For the kids, there were hundreds of brand brandnew, age appropriate toys and gifts as well, all secreted on the upper level (where parents were taken alone), so that Santa could surprise their children with a new present on Christmas morning.

Covid is obviously still with us, but hopefully under control in Australia, now that the vaccinations have rolled out around the country. It’s been a long journey for us all, and obviously it has taken its toll on a lot of us. Everyone wants to forget that 2020 was ever on our calendars - but it was; and we’ve come through it stronger, with a new sensitivity to our fellow man, and a new perspective on how we work. I think that quite a large number of workers have realised that there can be a balance between working from home - and family commitments - and life itself. Working from home may have been a decision that a lot of us would never have made for ourselves - it was thrust upon us by a pandemic giving us cause to ‘think outside the box’ - but we took up the challenge and made it work for us. A new era is now upon us - so lets embrace it and move towards 2022 with a new-found strength and drive. This season we have decided to go with an indulgent food issue. It’s time for comfort food again, as Autumn leads the way into the cooler Winter month; and I always love the cooler months, where we have the opportunity to indulge all our guilty pleasures, and then add another ‘stylish’ layer to our ensemble to disguise their effects.

As you know, in Noosa we never do anything in ‘halves’!!

I

nternational Women’s Day gave opportunity for celebrations, as well considerations. In amongst the ‘bubbly’, that I sent virtually from Parliament, was the call out for those further conversations that we need to have. The themes “Choose to Challenge” and ‘Dare to Challenge” gave a perfect segue into what can be an uncomfortable realm. Looking at growing issues in our world and challenging ourselves to identify our individual contributions to them, and what we will do about it. Over so many generations, we have had incredible women and men, who challenged societal ‘norms’ through challenging themselves. It is not easy to speak out or go against the ‘flow’ of trends, expectations and standards set, including wearing trousers instead of a frock? However, it is because those that have gone before us did, that we now have a world that has new norms that benefit all, including myself as I am a trouser gal! Their efforts gave opportunity to tap into both male and female potential, capacities, and networks, with a focus on humanity versus gender. It is now 100 years since the first woman was elected to an Australian Parliament, as well competed in the Olympic games. You may say that is such a long time. With our First Nations People spanning 65,000 years, this last century has been just a tiny portion of a journey, yet it has been hugely instrumental, or ‘game changing’. For Irene Longman, the first QLD female MP, her frustration would have been extensive, including not being allowed to eat with the lads in the dining room. Yet she dared to challenge herself, and the system, effecting far reaching change she could never have foreseen. When I sit in the reading room where she could not, and smell the cigars embedded with the conversations in the furnishings, I think of the decisions

made. Ones that came from an era that was ‘patriarchal’ in all ways, including the very systems that we need to do the ‘tick box’ against. Yes, we still use 200year-old legislative framework in which to undertake reform. How can that succeed if the very framework we are reforming against, needs reforming itself? So, to that uncomfortable conversation. The ‘challenge’. It is one we never like, though we must have if we are to tackle this aged ‘frock’ that we have worn now until threadbare. Acknowledging our own perceptions, beliefs, and behaviours, and the role they play in what occurs in our community and society, is one to ponder alone, or with friends. As mothers, daughters, partners, and friends, we have enormous influence. At home, in the workplace, in the park or in Parliament, the future is in our ability to question preconceived notions and expectations and make change. Whether it is about domestic waste, violence, or affordable living, we have the solutions within us and our actions by what we support, and what we reject. And what we question. Including, when we are offered a new, better ‘frock’ to replace a worn one, question whether it is the same designer using better material, or vice versa? We are so blessed in Noosa, with phenomenal women and men who do exactly that. Challenge themselves, in order to challenge our systems. Happy pondering everyone! Whether a ‘Noosan’ or a much-loved visitor, get out and enjoy our stunning autumn sunsets (and sunrises!), donning your best frock or trousers!!

NS More than 30 years after lighting up the silver screen in Grease, Olivia Newton-John hasn't lost any of the brightness that made her a global sweetheart, as Noosa Style discovers.

Considering all she's been through since her ‘Sandra Dee’ days, Olivia Newton-John is a true inspiration to us all.

T

hrough an acting and music career- that ebbed and flowed between prolific and imperfect, she has ridden the waves, forever stayed true to her Aussie roots, and worked a way through life’s challenges, of which there have been many. Her latest success is undoubtedly the way she has once again, kept at arm’s length the spectre of cancer. Diagnosed with metastasis breast cancer in the early Nineties, the singer, songwriter, actress, philanthropist, and international superstar, has worked her way through considerable physical and mental doubt - and, as she says, is now in the best shape of her life.

“Activity for me helps reduce stress,” she begins, “and for me this has been a big part of finding normality. Playing sports, going for a walk, keeping moving. If I'm feeling stressed I'll put on my running shoes and go either to the gym, or go for a walk to appreciate the beauty in nature. It’s not radical, it’s simple – but it makes me feel good. “I don't think there is any secret to being happy - I think it's a decision. I think I have a naturally pretty positive outlook and tend to believe the best in people and things.” Referencing what has become an almost perpetual battle against cancer, she says: “The first time I beat cancer I went through a divorce shortly afterwards, and that’s about the only time I would say a divorce felt so easy,” she laughs. “The biggest battle of my life had already been won.”


After a car accident in 2013, a second cancer diagnosis materialised after doctors found some irregularities in her shoulder. And then, in 2017, a new malignant cancer on her back – “three times lucky, right,” she laughs. “I joke, but when you have already beaten something twice, the third time around you really don’t consider it in the same way. “Cancer is something I’ve learned to live with – it’s part of my life and I do the right thing to keep it at bay. No-one will stop me,” she thunders. Newton-John has been helped in no small part by her daughter, Chloe, who is 35. Spiritually, she has been a guiding force, though in a medicinal sense her Amazon Herb Company, which advocates the

use of marijuana in easing anxiety, aiding sleep and, ultimately, lessening the pain of the physical effects of cancer - means the actress has embarked on the ultimate mother/daughter project. Indeed, you might say, at 73, the remarried, singer, songwriter, actress and international superstar is arguably at peace - after a fullon and sometimes tumultuous career in the spotlight. “I like to stay current and relevant, but that’s to myself,” she offers. “I’m not going to do it for anyone else, and nor should I.” In career terms, although Newton-John’s impact in recent decades has been rather more understated than her time at the forefront of teen entertainment in the late Seventies, when she partnered John Travolta in making the iconic teen love movie Grease, the fact remains the Aussie has sold over 100 million albums. continues next page...

er success includes four Grammys, numerous Country Music, American Music and People's Choice Awards, an Emmy Award, two number one hits and over 15 top 10 singles.

She is still in touch with Travolta, despite the fact their careers have taken them in very different directions. He is a member of the Hollywood elite; she is someone just as much at home holidaying on the Sunshine Coast – she had a house on Noosa Heads beach in the Eighties – as she is hunting out her next big LA project. “Whatever I do, it’s about ensuring I don’t take myself too seriously,” she says. “I was born in the UK, and actually, a lot of my work ends up back over there on TV. I’ll rough it with light entertainment as much as I want to sell out concert halls – I’m not picky, I just want to contribute and feel a part of it.”

The fact she is and still feels a part of it - over three decades since the peak of her stardom, proves the enduring legacy Newton-John has over us. Perhaps it’s her sunshine smile, perhaps it’s her ability to laugh through even the toughest of life’s challenges, or perhaps it’s because her music has become the greatest advocate for someone, whose battles have extended well beyond getting her latest movie or album to the top of the rankings. “In a way, my songs have always been for anyone facing a time of challenge in their life. I've always told people to get physical, get spiritual, get happy - in your own time. Life is a gift. “I think you have to laugh at everything, particularly at yourself - and even in difficult situations. I know I've always found that laughter – and crying – is an emotional release. Some people laugh, some people cry, and some people do both at the same time.

“Whatever you do, it's a release for your brain and body and helps you feel good… so do it. “Personally, laughter is the one for me – it’s incredibly important. It's a wonderful release of endorphins. I'm usually able to laugh at most things… in fact, even when I was given the news I had breast cancer, I think I laughed. I guess it's a natural stress releaser for me - and a strange way to react to some things. It's not always appropriate, but it works.” A big part of the singer, entrepreneur, and activist staying at the top of her game is the fact she has looked after herself so impeccably. “It’s the little things,” says the entertainer, who has a spa retreat in New South Wales, called Gaia, that was nominated for a prestigious World Luxury Hotel Award. “If you do something little every day, ultimately it adds up to making something big, and I’d like to think that’s the way I’ve managed to retain a feeling of being young and alive. “I've always taken my makeup off at night - no matter how tired I am; I will always cleanse my face and then moisturise – I use a Vitamin C serum and some form of face cream and still do – perhaps it’s those things, perhaps I’m just lucky.”

OLIVIA: Music is healing. You might hear a song that sparks a memory

for me. Obviously Grease was a very important part of my life and career - Hopelessly Devoted To You was a wonderful song. You're the One That I Want and Honestly Love You are special to me as well. Q: What two words best describe Olivia Newton-John today? OLIVIA: Oh golly. Happy and grateful.

The inaugural launch of these highly limited boxes has set a world record. The final bid and private sale of the first Emerald Isle box to be released, was secured jointly on St Patrick’s Day by Houston-based Fabergé collectors. As part of the sale, all proceeds will go to the Correa Family Foundation, a charity supporting children affected by cancer. ast October, the disability charity launched the first instalment of their ‘Sustainable Community Workshops’ at their 5-acre facility, ‘Our Backyard’. These unique workshops focus on a variety of educational topics about the environment, agriculture and permaculture. Sunshine Butterflies have just introduced their second ‘Sustainable Community Workshop’ to the community, which is a Plant Tour at ‘Our Backyard’ with Horticulturist Damien Walsh. Damien has over 20 years of experience with horticulture, landscape and environment design, and is an expert in native plants. Damien runs Sunshine Butterflies social enterprise Sunshine Gardens and Landscaping. It had to be one of the luckiest breaks of our lives to find ourselves trapped at our home in Sunshine Beach when Covid struck.

W

e might have been back in the UK, facing a bitter winter and a huge surge in infections, or even worse at our French home, where President Macron was soon to rather mishandle the pandemic situation. We first discovered this magical place over twenty years ago when our daughter married an Australian and ensured our annual trips to this great country. After a few years of visiting Noosa we decided there could be nowhere better to spend some of our declining years, and continue our writing careers in the sunshine, so we bought an apartment here. It wasn’t long before we discovered that fellow playwright David Williamson and his delightful wife Kristin lived close by, so we made contact, and since then have enjoyed numerous indulgent dinners together at local restaurants, exchanging show business experiences. Although our careers have followed very different geographical paths – David of course being Australia’s best known playwright, and my own hunting ground being mainly Britain, Europe, and America – we soon found that the challenges of playwrighting, finding the right directors, producing and casting successful productions, are universal. We also agree that the backstage dramas involving all the various temperamental personalities concerned can rival anything that eventually arrives on stage. We have both been fortunate in discovering the playwright’s precarious career – involving as it does the huge benefits of being able to work anywhere and at any time one wishes, whilst also experiencing the intensity, the thrills and the spills of show business life, without becoming too entangled in the stressful business of live performing. My own career has involved almost every aspect of show biz. I was an actor for over twenty years, becoming quite well known in my native UK, I have written plays all my life, I have directed West End shows, I have managed mainstream theatres. One might well accuse me of being a Jack of all trades, and master of none. But in the course of such a varied track record I did work with or encounter many famous names from both sides of the Atlantic. I also suffered huge disappointments as well as successes, and I experienced many bizarre and often hilarious incidents.

So now, having reached my ninth decade, and for the moment run out of ideas for my next play/novel, I have resorted to the old man’s recourse of writing my memoir – more for my own amusement and the enlightenment of my descendants than for any hope of record-breaking sales. I was at first hesitant at embarking on such an exercise, my recall of facts being hazy at best. However, once I started, I discovered that my brain began to dredge up details of long ago experiences, names and productions, that I had scarcely remembered for many years. It was an illuminating process. Today’s younger generation of audiences will scarcely have heard of some of the great heroes of stage and screen that were household names in my day. Mention of those written about in the book such as John Gielgud, Paul Scofield, Laurence Olivier, and Vivien Leigh brings looks of vague puzzlement to the faces of many young people. And likewise talk of Hollywood icons like Charlton Heston, Lauren Bacall, Elizabeth Taylor or Judy Garland, raises smiles of recognition, but as quaint ghostly figures from a long-vanished era who are only recalled occasionally on TV screens, or in brief excerpts on Youtube. Modern youth’s celebrities are mostly feted as semirecognisable super heroes and heroines, rather than as mesmerising personalities and acting talents in their own right. Mention someone like Paul Newman or James Stewart – to my mind perhaps the most prolific creators of supreme performances in the history of Hollywood – and few will be able to name more than a couple of their titles. But there – that just shows my age. Meanwhile I am now struggling with a new novel, since Covid has brought the worldwide theatre business to a shuddering stop. Well, at least it keeps my last few grey cells active, and stops me pestering my dear, long-suffering wife, Sheila, who has now discovered the joy of writing herself. I have hopes that she will produce the best-selling novel that will keep us in our declining years.

‘Mumpreneur’ is a term used to describe mothers that run their own businesses. A side hustle to being a mum. You can even find the term in the Cambridge Dictionary.

ut do you know what isn’t in the Cambridge Dictionary? ‘Dadpreneur’. Female business-owners across Australia are calling for an end to the term, widely called “patronising” and “derogatory”.

“If you’re a business owner running a successful company, whether or not you are a female, or a wife, or a mum is irrelevant. We need to stop categorising women in business based on if they have kids,” says Amanda Lacey, founder of POPCOM, a communications agency based in Sydney. “Maybe the term had a purpose a decade ago, to shine a light on the ability of mums to both manage family and launch a business. But now it’s becoming a form of casual gender-discrimination. It actually makes me cringe.” Nikki Williams launched a sustainable designer handbag company of the same name in 2014. She also happens to be a mum. “Have you ever heard a man being asked: ‘Tom, how do you cope with being a dad and running a successful business’? Just because I’m a mother of three children and happen to have set up and run a company, it doesn’t necessarily make me different from fathers who do the same,” she says. “It suggests that business owners who are also mothers venture into business as a past-time, aside from their primary roles as carers for children. I didn’t start my current business because I’m a mum, I started it because I love business.” A survey of 500 UK businesswomen in 2018 found 65 per cent thought the term held negative connotations. Years later, the title is unchanged. “The term ‘Mumpreneur’ was apparently first coined in the late 1990s. That’s over two decades ago,” Amanda points out. “A lot has changed since then, and I think it’s time to move on from it.” “And if you’re wondering,” says Nikki, “We aren’t ‘girl bosses’ either.”

Travel through time at Australian Body Art Festival Australia’s premier body painting event is taking place right here in Noosa from Friday 9th to Sunday 11th April in the hinterland town of Cooroy.

W

ith a theme this year of ‘Time Travel’, it is sure to offer up a rich tapestry of art through the ages that will delight the senses. After a cancellation just weeks prior to last year’s festival due to the Covid pandemic, participants are eager for the return of the festival. The festival is a colourful and creative experience for all ages and offers a unique free weekend of activities. “This event offers something really different. Spectators always say what a wonderful experience it is to see living works of art come to life. This year, with a theme of Time Travel you can expect to be transported from the distant past to the mysteries of the future,” said event manager, Danielle Taylor. This award-winning event is centred on competitions in temporary body painting in the categories of ultraviolet, brush and sponge, airbrush, special effects and face painting. All types of artists participate from around Australia and they simply used their artistic flair to work on a very different canvas - the human body! For members of the public, it’s an event like nothing ever seen before, as human canvases take shape during the competitions and come to life on stage at the end of each day. The festival has evolved into much more than just body painting – it is a totally arty weekend! There is a Wearable Art Competition with parades featuring funky fashions made from recycled treasures. New to the festival this year, is a Surfboard Art Competition with the boards being auctioned on the Sunday afternoon. There are also art installations, interactive community art, live music, street performers, a wonderful selection

of market stalls and delectable food. Plus, to finish each competition, there is an amazing parade of the completed artworks. The festival is operating under a Covid Safe Checklist and the format is slightly different this year with the event split into sessions for each competition. There’s a dashing, new chef at the helm of La Vida Restaurant in Hastings Street, Noosa, hoping to lead the restaurant to further excellence.

A little bit of French spirit... Frenchman, Pierre Jorion joined Nicholas and Sarah Hooper at their iconic restaurant just four months ago, after dining at the restaurant during a visit to Noosa from Bundaberg, where he was completing his farm work.

O

n that occasion, Pierre and Sarah started a conversation about hospitality and as luck would have it, he has now become a valued member of their team. Pierre started cooking at the tender age of fourteen, igniting his passion for the industry. His repertoire flourished after finishing secondary school, when he was chosen for an internship with Joel Robuchon - at his acclaimed restaurant, La Grande Maison in Bordeaux. He then went on to study at Notre Dame de la Providence in 2015. After graduating from the institution aged seventeen, Pierre sought to develop his own creativity, whilst completing internships at Le Cerisier, Le Chateau de Beaulieu, and at The InterContinental with Gordan Ramsay. Before landing in Australia in 2019, Pierre completed two years in a Canadian luxury hotel as head chef. He now leads the kitchen at La Vida Restaurant and Privato, the new private dining room positioned adjacent to the restaurant. Pierre is enjoying integrating local Queensland and Tasmanian produce onto the menu at la Vida, and has been astounded by the freshness of the Tasmanian seafood that Nicholas continues to source from his suppliers in Tasmania. Nicholas (and La Vida) has recently been made a member of the Slow Food Noosa group, and is proud to guide Pierre in hosting La Vida’s first members dinner later this month. Pierre’s vision is to build La Vida Restaurant into a Noosa institution, giving guests an exclusive experience, whilst working alongside the front-of-house team to ensure that every diner’s expectation is met. His menu reflects the classic Italian seafood dishes that La Vida is known for, but he also enjoys experimenting, listening to customers, and giving the local residents a seasonal menu that reflects the very best produce available.

ecently La Vida Restaurant hosted a stunning luncheon as part of the Noosa Eat Drink dining program. The day started with delectable Lemondrop Martinis with gentle clouds wafting over the rim of our glasses, the perfect introduction to the day. We then meandered over to the oyster bar, where Pierre the chef was shucking perfect Tasmanian crustaceans and complementing them with a bright and fresh Tasmanian Pinto Gris. A perfect antipasto plate with a Tasmanian Pinot Noir. awaited our tastebuds afterwards. As everyone was happily enjoying their varied layers of Tasmanian bounty, we were all eagerly anticipating our freshly-made Crepe Suzettes being artfully engineered on the Geuridon cooking station amidst the amber flames. What a great afternoon of Tassie delights....

Seafood Chowder Serves: 4 Ingredients: •400 grams Mooloolaba king prawns- deveined •1 continental cucumber •1 chilli deseeded, cut into fine julienne •4 spring onions, fine julienne •2 kafir lime leaves, cut fine julienne •20 mint leaves •20 coriander leaves •1 lemon- segmented, diced ginger crisps- cut into thin slices and fry in a little oil until nicely golden •4 tablespoon ginger oil (see below) •6 tbls chilli & lime dressing GINGER OIL Method: •Grate knob of ginger •4 tbls extra virgin olive oil •Add to saucepan & cover with oil •Gradually bring to boil •Allow to cool Chilli & lime dressing •250ml lime juice •250ml extra virgin olive oil •100gr sugar

•4 zest of lime •1 chilli-cut very fine & deseeded • Pinch of salt Method: •Combine zest and juice 4 limes A•dd finely cut deseeded chilli to zest •Add sugar, extra virgin olive oil, salt •Whisk thoroughly •Set aside Salad •Toss prawns in a little olive oil, place on BBQ. •Cook for approx. 2 mins until just cooked. Place to the side •Using mandolin thinly slice cucumber - avoid seeds •Finely slice deseeded chilli •Cut root of spring onion off, on slight angle cut spring onion into julienne style pieces •Finely slice kafir limes •Pick mint and coriander leave Method: •Combine all salad ingredients together except ginger crisps •Cover with dressing •Add bbq prawns •Top with ginger crisps

AS A WELL-REGARDED COOK, FARMER, WRITER, ENTREPRENEUR, SECOND-GENERATION RESTAURATEUR AND MOTHER-OF-TWO, PALISA IS MANY THINGS TO MANY PEOPLE. At the iconic Sydney Fish Markets, Palisa recalls childhood Thai food memories over a spectacular lunch with long-time friends, chef Ari Walpole and singer-song writer Mahalia Barnes. Ari pairs an unctuous paperbark smoked fish with his version of Som Tum, before the trio bake a splendid Boon Cafe Pandan Chiffon Cake for dessert. Momofuku Seiōbo’s Executive Chef and Barbados-born Paul Carmichael makes Cucurucho, a Cuban-inspired coconut dessert; and Palisa joins contemporary Thai master Martin Boetz of Longrain fame, as he prepares a delectable Chinesestyle Thai Duck & Winter Melon Soup at his remarkable venue atop the cliffs of the Hawkesbury River. While the trials of lockdown have challenged wider society in ways never before experienced, for the restaurant trade the effects are more akin to meltdown.

F

rom the basic mechanics of sourcing produce, through the operational logistics that ensures the foodservice industry moves efficiently, to the end game of plating up in a kitchen – be that in a restaurant or at home – Covid-19 has reconstructed the way we understand food. With the vaccine now taking effect, we asked five of the world’s most decorated chefs for their take on how the industry will recover from the Coronavirus, and how the pandemic may have changed permanently our perception of food.

JAMIE OLIVER Q: You’ve always been very outspoken on food quality – how will this change post-Covid? Jamie: That’s actually one of my biggest worries. There are two big reasons why we might fear a downgrading of food quality in the months and years after the pandemic. The first is because producers, retailers and hosts (restaurants) won’t want to take risks on the growing, purchasing and the delivery of expensive food, which typically, has higher risks over wastage. In other words, if you’re flipping burgers and don’t sell a box, you can suck that up; but if you’ve got a load of unsold steak then your losses are so much greater. So I think lower value food items might be seen a lot more. The other side of that is in a global recession - people have less money in their pockets, and that leads us to the same result – lower value food items. Q: So this may be something we have to get used to? Jamie: It is, but that in itself leaves room for innovation. We talk about substituting foods all the time, but usually it’s done from a standpoint of health. Now, we could be talking about swapping in and out with a view to economising, or ensuring we have less wastage, and that, to a chef should be really exciting. You may actually find our perception of tasty over healthy goes back a little towards fatty foods, certainly if it means food costs less but still ticks the box in terms of flavour. And the challenge of making salad or vegetables, or a lower grade piece of meat, as flavoursome as possible using ‘new’ ingredients should be something that excites any chef, professional or amateur.

GORDON RAMSAY Q: How will we emerge from Covid? Gordon: It’s my belief we will emerge stronger, more efficient, and more driven than ever to make the industry as great as it can be. Every time I’ve had a setback in business, I have responded by drawing everything down to ground level – by taking the time to re-examine everything in minute detail - and to see where we can refine, adjust and make better. And I believe that’s going on in every industry across the board.

If you use that time well, then what you actually emerge with is a machine more polished and efficient than ever before. And when this madness ends and we all return to normal, the model you have for your business is sleek and impressive. So over time you are more knowledgeable, more savvy for the experience; and I think that’s the only way we can really look at the horror of what has happened and what continues to happen… with optimism. Q: And on a creative level there is clear thinking space… Gordon: Absolutely – and for many teams this will be the first time they have had this in a long time. It’s an opportunity to recharge the batteries, and then to think of new ideas for what it is we do. It’s a big reset. Q: Are you

worried the ‘reset’ will drive away so many businesses? Gordon: Yes, but this is natural selection and it always comes to the fore in times of crisis. I’m afraid those below average won’t survive, and that will be the there are no two ways about that.

HESTON BLUMENTHAL Q: How will the industry have changed when things return to normal? Heston: I think we have to be positive and optimistic; we have to see that there is opportunity that develops out of every crisis – it usually presents itself when you least expect it, but through all of this, there will be angles where we can do stuff differently. For us, for instance, it has been with delivery of food. It would seem absolutely unthinkable a year ago that we would have been talking about a food collection service for fine dining, but that’s what we did with Dinner By Heston, allowing people to order and collect from Mandarin Oriental. Q: Are you concerned that you are diminishing the experience though? Heston: No - because experience is an ever-changing thing; it is never the same twice. For people who are used to going out to a posh restaurant – to have that food brought to them at home - actually ticks all the boxes of novelty, fun, convenience; and that’s before we’ve even touched on safety, and abiding by the rules of social distancing. We need to take ourselves out of ourselves, if you can understand what I mean by that. We need to explore new ways of doing things and to embrace those – it’s not detracting from an experience, it’s simply altering it. Q: Do you have other concerns? Heston: Primarily my fear is for those working in the industry. The diners will only come back if the producers, suppliers, restaurants and staff are still in place. I’ve been involved in fundraising initiatives for hospitality workers, and it’s crucial we support these, as much in the sense that by doing so, we will be protecting our own food experiences for the future, as well as their livelihoods.

Pizza Rustica with Olive Oil Pastry Serves: 4 Preparation: 20 mins; Cooking time: 35mins; Skill level: Easy Pizza Rustica is like a hybrid between a pastry and a calzone, with an unleavened olive oil pastry-like dough encasing anything your heart desires. In this case, a classic spinach and ricotta filling. Ingredients: 400g ’00' flour or plain flour 60ml (1/4 cup) extra virgin olive oil Sea salt for sprinkling Lemon wedges to serve Filling: 1 tbsp extra virgin olive oil 1 garlic clove, thinly sliced 200g baby spinach 2 eggs 300g ricotta 25g (1/4 cup) grated parmesan 25g (1/4 cup) grated pecorino Small handful parsley leaves, coarsely chopped 1/4 tsp freshly grated nutmeg Zest of 1/2 lemon Slat and freshly ground black pepper - to taste. Instructions: Standing time: 30 mins 1. Place the flour, oil and 200 ml water in a bowl and mix until combined. Tip onto a lightly floured surface and knead for a few minutes or until smooth. Shape into a ball, then return to the bowl, cover and rest for 20 minutes.

2. Meanwhile, for the filling, heat the olive oil and garlic in a large frying pan over mediumhigh heat until fragrant. Add the spinach, then cover and cook until just wilted. Remove from the pan and set aside to cool. Place the remaining filling ingredients in a bowl and combine well. Squeeze the excess liquid out of the cooled spinach, coarsely chop, then add to the filling and stir to combine. Cover and refrigerate for 30 minutes to firm up. 3. Preheat the oven to 220˚C (fan-forced oven 200C). Oil a 30 cm x 40 cm baking dish. Roll out the pastry on a lightly floured work surface into a rectangle about 3 mm-thick (you want to see your fingers through it). Place it onto the oiled dish with the sides overhanging. Place the filling in the middle and spread evenly over the dough. Fold the overhanging pastry over to enclose the filling, then gently pinch the edges together to seal. Brush the pastry with olive oil and sprinkle with a little salt. Bake for 30-35 minutes or until golden and the pastry is cooked through. This savoury pie is lovely hot, but my preference is to serve it warm or at room temperature, with a squeeze of lemon.

It’s the collaboration of skill that makes the practice so uniquely special By Jennifer Dean

“When you imagine that some pots have been fired three of four times, (then you can understand that) they’ve been under the care of a lot of different people at very weird times of the day and night”, explains Rowley Drysdale of the combined effort involved in wood firing ceramics at Quixotica Art Space.

W

ood firing is a big deal in the world of pottery. It can take days to fill and ready the potters’ kiln, just as it can take multiple days for the firing process to work magic on the hand thrown wares within. Some works might require the effort of multiple firings, and all performed without any guarantee for a successful result. Such a physically and mentally taxing process one can imagine would be difficult to perform solo. At a basic level, wood firing historically has always been a team effort. With labour divided amongst a group of potters in support of one or two experienced makers, the collaboration inherent in the wood firing process speaks to one’s sense of community. Reveals Drysdale, “Much knowledge and laughter is shared at firing sessions and I sometimes wonder whether this positive sharing is also somehow absorbed into the work. As much as a grandmother’s love is felt in a hand-stitched patchwork quilt, the good vibes from a team of happy potters can perhaps imbue wood fired work also.” Established in 2000, Drysdale designed and built Quixotica Art Space with a group of friends, purposed as a shared place for art making. Consisting of multiple studios, kilns and a gallery set amongst a backdrop of trees and lake in the beautiful Sunshine Coast Hinterland, Quixotica has flourished into a well-known, specialist art precinct. For the Australian wood fired ceramics ambassador, Drysdale’s love of communal spaces and eagerness to share his passion prompted his vision. “I like the idea that I’m sort of there as a low tech events coordinator trying to cobble together things that look fairly mundanepieces of clay and brick and a large fire. But the human side- I really

appreciate that part” explains the highly respected visual artist and educator. Like many art practices, wood firing is an art of passion and cannot be measured by its economic worth. However says internationally renowned US potter Mark Hewitt, it is extremely hard for anyone to make a living from the practice. “The problem is not one of exclusivity, but of impenetrability…it costs so much to get trained, to buy land and to buy materials, not to mention running a business.” Bridging that gap however is precisely what drives Drysdale’s Quixotica vision; providing access through collaboration, mentorship, training and apprenticeship. Having forged significant relationships with other renowned international potters, particularly in South Korea, the widely exhibited and revered advocate for the handmade- Drysdale feels very strongly that Quixotica is a place existing to forge relationships with makers of shared creative vision and passion and all for the prosperity of the ancient art. Setting out to survey the importance and impact of wood fired ceramic practices around the world, Drysdale’s new co-curated group exhibition, ‘Flame Path’ pays particular attention to the uniqueness of wood fired practices in the Sunshine Coast’s Cooroy region. Featuring local and international wood firers personally selected by Drysdale, each have had significant engagement with Quixotica Art Space at various stages of their creative careers. Including Alix Brodeur, Angus McDiarmid, Barry Tate, Gyan Wall, Heidi Kreitchet, Isaac Patmore, Jackie Gasson, Jennifer Halli, Merrie Tomkins, Moraig McKenna, Neil Hoffmann, Owen Rye, Rowley Drysdale, Sandy Lockwood, Shirobey Kobayashi, Stephen Roberts and Wesley Denic, Flame Path highlights the significant impact the commitment to ‘place’ has had within the unique community of wood firers both in Australia and abroad. I AM WRITING THIS FROM BOTH THE PERSPECTIVE OF AN OWNER OF A PET THAT SUFFERS STORM PHOBIAS (DONNIE, OUR DACHSHUND DISPLAYS A RANGE OF SIGNS THAT INCLUDE SHAKING, TREMBLING, PACING, WHIMPERING AND GLASS LICKING) - AND FROM THE PERSPECTIVE OF AN EMERGENCY MEDICINE VETERINARIAN, WHO TREATS THE TRAUMA THESE POOR PETS INFLICT ON THEMSELVES, WHILE IN THIS STATE OF ‘FEAR’.

I

t is not uncommon for pets to present after-hours to North Coast Veterinary Emergency (NCVECC) with broken teeth from chewing door/window frames, broken nails from digging floors or fences, multiple trauma from escaping over or under fences, and/or motor vehicle accidents from blindly running onto a road. The levels of fear these pets suffer at the time of a storm phenomenon is unfathomable. I do not profess to have intricate knowledge of the workings of our pets’ brains, the field of animal behaviour is a very special area of veterinary medicine. Storm phobia is defined as a behaviour indicative of ‘fear’ in response to storms and storm related phenomena. Storm phobia is a broad term that reaches beyond just the noise of thunder and describes a fear of storm related phenomena (i.e. rain, changes in barometric pressure, the sound of wind, dark clouds in the sky etc.). This terminology explains why some of our pets start showing signs of fear before the storm is audible as it is more than just the noise that insights fear. Storm phobia is a serious problem and can result in destruction to both self (from a pet’s perspective) and property. The signs associated with storm phobia in dogs include, but are not exclusive to: trembling, crying,

panic, biting and clawing at carpets, doors, window frames, breaking of glass. The fear that these pets undergo is serious and intractable, with implications on their health. The treatment of storm phobia has historically included behaviour modification (i.e. desensitisation and counter-conditioning) and/or medication. It is rare that the phobia can be resolved, so it is better termed ‘management’ rather than ‘treatment’. The clinical signs of storm phobia are known to increase in intensity with the severity of the storm, so a realistic expectation of therapy/management of storm phobia would be - an increase in tolerance to intense storm activity and a decrease in the intensity of the fear behaviour associated with storms. If you have a pet with storm phobia, I would encourage you to speak openly on this topic with your veterinarian. The management of storm phobia is usually multimodal - and needs to be tailored to the requirements of your pet. There are a number of different options for training and for medication - but, unfortunately there is not a ‘one size fits all’ option. If your pet suffers severe fear signs and is at risk of self-trauma, or has suffered self-trauma at the hands/paws of a phobia in the past, it is worth considering consultation with an animal behaviourist as they are very good at tailoring management programs. Find one of the pioneering outdoor artworks, the Millmerran Water Tank Art, which was commissioned in 1998 and given a fresh lick of paint in 2013. Located on the roadside, make sure you pull over at the designated parking area for a closer look, before continuing 100 kilometres to the town of Yelarbon whose population ticks just 364 people. While the population may be small, its silo art is monumental, measuring 1,800 square metres. Spread across eight Graincorp silos, this artwork by Jordon Bruce (aka The Brightsiders) took two weeks and more than one thousand litres of paint to complete. As a gift from the silo artists, Joel Fergie and Travis Vinson (known as The Zookeeper and Drapl), the pub’s water tanks were turned into a tribute to the now critically endangered northern hairy-nosed wombats that once roamed the local region. The GrainCorp silos are less than one kilometre from the hotel, so there’s no need to get back in the car to see the main attraction – The Watering Hole. Taking inspiration from three local photographers, the giant mural covering four 30-metre-high silos was created from just one, A4 sized drawing. Using over 500 litres of paint and 500 spray cans and taking three weeks to complete, the murals highlight iconic scenes from the region, including the Moonie River and native birdlife. St George to Wandoan Continue your mural tour in Wandoan, 300 kilometres north of St George. With painted water tanks and 33 public murals to explore along the Heritage Trail, you’ll want to make sure you’re wearing comfortable walking shoes for this day out with a difference. Head to Henderson and Jerrad Streets to see the painted water towers dedicated to the local servicemen, dating back to the 1990s. Step it out along the town’s Heritage Trail to learn about the local history and heritage and tick off 33 murals from painted post boxes to painted walls. Overnight in Wandoan or explore another nearby town in the Western Downs, such as Miles or Chinchilla.

I

t was a journey that the subject of this play had herself made 85 years before. In 1934, 21 yearold actress Coral Browne arrived in London from Australia with £50 in her pocket, stars in her eyes, a deliciously bawdy wit - and a driving ambition in her heart. She would become famous for her glamorous lifestyle and award-

winning performances (Auntie Mame, The Killing of Sister George, Dennis Potter’s Dreamchild, and Alan Bennett’s An Englishman Abroad), and infamous for her sharp tongue and long list of lovers, which included Hollywood director Vincent Price. Born in West Footscray in 1913, Coral Browne studied at the National Gallery Art School in Melbourne and became an actor by chance. While working backstage as scenery painter on Gregan McMahon’s production of John Galsworthy’s The Roof, the then Brown (the “e” would not be added until 1936) was asked to join the cast after the leading actress fell ill. Not long after her amateur debut, Browne signed with J.C. Williamson sealing her fate as a professional stage performer. On arrival in London, Browne quickly established a career both on stage and in film and by the late 1940s she was the third highest paid actress on the West End Stage. A sexually adventurous woman, Browne enjoyed affairs with a number of prominent actors including (Sir) Douglas Fairbanks Junior, Jack Buchanan, (Sir) Cecil Beaton, and Paul Robeson, before marrying the openly gay actor and theatrical agent Philip Westrope Pearman (d.1964). In 1958, while visiting Moscow with the Shakespeare Memorial Theatre Company Browne met British spy Guy Burgess, who had defected

to the Soviet Union. This encounter would form the basis of Alan Bennett’s telemovie An Englishman Abroad (1983), in which Browne played herself. Browne also starred in a number of well-known films, including Auntie Mame (1958) and the notorious drama The Killing of Sister George (1968). Browne met Hollywood star Vincent Price in in 1972 on the set of the horror film Theatre of Blood and shortly thereafter moved to the United States. The couple married in 1974 and remained together until Browne died in 1991 after battling cancer for several years. Celebrated as an actress (though she received few official honours) Browne was renowned for her sharp wit, elegant demeanour, passion for designer clothes, and talent for profanity. In 1961 she was nominated as one of the world’s most beautiful women but ever fearful of losing her looks, she was a plastic surgery enthusiast and an obsessive weight-watcher. There’s nothing quite like the anticipation and excitement of an underwater encounter with a humpback whale.

I

have been extremely privileged over the years to have many of these encounters and it always adds to the excitement when the humpbacks have an entourage of dolphins accompanying them on their journey. Humpback whales make their annual migration from the icy cold waters of Antarctica past the east coast of Australia to the warm, tropical waters of the Pacific Islands to mate and breed. When the humpback whale mothers feel that their calves are strong enough, they make their return journey back to Antarctica to the plankton rich water to feed again. As an underwater photographer I am blessed to have had first hand encounters of this amazing event, etching memories in my heart that will last forever. It is an honour for me to be able to share these memories with you and create conscious thought for our vulnerable and delicate marine ecosystems when my artwork is viewed on the wall..

MATT LEACY OFFERS HIS TOP TIPS FOR MAXIMISING THE RESTORATIVE POTENTIAL OF AN OUTDOOR SPACE...

he impact of gardens and landscapes on property value is a commonplace topic within industry and media alike. But what about the more intrinsic benefits associated with outdoor spaces – the potential for gardens and outdoor living areas to transform minds, bodies and souls? The Wonder of Water... “In terms of creating positive energy in outdoor spaces, a great place to start is with the key principles of Feng Shui – wind and water,” says Matt. “Water is proven to be a very calming element on humans, with multiple studies showing it can help lower blood pressure, improve physical health and accelerate healing,” notes Matt. “As such, we try to incorporate water into landscape and garden designs where possible, “if you’re after a design centrepiece, you might consider something a little larger like a rock pool, fountain, cascading pond or even a waterfall. “Obviously, larger water features need to take into

account factors such as cost, size and layout, but most water features can be customised to the individual requirements of an outdoor space." “In terms of outdoor water features, the biggest asset has to be a pool – and this is what most Aussie homeowners want in their backyard if they can afford it,” he said.

“And installing a mineral filtration system doesn’t generally cost any more than a normal filtration system” says Matt. “They’re simple, costeffective and easy to maintain, as well as being better for the environment.”

“Pools allow swimming and exercise, which are great for health and wellbeing. They also enable a cool-down during summer months, and attract birds and native wildlife – which help to bring sound, energy and ambience to a space.” “Colour-wise, traditional mid-blues will likely always be a favourite with homeowners, but I don’t think you can go past white and black pools, when it comes to creating a calming and natural ambience.

“Auditory elements can be a great way to foster tranquility and ambience in an outdoor space,” says Matt. “The most natural way to bring sound and music into a garden is through attracting wildlife – in particular, birds, bees and butterflies.” “As we move into the cooler months, banksias, grevilleas and bottlebrush do a stellar job of attracting birds and bees" “Seed and fruit-feeding birds will feast on the likes of bottlebrush, She-oaks and palms,” he adds. “If you want to sustain your musicality, vary your choice of herbaceous perennials, annuals and biennials, so that they flower in different seasons and provide a year-round food source for birds, butterflies and bees,” Matt says. “And if you really want to amp up the bird presence, consider introducing a bird bath or a nesting box as a bird feeder.”

“White pools help to create a sandy beachstyle look, which evoke feelings associated with freedom, nature and relaxation,” Matt continued. “When the white reflects the sky, it also transform the water into a beautiful blue – which again aids feelings of tranquility and refreshment.” “At the other end of the spectrum, black pools look extremely elegant and inviting,” he said. “When not used for swimming, they double as a reflection pool, which can be great for introspection and mental restoration.” “For health, I would also recommend installing a mineral pool filtration system,” Matt adds. “Mineral systems utilise magnesium, which is required by every major organ in the human body. If you don’t get enough magnesium, your sleeping patterns and general health can suffer in multiple ways,” he says. “Mineral systems deliver a healthier alternative to traditional salt or heavily chlorinated pools. The water remains crystal clear, and your skin, eyes and hair will also feel better. It’s just a lot softer on the body as a whole.
