Ahoy Members!
Finally, we are entering the fall season and some cooler weather for activities at our Pass-a-Grille Beach Club, and downtown Tiki. While at the Tiki, make sure you stop by the new short-order poolside kitchen and check out the menu!
After their annual shut-down, we welcome everyone back to the Beach Club which is now open and ready for you to socialize on the deck, poolside, and indoors. The northernmost fixed dock needs replacement, and the Board of Directors has approved installing a new floating dock, hopefully this fall.
Tuesday, October 11th is a very important day for the Club, and every member. Elections close at 7:30 pm and remember you’re electing Board of Directors to represent you. These members will be making very important decisions about the future of our Club. Prior to the ‘State of the Club’ and election results, the Annual Meeting will begin with a presentation of construction ideas for the membership and Board to consider. Sign up for a focus group if you’d like to participate in these ideas.
Returning to the Beach Club on Saturday, October 15th is the annual PAG Poker Run. Don’t miss this really fun event held in Boca Ciega Bay. Gather your crew, pick a theme, and sign up whether you have a small run-a-bout or large center console. This is a Powerboat Competition Committee event, it’s not a race, capped at 125 members, and sells out early! For questions, call Chairman Chris Waters at (727) 580-2064.
We want to thank you for being a member of the St Petersburg Yacht Club. Be sure to save the date for the annual Member Appreciation Party which will be held on Sunday, October 30th from 3:00 - 5:00 pm.
Saturday, November 12th is the date of the “2022 Commodore’s Ball”. This will be an elegant evening at St Petersburg Yacht Club where there’ll be fine dining, dancing, spirits, and a celebration of the Change of Command of our Club. Dress is definitely Formal Attire! Invitations will be out shortly, so don’t wait to sign up as space is limited.
Over the last two years, membership has grown by over 500 members, Club usage has risen, boating activities have expanded, and most importantly, there is a very cheerful and positive atmosphere throughout the entire Club.
As this is my final Commodore’s Log, I’d like to thank my wife Mary for her huge support, and the team of individuals behind the scenes making this Club run smoothly. These dedicated folks include the Executive Office staff, Food & Beverage service, Housekeeping, Sailing Center Staff, Valets, Dockmasters, Security, Maintenance, and finally the members who have spent countless hours volunteering on committees making SPYC the best Club!
None of this would be possible without the leadership of your Flag Officers & Treasurer, your Board of Directors, and support from our new General Manager, Rhett J. Robicheaux.
I especially want to thank Commodore Brian Smith for his never-ending encouragement, assistance, and organizational skills, and I wish him a great year supported by Vice Commodore Scott Boyle and Rear Commodore Joe DiVito.
I know members will be in the best of hands. Finally, I want to thank everyone who has helped me during my term make the St. Petersburg Yacht Club a better place, delivering a really great Member Experience...Fair winds, calm seas and enjoy your Club!

by: Rhett J. Robicheaux, CCMCan you believe it’s already October – we must be having too much fun! Fall is in the air, Football is back, and so is a packed schedule of events here at the Club. Please refer to the weekly e-blast, website, and Smooth Sailing for all the event details. I’d like to mention a few here, one being the Meet the Candidate Night on Tuesday, October 4th at 6:00 pm, next we will be celebrating the 15th Anniversary of the merger of PAG and SPYC, at PAG on Sunday, October 9th, which should be a special event especially for those who were involved with the merger, and then close the month out with the Member Appreciation Party on Sunday, October 30th. However, one of the most important dates you will not want to miss is our Annual Meeting & Board of Directors Election on Tuesday, October 11th. At the Annual Meeting we will be summarizing our Strategic Plan and unavailing to the membership where we are in the Master Planning Process.
Following the Annual Meeting, in mid to later October/early November, Focus Groups will be scheduled for membership to chime in on the Good, Better, Best Plans we have for the Clubs future. This will be the next phase of the Master Plan. Signups have already started, and we will have additional sign-up sheets at the Annual Meeting. October 11th will be filled with information and education on where we are today (its intent is not to vote on anything at this meeting). Once the Focus Groups are conducted Peacock + Lewis forward the feedback from membership back to the Committee with recommendations on a final plan. Once finalized, that plan will go back to the Membership for a vote.
Did you know the Club has a Gem Fund?
The Double Wheel in the Compass Room is a version of the USS Constitution’s original double wheel that was conceived, designed, and built by a team of St. Petersburg Yacht Club Members out of love and respect for their Club back in 1998. The purpose of the wheel is to provide a place to mount nameplates with the names of members of the Wheel Club. The Wheel Club is an ongoing program established to enable the funding of capital improvement projects through endowments, gifts, and memorials which, will use as its symbol, a ships wheel. Membership in the Wheel is available at three levels:
• Captain $2,000: Receives a Wheel Club lapel pin & engraved plaque on the Wheel
• Commodore $5,000: Receives Wheel Club lapel pin with ruby, engraved plaque on the wheel with a gem representing a ruby
• Admiral $10,000: Receives a Wheel Club lapel pin with diamond, engraved plaque on the wheel with a gem representing a diamod
The search for our next Executive Chef is still underway as I write this article and we have four great candidates that are going through the process. I am confident a decision will be made shortly after you read this edition of Smooth Sailing. The most important thing here is to make sure we are hiring the right candidate for the future of the Club. Chef Christian, who has been acting as the interim Executive Chef and is in the running, has been doing an exceptional job with his team.
I would like to take this opportunity to introduce to you Jason M. Hooper who will be starting October 5th as our new Food and Beverage Director. Jason brings with him 20 plus years in the Club industry mostly in the Food and Beverage arena. He is originally from New Jersey, where he spent 13 years at the Arcola Country Club from Banquet Manager to Clubhouse Manager. Most recently Jason spent 3 years at Heritage Oaks Golf & Country Club in Sarasota. We are excited to welcome Jason as he will be adding the leadership and management skills to assist in making the SPYC the best it can be.
I would also like to take this opportunity to congratulate and thank Commodore Waters for his leadership this past year. Each year comes with its unique challenges and he has handled each situation with steadfast attention. I commend him for bringing back the member experience. Thank you, Commodore Waters, for your support of the Club and myself, and to the outgoing Board Members, we thank you for your service. To those stepping into new positions we look forward to working together in our efforts in making this already great Club even better. In closing, we are back in full swing, and we are excited for yet another great year her at SPYC! There is alot of excitement in the air, and we are here to make every experience at the Club a memorable one. I look forward to seeing everyone this coming season at one of our great properties.

The Annual Meeting of the St. Petersburg Yacht Club
will be held on Tuesday - October 11, 2022. At this meeting the following business will be transacted: Election of Directors, Annual Reports of Officers and members of the Executive Committee, reading of communications, and other such business as may properly come before the meeting. Refreshments will be served following the meeting.
Voting for Directors will start at 11:30 am in the Quarterdeck Room and will continue until 7:30 pm. The Annual Meeting will commence at 7:00 pm, in the Ballroom. Members eligible to vote who are in the following three membership categories, and who are in “good standing”, must present their membership card before voting: All Past Commodores, Active/Active Boat, and Intermediates. (Members who are not eligible to vote include Non-Residents, Domestic Partners of a member, and Pass-a-Grille Club Only Memberships). In the instance of Married Couple Memberships, only one spouse may vote per membership, on a first come basis.

NOTICE—Absentee Ballot for Annual Election
As prescribed in the Club By-laws (Article IV, Section 5), any member entitled to vote who desires to vote by Absentee Ballot may, within TWO WEEKS PRIOR ELECTION DAY (beginning Tuesday, September 27th), procure from the Secretary an absentee ballot, which shall be duly noted for the member (Ballots are available in the Membership Office). Any member whose dues, house account, or other indebtedness to the Club has not been paid in full thirty (30) days after being billed for the same, shall not be deemed a “member in good standing”.
House Rule #27 Pertaining to Election:
In reference to Club elections, there shall be no written voting recommendations or other candidate slate suggestions passed out on the Yacht Club premises.
By Laws: Article IV-Section 4
Direct mailings or other mass distribution to members of campaign material by or on behalf of Board Candidates is prohibited and, if caused by a candidate, grounds for disqualification of a candidate or removal from the Board of such elected candidate and other disciplinary action, as well as grounds for disciplinary action against any noncandidate member who engages in such action.
By Laws: Article IX – Section 1
Such prejudicial conduct includes oral communication or distribution by any mean negative literature or other material designed to embarrass or humiliate another club member, regardless whether such member is running for an elected position.
SPYC members have a choice of three voting options for this year’s Board of Directors election taking place Tuesday, October 11th. Please review the details on this page carefully.
Option 1: In-Person Voting Day of Election
.Members may choose to attend in person to cast their vote. Voting will take place downstairs in the Quarterdeck Room Polls will be open on October 11th beginning at 11:30 am and close promptly at 7:30 pm.
Option 2: Absentee Ballot via Email

1. One request, per membership, may be made for an absentee ballot through Email; please include your member number when requesting. (ABSENTEE BALLOTS: Available beginning Tuesday, September 27th)
2. All ballots sent via Email are REQUIRED to be mailed back (via USPS) to the Membership Office before day of election, October 11th. (Ballots returned via Email cannot be counted as a valid vote.)
3. The following information is required to be placed on the backside of your return envelope:
a) Name of Member who is Voting, b) Member Number, and c) please reference, “Absentee Ballot”.
4. Ballots returned by mail will not be opened by any individual of the SPYC Management or Staff, therefore we require the above information on your envelope in order for your ballot to be accurately accounted for by the SPYC Election Personnel.
5. To ensure that your ballot is received before election day (October 11th) and accounted for, please be sure that you mail your ballot back to us as soon as possible, to allow sufficient delivery time through the USPS.

Members who wish to cast an Absentee Ballot in person at the Club, before October 11th, may do so by visiting the Membership Office during business hours: Tuesday-Friday between 11:00 am – 5:00 pm

Kevin and Susan Cross retired to St. Petersburg in 2019, where they then joined the SPYC, and became active in the Cruising Fleet and other Club activities. They have two adult children. Kevin started boating as a sailor in Bermuda and shifted to power once children came along. Currently he captains their Sabre 48, C Breeze. Kevin was asked in 2021 to become the SPYC Cruising Fleet Captain and is a member of the Executive and Port Committees. He enjoys these opportunities to serve and the Cruising Fleet has grown during his tenure.
Kevin has a B.S. degree in Business, is a Certified Public Accountant, and a Chartered Financial Analyst. He started his career in public accounting and then held senior positions with real estate development firms, including a development company he formed in Bermuda. Kevin has also served as the President and Treasurer of several homeowner association boards. He has a private pilot’s license and enjoys scuba diving, travel, and emerging technology.

Mr. Diaz and his wife have been members since 2005. They were members of the Bucketeers Club and many of those members were also SPYC members, so they became interested in being part of the SPYC family. Frank and his wife are active boaters and enjoy the Cruising Fleet, Wine Society, and The Wine Club; as Frank also aspires to spend more time with the Fishing Club. He has also volunteered as a judge in the SPYC Vintage Motor Classic and has served on the Membership Committee.
“I am interested in serving on the SPYC Board of Directors as my professional experience with large corporations, small businesses, along with consulting skills, can make a difference. This experience would be particularly useful as SPYC moves from developing its long-range plan to execution, as excellent outcomes should be balanced against what probably matters most to all us - our membership experience. Among my accomplishments are marrying my beautiful wife Carla, a long career and retiring from IBM, Bucketeers Captain of the Fleet, Real Estate Broker, Commercial Appraiser, and principal in a consulting business.”
Mr. Fraser quotes, “The Yacht Club has been an important part of my life and I believe in contributing back to SPYC.” - Chris was born and raised in St. Petersburg and learned to sail as a kid at the SPYC Sailing Center. He has been a member since 1991 and has served on the Board for 15 years, served as the Secretary, and on the Executive Committee; Finance, Membership, Long Range Planning, Entertainment, and Intermediate Committees. Chris brings his professional experience as a CPA and Business Technology Consultant to give a unique perspective to serving the Club.

Joining SPYC just over 10 years ago, Angela and her husband, Brian, have thoroughly enjoyed their boating experiences while meeting many, many new friends…the main reason they joined SPYC. Becoming actively involved in several Clubs Within the Club, Mrs. Kowalik has served in officer positions * in all of them while also serving at the SPYC Executive level as Fleet Captain. She joined the Salty Sisters (Class of 2016), and became reacquainted with sailing (and bridge!) and spending more time on the water. During Angela’s 40-year professional career with a major telecommunications provider, she focused on risk analysis and assessment, data privacy and protection, for large-scale development and expansion ventures. Her education includes a B.S. in Professional Management, and an MBA from Nova Southeastern University. Having recently retired, Angela and Brian started the RV Land Cruisers group and are enjoying land-side adventures across the country in their RV.

Ms. Mark’s son, Zack, was a Junior Sailing Team member in 2003 under Coach Boothe. In 2004 the Club extended membership to the Jr. Sailing Team families, and Donna Sue’s family joined SPYC. As her son competed internationally, Zack proudly displayed the SPYC Burgee. During sailing season you’ll find Donna Sue on Florida’s beautiful waters officiating as a Race Officer at local youth regattas, supporting many adult one-design regattas promoting our Olympic foiling classes, Kites, IQ Windsurfers, and Wingers. Donna Sue’s volunteering includes Clubs Within the Clubs and serving on the Executive Committee as both a Chairperson, and Committee Member.

Mr. Matthes is a veteran of the U.S. Navy and moved here in 2015 with his wife Michele (the Admiral), where they currently reside in Gulfport. They have 3 lovely children, and 3 beautiful grand-daughters. He and his wife are active boaters and have been members of SPYC for 6 years. Rob started sailing on a J-22 in Chicago over 35 years ago and currently is a power boater. Rob has served on the Cruising Fleet Committee and Port Committee. He also enjoys cruising to the other clubs/marinas seeing what they do right and wrong (including how SPYC members are welcomed). Rob is the President and Founder of two technology companies for over 24 years including Talos Lightning Detectors, which started from the ground up.

FRANK MCCARTHY Active in the Club Since 1977
Frank and his family have been longtime members of the St. Petersburg Yacht Club. His family were even members of the Pass-a-Grille Yacht Club prior to the merger with the St. Petersburg Yacht Club. Frank began sailing in the SPYC Junior program in 1977. By age 15, he had competed at a world-class level on 4 continents. In 1985, Frank represented USA at the World Youth Sailing Championships in St. Moritz. At 18, Frank began his Grand Prix Ocean Racing career. Frank was involved with several international world-class campaigns and was crew on numerous national, continental, and world championship-winning teams. At age 19, Frank was a full-time professional racing crew on the 85’ I.O.R. Maxi “Ondine VII” racing in events all over the world. He has been a professional racing yachtsman for most of his life. Frank is a Certified Professional Yacht Broker (CPYB) with Galati Yacht Sales in St. Petersburg and regularly assists members with their boats. Frank resides in St. Petersburg with his wife Janet and can regularly be found out on their own boat with their French Bulldog, “Bruno”.

For the last ten years, her contributions include: Committee member with the Regata del Sol al Sol Race, volunteering with the Vintage Motor Classic, Chairperson on the Entertainment Committee, committee member on the Finance Committee, and serving on the SPYC Board of Directors from 2016-2018 and 2019-2022. In addition to SPYC activities, Jeannie is a self-employed Mortgage Broker and enjoys helping people to finance real estate, being active within the local community, boating, and more.

Mr. Pennington has lived in Pinellas County in various communities since 1964. Now retired, he worked for a large international corporation in sales, marketing, and management for 42 years. George has been an avid boater all his life, and became a member of the St. Petersburg Yacht Club in the year 2000; having served on various committees since then and became involved in Race Management in the early 70’s. Currently he is a USSA Certified Race Official, promoting and working on local, national, North American, world, and international regattas for SPYC. He and his wife, Beth, enjoy working the Race Committee, and the camaraderie that comes along with these events, as well as training new Race Committee people on board their vessel, Baby Doll Too VI. George has learned how valuable our members are, especially those who volunteer their time to work on committees, which make the St. Petersburg Yacht Club the prestigious Club that it is.

Mrs. Weller and her husband, Heber, joined SPYC in 2010 where they began volunteering for the Race Committee, meeting many Club members, and enjoying learning the finer points of sailboat racing. However, as they owned a cruising boat, they soon became involved with the Cruising Fleet and enjoyed weekend cruises to neighboring yacht clubs. This involvement led Barbara to take on the responsibility of Fleet Captain in 2011, and then Power Boat Competition Chair in 2014. Since then, Barbara has continually been involved in promoting boating activities to benefit our membership, and most recently in concert with our current Fleet Captain, to promote small boat day trips in the Tampa Bay area - The “DayTrippers”. She has also served on the Membership, Port, and House & Grounds Committees and worked toward bringing the pool to Pass-a-Grille. Barbara has also served on the SPYC Board of Directors from 2016-2019.

Ms. Hickey has been a member of SPYC since sailing down to Florida from New England seven years ago. Veronica has met her best friends, second family, and even her fiancé all at the Club through Friday night sailing – or at the Tiki. She has enjoyed being involved in the Entertainment Committee, planning fun events; the Power Boat Committee, planning Poker Runs and safety seminars; and volunteering with the Vintage Motor Classic. Veronica also has had the honor of serving on the Board of Directors for the past three years, and as Secretary of the Board and the Executive Committee this last year. When she is not at the Club, Veronica works as a Business Litigation Attorney in town.

DANIEL TOWN Intermediate Member Since 2016
Daniel Felipe Town is an attorney with a background in business, tax, and maritime law, and regularly dedicates his time to providing legal aid and volunteering in his community. Mr. Town joined SPYC in March 2016, while pursuing his Psychology degree at USF St. Petersburg; shortly thereafter, he participated in the 2017 revival of SPYC’s historic St. Petersburg to Habana race aboard his 50’ Hunter, “Paros.” Daniel is an avid sailor and has a background in the marine industry, jointly owning a local sailing school and boat club, as well as being an active part of the global sailing community through his other business ventures. Daniel has sailed the southern coast of Ireland and much of the U.S. East Coast, as well as navigated around his home state of Florida. In his spare time, Daniel enjoys sailing with his family and two Maltese puppies, Tinker and Sparkie. Most recently, Daniel also sat on SPYC’s Finance and Membership committees.

Another “Twilight Series” wrapped up with a combined celebration of season winners and the St. Petersburg Sailing Association annual meeting.
The series began March 18th , the first Friday after “Daylight Savings Time”, and ended with 14 Friday night races on August 26th (that night had no wind). This season had our Club J70s, cruising boats, and a hand full of spinnaker boats, all with their own starts and courses – all before sunset. Although registration is not required to participate, sailors that wished to be scored needed to do so, in addition

• 3rd – Rebecca Hofmeister with 3 firsts Spinnaker 'A' Winners:

Cruising Class had several qualifying boats:
• 1st - Cayennita , C&C 24 , Antonio Sanpere (SPYC) with 7 firsts
• 2nd – Moonshine, Ericson 32-3 , Sharon Grasmehr (SPYC), a newcomer winner!
• 3rd – Last Tango, Hunter 33.5 , Daniel Dawson (SPYC)
The “Cutty Sark”, a Twilight perpetual trophy, will be engraved with the 1st place winners in all classes. The J70 class also has their own perpetual trophy. Congratulations, Sean Ross! This year's “keeper trophies” are flags detailing their win. This trend began last year. The winners are encouraged to “fly their colors.” We’re told it’s a fun sight from the Pier. So, if you can’t join the race, make a date for the Pier on a Friday night in the summer.

W owza! What an exciting time we’ve had these last 2 months with the Caribbean Summer Party and the No Filter Band in August, followed by the awesome Buoy Ball in September! Be sure to check out the dance lessons ad in the club events section and sign-up...lessons begin October 6th. The original intention for the lessons is to help you learn some new moves and prepare you for the Commodores Ball. As you know, these dance lessons can help you be a better dancer for years to come! With November and December being busy holiday months, be on the lookout for these future events:
• December 9, 2022 (Friday): White Elephant, Ugly Christmas Sweater: Wear your ugly or unusual Christmas sweater and come join us for a fun evening in the lounge. Specials and more!
• January 6, 2023 (Friday): Happy Hour "mix & mingle" introducing the new Flag Officers, Board of Directors, and their significant others; come out and network and know who’s who in your Club! (details TBA)

by: Donna Sue Marks, Outgoing Committee ChairTim and Susan Snyder are the incoming chairs for the Yachting Information Committee and Yachting Recognitions Awards, respectively. They are active sailors with a Beneteau OC-381 “Sea Life” that they keep at the club’s Pass-a-Grille Marina.
Tim has been an active offshore racer and boat owner for many years including 30 participations in Chicago Yacht Club’s Race to Mackinac with 9 wins and 15 podium finishes in class. More recently he has been the navigator on the SORC overall winner “Kenai” for the past two seasons. Susan was originally a power boater on Lake Michigan but has converted to sailing. She does boat deliveries with Tim, and also provides ground support and provisioning for the Kenai team.
When not sailing their own boat to the Keys and elsewhere, the couple performs yacht deliveries and owns a marine electronics business, SeaLife Digital. Ask them about their boat getting struck by lightning on their honeymoon cruise to the Dry Tortugas last year! Is that a sign of good luck for a marriage? After serving for six years as your Yachting Information Chairperson I feel very confident in the dynamic duo who will be volunteering and leading this committee for 2022-2023. Please extend a warm welcome to Tim and Susan.
W
hat is a Poker Run? A Poker Run is not a race. It's a Club tradition and an assembly of some of the most social and active boaters in the SPYC.
On Poker Run day, boaters meet at the Club docks and show off their well-curated boat themes. Upon arriving at the Club they will check-in and receive a nautical map that will chart their path of adventure for the day. The map includes 5-8 different stops in which the boaters will travel to and collect a poker chip at each stop. The stops are a combination of gracious member's waterfront homes and local waterside restaurants. All boats are tasked with visiting all the stops in the time allotted. Upon returning to the Club, each participant will turn in their tokens for poker cards and play a 5-Card Poker hand! Prizes are awarded for the Best Hand, Best Boat Theme, and Best Dock Stop. It is always fun to see what everyone comes up with!

- 2 & 1/2 cups Applesauce
-1 & 1/2 tsp. Baking Soda
-1/2 tsp. Baking Powder
-1/2 tsp. Salt -2 tsp. Apple Pie Spice -1 cup Sugar -1 cup Brown Sugar
-1 & 1/2 Cup Chunky Applesauce -1/2 cup Oil
-1/2 cup Milk -2 Eggs -2 tsp. Vanilla
-3/4 Cup Chopped Walnuts
Main Ingredients
-3lb portion of Pork Belly
-8 to 12 Scallops, preferably U-12 or bigger
-Jerk Spice
-Honey Lime White Wine Reduction
Honey Lime Reduction Ingredients
-Juice of two Limes
-4 oz Honey
-6 oz White Wine of choice
-2 Tblsp Butter
-One Small Shallot Minced
- Two Cloves Garlic Minced
Jerk Spice Ingredients
-Zest of two Limes
-4 oz Light Brown Sugar
- 1 Tbsp. Dry Thyme
-1 Tbsp. Garlic Powder
-1 Tbsp. Onion Powder
-1 tsp. Cayenne Pepper
-1 tsp. Dry Parsley
-1/2 tsp. Cinnamon
-1/2 tsp. Nutmeg
-1 tsp. Cumin
-1/2 tsp. Red Pepper Flakes
-1 tsp. Paprika
COOKING INSTRUCTIONS
1) Prepare Jerk Spice
-10" Cake Pan
FROSTING INGREDIENTS
-2 Sticks of Butter
-3 & 1/2 Cups Powdered Sugar
-1/3 Cup Maple Syrup
-1 tsp. Vanilla
-1/4 tsp. Salt
-1/3 Cup Heavy Cream
BAKING INSTRUCTIONS
-Preheat your oven to 350 degrees.
-Combine applesauce, baking soda, baking powder, salt, apple pie spice, sugar & brown sugar in mixing bowl.
-In separate mixing bowl, mix the chunky applesauce, oil, milk, eggs & vanilla.
Add these ingredients to the dry ingredients and whisk until throughly combined.
-Mix in the chopped walnuts; lightly flour your 10" cake pan and pour batter into pan. Bake for 35-40 minutes.
FROSTING DIRECTIONS
-Brown the butter by melting it over medium heat in a small saucepan for 3-5 minutes until golden brown. Let melted butter cool at room temperature.
-Using an electric mixer, mix the butter until creamy & smooth - Add powdered sugar, maple syrup, vanilla, salt & heavy cream. Mix for another 2 minutes until thick and creamy. Spread over top of cake and serve.
- Combine all measured ingredients in bowl and combine, then set aside
2) Prepare Roasted Pork Belly 5 hours before service for proper cooling time
- Step one is to preheat oven to 250 degrees.
- Generously rub pork belly with jerk spice and massage spice into belly.
- Place pork belly onto a tin foiled sheet tray and place in oven on middle rack.
- Roast for 3 hours or untill tender enough for a tooth pick to easily glide in and out of product.
- Once finished place product on a cooling rack and chill in fridge for at least 2 hours, or until product is able to properly be cut into portions without shredding.
- Once cooled cut pork belly into 1/2 inch strips, cutting with the grain.
3) Prepare Honey Lime Reduction
- Bring a sautee pan to medium heat.
- Once hot add butter, shallots and garlic.
- Stir frequently and cook untill shallot is translucent and garlic is white.
- Add wine, bring to a simmer and reduce by 1/2.
- Add honey, turn heat to medium high and bring to a boil.
- Once boiling, pull from heat, add lime juice and cool to room temperature.
Plating
- Heat two sautee pans on medium high heat with a drizzle of oil.
- Sear scallops with salt and pepper to taste, on high heat until golden brown.
- While scallops sear, also sear pork belly portions in second sautee pan.
- Once finished place pork belly in center of plate, place scallops on top of belly and drizzle with your honey lime reduction.

by Bob Frazee, PresidentO n September 9th four riders, including club members Robert Hopkins and Bob Frazee departed St. Petersburg on an overcast morning. We started our 675-mile journey to Waynesville, NC, where we met up with Al Canino, another club member who came down from northern NJ. In Waynesboro we were greeted by 3 fellow riders - Bob Ebaugh, Bob Kline, and Bill Tinsley who, along with their wives, were gracious enough to put us up in their homes in the Smokey Mountains.
Our journey north was mostly along routes US41, US441N and US23E and covered 675 miles in 2 days. After a brief shower, about 1 hour after departing St. Petersburg, the weather started to cooperate, and we were dry the rest of the trip. The traffic was generally light, and the scenery was awesome, especially once we got into northern Georgia. Our ride on Sunday, September 11th was rained out, so we spent the day at a motorcycle rally called Thunder in The Smokeys. The attendance at the rally was hampered by the wet weather, but there were a few dozen vendors displaying motorcycles, accessories and clothing, as well as live music, food and drink. We also visited a motorcycle museum called Wheels Through Time, which has on display over 300 American made from 1903 to present, with one of the largest vintage motorcycle collections in existence. 99% of the machines run and most are fully restored.
On Monday, September 12th we managed our 1st ride underway into the mountains with spectacular views, challenging roads, lots of sharp curves and switch backs, plus steep climbs, and descents. The weather started out with a light drizzle, turned to a moderate rain mid-morning and stopped by noon. The roads were wet all day, so we had to ride with extra care. Our ride took us to High Point, NC where we had lunch and then on to Cashiers, NC and back to Waynesville, via Lake Toxaway, NC. Our adventure will continue with 3 more days of mountain riding, then our return trip to Florida via a different route. Check November’s Smooth Sailing for the second part of the trip.
CAR CLUB
by Andy EvansSummer has always been a quiet time for car enthusiasts. Maybe it’s the temperature or the daily thunderstorms, but those of us with older cars without AC tend to keep our pride and joy locked up - often a good time for repairs and upgrades.
The main news right now is that we begin the planning for next years Car Show, and as mentioned before we have tweaked the show ad titled it as the "St. Petersburg Motor Classic". We experimented with last year’s format to include modern classics. However, the show will still heavily focus on traditional classic cars up until the late 70’s, including the now very popular Resto-Mods, select modern classics, and continuation cars.
The show (see our flyer in the event section of this issue) will be held, as usual, on the South Straub Field adjacent to the Club on Sunday, February 5th, 2023. We need volunteers interested in being a part of the Organizing Committee to attend our next meeting this month (October). The show needs varying skills to help produce, what should be, one of the most successful and largest shows yet. I can assure you it’s a lot of fun and rewarding work. RV LAND CRUISERS
by Angela Kowalik, Wagon MasterOur Epic Summer of 2022 series continues with this second installment of continuing stories. Rick & Sarah Moseley and Ken & Corrine St. Jean, who started their epic summer trip together in July headed toward the New England area, wrapped up their trip in August going on their separate itineraries before the journey home. They enjoyed bike rides, and several trips to museums and historic homes. While in upstate New York, the St. Jean’s visited amazing Niagara Falls, taking the awesome Maid of the Mist boat ride to view Bridal Veil Falls and go to the base of the Canadian Horseshoe Falls. Later they spent time with friends and family, as did the Moseley’s, before heading home.
From June to mid-July, Angela & Brian Kowalik continued their epic multi-month summer trip heading west to the Oregon coast. A stop at Crater Lake (OR) was just incredible with its deep blue water and clarity; It’s the deepest lake in the US, created not from a meteor but rather from a collapsed volcano. Touching the west coast in California, a quick trip to the Redwoods national forest was in order before heading up the Oregon coastline which was so refreshing with their isolated beaches and fabulous views. Then, a stop at Mt. Rainier in Washington, before rendezvousing with an RV caravan group in Idaho mid-July to start a 60-day trip to Alaska. But to get to Alaska, you must first go through Canada, so 2 more weeks were spent traveling to Banff/Jasper AB with the beautiful Canadian Rockies, and a trip to the Columbia Icefields, then to Dawson Creek BC to Mile 0 of the Al-Can Highway. A stop at the Sign Post Forest in Watson Lake YT then on to Dawson City to have the RV travel across the Yukon river on a small ferry to the Top of the World Highway and on to Alaska. These were just a few memorable milestones on their journey to Alaska. … more on that to come.

The Salty Sisters started the new year off with our Welcome Back Party Hippie Fest!! We had a great turnout with everyone digging their 70’s wardrobe out of mothballs and showing up in tie-dyed shirts & dresses, bell bottoms, peace jewelry, and colored glasses.
Our Social Committee, lead by Kathy Mansir and Gail Falkingham did a spectacular job! Entertainment was provided by Farley Compton and he had everyone out on the dance floor grooving and moving to music from the 70’s. The ballroom was beautifully decorated with hand painted wine bottle vases, poster, streamers, and even a bed with discarded bras!!
The SPYC Staff took part by providing judging for the costume contests. Winners of the Best All-Around Costume was Valerie Massingill, the Most Original was Beth Pennington, and the Biggest Surprise was Connie Beckman (who also celebrated her birthday that day). It was great to see some Salties that we haven’t seen for a while including DC Stevenson and Past Captain Jackie Brown.
The two weeks prior to our welcome back party, Co-Captain Dee Gill organized another successful powerboat class with instructor Zac Oppenheim. There were five boats with fifteen participants out on the water learning how to dock and control the boats in tight situations. The highlight of the two weeks was the “go fast” slalom course.

by Kevin Cross, Fleet CaptainThe Tampa Yacht and Country Club was an ideal destination for our final cruise of the summer. Led by Port Directors Frank & Jackie Robinson, cruisers enjoyed the pool, delicious food and friendly atmosphere at the club.
The weekend began Friday evening with Docktails at the pool-side Telltale Bar followed by a wonderful dinner in the club. Saturday morning, Jackie led a group on a 7-mile walk along Bayshore Blvd while Frank and others were happy to stay behind to “look after pets”. The late morning/afternoon was spent visiting by the pool, enjoying lunch and making LOTS of new TYCC friends!
Cruisers gathered again Saturday evening at the Telltale Bar and then split into two groups for dinner at Caffe Paradiso and Mise en Place. Both restaurants were outstanding and everyone managed to waddle back to the club and board their appropriate vessels. Sunday dawned clear and welcoming, enabling all to shove off and navigate home at their leisure; after a delicious breakfast, of course!
Our September dinner meeting included an excellent meal, an overview of our tentative 2023 cruising calendar as well as an interesting and informative presentation from Michelle Yepez of Tampa Bay Watch. Michelle provided an overview of the impactful work Tampa Bay Watch undertakes to keep our waters clean and educate students, young and old, on the importance of protecting and restoring the Tampa Bay estuary. The work this non-profit has done since 1993, with the assistance of over 250,000 volunteers, is truly amazing!
Our exciting 2023 tentative calendar includes several new ports, a winter cruise to Naples and a late-April Commodore’s Cruise with several interesting options and extensions to either the Keys or across the Okeechobee Waterway. Given the number of options, cruisers have been asked to provide feedback and indications of interest so we can refine plans.

From giving voice to the frontiersmen in the scrub, making people aware of the importance of the Everglades and saving the state from getting cleaved in two by a giant canal that would have forever altered the wildlife, water, and landscape.

There are many reasons a particular shotgun could be your favorite. It could be the one you shoot best, or the one that’s easiest on your shoulder, or even the shotgun your spouse gave you on your 25th wedding anniversary. We should all be so lucky to have a spouse like that! You could also have favorites in several categories. There could be a favorite for sporting clays, one for quail and pheasant, one for ducks, and another for geese. It could be based on a particular type; an over/under, side by side, semi-automatic or even a pump. For many of us it’s our dad’s or grand-dad’s shotgun. One thing is certain, every shotgun enthusiast loves a beautifully made gun.

The Year in Review:
October 6: Bill Haueisen, Argentina to New Zealand via Antarctica – an adventure of a lifetime. In addition to the usual penguins and icebergs around Antarctica, a New Zealand naturalist led a tour of 2 explorer’s huts (Captain Robert Falcon Scott and Sir Ernest Shackleton) untouched since the explorers left them more than a century earlier.
A great shotgun has inherent beauty in every one of the following; the wood, the checkering on the wood, the finish on the wood, the perfect fit of the wood to the receiver, the detailed engraving on the receiver, a good mechanical design, precision machining of the parts and a flawless operation with perfect balance. The Holland and Holland Royal Deluxe 20 gauge (pictured above) is an outstanding example. If you have one of these in your house, don’t ever sell it for what your spouse said they paid for it. If you need to sell, find an enthusiast that appreciates a fine shotgun. It will become your favorite shotgun too. November 3: Peter Plumb, Sailing British Columbia and Alaska – a three-month cruise full of spectacular scenery, wildlife and adventure. Peter and Pam Plumb chartered a 45’ steel sloop to cruise British Columbia and Alaska ending in Juneau then returning to Vancouver.
