour and satiety.

THE ULTIMATE VEGGIE BURGER

T

he ‘Gut Whisperer’ Scott Mathias shares his recipe for a dehydrated nutrient-dense vegetable burger. “I cannot go past a good vegetable burger between gluten free buns and lathered with cashew nut cheese and tomato salsa,” he said. Scott is the creator of scottmathiasraw.com and author of a range of plant-based recipe books. He writes articles on digestive health and plant protein solutions on his blog and for health and food magazines.

MAKES 30 x 100g BURGER PATTIES

WET MIX 1kg carrots, chopped 2 cups (500g) chickpeas, cooked 1 large onion, chopped 4 tomatoes, chopped 8 Medjool dates, pitted 1 cup (250g) semi-dried tomatoes, chopped Thoroughly blend these ‘wet’ ingredients until fully broken down and set aside. DRY MIX 3 cups (750g) sunflower seeds 1 cup (250g) pepita (pumpkin seeds) Pulse these two ingredients in a food processor until it is reduced to a flour-like composition. Now add the following ingredients whole: 1 cup (250g) whole buckwheat ¼ cup (60g) psyllium husk ½ cup (80ml) of organic tamari or light soy sauce 4 teaspoons dried oregano 4 teaspoons dried basil 2 teaspoons smoked or sweet paprika Thoroughly blend the combined sunflower and pepita flour with these ingredients and add to the wet mix. Using your hands, mix wet and dry until a soft damp texture is achieved.

METHOD To form the burger, weigh 100 grams of the mixture and place into a round food form and using a tamper, flatten the mix down. As you remove the form gently apply some pressure, increasing the size of the burger to approximately 9cm in diameter. Do this on heat resistant non-stick paper, laying the burgers side by side. Once the mix is used up, place the tray into the dehydrator and set to 50°C for 9 hours. After a few hours, turn the burger over and do this again at the 8-hour mark. Most dehydrators, whilst set at a constant temperature, have irregular ambient drying efficiency so feel free to run the drying process on by checking the centre of the burgers for any dampness. They should be completely dried when any dampness in the centre is gone. Store in the fridge in an airtight container. These can last up to a month when chilled. If you don’t have a dehydrator, an oven is just as good when the door is left open and the heat is brought up to 50°C with the fan on. If you are using an oven, the burgers will be ready in 4.5 hours.

THE ADVANTAGES OF DEHYDRATED FOODS Dehydrating or drying foods will help preserve them so they’ll last longer without spoilage, and will help prevent them from becoming contaminated with microbes. Once dehydrated, the food needs to be properly stored to avoid deterioration in quality and to keep the food safe to eat. “Dehydrated fruit and vegetables enable you to process and store seasonal fruits,” said author and chef Scott Mathias. “Flavours and nutrients tend to be more concentrated in a dehydrated product. For instance, in green papaya powder the enzymatic activity is more prolific than a raw fruit.”

But the latest one to crop up at cafes? Beetroot lattes. VELVET BEETROOT LATTE SERVES 5-6

BEETROOT LATTE MIX 8 tablespoons beetroot powder 1 tablespoon cinnamon 2 teaspoons ginger powder 1/2 teaspoon vanilla bean powder Pinch chilli powder 2 pinches sea salt 2 tablespoon coconut sugar FOR EACH SERVE 1 tablespoon beetroot latte mix 1/2 cup water 1/2 cup plant-based milk – e.g. almond, rice, oat, soy, coconut

METHOD Mix all ingredients in a glass jar. To serve, add 1 tablespoon of the mix to a mug, 1/2 cup of boiling water and stir to combine, then top up with hot milk. If you’re pressed for time, make like you would a regular milky tea – 3/4 cup boiling water with cold milk from the fridge. NOTES • Dry mix will keep in a sealed jar in the cupboard for up to 6 months. • Make it sugar free – omit the coconut sugar and add a dash of stevia. Stevia is super strong, so you won’t need nearly as much.

• Make it soy free – Simply use another plant-milk option – e.g. almond, coconut, rice and oat milk are all fabulous options. • Make it keto – replace the coconut sugar with stevia, monk fruit or erythritol to taste. • For a frothy latte, blend the hot milk and water in blender before adding, or just add boiling water and cold milk for a quick instant no-clean-up option. • This is a thicker drink, so you might end up with a bit of pulp to chew at the end – which is a good thing since it means fibre.

How Emma Won her Battle with Weight and Disease

E

mma Taylor had the odds stacked against her from a young age. Struggling with Hashimoto’s Disease and polycystic ovary syndrome (PCOS) – debilitating conditions that caused her pain and led to excessive weight gain – the 39-year-old mother of two learned to beat her condition naturally.
