Finally the long expected and very much desired summer is here! In summer, more than during any other time of the year, we spend our time outside; therefore, we have decided to dedicate the third issue of SOFFA to nature. We believe that everyone should try to protect it and that summer is the ideal season to go ‘eco‘ and ‘organic‘! Let yourself be inspired by our camping photo-story where we used classical childhood summer-camp items like kettles or an A-shape tent. And if you ever get bored, there are always our DIY ideas. Not only they are fun and useful, they save the nature and your wallet as well. Knowing that there are people in the Czech Republic who do care about environment and whose healthy lifestyle could be an example for others makes us very happy. That is the reason why we have decided to present you with a story of a successful family company called Country Life. Albert and Lukáš from Květinové lahůdkářství will show you how to make a unique bouquet from ecologically grown flowers. We like to surprise and to introduce new things and this time we took on the role of models and created a ‘green‘ photo-story. The picture on the opposite page is from the photo-shoot and was taken by Honza Frýdl, our new production manager. He enjoyed the photo-shoot so much that Lina started to worry about her job :). Lenka, our designer, is an expert on sleeping under the open sky and so she prepared an inspiration which will make even the laziest person to go camping. What is important is to choose a destination and pray for a good weather! Instead of online searching for where to go, go to the cellar and fetch yourself a kettle, tent and a sleeping bag. You will see how many useful things you will find. It is the best to go for a trip on a bike. It is ecological and fast. Lenka’s blue bike is by Kamil Štus, who specialises in renovation of old bicycles (more about that in the DIY section). She brought delicious picnic food with her as well because it is not a proper holiday without good food. Do you like the old-school tent but you are not that keen on sleeping in it? You can use it as a protection against the insect and also against the sun when you want to take an afternoon nap. The right travelers know that there can be no travels without good planning and so Lenka prepared a brilliant travel planner for you which you can download freely from our website. It will serve you as your little helper and you will not get lost! ■

IF YOU HAVE SOME USELESS CLOTHES THAT YOU DO NOT WEAR ANYMORE, THERE ARE TWO OPTIONS: EITHER YOU CAN GIVE IT TO CHARITY OR YOU CAN TRY TO CREATE SOMETHING NICE FROM IT! DIFFICULTY: medium TIME: 30 - 40 min. (even longer when sewn in hand) WHAT YOU NEED: old shirt or blouse thin strap of leather or imitation leather bigger studs (sewing machine) scissors puncher thread pins needle
An old shirt or blouse can be perfectly reused as a stylish flower pot, textile snack wrapping or a bowl. Do you have any doubts? Look, let yourself be inspired by our ideas, check the instructions and give it a go. Giving your old clothes new life will make you happy. INSTRUCTIONS: Cut out a rectangle from the bottom part of the shirt, blouse or a T-shirt. Choose the right size according to the desired size of the wrapping, bowl or a flower pot. (We used 25 x 42 cm for a slightly bigger bag). Cut it out so that you use the hem of the shirt (to save yourself job). Fold on the reverse side so that the hem in on the top – it will be the opening. Pin the other sides and sew. Fold the bag so that the vertical seam is in the middle and there are two corners at the bottom. Pin the front one to the seam just a couple of centimetres from the corner (in our ►
case it was 4 cm) So the same with the other corner. Sew both of them together. Turn the bag inside out and it is done. If you fold the inner edge, it will suit a flower pot or a bowl nicely. If you want to perfect it or to make a bag that would be possible the close, sew a leather strap (8.5 – 9 cm long and 2 – 2.5 cm wide) on the inside of the seam (12 cm below the top edge). Do the same on the opposite side of the bag but on the outside. Cut the endings and punch a hole. Attach the studs to the other side of the bag – where you sew the straps. All you need to do now is to fold the top part several times and attach the straps with the studs. Your flower pot or a bowl is ready to use! If you want to close the wrapping hide the strap inside and roll the top as for a snack bag. Fix it with the outer strap and it is done. ■ Wired basket, H&M Home

WE LIKE MASSIVE OLDSCHOOL BICYCLES AND SO WE DECIDED TO GET ONE. WHY TO SPEND MONEY ON A NEW ONE WHEN YOU HAVE A COUPLE IN THE SUMMER CABIN? SO WE CONTACTED KAMIL ŠTUS WHO REPAIRS AND BUILDS BIKES. DIFFICULTY: very difficult TIME: a month (waiting for varnish and working in the evenings) WHAT YOU NEED: Kamil or to be handy :) old bicycle tools new components complements and accessories ironmongery products polish
When the bicycle was done we asked Kamil how he actually renovates the old bikes: in case the more handy of you would like to do it on your own. It is demanding (both for skill and time) but the result is worth it! It is a bike which will serve you well for years! INSTRUCTIONS: First get yourself an old bike. Search in the attic, at summer cabins but also the secondhand goods stores are a good source. At the very beginning you create the final design of the bike (what it should be like when it is finished). There are numerous ways of reconstruction. It is necessary to think about the colour combination, frame, coating and accessories. Then the bike is dismantled and Kamil decides which part will stay and which should be replace (with our bike he kept the frame, mudguard, handlebars and bell). ►
Then it is necessary to have the frame varnished. Kamil goes to a professional varnish place where they use professional powder colour. Of course, you can spray your bike yourself by the result will not be as resistant. Now it is time for the components. The original ones, which were preâ–ş
ON THE WAY FROM OUR SUMMER COTTAGE WE TRANSFERRED THE BIKE BY THE TRAIN AND SO WE DISMANTLED IT AT THE RAILWAY STATION: YOU CAN SEE WHAT THE FRAME IS LIKE BEFORE ITS RENOVATION.

served, were cleaned and polished. Use ordinary ironmongery products, you can also use car polish. Start with the wheels. Kamil uses stainless wires and aluminum wheels of Czech production. The wheels are better to be replaced: the new wheels are lighter and stronger. The building of the bike itself starts with the frame, then there are the cliques and mudguards (if at all) and then the wheels. After that there is the chain which has to be adjusted for the appropriate length. In the final you attach the handlebars, seat and any other complements (such as lights, carrier etc.). Try to use all of the linking material if possible – it is definitely worth it! If you choose leather complements (just like Kamil did) your bike will have a timeless look! Our bike had to have holes made for leather ferules before the mudguards were attached. â–

If you travel by car or hike in the mountains, make sure you have the planner with you. It is great to be able to note down interesting details and important information on the go. Your itinerary is your little helper thanks to which you will not get lost! INSTUCTIONS: Download the travel itinerary template from our website and simply print it out. It is good to have your itinerary safe in a plastic folder with a pen. That way you will always have it ready to use and the folder will prevent it from damage. DO YOU HAVE A TENDENCY TO SAVE THE NATURE, YET YOU LIKE TO FOLLOW THE HOTTEST TRENDS? WE WILL SHOW YOU THAT TO LIVE ‘ECO‘ NO LONGER MEANS TO GIVE UP ON PRETTY CLOTHES! We belong among the women who like to dress up nicely and for that reason we decided to introduce, in our first summer ‘organic‘ issue, a new column on fashion. Originally we wanted to present outfits from second hands and flea markets but then we considered it much bigger challenge to create outfits made of organic cotton and other fair trade materials. What was a pleasant surprise was that there is a whole range of places offering such type of clothing in the Czech Republic. What exactly is organic cotton? It is grown in chemicals-free soil and the process does not include any use of synthetic pesticides, herbicides or chemical manures. What is used instead is a natural method: even the cotton produced is processed without the use of chemical bleach. Organic cotton has a whole range of great characteristics. Thanks to the fact that its fibers are not affected by the use of chemicals, it is softer and more resistant. It is proven that it does not cause any allergic reaction and therefore, it is appreciated mainly by the people who suffer from allergies. We complemented the organic cotton and fair trade clothes from Nila and Suvi stores with shoes from H&M for we like the project H&M Conscious: it strives for diminishing the negative impact of fashion industry on the environment. ■ Many thanks to Lenka and Pavel Mlíkovský for providing the photo-shoot location of First republic arbour.

IT IS NICE TO COOL YOURSELF IN THE SUMMER. EVEN MANY EUROPEAN LAKES PROVIDE THE COMFORT OF BOTH BEACHES AND ATTRACTIVE TRIPS. COME WITH US TO LAKE COMO IN ITALY!
Lake Como (Lago di Como in Italian) is one of the most attractive places in Europe where you can enjoy summer pleasures to the fullest. Glacial lake with a characteristic shape of an inverted Y offers the water temperature in summer as hot as you would expect in the Mediterranean. Its sprawling area is a paradise for lovers of water sports such as windsurfing, water skiing and scuba diving. The lake is also surrounded by one of the most beautiful European scenery. In the neighbouring towns you can find historical monuments, art as well as interesting shopping options. WHAT TO DO AND SEE AT LAKE COMO: We made a tour on the South side of the lake through Lecco, Bellagio and Como. The first 15 km of the road go through small villages but then the road winds along the shore of the lake, so you can enjoy views of the lake surrounded by snow-capped peaks. In some places the road climbs up the hill so you can see the entire lake almost as if from a bird’s eye view. The town of Lecco is a rather industrial area but above the town there is the Grigne massif. If you enjoy hiking and adventures in the mountains you will find the Grigne massif ideal. In the local remote areas you will find old cobblestone villages and mountain pastures where the time seems to have stopped. We were most impressed by the town of Bellagio which is situated at the top of our tour. We considered it a real jewel of this area not only because ►
of the beautiful view of the lake surrounded by mountains, but also for its fascinating historical center. The Basilica of St. George is definitely worth visiting (Basilica di San Giacomo) – it was built by the original inhabitants of this town. Another place worth mentioning is the renowned seafront promenade - at the end you find excellent conditions for swimming and refreshment after a long day. But if you want to escape from the city and enjoy the countryside, we recommend the gardens around Sebelloni Villa and Villa Melzi D’ Eryl and also the cypress-covered hills. Here you will find the right oasis of peace. Bellagio is a great place if you want to make numerous trips in this area. Bellagio, together with the picturesque town of Menaggio and Varenna, forms a triangle connected by frequent boat traffic/ ferries. Pick Varenna, if you like a quiet place with romantic atmosphere. There are impressive villas nestled in the wooded hills and surrounded by beautiful parks. It is possible to take a walk / hike to the ruins of the castle Castello Vezio, where you will find a beautiful view of the lake and the surrounding areas. The small town of Menaggio offers numerous sports and activities. Above the village there is a golf course and further above that there is a mountain peak called Monte Bregnano. If you continue further South along the shore, the road will lead you to the town of Como, after which the lake is named. The centre is guaranteed to enchant you with its picturesque cove and its breathtaking historic architecture. The Cathedral Duomo di Como with its richly decorated facade and dozens of highly detailed statues and gargoyles is a true artistic jewel and it is no wonder that its construction took four centuries. Como also has a beautiful harbor from where you can sail to the only island on the lake called Comacina. WHAT AND WHERE TO EAT AND DRINK: In the local restaurants – thanks to the lake – you can enjoy fish prepared ►
in different ways. The typical side dish is gnocchi. Italy is famous for a number of wine regions and Lake Como is primarily known for Nebbiolo wine. In Lecco try the renowned seafood restaurant Al Porticciolo which, however, belongs among the most expensive ones. As cheaper, but still delicious local alternative, you can choose Giovannelli in Canto. In Bellagio you can find many small cafes, but even here you can have a good local food: for example in Aperitivo et al. In the centre of Como, we discovered a small cafe outside the largest touristic part of the town – Marietta Caffe. It is a great place to relax with a nice coffee and excellent panini. When we were sitting there the street artist were playing the accordion just around the corner and it gave the place a unique atmosphere. WHAT AND WHERE TO BUY: Bellagio is the best for shopping. You can find a lot of small shops hidden in the narrow streets. The most charming one is the shop of Luigi Tacchi, a family business with products made of olive wood. Here you can find almost everything what your household might need: from bowls, kitchen utensils to combs or useful things for office. The products are displayed in large windows and cases but the staff is always nice and helpful. There is also a small workshop, where there is a demonstration of making of smaller products. In the Vetri store you will experience Christmas throughout the entire year. The shop is full of handmade glass traditional ornaments. And in the Quell della Pelle shop you will find handmade leather fashion accessories. On the street of Via Vittorino Emanuelle III in Como there are clothing stores of Italian brands, souvenirs, food and fabrics for production of which the area of Como is renowned. HOW TO GET THERE: There is a direct train from Bergamo. There are several low-cost flight companies going to Bergamo Airport. The train connections are situated ►

The smaller villages are relatively well connected by bus lines (timetables available at www.sptlinea.it ). The timetables for Como lake boats might be useful as well – and are available at www.navlaghi.it. WHERE TO STAY: For accommodation, you can either use the search Vacanze Lago , Booking.com or use a slightly cheaper service Airbnb and have the opportunity to live with the locals and learn more about the culture and hidden treasures of this area. A MUST SEE: A unique museum of milk and traditional tools which are used for the production of milk. The museum is located in the town of Carlazzo, which is located approximately 8 kilometres from the town of Menaggio. The museum is built on the site of the original urban dairies, can be opened on request and admission is free. Be sure to make time for a trip to the island of Comacina where a grand annual celebration Sagra di San Giovanni takes place. This year it all begins on Saturday, June 28 with a huge fireworks. LUKÁŠ FROM KVĚTINOVÉ LAHŮDKÁŘSTVÍ MADE A SPLENDID BOUQUET FOR YOU. LET YOURSELF BE CHARMED BY THE SHEER BEAUTY OF HISTORICAL ROSES AND GET TO KNOW MORE ABOUT THEM! Only very few garden plants and flowers can compete with the glamour and the scent of historical roses. They have been grown for many centuries and have always mirrored the taste of the respective historical period. A walk through a rose garden is like reading historical materials in archives. The real ‘rose madness‘ started mainly in the 18th and 19th centuries in the main nobility superpowers such as France, Belgium, the Netherlands and Germany. To introduce a new type of roses was a social sensation. It is mainly the powerful scent that leaves no one untouched by it. In the scent (depending on a species) various tones of all the known types of fruit and spices can be traced. Historical roses are suitable for any garden. They blossom only once a year but they are abundant in their petals. They are more resistant to frost than the modern species of roses and they grow in beautiful dense individual bushes. Who would not want a rose which once Jane Austen used to smell or Joan of Arc had in her armour? ■

DID YOU KNOW THAT ASPARAGUS IS A TRADITIONAL CZECH PRODUCT? KAYA, A BLOGGER WHO WRITES A BLOG CALLED ‘WITH PASSION FOR FOOD‘, WILL TEACH YOU HOW TO PREPARE IT TASTEFULLY! Our team has agreed that we like asparagus but we do not know anything about it or the best ways to prepare it. Therefore, we contacted an experienced blogger Kaya to tell us more about asparagus and she even prepared two recipes for you. Asparagus is an ideal example of a regional vegetable and it is the best when it is fresh; therefore, we set off to Český chřest farm in Hostín u Vojkovic where asparagus is grown in the traditional ways without any synthetic manure. The farm is situated in Polabí (the lowland around the river Elbe), which is, thanks to its light sandy soil, ideal for asparagus. Asparagus is sometimes called ‘white gold‘ in the Czech Republic and ‘royal vegetable‘ in Germany; it spread in Europe at the end of the 15th century. In the Czech lands asparagus became popular mainly during the times of Austro-Hungarian Empire. The strong tradition, however, was interrupted by both wars and the decades of socialism, when asparagus was pushed out of the fields by cereals. This is also one of the reasons why very few people know about the long and glorious tradition of Czech asparagus. IT ALSO CONTAINS A GOOD AMOUNT OF CALCIUM, PHOSPHOR, IRON AND ZINC. THE HEALING EFFECTS OF ASPARAGUS HAVE BEEN KNOWN FOR CENTURIES: ONE OF THE MAIN ONES IS THAT IT PREVENTS EXCESSIVE WATER RETENTION. ASPARAGUS ALSO HAVE A GOOD INFLUENCE ON KIDNEYS AND THE ENTIRE URINARY SYSTEM AND PREVENTS VARICES. APART FROM THAT IT ALSO INCREASES FERTILITY OF BOTH MEN AND WOMEN AND IT IS A NATURAL APHRODISIAC.
THE ASPARAGUS SEASON LASTS IN POLABÍ APPROXIMATELY FROM MID-APRIL TILL THE END OF JUNE. ASPARAGUS IS HARVESTED EVERY DAY BECAUSE IT ONLY GROWS FOR SEVERAL HOURS. IT GROWS IN THE SO-CALLED GRAVES WHEN THEY ARE COVERED WITH FOIL, YOU GET WHITE ASPARAGUS. GREEN ASPARAGUS GROWS UNCOVERED AND GAINS ITS COLOUR FORM THE PHOTOSYNTHESIS.

TIME: 30 min. PORTIONS: serves 4 INGREDIENTS: 800 g green asparagus 200 g butter 1 shallot 1dcl white wine 1dcl orange zest peel from ¼ orange lemon zest salt
INSTRUCTIONS: Chop butter in little cubes and put in fridge to cool properly. Pour wine and orange zest in a pot, add shallot (finely chopped). Boil the content of the pot, take off the bon. Add orange peel and whisk in butter. Add salt and lemon zest. Cut asparagus so that the stems are of the same lengths. Peel the hard peel off the bottom third of the stems. Place asparagus into boiling salted water and boil for a short time until it is soft. When it is soft cool rapidly in the stream of cold water. Place on a plate and pour the sauce over the asparagus stems. TIP: This meal is perfect as antipasti, as a side-dish or with potatoes as the main course. ■

PORTIONS: serves 4 INGREDIENTS: SALAD 800 g green asparagus 2 handfuls of young green pea sprouts (or lamb’s lettuce) 4 spoons of chopped almonds 2 reddish petal of 2 dandelions pyramid or coarse salt DRESSING 2 spoons of olive oil 2 spoons of lemon zest 1 teaspoon of Dijon mustard pepper salt
INTRUCTIONS: Peel the bottom parts; cut the top buts and put aside Chop the stems (ideally by a peeler) to thin slices; chop reddish to thin slices as well. Simmer almonds in a pan. Whisk olive oil, lemon zest, Dijon mustard and a pinch of salt and pepper. Mix asparagus slices together with the top bits, reddish and green pea. Add dressing. Plate the salad and sprinkle with almonds, dandelions and pyramid salt. TIP: White wine goes amazingly with this light salad. Try Chardonnay or Rulandské bílé. ■

WHILE WE WERE PREPARING THIS ‘ORGANIC‘ ISSUE FOR YOU, YOUNG NETTLES STARTED GROWING IN THE NATURE AND SO IT FELT OBVIOUS TO PREPARE A DELICIOUS SOUP FROM THEM! TIME: 30 min. (+ the time for picking nettles) PORTIONS: serves 5 – 6 persons INGREDIENTS: 450 g fresh nettles 3 bigger potatoes 6 spring onions 1 medium-size celery 1 cucumber eggs (for decoration) sour cream (for decoration) vegetable bouillon pepper salt
INSTRUCTIONS: Peel potatoes and chop into fine pieces. Wash and chop spring onions (save one or two for decoration). Chop celery. Place everything in a pot, add bouillon and boil for 15 minutes. Meanwhile grate or finely chop cucumber. Wash nettles and get rid of stems and other bad parts. Take potatoes, celery and onions out of the broth and put nettles in: boil for 3 – 4 minutes. Put potatoes, celery and onions back in the pot, add cucumber and boil. Do not forget to add salt and pepper. Blend the mixture using a hand mixer. Garnish the dish with sour cream and a half of an egg, sprinkle with spring onions. Serve with fresh bread. TIP: Soup is usually served hot but on a warm summer day you can serve it cold as well. ■

A REFRESHING DRINK WITH HOMEMADE STRAWBERRY SYRUP IS JUST PERFECT FOR LAZY HOLIDAY MOMENTS. MIX IT WITH WHITE RUM AND JAZZ UP YOUR SUMMER PARTIES WITH FRIENDS. JUST TRY IT! TIME: ca 45 min. (only drink 10 min.) PORTIONS: 250 - 300 ml of syrup and 1 drink INGREDIENTS: SYRUP 1 l water 200 g strawberries 100 g cane sugar DRINK 100 ml 12% cream 50 ml strawberry syrup 10-15 ml white rum (optional) 4-5 ice cubes 3 strawberries
INSTRUCTIONS: Prepare the syrup first. Cut them into small pieces. Place strawberries in a pot and add one liter of water. Boil (medium heat) and let it simmer the berries soften and and completely dissolve. Then press strawberries through a colander (using a spoon). Add sugar and juice and stir until dissolved. Leave for a few minutes on a low temperature in order to let the sugar caramelize. Remove from the heat. Now prepare the drink. Pour strawberry syrup on the bottom of a glass. Then add about 2 and a half strawberries (cut into slices or cubes) and add ice cubes.Pour the cream carefully over a spoon. It is important to follow these steps to prevent the cream from mixing with the syrup immediately. You can add white rum if you like. ■ Wooden chopping board, HNST.LY

WHAT COMES TO YOUR MIND APART FROM THE FAMILY FIRM COUNTRY LIFE WHEN YOU HEAR THE WORD ‘ORGANIC‘ IN THE CZECH CONTEXT? WE FELT WE MUST PRESENT YOU WITH THIS FAMILY FOCUSING ON ORGANIC AND HEALTHY LIFESTYLE! You are probably familiar with Country Life and its products. What you may not know about is its founder Otakar Jiránek and his family. It is a story worth reading – a story of determination and desire which can be a motivation for anyone. Mr. Otakar Jiránek graduated from FAMU and he is a professional photographer. However, he had always wanted to do something useful for people and so when he got a chance to open the first shop with organic products in the former Czechoslovakia in 1991 he suddenly quitted his job as a photographer. His dream was (and still is) to help people to change their lifestyle, to provide advisory, to teach people how to prepare and cook bio products and generally how to live in harmony. HOW DID YOU GET TO ORGANIC FOOD? To a certain point it was the family predetermination, the rest was a coincidence and a deal of luck. owned a shop with colonial goods and his wife, my grandmother, was a daughter of the cannery (HamĂŠ) owner. My dad graduated from the Czech University of Agriculture. I have always been close to food, then. Furthermore, being a photographer, I used to travel a lot and got myself inspired by the news abroad. The breaking point, however, was when my sister married a French and moved to Provence where she started a business with organic food. I started helping her; the entire family went vegetarian and I had my business genes woken up. Towards the end of the 1980s I did the major step: I sold all my photography equipment and left to France with my wife and our small children to an ecological farm where we learnt everything about organic food and how to run an ecological business. It was adventurous, in fact, we did not have much and one day, even the little we had burnt when our little house where we lived in France caught on fire. For me it was a signal that it is about time I left the career of a photographer and we returned back to the Czech Republic and started our own business. Nowadays, all our children work in the family company. WHAT WERE THE BEGINNINGS OF THE ORGANIC FOOD AT THE CZECH MARKET? It was tough because the first revenue was from the sales. Nevertheless, at the same time it was easy because we did not have any competitors. When we were still in France we started looking out for a venue for our first store: we opened in 1991 in Prague in Melantrichova Street. It was the very first organic shop here and the demand was immense. In the same year we opened a shop with organic cosmetics and in 1997 we added the first organic food restaurant. â–ş LEFT: The adzuki beans are grown in South-East Asia and have a slightly nutty flavour. Naturally they are a product of ecological agriculture.
WHAT MADE YOU SET THE COMPANY HERE AT NENAČOVICE? I have always wanted to not only run the business but also grow the organic food. When we were looking for a suitable location for our ecofarm, I fell in love with the countryside around Beroun. In 1992 we started to manage the farm with the support of the ecological agriculture donation but we did not have any hinterland. It was in 2001 when we bought the current land for the firm and moved there. We have also reconstructed the original buildings in ecological lifestyle. The current site of the company, the wrapping area and the bakery are located in the former cowshed: it is a low-energetic building and the added part is the very first passive house that was built in the Czech Republic. HOW ELSE DOES YOUR ECO ATTITUDE TOWARDS LIFE MANIFEST? For instance, at home we use ecological products like Ecover for cleaning and washing up. We try not to waste anything and to use natural materials wherever it is possible. WHAT ALL IS AT NENAČOVICE AND WHAT DO YOU PRODUCE HERE? Apart from the eco-farm and the company’s site that we have talked about already there is also a wholesale from where the organic products are transported all over the Czech Republic. Furthermore, there is a training centre, wrapping area and bakery. WHAT DO YOU MAKE IN THE BIO-BAKERY AND WHERE CAN WE BUY THE PRODUCTS? We bake both sweet and savoury pastries and we deliver it to our stores in and around Prague. Contains high percentage of proteins and calcium; therefore, it is suitable for vegetarians. It decreases the level of cholesterol and has anti-stress effects. Chickpeas is good for mashes, salads and soups. Perhaps the most famous form in which it is served is hummus: a cold mash from boiled chickpeas.
Is a cereal which has been grown in the Czech lands since the 12th century. It has a high percentage of fiber, decreases the level of cholesterol and does not contain gluten. It is one of the very few cereals suitable for you if you are on a gluten-free diet. Buckwheat can be used as a side-dish, on its own or as a stuffing.
Can be considered a natural multivitamin. It contains mainly calcium, iron and iodine and many more minerals. It also decreases the level of cholesterol. Seaweed is brilliant in salads, risottos, soups and sushi, of course. Seaweed is easy to process.

Strengthens the immune system because it is rich in iron, potassium, vitamins C, E and many others. It has a very good effect on cardio-vascular system and peristaltic. It is suitable for salads, soups and spreads. It is often used in Russian cuisine.
Is rich in folic acid, vitamins A and K and fiber. It has detoxifying effects and improves metabolism. It is not commonly used even though it is suitable for both salads and hot meals such as soups. You can also try to bake it with cheese.
Can be used in many ways. It is planted in May and harvested in summer. The taste of the white flesh resembles zucchini or eggplant. Patisson can be steamed or boiled, you can also stew it or bake it. Try filling the Patisson with meat and cheese or make it a la schnitzel. It is also great with garlic!

Here in Nenačovice there are about 60 people and together with the stores it is around 120. Currently we have 9 stores and 3 restaurants. WE ARE TALKING ABOUT ORGANIC FOOD HERE. BUT WHAT EXACTLY DOES THE TERM MEAN? The term ‘organic‘ means that the product was grown and produced by ecological agriculture, which is with regard to nature and human health. In ecological agriculture there are no artificial manures, pesticides or artificial additives used. There is an emphasis on the so-called welfare of animals (including the organic feed for them). Ecological agriculture is sensitive to the environment but it also has its social aspects. It provides more job opportunities because it is more demanding and it also endures certain continuity of living in countryside. Furthermore, organic food is of much higher quality than the one full of preservatives: it contains less water and more of the dried essence. It is not true that all the organic products are more expensive. Some of them are the same price and on the contrary, the bad effect of conventional food on human organism results in much higher expenses. Unfortunately, the organic food market in the Czech Republic represents only 1 % of the entire food market. WHAT ARE YOUR PLANS FOR THE NEAR FUTURE? We would like to build one more storage building for wholesale. I would also like to broaden the production of the eco-farm. Nevertheless, what is important is the long-term vision so we will continue our educational activities such as courses and workshops. Our own recipes are also slowly gaining popularity. ■

HAVE YOU BEEN MISSING ORIGINAL FUN AND SMART CHILDRENFASHION OFFER ON THE MARKET? IT CAN ALL CHANGE NOW. MEET ICE ICE BABY AND ENJOY THE WORLD OF COLOURS AND PATTERNS! We are happy that and increasing number of people refuses to accept the conventional lifestyle and starts their own projects. This is also the case of Andrea Beranová and Majka Čulenová who started a business together: they founded a children clothes and accessory brand called Ice Ice Baby. We met Andrea and Majka on a beautiful morning in May so that we would get to know more about their project and show you some pictures as an inspiration full of pastel colours and playful patterns. They also gave us in interview. HOW DID YOU TWO MEET? It is rather simple, we met ‘over a guy‘: Majka studied at VŠUP with Andrea’s boyfriend. WHAT MADE YOU START A BUSINESS TOGETHER AND FOUND YOUR OWN BRAND? The idea of our own brand of clothes for babies emerged after our own children were born (we now have three altogether). Our children are the same age so we spent a lot of time together. rations, toys or books). And so we happened to have long discussions about it but we could not decide to make the move but after some time we finally decided to found our own brand for mums and children. We want to show people that there is another way than the one with tasteless bears and unified figures such as Hello Kitty. WHAT MADE YOU NAME THE BRAND ICE ICE BABY? Apart from fashion we also love music. We both grew up in the 1980s when the Vanilla Ice hit Ice Ice Baby was popular. We wanted the label to express that we perceive it as a rascal one and with a sense of humour. Nowadays we play the song by Vanilla Ice quite regularly at our sewing workshops. COULD YOU INTRODUCE ICE ICE BABY SHORTLY? The first idea to start making hand-made small production and exclusive accessories for babies emerged two years ago. About a year ago we started doing it properly. We create clothes for children up to 5 years of age. What is specific for us is moderate colourfulness, smart details and original printed illustrations. A grey knit is a unifying feature. WHAT KIND OF ITEMS DO YOU MAKE? Blankets, swaddling blankets, bed cushions for the youngest ones, clothes, decorations for children and their bedrooms, stickers, decorative cushions and toys. WHAT DO YOU LIKE THE MOST ABOUT ICE ICE BABY? Probably the freedom of creativity. The children can have a lot so there is no need to slow down. On the contrary: there are more and more ideas, it is the days that have only 24 hours. WHAT MAKES YOUR PRODUCTS INTERESTING? Our products are not over-the-top. We choose patterns, colours and â–ş

shapes carefully. Based on our experiences, we know how difficult it is to get a nice and simple blanket into a pram. WHAT MATERIALS DO YOU USE? We mainly try to use the natural materials. In most of the cases it is wool with small portion of additives. CAN YOU SHORTLY DESCRIBE THE PROCESS OF CREATION? We try to make simple things with extra value and perfect details. Some of the products we try to sew straight away, some of them we need to draw first. We complement each other and our ideas are completely spontaneous. HOW DO YOU DESIGN THE PATTERNS? At the beginning we only sew for babies and there we used the classics which the experience proved to serve well. Other patterns, such as the ice-cream in our logo and other printing motives were designed specifically for us by Jana Kloučková Kudrnová, a graphic designer and an illustrator. Her blog ‘Z lesa‘ expresses exactly how we would like our products to communicate our message to people. We use the method of serigraph to transfer the patterns of textiles. WHERE CAN WE BUY YOUR PRODUCTS? Right now we are starting a e-shop at www.iceicebaby.cz where you can buy all our products. WHAT ARE YOUR PLANS FOR FUTURE? The biggest obstacle for us is the limited possibilities when it comes to technology. SMAR T I N T H E K I TC H EN WE SPEND THE MOST TIME IN THE ROOM WITH THE MOST APPLIANCES. NOT ONLY WE COOK HERE WE ALSO WORK HERE. WE WILL GIVE YOU SEVERAL TIPS ON HOW TO BEHAVE ECOLOGICALLY.
1. If you use appliances of A or A+ energy class you are helping to save the environment. Compared to a class C appliance, appliance A uses three times less energy.

2. Another factor influencing the use of energy is the position of kitchen appliances: a fridge should not be close to those appliances producing heat.
5. Ecological products in the kitchen are the best because they are natural and do not pollute the environment.
3. Another way of diminishing the waste of water is turning the dishwasher on only when it is full. If you select the eco mode, your savings will be even more effective. 4. PIf you turn off the stream of water when washing up, you use 6 litres less water per minute than if you have it running all the time. SU STAINABL E I N T H E L I V I N G RO O M IF YOU TRY AT LEAST ONE OF OUR TIPS, IT WILL NOT MAKE YOU LOSE YOUR LIVING ROOM COMFORT, ON THE CONTRARY, THEY MIGHT EVEN INCREASE IT.
1. Switch off your electronic devices: even in the stand-by regime they need energy. Furthermore, by turning the devices completely you are also saving their life. 2. Old furniture can look new. All it takes is to replace the old doors with the new ones or give it a new paint. The Balakryl company supports the recycling of old items with its project soutez.balakryl.cz, so you can sign your new recycled masterpiece and win a generous amount of money. 3. Be sensible with heating. If you lower the temperature by 1째C you spend 5 % less for the energy and you also diminish the amount of emission. 4. Even the disposition of the furniture in your flat is important. There should be free area in front of the
radiator so that the heat could flow freely into the room. 5. In winter it is goo to air the room in short intervals. 5 minutes twice a day is enough 6. Curtains should not prevent the heat from the radiator from spreading into the room. If your curtains end at most 5 cm above the top edge of the radiator, you will use 25 % less energy. 7. If you move a lamp closer to where you need the light, you can use a weaker light bulb because you will need up to 30 % less energy. 8. By using the power saving energy light bulbs you save the energy. Furthermore, if you turn off your lights sensibly, you minimise the light pollution as well.

DO YOU LONG FOR AN ATTIC APARTMENT? LET YOURSELF BE INSPIRED BY A FLAT IN TŘEBOŇ WHICH BUSTS ALL THE MYTHS ABOUT LACK OF LIGHT AND SPACE IN ATTIC FLATS. IT BLENDS THE OLD FEATURES WITH THE NEW ONES! We like to introduce homes which take your breath away upon the entrance. In case of such living there is a direct proportion: the more interesting the interior, the more inspiring the residents. Jana and Albert Urban from Třeboň are living examples of such people. They invited us in their unique attic apartment. “We always wanted to live in an old building so when we had a chance, fifteen years ago, to buy an old attic space in this building from the 17th century we did not hesitate” Jana and Albert begin the story. However, the journey to the current shape of the flat was not easy at all. “What is now our flat used to be three dodgy hallways full of rubbish” says Jana. “We knew from the beginning that we do not want the classic 4+1 flat, we like open space – that is what makes us feel nice” they explain. Based on their wish, a unique area for living was created. It has a U shape and the only separated room is the bathroom with the toilet. The en► ENTRANCE TO TERRACE: Glass plays an important role in the interior of this attic flat. In contrast to other materials it allows smart perspectives which make the space look bigger. Thanks to the glass floor there is plenty of light even in the entrance hall downstairs. The large glass wall and the door leading to the terrace are the most significant features of the newly reconstructed flat and allow enough daylight in the entire flat.
trance hallway is situated on the lower floor. “We like that we sleep, eat, work and play with the children in a single area” say Jana and Albert. Furthermore, it is the absence of walls that ensures the clarity of the space. The current form of the interior is a result of its second reconstruction. “We needed to let more daylight in and so we had the original dark girders painted white. We tuned the colours with caffe latte in the walls” says Albert. The flat is now very harmonious and well-balanced. The light base of the interior is easy to complement with accessories of various colours and dezeens. Jana likes linen and knitted accessories and so she equipped her entire flat with products from the Coclea e-shop. Albert and Jana honour traditions but they also like modern design. Their home is an exciting mixture of the old and the new. The hundred years old girders greet the shiny modern furniture, the specific auction chairs complement the simple functional bespoke furniture. The mixture as a whole, however, gives a nice balanced impression! “Such specific space requires furniture tailored specifically for” says the couple. “We had it made also for the children’s bedroom where there is enough space for children’s games. Our children like drawing and the neutral colours in their room are the ideal background for their masterpieces.” ► KITCHEN: Jana likes to cook and so she wished for the kitchen to be located in the centre of the flat. Such position also allows her to know who enters into the flat, whereabouts her children are in the flat and what the weather is like. DINING AREA: Many guests can sit around the large wooden table. In the back part it is smartly attached to a wooden shelf – similar to the one which is behind the bed in the bedroom area.
LIVING ROOM AREA: The small table is perfect not only for reading but also for working on laptop. The children prefer to stay closer to the floor and love the big cushions by Mikmax.
You would not find any paintings anywhere else in the flat, though. Albert explains that “We like to admire the perspective of the ancient girders and the view from the windows across the roofs. No other art is necessary.” When we asked Jana and Albert if they plan any other renovations, we were given a unison answer: “We are happy that everything is done. We and the children are happy like this.” ■ BEDROOM AREA: The wooden veneer is so distinctive that in combination with sheets of neutral colours the result is perfect! BATHROOM: The bathroom is the only separated zone of the flat. It is filled with daylight thanks to a big French window. The combination of concrete grit and wood will never lose its charm!
