you’re holding the very first edition of snap mag. With every page flip, you’ll get insights into what we’re up to in our kitchen, access to some of our favorite recipes, a first look at what’s happening in our app, and other fun finds. We’ll hit ya with a new edition every season, so get ready to take this relationship to the next level. This edition is dedicated to everything we’re excited about this spring. In line with the season, there’s a lot of new stuff happening at Snap-- new ingredients, app features, food stories, plus online ordering. We’re kicking it all off by rolling out three new bowls with benefits. These definitely top my “OMG I cannot wait until these hit the shelves” list. Each bowl was designed around a specific benefit and global cuisine. The chefs and I talked through which ingredients were superstars for our handpicked health benefits (gut health, anti-inflammation, and antioxidant concentration), and which cuisines best fit those delicious ingredient lists. Talk about a perfect project for Snap’s chef/dietitian dream team. Ok, ok. No more spoilers. I’ll let you read the rest for yourself. tex mex chicken bowl
Like most humans, we’re obsessed with burrito bowls. But when we set out to make our own version of the Tex Mex classic, we boosted our recipe with anti-inflammatory ingredients & superfoods for a whole new spin. It starts with cooking our cauliflower rice with turmeric and is finished with stirring spirulina & avocado into our totally dairy free cashew crema. 5
mediterranean mezze bowl
We know that you eat with your eyes first, so we packed this bowl with gorgeous bites. A bed of kale-cauliflower “tabbouleh” sets the stage for a cast of antioxidant-packed components like turmeric dusted chickpeas, beet hummus, and a vegan tzatziki. We think it’s our most beauty-full meal yet. 6
meatball & kimchi stir fry bowl
This bowl takes benefits to a whole new level. Inspired by the ingredients & flavors of Korean cuisine, we’ve amplified each element with naturallyoccurring probiotics and nourishing prebiotics to get your gut in check. We cook up our cauliflower rice with garlic, onion, and kimchi, which serves as the foundation for grass-fed beef meatballs, stir fried veggies, edamame, a ginger sesame vinaigrette, and even more kimchi for good measure. 7
the art of healthy hacking Our menu is full of healthy twists on the decadent, indulgent meals that we all crave the most. We take dishes like enchiladas and Nashville hot chicken and make them healthy enough to eat on the daily. After nearly 7 years of seasonal menus and countless healthy hacks, we went straight to the source, our chefs, to learn about their top picks. “Cashew cream has essentially become a mother sauce at Snap. It started as a dairy free twist on sour cream with the slow roasted brisket tacos. We add lemon juice, cucumber, & fresh herbs to transform it into tzatziki in the mediterranean mezze bowl. The green crema in the tex mex chicken bowl is a mix of cashew cream, avocado, and spirulina.”
“We’ve done some pretty awesome things with cauliflower rice. It started as a simple stir fry with beef & broccoli, but we’ve since made yellow spanish ‘rice,’ kimchi ‘fried rice,’ and ‘tabbouleh’ as a base for the bowls. I love showing people how flavorful, satisfying, and diverse veggies can be.”

what’s trending turmeric
Curcumin, the active ingredient in turmeric, is best known for its anti-inflammatory benefits, antioxidant concentration and detoxifying properties. We’ve dusted organic chickpeas with turmeric in our mediterranean mezze bowl.
spirulina
Touted as one of the most nutrient dense foods on the planet, spirulina is vibrant blue-green algae that’s packed with amino acids & B vitamins. Traditional sour cream gets a dairy free upgrade with the spirulina cashew crema in our tex mex chicken bowl. 9

healthy hacked fusilli mac & cheese We asked our Instagram followers what they wanted to see us work our Snap magic on. It should come as no surprise to you that mac & cheese, in all its cheesy, carby goodness, was at the top of the list. You ask, we deliver. Here’s how we make our fusilli mac & cheese from scratch every day. You’ll find it in our shops served alongside our Nashville hot chicken. If you’re on that #eatwellcooknever train and just want to dig in to a bowl of mac, we’ll also have it available as a side dish beginning in late April. Until then…

Start by making the cheese sauce. Heat a pan over medium heat and add a drizzle of olive oil. Add ½ lb chopped butternut squash & 2 oz shallot to the hot pan, stirring until the squash has softened. Add ½ oz garlic and cook for another minute or two. It should smell awesome. Add ½ oz brown rice flour, stirring to coat. Pour in 8 oz almond milk and 8 oz water; simmer for a minute. Stir in 1½ oz miso, 1½ oz reduced fat cheddar cheese, 1½ oz non-fat Greek yogurt, 1 oz Parmesan cheese, ½ tsp salt and ¼ tsp pepper. Once melted, puree the mix in a blender. In a large bowl, mix 1¼ lb cooked brown rice pasta, 4 oz chopped collard greens, ½ tsp sea salt, and ½ tsp smoked paprika. Pour over the cheese sauce, toss to coat, and then garnish with 4 oz chopped collard greens & 1 oz chopped green onion.
