O

n Saturday 5th October, Brisbane will host a truly magnificent orchestral film event, The Lord of The Rings: The Two Towers in concert with the Queensland Symphony Orchestra under the stars at Brisbane’s Riverstage. It will be amazing … imagine Peter Jackson’s epic film on the big screen with Academy Award winner Howard Shore’s score performed live by the Queensland Symphony Orchestra under the baton of conductor Justin Freer, with incredible soloist Kaitlyn Lusk (who has been the featured vocal soloist in this role with over 25 orchestras around the world) and the Brisbane Birralee Voices directed by Julie Christiansen, in the natural open amphitheatre under the stars on an October evening at the Brisbane Riverstage.

Following sold-out performances for the first instalment of this incredible orchestral-film experience, The Fellowship of the Ring in 2012, the Queensland Symphony Orchestra, like Peter Jackson, was compelled to continue the journey – with The Lord of the Rings: The Two Towers. According to Doug Adams, the Chicago-based musician and writer and author of the book The Music of the Lord of the Rings, Shore’s work is extraordinary. “The music of The Lord of the Rings is counted among film music’s most complex and comprehensive works. This unique performance sets the score to the film, but allows the music to bear the narrative weight, creating a wholly new and dramatic live concert experience.”

Jazz Festival hits high notes Who can forget Ricky Martin and his Latino revolution on The Voice and asking Emma Pask to perform on his new Brazilian music project. The stunning opportunity, which will take the experienced sassy talents to the world, followed her performance of a Brazilian Portuguese anthem, Mas Que Nada for her energetic showdown. Emma who was ‘discovered’ by James Morrison and recently supported George Benson will return to Noosa in November to marry her beloved Rodriguez, who hails from Uruguay.

Friday the 13th was far from unlucky! Sheraton Noosa Resort & Spa was the place to be for fabulous food, French bubbles and outstanding entertainment, as they celebrated the Resort's transformation in true Noosa style! Guests entered down a candle-lit pathway to the pool area, where dining stations included sashimi, freshly shucked oysters, decadent desserts, and celebrity chef Peter Kuruvita preparing fresh Creole prawn ‘boats’. Entertainment by Sydney's Gregg Arthur Band and X Factor 2012 winner, Samantha Jade thrilled the crowd and had everyone dancing the night away.

Fun, Food and Fashion... The Village Green at Peregian Beach was filled with laughter and merriment to herald the Spring season, as wine glasses filled with Molly's Cradle wines clinked at the 3rd annual Peregian Square Food and Fashion Fiesta. The Lions Club of Peregian and Business Community of Peregian Beach organised the highly successful event which attracted over 350 guests of all ages. With the willing assistance of Lions Club members and over $8,000 in donated raffle prizes on offer, they were able to raise much needed funds for local charities and Peregian community projects. Entertainment was provided by local group The Elsoms, and eight local restaurants created special menus for guest's on the day.

They say it is a small world - and it really is. Who hasn't heard about the six degrees of separation that effect all people on earth. Point in fact, my mother plays golf every week at Pacific Golf Course in Brisbane, and when the new season of X Factor was ready to hit our screens, she phoned to say that Helen, one of her Korean golfing friends at the course had a daughter who was trying out for the show. Low and behold - Dami appeared on our television screen... and the rest as they say is history. I think that just makes three degrees between me and fame. What a voice! Hope she wins.

Can You Help Superman to Fly? Superman may have been created for comic books to give children a hero to look up to; but did you know that Australia has its very own Superman? One with a mission to help cure paralysis. Perry Cross is a C2 quadriplegic and an inspiration to many others like him around the world, since his lifechanging accident on the rugby field at Ballymore in Brisbane back in 1994. Having achieved some incredible accomplishments throughout his life subsequent to his accident, Perry then set himself the goal to do whatever he could to assist in the race to find a cure for paralysis - not just for himself but for all sufferers now and in the future. With that goal in mind, he created the Perry Cross

Spinal Research Foundation in 2010 not long after the passing of the man with whom he had met, been inspired by, and subsequently corresponded with for several years - Christopher Reed, the ultimate movie Superman, who had acquired same injuries as Perry after a fall from a horse in 1995. Perry is now acknowledged on the world stage and has been asked to present and assist in the collaboration of researchers, service providers, advocates and others at the "Working to Walk Symposium" in Boston, U.S.A. at the end of September. Of course, it isn't cheap to arrange his trip, so now he needs our help . This sporting life...

Yvonne Sampson had a blessed childhood. She desperately wanted to be the girl who cantered along the sideline as Buck the Bronco mascot in Brisbane’s traditional post-try celebrations. Contentment however was spending mornings and afternoons grooming, perfecting tasks such as barrel racing and riding her horses through the lychee and avocado orchards around the family farm in Palmwoods.

A gift for storytelling paved the way for a degree in journalism at QUT with television proving to be her strong suit: “Dad ran into Wendell Sailor in Mooloolaba and proudly told him I wanted to do sports reporting. t 25, Yvonne enjoyed a belated gap year to ride and muck out with broodmares (youngsters) at a stud in Denmark owned by an Olympian. From there at a stud in England, she prepared yearlings for the biggest sales in Europe. “For non-horsey people, yearlings are like frisky, well-bred ninjas with limited ability to contain their excitement. My reflexes have never been the same since.” With news bulletins around the clock, Sky News was a steep learning curve. “The sports department worked incredibly hard, especially through large events like the Olympics or even a breaking sports scandal. I made life-long friends in Sydney with all its gorgeous haunts but the Coast will always be my home. I still have a lovely old horse, the last one my grandfather and I broke-in together. He lives a life of luxury on a property outside of Sydney.” Working for the Nine Network, the national broadcaster of rugby league, including being on the paddock for State of Origin crosses and hosting Friday Night Football was a job Yvonne aspired to. “I’m grateful for the opportunity to talk about something I’m so passionate about and obviously Origin gave me the green light to be as parochial as my heart desired. That’s a rare and cherished treat for journalists!” Yvonne says it’s a thrill to be part of the Origin coverage alongside legends such as Wally Lewis, Darren Lockyer and Andrew Johns: “The only fear I have though is being hit on the back of the head by a ball while down on the sideline, in which case I hope I become a YouTube sensation. Also it’s really hard to hear when the crowd is going berserk just metres away. “Post-match duties include

A favourite past time press conferences with the coaches and captains plus trying to get extra insights from the players in the dressing sheds. I don’t go into the locker room, I respect their privacy and don’t feel comfortable flouncing in with a camera when blokes are trying (some are slower than others), to get their pants on. “News is different. Segments are timed to the last second, so we try to shoehorn as much content in as possible, unlike working on the Today or Footy Shows which allow segments to breathe and issues to be fleshed out. It’s a more realistic dichotomy of a conversation so more appealing to the viewers.” Yvonne dispels any notion of glamour and like her sports reporting colleagues Erin Molin and Roz Kelly, is equally popular as the male presenters. “I'm doing my dream job at the moment, but I’d love to work on the coverage of an Olympic Games, doing feature stories and uncover some of those wonderful tales only a global event can throw your way. “I like living in Paddington with its café and shops, exercising on the trails around Mt Coot-tha, trekking up Mt Coolum then cooling off with a dip in Second Bay, camping at Double Island Point and of course maintaining my involvement in horses. Riding every day would be perfect, ditto buying a broodmare to breed a fast foal for the race track. Oh and did I mention having a family? You can have it all, right?”

This years 4th annual Golden Days Festival is set to go off like never before with some of Australia’s hottest bands onboard. When we think about Spring… we think about nature, creation, beauty, warmth and life. So, when we were looking for the perfect cover for our spectacular Spring issue, I decided to seek the assistance of other professionals eager to create an image that would portray all those elements…in the perfect way.

How did you choose the photographer, florist and models? I chose the photographer, Sandra Faye as she is highly professional and we are on the same page aesthetically and creatively. I work with Sandra as a hair and makeup artist regularly. Belinda uses natural textiles, carvings and bead work to create a diverse range of works that are intimately connected through her portrayal. An urgent phone call from the Caloundra Coast Guard had Helen and the twins on their toes literally, with water up to their armpits in the Pumicestone Passage, helping a pelican with a suspected broken wing. 24

aula and Bridgette Powers are in a flap. Their conservation institution called Twinnies Pelican and Seabird Rescue, the largest in Queensland, has recorded a dramatic increase in injured pelicans and is filled to capacity. Their vital efforts to protect the sea birds however are thwarted by a lack of funds. The Powers family, spearheaded by Paula and Bridgette has been on a rescue and rehabilitation mission since moving to Landsborough 14 years ago from the NSW towns of Bundanoon in the Southern Highlands and Shellharbour on the South Coast. “We saw a pelican being rescued, looked at each other and said ‘wow’,” petite Paula and Bridgette 39, the former qualified childcare workers enthuse in unison. “We were fascinated with their size. They’re so big, beaky and beautiful! Wildlife especially pelicans is our big passion, but we do not discriminate against any bird that comes into our care through a rescue, drop-off or transfer from another wildlife care group. We’re trained in wildlife care, attend regular workshops and our aim is to educate other wildlife groups and members of the public, how to rescue and triage seabirds before they’re transported to us. “The very first rescue on Bribie Island of a big male pelican we named Arnie, was quickly followed by pied cormorants, Jabirus

and white-faced herons, all caught on hooks or entangled in fishing lines.” Similarly pelicans, rescued from the south-east coastline from Gladstone and south to northern NSW. “We’re got so many pelicans in care at the moment with line and hook entanglement and internal tackle used by recreational fishermen,” says Paula who acknowledges their parents Helen and John, a Vietnam veteran, provide invaluable assistance from contributing to the operational costs and helping with rescue services, to picking up fresh fish and helping their brother John with building maintenance to ensure everything is in top notch condition. In addition there are six volunteers plus four disabled workers from Iluka Caloundra who help out on a weekly basis. “Our parents have supported us from day one, also sister Mishele Blizzard, (the oldest of the seven children) moved from Brisbane almost five years ago, after ‘falling in love’ with a pelican called Angie. She’s taken on the roles of secretary, grant’s officer, fundraising plus she’s the rehabilitation expert for all species of parrots.” Optimum care is administered to birds with severe trauma or on medication in the fully equipped intensive care unit and monitored 24/7, before transfer to the pre-release enclosures, where they build up muscle tone, become ‘waterproof’ once


again, and regain strong wind power prior to release back into their natural habitat. “Fortunately our facility is located about five minutes from the Australia Zoo Wildlife Hospital where all treatment for native birds is provided for free along with any medications,” explains Bridgette adding “but we need to pay for any dietary requirements, supplements and equipment required to administer medications such as IV Fluid Pumps, syringes and tubes. “We attend rescues 24/7, calls on the hotline are assessed, and if the bird needs immediate treatment we ask the caller to drop off the bird to our facility or if that’s not possible to the nearest vet where we’ll collect once it’s stabilised.” “We also conduct regular health checks at various spots from Noosa to Bribie Island which involves enticing the pelicans with fish then checking for injuries. If it cannot be treated onshore and released we capture it and bring it back with us for treatment.” Often the outcomes are not so simple. An urgent phone call from the Caloundra Coast Guard had Helen and the twins on their toes literally, with water up to their armpits in the Pumicestone Passage, helping a pelican with a suspected broken wing. “After an hour in the pouring rain we took him the Australia Zoo Wildlife Hospital,” the twins recall. “He had a torn tendon which was severed with a knife or a hook. Two vets wanted to euthanise him, but Dr Jon Hanger operated and after intense rehabilitation, he was released five months later. Seeing him fly into his natural habitat made us cry.” Mishele says it cost about $84,000 last year to run the facility “and that was on a shoestring budget”, with most of the money coming from the family’s own pockets. “We do get some donations here and there from a couple of people, but they’re not large. We had a fund-raising event which realised a small amount to purchase some fish, which we did, but that only lasted two weeks. And a $10,000 grant from the Sunshine Coast Council’s Community Partnership Program only paid for 12 weeks of fish so we rely heavily on community support and donations. “Currently we only using a quarter acre of the three acre property because we need to acquire it but for that to happen we require funds. (See details below.) We truly need to expand so we can cope with the increase in birds requiring care. At the moment we are living on borrowed time. We worry about it every day and somehow we just keep soldering on and go

‘the birds are important’, that’s all that matters. We’re always full to capacity, in excess of 121 birds, up to 300 at any one time. “If we close our doors, seriously there’s no one who can look after them, so they’re Bondi Vet’s Dr Chris Brown with the twins going to be celebrating the release of Logan euthanized, which is pretty sad.” Hopefully the community will get behind the Powers family especially Paula and Bridgette who have little time to themselves but when they do, find solace by the ocean, observing the bird life, and watching the pelicans fish and glide in the thermals. That’s devotion indeed.

espite lacking opposable thumbs, Jester Gull, a six-month-old Weimaraner puppy who lives on idyllic Hamilton Island in The Whitsundays, jumped at the chance to put a leash on Queensland’s Instagram account and take it for a walk. “I’m doggone excited to be a part of this project, they didn’t need to hound me twice,” Jester woofed. A self-described social media junkie, Jester is no stranger to selfies and hashtags. When he’s not busy chasing his tail or chewing expensive shoes, he can be found posting to his Facebook, Instagram and Twitter accounts, which have a combined following of almost 300 loyal fans. “I was born to be Queensland’s Instagram watchdog – I’m really cute and photogenic, I live on one of the most stunning islands in the world and I’ve got my paw on the pulse of social media,” Jester woofed. He's acquired quite a few celebrity friends in his short life, including motor sport legend Craig Lowndes, Olympic swimming medalist Michael Klim, and most recently, Channel 7 Sunrise weather presenter Edwina Bartholomew. Australian Herbalist of the Year Dominique Finney elucidates to Helen Flanagan about the elixir of life.

“For 20 years I’ve accumulated patients and visitors who send their friends. It’s just like a beautiful family. That’s why all my clinics are free.” 54

hen Dominique Finney in not in her dispensary making herbal skin balms, perfumes and creams, conducting free clinics in naturopathy and herbalism, teaching yoga, organising events, running a project in India, or writing books, she’s on a quest to satisfy an insatiable thirst for knowledge. Dominique attributes her early interest in fresh food to growing up in Sydney. Her mother had an organic vegetable garden and with a Swiss grandmother and French father, the family had a penchant for dishes such as French onion soup. An interest in natural medicines was sparked in her teens when she was drawn to health food shops in Paddington and Oxford Street. That was until the first body shop opened in the city. “I’d hang around the counters stacked with perfumes and natural body products,” recalls Dominique who even today finds health food shops such as the co-op in Maleny irresistible. Dominique met her husband Kevin in Noosa, moved to his New Zealand homeland and in 1997 they fulfilled a dream of owning a farm. On 2.5 certified organic acres in the Blackall

Ranges near Mapleton, they grow avocados commercially plus coffee and native fruits. “The farm, which is on top of the mountain in a beautiful natural environment, is run by Kevin. We are carbon neutral, operate on solar power for hot water, have eco LED lighting and use minimal equipment. In the herbal dispensary I make high quality therapeutic and organic herbal medicines using ingredients sourced directly from growers. In addition we manufacture beautiful herbal skin balms, perfumes and creams. Everything is sold through our client base and sent around Australia and overseas. “Our oldest son used to help until he finished university, went off couch surfing and hitch hiking overseas with his camera. Our second son Alex (19) assists me as does our youngest son during school holidays. People can meet Alex or me weekly at our free naturopathic clinics which we’ve been running for over ten years at the Eumundi Markets or see us at festivals such as the Woodford Folk Festival and the All Well and Good Day at the Eumundi Markets, where I’m involved on an organisational basis. I also practice and teach Kundalini yoga “I work with health conscious people and particularly love the self-educated who know what they need and utilise me as a resource to bounce their ideas off, listen to my advice and incorporate it into their health plan. I also love making herbal blends for special circumstances. As we are on the fringe of alternative health care we do not endorse commercial products, so when we see people who’ve had trouble getting help elsewhere I usually refer them to friends who are pharmacists or own a health food shop. “For 20 years I’ve accumulated patients and visitors who send their friends. It’s just like a beautiful family. That’s why all my clinics are free. You can't charge friends and family just to tell them something. Also some things are too special to put a dollar value on.” Dominique has written two books which are available in shops and online at medicineroom.net and there’s a third in the pipeline. The latest, “Magic of Food as Medicine” is a compendium of knowledge with a load of family recipes based on her French background and the use of herbs, fruits and vegetables. “No kitchen is complete without it. I do like the flavours of fresh herbs and ingredients blended with traditional recipes. At home I cook with fresh local food and avoid anything processed.” A project close to Dominique’s heart is the Pahai Alloi Trust in India. The supply and sale of lip balms affords a nurse, homeopath, midwife and all homeopathic medicine for six villages across Western Bengal. Australian Herbalist of the Year, awarded by the highly respected National Herbalists Association of Australia, is Dominique’s latest accolade. This has been added to her list of Masters Degree in Public Health Promotion, Graduate Diploma in Health Science, Bachelor of Health Science (Complementary Medicine), Advanced Diploma Naturopathy and Diploma in Journalism. Dominique confesses she’s a self-driven student, and her days are not as back-to-back busy as they sound. There’s always time for coffee, yoga, lunch, beach or sipping tea on the sunny back verandah. She insists it’s important to make time. “I don’t work to the point of being overwhelmed nor take on projects that will not bring joy. It’s about being more relaxed - exactly what we need for good health. “I like Bhakti yoga which is the singing yoga and so healthy, also “sat nam" the greeting used in Kundalini yoga means “I am truth”. It reminds me everything needs to be true at all times”.

Sydney’s Mosman which had one of the first-ever marble kitchens and featured in Belle magazine,” says Hayley whose mother is Bistro C’s Lorri Banks. “Years later I couldn’t wait to move out of our family home so I could decorate the house my way - 90’s blue, stripes and beachy-chic which mum hated. All the money I earned working in a surf shop was spent on new cushions, bed linen, artwork and lots of rustic finds from the Yandina market or a dealer in Eumundi who ‘rescued’ pieces from old farm houses. I believe having a beautiful home shouldn’t cost a fortune. It’s having the right colours and mixing old with new so you can express the seasons as well as your personality.” When Hayley opened Bella Rustique in 2008, there were mostly French provincial pieces with a splash of rustic farmhouse, also beach chic was one of her favourite looks. “I made sure there were great giftware objects too because I always found it hard to buy presents for friends and family at affordable prices. These days I stay away from run-of-themill stock found in say Freedom, preferring pieces I know all my loyal customers will love, be timeless and stay in their homes forever, such as the perfect coffee table book, cushion, standalone impeccable sideboard or a vase of flowers.” Travels provide lots of inspiration, also trade shows, international magazines and websites such as Pinterest. “I know some great websites which cover international trends in colour and homewares, however often ideas just come from visiting family and friend’s homes. “Sister Cassie can go into any thrift shop and come out with a find that absolutely makes a home while Chloe can assemble rooms to give them a whole new look and style. They are both very creative and artistic people.” Another reason to visit Bella Rustique is good organic coffee. “It evolved from me wanting a coffee and not being able to leave the shop plus growing up in hospitality I knew it would work. Apart from my dad (Ian), who visits regularly as he reckons it’s the only time he gets to see me, there are many customers I know by name who come in every morning for a coffee ‘fix’ and a magnificent muffin or treat made by a boutique caterer. They’re the best!” In-between ensuring Bella Rustique is stocked with eclectic homewares, one-off furniture pieces, baby gifts and so much more, Hayley offers an in-house design service specialising in styling different spaces, also with Ryder aged 4 and Maddison 2, she’s a busy mum. “But that’s the way I like it – always exciting and never a dull moment”.

A wander around Bella Rustique reveals Hayley Banks has a refreshing eye for design and a flair for stocking products to make a house feel like a home

ayley Banks’ attributes an interior design gene to her mother who used to pile the kids into the car for another adventure off to a junk shop to buy a rug or painting she had to have immediately. “We always lived in beautiful homes such as the one in

Every year trends come and go and many pass by without a whimper however, when it comes to fashion, Deborah Chilman knows what her savvy customers love.

I

n the 60s little Deborah Chilman had immense admiration for her mother who dressed to the nines for a cocktail party or dinner dance, wore red lipstick and nail polish as well as matching shoes and handbag to the races and looked so chic in her bright yellow bathers and flowery bathing cap. “A decade later my mother and an Italian friend began importing a fashion label from Italy,” recalls Deborah.“The fabric was stretch jersey with a luxurious feel and the print was what we’d refer to these days as ‘Pucci’. I loved the colours and the geometric print as did the upper echelon of Sydney’s boutique owners. In fact they were most impressed.” Hopes of working in the fashion department of Grace Bros on Thursday nights and Saturday mornings whilst at school were initially dashed when she was placed in the anything-but-glamorous hardware department. “I felt very sorry for the customers who needed help as I was utterly useless. I did however spend my small wage in the fashion department where the look-of-the-time was halter neck tops, cut-out dresses, flared jeans, jumpsuits, maxi skirts, crochet bikinis, kaftans with apple seed necklaces and wedged clogs of every colour, all worn with a skin-destroying suntan. “In those days we followed trends as seen on American television, Individual looks were out, vintage did not exist and fashion tragics such as myself read Seventeen magazine.” In the 80s Deborah moved to Noosa, worked in several upmarket Hastings Street boutiques before joining Hyatt Regency Coolum resort as the retail buyer and manager for nearly 12 years turning it into a highly profitable department.“I enjoyed being part of the hospitality industry and loved the interaction with hotel guests.” Deborah opened Minx & Max nearly six years ago primarily for fashion-loving

taking style to the max... locals who enjoyed the lifestyle and recognised quality. “Some customers have followed me since I began retailing on the Coast – that’s 24 years. That’s loyalty. “They know I stock fashion that works for them whilst they are either working, travelling, minding children, socialising or relaxing at home. Minx & Max concentrates on fabrics, fit and subtle sophistication yet we are also known for our trendier denims and kaftans which transcend all ages. “Each season brings with it a fresh colour palette and labels that are constant performers that not only allow an existing wardrobe to be refreshed but coordinate with new arrivals. “You can’t go wrong if you wear Verge. Ditto Germany’s Olsen label which is coordinated and quality driven. Colourful, fun and perfect for our summer, 0039 Italy label ticks all the boxes. Amsterdam’s Sandwich label is well priced, on-trend but practical. Rebecca Thompson is a must dress for summer with its bright coloured embroidery, also accessories don’t get any better than Bouvier’s beautiful hand crafted silver jewellery.” It seems everyone is excited about what’s in store for summer. There’s colour, colour and more colour, especially the European tones which are the perfect complement for our complexions. Gastronomic legends dish it out Glenn Bowman and Dayle Merlo have between them, notched up 36 years behind the burners in Noosa. Why do they love it so much?

he fundamentals of four years at Sydney’s Ryde Catering College, plus an Italian family who was adamant about fusing flavours with love also adhering to a good work ethic, remain stuck in Glenn Bowman’s psyche. “Thirty years later the commitment to plating the finest food, sourced from the best local produce is a trademark and one I instil in all members of my team,” says Glenn who claims he’s mentored 28 apprentices to a 100% graduation rate in Sydney and Noosa.“They’re all part of an intricate network I work with to ensure they harness their capabilities and exceed expectations. Many keep in touch with me and have gone on to become restaurateurs or have executive roles overseas,” says a proud Glenn, adding his biggest culinary influence was his grandmother, a great cook who “astounded me with her incredible ability to create a meal for 20 from almost nothing. She inspired me to be resourceful, selective, to plan ahead, to anticipate and to share the best there is on offer.” Glenn made a name for himself at The Edge in Sydney’s Darlinghurst and moved to Noosa in 2000, joining Gary Skelton who owned Season in Hastings Street before opening Alegria in Sunshine Beach. It was famous for modern Spanish fare, especially simple dishes such as Noosa Reds tomatoes with grilled sour dough, Scallop taramasalata wakame tartlet, flying fish roe, also garlic prawns, the latter two being added to the Rickys River Bar + Restaurant menu, when Glenn was appointed executive chef in 2010. And incidentally they’ll never be removed! These days, one-hatted Rickys’ menu has been streamlined with a focus on the Mediterranean. Standout tapas includes duck liver parfait with Pedro Ximenez gel, and candied cumquat; and crispy pork belly with pear puree and pickled fennel; also an entrée of crispy skin Ora King salmon with baba ghanoush, eggplant jam, grilled artichokes and pepitas “which because of

its very clean flavours is simply beautiful”.

Things you should know about Glenn: Can’t live without: Garlic and cheese - not necessarily together. Must-have ingredients: Garlic (yes, again) and seasoning Worst meal you’ve ever eaten: London vegan friend’s seaweed sausage. I stashed it in a pot plant when she was in the kitchen. Inedible. But I’m sure it was excellent fertiliser! Favourite culinary destination: Anywhere in Spain from jamon to shellfish especially at the Barcelona markets. Favourite culinary event: The cultural tradition of sausage making from the pig to the frypan with my adopted Italian family (in Sydney). It starts before sunrise in the dead of winter, our first break is eating pork fillet from the barbecue for breakfast, there’s the exhilaration of seeing 100kgs of sausages (such as salamis) hanging, and during the year there’s the joy of eating them. What’s so good about cooking in Noosa: Hello! Have you seen the view from my kitchen? The sun sets on the crystal waters of the Noosa River … I’m in the best place. For Dayle Merlo, being an apprentice often meant a 13 day fortnight of 16 hour days and he was set free from a long incarceration of conquering a mountain. “Elation came later when I was at Victoria’s Metropolitan Restaurant and Brasserie with its unique-for-the-time fine dining restaurant complete with bow tie and vested waiters all posh and proper, plus a much larger space of informal dining where clattering chairs on polished wood floors added to the relaxed vibe,” recalls Dayle

who worked under the watchful eye of Alistair Punshon and his partner Kate. “Crates of fresh tomatoes scored, blanched, seeded, peeled and diced every day. Air-dried beef hung in the cool room ready to bone. Fresh pasta all'uovo rolled, boiled, refreshed. Juggling service pressures and prepping. Trying not to let the croissant dough over-prove, pumping out duck neck sausage, whipping up a soufflé and keeping chicken livers pink in the middle. Absolute chaos. So addictive.” After flirting with agency work the naïve 23 year old was appointed sous chef at a new restaurant in Fitzroy owned by yuppie filmmakers. He lucked it as head chef when the appointed one didn’t show. “Everything was rolling along nicely until Rita Erlich and Francis Just from The Age Good Food Guide (1989) came for dinner and Orexis was named best new restaurant plus awarded a Chef’s Hat. I was back working 16 hour days.” In 1990, Dayle, his partner Jules, her son Will and the cat headed north, were waylaid in Mt Tamborine, added daughter Lily to the family and three years later completed the journey to Noosa. He worked with fellow Bendigo boy Aaron Dillon-Shallard at Zubani Bar followed by Aqua Bar, Picnics at Fairhill with Nev and Wendy Cutting and Lorri Banks’ Eduardo’s, which is now Seasons. “Lorri owned three eateries including Dilozo’s (Bistro C) and Palmers. Eventually I moved to Palmers where I was ‘sold’ several times ultimately to Jim and Greg who morphed the space into its current glorious berardos. In 2000 Lorrie lured me to Bistro C.” Dayle is justifiably proud of his apprentices. From Hastings Street (Gaston) to Melbourne, Hobart, Spain, Canada, Germany, Japan there are protégés running their own kitchens. “I revel in their stories from Adriana Gumby’s macaron-a-thons and the Governor of Gibraltar's birthday lunch to others working on mega yachts in the Mediterranean owned by super-rich Russian

mafia, neck-deep in champagne-filled Jacuzzis. “In the early days at Bistro C the town was packed during the holidays and would die back to almost unsustainable. Fortunately that's changed and it’s steady year round. Today people are educated about food and origins, are health conscious and their expectations keep us on our toes.” Dishes that reflect the ambience of the buzzy beachside bistro include sticky tamarind duck rillettes, betel leaf wrappers, cashews, hot mint, with chilli and green papaya salad, ginger syrup and crispy shallots; scallop and salmon ceviche, with lime and coconut water dressing, asparagus, spring citrus and cress salad; also the now famous calamari, with a chilli, lime and coriander dipper.

Things you should know about Dayle: Must-have ingredient: Sea salt, citrus, good olive oil. Favourite dish? Julie’s lamb-roast-with-all-the-trimmings. Foods you dislike: So-called convenience food which has no soul because it’s been replaced with sugars, fats and other nasties. Worst meal you’ve ever eaten: Tucking into a bowl of snails in Malaysia I was asked about the little “lens caps” and advised I should spit them out because they stick to the stomach lining causing a slow agonising death. Five years later I’m OK but the lingering threat still haunts me. What’s so good about cooking in Noosa: What's not to love in this casual resort town? Where else can a chef have quick swim before stepping into the ‘office’?

With its lively mix of boutiques, al fresco cafes, casual surf culture and village vibe, Sunshine Beach has something to offer everyone.

A

dd ‘vibrant café society’ to Sunshine Lollipops and Rainbows everything…the title of Lesley Gore’s classic song and you could be excused for thinking she’s referring to Sunshine Beach. Once known as Golden Beach, Sunshine Beach is a popular choice for visitors who choose to stay in apartments with slide-away doors to let in the salty summer breezes or spread out and luxuriate in multi-million dollar mansions with beach access. Waking up to the sounds of rolling surf is a treat; so is breakfast at the Surf Club but get up at sparrows if you want a table directly overlooking the sand so budding ironmen and nippers can watch the action. The wide, open coastline hosts a variety of banks for an endless, uncrowded surfing session and the section in front of the Surf Club is patrolled year round. The beach acts as a runway to nature walks and trails through the National Park, all the way to Noosa via breathtaking views, a dip at Little Cove and a surf break at the unspoilt Alexandria Bay. If coffee is something you can’t do without, experience a barista-made espresso – the organic coffee beans are roasted on site – and spend an idle hour under a broad umbrella with a magazine or property guide. A breakfast alternative is to find a spot on a sun-drenched wide deck or in the shade on the pavement which spills out from an al fresco café - perfect spots too for brunch or late lunch. Maybe also a late afternoon cocktail, beer or other refreshers as you watch the world go by from one of the bars. Book at one of the many restaurants or cafes where imaginative seasonal fare is served; order takeaway such as fish and chips, pizza and home-made pies; and call in to the bakery, deli or general store for fresh

Sunshine Beach... local produce and pantry supplies, snacks, ice creams, cakes and sweets; and how about a picnic pack to take to the park or the beach foreshore. The retail mix and specialised services on offer are cosmopolitan yet varied from savvy boutiques, surf shop, hairdresser, pamper specialists and homewares to architects, art galleries and property management companies that look after holiday accommodation. Whatever you’re after, you won’t be disappointed. The laidback cafe society of Sunshine Beach is always ready to please. And you never know who you’ll bump into! His training session consists of going up and down stairs, running on hard or soft sand, swimming and other exercises that are exhausting just to watch. “Exercise is about “working up a good sweat and pushing ourselves so we can eat more chocolate or eat more food or drink more wine - whatever the weakness may be,” says Rafter who uses face and body cream to help his dry skin. “But I’m not a metrosexual. I am a bogan who loves life.”

uke Mangan honed his skills under Herman Schneider, of Melbourne’s Two Faces' fame, persuaded Michel Roux of the 3-Michelin-starred Waterside Inn in London to give him a chance, opened his first Salt restaurant in 1999, and very quickly had Sydneysiders raving about dishes such as salt and pepper squid, sashimi of kingfish, crab omelette and liquorice parfait. These dishes and more may have changed a little over the years but are the epitome of Luke’s fresh, elegant style. Many feature on today’s menus at glass brasserie, Hilton Sydney; Salt grill, Hilton Surfers Paradise; Salt grill and Salt tapas & bar, Singapore; Salt and the adjoining World Wine Bar, Tokyo; Salt grill on three P&O cruise liners; also in his latest book Salt Grill (Murdoch Books, $59.99). Prawn fritters with chutney & kashubian from the Allen Kitchen, Klockau

I

couldn’t work out why these prawn cutlets were so delicious; there seemed to be nothing to them, just a simple batter, a bit of lemon, some onion rings and a bottle of mustard sauce. But the very enthusiastic blogger from Calcutta called Kaniska was keen to point out that this tiny little hole in the wall was one of the most popular foodie spots in the city. They may have put a secret ingredient in the batter, but I expect the success lies in using chickpea flour and frying the battered prawns in pure ghee. I consumed a few plates of them while having a thoroughly enjoyable conversation about the almost infinite possibilities

Batter mix For the batter, mix the flours and salt together, whisk in the egg and enough of the water to give a smooth batter the consistency of single cream. Heat the ghee in a heavybased saucepan or karahi over a medium heat. Once hot, dip 2 or 3 prawns in the batter and carefully lower into the ghee. Fry for 2–3 minutes, turning once, until crisp and golden and cooked through. Drain on kitchen paper. Repeat with the remaining prawns. Serve with lemon wedges to squeeze over and chutney and kachumber salad on the side.

From seafood odyssey to lost in spice Fifteen years ago the English Good Food Guide described chef Rick Stein as “doing for fish what Pavarotti did for Nessun Dorma.” Praise indeed. In the same year Rick was in Noosa, where he loved the laidback atmosphere and the “fantastic local ingredients” used to cook up a feast for his Seafood Odyssey television series and accompanying book, which had Noosa (and Rick) on the cover. One program out of eight was devoted to Noosa and it also starred favourite local Sally Jenyns who cooked a baby snapper on a bed of Casuarina leaves and lemon grass with a bush tomato compote. Presented as a whole fish on a banana leaf Rick pronounced it as “brilliant”.

oday the acclaimed television chef and author has 20 books to his credit, owns seven restaurants including Bannisters on Sydney’s South Coast, four shops, boutique accommodation, starred in numerous TV series and in-between travels, lives in Sydney with wife Sarah. "I enjoy cooking more than anything on earth, and travel and food go hand in hand," says Rick, who’s promised to return to Noosa soon. "It all started in 1990 with the Seafood Odyssey series when I travelled to France, the Mediterranean, South-East Asia, Spain, and so in, looking at how they prepared fish. “I really liked India and began my search for the perfect curry, although really there’s no such thing. A curry has become a generic term that describes any food from the Indian sub-continent. Whenever I hear the word curry, I'm filled with a longing for spicy hot food with the fragrance of cumin, cloves and cinnamon. I see deep red colours from lots of Kashmiri chillies, tinged with a suggestion of yellow from turmeric. I think of the tandoor oven, and slightly scorched naan shining with ghee and garlic. When Indians talk of their food, they talk about their life.” What makes a good curry? Sensual spicy aromas or thick, creamy sauces? Rich, dark dals or crispy fried street snacks? Rick journeys through India to find the answer, searching this colourful, chaotic nation in search of the truths behind our love affair with its food. In his latest book called simply India, he uncovers recipes for fragrant kormas, delicate spiced fish and slow-cooked biryanis, all the while gathering ideas and inspiration for his own take on that elusive dish – the perfect curry.

Golden girl encourages Aussies to get into "Grape Shape'…

ustralia’s golden girl, Libby Trickett, who slimmed down and made a spectacular career comeback at the 2012 London Games, is inspiring all Aussies who want to lose weight, to follow in her wake by sharing her secret to success - the tried and tested Seven Day Grape Shape Healthy Eating Plan. Grape Parfait Chicken & Serves: 6 Grape party Ingredients: sandwiches 2 cups mixed whole red and green grapes plus another 2-3 whole grapes each for garnish 100 grams of good quality muesli 11/2 cups of good quality Greek yoghurt Fresh mint sprigs for garnish 3 tablespoon of honey Method: 1. Using 6 x 250ml capacity glasses, place a generous amount of yoghurt in the bottom of each glass followed by 3⁄4 of the muesli shared, all the green grapes, another dollop of yoghurt, red grapes, remaining yoghurt and the remaining muesli 2. Garnish with a few mint leaves and 2 whole grapes 3. Drizzle with the honey and serve immediately Tip: You can have these ready in advance in clear plastic cups wrapped tightly with plastic wrap to take to picnics. Pack honey separately to serve.

Serves: 6-8 Ingredients: 1 cup green and red grapes, halved 3 cups BBQ chicken meat, chopped (roughly 1⁄2 a chicken) 2 tablespoon lemon juice 1/3 cup light sour cream 2 tablespoon roasted almonds, roughly chopped 1⁄4 cup fresh tarragon, roughly chopped Salt and cracked pepper to taste 14 plain white bread slices, crusts removed Method: 1. In a small bowl, lightly whisk sour cream, lemon juice, salt and pepper 2. In a large bowl, mix together the chicken, almonds, tarragon and 3⁄4 cup grape halves 3. Lightly fold the cream mixture into the chicken mixture and divide roughly 3 tablespoons of filling between 7 slices of bread. Top with remaining bread slices, cut into quarters and place on a platter 4. Scatter with remaining 1⁄4 cup grape halves to garnish Tip: These can be made a few hours in advance, cover with cling film and place in refrigerator on a platter.

t has neither tablecloths nor views, takes bookings online only, has quickly become one of the most sought-after places to eat in Australia but Sydney restaurant Momofuku Seiobo (pronounced “mohmoh-FOO-KOO SAY-oboe”) has beaten a very competitive field including perennial favourite Quay, to be named the number-one restaurant in Australia by Gourmet Traveller Australian Restaurant Guide. And in the peer-voted Chef of the Year award, Andrew McConnell, of Melbourne’s Cutler & Co and Cumulus Inc., took out top honours. The southern states claimed all the awards for three-stars, there was a smattering of Brisbane restaurants receiving two-stars while restaurants receiving one star on the Sunshine Coast were berardo’s, The Long Apron and Wasabi, the last two also featuring in the top 100 in Australia attaining 79 and 95 respectively. Joining the aforementioned three restaurants in the top 10 in regional Queensland, were Spirit House and Rickys, while recognised for their wine lists were berardo’s, Embassy XO, The Long Apron, River Cottage, Thomas Corner and Wasabi with one goblet each. Rickys and Sails’ extensive lists received two goblets The annual list of the nation’s Hot 50 restaurants from The Australian tends to be controversial however chief reviewer John Lethlean says he can “raise a robust defence for every entry and omission.” By “hot” he means “that combination of ideas, passion, energy and lack of compromise that makes some restaurants more special than others … a serious nod to attitude, adventure and most importantly enjoyment”. Quay in Sydney was pronounced Hottest Restaurant in Australia and Gerard’s Bistro in Brisbane, the Hottest in Queensland which had a record of a record number of entries (seven). There was a strong regional offering with two locally making the Hot list. A re-launch cocktail party held recently at the heritage-listed 'red' distillery located on the banks of the Albert River in Eagleby, near the Gold Coast, was an outstanding success; and proved to be the perfect way to re- establish this proud iconic Australian rum. Guests were welcomed with tantalising 'rum' cocktails, each one starring the different varieties of Beenleigh Rum. The stand-out Beenleigh Honey cocktail was the perfect introduction to this new product, which utilises Ligurian honey from Cliffords Farm on Kangaroo Island in the blend, the only pure strand of Ligurian honey remaining in Australia. The Beenleigh White - Nutty but Nice cocktail was a refreshing evening starter with the addition of VOK Hazelnut Liqueur, Bickford’s Ginger Beer and sparking apple, garnished with mint and fresh lime. The Beenleigh Honey - Bittersweet Symphony was beautifully indulgent and featured the new Honey Rum, with Bickford’s coconut and pomegranate juice topped with bitters and garnished with a sweet cherry. The Beenleigh Dark - Old Fashion starred the Dark 5 Year Old Rum and was complemented with a dash of VOK Chocolate, Barspoon syrup and orange bitters. After lashings of fine food, guests were taken on evening tours of the distillery barrel room and educated on the characters of Beenleigh Rum by Head Distiller, Wayne Stewart - who hosted intimate group tastings of the three rums and the new honey-infused rum, relishing in each rich and distinctive flavour profile.

The evening was full of merriment as guests devoured the sensational five-course degustation dishes complemented by superb South Australian wines, as celebrated wine critic and author, Nick Stock, played host to the stunning dinner, and winemakers Penny Jones from Petaluma Wines and Toby Barlow from St Hallett Wines, good-heartedly competed for votes, as they both presented their 'masked' wines with each course in an effort to win over the enamoured diners.

I don't think we ever arrived at a winner per set (as I think everyone was cheating). With each table casting their votes, and much winemaker lobbying being carried out, I'm not sure who was doing the counting - but I do know that our table didn't win! “The evening was an outstanding success,� said Peppers Beach Club & Spa General Manager Chris Northam, " and we'll definitely be doing this again!" We had a sensational time and definitely didn't want to leave this little piece of paradise.

n the bird world the big motivators are survival and procreation. If a bird knows it can get a feed and be safe from predators, it's more likely to visit. There is some crossover, but generally the diet of birds puts them into four broad categories: nectar feeding, insect feeding, fruit and seed feeding and carnivorous.

Nectar feeding birds have long, brush-tipped tongues for dipping into flowers. The flower provides the food source and the birds repay them by taking pollen from one flower to the next, thus facilitating cross pollination. Fruit and seed-eating birds include the fig parrot and the whipbird. Insecteating birds like similar plants to those of nectar feeders, while the carnivores include butcher birds, kookaburras, currawongs and owls. To get them into the garden you need wildlife and the best way to do that is to stop using pesticides, herbicides and fungicides. This encourages a natural biology in the garden and brings wildlife such as insects, small lizards, worms and frogs. When it comes to bird attracting plants Outside Noosa’s landscape specialist John Scomparin says Grevilleas rate amongst the best:“Rainbow lorikeets adore the nectar and seeds and they won't knock back the odd insect or two either especially from the ‘honey gem’ variety, similarly ‘scarlet sprite’ which is smallergrowing variety and flowers in the cooler months, giving birds a winter feed. Grevillea ‘firesprite’ is a favourite of the scarlet honeyeater. And don’t forget Banksias which attract wattle birds also seed-eaters such as cockatoos. Kangaroo paws attract honeyeaters, red wattle birds and eastern spinebills, and Bottlebrushes (Callistemons) attract a variety of birds including the insecteating fairy wren. Another winner are the berries on Syzygium ‘bush Christmas’ better known as Lilly Pilly.” Remember the denser and pricklier the foliage, the better protection it gives birds from predators as well as providing safe nesting sites. Water encourages visits for a drink or a dip but keep the source elevated so the birds feel safe. Flowering favourites for different spaces are the intensely fragrant Gardenia, climbing Jasmine, Port Wine Magnolia with its creamy, yellow edged flower and the Hippeastrum. “It’s one of the few bulbs that grow in south-east Queensland,” says John.“There are several species, they have an open, trumpetshaped flower and colours include all shades of pink to red. “Melaleucas and Leptospermum (tea-trees) are also flowering now. The latter has flowers that are white through to shades of pink. A favourite tree which flowers in October is the Jacaranda with its sea of blue, and we can look forward to November when wide arbours of vivid orange to bright red Poinciana flowers brighten up Noosa’s streets and gardens.” This time of the year is typically the driest in Queensland so watering is vital. It’s also a great time to fertilise and mulch in advance of the hot weather ahead. An exciting new addition to Buderim’s main street was opened this July.

ary Myers’ Gallery has been welcomed by locals and visitors with an overwhelming response. Over 200 guests attended the opening night of this well-known Sunshine Coast artist’s latest venture. Gary has invited local artist Shevaun Carey, to exhibit her new works alongside his own. He was also fortunate to secure works by internationally acclaimed, Sydney based artist, Max Mannix. Both Max and Gary are members of Kevin Hill’s Top Ten Australian Artists. DRONGO The immortal loser By: Bruce Walkley Published by: Slattery Media RRP $19.95 The horse whose name became part of Australia's language Everybody knows a drongo - Australian slang for a no-hoper, a hapless soul - who try as he might, just can't do anything right. But most don't know how the term entered our language. It came from Drongo, a well-performed racehorse of the 1920s, who traced back to a blue-blood thoroughbred bought from Australia by Lillie Langtry, known as 'The Jersey Lily' one of King Edward VII's mistresses when he held the title of Prince of Wales. Despite his stout breeding, Drongo couldn't win a race in 37 attempts. Contrary to popular opinion however, he wasn't hopeless - he ran only in city races and often on the best racecourses - against the best horses of his era. he finished 2nd in the 1923 Victoria Derby and the 1924 VRC St Leger, and 3rd in the 1924 AJC St Leger - races for the best staying 3 year-olds. Drongo as a racehorse wasn't 'half bad', although it didn't take long for punters to claim a 'mug' was a 'drongo'. Drongo is the story of a uniquely unfortunate horse whose legacy was not on the track but in his contribution to the colourful Australian language.

What are some of the hurdles and what’s this Queensland eco-tourism initiative all about? The greatest hurdles are local, state and federal government red tape. There are too many silly regulations imposed by bureaucrats rather than people who really know how to foster an environment, which gives visitors the best experiences and allows operators who excel at what they do. Australia is an attractive destination but also very expensive. Tourism operators already have a hard enough time trying to compete in a global market without governments making our lives a whole lot more difficult. My engagement with the Queensland government is selfgenerated however it is also in the interest of the wider community gaining access to outdoor nature-based recreation. I was appalled at the nonsense and waste of taxpayer’s money by the previous Labor state government. I witnessed first-hand too many secret deals, the influence of lobbyists for minority groups with fixed agendas and some shocking policy making by the Beattie and Bligh governments which had nothing to do with protecting the environment. Queenslanders and visitors deserve something better with stake holders working together to create sound tourism and recreational strategies based on science and put an end to minority groups wanting to hijack the agenda. There is way too much hysteria instead of open, educated debate. I support policies of “inclusion” rather than “exclusion”, finding ways to allow and promote outdoor recreation so the environment is protected. Australia is being bogged down with regulation mania. How are local groups involved in making Queensland the leader in outdoor recreation? I’m working on the concept for a Queensland Trail Network (QTN) that is environmentally responsible and links trail routes and access for walkers, mountain bikers and horse riders. Examples of local success include working with Queensland Parks and Wildlife Service and the local community in the Eumundi Conservation Park where a series of trails has been sign-posted. On a broader scale, a Queensland Trail Network could link up trail corridors such as the Noosa Trail Network with other sections across the state also with major extensive trails such as the Bicentennial National Trail which extends down the eastern seaboard. What a wonderful asset for Queensland tourism and recreation. What’s to love about Noosa and environs? Visitors love the village-like feel on tours through Noosa, Noosa North Shore, Pomona, Cooran, Kin Kin then out to Amamoor, Widgee and Kilkivan, especially the diversity of experiences within a short distance. There’s a lot of mis-information spread by so-called environmentalists about horse riding being incompatible with conservation areas. The latest scientific research shows horse riding on formalised tracks and trails has an insignificant impact. Most riders really care about the bush and the last thing they wish to see is damage to the very areas they cherish.
