A taste of Africa

Acclaimed chef Ryan Cole’s latest venture has opened its doors at the prime V&A Waterfront location. With head chefs Geo rey Abrahams and Teenola Govender, Chef Ryan brings you COY, a stunning new restaurant housed in a standalone building between the Bascule Bridge and the Robinson Dry Dock. Perched on the edge of the water, COY o ers breathtaking views of the luxurious marina, with its grand yachts on one side and the bustling harbour, alive with working fishing boats, on the other. Against this dynamic backdrop, Table Mountain rises majestically, completing the picture of one of Cape Town’s most exciting new dining destinations.

When my dining partner and I arrived at COY, we were warmly welcomed to an elegant African-inspired restaurant overlooking the water. Despite being about 30 minutes early, we were seated immediately, and throughout the evening, the sta ’s attentive, friendly and knowledgeable service enhanced our entire experience. The restaurant’s ambience was as enchanting as the photos promised, if not more. With stunning décor, music that complemented the African theme, and a sophisticated yet lively atmosphere, every detail set the stage for a memorable meal.

To start the evening, I sampled a few cocktails from COY’s creative menu, each with its own unique twist. First, I tried the Spicy Margarita, an adventurous take on the classic with a hit of jalapeño chilli that brought an incredible depth to the flavour. It was refreshingly bold, delivering just the right amount of spice without overpowering the drink; a must-try for anyone who enjoys a cocktail with uber character. Later, I enjoyed the Vanilla Negroni, a subtle twist on the

beloved classic, where the addition of vanilla softened the bitterness just enough to create an entirely new, memorable version. Both drinks were excellent preludes, establishing a high standard for the rest of the evening.

Our first course, a snack course, did not disappoint. It began with a shiitake mushroom purée that packed a punch of umami and earthy notes, balanced by sweet, roasted red peppers. This dish set the tone, awakening our palates and piquing our curiosity. We were also served maize chips dusted with spices and a delicious red lentil crisp accompanied by homemade chutney.

The chutney, bursting with flavour, captured our full attention and left us wanting more. It was a beautifully orchestrated course, with textures and flavours that worked in perfect harmony.

Then came the bread course, which was as comforting as it was innovative. Freshly baked buns, still steaming from the oven, were topped with a hint of bokkoms that introduced a surprising yet welcome saltiness.

Paired with kefir butter and homemade guava jam, this course struck a nostalgic chord. It felt as though I was tasting something that blended the familiar with the new, perfectly balancing innovation with comfort. The flavours were layered in a way that made each bite di erent from the last, adding an almost poetic rhythm to the course.

For the cold appetisers, my pescatarian dining partner opted for the Tuna Tartare, a dish that was as visually stunning as it was delicious. The citrus accents elevated the tuna’s natural flavours, adding a burst of brightness that perfectly complemented the freshness of the fish. It was a delicate, wellbalanced dish that spoke to the chef’s skill and attention to detail. I, on the other hand, chose the Venison with Sour Fig and Pickled Pear. The venison was tender, seared lightly, and melted in my mouth. The sour fig and pear brought a sweet acidity that brightened the rich meat, creating a flavour profile that was exciting – a definite highlight.

Moving to the hot starters, my partner’s choice was the Xai-Xai Style Chargrilled Squid. Served with pearl barley and a touch of rum in the sauce, the squid was perfectly charred, firm yet tender, with spices that danced on the palate. It was a dish that

brought out the seafood’s natural flavours while introducing subtle, complex notes from the spices and sauce. I went with the line fish, served with cabbage and Black Forest ham. The dish was unctuous and rich, with a meaty flavour that felt almost indulgent. The Black Forest ham enhanced the fish’s flavours with its smoky undertone. The spicy chimichurri cut through the richness beautifully, adding freshness to the dish and enhancing the overall harmony of flavours. Every element was thoughtfully crafted, and the perfectly seared, crispy skin on the fish was the icing on the cake.

Our main courses maintained the standard of excellence set by the previous dishes. We shared a line fish done on the braai, accompanied by mussels, askoek (a type of bread) and peri-peri sauce. The braaigrilled fish was cooked to perfection, with flaky, tender flesh that absorbed the subtle smokiness from the grill. The peri-peri sauce added a touch of heat that balanced the dish, and the askoek was ideal for mopping up every last bit of sauce. With its rich flavours and vibrant colours, this dish was satisfying to the last bite.

However, my personal highlight was the lamb. It was served with possibly the best pap I have ever had: smooth, cheesy and incredibly comforting. The dish brought memories of familiar braai flavours while elevating them to a new level. The lamb

itself was juicy and tender, bursting with flavour, and it was accompanied by a small potjie pot with lamb neck that was so tender it practically shredded itself onto my fork. The richness of the lamb and the nostalgic flavours made this dish a standout for me, providing a taste experience that was at once familiar and profoundly sophisticated.

The transition from savoury to sweet was marked by ‘Tea with Ma’, a delicate course that showcased flavours reminiscent of childhood. It felt like a gentle homage to comforting, familiar tastes of lemon cream,

strawberry jam and Ceylon tea accompanied by a spiced madeleine; it prepared our palates for the desserts to follow. The simplicity and elegance of this course left a lasting impression, a quiet interlude in an otherwise bold and vibrant meal.

We had two options for dessert, and naturally, we tried both. First was a Banana Crème paired with malt ice cream, with a hint of milk stout to balance the sweetness. The banana crème was velvety and rich, while the malt ice cream created a depth of flavour that was simply remarkable. This dessert was, without question, one of the best we’ve tasted all year – a perfect blend of sweetness, creaminess and complexity. Our second dessert was a cheese board, featuring a variety of cheeses that ranged from mild to bold, served with sweet fruits that enhanced the flavours of the cheeses. It was a satisfying end to the meal, leaving us fully content and reflective.

We concluded with co ee, taking time to savour the last moments of this exceptional dining experience. Reflecting on the evening, I found it di cult to find any meaningful flaws.

COY captures the essence of African flavours and presents them with both innovation and respect, creating an authentic and unforgettable dining experience. For anyone seeking a taste of African culture elevated to fine dining, COY is a wholehearted 10/10 recommendation from us.

Specialvintage

Graciously charming and elegant, yet without the slightest trace of pretension, this unique Cape Town cottage is a masterclass in layered, vintage-inflected and resolutely irreverent style.

As utterly individual as its owner – a local hotelier renowned equally for her eccentricity, her generosity and her indefatigably stylish interiors –this Cape Town cottage in one of the city’s most sought-after suburbs was originally built in the 1920s. As with a few similar builds in the area, the house is not quite Edwardian, and not exactly Art Deco either – rather, the architecture is a quirky blend of the two, combining square exterior pillars with an embellished interior arched lintel, a wide central passageway and an unusually curvaceous corrugated-iron roof over its front veranda. It seems likely it was first built as a farm manager’s home, back when this area was still in an early phase of its development. For the magpie creator of its unique current interior design, all this was catnip. An avowed maximalist with a penchant for vintage furniture, oversized bathrooms, multiple places to sit down and read a book and (whenever possible) “staying home”, she created precisely what she desired in this cottage. A three-month renovation following hard on the heels of her purchase of the property in 2019 took the unusual step of reducing its bedroom count from three to two; with the result that the two bedrooms are now enormous, and each sports an almost equally spacious adjacent bathroom. The changes included the fitment of beautiful old wooden exterior shutters that add both atmosphere and privacy to the front facade of the house, and the creation of a plunge pool in an old-fashioned, galvanised steel plaasdam (farm dam) style,

painted in jaunty green and cream stripes.

The cottage was very much a downscaling property for the owner in terms of both size and formality, but her wealth of interiordesign experience meant she knew from the outset exactly how she would furnish and decorate its various spaces. Having moved here from a much larger dwelling, she happily let go of items that were too big to fit, such as an enormous, four-metre long dining table, for example, which is now in use in the courtyard at her hotel.

Her signature wall colour, as also seen in the hotel, has been used throughout the cottage. It is a remarkable green-tinged, sandy beige shade that shouldn’t really work in interiors at all. But of course, it somehow

absolutely does. As room upon room unfolds through the house, the overall feel is both tranquil and beautifully cosy, augmenting the sense of spaces that have developed and settled into place over time without ever being self-consciously styled.

Much like ‘Southern Gothic’ US designer Furlow Gatewood, a similarly singular creator of interiors, the owner’s flair for unusual colour selection is matched by

a true collector’s sensibility. Sourced from auctions and vintage retailers to online searching, her extensive hoard of antique and original furnishings is the stu of local legend, and just some of it is on display here. Most definitely the creations of someone for whom more absolutely is better, these are interiors where both whimsy and luxury are accorded the high status they so richly deserve; it’s also a home in which art, books of every persuasion, and eye-catching bric-a-brac pieces all play starring roles. Chaotic, however, it is not. The way items are “bunched” – to use the owner’s own description of the way she styled these spaces – together on display is meticulously considered, even though it might at first appear random. The final result is a home characterised by discreet charm, subtle yet powerful energy, and an immensely generous spirit.

DECKING OILS SUMMER WITH ZIMBO'S

Loba’s decking oils protect wooden decks, garden furniture, and outdoor wood from water, sun damage, and algae growth. Designed for both tradesmen and homeowners, these oils nourish wood, making it resilient and supple. Vintage shelves lined with books are present everywhere in the house; in the living room, these wooden glass-fronted cabinets and shelves contain everything from volumes of poetry by John Donne to Robert Ludlum thrillers, as well as many cookery and decor titles. They are flanked by a plump sofa covered with a broadly striped fabric in dusty pink and white. The standing lamp and raffia shade, Aubusson area rug and glass-topped, ornately carved occasional table were all purchased at auction.

Glass-fronted display cabinets bought on auction display treasures, keepsakes and bric-a-brac collected over many years by the owner. The invitingly plump armchairs, covered in two different floral chintzes, are vintage-store finds. The eye-catching white metal side table is an auction-house finds.

An arched open doorway leads through from the living room to the dining area – which in turn leads out onto a verdant courtyard garden at the back of the house – and kitchen.

The dining room and kitchen are open plan. In the kitchen, open shelving allows for a country kitchen-style mix of storage and display, with regularly used crockery pieces and glassware mingling with decorative items and small artworks. The dining room features wooden panelling –also painted in the owner’s signature green-beige wall colour – and a scrubbed wooden table surrounded by mismatched vintage chairs. The blue and white porcelain bowl is part of her extensive collection of antique serveware, and the metal candlestick was purchased at a local vintage store.

Positioned at the front of the house and complete with a charming bay window, the main bedroom feels cosy yet spacious – a true boudoir. Yet more books on display in the bedroom, beneath a vintage portrait painting and porcelain figurine. In the guest bedroom, quirky furniture pieces include a beautiful antique daybed and a painted room divider screen found at a local vintage store. The soft, patterned Aubusson rug gives a luxurious feel to the space, while the vintage botanical poster adds a touch of whimsy.

The guest bedroom sports a bathroom as large as the one attached to the main bedroom, with space for another classic clawfoot, cast-iron bathtub, with an ornate side table placed alongside it for bathing accoutrements and a couple of vintage vases. The soft, patterned Aubusson rug and gilded mirror add further touches of luxury to the space.

South African laws prohibit adding wine or grape juice to spirits before or after distillation ... a frustrating roadblock for the creative team. However, Six Dogs found

a loophole. Instead of crushing Pinotage grapes or infusing them during distillation, they added whole, hand-selected grapes after distillation. Over several months, the grapes slowly impart complex flavour to the gin, resulting in a spirit that pays homage to South Africa’s wine heritage while staying true to Six Dogs’ ethos of innovation.

The further north you travel from Durban on South Africa’s East coast, the closer you get to experiencing miracles.

The region’s iSimangaliso Wetland Park is isiZulu for ‘land of miracles’. After uShaka’s death, his aide, Ujeqe, fled southward to avoid the customary burial with his master. He absconded to this part of the world (today a UNESCO site), and after witnessing the natural splendour, eventually returned to declare, “I saw wonders and miracles.” Today, visitors flock here to experience the natural wonders and hospitalities of the region. A short drive towards the mountains brings you to one such a miracle: &Beyond Phinda Private Game Reserve.

&BEYOND

PHINDA FOREST LODGE

I recall seeing the pictures of Phinda’s iconic innovative Forest Lodge almost 20 years ago. At a time when ‘safari’ equalled thatched lodges and rustic lapas, the glass boxes in the forest were undeniably striking. Among

the first eco-lodges in the region, Phinda was ground-breaking at the time, and learning about the recent refurbishment of the lodge, I knew a visit had to be arranged.

Thanks to designers Fox Browne Creative and architect Jack Alexander, the lodge has an exciting new lease on life; a beautiful reimagining within the context of the contemporary luxury safari while keeping references to ‘Zulu-zen’ decor and a minimalist interior design.

The major additions include the lodge’s first family suite, a library and lounge, and a walkway with a central fire pit linking the main commons to the library. A newly reshaped pool and terrace, and significant changes to the main dining and bar areas were also undertaken. The hero feature, however, remains the glass sanctuaries spread throughout the forest. O ering 360-degree forest views from the bedroom, dressing room and bathtub, each space becomes a window into the wilderness. Nature is the interior architect, but subtle hints of local culture and

Japanese minimalism blend to organically set the scene.

Forest Lodge’s significance lies not only in innovative design, but also in its location. The sand forest it calls home grows on the ancient remains of a petrified coastline. An estimated 6000ha of Sand Forest growth survives in the world today, of which Phinda is the custodian of 1000ha. The forest is home to rare mammals such as the red duiker, suni and Tonga red squirrel, and several bird and plant species are found only in this habitat.

Some of the most remarkable inhabitants of the forest are the giant trees, most notably the Lebombo wattle, torchwood and false tamboti; some over 1 500 years old. On our morning co ee stop, we could wander among their giant limbs (and even climb a few), and I couldn’t help but wonder if only these trees could talk and what stories they would have to tell.

&BEYOND PHINDA VLEI LODGE

Being torn between choosing a visit to either Forest or Vlei lodges, I came up with a simple solution: spend a night at each. After a hearty breakfast, it was a 10-minute drive until the team at Vlei welcomed us. With just six rooms, this is a truly intimate wilderness retreat.

The rooms are luxurious bush hide-aways cleverly blending modern style elements with touches that harken back to an era of early safari. Plantation shutters and wallpapers accompany the bedroom with vintage bed posts and laced nets, and the bathrooms feature dark wood detailing with freestanding brass tubs. The hero feature is the private overflow pools that adorn each room. Along with the loungers, they gaze over the vlei, where wildlife is free to roam, including the elephants that often pass by and dip their trunks in the pool for a free drink.

As for the game? Phinda is teeming with wildlife, and the powerful combination of tracker and guide on each drive guarantees your best chance to be introduced to the reserve’s fauna. On our last morning, at 05h00, the phone rang with the morning wake-up call. Our guide, Thulani, announced it was raining but that he would still be heading out on a game drive and we should join in.

We bumbled into the game vehicle and within an hour, we had already seen a leopard and cheetah. Thinking we’d had our luck, around a corner, we came across the smallest gira e I had ever seen. Thulani brought the vehicle to a halt; “Buga ‘look’. She is only days old. The umbilical cord is still attached. We are probably the first humans she is seeing.” Staring at the wet, flu y and curiously cute face, I boldly asked if I could name her. Thulani asked what my suggestion was.

“Nomvula”, I quickly o ered.

“An excellent name”, chuckled Thulani, impressed at my Zulu since the name means ‘after the rain’.

This parting gift, or ‘little miracle’ –recalling Ujeqe’s laments on the area – will remain a treasured memory from our visit to this special sliver of South African wilderness. PICHULIK x SHELLEGANCE

Dive into an ocean of creativity as Pichulik partners with South African artist and ceramicist Lucie de Moyencourt, the visionary founder of Shellegance. Together, they have transformed Pichulik’s iconic 8 Watson Street Atelier in Cape Town into an enchanting seaside dreamscape.

Pichulik and Shellegance have unveiled the magical ‘Shelleganza’ – an installation that turns the Atelier into a mystical marine wonderland. The building’s exterior is adorned with a medley of seashells painted in De Moyencourt’s signature marine hues, from deep azure blues to soft coral pinks, each piece evoking the ocean’s endless beauty. This takeover is a tribute to the sea, mermaids, myths and the magic that heralds the arrival of summer in South Africa’s beautiful Mother City.

Step inside and the Atelier transforms into a mermaid’s treasure trove. A sea of sparkling objects d’art, a curated conversation between Shellegance’s nautical-inspired ceramics and Pichulik’s bewitching aventurine, fluorite and pearl adornments, tells the story of this oceanic collaboration. The space also reveals a never-before-seen collection of Shellegance’s interior pieces, adding to the allure of this oceanic escapade.

To complete the magical tale, Pichulik and Shellegance have designed a limited-edition pendant: a sculptural ceramic shell in golden lustre, imbued with the very soul of the sea. It’s a licence to indulge every whimsy of mermaids, shells and the treasures of the deep.

ABOUT LUCIE DE MOYENCOURT AND SHELLEGANCE

Lucie is a Franco-South African artist known for her illustrations of Cape Town in black ink. The Shellegance studio comprises Senga van Wyk and Mihle Daka, who make the shells, and Lucie de Moyencourt, who paints the shells. The shells are then wired up for wall display by Zimbabwean wire artist George Magaso.

Seven years ago, Lucie made ceramic shells for wall-hanging decorative plates. These were made for her own courtyard, partly inspired

by Matisse cutouts and as well as a lifetime of collecting shells by the sea.

Each shell is unique in both painting and shape, as natural seashells are; no two are the same!

Since then, Shellegance has evolved into an internationally recognised, highly collectable object, gracing the homes of many influential designers and tastemakers worldwide.

Among the abundance of high-quality stone fruit grown in South Africa, cherries occupy a special niche, with a short window to enjoy the local season. Juicy Delicious has curated a few recipes to showcase some of the inventive and delicious ways to incorporate South Africa’s luscious cherries into your holiday menu. ALL RECIPES BY EMMA NKUNZANA

CHERRY FOCACCIA AND CHERRY JAM

INGREDIENTS

Focaccia

• 500g bread flour

• 1 tablespoon fine salt

• 2 teaspoons sugar

• 1 teaspoon instant yeast

• 1 1/2 cups water, room temperature

• 1/4 cup olive oil

• 100g cherries, pitted and halved

• 2 teaspoons maldon salt

Cherry jam

• 100g cherries, pitted and quartered

• 1/4 cup sugar

• 2 tablespoons lemon juice

METHOD

• In a large bowl combine flour, salt, sugar and yeast.

• Make a well in the centre and add water, mix until you have a loosely formed dough.

• Cover bowl tightly with cling wrap and rest overnight.

• A minimum of 8 hours and a maximum of 24 (do not refrigerate).

• Transfer dough to a lightly floured surface and form into a tight ball, the dough should come together quite easily.

• Pour half the oil into a 26cm skillet or baking pan.

• Transfer dough to the dish and coat with the oil, gently press to fill out the edges.

• Cover with cling film and let stand for 2–3 hours at room temperature.

• Preheat the oven to 200C.

• Using fingertips, fill out any gaps in the pan. Make sure there are no air bubbles underneath the dough.

• Scatter cherries atop dough and press down with fingertips to nestle them into the dough.

• Drizzle with remaining olive oil, and a sprinkle of coarse salt.

• Bake for 15–20 minutes until both the top and bottom are crispy and golden brown in colour.

TO SERVE

Cherry jam and goat’s cheese

Cherry jam

• Place cherries, sugar and lemon juice in a small saucepan, coat the cherries and allow to macerate for an hour.

• Once ready to cook, turn on the stove to medium heat and bring the mixture to a simmer.

• Reduce the heat to low and cook for 20–25 minutes, or until the mixture thickens.

• Stir occasionally to prevent sticking. Allow to cool before serving alongside focaccia.

SPICED DUCK BREAST WITH A CHERRY AND RED WINE GLAZE

INGREDIENTS

• 4 duck breasts or chicken thighs

• 2 teaspoon black pepper

• 5 allspice berries

• 3 whole cloves

• 1 teaspoon fennel seeds

• 1 teaspoon salt

• 1 teaspoon sumac

The sauce

• 200g cherries, pitted and halved

• 1 tablespoon brown sugar

• 1 tablespoon ginger, grated

• 1 chilli, sliced

• 1/2 cup red wine

• 1/2 cup balsamic vinegar

• 1 cup chicken stock

METHOD

• Score the skin of the duck, careful not to cut too deeply and expose the meat.

• In a pestle and mortar, pulverise pepper,

allspice berries, cloves and fennel seeds, add salt and sumac.

• Sprinkle spice mix over duck breasts, massage on both sides.

• For an intense flavour, season overnight in the fridge; then bring duck to room temperature before cooking.

The duck

• Place a pan on medium to high heat.

• Once hot, place duck skin side down and cook for about 4 minutes, until the skin is golden in colour.

• Sear the meat side for a minute and set aside.

The sauce

• To make the sauce, place cherries, sugar, ginger and chilli in the pan you used for the duck. Heat on medium for 1 minute to slightly caramelise.

• Add red wine and balsamic vinegar,

allow to cook down for about 4 minutes until slightly thickened.

• Add chicken stock and bring to a simmer.

• Return duck breasts to the pan, skin side up, and cook in a preheated oven of 180ºc for 10–12 minutes.

• Remove breasts from pan and let rest for 10 minutes.

(If using chicken thighs, do not score the skin. Sear both sides for a total of 12 minutes when frying. Bake in the oven, covered for 15 minutes, remove the cover and cook for a further 10 minutes.)

If needed, reduce sauce to desired consistency, thinly slice duck breasts at an angle and serve with cherry glaze.

SERVING SUGGESTION

Serve on a bed of mash with charred and shredded Brussels sprouts or charred broccolini.

CHERRY AND ALMOND TART

INGREDIENTS

• 1 roll store-bought shortcrust pastry

• 1/2 cup caster sugar

• 120g butter

• 1 cup almond flour

• 1 tablespoon cake flour

• 2 eggs

• 1 teaspoon almond extract or 2 teaspoons almond essence

• 200g cherries, pitted and halved, plus extra for garnishing

To serve

1/2 cup cream, lightly whipped

METHOD

Pastry

• On a lightly floured surface, ever so slightly roll out dough and lay it into a 23cm fluted tart dish with removable bottom.

• Bake blind in a preheated oven at 200° C for 8 minutes.

• Allow the pastry to cool before filling.

FILLING

• In a large bowl, using a hand mixer, combine butter and sugar together.

• You don’t need to aerate the mixture; just enought to combine.

• Fold in flours until incorporated, then add one egg at a time, mixing after each addition, followed by almond extract.

• Pour almond batter into the pre-baked tart dish, smooth over with an o set spatula.

• Stud cherries into the batter.

BAKING

• Bake in a preheated oven of 170° C for 40–45 minutes, until the middle is firm.

• Cool on a wire rack and remove the outer rim of the tart dish.

• Serve with fresh cherries, a drizzle of cream and a dusting of icing sugar.

ROASTED CHERRY AND DARK CHOCOLATE ICE CREAM

INGREDIENTS

• 100g dark chocolate, melted

• 360g fresh cherries, de-stalked

• 30ml (2 tablespoons) caster sugar

• 30ml (2 tablespoons) water

• 5ml (1 teaspoon) cornflour

• 10ml (2 teaspoons) fresh lemon juice

• 300g condensed milk

• 200g plain smooth cottage cheese

• 5ml (1 teaspoon) vanilla extract

• 360ml whipping cream, chilled

• extra fresh cherries, to decorate

METHOD

• Line a large loaf tin with cling wrap and set aside.

• Line a large baking tray with baking paper.

• Pour the chocolate onto the tray and spread into a thin rectangle roughly 24cm x 34cm. Cover with another sheet of baking paper and smooth the top gently with your hands.

• Roll up the paper while the chocolate is still soft and secure each side with a clothes peg.

• Refrigerate for at least 1 hour. Note: for the best results roll the paper around a cardboard tube, such as the inner tube from a roll of foil or baking paper.

• Unroll the paper. As you do this, the chocolate will break into shards. Place the tray back in the fridge while you prepare the ice cream.

• Preheat the oven to 200ºC.

• Line a baking tray with baking paper.

• Toss the cherries in 1 tablespoon of sugar and arrange in an even layer on the tray.

• Roast for 15 minutes. Allow to cool for 10 minutes, then remove the pips.

• Place the water, cornflour, lemon juice and remaining sugar in a saucepan and stir together.

• Tip the cherries and their juices into the pot.

• Place over a medium heat, stir well and bring to the boil.

• Lower the heat and allow to simmer gently for 8–10 minutes, stirring regularly, until the syrup has thickened.

• Remove from the heat and cool for a few minutes.Use a stick blender or food processor to process until smooth.

• Set aside to cool completely.

• Whisk together the condensed milk, cottage cheese and vanilla until combined and smooth.

• Whip the cream until sti .

• Add a third of the condensed milk mixture to the cream and fold in.

• Add the remaining condensed milk mixture and cool cherry sauce.

• Crumble in two-thirds of the chocolate shards and fold in.

• Store the remaining chocolate shards in an airtight container in the fridge for decorating.

• Pour the mixture into the loaf tin.

• Cover and freeze for 8 hours or overnight until solid.

• Remove from the freezer 10 minutes before serving.

• Turn out onto a serving plate, top with fresh cherries and the remaining chocolate shards.

• Slice and serve.

Perched on the rugged slopes of Paarl Mountain, Lukas van Loggerenberg has carved out a niche for crafting wines with soul and swagger. His grapes hail from Stellenbosch’s sun-drenched vineyards, with a few star performers from Paarl and Swartland adding extra layers to his creations. While he’s a Loire Valley enthusiast – his love for Chenin Blanc and Cabernet Franc runs deep – Lukas doesn’t aim to copy wine regions Saumur or Chinon in France. Instead, he uses their influence as a springboard to create wines that pulse with South African character. But now, after 32 years at the helm of the cellar, Pieter is uncorking a new adventure: Chief Operating O cer (COO) of Graham Beck.

You might think, after 32 years of hard graft, he’d be kicking back with a flute of his finest bubbly. But Pieter? He’s just getting started.

“For over three decades, Graham Beck has been my home. I was there for the very first vintage that took place under the stars, and I look forward to seeing what is written in them for me next!” he says with enthusiasm.

Pieter’s involvement in the estate dates back to its very beginnings, and he’s been the driving force behind Graham Beck’s rise to prominence as a global leader in Cap Classique. Imagine being so good at something that you get promoted to COO and chair an entire association dedicated to that something. Yes, Pieter is also the chairman of the Cap Classique Producers Association (CCPA), proving that when it comes to sparkling wine, this man doesn’t just follow the bubbles – he leads them.

They say it takes two to tango – though I’ve witnessed some well-lubricated uncles at Stoetbul in Pretoria manage a perfect tango all on their own, but let’s be honest, that’s not the kind of tango you should aim for.

Some things are just better in pairs. After all, two heads are better than one. The trick is finding the right pair. Everyone has their own style, but when true genius and passion collide, the power of two is extraordinary.

At Thistle & Weed, Etienne Terblanche and Stephanie Wiid are the ultimate examples of how, sometimes, the magic lies in the collision of two distinct worlds – one shaped by the sun-soaked coastal winds and the other by city lights. Together, they’ve crafted a unique story in the Cape’s winemaking scene.

As they approach their tenth year of winemaking, 2024 has been a year of milestones, with achievements that have solidified their legacy in the South African wine industry – and beyond. THE TEAM

Meet Etienne Terblanche and Stephanie Wiid, the dynamic duo behind one of the Cape’s most intriguing wine collaborations. Think of them as the Bonnie and Clyde of the wine world – only instead of a life of crime, they’re crafting wines that celebrate the raw beauty of nature, with a touch of rebellious charm thrown in for good measure.

Born and bred in two very di erent worlds – Etienne hailing from the quiet, windswept West Coast, and Stephanie from the vibrant heart of Johannesburg – this pair’s journey to winemaking is as unlikely as it is fascinating. Etienne’s story began with humble beginnings in his parents’ seaside restaurant, leading him to become a viticulturist. His career took him from the vineyards of Delheim Wines to the consultancy corridors of Vinpro. His secateurs are sharp, his passion for vines unmatched, and he holds a PhD in Viticulture. Oh, and did I mention he’s also a dad to three kids and a dog named Ben? Talk about a multitasker.

On the flip side, Stephanie, with her wine-soaked heritage (her Oupa was the legendary Niel Joubert of Spier fame), was destined to make her mark in the wine world. After trading city lights for Stellenbosch’s rolling vineyards, she studied Viticulture and Oenology, eventually becoming the winemaker at Fairview before diving fully into the Thistle & Weed adventure in 2018. A mother, a wife, and a dog mom, she brings a balance of youthful energy and winemaking wisdom to this powerhouse team.

Together, Etienne and Stephanie have created something that mirrors the essence of their partnership – two unique personalities, two di erent paths, coming together to craft wines that truly reflect the terroir of the Cape. Inspired by the resilience of weeds and thistles, they see their vines as survivors, tenaciously growing against the odds. And that’s exactly what their wines do: they stand out, thrive, and leave a lasting impression.

THE TASTING ROOM

After years of setting up shop in various rented spaces and tasting wine amongst barrels and makeshift tables, Thistle & Weed finally opened the doors to their very own tasting room. Nestled amongst the verdant hills of Stellenbosch, it’s more than just a place to sip wine – it’s an experience, a journey into the soul of what makes Thistle & Weed so unique. Here, guests can savour wines like the Duwweltjie, Khakibos, and P. Jackson – each with its own character and story to tell.

The tasting room, which Etienne and Stephanie describe as a “no-frills refuge,” o ers a slice of tranquillity in a bustling wine world. While the wines do the talking, you might also find Rex, the winery’s loyal dog, popping by for a quick pat and some company.

P. JACKSON CAPE LATE-BOTTLED VINTAGE

One of the most exciting additions to Thistle & Weed’s lineup in 2024 is their very first Cape Late-Bottled Vintage, the P. Jackson 2020. This rich, port-style dessert wine came about somewhat unexpectedly. When the grapes from their prized vineyards ripened quickly in 2020, Etienne and Stephanie decided to take their time, letting the fruit hang a little longer.

The result? A fortified wine with deep notes of dark berries and chocolate, perfect for a cold winter evening. Even in its creation, there was a little magic at play – much like the essence of their collaboration. With every decision, from the meticulous vine care to the patient barrel ageing process, Etienne and Stephanie embraced their roles as both artists and scientists, creating a wine that reflects their winemaking philosophy: authentic, heartfelt, and made to honour the true terroir of the Cape.

As 2024 rolled on, Thistle & Weed’s wines garnered the attention they deserved. Khakibos 2023 – already a hit in local circles – was awarded a coveted 5-star rating by Platter’s South African Wine Guide. And that’s just the tip of the iceberg. Duwweltjie, their flagship wine made from old vines in Paarl, earned a spot among the top wines of the year in the WineMag Prescient Old Vine Report, a full-circle moment for the winery that began with humble roots. However, the biggest highlight came when Stephanie was recognised as Young Winemaker of the Year, a nod to her hard work and commitment to crafting wines that speak for themselves. Alongside Etienne, whose Elmie Rosé was named Rosé of the Year, their story is recognised for their technical expertise and unwavering passion and authenticity in everything they do.

Rich in history, the capital boasts some worthwhile sights, including the Independence Memorial Museum, the Old Fortress – which dates back to 1890 – and Christuskirche, the country’s oldest Lutheran church.

EXPLORE THE SKELETON COAST

Vast and isolated, the Skeleton Coast in the north of Namibia is a stretch of beach with an unusual, desolate beauty. It is named for the shipwreck remains that can be found along the coastline, which extends 500 kilometres from the Kunene River to the Swakop River. The Skeleton Coast is a popular place for fishing and 4x4ing, as well as walking and star-gazing.

TACKLE THE DUNES

One of the most well-known places in Namibia is Sossusvlei. Essentially a big pan, it is surrounded by orange dunes, some of which are among the highest in the world. Their striking colour, along with their wind-formed shapes, make them a sight to behold. To really appreciate their scale, it’s best to climb them, but be sure to do so in the early morning when the temperatures are at their lowest. The tallest of the dunes is known as Big Daddy. At 325 metres, it o ers spectacular views over Deadvlei, a nearby, smaller pan characterised by stark, parched trees.

EXPERIENCE THE KALAHARI DESERT

No trip to Namibia would be complete without seeing the Kalahari Desert. Seemingly desolate, this landscape is actually rich in wildlife, including leopards, black-maned lions, elephants and wild dogs. In the southern part of the desert is the Kgalagadi Transfrontier Park, a strikingly beautiful place ideal for game drives and birdwatching. Tourists can visit the area’s San communities and learn about Africa’s oldest culture.

VISIT A GHOST TOWN

If you have ever wanted to experience a real-life ghost town, Kolmanskop is one to visit. Surrounded by desert, the town was once a successful diamond mining spot, which the sand has gradually claimed. While many of the windows and doors have filled up with sand, it is still possible to enter some of the buildings and catch a glimpse of a bygone time.

GO ON SAFARI

To spot the best of Namibia’s wildlife, a trip to Etosha National Park in the northwest is well worth the journey. One of Africa’s largest national parks, renowned for its huge salt pan, Etosha translates to ‘great white area’. Thanks to a diverse landscape, the park is home to various animals; among these are lions, elephants, gira es, cheetahs and others. The waterholes at all the main camps are floodlit, and there are also hides near some of these waterholes, making it a dream for photographers and wildlife enthusiasts.
