I’ve spent years hearing & talking about “living a healthy lifestyle.” It’s a near ubiquitous phrase that I simply accepted into my dietitian jargon without much critical analysis of what it really meant or felt like. Until I started working at Snap Kitchen. Snap has helped me define that evasive term. Through eating Snap on the reg, I went from constantly dieting to trusting my body (and the power of real food) to tell me what it needs & how much. I went from exercise as punishment to regular movement to support my body & mind. These healthy changes also came with a renewed sense of self-love & immense gratitude. To me, “living a healthy lifestyle” is that moment when it all just clicks. When eating well, exercising, getting plenty of sleep, finding time for self-care, and making room for indulgence (without a moment of guilt) feels less like trying and more like breathing. I had been dying to work on this one. I’ve always really
liked most forms of raw fish, particularly sashimi, so I fell in love with poke the first time I tried it. It’s a portable, fun eating experience, getting that perfect little bite almost every time. I thought it would be fun to do a vegan version without fish. I’d tried some vegan versions with beets and white rice, and although they’re delicious, I felt a little Snapification was necessary. We use forbidden rice (aka black rice) in our poke bowl, which is packed with antioxidants and fiber, and fights inflammation. It also happens to look beautiful in the dish, as the black contrasts nicely with the golden hues going on.
I felt the dish was lacking a little sweetness, so we added some mango to it which really balances out the earthiness of the beets and black rice. We also added edamame for some extra protein, while black sesame seeds and fresh, crunchy cabbage provide a nice contrast of textures. The ginger-soy dressing brings it all together, adding some sweet, sour, salty and spicy notes. Needless to say, it’s plant-based poke perfection.

6:30 am I always say 3 things I’m grateful for before I get out of bed. Then I take my thyroid medication (for Hashimoto’s) and a few supplements with a big glass of water and a bit of sea salt (for adrenal support). I also make a hot cup of herbal tea and sit for a 5-20 minute guided meditation. On a good day, I’ll get in 1 page of journaling or what I call a “brain drain.” Any thoughts that come to fruition on the page, positive or negative, are welcome. 7:15 am I wash my face with water and moisturize - I never feel fully awake until this happens. Using non-toxic cosmetic products is very important to me. I prefer safe products from trusted lines like Beautycounter, W3llpeople, One Love Organics, and Acure. Then I jump into work with a sweetener-free matcha latte and mood-boosting music. 9:00 am Breakfast is comprised of mostly protein and fat for blood sugar regulation and staying fuller longer. It usually looks like a bone broth based, veggie soup with protein to top, leftovers from dinner, or wild caught lox, avocado, and coconut yogurt mixed with collagen powder and nuts and seeds. Then I get dressed for the day. 9:30 am I am either on calls with clients, visiting them at their homes or offices, or following up with them to make sure everyone is on track. I also spend time reading and researching nutrition studies, listening to podcasts, and writing about healthy living for my website. Throughout the day I alternate between sitting and standing. 8 oz coconut oil 12.6 oz coconut sugar 4 eggs .1 oz vanilla paste or 1 teaspoon .2 oz kosher salt or 1 teaspoon 14.4 oz almond flour .3 oz baking powder or 2 ½ teaspoons • 10 oz chocolate chips (we use Enjoy Life Semi-Sweet Mega Chunks) 15
instructions • Mix coconut sugar, eggs and vanilla paste • Incorporate melted (not hot) coconut oil • Mix salt, almond flour and baking powder together • Add dry mix to egg & sugar mixture • Top with chocolate chips and bake at 350°F for 25-30 minutes
