Tension culminates as a delicate dial meets its reflection, where time appears to move backwards. The gem-like bevelled glass on the dial marks the piece’s double identity, equal in sophistication and precision.

Daring to go beyond the limits of high jewellery, the stones create a vibrant chromatic harmony and reveal a further sensuality. This is where all of Cartier’s art is found, in its capacity to evoke colour, light and senses to be able to better question the mystery of time.
This vision has inspired Cartier to make two new creations. The first celebrates Louis Cartier’s peacock motif, with its blue and green chromatic harmony, consisting principally of chrysoprases, obsidian, emeralds, Paraiba tourmalines and an iridescent blue-green lacquer wrapped around chiselled gold.

Abutterfly’s antenna is clubshaped with a long shaft and a bulb at the point. The end of the style of an African protea flower happens to look identical.
Botanical artist Chris van Niekerk’s work is about finding these examples of similitude in nature. Using leaves, seeds and other plant materials, Chris meticulously combines and assembles them, metamorphosing his foraged finds into insect forms.
“I call my insects ecoskeletons; it’s a wordplay on the exoskeleton of a beetle,” explains Chris. In his studio, the walls are crawling with his ‘insects’ – from scorpions to green-winged butterflies – all handmade through Chris’ obsessive creative vision.
Chris expounds that one, a wild-looking bee with a downy abdomen, has a lifelike striped abdomen made from individual grass seeds, which he placed with precision over many hours to mimic delicate body hairs. Next to it, a butterfly has wings fashioned from pressed leaves, the pulp removed to
expose the veins to resemble the structure of a wing.
Sometimes, the materials he chooses will dictate the artwork, says Chris, referring to the butterfly with its leafy green wings. They began life as magnolia leaves, which Chris processed to remove the pulp, leaving the delicate veins of the leaf exposed like a carcass, only to find a second life as a wing on one of Chris’ ecoskeltons. “It also works the other way around where I draw the insect, breaking it down into its components, and then I look for materials to create it,” he explains.
He is surrounded by inspiration. In his studio, natural elements are dried, pressed and sometimes coloured using handmade vegetable dyes or charcoal. Chris is constantly tinkering with various plants in stages of decay and preservation, some of which take weeks to process.
He’s always been a collector, he confesses, but the previous lives of all the objects in his studio, not just the plant materials, contribute equally to his work. The rugged workbench in the heart of the studio, the
antique crafts tools he uses, and medical journals from the 1930s used to press leaves, form part of his creative ecosystem. “There’s a flow of energy and exchange between the pages and the plants, and the wood and the insects that are part of the process,” he says.
Chris’ studio is crammed with bottles containing the medium for his work: seeds, leaves and other unidentifiable fragments of flower anatomy, painstakingly collected and catalogued. “I forage a lot. The fynbos plant kingdom we have in the Western Cape o ers plenty of possibilities. They are tough and textured,” adds Chris.
He explains he has always been fascinated by the shapes and textures of flora and, even as a child, saw plants not as individual elements but as something bigger in context with space. He grew up in the rural Free State, the youngest of three brothers, where the farm was his playground. A quiet, introspective child, he recalls collecting thorns from trees and making patterns in the sand. When he makes his ‘insects’, he channels the
same contentment he felt roaming the arid landscapes of his youth.
Having studied horticulture, Chris went on to practice as a horticulturist for six years. However, the desire to create was strong, and he moved on to launch an events company renowned for its conceptual spaces and massive flower and décor installations. He admits it was a transitional time between Chris-the-horticulturist and where he is most comfortable identifying as an artist.
“The installations I created had a beginning and an end. I longed to create something more permanent.” A decade later, Chris has conceived an entirely di erent habitat for his work. His home and studio
are nestled in a cottage part of a historic rural homestead in the heart of winemaking country.
These days, he finds satisfaction in creating pieces on a small scale, attracted to the challenge and limitations of a process that requires extreme concentration, creativity, and patience. “I’m obsessed with detail,” says Chris. One piece could take him up to four days to make, sitting for hours at a time with tweezers and magnifiers. Making them to scale, or entomologically correct, doesn’t interest him. “I use reference books as a starting point, but I’m not trying to replicate particular species. It’s about creating a piece of beauty.”

A new edition of an annual ceramics exhibition, which opens at Spier on 3 June 2024, explores time, texture and memory – both the personal and the collective.
Many will be familiar with the 1931 artwork by surrealist painter Salvador Dali, which features melting, warped clocks draped across an open expanse of land. The new ceramics exhibition shares its title with this piece, The Persistence of Memory (La persistència de la memòria), and contrasts hardness and softness, functionality and aesthetics, flirting with the relativity of space, time and memory. The exhibition, featuring more than 50 pieces from artists working across South Africa, is notable for its tactile and textural appeal. As their core purpose, ceramics are historically functional. But these artworks don’t conform to that notion. They are sometimes strange, always beautiful; always telling a story to evoke a sense of surreal wonder.

A FEW WEEKS BACK, I had the pleasure of experiencing a 10-course brunch at The Pot Luck Club in Woodstock, owned by acclaimed chef and restauranteur Luke Dale-Roberts.
From the moment we stepped out of the lift into the restaurant, we were warmly greeted by the hosts and promptly shown to our table, which o ered an unparalleled view of Cape Town. The ambience was inviting, and we were presented with menus while our server brought us water and gave us a few moments to decide on drinks.
We started with two cocktails: The Pot Luck Club Old-Fashioned and the Pineapple and Basil Daiquiri. The Old-Fashioned was perfectly balanced and a great start to the brunch, while the Pineapple and Basil Daiquiri was exceptionally refreshing, striking the perfect balance between sweet and tangy with a delicious basil undertone.
The first course was West Coast oysters with spicy soy dressing and trout roe, a flavourful start that set the meal’s tone. Next, we enjoyed a quail egg on buttery toasted brioche with hollandaise and mushroom duxelles, a rich and sumptuous reimagining of a classic.
Following that was a lobster McMu n, a miniature English mu n with pea and wasabi relish topped with a bright cream sauce that perfectly complemented the lobster.
For the final of the first four courses, my pescatarian companion had a yellowtail sashimi taco with avocado and corn salsa, while I savoured a curried lamb taco with parsnip cream, mint salsa and delicate parsnip crisps
After a brief break and a glass each of the unlimited bubbly special (included in the price, along with bottomless Bloody Marys), we moved on to the Arnold Bennett. Traditionally an omelette filled with smoked haddock, this dish was reimagined as a decadent mix of scrambled eggs and haddock, covered in a cheesy cream sauce and baked to a crispy top.
Cocktails were the order of the day, so we tried more options. I enjoyed a perfectly balanced Caipirinha while my companion ventured out of her comfort zone with a Sour-Fig Daiquiri, a delicate and flowery drink with a strong touch of rose flavour that we both appreciated.
Halfway through our meal, we watched the talented young chefs headed by executive chef Jason Kosmas in the open kitchen preparing the courses like welloiled machines. On our return to our seats, we were served heirloom carrots with pistachio crumb and labneh, accompanied by sourdough naan bread.
The last savoury dish we had was di erent for each of us. I had the roast duck, which was decadent and perfectly pink with a delicious citrus component that complemented the sauce. My companion had a braaied piece of hake served with clams. Both dishes were accompanied by a beetroot tarte and salad that demonstrated the chefs’ respect for vegetables, as well as a beautiful
Yorkshire pudding to mop up the sauces.
We finished with an Irish co ee and awaited our dessert, which was served in three sections: a selection of Pot Luck Club sweets, including macadamia nougat, a Rum Canelé that could rival any I’ve had in Paris, and the centrepiece, a guava malva pudding with chestnut ice cream. This creative and wintery dessert put traditional elements into a delightful new shape.
Overall, The Pot Luck Club brunch was a great culinary experience. The attentive service, inventive dishes and warm ambience made a memorable meal. If you are in Cape Town during the cold winter months, I highly recommend trying The Pot Luck Club’s brunch menu. You can thank me later.

EEight years ago, Jo Sinfield and his wife Sarah spent a weekend at a lodge on the Overberg coast near Stanford, about two hours from Cape Town. As the couple are inveterate and professional travellers – Sarah is a bespoke tour operator and Jo a co-founder of Explorers Club, a collective of accommodation options and creators of o -the-map expeditions in South Africa, Zimbabwe and Kenya – this was an ordinary part of their routine. But on this occasion, there was an unexpected bonus to the visit: it opened Jo’s eyes to the utterly unique property next door.
“I gazed at the ancient indigenous milkwood trees, the open water of the river and lagoon, and the Maanschynkop mountains rising beyond,” says Jo. “And I thought, why hadn’t I known about this place before?” The landscape is remarkably beautiful, with a long stretch of wild beach on one side, the lagoon in the centre, and the blue-grey mountains rising up across the water. It feels untamed and untouched, yet also like a natural safe haven. Unsurprisingly, Jo rapidly formed the idea of creating a select group of family holiday cabins here, and he enlisted the assistance of fellow conservationist and destination developer Bas Hochstenbach as planning commenced on what has now become Coot Club.
From the start, they were determined that the environment should shine and so, a key priority has been and will remain taking care of the 464 hectares of land that makes up the property. Situated within the Walker Bay Fynbos Conservancy and having never been commercially farmed, Coot Club was given an ornithological and botanical biodiversity assessment in 2021 by Birdlife South Africa, which not only recorded a remarkable 230 di erent species of birds here, but also recommended that the peninsula be accorded the highest possible natureprotection status.
Jo turned to Cape Town-based architects Jed Kritzinger and Julia Abell of Kritzinger Architects as design professionals ideally placed to “retain that focus on biodiversity” and create buildings that are “second to the landscape rather than standing out”, says Jo. Jed notes, he too, was immediately struck by the pristine condition of the vegetation and the dramatic views of the mountain range that the boat houses would be facing and saw the deep steely grey colour tones and scale of the mountains as key sources of visual inspiration.
The design Jed suggested was based on the concept of an old corrugated-iron boathouse that structurally hovers above the terrain rather than imposing itself on it – a building that, as Jo puts it, “floats in nature on stilts”. Jed adds that the idea was, understandably, well received by both town planning and heritage authorities as a complementary addition to the landscape, with the dark grey exterior allowing the boathouses to discreetly settle into the landscape.
The nautical theme suggested by the architectural form of the cabins is further augmented by the use of timber decking and wood-panelled interiors, as well as design details such as porthole windows, all of which are “reminiscent of traditional boat-building techniques”, as Jed explains. A boathouse aesthetic is also key to the interior design, for which Jo envisioned something fun, fresh and di erent, which would bring the nautical feel inside via sailing memorabilia, in a way that complements the natural environment. To realise this aim, he enlisted the expertise of Cape Town interior designer Dominic Touwen, who worked with fellow designer Camilla Fraser on the project.
Recalls Dominic, “The brief was to create weekend cottages that would take them back to their childhood – a retro and very relaxed experience of exploring the lagoon

Says architect Jed Kritzinger of Kritzinger Architects, who designed them, “The architectural language of the development embraces a nautical theme by incorporating elements such as porthole windows, decking and timber construction reminiscent of traditional boatbuilding techniques.”
and ‘messing about in boats’. The interiors had to be hard-wearing yet comfortable and not pretentious.” Set against the painted timber-lined interiors of the cabins and amplified by the open and plentiful natural light, the resulting interior schemes nod to sailing nostalgia while also having a simple, contemporary feel.
Like everyone else who has contributed to the creation of Coot Club, Dominic clearly remembers the first time he viewed the property. “It was like déjà vu,” he says. “I realised I had sailed across the lagoon from the yacht club when I was a child and explored the then-derelict old stone house here. So it’s a very sentimental project for me.
It’s one of the most exceptional sites in the Cape, and it’s been a real privilege to work here.”
In short, this holiday haven is a genuinely unique location in which a delightfully nostalgia-infused aesthetic combines with a viable vision for the preservation of the pristine environment far into the future. From waking to a symphony of birdsong to exploring the lagoon in a kayak, relishing a long beach walk and spending a sundrenched afternoon playing boules, this place is all about complete, recuperative relaxation and finding ways to reconnect with the natural world. cootclub.com
Shades of blue continue the nautical theme in the living area, as well as reflecting the endlessly shifting blues of water and sky in the surrounding landscape. Positioned alongside the large picture window in the main bedroom is a large sofa covered in ticking stripe fabric; the cushions include a pair of scatters made from old kilims.
In the bathroom, which is painted in a soft shade of pistachio green, a simple metal and glass screen frames the shower space. The Burlington toilet, shower rose and mixer tap were sourced from Victorian Bathrooms, and the botanical drawings are by Lisa Strachan.
When designing Coot Club, Jo says the idea was to create an environment in which everyone feels relaxed, and young Florence Sinfield definitely agrees that her father and his team have got this just right. Jo, Sarah and Florence Sinfield, with their Labrador, Rufus, spend their time reconnecting with nature, friends and family. “The key drivers here are the simple things in life,” says Jo. “Like the daily sounds of nature, walks and picnics on the beach, a lagoon swim, foraging for mussels... It’s the ideal canvas for a relaxed holiday.”

Over 2.5 days, a group of guests, day visitors and sta from Morukuru and CapeNature employees came together and ventured up and down the sand dunes along the coast in a plight to restore the beach’s pristine beauty. On the 16km trek, a wide variety of rubbish was picked up, from plastics to glass, rope and fishing lines and nets, and even a washed-up, broken fridge! A total of almost 4 tonnes of rubbish was picked up over the course of two days.

Get cosy with some real comfort food. This season, Le Creuset shares its recipes for a three-course dinner that’s perfect for an exuberant lunch or a long dinner around the dining room table. Start with a creamy risotto, indulge in oven-poached honey citrus salmon, and end with a delicious zesty lime custard tart.
This risotto is an excellent choice for a dinner party. It serves as a delightful starter and works well for smallerportions due to its creamy and rich nature.
INGREDIENTS
• 500g (4 cups) raw sunflower seeds
• 125ml (1/2 cup) cream
• 60g freshly grated Parmesan cheese, plus more for serving
• 1/2 large onion, finely chopped
• 2 garlic cloves, finely chopped
• 500ml (2 cups) chicken stock
• 30ml olive oil
• Sea salt and freshly ground black pepper, to season
• Asparagus spears, blanched for serving
For the spinach pesto
• 100g baby spinach, washed
• 1 clove of garlic
• Juice and zest of 1 lemon
• 2 tablespoons (30ml) toasted mixed seeds
• 50g Parmesan cheese, grated
• 45ml olive oil
• Sea salt and freshly ground black pepper, to season
• Parmesan cheese crisps, to serve
To make the pesto, place all the ingredients in a blender and pulse until blended but still slightly textured, then season. Place into a jar and drizzle olive oil to prevent discolouring. Chill until needed – it will last 3–5 days in the fridge. Place the sunflower seeds in a medium-sized casserole and cover with water, cover with a lid and bring to a boil, then reduce to a simmer and cook until al dente, approximately 45–55 minutes. Strain the seeds through a sieve into a large bowl, reserving the cooking liquid.
Transfer 1 cup of cooking liquid and 1 cup of seeds to a blender; reserve the remaining seeds and discard the remaining liquid. Add the cream and Parmesan and blend until very smooth. Heat a good drizzle of olive oil in a Le Creuset 26cm Signature Shallow Casserole on medium heat. Add the onion and the garlic and cook, stirring, until the garlic is fragrant and the onion turns translucent. Add the reserved sunflower seeds and cook until the seeds are toasted (about 1 minute). Add the stock and simmer over medium heat until liquid is almost fully reduced and the seeds are tender, about 15–20 minutes. Once the seeds are tender, add the blended seed and cream mixture to the risotto and stir to incorporate until thickened. Season to taste and serve with the blanched asparagus spears, extra cheese and the spinach pesto.
Simple and flavourful, this oven-poached salmon is best enjoyed with a fresh herb salad and crusty baguette. Take it to the table in the Signature Shallow Casserole to serve from.

• 1kg side of Norwegian salmon
• 1 lime, sliced into rounds
• 1 grapefruit, sliced into rounds
• 1 lemon, sliced into rounds

METHOD
Preheat the oven to 200°C/180°C fan/gas mark 6.
Place the white wine into a Le Creuset 26cm Signature ShallowCasserole. Place the salmon in the base of the casserole with the citrus slices arranged on top. Drizzle with the honey and dot with butter. Poach in the oven for 10–15 minutes, depending on your cooking preference. Season to taste.
Serve with a fresh herb salad and crusty baguette.
If you’re searching for a wonderfully simple dessert to prepare in advance, then these zesty tarts are the perfect choice. Served in Mini Cocottes, they are just the right size to satisfy after-dinner sweet cravings.
INGREDIENTS
• 375ml (11/2 cups) full cream milk
• 375ml (11/2 cups) cream
• 3 tablespoons butter
• 100g caster sugar
• 125ml (11/2 cup) water
• 50g cornflour
• 6 large egg yolks
• 2 limes, zested
For the biscuit base
• 175g digestive biscuits, shortbread, or ginger snaps
• 85g butter, melted
METHOD
Crush the biscuits until they resemble fine crumbs. Add the melted butter and mix well until combined. Line the base and sides of 4 x Le Creuset 10cm Mini Cocottes. Refrigerate to set while you prepare the custard.
Place the milk, cream, butter and sugar in a heavy-based saucepan, bring to a boil, then remove from the heat. Combine the water and cornflour to create a slurry, then whisk into the egg yolks. Whisk the cornflour and egg mixture into the hot cream mixture. Add the hot liquid slowly to prevent the egg mixture from scrambling. Once combined, return to medium heat and whisk continuously until the custard thickens. Lastly, whisk in the lime zest. Pour into the set biscuit crusts and chill for 3–4 hours or until set.

Paola Paronetto combines stylistic innovation and the traditions of ancient art with those of pottery. Always inspired by the beauty of nature, Paola sees colours as full and opaque and has devised a palette of 86 tones. Her objects’ irregular shapes and raw texture create a graphic play of light that exalts the carefully chosen colours.
Committed to the conscious use of resources and recycled materials, she was delighted to accept Veuve Clicquot’s invitation to design an elevated gift box. Echoing the Maison’s pioneering use of hemp in its gift boxes, the new box is sustainably made in France and composed of 60% hemp, 20% cotton and 20% non-wood fibres. Madame Clicquot was particularly fond of Pinot Noir. She used to say: “Our black grapes give the finest white wines.” This versatile grape variety expresses itself di erently according to its terroir and the year it’s harvested and requires the finest
expertise from the cellar master. Elegance, detail and precision are embodied in its complexity. A solaire vintage, La Grande Dame 2015 honours Madame Clicquot’s vision. Pinot Noir finds its greatest expression in this blend (+90%), enhanced by a touch of Chardonnay (10%). This cuvée is a feat of winemaking with an immense ageing potentiation of more than 15 years.
Taught and elegant, it reveals its exceptional verticality thanks to the Pinot Noirs from the historic Crus of its terroir, among the most prestigious in Champagne: Verzenay, Verzy, Ambonnay, Bouzy and Ay. The year 2015 was an exceptional one for Champagne. After a very mild winter, spring began with a particularly cold period, followed by high temperatures. In June, an abundance of sun and modest rain produced a homogenous flowering. In the coolness of fall, the grapes harvested in mid-September gave birth to a great vintage.
La Grande Dame 2015 is all about tension and elegance. It exhibits a beautiful, sparkling, golden robe. On the nose, it o ers freshness and minerality, with light floral notes of jasmine and acacia that evolve towards fruity notes of pear and clementine. AAlighting from the plane at Da Nang, it’s only seconds before an all-embracing humidity cocoons you, a tangible reminder that you have arrived at a tropical destination. Vietnam is perhaps the most fascinating Southeast Asian country I have ever visited and, despite being a communist system, she is surprisingly openhearted and welcoming.
Scooters excitedly dart the streets at all hours (there are 70 million of them in a country of 100 million people), and on every corner, locals gather over bowls of Pho, the classic Vietnamese soup-like dish of meat and vegetables in a steaming, rich broth.
In truth, this trip was to be a break from my usual fully scheduled travel; we’re all familiar with the ever-familiar when visiting a foreign land. This time, rather than a packed itinerary, my partner and I would be based at one utopian location for nine days and take occasional excursions at our leisure.
Just under an hour from Da Nang, Central Vietnam’s largest city, Banyan Tree Lăng Cô would be our home. Flanked by the tropical Truong Son mountain range on one side and the East Sea on the other, it is a sliver of paradise. The splendour of this place was penned a century ago by Emperor Khai Dinh: “When I look at the mountains, I can see clusters of miraculous clouds flying from caves as fairies dancing on mountains; when I look down at the water, I can see waves, pushed by winds, running as if numerous horses gathering at sea.” Thanks to the Banyan Tree, this previously inaccessible bay is now a prized remote retreat.
As I experienced in Vietnam, one of the hallmarks of Banyan Tree Hotels is the locally infused focus, a helpful process of bringing the local culture to its guests. While all the usual tenets of a luxury hotel were present, they were cleverly blended with local components. But much more than aesthetics and culturally clever designs, this is something deeper, a celebration of culture through subtle storytelling.
The hotel o ers lagoon-facing villas, sea-view villas perched on the limestone hill, or – our choice –beachfront villas. Every villa is equipped with a private pool. With the warm ocean mere steps away, we spent most of our first days drifting between the ocean and the pool. There’s also a jacuzzi, outdoor shower, sala and a lush landscaped garden. All are exceptionally romantic, with uncompromised privacy.
When you are tempted to leave the sanctuary of your villa, there is a host of activities on o er: from food
and beverage classes (mixology, Vietnamese co ee), craft lessons (hand embroidery, basic survival skills, calligraphy art), active sessions (tai chi, photography tour, jogging, cycling, yoga, aquatic exercise), archery, croquet and even birdwatching, a first for a hotel in Vietnam. Enjoy every water sport you can imagine, including complimentary kayaking, stand-up paddle board, banana boat and Vietnam basket boat.
Of course, what so many visitors enjoy most about Vietnam is the exquisite local cuisine. The Water Court serves an abundant breakfast bu et and, in the evenings, an a la carte menu of Vietnamese delights. For a dining experience par excellence, Sa ron is Banyan Tree’s hero restaurant. Perched high overlooking the bay, Sa ron is one of the few Thai SELECT Signature restaurants in Vietnam (a prized Royal Thai Government certification that guarantees the authenticity of Thai restaurants).

Despite being beautifully tucked away, Banyan Tree Lăng Cô is just a short drive from the central Vietnamese worldrenowned ancient wonders, the closest being the historical city of Hue. From 1802 to 1945, the royal dynasties lived here and Hue was the national capital.
The complex of Hue monuments was Vietnam’s first site to be inscribed as a UNESCO site. The Đai Nôi Citadel is perhaps the most prominent, where a moat and thick stone walls protect the Imperial City. Palaces and shrines abound within the walls, including the Forbidden Purple City and a recently restored replica of the Royal Theatre. It was here that the last king of Vietnam, under pressure from French control, surrendered with the famous words, “I’d rather be a citizen of a free country than a ruler of an enslaved nation.”
Vietnam is a country that wears its history in its temples and tombs. In Hue, you’ll find seven royal tombs and mausoleums, mostly clustered along the banks of the Perfume River. We visited Emperors Tu Duc and Khai Dinh’s tombs, which had impressive porcelain, glass and ceramics imported from China and Japan. Walking through them 93 years later is a surreal experience that commands awe.
Before returning to the lodge, we had a lavish lunch at the beautiful French-inspired Les Jardins de La Carambole. The Banyan Tree arranged all of this, and our informative guide, Hung, ushered us around in style.
Our last excursion from the hotel was to the famed Hoi An. This perfectly preserved 17th-century town invites visitors for an authentic and utterly enchanting experience of an ancient Southeast Asian trading port. Reflecting the country’s complex history, the architecture is principally Chinese and Japanese, with some European flourishes. All this is now encompassed in a Vietnamese UNESCO site.
Several streets wind their way to the river, lined with tiled houses with traditional motifs carved into their wooden parts. It’s mesmerising and sometimes overwhelming as you’re transported into a new world. After wandering the streets, likely having been measured up and ca einated (the old town is famous for its tailors and co ee roasters), find a riverside restaurant and watch the evening spectacle unfold; hundreds of boats carrying colourful lanterns float along the river, providing a kaleidoscope of colours that reflect along the rippling waters.
