It’s not a trifle matter for some Lunch at home with all the trimmings, attending a church service or heading to the beach. At this time of year the question on everyone’s lips is “What are you doing for Christmas?” Amanda Sheehan took to the streets to ask Southsiders about their plans for Christmas Day and those all-important Christmas traditions.

It’s all about the trifle Clarice from Sunnybank has always believed that Christmas is a special time, and at ninety-four she has certainly enjoyed her share of Christmas dinners. Having grown up in country Queensland, she recalls a time when foods such as chicken and turkey were not readily available, and were definitely a luxury reserved just for Christmas Day. For as long as she can remember, Clarice has made a trifle for Christmas Day, prepared according to her mother’s original recipe. Best made a day or two prior to Christmas, Clarice explains that her trifle, which is adored by all of her family, consists of a port wine and orange juice soaked sponge base, followed by a generous layer of home-made custard and a good lashing of whipped cream, almonds and jellies. She explains that the mouthwatering combination usually has her family lining up for seconds and sometimes even thirds at Christmas lunch. “Christmas is the only time I make it, and I know they look forward to it every

year,” she says with a smile. Her second and equally anticipated food tradition is to make a few Christmas cakes, again according to her mother’s traditional recipe. Clarice says that the best part about the cakes is that they can be enjoyed for months after Christmas, if they are not devoured first! This year Clarice will spend the day with her family, including her children, grandchildren and great-grandchildren, at her granddaughter’s home. Everyone will bring food to share for a relaxed lunch of chickens, hams, salads – and of course trifle. Last year the family decided to break with their lunch-athome tradition to enjoy a Christmas smorgasbord at a local restaurant. Clarice says that while the food was amazing, it is “far more relaxing to have the day at home rather than at a restaurant – and there’s only so much food you can eat anyway!” Clarice believes that it is the simple things that make the day special. “It’s nice to make an effort with lovely table settings and decorations, which I always did, but the best part about Christmas is getting along with each other and enjoying time spent together.” Now who could argue with those words of wisdom?

For the past twenty years they have spent the day with friends and family to congregate at the Gold Coast for a day of beach activity including swimming, surfing and beach volleyball. the morning they usually attend a service at their local church and then head back home to enjoy lunch with around twenty family and friends. Susan and Andrew, parents of Shakiah (10) and Indiana (8), explain a favourite family tradition. “A couple of weeks prior to Christmas we get together to place balls on the Christmas tree. Each ball has a name on it. You pass the ball to that person and say something nice about them. Then they place it on the tree and select another ball from the bag.” Susan believes that it is traditions such as these that are the heart and soul of Christmas. Every year the family also enjoy attending a Christmas carols night that is hosted by their local Baptist Church. The free event is open to the local community and boasts fun family activities including a jumping castle and a petting zoo before the carols begin in the evening. “It is a very special time for us as a family,” Susan explains. In order to remind their daughters of those less fortunate, the Drapers have participated in the Operation Christmas Child program for the last six

Each year Shakiah and Indiana fill a shoe box with a number of small gifts for an under-privileged child in an overseas country. “We believe that Christmas is a time to think about others and not just ourselves. We put so much love into these boxes as these children would normally not receive anything for Christmas.” While Susan says her ideal Christmas would be a white one in New York, she believes that nothing could compare with spending the day at home with her husband and daughters. “I don’t want gifts at Christmas. I just enjoy watching our two girls open theirs and seeing the beautiful expressions and excitement on their faces,” she says.

Local Law Firm Wins Landmark Case A landmark decision has helped ease the minds of many funeral policy holders and their families, and has put local law firm, Burns Law, Springwood, even more on the map. In a court case heard at Beenleigh earlier this month, Magistrate Joan White held that a fully paid funeral policy taken out in 1948 was legally binding on the funeral home who sold the policy. Local Springwood lawyer Robert Burns, of Burns Law, successfully defended a Gold Coast couple earlier this month against a claim by the funeral home for its fees. This win gives hope to many others who are the holders of similar policies and even to some who may have already paid out fees to supplement a policy. The court found that the funeral home was bound by the terms of a policy paid in full, 35 years ago. Robert Burns was quoted as saying “There would have been thousands and thousands of other people who paid for funerals they didn’t have to pay for”, and “It’s going to have significant impact on the funeral industry across the board.” In 1948, 16-year-old Beryl Turner took out a funeral policy that cost her 25 pounds (a large amount in those days) and she paid it off diligently over the next 32 years. When Beryl passed away two years ago her son Gavin Turner and his wife Fiona made the funeral arrangements pursuant to Beryl’s fully paid funeral policy. But the funeral home told them that the value these days of the policy funds would only amount to some $390 towards the funeral bill, and that they would have to pay a further $7195, even though the policy promised to deliver a fully paid funeral. When they refused to pay the difference, the

But the decision this month confirmed the liability of the funeral home under this kind of policy. Christmas celebrations are associated with eating specific types of food. These foods can vary from family to family. The following recipes are a firm favorite with my family and friends.

Glazed Ham

Remove the skin from a leg of ham. Do this by making an incision along the front edge of the skin. Pull a little back, leaving all of the fat on the ham. You can ease the skin off by forcing your hand up between the skin and the fat on the ham. If you are using the hock end, I also make a decorative diamond pattern in the skin that is left on the hock. Using a small knife, make a diamond pattern in the fat of the ham by scoring parallel lines about an inch apart in one direction and another set at a 90 degrees angle. At this point some people put a clove in each diamond. On the stove melt together a ¼ cup of Dijon Mustard, ¼ cup of marmalade, ¼ cup of brown sugar and ¼ cup of triple sec (which is the cheaper, generic name of Cointreau). Paint a ¼ of the glaze over the ham and put in a 180 degree oven for ten minutes. Then paint another ¼ of the glaze on the ham and bake for another ten minutes. Repeat twice more for the remainder of the glaze. Cool and store in the fridge. This recipe can be done a day or two before and keep in the fridge. Once the ham has cooled, you can then decorate with glazed fruit, a ribbon and herbs. If you wanted to serve the ham hot, place the peeled and scored ham in the oven for an hour before starting the glazing process, and of course this can only be done on the day. Allow 200 grams of meat per person; for example, a 4 kilogram ham will serve 15 people after allowing 1 kilogram of waste due to the skin and bone.

Turkey with Apple and Sage Stuffing I always use a single turkey breast weighing approximately 2.2 kilogram, which I butterfly out to make a thinner piece of meat so I can roll the meat around the stuffing. Alternatively, you can get your friendly butcher to butterfly the breast. Chop 1 onion, 1 green apple, 3 rashers of bacon and half a bunch of sage and sauté in a little oil and butter. Add this to a quarter loaf of good quality chopped sour dough bread and ½ cup of chopped pistachios. Place the stuffing into the butterflied turkey breast, roll and tie with string. Place on a trivet of chopped carrot and onion and roast at 180 degrees C for approximately an hour and a half. Stand for 15 minutes before removing the string and slicing. This recipe can also be made a couple of days ahead if you are serving it cold.

Ask a neighbour you trust or a friend to keep an eye on your home. Tell them how long you will be away for and who might be coming to your house while you are away such as the lawnmower man or pool maintenance guy. Give a trusted neighbour a key to your home and a number to contact you should anything arise. They can also help feed and look after any pets left at home if you can’t get anyone to mind them. If you have an alarm, also give them the access code in case of an emergency. The code can always be changed on your return if need be. Ask them to bring in your bins and mail and remove any local papers from your driveway or letterbox.

Always remember to pull out the plugs on items not hooked up to timers such as computers, stereos and any other electrical items not in use. You will save on your power bill and will also prevent any damage to your equipment if there are power surges associated with storms and so on.

Summer’s just about here and it’s time to go shopping for swimsuits – or as we call them in Queensland, “your togs”. But do you know which swimsuit complements your body shape? It’s easy enough to pick out a bathing suit you like, but it’s another thing to know if the style matches your body shape. Discover what body shape you have and find out what styles and colours complement you. A straight body shape is the most common body type. It means the waist is aligned with the hips. To create curves the goal is to ‘pinch’ your waist, thereby exaggerating curves. Opt for frills and ruffles to appear more feminine. If your hips appear significantly larger than your bust, causing you to look slightly “bottom heavy”, you are a pear shape. The trick is to attract the attention to your top half. The upper section of a swim suit should have patterns or bold colours and prints to direct people’s eyes off your hips. If you have a top hourglass then your waist is defined yet your bust is still larger than your hips. Find balance between your hips and bust through solid or halter tops and light coloured bottoms that cut straight across your hips. Don’t be afraid to find something with a little ruffle or side-tied bottoms. The retro one-piece style will look fabulous on you. Inverted triangle body shapes tend to have larger and wider shoulders than the waist. So you’ll probably prefer an uncluttered top as you have little definition between your waist and hips. A spoon body shapes means you have larger hips compared to a smaller bust, with a defined waist. Tops that have ruffles, patterns or embellishments with straps that sit mid-way along your shoulders complement nicely. To balance out your hips go for a simple, darker bottom. Don’t be afraid to rock retro style bikinis or a pin-up one piece. An hourglass figure shape means your hips are aligned with your bust and shoulders, with a defined waist. New Restaurant Takes Local Charities Under Its Wings A new restaurant has sprung up in Springwood that’s not only determined to bring a taste of Texas to Queensland but hope for local man Tyrone Bowd who is in desperate need of lifesaving treatment, writes Wendy Millgate. Texas Wild Wings & Pizzeria was established in Springwood by US ex-pat Brian Sharma, his wife Candice Clarke and Cecelia Clarke (Candice’s mum) as a way for Brian, who missed his home state of Texas, to “bring a little bit of Texas to Queensland.” The three are dedicated to supporting a different local charity each month. “We are passionate about the community, especially local charities in need,” says Candice. Each charity receives a $100 gift voucher, which they can raffle, and flyers and a donation tin are placed in the restaurant for the month.
