It almost sounds as if the title refers to our five-member team... but it doesn’t. It refers to the five human senses: touch, smell, sight, hearing, and taste. The new SOFFA 08 is completely dedicated to them all. An ideal topic for spring when everything’s blooming, smelling, and the birds are singing, don’t you think? When we were preparing this issue we tried to devote the same attention to all five senses – they are all very important to us! You’ll meet people whose professions are built around the individual senses. Your taste buds, we hope, will be tickled by delicious recipes: a bábovka and a fresh spring salad. Even our two photo stories are connected to tastes (and scents). Together with Zuzi and Jan from the Taste of Prague you’ll get to know more about Prague through gastronomic experiences. In the second article we present you with Phill’s Twenty7 bistro.

Flowers are a must for a spring issue! Janka Murínová took care of flower decor. The scent of flowers will breathe at you from the paper itself when you browse through the fashion photo story we created with the Couple of Prague and Květinové Lahůdkářství. WE WERE WONDERING HOW TO INTRODUCE YOU TO SOMETHING THAT YOU KNOW BEST YOURSELVES, THE HUMAN SENSES, UNTIL WE THOUGHT OF ASKING PEOPLE WHOSE PROFESSIONS ARE BASED ON SENSES. AND SO YOU WILL HAVE THE OPPORTUNITY TO MEET PEOPLE WHO ACTUALLY MAKE THEIR LIVING FROM TOUCH, SMELL, HEARING, SIGHT, AND TASTE, AND YOU WILL LEARN MORE ABOUT THE TOOLS OF THEIR TRADE. ENJOY ALL FIVE OF THEM! Senses allow us to perceive information from our surroundings and are therefore a vital source of knowledge. Each sense has its own receptors. For sight it is the eye, for hearing it is the ear, for touch it is the mechanoreceptors in the skin, for taste it is the taste buds on the tongue, and for smell it is the olfactory receptor cells in the nose. We all use senses but only a few of us have made them our profession. We found five people whose professions make sense! Helena Heinz makes soaps and works with scents, optician stylist Martin Dudek can fit glasses like a fashion designer, musician Boris Carloff writes his own music and composes music for film and television, ceramist Bára Diduchová creates fragile ceramics with her own hands, and Michal Štěpánek, a co-owner of Prosekárna, is a specialist in coffee and sparkling wine. We asked them all to bring items with them that are important for their jobs – that is, important for their respective senses – to the photo shoot. As a result, a unique collection was born. Five senses, five people. Wondering where the sixth one is? We’ll leave that up to your imagination! ■

SOAPMAKER HELENA HEINZ: SMELL In the case of scents the decision was clear: the talented designer Helena Heinz. We are absolutely addicted to her scented products. Helena gets her inspiration from the shapes of stones, because she says that pebbles in water evoke emotions in her. Her handmade soaps are made according to a secret recipe and are original, in their shape and scent as well as their wrapping. Enjoy! OPTICIAN STYLIST MARTIN DUDEK: SIGHT How to turn your bad sight into an advantage? Ask Martin Dudek, an optician stylist at the Žilka Optik Studio, he knows all about it. Martin knows the proportions of human faces so well that he can immediately tell which type of glasses would suit you. Choosing the right glasses is an art, and Martin is a master! MUSICIAN BORIS CARLOFF: HEARING Few musicians are as enjoyable as Boris Carloff; that’s why we chose him as the representative of hearing. As a composer, singer, and musical producer he has no more important sense than his hearing. Boris studied violin. His producing falls somewhere between electronic, rock, and jazz. He also composes classical music. You might come across his music in a number of films and television productions! CERAMIST BÁRA DIDUCHOVÁ: TOUCH Our favourite ceramist Bára Diduchová and her colleague Petra Mašková produce their handmade ceramic and porcelain under the Ema Mamisu brand. Organic shapes in pastel and neutral earthy colours with gentle patterns are unbelievably magical and fragile. Artful hands and the sense in them are the basis of Bára’s job! WE LOVE CHALLENGES, SO WE DECIDED TO MAKE A WEDDING FASHION SPECIAL IN THIS SPRING ISSUE. IT WOULDN’T BE US IF WE DIDN’T DO OUR WEDDING PHOTO STORY DIFFERENTLY. IF YOU’RE GOING TO A WEDDING, WE HOPE OUR OUTFITS, BOUQUETS, AND LOCATION CHOICES WILL INSPIRE YOU! Because we’re fed up with the ugly and cheesy wedding pictures we see everywhere, we decided to take control of the situation and show you that wedding photos can look a little different! The basics are naturally a well chosen dress, accessories, and flowers. So we asked prominent Czech designers for help and they provided us with amazing wedding gowns for the photo shoot. The Květinové Lahůdkářství flower shop created beautiful bouquets to go with the gowns and the photographers Eliška and Lukáš from the Couple of Prague in Brdy with pictures so perfect they’ll take your breath away! We hope our photo story will convince you that wedding pictures don’t always have to be taken at a château or in a ceremonial hall, that you can get married in ordinary clothes, that the bride doesn’t have to wear tonnes of makeup, and that the groom can wear wellies for a couple of pennies. It’s the atmosphere that matters! ■

FOR AN ISSUE DEDICATED TO THE SENSES WE WANTED SOMETHING THAT WOULD PLEASE YOUR EYES AND ENCOURAGE YOUR BRAIN TO THINK. THAT IS WHY WE DECIDED ON SOMETHING COLOURFUL, AND VERY FLORAL. A COMBINATION OF FLORAL PATTERNS, VARIOUS ANIMALS, AND FURNITURE MINIATURES IS FUN! Our designer Janka brought plastic dinosaurs and that started it! Who wouldn’t love them? We like iconic furniture miniatures, strange accessories, flowers, and various creatures. We also enjoy playing with proportions and perspectives, and so we came up with four flower camouflages that will turn your imagination loose. Look for animals, hidden stories, and above all for an inspiration for your own home. In the field of interior design, the time of colourless and unhomey interiors is over. What’s trendy is colour – colour of any type, plenty of flowers, and amusing details. Even your living room, dining room, or bedroom deserves to look like a beautiful flower shop! ■

THE GARDEN OF EDEN If you’re a hopeless romantic, definitely bet on roses and buttercups. LONGING FOR AN HERB CORNER BUT HAVEN’T GOT A GARDEN? YOU CAN CREATE YOUR OWN HERBAL STILL-LIFE EVEN IN THE BIG CITY – FOR EXAMPLE, ON YOUR BALCONY OR TERRACE. WE’LL SHOW YOU HOW TO LOOK AFTER IT PROPERLY! If you like to use herbs in your cooking, it’s time for you to start growing them yourself. It doesn’t matter if you don’t have land, you can grow your herbs in dishes! Get your inspiration from these herb corners created on a lovely spring afternoon by our Creative Designer Lenka and Marketing Manager Terézia. We’ll advise you on what dishes to use and how to look after your herbs. City gardening is trendy, and to show you that you can dress stylishly even when working with soil, Lenka and Terézia wore clothes from our favourite e-shop, ZOOT. They also found great accessories for your garden and kitchen, and even made a fresh mint tea with sap from freshly potted mint! INSTRUCTIONS: If you have enough time and patience you can create your own herbal garden. Get quality seeds and let them sprout in damp cotton. Then put the sprouts into soil. ►

THYME

Marjoram is used in all world cuisines – both dried and fresh. In Czech cuisine it is the base of potato soup and potato pancakes. It can be combined with other spices and herbs and is used to flavour sauces, meat, and vegetable salads. Marjoram is good for digestion.

Mint is a perennial herb used in medicine, kitchen, and cosmetics. It contains oils such as menthol, flavonoids, tannins, and phenols, all of which have positive effects. Mint helps indigestion, cramps, and nausea. It soothes headaches and unblocks a stuffed nose.

Rosemary has a cheerful and encouraging aroma that recalls the Mediterranean. It is good for digestion and helps improve low blood pressure and concentration. It also has antiseptic effects. In the kitchen rosemary is either used on its own or as part of Provence seasoning.

Thyme is good for diarrhoea, bloating, and problems with indigestion as such. It is one of the strongest antiseptic drugs and helps upper respiratory tract problems as well as rheumatic pain. It is often used in Mediterranean and French cuisine, often with legumes.


If, however, you’re low on time – like Lenka and Terézia – get well-grown plants (no brown dry leaves) in pots and repot them. We recommend big gardening centres or markets. Which herbs are suitable for window sills and balconies? Basil, parsley, coriander, sage, oregano, but also mint, rosemary, thyme and marjoram – which is what we used. Prepare the dishes into which you will be repotting the herbs. It’s important that they’re a little bigger than the original pots. Make sure that the wrappings are aesthetically pleasing. For example, a mixture of several different types of dishes. You can also go for clay flower pots, metal watering cans, and old unused porcelain. Before you start potting, get a suitable substrate. We recommend a mixture of earth, sand and compost. Herbs like sandy soil. Create a little drainage layer on the bottom of the pot from, for instance, several stones, and a handful of the substrate. Then take the herbs from their original pots and repot them. Add the soil and squash. Don’t forget to wet the herbs and give them enough light. If you need more information about how to look after your herbs, ask in any gardening centre. The essentials of success are a suitable, sunny place and adequate watering. TIP: If you wish, you can create your own labels. The easiest way to do so is to take a wooden peg and write the name of the herb on it in marker. WE’VE BEEN PLANNING TO INTRODUCE A PUBLIC VENUE TO YOU FOR A WHILE, AND FINALLY THE OPPORTUNITY CAME IN THIS ISSUE! COME SEE THE INTERIOR OF PRAGUE BISTRO PHILL’S TWENTY7, DESIGNED BY JAN PLECHÁČ AND HENRY WIELGUS. EVEN THE OWNER HIMSELF GOT INVOLVED. COME IN! New flats and houses are a common topic but public venues such as restaurants, offices, or hotels are often overlooked. And yet the execution of these venues can be very interesting, and far more enjoyable to hear about from the creators themselves. Phill’s Twenty7 Bistro in Holešovice, Prague is a brilliant example. Owner Filip Mičan graduated in photography. He has always loved food and travel, and so he decided to open his own business in Prague. He had been looking for a suitable venue for some time when his friends – designers Jan Plecháč & Henry Wielgus – gave him a tip for Holešovice. “We used to have our own studio here, so we knew what this part of the city lacked and what would be doable,” Jan and Henry say. ► RIGHT: It’s mostly “regulars” who sit at the round table by the entrance – the designers Jan Plecháč and Henry Wielgus are two of them. Jan and Henry designed the round table specifically for this location. The metal underframe is from an XZ3 table by Magis. The wooden section was made by a carpenter friend. The table is accompanied by J110 chairs by Hay. Filip was worried about using glass chandeliers from the Neverending Glory collection, designed by Jan and Henry for Lasvit, at first. However, with Lasvit’s main office right in the neighbourhood, using the chandeliers was a no-brainer.

So when Filip had an opportunity to renovate the venue of an old pub at 27 Přístavní, he didn’t waver and asked Jan and Henry to get involved with the execution. “I had an idea about what the bistro should look like and what kind of food we would serve. I wanted to execute everything quickly,” Filip says, “but the guys persuaded me to do the reconstruction slowly and give it more time – and it was worth it.” For Jan Plecháč and Henry Wielgus, Phill’s Twenty7 Bistro was the first design for a restaurant, a long-awaited project that has been a dream come true. “I always wanted to have my own business that I could influence,” Jan says. “The difference between designing a private apartment and designing a public venue is huge. You can influence the atmosphere and ambience of a public interior so much more. It’s also the feedback that’s much stronger – that’s why we enjoy coming in and watching the reactions of the customers so much,” the designers say. After coming to agreement with Filip, Jan and Henry designed the interior in an industrial style with slight retro features and subtle colour tones. As a result, the bistro fits in beautifully with the industrial character ►

RIGHT: On the black wall next to the bar there’s space for a drink menu written in chalk. We come for the great breakfast with coffee – we recommend it! An important defining feature of the interior is the combination of different structures that add to the dynamics of the space. For example, the white brick wall beautifully contrasts with the bar, which is overlaid with dark metal “scales”. A rooftop motif inspired the design. The lights over the long bar are hand varnished, the same lights that hang over the tables in the dining area of the bistro. The largest wall in the dining area is painted black and decorated with the motif of a huge basil plant. The owner, Filip, is already considering how to change it.

of Holešovice while still creating a modern impression. The basics of the design were huge windows and a beautiful original mosaic that had been covered under a carpet and a layer of glue. “I did almost everything in the bistro myself: I uncovered the floor, cut the wall down to the bricks, sprayed the walls back up, coloured the lights, and did a lot of other things. I also had to make a door between the rooms. Construction lasted about four months but that makes me appreciate the masterpiece even more,” the owner explains. “When designing the interior furnishings we stressed out different structures. The combination of the rough bricks, the metal roof tile overlay on the bar, the chairs, and the chequered mosaic all create an interesting interior dynamic undisturbed by the subtle colours,” Jan explains. There are none of the pieces from vintage bazaars that are so popular nowadays. With the custom made furniture and accessories, the designers have managed to move the interior a little bit further forward than the average standard for businesses of this type. It is the concept of the bistro itself that is raised to a whole new level by offering a stable menu. Filip’s Twenty7 is a comfortable place for breakfast, dinner, or supper. LEFT: The floor is composed of an original mosaic discovered during the renovation. To a certain extent, it laid the basis for the colour spectrum of the interior. The tables with wooden tops and metal underframes are custom made, like the lights above them. Jan and Henry had the metal lights moulded from a form used for old equestrian helmets. Their copper colour lights up an interior of otherwise neutral tones. Ironica chairs by Ton give the bistro a pleasant hint of retro, as do the finned radiators by Radiana and the custom neon “Here you are” made by Elektro NEON Nejtek.

The house is on Kungshöjdsgatan Street, which can loosely be translated ► DINING ROOM: This generous space with its four connected rooms allows us to see through the entire length of the flat. It really feels like a château. The living room is linked to the dining room, which preserves the original stuccos and rosettes like the rest of the apartment. From the living room we can see a black marble TS Table by Gubi and a legendary Egg chair by Fritz Hansen.

DINING ROOM: Black furniture dominates the dining room. The T12 dining table by Hay is accompanied by the already iconic Ant chairs, which were designed by Arne Jacobsen for the Fritz Hansen brand. For a greater level of comfort at the dining table, there is a handmade wool Sentimental carpet by Linie Design.

LIVING ROOM: This room is the centre of the apartment. The minimal use of furniture (only in black, a beautiful contrast with the glossy beige flooring) ensures that the space is airy. The simplicity of colours and minimal furnishing also resonates with the crystal chandelier in the centre. The originality of the details is crowned by the original tiled fireplace, which still works. The black textile settee is by Ire, the series of three TS tables were designed by GamFratesi for Gubi, and next to the settee there is a Tab F lamp by Flos. The accessories are important, too: the Coral vase by Pols Potten and the Weight Here candlesticks by Menu far on the window.

LIVING ROOMS: Black design icons (legendary armchairs and chairs by Fritz Hansen, modern furniture by Menu and Hay) contrast in their shapes and materials with the original furnishing of the apartment. Here black varnished steel, raw concrete, frilled linen, glossy marble, and sparkly glass all stand next to each other. Such combinations and a unique view make the atmosphere of the apartment truly magical!

as “in King’s Heights” – and that is exactly how you feel when you enter this apartment with its beautiful and overwhelming view. The unique and almost 200 m2 large interior in a Neo-Romantic building has an elegant and timeless character. And yet it is furnished in a minimalist style. The feeling that you are at a château is evoked by the four connected rooms, glossy light marble floor, and tall ceilings, which provide just enough space for huge crystal chandeliers. It is the crystal chandeliers and paintings on the walls that represent the only original furnishing of the apartment before Sarah Widman, a professional stylist, commenced her work here; she was absolutely free to choose the furniture and accessories. She only had to get everything from the Rum21 store. Note that Sarah chose only black products which make the interior look dramatic and yet allow the original features such as rosettes, stuccos, and the tiled stove to stand out. The most beautiful view of the city is from the big room in the tower with windows facing three different directions. This is called living like a King! The apartment is close to the Arsenalgatan Street (one of the most attractive addresses in Göteborg). The buildings here are highly valuable protected heritage sites. Therefore, during the renovation in 2005, the original rosettes, deep niches, and tiled fireplace were preserved. Radiators were also replaced with floor heating. Thanks to these gentle interventions the apartment did not lose its original spirit and yet still makes a modern impression! ■

KITCHEN: The kitchen was completely renovated in 2005. The furnishing is by Puustelli. The kitchen equipment is modern (for example the Afteroom chair by Menu) and provides a contrast with the original cabinet.

BEDROOM: The main room is accessible from the living room as well as from the room in the tower; you can access the bathroom from there. Even here the furnishing is in a black and white elegant minimalist style. Next to the bed there is the Leaf lamp by Muuto. The linen bed sheets are by Tell Me More and the frilling gives the bedroom a slightly more dramatic air. The Arctic carpet is by Linie Design. On the Elephant table by Wrong for Hay next to the bed there is a concrete Amis vase by Tell Me More and glasses by House Doctor. STUDY (NEXT PAGE): The first of the rooms now serves as a study and an occasional bedroom. Even this room provides access to a long balcony. In the centre of the room there is a black Loft table by Decotique and black swivelling About a Chair chairs by Hay. On the table there is a Mic lamp by Calabaz and an Aramis vase by Tell Me More. Storage is provided by a Verso shelf by Hem.

LOVE STARGAZING? TRY MAKING A POSTER FOLLOWING OUR DESIGNER LENKA’S DESIGN – IT GLOWS AND GLITTERS AND WILL BRIGHTEN YOUR HOME. IT’S QUICK AND FUN! DIFFICULTY: easy TIME: 30 – 60 min. (depending on complexity) WHAT YOU NEED: black construction paper glass iron-on No Hotfix Stones by Preciosa with flat bottom (cca 10 pcs) glue ruler white pen pencil (optional)

Lenka was thinking about how to bring twinkling stars into an interior and she came up with a simple and ingenious solution. She bought little glossy iron-on No Hotfix Stones by Preciosa, copied her favourite constellations on black construction paper and thereby created an original poster! Now even you can enjoy the soothing look of a star-dotted sky at your house – all you need is to choose a motif and get to work. Lenka used colourless stones but you can be inspired to create your own motifs using coloured stones as well! INSTRUCTIONS: First, decide what size poster you will be making. For the night sky Lenka used black A4 construction paper. Then buy plenty of glass stones (Lenka got hers from Preciosa. Iron-on No Hotfix Stones have flat bottoms that make them suitable for a variety of surfaces. ►

Your first step is to use a white pen to make different sized points on black construction paper. Connect the points with lines in order to create a triangular net. You can make it more dense later by adding and linking more points if you feel that there are areas where the points are too far apart; or you can link some of the points with points not directly next to each other but one point over. It is nice if you link the points without using a ruler, but the inexperienced can use one – or you can mark it with a pencil and then finish with pen. If you’re worried about what the net will look like, you can first make a pencil draft and then trace it in pen. Then you only need to glue the small glass stones onto several points on the paper – these will represent the stars. The flat bottom side of the stones will let you glue them to the paper easily. You can use either one- or two-component glue for all types of surfaces. Now your poster is ready and all you need to do is decide where to hang it! TIP: Like our idea but don’t need a poster? You can decorate a notebook or a book cover, a T-shirt, shoes, furniture, and many other accessories the same way. WHEN WE WERE CONSIDERING THE BEST WAY TO INTRODUCE TASTE, WE IMMEDIATELY THOUGHT OF ZUZI AND JAN FROM THE TASTE OF PRAGUE, WHICH GUIDES FOREIGNERS AROUND PRAGUE USING GASTRONOMY. WE’VE HAD OUR TOUR OF THE BEST SPOTS IN PRAGUE, AND NOW IT’S YOUR TURN FOR A LITTLE TASTE! Do you love good food, travel, history, and good company? Then you should definitely go for a tour of Prague with the Taste of Prague. We did – and we truly recommend it. Zuzana Daňková and Jan Valenta are Prague tour guides, but not of the sights (though they don’t exactly avoid them); they take tourists to restaurants and pubs where the dining is worth it. WHAT CAN TOURISTS EXPERIENCE ON YOUR TOURS? When we travel we avoid organised tours, popular tourist attractions, and mass events. And that is exactly the type of people our tours are for. We walk in small groups – just like you would go for a meal with your friends – and we want to show people local life, culture, and atmosphere. Our care for our visitors, however, doesn’t end with the tour. We like to answer all their questions and give them more tips. WHAT ARE THE REACTIONS OF FOREIGNERS TO CZECH CUISINE? They are often surprised at the size of the dishes. They mostly like Czech cuisine, and some meals are loved by absolutely everyone: for example a “větrník” (sweet pastry with creamy fillings and icing)! Try to imagine what it feels like to stroke luxuriant hair with your fingers, to touch the rough bark on a tree, to let a handful of soil run through your fingers, to lie down into a moss carpet, to feel the tickle of a bird’s feather, or simply to touch someone’s palm. SCENTS HAVE FASCINATED HUMANS SINCE TIME IMMEMORIAL. THE FIRST EFFORTS TO CAPTURE THEIR ELUSIVENESS WERE MADE AS EARLY AS 2000 BCE IN MESOPOTAMIA. SINCE THEN THE TECHNOLOGY FOR OBTAINING AROMATIC SUBSTANCES FROM PLANTS HAS ESSENTIALLY REMAINED THE SAME. THERE ARE ABOUT 2000 AROMATIC PLANTS FROM WHOSE FLOWERS, ROOTS, FRUITS, LEAVES, RESINS AND WAXES ESSENTIAL OILS CAN BE ISOLATED. THERE ARE ALSO DOZENS OF SUBSTANCES FROM THE ANIMAL KINGDOM PRIZED FOR THEIR AROMA, SUCH AS MUSK AND HONEY. Aromatic substances from plants are most often obtained using four methods: distillation, either wet steam (flowers) or dry steam (aromatic woods); extraction using solvents (most frequently kerosene or CO2); enfleurage, where flowers are pressed into a thin layer of oil or odourless fat that absorbs their floral essence, a process repeated numerous times until the oil or fat is fully saturated with their aroma; and expression, a mechanical method of extraction used to obtain aromatic oils mainly from the rinds of citrus fruit. As aromatic substances are usually highly volatile, they have to be stabilised if they are to be used as ingredients in perfume. Traditionally, oakmoss and Orris root are used for this purpose. Aroma can also be released from dry plants by burning them. This has been used for millennia during ritual fumigation, a practice present in all cultures. Most often aromatic resins, such as myrrh, benzoin, and dammar are burned, but the leaves of herbs, such as the extremely powerful white sage, are also used. ■

TIME: approximately 2 hours (including marinating) SERVES: 2 portions INGREDIENTS: SALAD 1 pack of rocket (or another type of leafy green) 10 large shrimps 1 mango 100 g fresh coconut 3 jalapenos Thai basil coriander black sesame seed

INSTRUCTIONS: First, wash the rocket (or the different type of leafy green you decided to use) and the herbs. Peel the mango and chop it into cubes approximately 1 × 1 cm. Cut the jalapenos into slices. Then prepare the marinade. Chop and mix all the ingredients in a small pot. Boil for approximately 10 minutes, press into a puree, and leave to cool. Marinate the clean and peeled shrimps for at least 60 minutes. Then stir-fry them briefly in a hot pan with a spoonful of oil. Now you can serve. Mix the greens and lay them nicely on a large plate. Add the mango and jalapenos. Lay the stir-fried shrimps on the top. Drizzle with lime dressing and garnish with herbs, sliced coconut and black sesame seeds. ►

LIME DRESSING 100 ml fresh lime juice 50 ml fresh orange juice 30 ml virgin olive oil 2 tbsp roasted sesame seeds 2 tbsp Kikkoman soy sauce ½ jalapeno 1 tbsp sesame oil freshly ground white pepper salt sugar

MARINADE 300 ml apple juice 1 apple 30 g ginger 3-4 tbsp Kikkoman soy sauce 2 tbsp honey 2 tbsp cane sugar 1 jalapeno 3 pieces of star anise 1 clove of garlic

TIME: approximately 2 hours (including rising and baking) SERVES: 2 loaves INGREDIENTS: 680 g potatoes 665 g fine flour 150 ml potato broth 100 g walnuts 1 sachet of dried yeast 2 tbsp of olive oil 4 tsp of salt

INSTRUCTIONS: Wash the unpeeled potatoes thoroughly, chop into quarters and boil in salted water (two teaspoons of salt) until soft. Drain boiled potatoes but keep 150 ml of the broth. Leave potatoes to cool down. Peel potatoes once cool. Then mash the potatoes with a fork or grate them, then add the oil and the yeast dissolved in the potato broth. Now start working the dough. Once you have a nice consistency, add flour and salt. After a while of working with it, it transforms into a nice dough into which you can add the shredded walnuts. Leave the dough covered to rise for 30 minutes. Split the risen dough into two pieces and make two loaves, roll them flat, and wrap them around using a rolling pin. Lay the rolled loaves onto a baking tray with greaseproof paper and flour. The bread needs to be laid with the rolled joint down. Leave the loaves covered on the baking tray to rise for another 30 minutes. Preheat oven to 190 °C, turn the loaf roll joint up and bake for approximately 30 – 40 minutes. ■

WE REACHED OUT TO BISTRO NO.19, WHICH IS PART OF PROJECT ZÁSTĚRKA (THE CZECH WORD FOR APRON) AND GOT YOU THIS RECIPE, WITH A SECRET INGREDIENT OF LOVE. TIME: 60 minutes SERVES: 1 bábovka INGREDIENTS: 5 eggs 3 cups of flour 1 ½ cup of granulated sugar 1 ½ cup of milk 1 cup of oil 2 tbsp of cocoa 2 tbsp of matcha tea (available at Bistro No.19) 2 tbsp of ground coconut 1 ½ baking powder 1 tsp of vanilla essence

You’re sure to enjoy this bábovka with family or friends. We set a special occasion table with the Zástěrka & Boho project. The entire feast and this unique project, which connects historical aprons by Boho with modern aprons by contemporary Czech designers within the Zástěrka project, will be will be presented in detail in our SOFFA 06 mini issue in May. You’ll see that an ordinary apron can get you back to your childhood and remind you of the smell of home. INSTRUCTIONS: Mix flour, sugar, eggs, milk, oil, baking powder, and vanilla essence. Take one quarter of the dough mixture and mix in the cocoa. Then take out another quarter and mix it with the matcha tea.

Grease the baking mould and sprinkle with coconut. First, pour the basic dough into the mould, then the cocoa mixture, and lastly the mixture with matcha tea. Then stir until the dough creates a marble pattern. Put the mould into a preheated oven and slowly bake for approximately 40 minutes at 180°C. When the bábovka is ready, let it cool down a little before you pop it out of the mould. WHERE TO GO IN AN ISSUE DEDICATED TO THE SENSES? THE DECISION WAS CLEAR! THE SOUTH MORAVIAN REGION PLEASES ALL LOVERS OF BEAUTIFUL SCENERY, GOOD WINE AND FOOD, TRADITIONAL FOLK MUSIC, AND THE SCENTS OF NATURE. If you need a tip for an extended spring weekend, we sincerely recommend Podyjí and Pálava. We went there for four days. First we went to the Podyjí National Park and the Znojmo region, then we moved on to Pálava in Mikulov. On the way we stopped at the Nové Mlýny (New Mills) Dam. It is possible to divide the journey into two separate trips. WHAT TO SEE AND DO IN PODYJÍ: The main objective of our trip to South Moravia was to see the beautiful unspoiled nature of the Podyjí National Park. Founded in 1991, it is the smallest national park in the Czech Republic, ranging from Znojmo to Vranov along the Dyje. The area was declared a national park predominantly due to its 42km long river canyon, which houses a vast number of different species of plants and animals. The National Park can be entered in several places: we set off from the village of Čížov (where we were staying). At the very end of ► LEFT: It’s no accident that the view from Svatý Kopeček (Holy Hill), one of the symbols of Mikulov, is the cover photo. A series of small niche chapels leads you through the Stations of the Cross to the top and the Chapel of Sv. Šebestián, the bell tower, and the Church of the Holy Sepulchre. And it is sacred buildings of all types, from church to chapel to via dolorosa, that characterise the South Moravian region.

the village there is the NP Podyjí Visitors’ Centre, where you can learn a lot about the park. A number of brochures and fliers are available that can inform you about trail paths suitable for exploring the beauties of the park. Cars aren’t allowed in, so you’ll have to walk from here. Don’t worry: the hiking routes in the park are thoroughly marked, so you won’t get lost. At the edge of Čížov you will also notice the remnants of technical obstacles belonging to the Iron Curtain. The place will remind you of this horrifying era and the impenetrable border between the East and the West. From Čížov we continued to the Hardegg vista, one of the most frequently visited places in Podyjí. This romantic site offers a beautiful view of the Dyje River valley and across to Austria and the picturesque town of Hardegg. Among the other places we saw in the Podyjí National Park that you should definitely not miss out on are Lusthaus in the former Čížov park and Nový Hrádek (New Castle), an unusual fortification providing a great view of the surroundings. You should also catch a short section of the area called Devět Mlýnů (Nine Mills) and The Pašerácká Stezka (Smugglers’ Trail), as well as the Šobes vineyard. You can get more information at www.nppodyji.cz. ► PREVIOUS AND THIS PAGE: Did you know that the Podyjí National Park is the smallest national park in the Czech Republic? The canyon of the Dyje River between Vranov upon Dyje and Znojmo, with its sharp-cut meandering, is one of the few preserved river valleys in Central Europe. A visit to Hardegg vista is a must: it offers a mesmerising view of the town of Hardegg on the Austrian side of the river. We explored the beautiful features of the newly renovated Lusthaus, as well. At the edge of the town of Čížov you’ll find the building of the NP Podyjí Visitors’ Centre, as well as 200m of ruins from the Iron Curtain, a reminder that during Communism no one was allowed here except border control. It’s a hard thing to imagine nowadays, when there’s practically no border at all! This place is also ideal as a starting point for other trips around the National Park.

THIS PAGE: Znojmo is the East gate to the Podyjí National Park. You should definitely pay a visit to the historical centre with Sv. Kateřina and Panna Marie Rotunda inside Znojmo Castle. If you want to get as close to the outdoors as possible and have the best position for trips around Podyjí, use the accommodation in a family guest house called U Mišpule in Čížov. The family atmosphere and pleasant guests will charm you.

Znojmo is a chapter unto itself. Don’t pass up the beautiful surroundings, the moors, and the Kraví Hora (Cow Mountain). Inside the city, visit the historical centre with Sv. Kateřina and Panna Marie Rotunde (St. Catherine and the Virgin Mary Rotunda) in the area of Znojmo Castle. Another great thing is a visit to the underground – a labyrinth of up to 30 kilometres of corridors in the rock. For more information go to www.znojmocity.cz MUST-SEES IN MIKULOV: Go to Mikulov, centre of Pálava and winemaking, for at least two days. We know from experience that you won’t know where to go first. Start the city tour at the square, where you’ll find an information centre. A walk to the top of the Svatý Kopeček (Holy Hill) above Mikulov is a must, and the view of the city and all of Pálava will be your reward. ► PREVIOUS PAGE: It’s definitely worth it to visit the picturesque local villages with their large number of valuable buildings. It’s a paradox that due to the isolation of the area during the times of the Iron Curtain, certain architectural features on the buildings remained preserved. The sensitivity with which the villages are set in the scenery is particularly remarkable; take Popice village, for example (top right photo). A traditional house in Podyjí is rectangular in shape and has a richly decorated facade. In Popice we met a winemaker Antonín Koníček, owner of the Celaria winery, where we admired the old cellar and did a bit of wine tasting! RIGHT: During a transfer to Pálava from Podyjí, stop by the cascade of dams called Nové Mlýny (New Mills). This system of dams on the Dyje River was built during the 1970s and 1980s. The top dam provides a great opportunity for swimming, the middle dam is designated as a nature preserve due to the many nesting birds, and the bottom dam serves for production of hydroelectric energy. THE FIRST THING TO CATCH YOUR ATTENTION UPON ARRIVING IN MIKULOV (NIKOLSBURG) IS THE SVATÝ KOPEČEK (HOLY HILL) WITH ITS CHAPEL DEDICATED TO SV. ŠEBESTIÁN (ST. SEBASTIAN). ONE OF THE PAVLOVSKÉ VRCHY (PAVLOV HILLS) WAS DECLARED A NATURE PRESERVE IN 1946 AND IN THE PAST SERVED AS A PASTURE FOR CATTLE. NOWADAYS IT IS HOME TO MANY RARE TYPES OF PLANTS AND ANIMALS SUCH AS IRISES AND EURASIAN EAGLE-OWLS. If you like art, you’ll be in your element in Mikulov. Don’t miss out on the Gallery Závodný, a marvel for its architecture as well. If you’d like a good cup of coffee and something to eat, go to the KUK bistro. The Jewish cemetery in Mikulov is also worth visiting, it is one of the biggest and oldest ones in the Czech Republic, a memorial to the large Jewish community which lived here. The tombstones often carry features of traditional Moravian folk art.






THIS PAGE: The view of the fountain and the column of the Nejsvětější Trojice (Holy Trinity), the Dietrichstein tomb, and the Holy Hill behind them is truly unique. Sometimes, Mikulov feels like a completely different world. We felt this in a peaceful way at the wine cellar under the Kozí Hrádek (Goat Castle), where we sampled wine and stayed overnight.

We went to the Svatý Kopeček via the flooded limestone quarry at the Mariánský Mlýn (Marian Mill), which in summer is the best place for swimming. This way you can get to the top from the other side. You will then descend along the via dolorosa back to Mikulov. Definitely don’t miss the romantic Mikulov Castle with its numerous expositions. It also houses occasional exhibitions and wine festivals. Apart from that you should see the baroque church in Mikulov dedicated to Sv. Jan Křtitel (St. John the Baptist), which belongs to the Piarist cloister complex, the Dietrichstein tomb, the Kozí Hrádek (Goat Castle), and the Na Turoldu cave – the biggest underground space in Pálava. And yet it was the vast Jewish Cemetery that appealed to us. With more than 2,500 gravestones and a synagogue, it is one of the largest Jewish cemeteries in the Czech Republic, and proof of the exceptionally strong Jewish community that lived in Mikulov. Some of the gravestones are decorated with the motif of a shell – a typical decorative feature in Mikulov. For more information, visit www.mikulov.cz. Mikulov is also the place to go in pursuit of art. We visited the private Gallery Závodný, where they have a brilliant coffee shop, as well as the studio of Daniel Piršč, a prominent Czech porcelain designer. ►

LEFT: The castle in Mikulov also magnificently dominates the city. The original castle was given by Přemysl Otakar II to the House of Lichtenstein in 1249. The castle took on its current form in the 18th century and now houses a museum. NEXT PAGE: Studio Pirsc Porcelain by Daniel Piršč, a prominent Czech porcelain designer, is inexorably linked to Mikulov. We visited the studio to see new products (for example the Yellow Hats lamp) and production methods.

His products are even sold in the Gallery Křehký, which organises the annual Křehký Mikulov art design festival. This year will be its fifth year at the castle: 29-21 May 2015. Sounds like a perfect time to visit Mikulov, don’t you think? For more information, visit www.krehky.cz. WHAT AND WHERE TO EAT AND DRINK: There are many restaurants and coffee shops in Znojmo and Mikulov. Especially in Mikulov, we coffee lovers were in our element. We had lunch in the famous family bistro and Sojka&Spol. grocers, where they use fresh local ingredients. At their shop in a blue building directly on the square you can buy a range of organic and natural products. Also on the square the Kafe Pala is hidden in the courtyard of one of the houses – a very pleasant place to rest from all the sightseeing. A little bit further there is the KUK bistro, which you definitely shouldn’t miss for its homemade pastries and interesting interior. If you’re planning a daytrip around the Podyjí National Park, don’t forget to take a packed lunch with you as you’ll surely go off the beaten path. And if you’re worried about what to drink in South Moravia, definitely go for the local wine! WHERE TO STAY: In Podyjí we recommend the family accommodation U Mišpule. You’ll definitely feel at home in this new building designed completely in accordance with the common features of local houses. At your request, the owner will serve you breakfast: fresh cow milk and homemade pies. ►

In Mikulov it is ideal if you stay at one of the local wine cellars. We stayed at the winery Pod Kozím Hrádkem, which is another interesting sight in Mikulov. We recommend it! THE MUST-SEES OF THE SURROUNDINGS: When driving through Podyjí and Pálava note that the local villages are very neat (by Czech standards). The folk architecture especially in the National Park strip in Podyjí is worth noticing. Even we did not manage to see everything in South Moravia – and we had an extended weekend for it! For example, the nearby Lednice-Valtice complex, which is on the UNESCO list, will have to wait until next time.
