Having received private art lessons from the age of seven to nurture and develop her inherent talent, figurative painter and storyteller Danielle Hewlett has been immersed in art since childhood. In 1998, after matriculating from the National School of the Arts, she moved to the UK to study at the Surrey Institute of Art & Design, after which she returned to home soil here in South Africa. Danielle makes use of fragmented, vibrant colour to render physical form, expression, and emotion. Considering herself a storyteller, she delves deep beneath surface level; pursuing the less accessible, hidden emotions and energies that inevitably lie trapped beneath the skin. This provides the viewer with an intimate window – one composed of colour and light - on the human subject. Veering well clear of any literal and even figurative frameworks, she deconstructs the complex facets that compose the human identity, creating artwork that is a study of the individual and his or her energy, as captured in a moment.

Danielle Hewlett, Tanya Sternberg, and Derric Van Rensburg are three incredibly talented South African artists who, in spite of working within different artistic genres, share a common vision of evoking a visceral sense of their subjects’ beauty. This beauty, as much as it is inspired by physical reality, transcends the tangible, revealing the Tanya’s celebration of colour and dynamic form beneath. work can
TANYA STERNBERG For 20 years, Durban-born artist Tanya Sternberg has been passionate about painting with oil on canvas. Inspired by the ever-changing landscape of the Okavango Delta, her latest body of work explores the myriad of pathways presented to us in our lives – how we flow through space and time, changing course over and over again. The paintings examine the landscape from divergent perspectives, from aerial views that approach abstraction to close-ups of flowers, reeds, and reflections. In stark contrast to her vivid paintings are the artist’s graphic linear drawings and paperworks. Topographical and flowing, the works echo the constantly changing landscapes within ourselves. The series of ink and line sketches focus on abstracted human forms with precise line work, while the contained shading creates complex planes of highlights and shadows, giving the impression of fluidity and dynamism. Tanya attended the Ogilvy & Mather Red and Yellow School of Advertising and Design, where she studied graphic design. She subsequently moved to Australia. But, as is the case with so many South Africans, the call of the mother continent brought her home and to Cape Town, where she has now started her own design agency called Ink Design.

DERRIC VAN RENSBURG

Derric van Rensburg, a name well-recognised in both the local and international art scenes, is without a doubt one of South Africa’s top impressionist painters. His unique style is flamboyantly colourful, yet set within a sufficiently realistic framework so that the finished piece is an authentic impression of a vibrant and alive landscape. Derric began his career in graphic art in the commercial and manufacturing industries; however, it was only after moving to the small country town of Greyton in the Overberg in 1990 that the region’s stunning landscapes ignited his creative passions, awakening the sleeping impressionist giant within. Derric abandons all concepts of perfection and symmetry, instead capturing the essence of the subject, as seen through his eyes and his lifetime’s patchwork quilt of experiences. Landscapes, cityscapes, people, animals, and flora are all portrayed in an authentic, yet visceral way that is brought to energetic life with the artist’s intense use of primary colours, bold brush strokes, and impressionist flair.

F
or celebrity chef Reuben Riffel, it’s a combination of passionate people and great ingredients that serve as the inspiration behind his work. Well-known for his role as a judge on MasterChef South Africa, as well as his ever-growing portfolio of award-winning restaurants, Reuben describes his culinary style as a pursuit of simplicity. “We search for the occasional surprise combination of ingredients, but our focus is on uncomplicated, great-tasting food,” he says. Reuben grew up in Groendal, near Franschhoek, and says that eating was always a passion for him. A love for cooking was something he discovered later when he began working as a waiter at Chamonix Wine Estate. He learned the basics of food preparation in the kitchen there and worked his way up to souschef under the guidance of chef Richard Carstens. “I think my career chose me,” he says. “I was lucky enough to work under a chef that made food and cooking seem cool, and his passion rubbed off on me.” Although he didn’t receive any formal training as a chef, Reuben soaked up the knowledge and skills of his mentors in Franschhoek, and after some experience abroad, he was able

to open his very own restaurant back home in 2004. Now, Reuben has a number of restaurants to his name, and an average day for him is packed with meetings where he discusses menus with his chefs, tweaks dishes, works on the preparation of sauces, pickles and chutneys, and plans for upcoming events. The best part of the job, says Reuben, is working as part of a team. “It’s a great feeling when the front of house, kitchen, and everyone else is in sync during a busy service.” Outside of the kitchen, Reuben loves to relax by playing golf, reading, and spending time with his wife and two children. In fact, his wife does most of the cooking at home, unless he has a craving for Asian dishes and noodles — his homemade speciality!

Situated in the winelands, Reuben’s Franschhoek was the chef’s first eatery and remains one of the region’s favourites. The restaurant recently moved premises and has been beautifully refurbished — think screed floors, walls filled with art, a glass wine cellar, and bistro-style tables. With a selection of local wines and craft gins on offer, the outdoor courtyard is perfect for a leisurely drink and an al fresco lunch or dinner in the summer months. The menu includes an eclectic mix of contemporary dishes with a local twist, like a poke bowl with beetroot cured salmon trout, wasabi, pickled ginger, compressed cucumber, sesame, and yuzu soy; and pork belly with fynbos honey crème, pineapple atjar, sweet potato and cider jus.

THE URBAN EATERY The One & Only hotel in Cape Town also boasts a Reuben’s, and with its chic and sophisticated interior, makes for a classy night out. The space has a stylish brasserie feel, with classic wood finishes, warm lighting, and modern decor accents. The restaurant is open for breakfast, lunch, and dinner, and the menu showcases a fusion of local flavours, celebrating the Cape’s culinary heritage and the abundance of fresh produce found in the area. One of the house specialities is a range of artisanal meats sourced from nearby farms — indulge in carnivorous dishes like braised lamb neck with confit garlic and tomato and lavender jus, and roast pork rack with blackberry gel.

FIREFISH
Located at the V&A Waterfront, Firefish serves fresh seafood with beautiful harbour side views. The menu includes all the usual favourites, like shucked oysters, fresh fish, and sushi, but also boasts a great selection of modern, unexpected dishes like devilled whitebait with yuzu and lime aioli; crispy prawns with confit lemon; and Szechuan crusted kingklip with soba noodles and chilli and citrus soy. THE YARD Consisting of a deli for on-the-go coffee and smoothies; a shop selling local cheeses, charcuterie and homeware; and a fine dining restaurant, The Yard is a gorgeous space worth a visit for its design elements alone. Located in Cape Town’s exciting new Silo district, the restaurant serves up an eclectic mix of dishes inspired by Mediterranean, Middle Eastern and Indian flavours. PIERINO PENATI AT VILLA 47 Another Bree Street delight, Villa 47 have recently opened their second-floor restaurant, Pierino Penati. Chef Theo Penati, a Michelin-star chef of his family restaurant of the same name in Italy, and resident Chef Michelangelo D’Oria head this eatery up presenting beautifully plated (and tasty) food for anyone privileged to visit. The space is sophisticated and welcoming with striking contemporary artwork adorning the walls. The menu includes pea ravioli, burrata, red onion, anchovy bread; sea bass baked on a herb-aromatized brick of salt, vegetables; and slow cooked beef cheek, asparagus, extra-virgin olive oil potatoes, to name a few. ARCHITECTURAL PERSPECTIVES Set in a lush garden landscape of tree ferns, the closed design is modelled in natural wood, offering different perspectives from inside and out, with special design considerations implemented to maximise both day and night lighting. The wooden slats also work to ensure maximum privacy shielding the house from the Cape elements.
A WARM FRONT Big sun-loving picture windows give a contemporary, modern feel. Rectangular shapes feature strongly for a sense of arranged calm without chaos. This balanced sense of order continues from the patio onto the lawn and outwards towards the swimming pool and sunken trampoline as special garden destinations. Again, perspectives are all important – on closer inspection from a frontal elevation, an interesting architectural feature is easy to spot – all the upstairs rooms are set at an angle which is mimicked by the trampoline and swimming pool. The garden landscape has been designed with symmetrically placed shrubs and trees that attract attention and accentuate the verticals, contrasting with the horizontal angles of the property.
INSIDE OUT Aluminium stacking doors fold neatly to one side opening from the inside out onto the patio. This creates a fluid space between the outdoors and the living areas, providing a functional degree of separation. The kitchen exists as a pit-stop in-between living spaces doubling as a casual hangout for family and friends, converting easily to a more formal setting for other occasions. Cabinetry is discreet and modern and you’ll notice a refreshing lack of wall tiles that allows the space to exist as something other than just a kitchen.

TABLE TALKING A timber dining room table becomes a dramatic centrepiece running lengthways to compliment the scale of the dining area leading to a picture window with a view. A pair of polished Cameroon Bamileke stools provides additional seating for extra visitors.
PAUSE AREAS The flow from one area to another is highly prized as an interior feature in luxury living and any

MAE ARTISAN RUGS
Transforming floors into focal points with hand-woven masterpieces.
W
hat began many centuries ago as a rough craft to produce heavy, knotted woollen cloths to protect shepherds from the elements has, today, evolved into a fine art. Carpets and rugs are used to add warmth, colour, texture, and design flair to interior spaces, while also keeping feet off of cold flooring. Still, few people regard rugs with the reverence that Mae Mahdiyeh Pakdoust does. At Mae Artisan Rugs, rugs and carpets are not mere floor coverings: they’re grand works of art. Mae was born into a rug merchant family and so it was a natural evolution that she should follow in her father’s footsteps. She studied a Bachelor of Commerce degree but still found herself seduced by the world of weaves and so, the marriage of family inherited knowledge and business education culminated in her opening her very own rug store on Roeland Street in Cape Town in April 2014. But this is no ordinary rug store. In Mae’s eyes, rugs are pieces of art and it just takes a fleeting inspection of her showroom floor to appreciate the verity behind this conviction.

Here, piles of richly woven, textured, and boldly coloured artisan rugs are piled to shoulder length. Some pieces have been woven from bamboo silk, giving them a shimmery pearly lustre, while others look like they should be hanging in a contemporary art gallery. One piece featured a tumble of warm, rustic earthy colours - an ode to autumn - while another was a tempestuous clash of steel blues, greens, and greys reminiscent of the Atlantic Ocean in a Cape storm. She also has a range inspired by the night sky with its brilliance of stars and inky purple blackness, which she has aptly called “Galaxy”. Mae Artisan Rugs also creates bespoke designs for clients. “Clients can come to us with a photograph or an artwork they particularly love and we will use the colours and feel of that imagery to create a customized rug for its intended space,” explained Mae. “We also do house visits and online consultations to help clients find or create the perfect artwork for their floors.”

RASUL CLEANSING RITUAL Rasul is a traditional Arabian treatment that uses a combination of mud, steam and heat for its relaxing, skin cleansing and conditioning properties. Typically, the treatment takes place in a private room, where a specially formulated mix of clay and essential oils is self-applied and allowed to absorb for a few minutes. When the clay is dry, steam will start, opening the skin pores and allowing for deep penetration of the oils and clay nutrients. Next, a light rain will fall to rinse the skin, leaving it feeling soft and clean.

SOUND BATH THERAPY Sound therapy has been used since the days of the ancient Greeks and Egyptians, and variations of the technique are starting to rise in popularity again. Although there are numerous methods, the idea behind the therapy is that instruments, such as bowls, chimes and gongs, can be played to help enhance relaxation, both mind and body. This works by using rhythms and frequencies to help attune our brainwaves to a certain pattern, much like the effects of meditation.

AFRICAN-INSPIRED TREATMENT As a country rich in natural resources and tradition, it's no wonder that a number of modern spas are taking inspiration from South Africa's very own elements. HOMEMADE HEALTHY BAKED GRANOLA Ingredients 500g rolled oats 450g honey 250ml olive oil 350g pecan nuts 150g cashew nuts 100g sesame seeds 100g sunflower seeds 100g desiccated coconut Method 1. Preheat the oven to 160C 2. Grease a medium sized oven tray with a small edge to prevent granola from spilling off 3. Combine all the ingredients except the
desiccated coconut and mix well 4. Pour out onto the oven tray and place in the oven 5. Bake for approx. 3 hours, stirring every 20 minutes 6. Remove the granola from the oven once golden 7. Pour into a large plastic bowl and allow to cool, once cold break it up into chunks. Add the coconut flakes 8. Store in an airtight container (it keeps for about 2 months)

PESTO PASTA WITH COURGETTE & CASHEW NUTS Ingredients 500g cooked pasta of your choice 2 large courgettes, thinly sliced 100g cherry tomatoes 2 tablespoons butter 1 teaspoons crushed garlic 50ml water or veg stock 100g grated pecorino 100g crumbled feta A handful of toasted cashew nuts Pesto 200g basil 100g rocket 100g grated pecorino 100g cashew nuts toasted 200ml vegetable oil Salt to taste Method 1. For the pesto: combine basil, rocket, oil, nuts, and pecorino and blend until smooth 2. Separately preheat a pan, add the butter and garlic. Once slightly browned add the sliced courgettes and sautĂŠ for 5 minutes 3. Add the pesto and water/stock 4. Add halved cherry tomatoes 5. Add the pre-cooked pasta 6. Stir and heat through 7. Transfer to a bowl and top with toasted cashew nuts and crumbled feta.

RAW CHOCOLATE & ALMOND TORTE Ingredients 750ml coconut oil 400g cocoa 250g ground almonds 100g dates soaked in warm water 5 ripe avos, de-pipped and skinned 6 tablespoons of honey Method 1. Prepare your dish, a round 20-30cm springform cake tin works well. Line with foil, and grease it 2. Combine avo, dates (without the water it soaked in), honey and cocoa in a blender and blend until smooth. Taste and add more honey if you like it sweeter 3. Separately combine the ground almonds and coconut oil and mix until it comes together, press into your prepared tin and place in the freezer for 10 minutes 4. Take the base out the freezer and pour the chocolate mix on top of the base. Smooth the top and refrigerate overnight SV

T
he world of wine is filled with the kind of ubiquitous terminology designed to confuse a disciple of logical thinkers, as well as enough fads, fashions, and trends to make a Vogue editor return to pigtails, tie-dyed shirts, and crimplene jackets. Like mindfulness or karma, “organic” is one of the words that everyone thinks they should like, but no-one actually understands. There is nothing inherently different about organic wine. When one sees the “O” word on a label, the contents of the bottle will still be fermented grape juice, made exactly the same way as any other wine. The only difference is that said grapes were farmed organically. This means no nuking of vineyards with chemical sprays or pumping the soils full of artificial fertiliser. Organic is farming as it was done in the old days using natural compost to fertilise the soils and keeping pests and diseases at bay with organic substances that do not require the wearing of gas masks or spacesuits when applying them. When it comes to the wine, sulphur is usually still added as a preservative, along with the various fining agents required to ensure the fermented juice gets into the bottle in a state fit for human consumption. Is ‘organic’ a fad? Well, my focus is on what the final product tastes like. Yet when one starts talking about soil and nature and terroir and all that stuff, there has to be a case for wine made from grapes grown in agricultural conditions that have been kept as natural as possible. This is why many of the world’s great winemaking regions, such as Burgundy and Bordeaux, are seeing evermore organic vignerons. Org de Rac lies next to the N7 highway, just short of the Swartland town of Piketberg. And as the name implies, it is strictly organic grape farming done in a
marvellously isolated setting. The wines are fabulous and seeing that the silly season is upon us, my choice is the Org de Rac La Verne Cap Classique 2014 (R125). A Blanc de Blanc made from 100% Chardonnay, this is an example of how good of a run South African Cap Classique produces are giving French Champagnes when it comes to quality alone. Frank Meaker is the skilled and committed cellarmaster, and with 40 years’ experience behind him, Frank has seen quite a bit including winemaking stints in the Champagne region in France and with JC le Roux in Stellenbosch. He is a true craftsman in the cellar. Add natural, organic farmed Swartland Chardonnay grapes into the mix, and this is a sparkling wine for which I am tempted to use a corny wine terminology for like ‘thrilling’. The wine’s three years of lees contact during bottle fermentation results in that classic brioche, bready aroma. In the mouth, the bubbles inject a blast of delicious citrus and pear flavours, ending with a clean, mineral finish. Bottle-fermented sparkling wine really is God’s gift to wine lovers as this example of classic structure and depth of flavour combines with lifeaffirming bubbly enjoyment. A wine for anytime drinking, but some plump West Coast oysters or a piece of freshly grilled fish takes it to another level.

While out in Swartland, a recent release from Hamilton Russell Vineyards was brought to my attention. Yes, the same Hamilton Russell who pioneered Chardonnay and Pinot Noir in the Hemelen-Aarde Valley. Only this time it’s Hamilton Russell’s Ashbourne brand, now sporting a red wine made from Pinotage and Cinsault using grapes grown out in the Swartland. On a farm with the charming name of Knolfontein, by the way. There’s a story here, as Pinotage is the South Africaninvented cross between the varieties Pinot Noir and Hermitage, the latter grape better known as Cinsault. Ashbourne’s Pinotage Cinsault 2017 (R165) is thus a bit of a play between two relatives, and the result is immense fun. This charming and very pleasant red wine is made from 81% Pinotage and 19% Cinsault, and if you were wondering what the 2017 vintage was doing in the market so early, it is because the wine is unwooded. Yes, fermented and kept in stainless steel tanks, this is a virginal expression of lovely black fruit in a wine that is made to drink by the bucketful. A whack of mulberry and blackcurrant abounds along with an intriguing brush of fynbos, complemented by some exciting spiciness to give the wine an edge. Smooth, soft tannins make this a great summer lunchtime wine and I would chill it slightly before enjoying with charcuterie, cheese or grilled chicken.
As we’re heading north, about 850km from Cape Town lies Upington, the home of Orange River Cellars. Thousands of hectares of grapes are grown next to the Orange River in the regions of Kakamas, Keimoes, and Upington, and there are some superb nonplussed fun wines made in the vast cellars which offer terrific value and great enjoyment. Take the Orange River Cellars Colombard 2017, for example. Colombard is one of the most widely grown varieties in South Africa, yet this white grape is not usually found in a single varietal wine. It is, instead, blended into big generic brands as well as being one of the staples for brandy production. Orange River Cellars makes one of the few Colombards around and it is widely available, coming in at under R40 a bottle. And this is one of the bestkept secrets for those who like clean, crisp and fresh dry white wines. Served ice-cold, this Colombard asserts itself, a bracing gush of green apple and more guava elements most Sauvignon Blancs could wish for. It is one of those bright joyous dry white wines with an enviable fruit structure that South Africa is known for producing in droves. And with everyday drops like these around, I don’t understand why wine is not our national drink of choice. SV

Red wine for the table, white wine for mother as she toils over the kitchen stove, port and sherry for dessert, and bubbly for all the toasts. It’s the latter, however, that tends to cause the biggest snags in the annual festive shop. Is it champagne, prosecco, or MCC? What is the difference? And which one will best complement your celebrations? If you suspect your relatives are beginning to judge you for always serving the cheapest on the shelf, or if you want to inject a little life and love into your morning mimosa and New Year’s Eve toast, this one’s for you. Champagne, prosecco, and MCC are all sparkling wines, but not all sparkling wines are made equal, so let’s delve into the effervescent world of bubbly.

To most people, champagne is bubbly. It’s the bottle that goes “pop” when opened, fizzes when poured, and tastes like one heck of a good time. Champagne, however, is first and foremost a French region to the southwest of Paris, where the Chardonnay, Pinot Noir, and Pinot Meunier grapes that are used to make champagne are grown. Therefore, a bubbly can only be called “champagne” if it comes from Champagne. The most famous examples of the Rolls Royce of sparkling wine include Moët & Chandon, Dom Pérignon, Cristal, Laurent-Perrier, and Veuve Clicquot.

Prosecco is traditionally known and loved as a rather light and off-dry sparkling wine or spumante with a floral bouquet, although in recent years prosecco winemakers have broadened their repertoires to include dry options. Prosecco is made in a picturesque region of rolling hills and valleys near Trieste in northeast Italy where the wine’s namesake, the Prosecco grape (now Glera grape), is grown. The process followed to make this bellissima bubbly is quite similar to that for champagne; however, instead of sealing the wine into individual bottles for its second fermentation, as is done in the Méthode Champenoise, it’s allowed to ferment in large steel tanks. This is a far quicker and more efficient way to turn out sparkling wine, which makes it more affordable for consumers. Prosecco has experienced a recent surge in popularity in South Africa, which comes as little surprise when you consider that – quality and deliciousness aside – you don’t need to take out a second mortgage on your home to afford it. Bottega, Valdo, and Da Luca are three stand-out brands.

Méthode Cap Classique or MCC is essentially South African’s version of French champagne. Precisely the same winemaking process is followed with the wine undergoing second fermentation in bottles and being matured for 18 months to three years. In South Africa we sometimes make use of other grape varietals, such as Sauvignon Blanc and Chenin Blanc, in addition to the usual Chardonnay and Pinot Noir. It’s owing to the calibre of our wine-growing regions, estates, and winemakers that many of South Africa’s MCCs are considered to be on par with, if not better than French champagne. Sacré bleu!

owards the end of the 18th Century and well into the 20th Century, the Appalachian Hills of the United States became a hot bed of illegal alcohol production. Outrageous liquor taxation laws followed by the Era of Prohibition (1920 to 1933) had just about squeezed the life out of the distilling industry and, desperate to keep their businesses afloat, distillers turned clandestine, operating under the cover of darkness. It was this that conceived the term “moonshine” for the illicit high-proof distilled spirits they turned out and the bootlegging culture that followed became an iconic movement in American history. Today, moonshine is legally produced across the United States - thankfully, with exponentially better quality control in place - with Kentucky, Tennessee, Virginia, Georgia, and North Carolina, among other southeastern U.S. states, having reputations for being the best. Until very recently, however, authentic and traditional moonshine was available elsewhere only by import. That is until South Africa’s very own Silver Creek Craft Distillery smashed a five-medal victory for its handcrafted range at the 2017 Michelangelo International Wine & Spirits Awards. We all know what that means: moonshine has officially arrived in South Africa!
MOONSHINE-MAKIN’ METHODOLOGY The Silver Creek Craft Distillery is a state-of-the-art operation located in an old mine building in Randfontein, Gauteng. Here, founder and chief distiller Mark Taverner and his team take locally sourced yellow and white corn, wheat,
and malted barley and apply traditional mashing, fermenting, and distilling techniques to turn out high-quality unaged moonshine. So committed is Taverner to producing an authentic product that he imports genuine flavours from Louisville, Kentucky, for his distillery’s range of flavoured moonshines. Everything is done by hand, according to Deep South tradition, and each bottle signed, creating moonshine of an exceptional quality that still bears the roguish allure of its past.
THE SOUTHERN MOONSHINE RANGE The Southern Moonshine range consists of a flagship tipple, the pure and smooth Clear Shine (50% ABV), which is as authentic a moonshine as you’ll get outside of Kentucky. Then there’s the Charred Shine that bears the smoky essence of oak barrel, effectively resembling a quality bourbon. And finally, there’s the flavoured ‘shines (24% ABV): nostalgic Apple Pie, spicy cinnamon Bon Fire, delicious Salted Caramel, and Chocolate, a sultry blend of black coffee and dark chocolate. The Silver Creek Craft Distillery’s range can be enjoyed neat, on the rocks, with a mixer, in a cocktail, or as a fun shooter. Quality moonshine is versatile and, according to Mark Taverner, is set to become the next big thing in South Africa, similar to craft beer and gin. And having walked proudly from the 2017 Michelangelo International Wine & Spirit Awards with five medals for its brandnew range of moonshines, it’s clear that the Silver Creek Craft Distillery will be the one standing proudly at the forefront of this blazed trail. he United Nations declared 2017 the Year of Sustainability, and it’s no surprise that the tourism industry is increasingly looking at ways to merge leisure and luxury with environmental mindfulness. All around the world, spaces are taking farm-to-table experiences to new levels. Besides restaurants with a focus on ethical eating, there are some unique hotels that are dedicated to creating a green experience for their guests, from rooftop gardens, and on-site bee apiaries, to resorts where goats graze on the golf course.

The Crosby Street Hotel is situated in New York’s vibrant SoHo neighbourhood, and although it’s on a quiet cobbled street, you’d be forgiven for thinking it’s a typical urban space. On the rooftop of the twelfth floor, however, is an abundant kitchen garden managed by the hotel’s

Faber at Avondale has a menu that centres around respect for the origins of the food, and the restaurant is sustainability-driven with a focus on organic, free range and low carbon ingredients. Expect seasonal dishes like whole roasted cauliflower; smoked home-cured bacon with honeyed parsnips, porcini soil and crispy kale; and fermented and roasted strawberries.

PICK AND PLAY Located in St Kitts in the West Indies, Kittitian Hills has all the makings of an idyllic Caribbean resort, but there’s more to this particular space than white sand beaches and sea views. Driven by the desire to create a place that is both environmentally sustainable, and one that allows visitors to immerse themselves in the local community, it’s set on 400 acres of organic farmland and each element of the hotel has long-term sustainability at its core — from the food they serve to the transport they provide. Most notable is the edible golf course — the boundaries between the course and the farm are made up of organic crops and fruit trees, and guests are welcome to pick and enjoy the fresh produce while they play, while goats graze the green.
HOTELS FOR BEES In an effort to push sustainability to new levels, Fairmont was the first luxury hotel group to introduce honeybee hives on their hotel rooftop gardens in various locations around the world in 2008. The project has been a great success, helping

the local environment by giving bees a home and allowing them to pollinate nearby gardens and parks. The honey is also harvested and used in the hotels’ restaurants and bars. The programme started in the United States and has now extended to locations in Kenya and China. In fact, the Fairmont Mount Kenya Safari Club is home to 32 000 honeybees in eight hives. Closer to home, Cape Town’s Hotel Verde boasts a carbonneutral stay in one of the continent’s most energy-efficient buildings. Along with day-today efforts at sustainability —
think energy generating gym equipment, wind turbines, a grey water recycling system, and a 'zero waste to landfill' goal — the hotel also has a beekeeping initiative in place. The beehives are home to around 60 000 Cape honeybees. Using a vertical aquaponic system, the kitchen also grows some of their own herbs & vegetables. Join the hotel restaurant for earth hour dinner by solar jar, every Wednesday. We love watching this new trend grow, and we’re even more excited to visit them all, so should you be. SV

he picturesque Garden Route stretches from Mossel Bay to Storms River, and with its easy accessibility from Cape Town, it’s a popular escape. Make it a road trip to remember by taking your time — soak up the sun on the coast, linger in the little towns along the way, and get your fix of fresh air in the indigenous forests and nature reserves for which the route is so well-known and loved.
EXPERIENCE KLEIN KAROO CHARM If you choose to travel through the Karoo, and you're after quaint small-town charm, Calitzdorp makes a scenic inland stop en route to the coast. Die Handelshuis
is one of our personal favourites for a bite to eat and a caffeine boost — the quirky establishment claims to have the best coffee in town and serves home-baked pies and cakes in the town's original trading store, which was built in the 1860s. If you opt to stay over, you'll find loads of hiking trails in the area, and it's also a convenient base from which to explore some of the surrounding mountain passes. Don't forget to taste the local delicacy — port!
RELAX AT THE SEASIDE Halfway between Cape Town and Port Elizabeth, Mossel Bay marks the start of the Garden Route on the western side. The town boasts a beautifully mild climate, as well as 60 kilometres of beach that can be enjoyed all year round. Perhaps one of its most unique accommodation options is The Santos Express Train Lodge — a real train situated on the beach, with cabins facing the ocean.

The town is also well-known for its fresh seafood and there are a number of places to taste the local cuisine. The Lighthouse Restaurant at the Point Hotel (situated next to South Africa's oldest lighthouse) serves up simple dishes made with fresh ingredients sourced from the area — think oven baked prawns marinated in yoghurt and tandoori spices and west coast mussels in tomato and coriander broth.
ENJOY THE NATURAL BEAUTY The historic town of George is at the centre of the Garden Route and is a good base from which to explore some of the surrounding sights. The little coastal village of Herald's Bay is just 15 kilometres away, and with its sheltered beach and network of walking trails, it makes for a lovely day trip. Just around the corner is the small town of Wilderness — an area that is strikingly beautiful with its rivers, lagoons, and vast beaches. If you're keen to explore the outdoors, the Wilderness National Park is well worth a visit — the area is home to an array of birdlife, including five types of kingfisher and the Knysna loerie (right). Hire a kayak for the day to really see the series of rivers and estuaries that flow through the lush indigenous forest.

TRY A FUN FESTIVAL Although Knysna is still recovering from the devastating fires that recently ravaged the area, the spirit of the town remains alive. The beautiful lagoon, waterfront, and Knysna Heads are must-see spots for anyone passing through or staying over, and the town is a hub for fun festivals — the Knysna Blues Festival is set to take place in December at the Mitchell's Brewery alongside the lagoon and promises to start off the festive season with a bang!
Just half an hour along the coast is Plettenberg Bay, another holiday favourite. Its beaches make the place a great destination for families, while wine-lovers will enjoy the estates in the area. The Plett Winelands stretch from Harkerville to the Crags and includes 16 farms, mostly with a focus on bubbles. If you're there in November, don't miss the Plett Wine & Bubbly Festival at Central Beach. There'll be 30 wines on offer as well as artisanal cheeses, breads, charcuterie and fresh oysters to snack on.

The Otter Trail
If an escape from the city is what you're after, Tsitsikamma won't disappoint. The region sits on a plateau that stretches from the Bloukrans River to the Tsitsikamma River and is bordered by mountains on one side, and ocean on the other. The area is ideal for nature enthusiasts, with the Garden Route National Park including forest trails, as well as 80 kilometres of marine reserve. The Storms River Mouth section of the park is great for hiking, and there are accommodation options here as well as at Nature's Valley. The iconic Otter Trail stretches for 43 kilometres from the Storms River Mouth rest camp to the Groot River Estuary at Nature's Valley and includes four overnight camps along the way. The trail is unique in its scenery — from caves and waterfalls to sandy beaches and stretches of fynbos and forest. SV

HAVE AN ADVENTURE Hawaii's beaches are its biggest attraction, and no matter which direction you choose to explore, you'll be spoilt for choice. Waimanalo Beach in Oahu is the area's longest stretch of beach, while Tunnels Beach in Kauai is great for snorkelling and scuba diving. Moving towards the back of the car you are greeted with rear 3D-like lamps. The party on the roof gets even wilder as
