Next Door Ever since she burst on the scene as the “plus one” of Hugh Grant at the “Four Weddings and a Funeral” London premiere in 1994 in “that dress” – the form fitting, flesh baring Versace number held together by jumbo gold safety pins, Liz Hurley turned heads. The dress received global coverage and is iconic to this day. In fact, it is credited for boosting Hurley’s profile, from being virtually unknown with a single acting role to her credit, to becoming an internationally lauded style icon. Modifying electronic use is key to teens sleeping easy.

For teenagers, sleep plays a critical role in staying healthy, feeling happy, maintaining good grades, and doing well in sports. But sleep doesn’t come easily for some teens. For those who struggle, the US Sleep Foundation recommends looking at your teen’s electronic use. An increased amount of screen time throughout the day has been linked to insomnia and symptoms of depression in adolescents. This can include social messaging, web surfing, watching TV, and gaming, in addition to using the internet for schoolwork. The presence of electronic devices in teenagers’ lives isn’t going anywhere, anytime soon, so it’s important to understand its effects on sleep and how to find a better balance.

The Blue Light Effect

Electronic devices emit an artificial blue light that can suppress the release of the body’s sleep-inducing hormone, melatonin. In turn, this can interfere with the body’s natural internal clock that signals when it’s time to sleep and wake up. The more time teens spend in front of an electronic device, especially in the evening, the greater the delay in the release of melatonin, making sleep a challenge. They may experience problems falling asleep as well as difficulty staying asleep. As a result, these teens sleep fewer overall hours; over time, that sleep deprivation can lead to symptoms of depression.

Getting Back on Track Limiting overall daily screen time can help improve sleep issues, but most importantly, restricting use right before bed can play a key role in helping teens fall asleep faster

and improve sleep quality. Consider setting a digital curfew one to two hours before bedtime (the earlier, the better). Create a sleep-positive bedroom environment by encouraging teens to read before bed rather than texting to wind down. Some parents institute a tech-free bedroom policy, such as no TV, computer, or smart phone allowed in the sleeping space, at least during the night. There are many benefits to today’s techdriven world: Access to more information, the ability to connect with others in an emergency, and a chance to make friends with new people in new places. Managing the amount of time adolescents spend plugged into their electronic devices helps give them the benefits without as many drawbacks, especially when it comes to sleep. Dream body, dream life,

JUST BELIEVE Adrian Falk, advertising and PR dynamo, decided to shed kilos and add abs for his 40th birthday, and then wrote a book about his journey to inspire others. “Believe - Start living the life you have always dreamed of. Today” was penned by Adrian, who said his epiphany began in his 20s. Sick of his mundane life, he started to make opportunities happen for himself, and landed his dream job in advertising and PR in New York City. Everyone knows that getting sufficient sleep is important for your general health and wellbeing. Now research is linking poor sleep to the obesity epidemic. So does this mean that good sleep is key when it comes to making weight-loss easier? Studies have shown links between short sleep duration and obesity in adults. Increasing sleep from less than 6 hours to 7 to 8 hours per night has been associated with attenuation of weight gain. A more recent focus in sleep research is sleep variability. Previous studies have linked high variability with increased BMI and waist circumference. Sleep variability may be linked to a disruption of circadian rhythms, which is also linked with obesity. However, it is not known whether short sleep duration or a higher variability in sleep can predict less weight-loss in response to lifestyle interventions. Researchers designed a study to examine the effects of sleep duration and variability on weight and adiposity measures over 12 months.

A secondary study was designed based on the findings of the PREDIMED trial – a 6-year primary prevention trial based on lifestyle interventions for weight-loss.

In the original trial, participants were allocated to intervention or control group. The intervention group underwent a program with a Mediterranean diet with energy restriction, physical activity promotion and behavioural support. The control group consumed an unrestricted Mediterranean diet and received traditional health care. Researchers analysed the results of a subsample group of 1,986 subjects. Participants had overweight/obesity and metabolic syndrome. The average age of participants was 65 years, with 53 percent male participants and 47 percent female participants. Sleep duration and sleep variability was measured using an accelerometer worn on the wrist, which was worn for 8 consecutive 24-hour periods by participants. Anthropometric measurements were taken regularly throughout the trial, but for the purpose of the secondary study, data from

the first 12 months was used, including body weight, BMI and waist circumference. Several associations were found during the analysis. When compared to the first tertile, the third tertile of sleep variability lost an average of 0.5kg less weight, and had a BMI that was 0.2 higher on average. There was no significant difference in weight circumference between the tertiles. Participants who slept less than 6 hours per night saw a 0.8cm lesser reduction in waist circumference compared to participants who slept 7 to 9 hours. However, there was no significant difference between these two group in terms of body weight or BMI changes. The researchers concluded that adequate sleep duration was a predictor of greater success of lifestyle interventions for obesity, as was less sleep variability. Shorter sleep duration was associated with a lesser reduction in waist circumference. Greater sleep variability was associated with less weight-loss and lower reduction of BMI. What was your relationship with food? Food and I have always had a good relationship (I loved the smell and loved taste even more!) I have always loved a good serving of food, predominately a big piece of rump steak with potato bake and a small serve of vegetables for dinner and would rarely have leftovers in the house.

What motivated you to go on your weight-loss journey?

Post-surgery, what have been some of the challenges? The first two weeks were probably the hardest, having to return to work 5 days after surgery (not recommended - fainting three hours after arriving due to inadequate food intake and probably pushing myself to much). But since then, it’s just learning what I need to do to best take care of myself regarding food, hydration and rest (when possible).

And some of the benefits?

Friends of mine had already commenced their weight-loss journey. I witnessed the benefits to their health and lifestyle. Plus last year when I was in the US I had to get off a ride as the clamps would not lock me in, then having to do the walk of shame out the entrance where there were a lot of people lined up made me feel ashamed.

Besides the advantage of looking amazing, I would have to say having no real limitations on what I can do (ie going on theme park rides, not having to look at the weight limits on furniture and rides). I am still enjoying the food I consumed before the surgery ( just in smaller portions and substituting potatoes for vegetables).

How long had you battled with weight issues?

What are the improvements in your lifestyle as a result of your weight-loss?

My whole life. I was always the bigger kid, whether it was at school, on the sporting fields or even at work functions. I accepted when people told me that I was ‘just big boned’.

What health problems did you face as a result? I had extremely high blood pressure, red splotches start to appear on my skin, my high blood pressure was starting to affect my eyesight. I also suffered chronic joint pain when I tried to exercise or even lift boxes at work.

What made you decide on weightloss surgery and which procedure was the right one for you? After trying to lose weight for years with yoyo dieting and never being able to maintain results, I further researched weight-loss surgery considering all my options. I had my

How has it impacted your profession and daily routine? my diet is balanced and I am getting the required amounts of protein/nutrients etc. If I am working away from the office, I need to make sure I consider the best options available. On weekends, I make sure I always have plenty of protein snacks in case I need to consume on the run.

What is your response to people who look at weight-loss surgery as “the easy road” to weight-loss? I agree with them, then I explain that it isn’t the easy road people think, “yes” I had surgery to help with losing weight but I still need to put in the hard work to maintain and continue to lose weight. But I also put it into perspective that if I didn’t have this surgery I probably wouldn’t be here in 5 years with the road I was heading down.

Any regrets? NONE whatsoever. Dr Free has given me a new lease on life, one that I intend to grab with both hands and run with.

New Lease on Life Jason Free is a General Surgeon who has specialised in weight-loss (Bariatric) surgery and Hepato-Pancreatico-Biliary Surgery. Dr Free has obtained specific weight-loss surgical training in Australia and overseas, dealing specifically with revisional bariatric surgery. Here, Dr Free shares his insight into the benefits of weight-loss surgery. What was your career path to weightloss surgery? After finishing surgical training I spent a year in Sydney, then a second year in Brisbane doing further specialty training in weight-loss surgery and upper abdominal surgery. Working in a public hospital I was fortunate enough to be the primary operator as opposed to assisting another surgeon (as is the case in the private hospital trainees in weight-loss surgery). The centres I worked in were extremely busy in terms of weightloss surgery and I was able to perform a huge number of procedures. What compels you about this specialty? The results from weight-loss surgery can be massive, and life changing. Usually within a few weeks the results are extremely obvious. When I see people a few weeks after their operation, they are almost always 36 SLIM MAGAZINE SUMMER 2019/2020

extremely happy about the improvements they are seeing, and the best part is the improvements keep going on for months, so people get more and more satisfied. This sort of ongoing improvement is not very common in many other types of surgery. Other compelling things are dealing with problems people may have had from previous operations. I see some very interesting pathology and have to figure out ways improve things. I see people with very complicated medical problems and consider it a challenge to try and improve things with the surgery I do. What is the scope of your work? The majority of work I perform is weight-loss surgery. There are four common weight-loss procedures performed, and each procedure will suit a particular patient for various reasons. I make a big point about ensuring people get the most appropriate operation that will suit them. Even though

there are a few common operations, there are variations in the specifics of each operation so I can tailor it to an individual’s needs. I also perform a lot of revisional surgery, this means treating patients who had had a procedure in the past with results that were not as good as hoped, or they had good weight-loss initially and then regained weight at a later date. Some people also have problems as a result of their initial weight-loss operation or problematic symptoms. There are solutions to almost every problem. Patients whom feel they have to live with disturbing symptoms affecting the quality of life should be reassured that we can do things to improve their wellbeing, and often completely eliminate the problem. In addition to weight-loss surgery, I also perform emergency surgery as part of the Gold Coast University Hospital’s acute surgery and trauma surgery service.


Who are your patients/clients? I see various ages of patients from teenagers and the elderly, both male and female. Commonly, I see young adults who have often recently had children and realise their increasing weight is affecting how they interact with their kids, being unable to play with them and do the things they would otherwise like. After surgery these people tell me they have a huge amount more ability to get out and spend more healthy outdoor activities with their kids. I see people who are gradually putting on weight every year despite repeated very conscientious efforts to get it down. People who have seen their overweight relatives have health problems or die at an earlier age due to their weight. I see young women who are having difficulty with fertility due to weight and it’s a very satisfying thing to see them have a baby years later after weight-loss surgery has helped them conceive. In what ways does your work impact their lives? The most satisfying thing is seeing people’s medical problems start disappearing over a few weeks and months; things like diabetes, hypertension, sleep apnoea and arthritis. Interestingly, many other things are improved in people’s lives which you often wouldn’t expect. Sometimes things like chronic headaches/migraines disappear, asthma and breathing problems also seem to get a lot better after weight-loss surgery. A majority of patients notice an improvement in their sex lives, and there are massive non-medical benefits such as improved self-esteem, confidence, mobility, and increased levels of energy. People generally get off a lot of the medications they may have been taking for years.

It’s common for me to do a weight-loss operation on someone and after a few months, their partner or family and friends notice the difference and then they come in to talk about having a procedure. What is their feedback on how their lives are changed? Almost everyone tells me how much better they feel and wish they has had it done sooner. Most obese patients consider the impaired quality of life to be the most crippling aspect of their disease, despite having medical comorbidities which can be improved. After surgery they consider the lifestyle improvement the greatest benefit. The lack of motivation and tiredness many obese patients feel is dramatically improved following surgery. A lot of people also tell me afterwards how simple the process was, often they expect a lot of pain and slow recovery and they are surprised how quickly they get back to their usual lives. What are the trends in weight-loss surgery - is there any procedure that is considered a ‘breakthrough’ or showing promise? There are always ongoing improvements in operative techniques and variations of commonly performed operations. Many of the variations in technique are not to get more weight-loss, but more to decrease the likelihood of having problems in the future, and decrease the side effects people may experience. As part of being a dedicated weightloss surgeon there is an expectation and requirement to be up to date with advancements. I am very active in terms of learning new things and attend many conferences each year. I often travel to observe the techniques of weight-loss surgeons from various parts of Australia and the world so I can always improve my

practise and come up with better techniques to improve a patient’s experience. In the past six months I have been able to visit surgeons in Spain, France and New Zealand and learn some exciting new surgical techniques, including robotic surgery. Robotic surgery is an advanced form of minimally invasive surgery where the surgeon uses a computer-controlled robot to assist in certain surgical procedures. The surgeon still performs the surgery, the robotic system translates the surgeon’s movements at a console to the instruments on the robot. A second surgeon, acting as an assistant supervises the robot at the patient’s bedside. When performing robotic surgery, the surgeon works from a computer console in the operating room, controlling miniaturised instruments mounted on three robotic arms which enter the patient through standard keyhole ports. The surgeon looks through a 3D camera attached to a robotic arm, which magnifies the surgical site. This provides greater visualisation than standard laparoscopic surgery. The surgeon’s hand, wrist and finger movements are transmitted through the computer console to the instruments attached to the robot’s arms. The robot’s “hands” have a higher degree of dexterity and manoeuvrability compared to laparoscopic instruments, allowing the surgeon the ability to operate in very tight spaces in the body that would otherwise only be accessible through open (long incision) surgery. Robotic surgery provides surgeons with better accuracy, flexibility and control. Since the robot controls the instruments inside the body, the movements are much more precise and delicate, leading to less tissue handling and less potential injury to organs. This can result in reduced pain and discomfort, faster recovery time and return to normal activities, shorter hospitalisation, and reduced blood loss and transfusions. Robotic surgery training is very long an extensive, practising skills such as stitching and reconstructing operations on a model. As well as the simulation training and surgical observations; there is a requirement to demonstrate skills and pass a full day-long exam in Sydney. Once the training is finished, the first few cases are performed with an experienced robotic surgeon assisting until they are very well satisfied that I can perform the robotic surgeries efficiently and safely. But other problems such as massive weight-loss and loose abdominal muscles may contribute to loose skin, fat and muscles of the tummy and will be suitable for body contour surgery. Factors that lead to people seeking body contouring surgery are weight-loss, especially massive weight-loss (greater than 25kg), pregnancy where skin and muscles are stretched and other conditions that may cause weakness of skin or muscles - hereditary, genetic and poor exercise behaviours. Enjoy Joint Health Joint aches and pains are usually considered part of ageing, but there’s a lot we can do help keep our joints healthy and relatively pain free. Here, Dr Andrew Letchford explains some preventative measures we can all adopt as part of a healthy lifestyle.

Why as we age do our bones and joints give us more trouble? The study of ageing as it affects the musculoskeletal system, bones, joints and ligaments is complex and not yet fully understood. Anecdotally, everyone will know someone who is struggling with their joints, be it ankle, knees or hips and equally there are those who are well into their senior years that still run regularly, even at relatively high levels including performing marathons. As we age, there is a gradual build-up of trauma and micro-trauma within joints and de-conditioning of the muscles, particularly as we get over the age of 50-60 years. Are there preventative measures through lifestyle or diet we can take to protect our joints? The complexity of managing joints becomes increased when you factor in not only incidents of trauma but episodes of inflammatory joint disease, possible infections, and metabolic disorders in addition to age related degenerative changes. People are always seeking the silver bullet, but almost all research will show that maintaining a healthy lifestyle, a lean weight and muscle strength around joints is the best way to maintain joint health. Especially for the knees, if your weight and your body mass index are elevated, we know that this has serious implications in progression of wear and of the painful symptoms experienced. Do supplements work? There are multitudes of supplements on offer including Chondroitin sulfate, Glucosamine, green-lipped mussel extract, Curcumin or Turmeric extract but there is little strong scientific evidence that these will make a significant impact to an individual, certainly no more than maintaining a healthy weight range. Similarly, in the surgical setting, simple physiotherapy exercises, coupled with injections of steroid and local anaesthetic may help temporise symptoms, but again maintaining a healthy weight range is the most important contributor. Are aches and pains in the knees part of getting older, or can we do something about it? I recently attended the Australian Orthopaedic Association Scientific Meeting in Canberra and had beneficial discourse with many of my colleagues as well as attending forums regarding some of the latest research on cures and preventative methods of osteoarthritis. One particular article that caught my eye was one on PRP therapy, which is Platelet Rich Plasma injected into joints to help relieve symptoms and promote stem cell cartilage growth.

Keeping active should be front and centre as one ages. There are certainly studies that have shown running regularly does not in fact wear out joints, but in fact the compressive forces going through both the cartilage and the bones and maintaining the resilience of supportive ligaments actually is protective. I certainly do recommend people keep active be it running, cycling, swimming which are all very useful in preventing joint degeneration. When is surgery an option? Surgery is only an option when all other non-operative treatment fails to adequately control an individual’s symptoms.

How did your career path lead you to owning/running Medical Practices?

How do you juggle family and business commitments?

I’ve been in General Practice for almost 30 years, always in leadership roles. The strongest change was when I was promoted to a State role under a Corporate setting. My three states were Qld, NSW and ACT. There are so many styles of practice and people, all having their own mini-cultures. It honed my skills very sharply. What do you find most compelling about working in the health sector?

It is such a juggle. I am very open with my family. I explained to the children when they were younger, that I love to be in my profession and that it gives me honour. I explain when I am having a rough day and when it is joyful. I have a date with each son every week or fortnight, just one on one. I am keenly aware of when they need me and act as best I can. I’ve made some wonderful mistakes and am saving for their therapy!

The most compelling factor for me is being in an industry that affects meaningful change. The change is seen through multiple generations of a family unit as well. When the team, the doctors, the complementary professionals are all in flow, it’s like watching a beautiful symphony at play. The patients are the music. How are your clinics different from others? We’ve created a space where the intention is to teach and assist people to travel well inside their personal “machinery“. It’s very rewarding. Yes, you can come see the doctor and continue how you’ve always continued, or you can be curious about your body and investigate new things, new treatments, new ideas. We have Pathology, Pharmacy, Radiology, Physios, Psychologists, Pilates and Nutritionists all in the same building. We like to think that sets us apart. Are there any specialties or areas of expertise? It’s pretty special that we have the Medicinal Cannabis Clinic on Level 2. It’s ground breaking that people have access to this now. We also have a GP who is a qualified Naturopath, offering the best of both disciplines. All of our medical team are pretty incredible. They love what they do and seem born to it.

Dr Andrew Cary specialises in Fertility, Obstetrics and Gynaecology. Here, Dr Cary sheds light on how well-being and a healthy lifestyle impacts on fertility in women and men. Infertility, the inability to fall pregnant, affects one in six couples in Australia and is defined as the inability to conceive following 12 months (woman is below 35 years old) or 6 months (woman is above 35 years) of attempting to do so. There are a number of different reasons why some women are unable to conceive - in fact, around 50 percent of these are because of common gynaecological issues. The good news is that in most cases, there are treatments available to resolve the problem in order to achieve pregnancy. Here, Dr Cary sheds light on some of the FAQs surrounding fertility and treatments. What impact does age have on female and male fertility? A woman’s age is the single most important factor affecting a couple’s chances of conceiving, as her egg quality and reserve starts to rapidly decline after the age of 35. A woman is born with all the eggs she will ever have and from birth this reserve begins to decline, with a very large drop in numbers in her late 30s. At 25 years old, a woman has around a 20 percent chance of conceiving naturally in any given month. At 35 years old, this has dropped to around 15 percent, and by 41 years old the chance of conceiving naturally is only around 3 percent. Some men may have an inherited condition (like Cystic Fibrosis), that affects their fertility while others may have hormonal imbalances or an obstructed pathway. Male reproductive health is also affected by age. After the age of 40, a greater number of DNA abnormalities occur in sperm. Wearing lycra, tight jeans or jocks is suspected to have a negative impact on your sperm production. Being hit in the groin during sports, while painful, can only really have an impact on your fertility if it’s severe with significant injury. Diet, vitamins and supplements actually have very little impact on most sperm counts but an acute viral illness, trauma, or a childhood operation for undescended testes or hernias of the groin can. Just because you’ve had children before, this doesn’t mean you’ve always got good swimmers! The quality of your sperm varies and can be expected to change as you age.

How do weight and nutrition impact on fertility? If you are significantly overweight or underweight, it can affect your chances of getting pregnant by influencing hormone levels for women and sperm production for men. Use a Body Mass Index (BMI) calculator to check that you have an appropriate body weight. If you have a high BMI, a reduction in body weight of just 5 percent may improve your fertility. Keep up your folate. As well as taking a folate supplement, increasing your intake through your diet is also beneficial. Green, leafy vegetables and wholegrains are great sources of folate. Swap carbohydrates for wholegrains. Eating too much sugar and too many processed carbohydrates can negatively impact insulin levels and fertility. Swap carbohydrates for lower GI, wholegrain food options. For example, make the switch to wholegrain bread and pasta, and choose brown rice over white rice. Embrace good fats. Mono and polyunsaturated fats are a good source of Vitamin E and have powerful antiinflammatory properties, which can help to reduce insulin resistance. Nuts, avocados, oily fish (such as salmon, mackerel, whiting and tinned fish) and extra virgin olive oil are all good sources of good fats Optimise protein intake. Protein is important while trying to fall pregnant, but remember, portion sizes do not need to increase until you fall pregnant. Try including lean red meat in your diet (which is high in iron and zinc), oily fish such as salmon (high in Omega-3 fatty acids), and dairy foods (a good source of calcium). Walking, going to the gym and other forms of moderate exercise are good for maintaining a healthy lifestyle. Smoking affects fertility in both men and women. Women who smoke tend to reach menopause earlier than non-smokers. There is also strong evidence that female smokers have a higher miscarriage rate. Smoking during pregnancy has adverse effects on the growing baby, and are suspected of contributing to many childhood illnesses. There is also strong evidence that a child born to a male

smoker is more likely to develop cancer in childhood. It is strongly recommended that you do not smoke during fertility treatment or pregnancy. The impact of alcohol on a woman’s reproductive system is unknown, but heavy intake in men is known to affect sperm production. The NHMRC recommends no more than two standard drinks per day for women and four for men, with at least two alcohol-free days per week. The weeks following a positive pregnancy test are an important stage of development for the baby, and it is recommended that women abstain from alcohol completely during this period. High caffeine intake has been linked with female infertility in some research studies, but the reason for this is not clear. A moderate coffee intake is no more than two cups per day. Remember that caffeine is present in other beverages and food, such as cola drinks and chocolate. What are the options for people finding it difficult to fall pregnant? If you are over 35 and having trouble conceiving naturally, it’s important to seek medical advice within 6 months, as your egg quality and reserve has begun to decline. If you are under 35, we generally advise you to wait 12 months. In addition, if you have any known conditions such as a history of STDs or male factor issues, then don’t delay in seeking specialist help. If you know or suspect a gynaecological condition or a male fertility issue could be contributing to pregnancy delay, we recommend making an appointment to see a Fertility Specialist. Some fertility problems can be easily fixed with the right conception advice, lifestyle changes or even minor surgery – not all patients will require IVF. Whatever pathway to pregnancy you need to take, thanks to advances in reproductive technology, fertility treatment and other forms of assisted conception now offer a much higher chance of success. Wonder Weed Queensland’s first medicinal cannabis farm in the Sunshine Coast hinterland has opened for business, with the blessing of the Federal Health Minister, Greg Hunt. Medifarm’s facility currently houses 1,000 marijuana plants which can produce 1.2 tonnes of medicinal cannabis a year, with hopes to increase to seven tonnes a year. Only a few thousand Australians have been prescribed medicinal cannabis treatment by a doctor despite it being legalised by the federal government in February 2016, and they rely largely on imported products. The cannabis oil produced from the plants at the farm will be used to help Australians with conditions like epilepsy, chronic pain, multiple sclerosis or those needing paediatric care. “The office of drug control has responsibility for that and they are very, very assiduous and one of the things everybody would want is for us to operate in an efficient way but in a safe way,” said Mr Hunt. “It is a highly regulated sector and we make no apologies for that, but it’s about ensuring that if the doctors determine the medicine should be available, it can be available.” The founding director of Medifarm, Adam Benjamin said he established the company when he observed the suffering of family friend, eight-year-old Sam Martin, whose parents, Mark and Tanya, fought to have their son put on medicinal cannabis to ease the pain of late-stage aggressive cancer. Mark Martin said it was a big leap forward for patients. “We’ve seen first-hand as a family what a massive benefit medicinal cannabis can have for patients in terms of pain management,” he said. “When we started to give Sam medicinal cannabis in 2014 in the last phase of his life his general wellbeing improved massively.” What is medicinal cannabis? According to the definition by the Alcohol 48 SLIM MAGAZINE SUMMER 2019/2020

and Drug Foundation, medicinal cannabis is cannabis prescribed to relieve the symptoms of a medical condition. For some people suffering from chronic or terminal illnesses, conventional medicines do not work, or do not work as effectively as medicinal cannabis. Also, for some patients, conventional medicines may work but cause debilitating side effects that cannabis can help to relieve. What are cannabinoids? The main psychoactive ingredient of cannabis is tetrahydrocannabinol (THC), which acts on specific receptors in the brain. Research has found that the cannabis plant produces between 80 and 100 cannabinoids and about 300 non-cannabinoid chemicals. The main difference between the two cannabinoids is that THC has strong psychoactive effects, meaning it makes a person ‘high’, whereas CBD is thought to have an anti-psychoactive effect that controls or moderates the ‘high’ caused by the THC. CBD is also thought to reduce some of the other negative effects that people can experience from THC, such as anxiety. The psychoactive effects of THC, such as euphoria and feeling relaxed or sleepy, are

Types and forms of medicinal cannabis There are three main forms of cannabis that can be used medicinally: Pharmaceutical cannabis products that are approved by an organisation such as the Therapeutic Goods Administration (TGA), including nabiximols (Sativex®) and synthetic cannabinoids such as Dronabinol®. Sativex, which comes as a nasal or oral spray, has been approved in over 24 countries for treating spasticity due to multiple sclerosis. Controlled and standardised herbal cannabis (plant products), such as the products produced in the Netherlands. Unregulated and illegal herbal cannabis (plant products), which contains unknown concentrations of cannabinoids and potentially harmful impurities such as bacteria and mould (USA only). Why smoking cannabis for medical purposes is not recommended It is understood that smoked cannabis will not be prescribed in Australia because smoked plant products will not satisfy governmental requirements that enable it to be classed as a therapeutic good. There are two major concerns regarding this type of cannabis and this method of administration. Firstly, smoking is a particularly harmful way of taking cannabis, mainly because carcinogenic substances are inhaled directly into the lungs. Smoking cannabis is not recommended by health authorities, as the smoked form contains at least 50 of the same carcinogens as tobacco. Secondly, the majority of medicines used in Australia are produced under strict conditions: that way, doctors who are prescribing them (as well as people who are using them) know exactly what is in them. It is important that doctors know that medicines have been tested and that each dose is the same. This means doctors can monitor the effects of the drug and doses can be adjusted according to a patient’s needs. More at qld.gov.au and adf.org.au

Next, we need methylated B vitamins to assist with detoxification, metabolism and fatigue. Boost your libido and enhance your sex drive by eating figs, pumpkin seeds, maca, pomegranate, cacao and avocados. Reduce your reliance on coffee for energy. I know this is tough, but coffee is not great for us, especially as we age. My favourite replacements are the medicinal mushroom blends which taste great and are easy to find at your health food store. Eat anti-inflammatory foods religiously. Organic blueberries are essential, and this is one food that must be organic. Include loads of fresh spinach and other dark leafy greens daily. Incorporate the spices coriander, cumin and turmeric into your cooking. Vitamin C is a superpower that not only supports the immune system as we age, it is vital during this period of your life in supporting collagen growth. Collagen is essential for healthier bone structure and a more youthful appearance. This is one vitamin you don’t want to skimp on! If you are experiencing muscle spasms, anxiety, feelings of weariness or weakness, insomnia, poor appetite or constipation, these could all be signs of a magnesium deficiency. Munch on some raw nuts, seeds and dark chocolate. Vitamin E is the most powerful antioxidant which supports the brain, heart and hormones and has been shown to help reduce hot flashes. Essentially, eat a Mediterranean diet containing nuts, seeds, avocados, olive oil, dark leafy greens and fish. THE 12 STEP MIND-BODY-FOOD RESET recipes

In her new book, clinical nutritionist and health blogger, Jessica Sepel shares her 12 steps and 50 recipes for resetting your mind, body and food. SALTED CARAMEL FRO-YO SERVES 1

INGREDIENTS 200g (¾ cup) Greek yoghurt 2 tablespoons vanilla protein powder ½ teaspoon ground cinnamon, plus an extra good pinch, to serve 1 teaspoon tahini METHOD Place all the ingredients in a serving bowl and whisk with a fork until completely smooth and well combined. Place the bowl in the freezer for 20 minutes or until the mixture is just frozen. Remove and stir gently, then sprinkle with the extra cinnamon and serve immediately or store in an airtight container in the freezer for up to 1 month.

VEGAN LEMON AND BLUEBERRY CHEESECAKE SERVES 12

BASE 200g (1 ¼ cups) whole natural almonds 6 large fresh medjool dates, pitted and roughly chopped 1 teaspoon vanilla bean powder ½ teaspoon ground cinnamon LEMON AND BLUEBERRY FILLING 280g (2 cups) raw cashews, soaked overnight in water, then drained well 125ml (½ cup) melted coconut oil zest and juice of 2 large lemons 2 tablespoons pure maple syrup 300g fresh blueberries METHOD Line the base and sides of a 20cm square cake tin with non-stick baking paper, making sure to allow overhang on two sides (this will help you remove the cheesecake from the tin later). Pulse all the ingredients for the cheesecake base in a food processor until everything is very finely chopped and the mixture starts to form a ball (you may need to add 1-2 tablespoons of water to help the mixture along). Transfer to the prepared tin and press out firmly and evenly to completely cover the base. Place the drained cashews, coconut oil, lemon zest and juice and maple syrup in a clean food processor and mix for 2-3 minutes, or until completely smooth and creamy. Pour into the cake tin and level the surface with a palette knife. Scatter the blueberries over the top and press them lightly into the mixture. Freeze for 2-3 hours, or until just firmly set. Using the overhanging baking paper, carefully lift the cheesecake out of the tin and onto a serving plate. Cut into 1 2 pieces and serve immediately. 56 SLIM MAGAZINE SUMMER 2019/2020


OATEY BANANA BREAD BREAKFAST WHEELS SERVES 12

INGREDIENTS 4 small over-ripe bananas (about 340g in total), peeled 3 large eggs, whisked 2 tablespoons pure maple syrup 60ml (¼ cup) milk of choice 145g (1½ cups) rolled oats 35g (¼ cup) golden flaxmeal 2 tablespoons psyllium husk 1 teaspoon baking powder 2 teaspoons vanilla bean powder 1 teaspoon ground cinnamon 8 large fresh medjool dates, pitted and finely chopped 30g (¼ cup) walnuts, finely chopped

METHOD Preheat the oven to 180°C (160°C fan-forced). Line two large baking trays with non-stick baking paper. Place the bananas in a large bowl and use a fork to mash them really well until smooth. Add the eggs, maple syrup and milk, and whisk together using the fork until everything is well combined. Add the remaining ingredients and stir again until well combined. Let the mixture stand for 3 minutes, or until it thickens slightly. Using a ¼ cup measure, drop level portions of the banana mixture onto the prepared trays, leaving a 3cm gap between each portion. Flatten each portion slightly into a 7cm round. Place both trays in the oven at the same time and bake for 18–20 minutes, swapping trays halfway through the cooking time, until the cookies are baked and golden. Leave the wheels to cool on their trays for 3 minutes, then serve warm or let them cool completely on wire racks before storing in an airtight container in the fridge for up to 4 days.

RASPBERRY CHIA PUDDING SERVES 1

INGREDIENTS 60g (½ cup) fresh raspberries 45g (¼ cup) chia seeds 2 teaspoons vanilla bean powder 1 tablespoon golden flaxmeal 1 tablespoon pure maple syrup 250 ml (1 cup) milk of choice 40g (¼ cup) whole natural almonds, roughly chopped ½ banana, sliced good pinch of ground cinnamon a few fresh blueberries 1 tablespoon Greek yoghurt

METHOD Place the raspberries in a small serving bowl and use a fork to mash them well. Add the chia seeds, vanilla bean powder, flaxmeal, maple syrup and milk, and whisk together with the fork until everything is well combined and any lumps of powder have been broken up. Cover and refrigerate overnight, or until set. Top the chia pudding with the chopped almonds, sliced banana, cinnamon, blueberries and Greek yoghurt then serve right away.

SHORTBREAD CARAMEL SLICE SERVES 18

INGREDIENTS 225g plain flour, sifted 115g rice flour, sifted 120g caster sugar pinch of sea salt 200g salted butter, at room temperature TOPPING 150g salted butter 150g caster sugar 80ml golden syrup 400g can sweetened condensed milk ½ teaspoon sea salt, or more if you are a salt fiend like me 200g dark cooking chocolate (70 percent cocoa), roughly chopped METHOD Preheat the oven to 150°C. Grease and line a 30cm x 20cm x 3.5cm baking tray with baking paper. Combine the flours, sugar and salt in a bowl. Rub the butter in with your fingers until a crumble begins to form. Place in the tray and flatten out evenly with the back of a wooden spoon. Bake in the oven for 40 minutes or until golden. Remove from the oven and prick the shortbread with a fork. Allow to cool completely in the tin. To make the topping, place the butter, sugar, golden syrup, condensed milk and salt in a wide, heavy based saucepan and heat gently, stirring to melt the butter. Bring to a simmer and continue to simmer for about 10–15 minutes, stirring constantly to stop the mixture sticking to the bottom of the pan and burning. When the caramel is thick and fudgy, pour it over the shortbread and smooth out with a palette knife. Leave to set for 30 minutes. Melt the chocolate in a double boiler, or in a heatproof bowl set over a saucepan of simmering water (ensuring the bowl doesn’t touch the water). When melted, spread it evenly over the set caramel. Leave for 2 hours to set, then turn out and cut into 18 pieces. Store in an airtight container in the fridge for up to a week.

CHOCOLATE CHIP ICECREAM SANDWICHES MAKES 12

INGREDIENTS 250g salted butter, at room temperature 160g brown sugar 2 teaspoons vanilla extract 115g demerara sugar 1 large egg, at room temperature 300g plain flour 1 teaspoon bicarbonate of soda, sifted 160g milk chocolate chips Tub of good-quality neapolitan or vanilla bean ice cream METHOD Place 125g of the butter in a small saucepan and brown over medium heat until amber in colour, stirring occasionally. Ensure that you keep an eye on the pan as it only takes a few seconds to burn the butter. Once browned, pour the butter into a small bowl and leave to cool. Using a stand mixer fitted with the whisk attachment, cream the remaining butter and the brown sugar until light and fluffy. Add the vanilla, browned butter, sugar and egg, and mix until combined. Add the flour and bicarbonate of soda and mix until combined. Scrape down the side of the bowl and fold in the chocolate chips. Wrap the cookie dough in plastic wrap and roll into a log. Leave in the fridge for an hour. Preheat the oven to 170°C. Line a baking tray with baking paper. Roll the dough into walnut-sized balls and place on the prepared tray, leaving a 5cm gap between each cookie to allow for spreading. If you want to be precise, I roll my dough into 25g balls. Flatten the cookies slightly using your hand. Bake for 13 minutes, or until golden. Remove from the oven and allow to cool. Remove the ice cream from the freezer and allow to thaw for 5 minutes so it is easier to scoop. Arrange the biscuits on a wire rack, pairing the cookies according to their size. To serve, place scoops of ice cream between the biscuits and sandwich together. Eat immediately, or wrap them in plastic wrap and freeze for later. They’re best eaten within 2–3 days. If frozen, allow them to soften slightly before serving.

RASPBERRY FRIANDS MAKES 12

INGREDIENTS 6 large egg whites, at room temperature 150g unsalted butter, melted and cooled 125g almond meal 250g icing sugar, sifted, plus extra for dusting 100g plain flour, sifted 125g fresh or frozen raspberries

METHOD First, make the filling by placing the mascarpone in the bowl of a stand mixer fitted with the whisk attachment and beating until smooth. Add the cream, icing sugar and vanilla and whisk until creamy and smooth. Place in the fridge, covered in plastic wrap, until required. Preheat the oven to 180°C. Grease a 38cm x 25cm x 3cm jelly roll tin with non-stick cooking spray and line with baking paper. Whisk the eggs and sugar in the bowl of the stand mixer on high until thick and pale (about 4–6 minutes) and the mixture has doubled in size. Sift the flour, baking and cocoa powders once more over the egg mixture. Use a metal spoon to fold the mixture until combined, maintaining as much air as possible. Pour into the prepared tin and gently smooth the surface with the back of a spoon. Bake for 10–12 minutes, or until the sponge springs back slightly when touched. While the cake is in the oven, lay a clean tea towel on your kitchen bench and dust with the extra cocoa powder and icing sugar. Remove the cake from the oven and turn out the sponge onto the prepared tea towel. Peel the baking paper off gently. Starting at the short edge, tightly roll the cake in the towel and leave to cool completely. Dissolve the coffee granules in the boiling water, then add the Frangelico and set aside to cool. Unroll the cooled cake. Using a pastry brush, brush the coffee mixture over the cake until covered and all the coffee has been used. Spread the mascarpone mixture over the sponge, leaving a 1cm border to allow for spreading. Sprinkle with chopped chocolate. Gently roll the cake back into a log shape and place on plastic wrap, wrapping the cake and sealing both ends. Place in the fridge to set, alongside a small bowl of any leftover filling mixture. To serve, remove the cake from the fridge and spread the remaining filling mixture over the top until smooth. Dust with cocoa powder and decorate with chocolate curls. Store leftovers covered in the fridge for up to 2 days.

METHOD Preheat the oven to 160˚C. Lightly grease a 12-hole friand tin with non-stick cooking spray. Whisk the egg whites, butter, almond meal, icing sugar and flour together in a bowl with a hand whisk until combined. Pour into the prepared tin, so that each hole is two-thirds full. Place two or three raspberries on top of each friand and bake for 25–30 minutes, or until a skewer inserted in the centre comes out clean. Leave them in the tin for 5 minutes before tipping out onto a wire rack. Dust the friands with icing sugar and serve warm. They’re best eaten the day they’re made.

METHOD To make the salsa, combine the mango, chives and capsicum, then set aside. Sear the pork belly with the oil in a frying pan over medium heat, then set aside for serving. In the same pan, sear the scallops for 3 minutes, then turn over and cook for a further minute. Turn off the heat. Add the butter to melt and baste the butter over the top of the scallops. To serve, place a piece of pork belly on the plate and top with 2 scallops. Add the salsa to the side and garnish with a lemon cheek and micro coriander.

INGREDIENTS 8 soft shell crabs, cleaned and gutted 100g cornflour 1 litre (4 cups) oil, for frying salt and pepper, to season batter 300ml soda water 120g self-raising flour Vegetable ribbon salad 1 telegraph (long) cucumber 1 daikon radish 1 yellow carrot 1 purple carrot Chilli tomato jam 300ml red wine 200g brown sugar 2 bird’s eye chillies, chopped 500ml (2 cups) lemon juice 3 cinnamon sticks 800g tinned peeled tomatoes, drained METHOD To make the chilli tomato jam, add the wine, brown sugar, chillies, lemon juice and cinnamon to a saucepan Bring to the boil and cook until reduced by half. Reduce the heat, add the tomatoes and continue to cook until further reduced and a jammy consistency is reached. Allow to cool. To make the vegetable ribbon salad, peel the vegetables into long ribbons using a peeler or mandolin. Soak in ice-water until required. To make the batter, whisk the flour and soda water together until smooth. Dust the cleaned and dried crab with cornflour and salt and pepper. Dip each crab in the batter and place into the deep fryer separately (do not overcrowd the pan). Cook at 180°C until golden, then drain on paper towel. SOUVLAKI-STYLE LAMB BACKSTRAP SERVES: 4

INGREDIENTS 2 garlic cloves crushed zest and juice of 1 lemon 1 teaspoon finely chopped oregano 4 tablespoons extra virgin olive oil 800g lamb backstrap, denuded 1 large eggplant 100g cornflour 500ml (2 cups) vegetable oil, for frying 400g (tinned chickpeas, drained) 1 garlic clove 200g wild baby rocket 1 shallot, sliced 100g feta cheese salt and pepper, to season

METHOD Combine the garlic, lemon zest, oregano and 1 tablespoon of the oil. Add the lamb and marinade for at least 2 hours, or overnight. Peel the eggplant and slice finely with a mandolin. Blot any excess moisture with paper towel. Dust the slices in cornflour. Fry the eggplant in vegetable oil until crisp and golden. Add the chickpeas and garlic to a blender with half the lemon juice. Purée until smooth. Combine the rocket, sliced shallot and crumbled feta in a bowl. Mix the remaining lemon juice with remaining 3 tablespoons of oil. Add to the salad just before serving. Chargrill the lamb over high heat for 2–3 minutes, depending on the thickness. Turn over and cook a further 2 minutes, or until cooked to your liking. Rest for 5 minutes. To serve, slice the lamb and place 200g per plate. Add a quenelle of chickpea purée to the side, with a portion of the dressed salad. Add eggplant chips to the plate.

ZUCCHINI FLOWERS STUFFED WITH CHEESE SERVES: 4

INGREDIENTS 200g ricotta cheese 20g parmesan cheese 40g gorgonzola cheese 40g mozzarella cheese 12 zucchini flowers 1.5 litres oil, for frying 100g baby herbs, to garnish

BATTER 200g self-raising flour 300ml soda water Saffron emulsion 125g dijon mustard 375ml lemon juice 250ml vegetable oil 1 teaspoon sugar a few threads of saffron

METHOD Mix the four cheeses together and divide into 12 balls. Trim the ends of the zucchini and remove the stamen from inside the flower. Stuff one portion of the cheese mixture into each flower and gently close. To make the batter, whisk the flour and soda water together to a smooth consistency. To make the saffron emulsion, place the mustard, lemon juice, oil, sugar and saffron in a blender. Blend until combined, then transfer to a squeeze bottle to serve. Dip the flower end of the zucchini in the batter and drain off any excess. Heat the oil in a deep frying pan to 180°C. Deep fry for 2–3 minutes on each side, then drain off any excess oil on paper towel. To serve, pour the broth into individual bowls and top with the fried zucchini flowers. Garnish with target beetroot and baby herbs.

INGREDIENTS 1 bunch of rhubarb (about 500g), trimmed, leaves removed and cut into 2cm batons finely grated zest and juice of 1 lemon 2 tablespoons honey 500g (2 cups) natural Greek-style yoghurt 80g (½ cup) almonds, roughly chopped a few sprigs of mint, leaves picked edible flowers, to serve (optional) METHOD Place the rhubarb, lemon zest and juice, honey and 125ml (½ cup) of water in a deep saucepan over medium heat. Bring to the boil, then reduce the heat and simmer, covered, for 5 minutes or until the rhubarb is soft but still holding its shape. Remove from the heat and let the rhubarb cool completely. To serve, spoon alternating layers of yoghurt and rhubarb into small glasses or bowls and top with the almonds and mint leaves. Finish with a sprinkling of edible flowers, if desired.

CORN AND BLACK BEAN NACHOS WITH AVOCADO YOGHURT SERVES 4

INGREDIENTS AVOCADO YOGHURT olive oil, for cooking 1 avocado 4 corn cobs, silks removed 125g (½ cup) natural kernels cut from the cob Greek-style yoghurt 2 teaspoons ground cumin TO SERVE 2 teaspoons dried oregano 1 bunch of coriander, leaves picked 2 teaspoons sweet paprika 1 red onion, finely diced 400g can black beans, Fermented Hot Chilli Sauce drained and rinsed 2 limes, cut into wedges 400g plain corn chips 200g grated cheddar METHOD Preheat the oven to 200°C. Heat a large frying pan over medium–high heat and add a good splash of olive oil. Add the corn and cook for 5 minutes or until it starts to brown up nicely, then add the cumin, oregano and paprika and cook for 2 minutes. Stir in the beans and cook for a further 2 minutes. Remove the pan from the heat. Arrange one-third of the corn chips over the base of a large baking tray, then top with one-third of the corn mixture and one-third of the cheese. Repeat these layers twice more, then bake for 20 minutes. Meanwhile, to make the avocado yoghurt, place the avocado flesh and the yoghurt in the bowl of a food processor and blend until smooth. Remove the nachos from the oven and let it cool for a few minutes. Spoon over the avocado yoghurt and top with the coriander, red onion and chilli sauce. Serve with a lime wedge for squeezing over.

TOMATO, BURRATA AND BASIL SALAD SERVES 4

INGREDIENTS 1 large burrata 1kg mixed tomatoes, small ones halved, larger ones cut into 1cm thick slices 2 tablespoons baby capers, rinsed and dried 80ml (1/3 cup) olive oil, plus extra for brushing 1 1/2 tablespoons red wine vinegar salt and black pepper 1 bunch of basil, leaves picked sliced sourdough, to serve (optional) METHOD Place the burrata in the centre of a serving platter and arrange the tomato around it. Scatter the capers over the tomato. Whisk together the olive oil and vinegar and drizzle it over the tomato. Season generously with salt and pepper, then roughly tear the basil leaves over the top. If you would like to serve the salad with sourdough, heat a chargrill pan over high heat. Brush the sourdough slices with olive oil, then add to the pan and cook on both sides until nice char lines appear. Just before serving, slice the burrata open – the creamy interior will ooze out over the tomatoes. Serve immediately with some sourdough, if desired, for mopping up all of the deliciousness.

WHISKY-BRAISED BEEF SHORT RIBS SERVES 4

INGREDIENTS 2kg beef short ribs (4–8 pieces) salt and black pepper 115g (1/2 cup) brown sugar 6 garlic cloves, finely chopped 250ml (1 cup) whisky 125ml (1/2 cup) malt vinegar 400g can crushed tomatoes METHOD Preheat the oven to 150°C. Place the ribs, meat-side up, in a deep roasting tin and season generously with salt and pepper. Put the sugar, garlic, whisky, vinegar and tomatoes in a large mixing bowl and whisk thoroughly to combine. Pour this mixture evenly over the ribs. Place a sheet of baking paper over the ribs, then cover the entire tin with foil. Pop the tin in the oven and roast for 2 hours. Remove the foil and baking paper and baste the ribs with the sauce, then return the tin, uncovered, to the oven and roast for another 1–1.5 hours, basting regularly. EGGPLANT ROLLS WITH FETA, OLIVES AND SUNDRIED TOMATO SERVES 4 TO 6

INGREDIENTS 60ml olive oil 2 large eggplant (aubergines), trimmed and sliced into 1.5cm thickness lengthways 60g feta cheese, crumbled 60g kalamata olives, pitted and diced 12 sundried tomatoes, diced small handful of basil leaves 4 teaspoons parsley, fined chopped salt, to taste freshly ground black pepper METHOD In a bowl combine the feta, olives, sundried tomatoes, parsley and mint. Prepare the eggplant and brush the slices with olive oil. Heat a frying pan with a little extra olive oil over a medium heat and fry the eggplant slices, about 2–3 minutes on each side or until cooked. You can also cook the eggplant over a grill or barbeque if you prefer. Allow it to sit on some absorbent paper while cooking the remainder of the eggplant. Season to taste. Lay out each eggplant slice and place a heaped spoonful of the feta mixture at the wider end and roll up tightly. Place onto a serving platter and drizzle a little more olive oil over, a grind of black pepper and some extra herbs.

GREEK ROAST PORK SERVES 4 TO 6

INGREDIENTS 1.5kg leg of pork salt and pepper, to taste 4 teaspoons dried rosemary juice of 1 lemon juice of 1 orange 5 garlic cloves, halved METHOD Preheat oven to 200°C. Prepare the meat by washing and patting dry with some kitchen paper. Using a sharp knife, score the top into square or diamond shapes. Place the pork onto a roasting pan and, using your hands, rub salt, pepper, rosemary, lemon and orange juice all over the meat. Tuck the garlic into the skin where you have scored it. Place into oven and cook for about 90mins. I always like to pour a little water into the baking dish as well, about 250ml is fine. The meat won’t need turning but baste it with the juices in the pan occasionally, adding more water if you think it is getting too dry. Turn the oven to 220°C for the last 20 minutes so that the pork crisps up to a glorious golden brown. Serve hot with roast potatoes and salad.


LASAGNE INGREDIENTS 1 large brown onion, finely diced olive oil 2 cloves garlic, finely diced 2 carrots, peeled and diced 375g minced (ground) pork 375g minced (ground) veal 1 x 680ml bottle tomato passata 120ml white wine 4 teaspoons fresh parsley, chopped 4 teaspoons fresh basil, chopped 1 bay leaf 1 teaspoon sugar salt and pepper to taste 250g lasagne sheets (or use homemade pasta sheets) 120g mozzarella cheese, grated 60g Parmesan cheese, grated

METHOD In a large saucepan, sauté the onion in a little olive oil until soft. Add the garlic and carrots and cook a little more. Add the pork and veal mince and brown, stirring well. Add the tomato passata and wine and combine. Add the parsley, basil, bay leaf, sugar and season well. Cover and cook gently for about 30 minutes. Preheat the oven to 180°C. To assemble the lasagne, pour about 3 to 4 spoonfuls of the meat sauce into a lasagne dish. Place a layer of lasagne sheets and pour over one-third of the meat sauce. Carefully drizzle one-third of the béchamel sauce over the meat sauce. Sprinkle one-third of the mozzarella and Parmesan over the béchamel. Repeat this order for the second layer. Place a third layer of lasagne sheets on top and pour over the remaining meat sauce then the remaining béchamel sauce and top with remaining cheese. Bake in the oven for about 45 minutes or until golden brown. Serve hot with a green salad.

BECHAMEL SAUCE 80g unsalted butter 1L full fat milk, warm 2 eggs 120g plain flour salt, to taste freshly ground white pepper pinch of grated nutmeg

METHOD In a saucepan melt the butter and stir in the flour until combined. Pour the warm milk in slowly, stirring all the time as you pour, add the eggs and mix well. Add the nutmeg and season to taste. Stir and cook until it is a custard consistency.

SERVES 4 TO 6

CHOCOLATE TART SERVES 6 TO 8

INGREDIENTS PASTRY 20ml olive oil 75ml water 15g sugar pinch of salt 90g unsalted butter 15g almond meal 120g plain flour FILLING 250g pure cream 200g good-quality milk or dark chocolate (broken into pieces) 1 egg

METHOD Preheat the oven to 200°C. Place the oil, water, sugar, salt and butter into a heatproof bowl. Place into the oven for approximately 10-12 minutes until the butter has melted and the mixture starts to boil. Take out of the oven carefully and pour in the almond meal and flour a bit at a time, mixing constantly, until it has formed a ball of dough. Place the dough on a board and knead it very lightly so it is all combined for a minute and then pat it into a 22 cm round tart tin evenly. Using a fork, dot the base and place in the oven for about 12-14 minute or until it is golden and cooked. Prepare your filling by simply heating the cream in a saucepan, over a low heat, and adding the chocolate pieces. Stir until the chocolate has melted. Turn the heat off and add the egg, stirring continuously. The mixture should start to look silky. Pour into your prepared tart mold and bake in the oven for 15-20 minutes. Delicious with some fresh cream and berries.

The dips and spreads guide MEXICAN BEAN DIP INGREDIENTS 1 can (about 400g) of 4 bean mix OR refried beans 1 large brown onion, finely diced OR 2 heaped tablespoons of caramelized onion 2 cloves of garlic, minced 1 teaspoon ground cumin pinch of chilli flakes (optional) 45ml of diced chipotle OR jalapenos OR sauce made from these chilli varieties juice from 1 lime or 1/2 a lemon olive oil for frying avocado oil for flavoring METHOD Heat a pan on medium heat until warm. Add oil. Fry onions until soft or add caramelized onion. Add cumin and garlic (and the chilli, if you’re using it) and cook for about a minute, just to take the edge off the raw garlic and to bring out the essential oils in the spices.

I CAN’T BELIEVE IT’S NOT GUACAMOLE INGREDIENTS 400g of cooked fava beans, with their thick white outer skins squeezed off 120g of mayonnaise juice of 1 lemon 1 large tomato, seeds and pulp removed and medium diced 1 teaspoon of parsley finely chopped for decoration salt and pepper to taste METHOD Blitz the fava beans, lemon juice and mayonnaise with a stick blender until the texture is smooth with maybe a few bits of bean that still chunk the mixture up somewhat. With a fork, blend in the tomato so that its well mixed without breaking up in the dip. Season to taste. Sprinkle parsley on top. Serve chilled. NOTES If you’re still missing that avocado taste you can use some avocado oil at the blitz stage as well as at the end as a finishing oil.

LAYERED MEXICAN DIP INGREDIENTS 500g of Mexican Bean Dip 500ml sour cream (or use a vegan sour cream substitute) 500g of Guacamole 200g of diced tomato splash of lemon juice or lime juice 200g of grated cheese of your choice (or use a vegan soy cheese) Italian parsley, roughly chopped, to garnish METHOD Layer dips in alternate layers within the bowl. How you do this specifically is up to you. I recommend dividing the dips into two halves and layering like so: Top garnish parsley. Cheese layer. Tomato layer (with a splash of citrus juice). Avocado layer 2. Sour cream layer 2 . Bean dip layer 2 . Avocado layer 1. Sour cream layer 1 . Base layer of Bean Dip. Feel free to do whatever you want, but this works best when the layers are distinct and contrasting. Serve with a large serving spoon so that people can serve themselves their portions on individual plates.

CUCUMBER AND TOMATOES WITH HALOUMI AND TZATZIKI SERVES 4 TO 6

INGREDIENTS 6 roma tomatoes, cut into 1 cm cubes 4 Lebanese cucumbers, cut into 1cm cubes ½ cup kalamata olives, pitted and roughly chopped 1 small garlic clove, crushed 1 tablespoon oregano leaves ¼ cup mint leaves, torn 80ml (1/3cup) extra-virgin olive oil 1 teaspoon red wine vinegar 500g haloumi 4-6 slices of sourdough (or other crusty bread) sea salt and black pepper

TZATZIKI 2 Lebanese cucumbers (about 500g), finely grated 300g (¼ cups) Greek yoghurt 1 teaspoon dried mint 1 garlic clove, crushed 1 tablespoon extra-virgin olive oil 1 teaspoon honey sea salt and black pepper

METHOD To make the tzatziki, add a pinch of salt to the cucumber and leave to drain in a sieve for 10 minutes. Every couple of minutes, push the cucumber down into the sieve to draw out extra moisture. Combine the drained cucumber with the remaining ingredients and stir together. Season well with a little salt and lots of black pepper. Combine the tomato, cucumber, olives, garlic, oregano and mint in a bowl and add 2 tablespoons of the olive oil and the red wine vinegar. Season well with salt and pepper and set aside. Slice the haloumi into 5mm thick pieces. In a frying pan over medium heat, add 1 tablespoon of the remaining olive oil and fry the haloumi on each side for 1 minute, or until golden. Continue until all the haloumi has been cooked. Arrange the slices of bread on a large platter or serving board. Pile the tomato and cucumber mixture on top of the bread, followed by the haloumi slices, then spoon over a few big dollops of tzatziki. Finish with a drizzle of olive oil and lots of cracked black pepper.

INGREDIENTS 500g fresh egg noodles (or thick rice noodles) 1-2 tablespoons vegetable oil 500g wombok cabbage, shredded 350g choy sum or other Asian greens, stems and leaves trimmed and cut into 5cm pieces 125ml (½ cup) vegetable stock 3 tablespoons kecap manis 200g bean sprouts, washed and drained 1 cup finely sliced Chinese shallots ¼ cup crispy fried shallots sea salt and white pepper

SPICE PASTE 1 garlic clove 4 eschalots, peeled ½ teaspoon white peppercorns 1 red bird’s eye chilli (deseeded if you prefer it less hot) sea salt

METHOD To prepare the spice paste, using a mortar and pestle, crush the garlic, eschalots, peppercorns and chilli together with a good pinch of salt. Pound the ingredients together until you get a fine paste. Alternatively, use a food processor to blitz together. Bring a pot of water to the boil, add a big pinch of salt and cook the noodles according to the packet instructions until just al dente. Do not overcook the noodles as you don’t want them to get mushy when fried. In a wok or large frying pan over high heat, add 1-2 tablespoons of the vegetable oil. Add the spice paste and stir-fry for 1-2 minutes, or until you can smell the aroma. Add the wombok and greens and toss well to make sure the paste is evenly distributed. Add the vegetable stock, noodles and kecap manis and toss for another minute or so. Remove from the heat and add the bean sprouts and Chinese shallot. Toss well to combine and season with salt and white pepper. To serve, top with the crispy fried shallots. 68 SLIM MAGAZINE SUMMER 2019/2020


From the heart New Heart Foundation advice states unflavoured full-fat milk, yoghurt and cheese are now an option for healthy Australians, while the limit has lifted on the number of eggs that can be eaten per week in a heart-healthy diet. But the Heart Foundation says many Australians need to rethink how much red meat they’re eating, as evidence indicates it increases risks for heart disease and stroke and may lead to weight gain. Heart Foundation Chief Medical Advisor, cardiologist Professor Garry Jennings, said, “We have introduced a limit of less than 350 grams a week for unprocessed beef, lamb, pork and veal. That’s around one to three lean red-meat meals a week, like a Sunday roast and a beef stir-fry.

But Professor Jennings warned that limits apply to the new advice around dairy and eggs. “For people who suffer high cholesterol or heart disease, we recommend unflavoured reduced-fat milk, yoghurt and cheese and eating less than seven eggs per week.

“The increase in availability and promotion of highly processed foods at the expense of healthy foods has meant that too many Australian adults get more than a third of their total daily energy from high-kilojoule, nutrient-poor junk foods like cakes, muffins, pastries, alcohol and soft drinks.

“Butter, cream, ice-cream and dairy-based desserts are not recommended as hearthealthy, as they contain higher fat and sugar levels and less protein. Evidence found the dairy fat in milk, cheese and yoghurt does not raise bad LDL cholesterol levels as much as butter or other dairy products.

“Our focus needs to be squarely on promoting healthy foods over unhealthy foods, with a comprehensive national approach, grounded in evidence, that helps make the healthy choice the easy choice.”

“We now advise people with Type-2 Diabetes to eat fewer than seven eggs per week, as growing evidence suggests an increased risk with eating more eggs.

“Processed or deli meats should be limited, as they have been consistently linked to a higher risk of heart disease and other chronic conditions,” Professor Jennings said.

“Type-2 Diabetes, along with high cholesterol and high blood pressure, are risks for heart disease and stroke that we can all take steps to avoid through diet and lifestyle changes,” Professor Jennings said.

“Instead, we suggest people should get most of their heart-healthy protein from plant sources such as beans, lentils (legumes) and tofu, as well as fish and seafood, with a smaller amount from eggs and lean poultry. Heart-healthy eating is more about the combination of foods, eaten regularly over time.

Poor diet is the leading contributor to heart disease, accounting for 65.5 percent of the total burden of disease. Yet if Australians ate the recommended daily intake of vegetables, it would reduce the risk of cardiovascular diseases by approximately 16.6 percent and save $1.4 billion in health spending, based on 2015-16 estimates.

“We have removed our restriction for healthy Australians on eating full-fat milk, cheese and yoghurt. While the evidence was mixed, this type of dairy was found to have a neutral effect, in that it doesn’t increase or decrease your risks for heart disease or stroke.

Heart Foundation Director of Prevention, Julie Anne Mitchell, said healthy eating advice should reflect new evidence.

“Given this, we believe there is not enough evidence to support a restriction on full-fat milk, yoghurt and cheese for a healthy person, as they also provide healthy nutrients like calcium.”

“Over time, the Heart Foundation’s advice for heart-healthy eating has shifted with the evidence to downplay individual nutrients and look more closely at whole foods and patterns of eating. What matters now is the combination of healthy foods and how regularly people eat them,” Ms Mitchell said.

Heart Foundation dietitian Sian Armstrong said when it comes to eating, the big picture matters, and choosing a variety of healthy foods, regularly over time, is key. “Eating more plant-based foods like vegetables, fruits and wholegrains, and healthy proteins like fish and seafood with smaller amounts of animal-based foods, while cutting down on highly processed junk foods is key to good heart health. “To be heart-healthy, it’s also important to be smoke-free, limit alcohol intake, maintain a healthy weight and get at least 30 minutes of moderate physical activity on five days a week.” This updated advice on meat, dairy and eggs is based on a substantial review of current evidence. The Heart Foundation commissioned the Sax Institute to investigate the scientific evidence regarding unprocessed red meat, poultry and heart health. Heart Foundation policy and nutrition staff reviewed scientific evidence into dairy and eggs. The Heart Foundation convened an advisory group of cardiology and nutrition experts to discuss this evidence and advise on a final position. The eyes have it Shakti Selwood, Iridologist, explains some of the uses and benefits of her practice. What can studying the Iris tell us about our health? Iridology is the study of health via an examination of the colour and structure of the iris. The iris is as unique and individual as your fingerprint. The iris is the most complex yet unique structure of the human anatomy. It has a definite connection to every organ and tissue of the body by way of the nervous system through the optic nerves, which are connected to the Brain. At the same time, there is information sent back to the eyes from the brain about the state of the organs and tissues in the body. It has been said: “The Eyes are the blueprint to the state of health of the body.” What are some of the common maladies you can recognise by studying the Iris? The study of Iridology being thousands of years old has been extremely reliable in establishing function and many deliberating diseases of the body, including mental disorders of Alzheimer’s and Dementia. The Iris and structure of the eye will show discolorations, pigments, and markings in the structure of the eye and especially around the Iris and areas of major organ locations including the brain. Often an Iridologist will see the potential for poor function and disease before it takes hold. When working with a client, I am most careful not to directly diagnose, as Iridology is an indication that further investigation maybe needed. Most commonly recognised is irritable bowel, diverticulitis, parasites, heavy metal toxicity in the brain and tissues, fatty liver and gall stones. Most health issues start in the bowel. There will be colours signifying poor function possibly disease in certain organs and the colours around the iris is the bowel region. 70 SLIM MAGAZINE SUMMER 2019/2020

Sometimes pigments (spots) are an indication of high sugar in the diet which can cause many issues in the bowel, kidneys and liver. Colours of brown, yellow and orange are very common indications of chronic inflammation and overload of toxins which can be a sign the liver is struggling to filter toxins from the blood efficiently, the blood filters through the liver every three minutes. Iridology can determine how well the liver is doing its job of filtering toxins from the blood to keep it alkaline. If the kidneys are not functioning well to hydrate and cleanse there will be colours of a yellow flush through the centre of the eye or through the entire structure of the eye. Orange to brown colour centered around the iris can often be to do with the pancreas, our sweet centre of life. Lastly pigments (spots) can indicate a sweet tooth or the client digesting hidden sugars in their food and their digestion is not coping therefore can be inflamed causing pain somewhere in the body only to become arthritis eventually. Many of these indications can be seen in studying the Iris through Iridology. Research and further studies have shown it has all started from the younger years of the client having poor digestion, absorption and elimination issues. This can also cause depression, anxiety and stress. How is it useful in healthcare? The study of the iris is highly beneficial to the client as a trained eye using an “Iriscope” can see into the iris and structure of the eye. Inflammation, pain, organs not functioning as well as they should, can assist the client to a solution to reverse the damaging effects poor organ function can have on their wellbeing, whatever the age of the person. The brain communicates what

is happening or not happening through the eyes. Iridology is remarkable for seeing disease or potential of disease before organs take on the damage which can be fatal for some people. Iridology can be very useful in seeing ailments that can be addressed with natural medicine and food which can turn the entire situation around for the client to take them into a total healing and longevity of life. It enables the individual to take responsibility for their own health. Indications in the Iris can be seen when some foods or substances, medication, supplements are aggravating or not supportive to the individual, all this can be seen in the iris which is extremely beneficial to healthcare. Iridology is highly recommended as a preventative measure, more than a cure, as the body has a wonderful way to communicate what it needs for optimum health, through the eyes. Shaped by performance Porsche has extended its Cayenne family. An even sportier vehicle has been added to the third generation of this highly successful SUV range – the Porsche Cayenne Coupé. The highlights of the new Cayenne model include sharper lines, a more dynamic design, with a totally unique rear section, an adaptive rear spoiler, a rear bench with the characteristics of two individual seats, and two different roof concepts – a panoramic fixed glass roof fitted as standard, and an optional carbon roof. That effect is supported by a roof spoiler which accentuates the distinctive Coupé silhouette. The front windscreen and A-pillar are shallower than in the Cayenne, courtesy of a roof edge that has been lowered by around 20 millimetres. Redesigned rear doors and fenders broaden the shoulders of this vehicle by 18 millimetres, contributing to its overall muscular impression. The rear number plate is integrated into the bumper, making the vehicle seem closer to the ground. With its adaptive roof spoiler, the current Cayenne Turbo was the first SUV to feature this type of active aerodynamics. The Cayenne Coupé boasts a roof spoiler combined with a new adaptive rear spoiler as part of Porsche Active Aerodynamics (PAA). The spoiler, harmonically integrated into this model’s silhouette, extends by 135mm at speeds of 90 km/h and up, increasing the contact pressure on the rear axle, while PAA simultaneously

enhances efficiency. The new Cayenne Coupé comes with a 2.16-square-metres of panoramic fixed glass roof as standard. The 0.92-squaremetres glazed area gives all passengers an extraordinary sense of space, while the integrated roller blind protects against sun exposure and cold. A contoured carbon roof is optionally available for the Coupé on request. The centre seam gives the roof the characteristic look of a sports car, similar to the Porsche 911 GT3 RS. The carbon roof is available in one of the three lightweight sports packages. These packages also include the Sport Design features and new, weight-reduced 22-inch GT Design wheels, seat centres in classic checked fabric, and carbon and Alcantara accents in the interior. For the Cayenne Turbo Coupé, the package also includes a sports exhaust system. The new Cayenne Coupé offers plenty of space for up to four people as standard. At the front, the new eight-way sports seats with integrated head rests offer exceptional comfort and optimum lateral support. In the rear, the Coupé comes fitted as standard with a rear bench that has the characteristics of two individual seats. Alternatively, the comfort rear seats – a familiar feature of the Cayenne – can be ordered at no additional cost. Rear passengers sit 30 millimetres lower than in the Cayenne, meaning there is plenty of headroom despite the vehicle’s sporty lowered silhouette. The boot capacity is

625 litres – ideal for everyday use – and increases to 1,540 litres when the rear seats are folded down (Cayenne Turbo Coupé: 600 to 1,510 litres). Two high-performance engines are available: The Cayenne Coupé with six-cylinder turbocharged engine and displacement of three litres delivers 250 kW (340hp) and maximum torque of 450 Nm. The Sport Chrono Package fitted in series-production vehicles achieves the standard sprint from 0-100 km/h in 6.0 seconds, with this figure dropping to 5.9 seconds with the optional Sport Chrono Package. The Cayenne Coupe’s top speed is 243 km/h. The top-of-the-range Cayenne Turbo Coupé goes to the starting line with a fourlitre V8 engine with twin-turbo charging, 404 kW (550hp), and maximum torque of 770 Nm. The Cayenne Turbo Coupé accelerates from a standing start to 100 km/h in 3.9 seconds, and has a top speed of 286 km/h. The new Porsche Cayenne Coupé is available to order now and will be in Australian dealerships from early 2020. Prices start at $128,400 for the Cayenne Coupé and $254,000 for the Cayenne Turbo Coupé.
