¿Al diablo con las reglas? Sí, a veces puede ser todo un acierto. Usted decide.

To hell with the rules? Sometimes that’s best, but in the end, it’s up to you.

so del “maridaje” ya en sí suena algo raro.

Y todos sabemos, por cierto, que matrimonios perfectos no existen. lo mismo sucede entre comida y vinos. las teorías a veces no funcionan; lo que puede ir mejor con esto, quizá no lo haga tan bien como parecía en el papel.

Pongamos, por ejemplo, el caso de los blancos con la carne. ¿Se le ha ocurrido beber blancos con el asado? ¿es que eso es ilegal? los consejos sobre la armonía son sólo eso: consejos, no leyes. Y si a usted les gusta un vino en particular con todo tipo de platos, nadie puede condenarlos. Pero vale tener en cuenta que una buena idea (o consejo, como quieran) es que la intensidad del vino sea similar a la de la comida. Y ahí hay blancos intensos, potentes como el Viognier o el Chardonnay (con guarda en barricas) o el Roussanne, el Marsanne y, también, el Torrontés.

Todas esas cepas en este lado del mundo suenan raras para la hora de asado, pero hagan la prueba, claro que no con el ojo de bife de siempre, sino más bien con cortes más magros como entrañas o, incluso, mollejas o chorizos. estos blancos de fuerte presencia en la boca seguro que funcionan. Y ¡al diablo con las reglas!

he idea of “pairing” actually sounds kind of strange. We all know there are no perfect couples in real life, and it’s the same with food and wine. Sometimes the theories don’t pan out: what looks good on paper may not work on the ground. Take white wines and meat, for example.

Has it ever occurred to you to drink white at a cookout?

What, is it illegal? advice about harmonizing food and wine is just that: it’s advice, not the law. if you like a particular wine with all kinds of foods, no one has the right to criticize you. even so, here’s one good idea – a word of advice, if you will. it’s worth remembering that the intensity of the wine should match the intensity of the food. and there are some very intense whites out there – powerful wines like Viognier, (barrel-aged) Chardonnay, Roussanne or Marsanne and even Torrontés.

When it comes time to heat up the grill in this part of the world, the idea of serving any of those varieties sounds strange. i recommend that you test them for yourself – not with a rib eye, of course, but with leaner cuts like skirt steak or even sweetbreads or chorizo sausage. Whites with a powerful palate will certainly work. and to hell with the rules!

Mauricio Banchieri y Marybeth Bentwood forman una pareja singular. Ambos trabajan en Estados Unidos, desde distintas vitrinas, posicionando el vino chileno. Él, como CEO de Puro Chile –su tienda en Nueva York– y ella, a la cabeza de la oficina de Wines of Chile.

Mauricio Banchieri and Marybeth Bentwood are a unique couple. They both work in the United States promoting Chilean wine but in different settings. He owns Puro Chile, a specialty store in New York, while she heads the city’s Wines of Chile office. i

uando en 2009 el ingeniero comercial Mauricio Banchieri abrió en el SoHo de Nueva York la tienda puro Chile –que muestra parte de lo mejor de su país– tenía claro qué producto debía tener allí un lugar protagónico. “probablemente no hay mejor embajador de Chile que el vino”, dice quien consecuente con esa máxima creó en el mismo espacio puro Wines, donde ofrece botellas de más de 40 bodegas y realiza actividades como una clase-degustación acompañada de comida chilena, que el año pasado sobrepasó los mil inscritos.

hen business administrator Mauricio Banchieri opened puro Chile in New York’s SoHo district in 2009 to showcase the finest products from his home country, he knew exactly what would be front and center. “There is probably no better ambassador from Chile than wine,” says Banchieri. True to his word, a special area in his shop called “puro Wines” offers selections from more than 40 wineries and hosts a range of activities, like the educational wine tastings accompanied by Chilean cuisine that were enjoyed by more than a thousand guests last year.

He has also witnessed the intense demand for sparkling wines (his top sellers). perhaps best of all, many of his clients have returned again and again; they’ve fallen in love the wine they’ve just discovered.

Mauricio –quien un día fue a Washington D.C. a estudiar un máster y volvió convencido de que su futuro estaba en Norteamérica– hace años es pareja de Marybeth Bentwood, una estadounidense que también pasa gran parte de su tiempo dedicada al vino chileno. Hasta hace poco llevaba las relaciones públicas de una importadora de vinos europeos de lujo, pero hoy es directora ejecutiva en ee.UU. de Wines of Chile, organización que promueve el vino chileno por el mundo y que allá tiene su centro de operaciones en las dependencias de puro Chile.

Banchieri did his master’s in Washington D.C. and later returned to the U.S., convinced that was where his future lay. His U.S.-born wife Marybeth Bentwood also spends much of her time focused on Chilean wine.

Until recently, she was in charge of public relations for a european fine wine importer, but now she’s the executive Director of the U.S. office for Wines of Chile, the organization that promotes Chilean wine around the globe. in fact, the two Chilean enterprises share the same building.

esta pareja concuerda en que una de las tareas pendientes es dar mayor contenido a la imagen país. “Cuando los norteamericanos piensan en Argentina, piensan en tango o fútbol. en perú, en comida. pero Chile es un poco tabula rasa”, dice Marybeth.

“Mauricio opened my eyes to the fact that his country had wines of outstanding quality at very competitive prices,” his wife says. Bentwood has now taken up the challenge of convincing the rest of her fellow citizens. “They’re quite pleased with Chilean wines under US$10 a bottle and willing to buy more but not at a higher price.

And so we have to attract another customer base, convince those who spend US$15 to US$30 a bottle on wines from California and italy that they are going to get a much better Chilean wine for that price.”

The couple agrees that one pending task is to flesh out the country’s image. “When people from the U.S. think about Argentina, they think of tango or soccer. in the case of peru, they think of food. But Chile is something of a blank slate,” says Bentwood.

Banchieri explains that Chile’s image as a successful, economically stable country is not enough. “We’re also seen as boring and somewhat predictable. people need more experiences.” To support this endeavor, Banchieri opened a second puro Wine shop in Santiago’s Hotel W in late 2013, so U.S. visitors can purchase wines in Chile and have them shipped home.

Bentwood and Banchieri both work from their respective positions to promote wine tourism and to strengthen Chile’s advantages. Unlike the Australian or Argentinean model, in which the country’s image is tied to a specific variety (Syrah and Malbec, respectively), in Chile “the strategy is focused on diversity. our country has terroirs that make it attractive for different varieties and great for producing high-altitude wines, coastal wines, northern and southern wines, and so on. That diversity will yield outstanding results, it’s much better than putting all our chips on a single variety,” Bentwood explains.

a unos 400 kilómetros al sur de Santiago, en chile, el Valle de itata posee una larga tradición vitícola. allí se plantaron algunas de las primeras parras de vides viníferas en el país y allí también persisten centenares de pequeños productores, responsables de reducidos viñedos que hoy dan vida a algunos de los vinos chilenos más interesantes. el paisaje es una seguidilla de suaves laderas. De tanto en tanto vemos viñedos, aunque en su mayor parte han sido reemplazados por bosques de pinos, especie introducida en la zona y que ahora constituye la principal fuente de ingresos.

Some 250 miles south of Santiago, chile, is the Valle de itata, with its longstanding winegrowing tradition. Some of the country’s very first wine grape vines were planted here, and the valley is still home to hundreds of small growers working boutique vineyards that are giving rise to some of the most interesting wines in chile today.

The landscape is composed of rolling hills, punctuated by the occasional vineyard, although most of the land has been taken over by pine plantations.

This introduced tree species is now the main source of revenue for the region.

Las dos cepas emblema son el Moscatel (llamado localmente “italia”) y el cinsault. La primera es blanca, de gran poder aromático (huele a flores) y a la vez de gran cuerpo, muchas veces tan potente como el de un tinto. La segunda, el cinsault, es tinta, más ligera, de color intenso, pero de textura suave.

The two emblematic varieties are Moscatel (which the locals call “italia”) and cinsault. Moscatel is white, powerfully aromatic – redolent of flowers – and so fullbodied that it’s often as powerful as a red. cinsault, on the other hand, is a light-bodied red, with a deep, dark color and a smooth texture.

Despite extremely rich soils, a long winegrowing tradition and two varieties that are barely taken advantage of in chile, the Valle de itata had been forgotten by the world of wine until very recently. and the enterprise directly responsible for its resurgence was the De Martino winery, with the 2011 Viejas Tinajas cinsault. as its name implies, this red was produced in 100-year-old ceramic urns called tinajas, recovering not only a terroir and a grape variety but an ancestral technique, as well.

xploring Ribera del Duero is like visiting another world – you leave the asphalt for Antonio Machado’s “Fields of Castile,” a landscape drenched in neverending hues of ochre, purple and brown. A land of rivers and mountains.

Una tierra donde –a pesar de lo agresivo del clima– se elabora una de las Denominaciones de Origen, D.O., más prestigiosas del globo, que en los últimos cinco años ha aumentado sus ventas en 26%, bordeando los 80 millones de botellas en 2013. A nivel nacional, con una cuota de mercado de 9,1%, estos mostos son los segundos en ventas. El consejo de la Denominación de Origen Ribera del Duero calcula la cuota de exportación en 30%, principalmente a Estados Unidos, Alemania, México y Suiza.

Despite its aggressive climate, this land claims one of the most prestigious Denominations of Origin (D.O.) on the planet, a region where sales increased by 26% over the past five years to nearly 80 million bottles in 2013. Within Spain, Ribera del Duero enjoys a 9.1% market share, and its wines are the second highest in sales. The board that oversees the Ribera del Duero D.O. estimates the export volume to be 30%, primarily sent to the United States, Germany, Mexico and Switzerland.

La oferta es variadísima. Quien visita la Ribera del Duero puede hacer —en poco más de 100 kilómetros— turismo de vinos, belleza y salud, gastronomía o, simplemente, de hotelería premium para un buen relajo. El paisaje subyuga.

delante de los valles de Napa y Walla Walla (EE.UU.), el de Loira (Francia) y Cape Winelands (Sudáfrica). Para hacerse una idea. ¿La clave del éxito? Su climatología.

Sobre el mapa puede que no se vea lejos de la otra niña bonita del vino español –La Rioja– pero su altura, más de 800 metros del nivel del mar, hace la diferencia. Acá los vientos son áridos, los inviernos pueden alargarse hasta junio, y los veranos calurosos ceden paso pronto a las frescas noches de septiembre. “Esto es lo que da un carácter fuerte, ese de aguantar lo más duro”, resume Enrique Pascual, presidente de la D.O. Ribera del Duero, que aglutina a casi 140 bodegas.

Y hay otra clave: “Unos bodegueros con una mentalidad aguerrida de hacer las cosas bien”. Aquí no valen las grandes producciones –la media no supera los 5 mil kilos por hectárea– y el trato es exquisito. Se poda en seco, si la carga es mucha se quitan racimos, las barricas se renuevan constantemente para tenerlas siempre perfectas. “Me atrevería a decir que ninguna otra D.O. hace controles tan exhaustivos”, afirma Pascual, bodeguero hace 30 años.

Con la calidad de su parte, Ribera del Duero ha sabido venderse. Dentro y fuera. Desde principios de los ‘80 sus miembros van y vienen en aviones.

Suman campañas de dinamización como ‘Drink Ribera, Drink Spain’ y portales como ‘Ribiértete’ o la ‘Ruta del Vino’, donde se marida el delicado aroma a moras de sus caldos con la magia de su tierra.

Y como Castilla-León es paraíso para senderistas, para amantes de la historia, para gourmets, era sólo cuestión de tiempo la eclosión del enoturismo. A este destino ya apuesta un 9,6% de los turistas españoles que buscan zonas vinícolas. La cifra todavía está lejos del 24% que tiene Cataluña, primera del ranking reciente del Observatorio Turístico de las Rutas del Vino de España, donde Ribera del Duero destaca como un “territorio con una demanda potencial”. “La fama de sus mostos, la calidad de su oferta enoturística y la cercanía a Madrid y el País Vasco –dos de los principales mercados emisores de turistas del país– contribuyen”, explica Diego Ortega, presidente de la Asociación Española de Ciudades del Vino.

So, what are the keys to its success?

First, the climate. On the map, it doesn’t look too far from the Cinderella of Spanish wine – Rioja – but at more than 2,600 feet above sea level, the altitude of Ribera del Duero makes all the difference. Up here, the wind is arid, winter can last until June, and hot summers give way quickly to cool September nights.

“Weathering the harshest climate produces our wine’s strong character,” says Enrique Pascual, president of the Ribera del Duero D.O., which represents some 140 wineries.

The second factor: “Our winemakers are determined to do things right.”

There’s no margin for error: average yields never exceed 4,500 pounds per acre, so meticulous care is taken.

Pruning is done in the winter, clusters are removed if the fruit load is excessive, and barrels are constantly repaired to ensure that they’re in perfect order. “No other D.O. has such rigorous controls,” declares Pascual, a winemaker for 30 years.

With quality on its side, Ribera del Duero knows how to sell itself, domestically and abroad. Since the early 1980s, the region’s winemakers have been heavily promoting the region’s wines. With campaigns like “Drink Ribera, Drink Spain” and tourism Websites like “Ribiértete” or “Ruta del Vino” showcase the region’s wine and its magical landscapes.

And because Castile and León is already paradise for pilgrims, history buffs and foodies, it was only a matter of time before wine tourism took off, as well. This destination already attracts 9.6% of all Spanish wine tourists, but that figure is still far below the 24% that visit Catalonia, which ranked first in a recent survey conducted by the Tourism Observatory of Spain’s Wine Routes; Ribera del Duero is a “territory with potential demand.” As Diego Ortega, president of the Spanish Association of Wine Cities (ACEVIN), explains: “The reputation of the region’s wines, the quality of its wine tourism and its proximity to Madrid and the Basque Country – two of the country’s main tourist markets – play in its favor.”

“Los polifenoles (moléculas de la uva) tienen mayor poder antioxidante que la vitamina E, previenen el envejecimiento prematuro de la piel y potencian la renovación celular”, explica Irene Lan, empleada del Wine Spa Resort de las bodegas Arzuaga Navarro www.hotelarzuaga.com.

Y en el tratamiento “lo ideal sería comenzar con una exfoliación de extracto de uva, preparando la piel para una mejor absorción de las propiedades del vino a través de la posterior envoltura y masaje. Así, la piel queda hidratada, gana firmeza y elasticidad y se eliminan las consecuencias de los radicales libres”.

Existen también los “Brindis para dos”: masaje con aceite de pepitas de uva, exfoliación al extracto de uva, envoltura corporal de vino y jacuzzi de vino con bombones y copa (320 euros por pareja).

El enoturismo español todavía no compite con los favoritos: Francia, Italia y Estados Unidos; por eso, aún son los españoles quienes más disfrutan de las bodegas ibéricas, aunque cada vez llegan más alemanes, estadounidenses e ingleses, en ese orden. Los extranjeros empiezan a descubrir que hay vino más allá de Jerez (Andalucía), el Penedés (Cataluña) y La Rioja alavesa.

Spanish wine tourism yet doesn’t compete with the favorites: France, Italy and the United States. Iberian wineries are still mainly enjoyed by the Spanish themselves, although the numbers of German, U.S. and British tourists are on the rise (in that order). These visitors have begun to discover wine beyond Jerez (Andalucía), Penedés (Catalonia) and Rioja Alavesa.

In Burgos, Segovia, Soria and Valladolid, visitors can taste remarkable wines and tour the historic medieval cellars where they are still stored.

Wine has been used medicinally for thousands of years, but it wasn’t until the late 1990s that spas began to use vinotherapy, with the French brand Caudalie leading the way.

“Grape polyphenols have more anti-oxidant power than vitamin E. They prevent premature aging of the skin and promote cellular renewal,” says Irene Lan, a staff member at the Wine Spa Resort inside the Arzuaga Navarro winery. www. hotelarzuaga.com.

Lan explains that the treatments “ideally begin with exfoliation with grape extract, to prepare the skin to better absorb the properties of the wine during the wrap and massage that follow.

This way the skin is hydrated, firmness and elasticity are enhanced, and the impacts of free radicals are eliminated.”

Among the treatments is the “Brindis para dos” (Toast for Two), a couples massage with grapeseed oil, exfoliation with grape extract, wine body wrap and wine Jacuzzi with chocolates and a glass of wine (€320 per couple).

Maridaje ~ Wine Pairing Para esta receta, de sabor más pronunciado con el queso de oveja maduro, necesitamos un vino tinto de cuerpo medio, de fruta roja madura, con taninos sutiles y redondos, que tenga buena persistencia en boca y largo retrogusto. Por este motivo, he seleccionado San Alicia Gran Reserva Merlot 2011 del Alto Maipo de Chile.

Tagliolini con habas y queso de oveja - 4 personas Cocer las habas en agua con sal. en una sartén poner la mantequilla con al aceite y la cebolla cortada fina hasta dorar. adicionar las habas, el vino blanco y cocinar unos tres minutos. añadir el queso de oveja rallado y la pimienta. Luego, cocinar a fuego suave hasta derretir el queso.

Cocer los tagliolini y agregar a la salsa de queso de oveja poniendo un poco del agua donde se coció la pasta para mezclar mejor con la salsa. servir inmediatamente para que no se enfríe el queso.

Tagliolini with Fava Beans and Sheep Milk Cheese ~ Serves 4 Cook the fava beans in salted water until tender. Melt the butter with the olive oil in a frying pan and sauté the onion until golden brown. add the fava beans and white wine and cook for three minutes. add the grated cheese and pepper. Cook over low heat until the cheese melts.

Cook the tagliolini and drain, reserving a little of the cooking water.

Toss the pasta with the sauce, adding a little of the water to improve consistency. serve immediately, before the cheese cools.

For the Filling: 400 g southern hake 1 onion, julienned 50 g butter - 200 ml milk 1 glass white wine 10 g parsley, chopped Salt & pepper to taste - 5 g flour Pasta Dough: 500 g flour 5 whole eggs - Salt Sauce: 500 g fresh mussels 200 g lima beans 5 g parsley, chopped 1 glass white wine 1 g cacho de cabra chili 1 clove of garlic, whole - salt - olive oil

Ravioli rellenos de merluza austral, con salsa de porotos pallares y choritos ~ 4 personas Pasar el pescado por harina, aliñar con sal y pimienta. en una sartén poner la mantequilla a derretir, dorar la cebolla y agregar el pescado.

Dorar por ambos lados, añadir el vino blanco y dejar evaporar el alcohol.

Por último, agregar el perejil picado y la leche. Cocinar unos 10 minutos.

Cuando el pescado y la salsa estén fríos, moler todo en el mini-pimer.

Preparar la masa de los ravioli, mezclando todos los ingredientes. Dejar reposar una media hora. estirar la masa con la máquina hasta darle el espesor deseado. Cortarla en forma redonda con un molde, en el centro disponer el relleno y cerrar los bordes.

Cocinar los porotos pallares en abundante agua con sal hasta que se cuezan. separar en dos partes iguales y pasar la mitad por el minipimer. en una sartén calentar el aceite, agregar el perejil picado, el ají, ajo y los choritos enteros y frescos. Luego el vino blanco (dejar evaporar) y los porotos pallares molidos. Dejar al fuego unos cinco minutos hasta que los choritos se abran. añadir los porotos enteros y cocinar otros cinco minutos.

Cocer los ravioli en abundante agua, cuando estén listos mezclar con la salsa y servir.

Maridaje ~ Wine Pairing Este plato es una combinación sublime entre el sabor delicado y sabroso de la merluza, y la salsa tenuemente marítima y especiada. Ideal es la compañía del Chardonnay de Viña Tabalí, Talinay 2012: un vino cremoso y vibrante, bastante mineral, de rica e integrada acidez, muy sutil, pero de excelente persistencia final.

This dish is a sublime combination of the delicate, delicious flavor of the hake with the lightly seasoned, maritime flavor of the sauce. Its ideal table companion? Viña Tabalí’s 2012 Talinay Chardonnay: a vibrant, creamy wine that’s rather mineral, with lush, wellintegrated acidity, very subtle but with excellent persistence.

Southern Hake Ravioli in Lima Bean and Mussel Sauce ~ Serves 4 Dredge the fish in flour and season with salt and pepper. Melt the butter in a frying pan, sauté the onions, then add the fish. brown on both sides, pour in the wine and let the alcohol evaporate. Finally, add the parsley and the milk. Cook for about ten minutes and let cool.

When cool, purée the fish and sauce with a hand blender.

To prepare the dough, mix all ingredients together, let stand for a half hour and then roll out the dough to the desired thickness. Cut into rounds, then place some filling in the center of each round and pinch the edges closed.

Cook the beans in plenty of salted water until they are tender. Divide into two portions and make a purée of half with a hand blender.

In a frying pan, heat the oil and sauté the parsley, chili, garlic and add the mussels. Pour in the white wine, let the alcohol evaporate and then add the bean purée. Cook until the mussels open (about five minutes). add the whole beans and cook another five minutes.

Cook the ravioli in plenty of water, and when they are ready, toss gently with the sauce and serve immediately.
