Summer for me is a busy time, with parties, kids on holidays, Christmas and New Year. I find it very easy to slip into bad habits. The trick, I have found, is to plan ahead and stay organised. NOT SO HIGHBROW

Defined, luscious eyebrows are in so don’t overpluck, underpluck or pluck in the wrong places. You may even want to splurge on a professional eyebrow shaping. As for products, there is a new one on the market that lets you tint a defined brow for a three day effect. Otherwise use a pencil or a powder. A waxy liner will tend to melt or move, so avoid it. Do not, under any circumstances, go more than two shades darker than your natural brow.

Yes, a panda eye looks great on a catwalk model. But just a little powder and liner is perfect for daytime; be more generous in the evening. Even so, the trick with intense colour is to stay soft, then intensify slowly, building colour step by step. If you have small eyes, graduate the colour – darkest by the lash line and lightest at the brow bone. In fact this trick can work for everyone. Remember that fair lashes can be overpowered by intense colour on the lids so always curl your lashes and pile on two coats of mascara.

Getting foundation right is essential, a.m. or p.m, but also tricky. Colour is where most women commit the most heinous crimes. Forget about trying a shade on your hand or wrist – try it on your face or even on your neck. Consider texture too. What you want from a foundation may vary between day and evening – for example, you may desire a natural look for the office and more dramatic maquillage for an evening out. Or you may prefer sheer converage in the evening when candle lighting is more flattering. The answer: treat yourself to a couple of choices.

This screen star could be the poster girl for health and beauty. She has her routine so well organised, it’s easy for you to put together your own cheat sheet that includes some of her tips. First thing in the morning, she has warm water with lemon – great for alkalising the whole system. Then it’s time for a coffee, a shake, eggs and a little avocado and a little coconut oil on whole wheat toast. What goes in the shake? Protein powder, bananas, blueberries, frozen cherries, stevia, a vegetable mix of dynamic greens, maca powder, and a little cacao. Another unusual breakfast option is oatmeal with an egg white whipped in at the end. “Then I usually read the paper and hit the gym,” she says. “I have the Smart Water bottle that’s 23 ounces (approx 680mls). I make sure I get three or four in of those a day. It’s such a habit for me now. So many people are water lazy; it’s such an important thing.” Jen likes to mix up her workouts to keep things interesting. She does Barre method exercises because she has a hip flexor injury and can’t do yoga. Usually that lasts an hour, then she does 20-30 minutes of cardio work. She switches up the cardio machines she uses (alternating between the bike, the treadmill and the elliptical) and doing intervals, that is, between low and vigorous intensities. She also does spin classes. All this happens five days a week. Lunch and dinner is usually vegetables or salad with some kind of protein, while for snacks she likes frozen grapes or an apple with almond butter or a side of nuts. She does admit she loves a margarita and her favourite foods include Mexican and Italian. “I eat really well and I work out, but I also indulge when I want to. I don’t starve myself in an extremist way.” As for her beauty routine, Jen is a lip balm and eye drops addict. “I have terrible allergies. I use Alcon Naphcon A. Dr. Hauschka great lip balm and By Terry Rose Balm in the pot; it’s really gooey for bee stung lips.” Another secret for her stunning good looks and health: transcendental meditation, usually for 20 minutes in the morning. She always chants and uses a mantra, although we can’t tell you what it is. Jen says she tries not to be too crazy about her routine, breaking it up sometimes with long walks and, no doubt, biking or other fun, sporty activities with her husband, Justin Theroux.

This actor definitely has the body we all want. She’s even written a book about how to stay healthy and happy – The Body Book. Cameron loves to surf, something that’s easy to do in Australia where the weather and the waves make it easy. She also sculpts her long legs and tightens her tummy by joining trainer Teddy Bass in the gym— three or four days a week, 60 minutes a session—for either Pilates, cardio, weight training, or a mix of all three. Cameron is a big advocate of healthy eating, especially as she gets older. Breakfast is scrambled eggs, toast, an avocado, an apple with almond butter, overnight oats, or a piece of chicken. She always includes protein. After she works out, she has a second meal - chicken, grains, and sautéed or roasted vegetables. Besides good nutrition and regular exercise, the actress believes we all need good sleep. But her biggest tip: move more, throughout the day, to release stress and help prevent degenerative diseases. Even if you work out, sitting eight hours at a desk is not healthy, she says.

Jessica Alba The secret to Jessica’s knock out figure is having fun with her workouts, from dance and hip-hop classes to indoor cycling and sprint intervals. “Anything where I have to do something but I can get my mind off doing it, that’s so much better for me than anything that’s repetitive. How your genes make you FAT Y

ou’ve been on the Israeli Diet, the 5/2 Diet, the juice diet and the Paleo Diet. You’ve climbed the stairmaster, walked the treadmill and pounded the pavement with a personal trainer. But, still, the stubborn kilograms refuse to budge. Sometimes diet and exercise just aren’t enough to shift weight, explains Dr Jason Free, of Surgery Gold Coast. “Most humans have evolved to “horde” nutrients following a meal since we’ve evolved over hundreds of thousands of years to live in “starvation mode”, he says. “That has been compounded by the recent industrial revolution’s production of massive amounts of carbohydrate-rich food.” In other words, there’s plenty of things around we shouldn’t eat if we don’t want our body to veer towards obesity – and stay there! What is the answer to long-term weightloss then? It seems, according to expert opinion, that it may be surgery. In the respected medical journal The Lancet, the researchers advise doctors that bariatric surgery is the only effective longterm treatment for obesity available. “Irrespective of starting weight, caloric restriction triggers several biological adaptations designed to prevent starvation,” they say. In other words, your body becomes more and more efficient at stashing kilojoules and less efficient at burning them. Your body may also have a set point that it keeps returning to – maybe a heavier weight than you would like. 28 SLIM MAGAZINE SUMMER 2017 / 2018

Also working against you is the pleasure you get out of eating your favourite, fatfilled foods. Something called dopamine, a feel-good hormone, kicks in when you serve yourself a piece of cake, or another high-glycaemic index carbohydrate. High GI means it’s converted to sugar fast, and stored as fat if you don’t use it. Evidence suggests that these biological adaptations often persist indefinitely, even when a person re-attains a healthy BMI via behaviourally induced weight-loss. “Patients for whom lifestyle change is not successful, particularly those with clinically severe obesity, should be informed about the risks and potential benefits of bariatric surgery.” So, if you can’t lose weight and keep it off, it could be time for a more permanent solution. Weight-loss surgery explained

Gastric Bypass

What it is: The upper part of the stomach is divided and the small intestine is attached to it so that food bypasses most of the stomach and upper small intestine where the digestive juices are formed. What this means in practice is that the amount of food you can eat is dramatically reduced. What to expect: Robust long-term weight-loss and improvements in diabetes and metabolic syndrome. Some diabetic patients are able to eliminate all diabetic medications within days or even hours of the operation. It is also extremely effective at treating gastrointestinal reflux.

Sleeve Gastrectomy

What it is: A resection of about 85-90 percent of the stomach, leaving only a 15mm tube of stomach and decreasing the amount of food that can be eaten. What to expect: Extremely good, rapid weight-loss. In fact, expect to see about 70 percent reduction in excess weight. Most people say their appetite is reduced after this surgery. Another benefit is that there are minimal long-term problems with this type of procedure.

Adjustable Gastric Banding

What it is: A band is placed around the upper part of the stomach to create a small pouch which restricts the intake of food to varying degrees. It is intended to provide a feeling of fullness. The benefit of this procedure is that the stomach is not removed or stapled, it is completely reversible. What to expect: Minimal invasion compared to other procedures and very satisfying weight-loss.

Revisional Bariatric Surgery

What it is: This is the correction of a gastric band to make it work better. Can also be a conversion from a gastric band or sleeve gastrectomy to a gastric bypass. What to expect: There is evidence that a gastric bypass after a band provides better and more sustained weight-loss as well as improved food tolerance and quality of life relative to conversion to a sleeve gastrectomy.


An easy way to fund weight-loss surgery

ou may have thought there were no other ways to pay for weightloss surgery than cash, credit or a payment plan. But did you know you can use your superannuation to pay for lifesaving surgery? According to a report in ABC News, up to 25 percent of patients having surgery such as gastric banding are dipping into their super before retirement in order to pay for life-saving procedures. You can apply to access your super to pay for surgery for yourself, your partner or your children. You may choose to apply for funding to cover the entire cost of the procedure or part of the cost. You can also access your partner’s superannuation to pay for your lifesaving surgery. This includes Lap Band surgery, Gastric Sleeve surgery or Gastric Bypass surgery – as well as plastic surgery to eliminate excess skin after your weight-loss. All of this can be done without biting into your everyday savings, or trying to find money you don’t have. You may know, in most circumstances, Australians cannot usually unlock their super until they reach ‘’preservation age’’, which is between 55 and 60, depending on birth date. So the fact that you can get your super for weight-loss procedures may come as a surprise.

“The process has evolved since obesity is regarded as a chronic disease associated with major comorbidities which shorten a patient’s life; therefore “life threatening”,” explains SLIM weight-loss surgery expert Dr Jason Free. With surgery, many patients face the complication of diseases such as diabetes, as well as heart disease and some cancers. That’s why, under exceptional circumstances, the Department of Human Services will assess early access on ‘’compassionate grounds’’, which include medical procedures to treat lifethreatening illnesses and chronic pain,

medical transport, mortgage assistance and home and car modifications. Super funds make the final decision to release the cash. At Dr Free’s clinic, staff arrange the paperwork for patients in the clinic so you don’t need to worry about all the red tape. Dr Free says it’s a simple streamlined process and applications take only a few weeks to get approved and that nearly all applications are given the green light. “We do advise patients to discuss with their financial advisors/accountants regarding the decision to access super,” he says.

For Patsy Monk, life is better than ever, thanks to weight-loss surgery

T

here is a myth that if you are overweight, you are automatically unhealthy. This isn’t the case; there are many people who are not trim and slim, but are fit, healthy and active. Patricia Monk is one of those people. Patsy, as she is known, says she was certainly overweight, but never unhealthy. “I wasn’t overweight as a child,” Patsy tells SLIM. “It’s just something that crept up on me over time. “It runs in my family – being chunky – so I guess it was predetermined that I would gain weight as I got older. “Even though I was overweight, I was very active and fit. I would walk the dogs a couple of kilometres every morning, I played tennis and golf. I had a very active life.” In spite of this, Patsy’s weight remained a problem in her life. She was uncomfortable, and just didn’t look and feel the way she wanted to. “I knew I had to do something,” she says. “I had learned about weight-loss surgery, and knew that it was one of the most effective ways to lose weight.”

“To me, it was an investment in my future. The price of the surgery is far less than the money I would have to pay in medication and health care later on, if I hadn’t addressed the weight.” Patsy booked in for weight-loss surgery two years ago, but cancelled the surgery. “I just wasn’t ready mentally,” she says. Then, this time last year, she knew the time was right. “I was in the right head space to have the surgery and do what was necessary.” Patsy had a sleeve gastrectomy last Christmas, and hasn’t looked back. “I followed the eating plan to the letter,” she says. “Really, it’s just about smaller portions, and after a little while it became second nature. “It is not difficult at all. I can pretty much have everything and anything I like, I just have much smaller portions.” It’s worked wonders for Patsy. She has lost 24 kilos, and feels like she is finally living her best life. “Life is amazing,” Patsy says.

“It feels like everything has turned around, and it all started with the surgery. “I was alone and quite lonely before, and now I have a wonderful man, and a beautiful full life. “I feel better than I have in years and love getting dressed up. “I have received so many wonderful compliments and my confidence is great.” Patsy says that she would not hesitate in recommending surgery to anyone. “To me, it was an investment in my future,” she says. “The price of the surgery is far less than the money I would have to pay in medication and health care later on, if I hadn’t addressed the weight. “I really believe it was a great investment in my future and I’m thrilled with the results.”

or Bradley Creighton, life has only just begun. Having struggled with his weight almost his whole life, Bradley has finally found health and happiness, thanks to the weight-loss surgical procedure SADI. Bradley told SLIM Magazine that while the procedure was far from “the easy way out”, it has worked wonders for him, and has changed his whole life. “I have been overweight since I was about ten years old,” Bradley said. That’s exactly what it was like for Bradley, who endured years of bullying before making the decision to leave school at the end of Year 10. “It was too hard to stay at school,” he said. “The bullying about my weight was getting to the point where I just couldn’t take it – so I left.” Bradley went to work for Woolworths where he found life a lot more tolerable. “The people at Woolworths were nice to me, I certainly didn’t have to endure the bullying I had at school, but my weight

continued to be a problem.” In fact, Bradley’s weight was quickly taking over his whole life. “It’s really a catch 22,” Bradley said. “Because you are so big you don’t want to go out. So you stay home and gain more and more weight. “It got to the point where I was just sitting home and getting bigger and bigger. “It was soul destroying. I would try a diet, and do good one week then nothing would change and I would get disheartened. It was really heart-breaking. “I became a shut in; I just didn’t want to go anywhere.” When he thought things couldn’t get any worse; they did. Bradley’s doctor diagnosed him with psoriatic arthritis, a condition he was told was a direct result of his weight. “I was lonely, unhealthy, unhappy and living a pretty sad life.” Bradley’s real watershed moment came when he was on holidays with his family. “I was sitting around, self-conscience, unhappy, not participating in anything, and I thought to myself ‘What kind of life is this? What am I doing?’,” Bradley said.

“At the same time my Grandmother told me that she had read about weightloss surgery, and she offered to pay for it if I wanted to do it.” This generous offer from Bradley’s beloved Grandmother prompted him to research weight-loss surgery, and it didn’t take him long to decide this was the best option for him. Although weight-loss surgery is often seen as ‘the easy way’ Bradley said that isn’t the case. “Of course the surgery itself isn’t difficult, and the recovery is quite easy,” Bradley said. “The hard work starts after the surgery, when you have to change all your old habits. “But I was determined that I would give this my all. “I knew my Grandmother had done this because she wanted a better life for me, and I was determined to make that happen. After all the diets and fads that I had tried over the years, I knew I had something that could really work – if I put in the effort.” So Bradley did everything he had too; he ate much smaller portions, followed the dietitian’s advice, and started to embrace a healthier lifestyle in every respect. It didn’t take long for the hard work to start paying off. Bradley’s weight-loss came quickly – at the time of going to print, he had already lost 55 kilos. To say it has been life-changing is an understatement. “I am so much happier,” Bradley says. “It’s actually hard for me to put it into words. I have more confidence, I don’t always feel like everyone is staring at me; judging me. “My arthritis is getting better, and I’m far more active than I ever was. “I will always be grateful to my Grandmother for doing this for me. Business mentor John Drury talks to SLIM about why work/life balance is a myth, and how to create a fulfilling lifestyle

T

he most talked-about and wellpublicised strategy recommended to manage our very busy lives is ‘work– life balance’. This term originated sometime during the early 20th century with regard to improved working conditions and shorter working hours for factory workers. It was meant to describe the idea that there should be reasonable balance between work and the rest of our lives. It implies that like a seesaw, there is an optimum point of balance that will work for each of us. So, what would you think if I told you this is all a myth? That work–life balance doesn’t actually exist? Furthermore, that in trying to chase this dream we are actually making ourselves sick?

Passion destroys balance Most high achievers are passionate about their business, their careers, and their success. Yet passion and drive are the enemies of balance. By definition, if you are passionate you are going to always be out of balance. Passion means you are likely to find it difficult to turn off your brain when you leave your workplace. Passion means your mind will often be solving business problems in the night or when you are driving the car. High achievers can be made to feel guilty by the concept of ‘work–life balance’. They might even be viewed as workaholics by the majority of people for whom work is a job: just a means to income. The concept of ‘work–life balance’ may have been well intended, but it is unhelpful in the 21st century. It pits work against life, creating an unnecessary conflict. Work is part of life, not against life. There is no seesaw that needs to be in balance. Rather, each of us has a whole life, every segment of which needs to be integrated in such a way that we can prosper and flourish.

‘Integrate’ is a much better idea For high achievers, work is connected to purpose, not just a means of making money. When passion is involved it is easy to spend time and energy working, or thinking about and planning some aspect of work. It is easy to become engrossed and lose all sense of time.

The challenge becomes how to ensure that our work does not consume us in a way that hurts our health or the people we love. There are seasons when work dominates everything, like when you start a new business, or work on a major project. There are also times when an important family issue will require more attention. Most of the time, in order to create a fulfilling life, we need to find a way to ensure there is progress in every important relationship and area of our lives. The truth is that issues that undermine or sabotage business success are more likely to come from neglected areas of your personal life than they ever are from your competitors, the economy or any external source. Like every other important area of your life, your work needs to be integrated in such a way that it does not overwhelm and hurt all the other parts of your life.

Tips to integrate work as part of your life • Map your world – Draw 10 circles on a page. Write down each of the key responsibilities you have in life; one per circle. Add circles if needed. Potential categories include: personal growth & learning, wealth creation, health & fitness, life partner, fun/leisure, friends, wider family, children, work/business, etc. You may need more than one circle for different parts of your work roles. • Decide what is important – Just as ‘homicide’ mean ‘kill a person’, so ‘decide’ means ‘to kill off options’. We really must deal with FOMO (Fear Of Missing Out). Choose what you want in life. Set boundaries around all that is important. Without healthy self-respect,

this step is very challenging for some people. (For more, read my book) • Set ‘whole of life’ goals – Once you have determined the important areas of your life, you need to proactively set goals for how you want that area to look in a year. You move towards what you focus on. Goals sharpen focus. • Make plans – A goal without a plan is a wish. Most wishes do not happen. Make a simple plan that will help you achieve your goals for each area of your life. You are best to set annual goals and make 90day plans. So much happens in our busy lives that plans need constant revision to ensure they happen. • Take consistent action – Plans are useless without action. Get your plans into your calendar. The first thing my wife and I put on our year planner is our holidays. That way they always happen.

Dr Drew Moffrey, one of the Gold Coast’s leading names in women’s sexual and reproductive health, recently travelled to Peru to give local women access to life-saving medical treatment

SLIM: Tell us how the Peru project came about, and how you came to be involved? DM: A Gold Coast GP made the trip with the same Charity, DB Peru, in 2016 and was telling me about how amazing the work they did over there was. DB Peru run several projects such as dental, general medical, domestic violence but their Women’s Health Project has just received significant funding for prominent sources recently, so they are really pushing ahead with trying to lower the rates of cervical cancer in Peru. Peru has one of the highest rates of cervical cancer in the world and these women are just in such remote communities it is all about accessibility to health care. They have run this Women’s Health Project with fantastic support but had never had a gynaecologist support them before. SLIM: How many people were in the team that went over? DM: It was quite a small team. As you can imagine with logistics the bigger the group the harder it is to move around. We were doing everything by small boats as these villages are only accessible by the Amazon or Napo rivers. Also we have to take all of our own equipment with us. That includes a generator as these villages do not have any power themselves. This trip included a film crew that are filming a documentary on the Women’s Health Project. The total group consisted of an emergency specialist from America via Poland who performed general medical clinics, a midwife out of Nashville, some of the most talented film makers from all over America. An impressive young man

from Texas who is doing an internship with DB Peru before starting medical school next year and we had two interpreters. We were held together but the heart and soul of DB Peru which is Diana and Renzo who are the President and Vice President of the organisation and they arranged and facilitate the whole trip. SLIM: What type of clinics were you running and what types of test and treatments were you providing? DM: The Women’s Health Project is about reducing the cases of cervical cancer and we know from first world countries the best way to do this is through screening. Basically, the main part of my clinics was taking as many HPV samples as possible. I would then also perform colposcopy which is looking at the cervix under a microscope and applying a solution that shows any abnormal cells. If I identified abnormal cells, I was able to treat it with cyrotherapy which is using carbon dioxide to freeze the abnormal cells. This treatment is done without anesthetic and has minimal risks associated with it. It also has good rates of cure for abnormal cervical cells. It is not the best treatment available but in the circumstances with the remote isolation these women face it is impossible to do more and cyrotherapy will stop the abnormal cells form progressing to cancer. Whilst I was there I was also doing general gynaecology and obstetric clinics so reviewing the women throughout their pregnancies and also other women who had abnormal bleeding etc. The other part of the clinic was following up abnormal HPV results from previous clinics. Unfortunately this is extremely difficult as it involves literally going from house to house trying to find the women and often they aren’t home they are out working in the fields or in a different village for the day so it is difficult to follow up but persistence means we review nearly every woman who had a previous abnormal HPV.

So many people have congratulated me on going to Peru and helping these women, but I actually feel it is the other way around. The work DB Peru does is amazing, and I feel privileged to be able to be a small part of it.

Mission of Mercy

The majority of patient presented for the HPV sample and had a normal colposcopy so that was a great thing to see. There was several patients that I had to perform cyrotherapy on for abnormal cells seen but thankfully I didn’t encounter any cervical cancer on this trip. SLIM: Please tell us why you believe this type of work is important, both generally and to you personally? DM: Generally, Peru having one of the worst rates of cervical cancer in the world, this project is just so important to change that. Thankfully DB Peru has already seen a significant decrease in the rates of cervical cancer since they have started this project and I have no doubt will continue to do so in the coming years. Personally so many people has congratulated me on going to Peru and helping these women but I actually feel it is the other way around. The work DB Peru does is amazing and I feel privileged to be able to be a small part of it. I am going to continue to work closely with DB Peru. I am already planning on another trip back to the Napo in 2018. I am hoping to take more of my colleagues with me next time I go. Eastern Way W

e’d all like to look and feel younger or just look good for our age. Have you ever thought about other nations and if they have lessons to teach us? In the West, there is growing evidence that our fast-paced, screen-based lifestyles and diet based on processed foods is behind diseases including cancer, cardiovascular disease, diabetes, anxiety and depression. But look to the ancient East, and you will find some wellness and longevity practices that are easy to put into place but will pay both short-term and long-term dividends

Eat your way healthier Fatty fish, ginger, plenty of vegetables and sea kelps often feature in the Asian diet. Scientists now know that fatty fish can help lower the risk of heart disease, improve mental ability, and protection from cancer, alcohol-related dementia, as well as arthritis. Fish oil contains the two fatty acids, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) that are believed to benefit the cardiovascular system. Ginger is a natural anti-inflammatory that also soothes the tummy while fresh vegetables are packed full of nutrients we need every day to help our body’s detox, rebuild and simply function. As for kelp, it’s superfood that contains Vitamins A, B1, B2, C, D and E, as well as minerals including zinc, iodine, magnesium, iron, potassium, copper and calcium. In fact it contains the highest natural concentration of calcium of any food - 10 times more than milk! So if you want to improve your bone health, sprinkle some of this over stir-fries, or casseroles. A word about sushi – white rice is a high glycaemic index food so try making your own delicious, rollups with brown rice. By the way, green tea that is a staple drink in many Asian cultures, is packed full of natural chemicals called polyphenols that are thought to have anti-inflammatory and anti-carcinogenic effects. Green tea is approximately 20-45 percent polyphenols by weight, of which 60-80 percent are catechins. Catechins are antioxidants that are said to help prevent cell damage. Yes, less cell damage means more health and less ageing.

Meditate your way to youth In 1960s, its founder Dr Herbert Benson, a cardiologist and an associate professor at Harvard Medical School, was able to link stress and meditation to physical health and ageing. He measured the blood pressure, heart rate, brain waves and rate of breathing of a group of people who practiced Transcendental Meditation and found that they experienced decreases in their metabolism, rate of breathing and heart rate, and had slower brain waves. These changes were the opposite of the “fight-or-flight” or stress response and Dr. Benson labelled them the “relaxation response”. Simply put, if you want to hold back the years, internally and externally, it’s the “relaxation response” that you want to aim to achieve regularly through your day. Clinical studies by the Institute have since shown the effectiveness of meditative techniques on a wide range of medical problems that tend to get worse as we age, including hypertension, pain and allergies. Says Dr Bernie Siegel, a surgeon and professor at Yale University: “Meditation tends to normalise blood pressure, pulse rate and levels of stress hormones in the blood. It raises the pain threshold and reduces one’s biological age. In short, it reduces wear and tear on both body and mind, helping people live better and longer.” A study by the Mind/Body Medical Institute of women who did 15-20 minutes a day of some kind of meditative activity even reported a 58 percent reduction in pre-menstrual symptoms and significant decreases in menopausal symptoms. They also gained a more positive attitude about their body’s changes, with fewer anxieties and negative thoughts. At a 2005 conference of neuroscientists Massachusetts General Hospital researchers who scanned the brains of 20 people who meditated regularly reported that meditators actually had thicker parts of their brain that were responsible for memory and decision making. In the same year, a study from the University of Kentucky found meditation could offset the sluggishness of sleep deprivation better than a nap, good news for those of us finding that, as we age, our energy falls short of all that we desire. So, what are you waiting for? Choose a mantra – “om”, “calm”, “peace” or whatever appeals to you - find a quiet space, get comfortable, and start practicing getting younger. 36 SLIM MAGAZINE SUMMER 2017 / 2018

Anti-ageing lessons from around the world Dan Buettner, author of New York Times bestseller The Blue Zone: Lessons for Living Longer From the People Who’ve Lived the Longest, teamed up with National Geographic, and the National Institute on Ageing, to research places in the world where people live the longest, and are healthiest. He discovered that south of Tokyo, on the archipelago of Okinawa, where the oldest living female population is found, there is not even a word for retirement. Instead there is one word that imbues your entire life, and that word is “ikigai.” Roughly translated, it means the reason for which you wake up in the morning. In the United States, it is the Seventh-Day Adventists concentrated in and around Loma Linda, California, who hold the old age record. For 24 hours every week, they stop everything and focus on God, their social network and nature walks, says Buettner. As well as taking exercise built into daily life, each of these cultures take time to downshift. “(Centenarians) in Sardinia pray. The Seventh-Day Adventists pray,” he says. “When you’re in a hurry or stressed out, that triggers something called the inflammatory response, which is associated with everything from Alzheimer’s disease to cardiovascular disease.”

Other Eastern ways to anti-age It’s not only meditation that can take years off your mind and body. Dr. Herbert Benson noted that the relaxation response can be elicited by a variety of meditative techniques, such as diaphragmatic breathing, repetitive prayer, chi gong, tai chi, yoga and progressive muscle relaxation.

DAY Wellness coach Helen Hawkes shares her tips to creating a day dedicated to your wellness

P

erhaps you’d like more energy, or you think your diet could be better. Maybe you have a lingering health problem that you’re not sure how to address. Or, then again, you may feel quite well but want to make sure you stay that way in the future. Why not have a wellness day where you have a good look at how you care for yourself and what you can do to improve it. You might even decide that you’d like to see a nutritionist, a naturopath or a wellness coach like me. Here, some suggestions for your schedule.

A Wellness Day SCHEDULE 1. Begin with a warm shower and some gentle exercise – a walk somewhere scenic is good or how about an ocean swim. 2. Indulge in a leisurely, nutritious breakfast such as organic veggies – we like kale, mushrooms, garlic and tomatoes sautéed in coconut oil. Or you may choose a bircher muesli with delicious, fresh fruit. 3. It’s time to set your wellness goals. 4. Make lunch a multi-coloured salad that includes a plant protein such as chickpeas or a lean animal protein such as eggs or fish. Using organic produce is

38 SLIM MAGAZINE SUMMER 2017 / 2018

always better because your body doesn’t have to detox the chemicals used to spray fruit and vegetables. 5. More gentle exercise – why not try a Pilates or Yoga session. 6. Don’t forget afternoon tea – make your own chai, or a protein smoothie while you review your diet. How about investing in some new, healthy cookbooks, or checking out an app like Yummly. 7. Shop for healthy ingredients and supplements to continue your commitment to good health.

8. Treat yourself to an aromatic bath. Use a couple of drops of your favourite essential oil, or try lavender for healing and soothing, or ylang ylang for stimulating feminine energies. 9. Enjoy a delicious dinner, such as roast veggies with wild-caught fish or organic chicken. 10. Read a book, or sit and meditate, then turn in for an early night. Today is a good day to have a break from screentime which can interfere with your sleep hormone melatonin.


Set Your Wellness GOALS Sit in a quiet room with a pen and paper and begin to ask yourself some questions about all areas of your life – physical, emotional, spiritual, career and diet. You should allow at least 40 minutes for this process and you should make sure that your mobile phone is turned off and there are no other disturbances. Ask yourself: • What is your digestion like? (Do you suffer from indigestion, or flatulence, or even stomach cramping?) • How would you rate your energy levels? (Do you have enough energy to do everything that you want?) • Do you suffer from regular colds and flu? • What about aches and pains? • How’s your sleep – are you able to relax well or do you often wake feeling tired? • Do you have a sense of purpose or a deeper connection to what you do in your

everyday life, for example, in your career or as a wife and mother? Of course this is just a start. You may also like to think about whether you suffer from any allergies, if you have bowel troubles like constipation or diarrhoea, whether your skin is clear and healthy, if you have any family health issues you need to deal with, and whether there are any other physical or emotional issues that are affecting your well-being. Once you have defined where your life is out of balance, you can decide what you would like to change and identify therapies or life changes that can help you reach your goals. It’s always good to start with baby steps – don’t try to tackle everything at once. Remember, it’s also important to affirm to yourself what a healthy, happy person you really are and have gratitude for what is right in your life.

Review Your DIET Most people want to improve their diet. Here’s some suggestions • Maximise fresh, organic greens. Try to have a least one, large, leafy green salad a day with plenty of these as well as young beets, carrots, and even sweet potato. Invest in a juicer and get extra veggies that way. Try adding ginger or turmeric for extra antioxidant and anti-ageing power. • Wheat grass and other cereal grasses can help to detoxify the liver of heavy fats and foods used in the winter. Try a shot of them in a freshly squeezed juice. • Switch ordinary table salt to celtic sea salt, which can actually help you absorb minerals. • Invest in a water filter and drink at least 6 to 8 glasses of water a day.

• If you have a sweet tooth, now is the time to cut down on refined sugar. Eat fresh fruit like cherries, bananas, oranges, or plums instead. If you must have sweetener, try a little Stevia. • Include herbs like basil, marjoram, rosemary, caraway, dill, bay leaf and thyme in your cooking. Foods like onion and garlic and herbs like turmeric, cumin, ginger and cardamom are also good spring foods. • Reduce the amount of red meat you eat and try to add in more plant protein such as chickpeas and lentils. Studies prove vegetarians have less cancer and heart disease. • Replace coffee with dandelion root tea, which cleanses the liver, or delicious herbal teas in your choice of flavor. There’s plenty of delicious choices now.

e all love the warmer weather and being outdoors at the beach, or for a lunch or barbecue with

friends. But while a little bit of sunshine – about 30 minutes – is good for boosting our supply of happiness and bone builder, Vitamin D, too much can be a real health hazard especially for those who have fair skin and blue or green eyes. Skin cancer occurs when skin cells are damaged, for example, by overexposure to ultraviolet radiation from the sun. In 2014, 2067 people died from skin cancer in Australia, 1467 from melanoma and 600 from non-melanoma skin cancers. While those statistics aren’t good, the great news is that you can prevent yourself being one of them.

Get a skin check Having an annual skin check with a skin specialist can identify small problems so they don’t become major health issues. Thankfully, 95 percent of skin cancer is 40 SLIM MAGAZINE SUMMER 2017 / 2018

curable if found early, says the Cancer Council. Freckles are harmless; while sunspots (actinic keratoses) and some moles – dysplastic nevi – can spell trouble, says NSW oncologist and cosmetic physician Dr May Marr. Sunspots have the potential to turn cancerous, she says, although the probability is low, while dysplastic nevi can increase the risk of skin cancer. Sunspots are scaly spots, which are red or occasionally brown in colour, and appear on areas of the skin that are most frequently exposed to the sun such as the face, ears, neck, forearms and hands. Dysplastic nevi are often most notable by their number - most people have between 10 and 40 normal moles or nevi on their body but those with the troublesome type (about one in 10 people) may have more than 100. Use the ABCDE method to decide whether a mole or spot spells trouble. “It stands for asymmetry – troublesome moles are usually not asymmetrical; border – irregular is bad; colour – one colour is good; diameter – bigger is worse; and elevation – flat is better than raised,” says Dr Marr. You’re on the lookout for crusty, nonhealing sores, small lumps that are red, pale or pearly in colour, new spots, freckles or any moles changing in colour, thickness, or shape over a period of weeks to months,

especially those dark brown to black, red or blue-black in colour. If you do find these types of spots, don’t panic. Your doctor will refer you to a skin specialist.

Seek shade Stay out of the sun when you can. If you’re at an outdoor café, choose the table with the sun umbrella. At the beach, look for a shady tree. You may have seen Asian women using an umbrella to shade them while they are walking around in summer. This is one reason they have such beautiful skin.

Dress for the sun Buy yourself a fabulous, wide-brimmed hat and act like you are in Europe! A glamorous pair of designer sunglasses that meet the Australian Standard AS 1067 will help protect eyes from UV damage while a light, long-sleeved cotton shirt can be both stylish and sun smart. Cotton trousers are also good on a sunny day. Again, look for lightweight and choose a light colour like white for coolness. As for swimmer, look for UV resistant fabrics and use a cover-up unless you’re in the water. JOINT EFFORT Think hip, knee and joint problems are only for the elderly or elite athletes? Think again. Dr Andrew Letchford, a hip and knee orthopaedic surgeon, discusses the importance of taking care of your joints.

D

r Andrew Letchford is a leading expert in arthroplasty ( joint replacement), knee reconstructions, sports injuries and acute orthopaedic trauma. He says he has seen a rise in these types of conditions in recent years, and while he offers a range of surgical solutions, he advises that prevention – rather than cure – is always the best option. SLIM: What are the most common conditions you see on the Gold Coast? AL: Hip and knee arthritic pain and knee injuries are the most common. SLIM: There is a general idea that hip and knee problems come with old age; is this correct or are you seeing increased younger patients? AL: It is correct that joint degeneration both of hip and knees is a problem that comes with old age, but I am also seeing quite a few younger patients with knee problems due to injuries, either at work or because of exercise related activity such as gym or group training sessions. SLIM: Could you tell us about some of the advancements that have been made in recent years in hip, knee and joint surgery? AL: Surgery is quite an exciting field to work in. It is at the cutting edge of modern medicine, and orthopaedics crosses over into fields of engineering and design including robotics and materials. I fully expect that within 12-18 months, I will only be using robotic surgery on the Gold Coast. This will allow us unparalleled precision in arthroplasty, joint replacement surgery. We will be able to individually size, place and align the prosthetic componentry based on the patient’s own CT scan with micro adjustments of 0.2 of a millimetre. SLIM: Do hip and knee conditions often go untreated, with patients just suffering in silence?

AL: Yes. Patients will frequently avoid dealing with some of their joint issues fearing this will require inevitable surgery. However, there are some non-surgical options that a good general practitioner can provide advice on. SLIM: What are the usual recovery times and patient outcomes for common hip and knee conditions? AL: In simple procedures such as keyhole arthroscopy, patients are admitted for day surgery. It takes two weeks for the wounds to heal, and depending upon your work requirements, a return to work within days or weeks is usual. Hip replacements and knee replacements require a bigger commitment. Patients can expect to go home five to seven days after surgery once they have satisfied physiotherapy requirements. Again, it takes two weeks for the wound to heal. By four to six weeks most patients are returning to driving their vehicles. SLIM: Could you offer any preventative advice to patients? AL: Keep fit. Whatever works for you, the individual, try and continue. If you are ultimately forced to decide upon a surgical options, then the best thing you can do for your surgeon, anaesthetist and rehab team is to be in optimal physical shape. SLIM: Could you tell us any sports or activities that a person should avoid if they have knee, hip or joint pain? AL: I don’t like to limit people, and a recent study found no evidence that running was correlated with knee arthritis. Nevertheless, I personally feel that my knees don’t like running anymore, but cycling and swimming are fine. Consequently, I have been swimming almost every day.

It is accurate to 0.2 millimetres. “With this Robotic-Arm Assisted Surgery, my patients are routinely going home on the second day after surgery.”

If you do have a sitting job, get up at least every 30 minutes and walk around, go for a glass of water or, even better, get outside for five minutes. You also need more before work or after work activity. Join a sports team, go the gym, get a walking buddy or even put an exercise bike or rebounder in your lounge room and use it instead of sitting on the sofa. You may also like to get a standing desk but be aware that prolonged standing can also have adverse health effects - it can be harder on the heart and circulatory system as well as the legs. The answer is to mix standing and sitting.

o you already stopped smoking, gave up fried foods and cut down on sugar and alcohol. You’re pretty healthy, right? But how many hours a day do you sit down? How to get along with people you

don’t like L

et’s face it, chances are you’re not going to like everyone you work with; or have to socialise with for that matter. Most of us are likely to find ourselves forced to spend time with people we would rather not. The simple truth is we can either suffer through each interaction, or find ways to get along. To ‘get along’ with someone broadly means to be on friendly terms with them. When it comes to colleagues, it largely means the ability to work in a spirit of cooperation and get the job done to the best of your collective ability. Getting along with a relative or a ‘friend of a friend’ you don’t particularly like, on the other hands means finding ways to enjoy their company, or at the very least avoid unnecessary stress and angst every time you get together.

Choose your attitude The key to getting along with anyone lies in your ability to choose your attitude. Of course, their attitude matters also, but the reality is you can’t control other people. Focus on what you can control; that is your own thoughts, emotions and behaviour. So many of us waste energy thinking and talking about people we don’t like. How often do you replay annoying events or conversations in your mind? Do you ‘roleplay’ scenarios in your mind about the conversations you intend to have with some people? Do you imagine yourself winning an argument with your nemesis? Do you allow your emotions to build as you invest in the drama unfolding in your mind? We all have the power to choose the thoughts and emotions we invest in. The ability for anyone to offend us or drain our 48 SLIM MAGAZINE SUMMER 2017 / 2018

spirit entirely depends on our response. We choose how the words and actions of other people make us feel. Much like the teasing big brother or sister, they only win if you allow them to upset you.

Pick your battles While of course it matters to stand up for ourselves when being mistreated, in many circumstance we can simply choose to ignore the things that otherwise upset us. We have the choice to simply walk away and disengage rather than wade into an argument. We can choose to let thoughtless comments or unintentionally offensive remarks ‘go through to the keeper’. Choosing for example to see someone’s words as ill-considered is healthier for our relationship with them, than assuming their actions are malicious.

Judge carefully Ask yourself if you are being unfairly judgmental. Sometimes the actions we see as wrong are simply different to the way we would approach things. Reflect on why you don’t like the person and challenge any unfounded assumptions or unconscious biases you may have. For example, the woman you perceive as being attention seeking, may be simply talkative and unaware that her enthusiast sharing of stories about her life is coming across as insufferable self-indulgence.

Reserve judgement Our experiences of people quite reasonably form expectations of them in the future. Be careful to not allow baggage from the past to cloud your view of someone’s potential. We all make mistakes, maybe with a little

forgiveness and relaxed expectations, you can learn to like some, if not all aspects of the person they are.

Build bridges Look for ways in which you can build trust, respect and rapport. Common interests are a safe place to start. Find out things about the person you find interesting or respect. This can be particularly challenging with some people, but appreciate the good that can be found in most people and give credit where it is due. Rapport can be built by finding common ground as well as by being empathic. However, it’s important to understand that most rapport-building happens without words and through non-verbal communication channels. People build rapport subconsciously through nonverbal signals, including eye contact, facial expressions, body positioning and tone of voice.

Weight-loss surgery is proving to be life changing for many overweight people, but the resulting excess skin can lead to physical and emotional problems. The Lotus Institute offers a range of surgical and non-surgical solutions.

“This has led to another area of plastic and reconstructive surgery called Massive WeightLoss Surgery, where areas of excess skin can be resected in all or some of these areas.” Dr Widdowson is an expert in such procedures and says a patient can be transformed from an internally “slim” individual whose skin seems far too big for them, to an eternally grateful patient who feels confident and can present to society the body they feel they have inside. “These procedures, of course, are not confined to the “massive” weight-loss patient, but also to the individual who has developed some droopiness of breasts, abdomen, thighs, or arms from multi-pregnancies and fluctuating weight (5-10 kilos),” Dr Widdowson says. MISO KING PRAWNS WITH SESAME & PICKLED GINGER SUGAR SNAPS WHY WE LOVE IT Ginger is a staple ingredient in the Midlife Kitchen, and here we use the pickled version more commonly found sitting alongside sushi and wasabi. We adore its delicate flavour and elegant ballerina-pink colour, an unexpected complement to the clean crunch of sugar snaps in this quick, bright dish. We’ve used king prawns here, but chicken would work well for a great low-cal, highflavour lunch. SERVES 2 8 large raw peeled king prawns 1 tsp coconut oil 2 tbsp rice vinegar or mirin

FOR THE MARINADE

2 tbsp brown miso paste 2 tbsp soy sauce 2 tsp sesame oil 2cm piece of fresh root ginger, peeled and finely grated juice of 1 lime

FOR THE SALAD

100g sugar snap peas 100g mangetout peas sea salt flakes 2 tbsp pickled ginger, from a jar 2 tbsp sesame seeds Combine all the marinade ingredients in a bowl and add the prawns. Cover with cling film and leave to marinate in the fridge for at least 10 minutes, or several hours if you have time.

Cook the sugar snaps and mangetout in a saucepan of salted boiling water for 2 minutes until just tender. Drain and refresh in very cold water (this will help retain their colour and crunch). Drain well and pat dry with kitchen paper, then slice on the diagonal and transfer to a bowl. Combine with the pickled ginger and sesame seeds. Heat a griddle pan until hot, add the coconut oil and prawns, including the marinade, and fry for 1 minute or so on each side until they turn pink and are cooked through. Remove the prawns from the pan and keep warm. Add the rice vinegar or mirin to the pan, stirring in any sticky bits from the base of the pan. Serve the prawns with the pretty salad and drizzled with the pan juices.

ichelle Bridges wants to start the conversation that no one seems to be having. In her new book Keeping it OFF, she teams the latest scientific findings with knowledge she has gained from working with thousands of people over many years to give us the truth about long-term weight-loss. It’s not simply about ‘calories in vs calories out’, but rather developing routines and positive habits around food and exercise that will keep you consistently and confidently in your healthy weight range for the rest of your life. SLIM spoke to Michelle about all things health and fitness.

What was it that first drew you to health and fitness? As a kid, I went to a bunch of different schools, and always being the new kid I got bullied quite a lot. Getting into sport and joining school sports teams was a way to feel good about myself and it also ended up stopping the bullying because I proved to be good at sports. How did you become a ‘celebrity’ trainer? Was it a goal to have such a high profile, or did it happen organically? I got my break becoming the female PT on Australia’s The Biggest Loser over a decade ago. I didn’t have a goal to become a celebrity trainer, I did (and still do!) have a powerful drive to help as many people as possible feel better about themselves by becoming fit and healthy. I knew that getting on TV would help me do that on a much bigger scale than I would otherwise be able to do, so when the opportunity came up, I jumped at it. As a result of TBL and the profile it gave me, I was able to branch into my online fitness and nutrition programs 12WBT and Voome, create my MB Active range, bring out a bunch of exercise DVDs, and write a number of books like my latest one Keeping It OFF which is in stores now. All of these things have again been done with the central theme of ‘how can I help people become fit and healthy and live their best lives?’. The knock on effect from all that is that my profile has continued to grow.

Is there one golden rule that everyone – of every age and ability – needs to adhere to for health and fitness success? I don’t know that there’s one blanket golden rule, but I’m a huge believer in committing to just starting where you are, taking the first step. Everyone can do something you don’t have to be Julia Child cooking a different cordon bleu recipe for every meal, but you can do simple batch cooking at home to cover off multiple meals each week. In Keeping It OFF I have a whole section of batch cooking, to show people how easy it is. Hand in hand with taking the first step, is consistency - once you’ve taken the first step, keep stepping! So again if you think about batch cooking, if you do that consistently every week, you’ll soon have a freezer and fridge full of meals so you always have food on hand, and don’t have to get takeaways. In Keeping It OFF I also have meals that are freezer friendly marked as such, so you know which ones you can keep in your freezer. CHOC-HAZELNUT CREAMED RICE PREP 5 MINUTES, COOK 5 MINUTES

This recipe tastes delicious made with leftover cooked jasmine rice or medium grain white or brown rices: just remember to adjust calorie counts according to the different types of rice. I use ‘60 percent less fat’ cream for cooking. 2 cups cooked brown basmati rice ¼ cup chocolate hazelnut spread ½ cup ‘60 percent less fat’ cream for cooking 125 g raspberries 1. Place the rice, hazelnut spread and cream in a saucepan over low–medium heat. Cook, stirring, for 5 minutes or until well combined and hot. 2. Serve topped with raspberries.

LEMONGRASS BEEF SALAD PREP 15 MINUTES, COOK 20 MINUTES

Grill the beef and vegetables for this dish on a barbecue for the perfect summer meal. 1 cup brown basmati rice 500 g diced lean beef ½ teaspoon caster sugar 2 teaspoons ground white pepper 1 stalk lemongrass, finely chopped 1 cm piece of ginger, finely grated 1 green capsicum, seeded and thickly sliced 1 red capsicum, seeded and thickly sliced 1 red onion, cut into wedges 1 butter lettuce, leaves separated 1 telegraph cucumber, halved lengthways, seeds scraped and thinly sliced diagonally ½ cup mint leaves 2 limes, halved crossways 1. Place the rice and 2 cups of water in a saucepan and bring to the boil. Reduce the heat and simmer for 20 minutes or until the rice is just cooked. 2. While the rice is cooking, preheat a large chargrill pan over medium–high heat. 3. Place the beef, sugar, pepper, lemongrass and ginger in a bowl and toss together until coated. Chargrill for 4 minutes, turning occasionally, or until golden on all sides. Transfer to a large heatproof bowl and leave to stand, covered. 4. Chargrill the capsicum and onion, in batches, for 3–4 minutes until just tender and golden. Add to the chargrilled beef along with the rice and toss well to combine. Season with salt. 5. Divide the lettuce leaves, cucumber and mint among serving plates and top with the beef mixture. Serve warm, squeezing the lime halves over.

CRUNCHY PESTO WINGS AND BROCCOLI PASTA PREP 20 MINUTES, COOK 50 MINUTES

You can make this recipe with chicken tenderloins instead of chicken wings if desired. 8 small chicken wings ¼ cup panko (Japanese) breadcrumbs 1 tablespoon basil pesto 1 tablespoon pine nuts, chopped BROCCOLI PASTA 125 g dried elbow macaroni 400 g broccoli florets 1 cup small basil leaves juice of ½ lemon 20 g parmesan, finely grated 1. Preheat the oven to 200°C (180°C fan-forced). Line a large baking tray with non-stick baking paper. Place the chicken wings on the prepared tray. Bake for 30 minutes. 2. Place the panko, pesto and pine nuts in a bowl. Season to taste and stir until well combined. Sprinkle over the chicken wings. Bake for a further 20 minutes or until the chicken is cooked and golden. 3. Meanwhile, to make the broccoli pasta, cook the macaroni in a large saucepan of boiling water for 6 minutes. Add the broccoli and cook for a further 2 minutes. Drain well, then return to the pan, off the heat. Add the basil, lemon juice and parmesan. Season to taste and stir until well combined. 4. Divide the broccoli pasta among serving plates and top with the chicken wings. Serve.


Vegetarian delights SAUTEED MUSHROOMS, SILVERBEET & CHICKPEAS WITH YOGHOURT AND TURMERIC DUKKAH 1 tablespoon olive oil 1 small onion, peeled, thinly sliced 3 large cloves garlic, very thinly sliced 200g mixed mushrooms (eg. shiitake, oyster, king brown), wiped, sliced 1 bunch silverbeet, leaves coarsely chopped 400g can chickpeas, rinsed and drained 1 medium red chilli, seeded, finely chopped or chilli flakes (optional) ½ cup (125g) Jalna Greek Yoghourt, plus extra to serve Salt and cracked black pepper, to taste Spiced turmeric dukkah mix, to serve METHOD Heat a large frying pan over a moderately low heat. Add oil, onion and garlic and saute, stirring often, until softened but not browned, about 5-6 minutes. Increase heat to moderately high, add sliced mushrooms and cook for 2-3 minutes until just softening, stirring occasionally. Add silverbeet, in batches and cook until just wilted. Stir in chickpeas, chilli, Yoghourt and seasoning, and warm through, without allowing it to boil. Serve with extra dollops of yoghourt, sprinkled with spiced turmeric dukkah mix.

QUINOA CRUSTED VEGGIE CAKES WITH HORSERADISH YOGHOURT 400g can cannellini beans, rinsed and drained 400g can chickpeas, rinsed and drained 1 cup coriander leaves 1 medium red chilli, seeded and coarsely chopped 1 clove garlic, crushed 1 egg, lightly beaten 1 tablespoon Jalna Greek Yoghourt 1 cup cooked amaranth or quinoa ⅓ cup (55g) edamame, blanched ⅓ cup (55g) green peas, blanched 1 green onion, finely sliced Salt and cracked black pepper Vegetable oil for frying or oil spray Cornichons, lemon wedges and herb sprigs, to serve (optional) METHOD Puree cannellini, chickpeas, coriander, chilli, garlic, egg and Yoghourt in a food processor until coarsely mashed but mixture holds together. Place mixture in a large bowl and add amaranth or quinoa, edamame, green peas, green onion, salt and pepper. Shape approximately ¼ cup of mixture into balls and flatten slightly. Dip into flour, dusting off excess, dip into egg and Yoghourt mix, then roll in quinoa flakes. Shallow fry over a medium heat or spray fritters with oil and bake on a baking tray lined with baking paper in 220°C/200°C fan forced oven, for 20 minutes or until golden, turning halfway through. Serve with horseradish Yoghourt, lemon wedges and herb sprigs.

RAINBOW VEGETABLE CHIPS WITH HARISSA YOGHOURT DIP 1 medium parsnip 1 medium swede 1 medium beetroot 1 medium sweet potato 1 medium potato ¼ cup (60ml) extra virgin olive oil Zest of ½ orange ¼ cup (60ml) fresh orange juice 1 tablespoon chopped thyme or rosemary ½ teaspoon sea salt METHOD Preheat oven to 200°C/180°C fan forced. Line two baking trays with baking paper. Using a sharp knife or mandolin, slice all vegetables into thin, even rounds, about 2mm thick. Mix the oil, orange zest, juice, thyme and salt in a large bowl. Add the potatoes, parsnips and swedes and toss to coat well. Spread in a single layer on one baking tray. Repeat the process with the beetroot and sweet potato, placing them on the other baking tray. Bake the beetroot and sweet potato for about 25 minutes and the potato, parsnip and swede chips for about 15 minutes, or until golden. Remove from the oven and transfer to wire racks to cool. HARISSA YOGHOURT DIP (makes approx. ⅔ cup) ½ cup (125g) Jalna Greek Yoghourt 1 ½ teaspoons harissa paste 2 teaspoons honey or rice malt syrup, or to taste 1 ½ tablespoons lemon juice Pinch salt To make the Harissa Yoghourt Dip, place all ingredients in a bowl and mix to combine.

Tips - Chips can be stored in an airtight container for 2-3 days, but they will lose some of their crunch. Use even-sized vegetables so the chip sizes match well. Vegetables could also be cut into wedges but increase roasting time.

VEGETABLE FRITTATA WITH BLACK SESAME AND HERB YOGHOURT

1 tablespoon olive oil 250g red baby potatoes, skins on, very thinly sliced 250g sweet potato, very thinly sliced 1 red onion, peeled, thinly sliced 2 medium chillies, seeded, finely chopped Salt and cracked black pepper 125g broccoli florets 1 cup green peas 12 large eggs, whisked ⅓ cup (80g) Jalna Greek Yoghourt ½ teaspoon ground turmeric Zest of 1 lemon 1 tablespoon black sesame seeds, toasted Micro herbs, to serve (optional)

HERB YOGHOURT 1 cup (250g) Jalna Greek Yoghourt ¼ cup chopped mint leaves 1-2 teaspoons lemon juice, to taste Salt and pepper, to taste METHOD Make the herb yoghourt by combining all ingredients. Preheat grill to high. Heat the oil in a large ovenproof 30cm heavy based frying pan over a medium heat. Stir in the potatoes, sweet potato, onion and chilli, with salt and pepper. Cover and cook until the potatoes are nearly tender, scraping along the bottom of the pan occasionally, 5-7 minutes.

Add the broccoli and peas and cook a further 2-3 minutes, covered. Whisk the eggs, ⅓ cup Jalna Yoghourt, turmeric, zest, salt and pepper and pour over the potato mix. Reduce heat to moderately low and cook until the eggs are just set, carefully lifting the frittata and tilting the pan so the uncooked egg runs to the underside. Place pan under a hot grill for a few minutes, until the top of the frittata has puffed up and set. Serve in the pan, warm or at room temperature, dolloped with herb Yoghourt and sprinkled with black sesame seeds. Add micro herbs, to serve (optional).

ROASTED HEIRLOOM CARROTS WITH LABNE AND PESTO 1 cup (250g) Jalna Greek Yoghourt (makes about 125g labne) 50g mixed seeds (eg. sunflower and pepita) 1 teaspoon coriander seeds 3 bunches coloured heirloom carrots, tops attached, well washed 2 red onions, peeled, cut into wedges 1 tablespoon olive oil Salt flakes and cracked black pepper 1 handful of basil leaves 2 garlic cloves, peeled 1 tablespoon honey or rice malt syrup 3 teaspoons lemon juice, plus extra 50g parmesan, finely grated ¼ cup (60g) Jalna Greek Yoghourt Micro herbs, to serve (optional) METHOD Make labne by draining Yoghourt overnight in a strainer lined with muslin cloth, a tea towel or Chux over a large bowl. Reserve whey for other recipes. Preheat oven to 210°C/190°C fan forced. Toast the mixed seeds and coriander seeds in a dry frying pan until fragrant and lightly coloured. Set aside to cool. Cut the green tops off the carrots leaving a 2cm stalk on each one. Reserve a generous cup of carrot leaves from the carrot tops, discarding the stalks. Large carrots could be cut in half lengthways, to even out the cooking time. Toss the carrots and onion in oil, season and bake for 1525 minutes (depending on size), until tender and golden. Meanwhile, make the pesto. Puree the carrot tops, basil, garlic, mixed seeds, coriander seeds, honey and lemon juice, until the mixture forms a paste. Add the parmesan and Jalna Yoghourt and puree briefly until combined. Add extra yoghourt, olive oil or water if a thinner consistency is preferred. Toss some pesto with carrots and onion, with extra lemon juice, salt and pepper, to taste. Serve on a platter with labne and extra pesto on the side.

CHAI TURMERIC CHIA BREAKFAST BOWL 3 tablespoons chai tea 1 cup (250g) Jalna Greek Yoghourt, plus extra to serve 1½ cups (375ml) unsweetened rice or almond milk, plus extra to serve 3 tablespoons honey or rice malt syrup 1 teaspoon lemon juice, or to taste ½ teaspoons ground turmeric ½ cup (100g) (white) chia seeds 200g tub Jalna Coconut Yoghourt, to serve Figs, shaved fresh coconut, extra honey (optional), to garnish METHOD Place the tea into a mug and add ½ cup boiling water. Leave 2-3 minutes to brew then strain the liquid into a medium bowl, discarding the solids. Add the Yoghourt, milk, honey, lemon juice, turmeric and chia seeds, mix to combine and refrigerate overnight. In the morning stir in extra Yoghourt and/or milk if a thinner consistency is preferred. Divide between bowls and top with Jalna Coconut Yoghourt, figs, fresh coconut and honey (optional) to taste. 62 SLIM MAGAZINE SUMMER 2017 / 2018


SMOKED BEEF RIB SURF ‘N’ TURF INGREDIENTS 2 racks beef short ribs (4 bones per rack) 2 tablespoons peanut oil (or olive oil) 100g unsalted butter 4 bugs, sliced in half lengthways to provide 8 halves 2 tablespoons freshly cracked black pepper 2 tablespoons kosher salt 1 garlic clove, finely diced 100g of unsalted butter ¼ bunch coriander (cilantro), chopped zest of 1 lime RUB 2 tablespoons freshly cracked black pepper 2 tablespoons kosher salt 2 tablespoons brown sugar 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon smoked paprika

CREAMY MASH 2 large sweet potatoes 125g unsalted butter 1 tablespoon kosher salt 1 teaspoon freshly cracked black pepper METHOD Preheat a barbecue smoker to 140°C. Remove the silver skin from the top of the short ribs and remove the membrane from the underside of the beef ribs. Massage the oil onto all sides of the ribs to apply a light coating. Combine the rub mixture in a small bowl or container and then evenly apply to the oiled ribs. Depending on the size of the ribs, more mixture may be required. Ensure all the rib meat is covered with the rub, concentrating on the top and sides of the meat and then the underside. Place the ribs bone down in the barbecue smoker and add hickory wood chips or chunks in small batches in the first 2 hours, being careful to ensure a constant but light and even smoke.

Allow the ribs to cook for a further 1 hour (3 hours total), then remove from the smoker and double-wrap with foil and butter. Cook in the foil for a further 3 hours. Remove the head and innards from the bugs and slice the bug in half, lengthways. Season the bug with kosher salt and pepper and shallow-fry meat side down in a grill pan with the finely diced garlic and 100g of unsalted butter. Once cooked, remove the meat from the shell and keep the butter for a finishing sauce. Peel, cube and boil the sweet potatoes until soft. Drain the water, add half of the butter and season with salt and pepper and stir well. Continue to add the butter until the potato mash is creamy, thin and slightly runny. Add a dash of cream or milk if required to thin the mash. Remove the beef ribs from the barbecue and carefully open the foil to expel some steam to prevent further cooking. Lightly close the foil back over the ribs and rest for 20 minutes before slicing and serving. Serve the beef ribs sliced off the bone, topped with the bugs tails, garlic butter finishing sauce and coriander and lime zest, to garnish.

CHIPOTLE LAMB & CORN SALSA SOFT TACOS INGREDIENTS 2 tablespoons peanut oil 300g cooked pulled lamb rib meat 4 soft tacos (flour or corn) ½ cup chopped coriander (cilantro) SALSA 1 avocado, chopped ½ white onion, finely chopped ½ cup corn kernels 2 tablespoons olive oil ½ teaspoon kosher salt ½ teaspoon freshly cracked black pepper ½ teaspoon agave sugar SAUCE ½ cup light sour cream ½ chipotle pepper juice of ½ lime ¼ teaspoon kosher salt ½ teaspoon agave sugar

Ingredients 2 racks pork ribs 1 tablespoon kosher salt 1 teaspoon finely ground freshly cracked black pepper 100g unsalted butter 2 tablespoons plain (allpurpose) flour 3 spring onions (scallions), finely chopped 375ml apricot nectar 200ml beef stock 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon celery powder 2 tablespoons hot sauce 1 cup bean sprouts, trimmed 1 red chilli ¼ bunch coriander (cilantro)

METHOD Remove the membrane from the underside of the pork ribs and season lightly with salt and pepper. Brown in a frying pan. Melt the butter and mix with the flour. Add all of the ingredients, except the bean sprouts, chilli and coriander, to a pressure cooker and stir well to combine. Add the pork ribs and cook for 45 minutes. Remove the pork ribs from the soup and coarsely pull the pork rib meat from the bones, discarding the bones. Return the pulled pork to the soup and allow to stand for 15-20 minutes before serving. Serve with bean sprouts, finely sliced red chilli and coriander to garnish.

However there are actually a ton of grocery favourites and meals that you can make vegan friendly, like sushi, Pad Thai, pizza and cookies.

NUT ALLERGIES

Australia actually has a relatively high prevalence of nut allergies, with 1 in 50 children allergic to peanuts. Although the foods you need to avoid might seem straightforward, nuts often find their ways into foods you wouldn’t imagine. Even chilli can be thickened with ground peanuts. We wanted to create a community that supports businesses both small and large that are making positive changes to the way business is done. We have built an online marketplace that will become a one-stop ethical shopping platform. We are focused on creating a community filled with like-minded people from all areas from artisans, makers, fair-trade advocates to those who are driving the way in sustainable lifestyle products and living. What motivated you to establish KNOWN EFFECTS? In our travels around the world in our early 20’s, naïve to say the most, we were confronted with atrocious working conditions in some countries we had visited. When we started to look further into the process of how clothing is

made in manufacturing companies and we were incredibly disheartened to learn the answer that that ‘bargain’ $3 shirt was actually only possible because of horrendous working conditions, next to nothing pay rates, child labour… these kids would have been the same age as my children now and I look at them and couldn’t imagine having to put them into that environment. Everything about some of these places made us angry, sad but motivated in wanting to make a difference. From ingredients to packaging, have you noticed to shift in consumers favouring natural and organic products over others to achieve a more sustainable life? Packaging is one of our worst enemies. As consumers we buy a product we want but don’t put much thought into the packaging because we just want what is inside, no real

thought about way happens when we throw the packaging away. Annie Leonard quoted that “There is no ‘away’. When we throw anything away it must go somewhere”. She is right, it has to go somewhere, and that place is into our earth, to undeveloped countries that don’t have the resources or capacity to handle the rubbish, into the air we breath and the ocean we are surrounded by. This ‘away’ is slowly coming around full-circle and will impact us all if we don’t take control, educate and enforce changes. Interestingly, even the 45 – 65 age bracket demonstrate a consumer awareness surrounding the importance of purchasing ethical, natural and/or organic products. It is not only the younger generation who are becoming increasingly aware of the dangers of chemicals in our foods, beauty products etc. The shift to purchasing natural and organic products has stemmed from consumers becoming aware of marketing loop holes surrounding product


labelling and this education has driven some consumers to properly consider what they are buying, putting into or on their bodies and back into the environment. For businesses we understand that creating sustainable products can be a major shift in an already made process however when we join forces and give each other guidance we can start to feel confident in making changes to our production to become sustainable, even when it starts with packaging.

We all know that having a pet is good fun, but there is plenty of research that shows that pets, improve the quality of life of their owners.

ccording to a report in Live Science, dogs are natural healers. From acting as a helping hand for the disabled to having a calming effect on anyone who pets them, dogs have a long history of making life better for their best friends. “There is mounting evidence that dogs, cats and other companion animals such as horses can promote psychological and physical health benefits in their owners,” Peggy McCardle, chief of the child development and behaviour branch at the National Institutes of Health told www. livescience.com. The Live Science article stated that: People who have pets have a lower risk of developing heart problems than those without pets, according to researchers at the Baker Medical Research Institute in Melbourne, Australia, who found that pet owners have lower blood pressure and cholesterol levels across the board regardless of their smoking habits, diet, body mass index or income level. Just petting an animal has been proven to help those battling an illness or suffering from depression. In fact, a 2008 American Heart Association study showed that seniors and people who had recently undergone surgery responded better to treatment and had faster recovery rates if they had contact with dogs and other therapy animals. “Pet therapy is a well -received mode of helping many varied groups, for example hospitalised youth, elderly people and HIV-AIDS patients,” Danny Joffe, a medical director at the Calgary Animal Referral and Emergency Centre in Alberta, Canada told www.livescience.com. “Such benefits

as decreased blood pressure, decreased heart rates and decreased feelings of neglect and hopelessness have all been well documented scientifically.” A study conducted this year by University of Missouri-Columbia researchers rated the emotional well-being of 200 participants using the Center for Epidemiologic Studies Depression Scale (CES-D), a commonly used test that measures depression.
