blue cheese? yes please. In an issue that’s all about not cooking, it didn’t feel right to share the recipe for one of our complex dishes. But it wouldn’t be snap mag without a behind the scenes look into our kitchens. Even if you don’t have time to cook, you probably do have time to whip up this super quick, very versatile, ultra creamy blue cheese sauce. Or just skip the cooking and grab our new buffalo chicken bowl.

MIX TOGETHER 1/4 C organic blue cheese

2 Tbsp lemon juice

1/2 C cashew crema or Greek yogurt

2 tsp chopped green onion

1/2 tsp organic apple cider vinegar 1/4 tsp ground black pepper

Use it as a dip for crudité, buffalo cauliflower bites, or if you’re a traditionalist, chicken wings. Spread it on a simple sandwich to add major flavor & creaminess. Drizzle over a green salad to level up your desk lunch. 3

a cure for common #adulting If your to-do list consists of paying your water bill, finding a babysitter, and mowing the lawn, then you’re no stranger to the mundanity of #adulting. We think it’s high time to stop acting your age, and to start adding a little play and a lot of joy to your daily routine. (Fun fact: research shows that play for play’s sake can lead to increased creativity, stress reduction & improved cognitive function.)

Jump rope, join in on a pickup basketball game, or ride a bike. Don’t do it for exercise, but for simple, pure fun.

If you can’t remember the last time you built a blanket fort or cannon balled into a pool, then it’s probably a sign it’s been too long. Do something that reminds you of your childhood and savor that youthful feeling.


ab & j oatmeal bowl We’ve topped a bowl of oatmeal & quinoa with almond butter, strawberry compote & candied almonds for a grown up twist on childhood flavors that we’ve yet to outgrow. We promise we’ll start adulting after breakfast.

Plan your meals ahead of time. A recent Carnegie Mellon study shows that people make healthier choices when food decisions are made long before eating. (You know, we’ve got an app for that.) Get in passive exercise by parking further away from your destination, taking the stairs, or using the restroom on a different floor at work. Put the self in self-care with a DIY face mask. Mix 1 tsp matcha, 1/2 tsp coconut oil, and 1/2 tsp water for a redness reducing, skin calming concoction. Rest up! Aim for 7-9 hours of quality sleep in a cool, dark room. Extra pro tip: at sundown, use your iPhone’s Night Shift mode feature to dim the blue lights that keep your mind buzzing. Step up your pantry & fridge game. a chef’s story our new pad thai the story behind the dish When I think back, this dish has been in the works for a while. Just after graduating from the Culinary Institute of America, I started working as a banquet cook at the Ritz Carlton in NYC. Whenever a client would request a Thai menu, we relied on Pat, a seasoned cook who hails from Thailand. I spent months watching him do his thing with pad thai, gleaning inspiration from his ingredients & techniques. So this version of the dish is a nod to Pat and that time, but we’ve tackled it in a totally new way by making it Whole30.

how we prepare it Our pad thai sauce showcases what the cuisine is all about— the blend of sweet (dates), sour (tamarind), umami (fish sauce), and spicy (red pepper flake) flavors in good balance. We sear shallots & bell peppers over high heat to add texture, color, and mimic the unmistakably smoky flavor & crunchy texture, which is known as wok hei (a fun factoid to impress your friends). Scrambled eggs offer richness, Thai basil adds brightness, and toasted cashews bring extra crunch.


...and the healthy hack (duh) And last, but definitely not least, the sweet potato noodles are what make this dish specific to Snap. Their sweetness pairs beautifully with the tangy sauce, plus a veggie addition always gets a thumbs up from our registered dietitian! Eat well, Chef Matt Reinhart
