ver 300 businesswomen from the Peterborough area tucked into a fundraising lunch in aid of breast cancer care – boosting coffers by a massive £11,500. The sell-out lunch is now in its third year, and to date has raised some £32,500 to help to fund new equipment for Breast Care Unit at Peterborough City Hospital, and pay for Advanced courses for Nurses, as well as clinic room makeovers.

Easy, hearty veggie chili Comforticinhg canhdili! protein r

egetarian chili is great to serve for large groups and this super easy chili recipe won’t disappoint. This easy, protein rich homemade recipe uses canned ingredients for speed and a generous amount of spices to give it a lovely homemade taste. It’s both vegetarian and vegan, and, it can easily be made glutenfree by using water in place of the vegetable broth. Or just shop around to find a gluten-free vegetable broth (several brands are available) . If you have leftovers it will keep in the fridge for a few days or you can freeze it for when you don’t have time to cook. Great with rice, quinoa, jacket potato, tortilla wraps or just on it’s own! ^

INGREDIENTS • 1x 15 oz. can black or pinto beans, drained • 1x 15 oz. can kidney beans, drained • 1x 15 oz. can diced tomatoes (don’t drain) • 1/2 onion, diced • 3 cloves garlic, minced • 1 bell pepper, diced (any color) • 2 tbsp. olive oil • 1/4 cup vegetable broth • 2 tbsp. chili powder • 1/2 tsp. salt (or to taste) • 1/2 tsp. pepper (or to taste) • Dash cayenne pepper (optional) • Dash red pepper flakes (optional) DO IT In a medium or large soup pot, sautee the onion, bell pepper and garlic in the olive oil for 3 to five minutes, until the onions are soft, stirring occasionally. Next, add in the undrained tomatoes, the vegetable broth and the chili powder and stir. Reduce heat to medium low and add beans. Stir occasionally and cook for at least 20 minutes. The longer you cook chili the better, but if you’re pressed for time, 20 minutes is fine. For a spicier chili, add extra cayenne pepper and red pepper flakes!

Want to get your lips done without plastic surgery? Read on to discover my trick. All it involves is a lipliner, a matte liquid lipstick and translucent powder! My favourite products to use are the MAC or Kylie Cosmetics lip liners, Huda Beauty liquid matte lipsticks and Laura Mercier translucent powder. Step 1: Make sure your lips are scrubbed and moisturised and soft. This won’t work if they are dry and cracked. Over line your lips with the lip liner and apply the lip liner all over the lips. Step 2: Using an old small brush, dab the translucent powder over your lips, setting the lip liner. Step 3: Apply another layer of lipliner and apply the translucent powder again. Step 4: Apply the matte liquid lipstick, wait for it to dry, then apply the translucent powder again, setting the matte liquid lipstick. And you will have the finished result of getting your lips plumped up without the cost or the pain! This issue, QueenBee talks to Carly Leonard, CEO of the Peterborough-based environmental charity PECT. More about Carly: Carly became Chief Executive at PECT in October 2015. She oversees the work of the charity and puts in place its plans and strategies for the future. Day-to-day Carly is involved in everything from developing new opportunities for PECT, shaping the direction of existing projects, working with the Board, and getting out and about to talk to people about the charity’s work. WHERE DID YOUR INTEREST IN THE ENVIRONMENT COME FROM? When I was growing up, my parents’ house was (and still is) the place where people took injured animals to be nurtured back to health. This contributed to my love for nature and developed into an awareness of broader environmental issues. Back in the 80s, I was putting up recycling posters in the school staff room at primary school, long before this became a

common activity! This interest continued to grow and led me to completing a degree in Environmental Studies and working in the field for more than 10 years. I’m still known at PECT for rescuing injured animals, particularly pigeons! WHAT ATTRACTED YOU TO WORKING AT PECT? I admired the way that the charity works on environmental projects that make a difference on the ground. PECT is a fantastic place to work and it’s very rewarding to do work that is positive for people and the environment. We are a grassroots organisation and we are close to the people we are working with, which helps us to really know the city inside out. WHY IS PETERBOROUGH AN INTERESTING PLACE TO WORK? Peterborough is continuously evolving and changing. Making improvements on a city-wide scale is complex and, to have a big impact, it needs a joined-up approach. PECT is well placed to bring different organisations and initiatives together so that we can achieve more.

WHAT ARE THE CHALLENGES FACING WOMEN WORKING IN YOUR INDUSTRY? It’s a very forward-thinking industry, and I can’t imagine any kind of discrimination because, thankfully, most of the sector is switched on and it just doesn’t come up. There are still occasions where I’ll be the only woman at a meeting or on a Board but I’m pleased to say that this is happening less and less often. WHAT’S THE BEST PIECE OF ADVICE YOU COULD GIVE TO PEOPLE LOOKING FOR A SIMILAR CAREER? The environmental sector truly is the future and there are enormous challenges that we face that will need talented people to find solutions for. So I would definitely recommend for people who are interested to get involved! A great starting point is volunteering and work experience – getting some hands-on experience and building up your knowledge and skill set. WHAT ARE PECT’S PLANS GOING FORWARDS? We want to support people to make choices with environmental considerations in mind. We recognise that people respond in different ways and no one likes being preached at so it’s part of our job to make it appealing for people to get involved in whatever way they can!

I cannot believe how quickly this year has flown by. Christmas is not far off and the boys and I are in full countdown mode. For the past couple of years, we have used Elf on the Shelf to help with the countdown and the boys love it! Each day our elves Buddy and Snowflake will appear in different places and more often than not they have done something mischievous. Their favourite trick is drawing Minions on bananas or sticking eyes on pieces of fruit. We have booked to see Santa at Sacrewell Farm this year and we are excited to

see what changes have happened since we last went a couple of years ago. There will be a review of Santa on my blog along with a list of Santa’s Grotto’s in Peterborough if you have yet to book. I often spend the time between Christmas and New Year reflecting on what has happened during the year. My highlight has definitely been seeing The Mum Diaries grow – all the hard work I have put into my blog is paying off. It is also a great time for me to think of any New Year resolutions, although I have trouble keeping to them. I think next year though is the year I concentrate on me and my personal well-being. I do tend to concentrate more on the boys than myself so my number one resolution to keep is to become healthier and take up running. The one thing I do love about New Year though is starting a new diary! I love stationery and nothing beats a fresh new diary for a fresh new year. ’ve worked at Weight Loss Resources for around 10 years. For the majority of that time I have been overweight. I always knew what I needed to do but the mountain always looked too high to climb. I wanted to lose the weight now, overnight, by next week at the latest!

How has being overweight affected your life? I hated having my photo taken. I had an image of how I looked but the photos never looked the same. They always had some large woman in them who was pulling funny faces to escape the fact that she was large. My husband would tell me I looked good but the pictures told me another story. The fact that I wouldn’t get naked in front of him should have rung alarm bells. I lost confidence in myself and my abilities. My self esteem was rock bottom. 32

What was your motivation to lose weight? Pokémon Go was at its most popular and my girls were playing it. I downloaded it and started playing. It wasn’t long before I was hooked and started walking to catch the critters. Then I was lent a FitBit and continued walking. I started walking 1k a night but before long I was doing 3, 4, 5k. The weight started to come off slowly. I wasn’t weighing myself but I noticed my clothes getting looser. By Christmas, instead of wearing a size 22, I bought a size 14 dress for the Christmas party – I felt AWESOME!

ORY... How did you do it? Being able to see what I was eating was a real eye opener. My portions were massive and not that healthy. I started logging everything I ate. Creating recipes for the foods I ate regularly made logging even quicker. Even now, I log my food, drink and exercise and record my weight. The Walk the Weight Off challenge really got me going too. I loved getting the icons for the places I had virtually visited. Changes in your life My sister said that I was walking so much I could probably walk the Park Run. She actually had no intention of letting me walk it and had me running and walking. It took me 49 minutes to complete it and I cried as I ran over the finish line. Now I can run the whole thing. If you’d said to me a year ago that I would walk 5k, let alone run it, I would have laughed at you. I love

walking! My family have been amazing throughout my journey. High and lows Sometimes the weight loss has been easy and other times incredibly difficult. I won’t lie and say that there haven’t been times when I have wanted to give up and go back to the old me. Because there totally has. Lots of them. But I’m not going back to that person. I feel more confident about myself, healthier and fitter ^

TRUDI’ S TIPS: • Log everything - don’t lie to yourself. • If you don’t have enough calories left for a treat, walk and earn them. • Take each day as it comes. My life-changing 75km trek across mountains and deserts... LOCAL LADY JOANNE PRICE TELLS QUEENBEE ABOUT HER OMAN CHALLENGE IN AID OF BREAST CANCER AWARENESS

hen I signed up for the Fabulous challenge to Oman in aid of breast cancer awareness charity CoppaFeel in April this year, I was mostly just excited about the opportunity to meet vlogger and author Giovanna Fletcher and TOWIE star Mario

Falcone. I had no idea how utterly life changing the week long 75km trek across mountains and through scorching hot deserts would be. The first hurdle to overcome was the fundraising. Having to raise almost £3,000 initially seemed like an impossible feat and I thought I’d have to make up any short-fall using my own money. However, with the help of my friends, family and local community, and with a few pots of glitter and a good old quiz night, my fundraising account soon totalled over £4,000. This will help save many, many lives. Once my place on the trek was secured I turned my attention to training for this gruelling physical challenge. Less than a year after major surgery and chemotherapy I was unsure how my body would cope with walking uphill for hours, carrying a heavy backpack filled with water. Living in one of the flattest

parts of the UK made any kind of useful preparation tricky, but I did what I could, whenever I could. This mainly consisted of lots of long walks around the area with my heavy three-yearold strapped into a back carrier.

The trek was physically tougher than anything I could have imagined. The mountains were incredibly steep, the loose rocks and gravel underfoot made every step dangerous, there were no ropes and no hard-hats. Just boots, walking poles and teamwork.

Meeting the other 60 participants at the airport before flying into Dubai was overwhelming and a little intimidating, but once we all got chatting and sharing our stories we very quickly went from strangers to friends and I know they’ll all be in my life forever. Every single person had been touched by cancer in some way; some had lost parents or grandparents to the disease, some were supporting friends undergoing treatment, one lovely lady had lost her 26-year-old daughter to breast cancer the previous year. It reminded us why CoppaFeel is such an important charity and validated our efforts.

The emotion I felt upon reaching the summit of Jebel Qihwi on the final day will stay with me forever.

If I can go from laying in a hospital bed, sick from chemo, to standing on the top of the world in the space of 12 months, I can only imagine where the next year will take me. Always have hope. Big Love, Jo ^

Only 8% of us succeed in our New Year’s Resolutions and a staggering quarter of us make and fail at the SAME resolution each year! So what can we do to give ourselves the best chance of success? Here at Inspired to Change we understand how our brains work and why we often go wrong with our resolutions. We’ve pulled together our top tips to help keep you on track!

QueenBeeviewpoint Tip 1: Set Realistic Goals Setting a goal that is unachievable causes stress and overwhelm in the brain making it very unlikely that we will even start working towards it in the first place let alone achieve it. The trick is to set yourself a goal that takes you a few steps outside your comfort zone. Tip 2: Break It Down Break your goals down into small chunks. This means that each time you achieve a small chunk of the journey towards your goal, you get a hit of your feel-good hormone serotonin which gives you a sense of achievement and motivates you to take further action. Tip 3: Know Your “Why” At this time of year many people’s focus is on being fitter and healthier but understanding why this is important is key to your motivation. It’s not enough to say I want to lose a stone. You need to understand why that is important to you. Whatever your goal is, keep asking yourself “why” until you get to the real nub of the issue because that is what will keep you motivated. Tip 4: Make It Repeatable Making a small change that can be repeated often throughout the day is more likely to stick and become a lasting behaviour. So if you want to do one

hundred sit-ups a day, set yourself a goal of doing ten sit ups every time you boil the kettle! Our brain learns through repetition so the more we repeat something the quicker it will get set as a habit in our brain. Tip 5: Get A Good Night’s Sleep Along with eating the right foods, rest is essential to restore our brain energy and our willpower. So make sure you get plenty of shut-eye to keep you on track. ey all! For me, this is the first year ever that I‘ve enjoyed the cold. After a Summer pregnancy, wrapping up and taking a cool walk has never been so appealing - followed by warming cinnamon tea snuggled up at home. However, lingering coughs and colds are already making the rounds, spreading through the family like wildfire and making these darker days a load harder for us mums. With the kids at school, sharing germs like they’re sweeties, we can easily feel helpless to the situation. However, we CAN fight the problem better than constant trips to the GP and covering up symptoms – with food! Optimising vitamin C intake is one of the best (and yummiest) antioxidant defence mechanisms we have. Utilise it to: • Super-strengthen the immune system • Fight both existing and incoming bacteria, viruses and infections • Boost overall nutrition, health & energy levels

s another year comes to an end, our thoughts turn to the past twelve months and how we can make the next twelve better. That could be anything from a job change, being a better person, starting a new hobby, drinking more water, spending more time with our families or moving house. But most of us have the same goals for the brand new year. Lose weight. Cut back on wine. Start doing regular exercise. Of course, some of you are already slim, teetotal, gym bunnies; nibbling on quinoa salad for lunch and five mashed-up avocado’s for dinner, sipping mineral water twenty-fourseven, donning your running gear for a ‘quick 10k’ even if it’s minus twelve degrees outside… But some of us are not. Waking up on New Years Day with a full set of rules, from which we will now abide by, is a massive shock to the system. My list always contains the three W’s (weight, wine, whimper) but I throw in a few more. Just for good measure. It starts off well, of course, but by the 3rd of January I am sick of going to the toilet every twenty minutes so I lay off

the water. By the 4th I am staying up a bit later because, well, I’m back at work and I’ve had a long day and I need to keep up with all my dramas, comedies and documentaries. Ditto the reason why I now ‘need’ a couple of glasses of wine each evening. By the 5th, I can’t decide between yoga or dressmaking as a pastime. So I get cross and say I’m doing neither. And by the 6th I’ve gone from speed walking to full sprint and jarred my hip so I need to rest for a few weeks to prevent further damage. Not even Tom Hardy naked, but for a stripy apron, could manage to persuade me to eat cauliflower ‘rice’ or a spiralised courgette. A brassica cannot be disguised as a grain and no matter how much I dress up that courgette, I can’t con my brain into thinking it’s actually spaghetti. So this year, I’m bucking the trend. There will be no list. Maybe by the end of next year I’ll be a size eight long distance runner without one…^
