Our core mission at Snap Kitchen is to make healthy eating insanely tasty and incredibly easy for you. Underlying that is this intangible undercurrent that inspires everything we do; an energy that’s difficult to describe, but I’ll try my best. It’s the buzzy excitement we have while brainstorming menu concepts, testing & tasting recipes, educating our staff on the story behind our newest dishes, and hearing your feedback once these creations make it to you. It’s this spirit that propels us to keep innovating, in hopes that our passion for what we do is felt (& tasted) in the food we serve you. And that thing— that energy— is at an all-time high. Healthy living has never been more exciting than it is right now, and that’s what the summer issue of snap mag is all about. Today, healthy eating is turning vegetables into grains & cashews into cream. It’s adding function & flavor boosts to your beverages with adaptogens and medicinal mushrooms. It’s eating salad for breakfast and loving it. Healthy living is for you to decide and enjoy, with or without a lifestyle label. And it’s all supported by food purveyors that share our values. It’s 2017, health is trending, and it’s freaking fantastic.

go nuts Cashew cream has become a Snap Kitchen mother sauce, featured in dishes like our mediterranean mezze bowl. This simple puree of soaked cashews sets the stage for an impressive array of additions — sweet or savory.
original Blend 2 cups of soaked raw cashews with 1 cup water, 3/4 cup lemon juice, 1/2 tsp nutritional yeast and 1 tsp sea salt.
tzatziki + 1 3/4 cup chopped cucumber + 1 tsp lemon juice + 1 tsp fresh mint, chopped + 1 tsp fresh dill, chopped

healthy hacking (yeah, it’s a thing) Cauliflower is one of the most versatile veggies we have in our arsenal. Here’s our healthy hacked take on grits, the southern brunch classic, which we cook from scratch every day. Get your first taste in our new cheesy cauliflower grits side or find it in our breakfast platter. In a large skillet, heat 2 tbsp olive oil over medium heat. Add 1 1/4 cup chopped yellow onion & 2 cups riced cauliflower, stirring until cauliflower is almost cooked through. Add 1/2 cup cashew sour cream (see page 9), 1/2 cup reduced fat shredded cheddar cheese, 1/3 cup shredded Parmesan cheese, 1/4 cup chopped green onion, and 1/4 tsp each of sea salt & ground black pepper. Bring to a simmer, cooking until mixture is thick and cauliflower is soft. Garnish with smoked paprika & green onion. 12
