Sunshine Coast Premiere

I

t was all lights, camera, action at the premiere of new Australian movie, Palm Beach, when Director Rachel Ward and her husband and star of the movie, Bryan Brown graced the ‘blue’ carpet at the new Event Cinemas in Kawana. It was a lovely film that brought back wonderful memories for all those ‘baby boomers’ who spent their holidays or lived in the beach communities of Sydney in the 70s. And, the fact that Rachel brought all her close lifelong friends and actors onboard, along with their daughter, Matilda.

he perfect location for an evening of sparkle, shine and camaraderie recently.. when Santa’s Classy Helpers organised a wonderful evening of fine food and wine, as well as raffles to raise much-needed funds for the 300 disadvantaged families that the group assists every Christmas. The evening also showcased just how much the SCH appeal means to families each year, when one of the mothers, Kelly, shared her inspirational and heart-wrenching story with the diners. Needless to say there were tissues appearing around the room.

selection of local restaurants were happy to gift a ‘table of ten’, to the fundraising efforts of Australian Charity, The KIDS Foundation. A fabulous foundation that delivers KIDS programs for burns victims from the Sunshine Coast region up to Toowoomba, and several visiting families from interstate. This is the 2nd year that diners have been given the opportunity purchase tickets to join fellow diners at an all-white dining experience. Everyone dressed in their best white attire, enjoyed dinner at a participating restaurant and were then ferried to a secret destination for the White after party (The Boat House in Noosaville). The night raised $80,000 through ticket sales and a silent auction. RACV Noosa Resort was the host property and base for the attendees, and a great supporter of the event. 4

s we go to print the region is still reeling from the terrible bush fires that raged through the Peregian Beach bushland recently. And, we are thankful that no one was hurt badly. We are also grateful to all the First Responders, police, fire fighters, rural fire brigade, SES, medical and paramedics - and all the support groups, who pitched in to provide beds and places of safety for those evacuated for safety reasons. On a brighter note, families have returned to their homes and all the beach communities including Peregian Beach were saved, as the fires were brought under control after the water bomber was brought in to the region. MP Life – Noosa Style! Spring 2019

T

here are many delights that a Noosa spring delivers, including bursts of growth, humming of native bees in the millions gathering nectar from Wallum blooms and those wood ducks hatching their bundles. This sometimes in the most unusual spaces including roadside near my office at the very busy Civic centre! How we wanted to hop out and remove them, though realised we may startle them onto the road in our efforts, hence leaving Mum to decide what was best for her youngsters! It is the unexpected that can give the greatest sorrow, and also the greatest joy. Blooms that occur naturally, without buying, nurturing and fertilising, is just one example. How many of us over years have purchased an extravagant addition, with expectations not met leading to disappointment. Whereas heading into the scrub, wetlands or heath, there is never any disappointment, as expectations are not predetermined. Whether in our home gardens, or in our lives, expectations realistic or otherwise, are the nemesis to living in, and enjoying, the moment. We could take a leaf out of the native spring ‘book’. Less demands, greater appreciation of what is gifted, as well tolerance through perceptions beyond ours. The ability to accept that there is beauty in what may not be traditionally viewed as beautiful, including those ‘kodak moments’ when you do not pose for a shot! To be patient and empathise that because there are no flowers, does not mean a plant has failed, or that you have been neglectful. It may be holding itself for another set of conditions, a hotter day, a flush of rain. In an era of ‘me now’ and self-entitlement, a slow walk in the Noosa spring, without expectation, will deliver more than fresh air, exercise and some glorious sights and smells. It can provide the framework for all of us to come back to, the insights to live happier and more fulfilling lives. Appreciation, tolerance, perception and an understanding that it is okay for ‘now’, to be mean tomorrow, or next year, except when we are dealing with urgent, life threatening issues. Entitlement is a demand that can only lead to disappointment, anger and bitterness, and can create poor relationships, decisions and Governments. The alternative? To think and care for others, focus on future outcomes instead of instant gratification, or for us as MP’s, to not think about the next election, nor the ‘politicking’ that prevents outcomes sought for those we serve, and the next generation. Otherwise we will continue to spend much time, money and frustration throwing out our purchased plants, partners, potential solutions and Governments when they do not perform to our immediate expectations. Never forget, some of our greatest achievements, and findings, have come from a failing? The future cannot be created from blame, or fear of failure. It is about forgiveness, connectivity, unity, genuine intent, and yes, loving our plants when they do not look like that wonderful tag hanging off the side! The lessons of spring….to be enjoyed and pondered on! And for this MP, if they allowed ‘props’ in Chamber, the one I would take is a native bee hive that demonstrates what can be created when everyone works together, instead of ‘throwing rocks’ that destroy the hive. Take that walk, and immerse in what you cannot control. Both invigorating, and restorative!!

THE LIFE OF BRYAN l e h c a R Story: Paul Dargan

Unless we’re incredibly lucky – or, come to think of it, unlucky – the anxiety of growing old is something that, ultimately, will fall on all of us at one point or another. And yet, just like life’s other challenges, it is our ability to deal with everything it brings that ultimately defines us as people. That’s certainly proven to be true where Bryan Brown is concerned. The 72-year-old, one of our finest and most celebrated actors of the past four decades, has approached the passing of time with humility, honesty and charm. And, you know, it makes us admire the brilliant star of films such as Cocktail, Gorillas in the Mist and The Poseidon Adventure even more than we already did.

ou know, sometimes it seems really churlish, really selfish to bemoan stuff in life,” the movie magnate begins. “I can safely look back and say I have achieved a lot, been very lucky, and spent the majority of my life with a truly wonderful family, so what is there to complain about?” He asks.

Perhaps ‘complain’ is the wrong word. Perhaps the reason any of us pine for days gone by or struggle to adjust sometimes to the changing tide of time is not out of some sense of disappointment, more that we have enjoyed ourselves so much… even too much!

“A couple of years back I encountered a bit of anxiety. I went to see a psychologist and very quickly found myself working through a few things,” he says. “What I came to realise from the experience was that this sense of life getting away from you was nothing unique to me, and for the most part it can be solved just by approaching what you have from a different direction.”

lots of fun, laughter, eating and drinking… lots of stories, lots of the memories of things that we’ve all done together.” Rachel, a movie icon in her own right, who chose to move away from ‘front of camera’ following a spate of successful releases in the 1980s including Against All Odds, The Umbrella Woman and Wide Sargasso Sea, adds: “Afterwards, Bryan said to me: ‘They are all in quicksand, those guys.’ He felt that they were all dealing with something, like him. “We knew it was an idea that could be put down into a script, and there was a universal theme there about men, in particular, moving into the final quarter of their lives, because that shift is difficult.” In many ways the new film sees Brown coming full-circle, given that the title, Palm Beach, coincidentally matches that of one of his early movies, way back in 1980. Within three years he had met wife-to-be Rachel on the set of Golden Globe nominated TV series The Thorn Birds, and another five years on he was sharing film credits with Tom Cruise in Cocktail.

Brown has channelled that experience into Palm Beach, a movie that tells the story of Frank, former band member and manager of fictional rockers Pacific Sideburns, who can feel things ebbing away just when he needs them to deliver again. It’s a touching slice of later-life redemption, written and directed by wife Rachel Ward.

Three children and one new granddaughter, and an idyllic life living on their Nambucca Heads farm, ensure the couple have managed to find a balance between staying relevant - and avoiding being trapped under the celebrity magnifying glass.

“The film is inspired by a Christmas that Rachel and I shared with three other couples, about five years ago” he continues. “As always there’s

It’s certainly a world away from Rachel’s largely aristocratic upbringing in the UK, something she rapidly rebelled against when moving into modelling at the age of 16. She once shared a house with fellow model and actress Darryl Hannah and featured on the cover of both Vogue and Cosmopolitan, before moving States in 1977. Before she met Bryan, Rachel starred opposite Steve Martin in Dead Men Don’t Wear Plaid, and countered Burt Reynolds in Sharky’s Machine, for which she received a Golden Globe nomination as character Dominoe. “I started modelling very young so by the time kids came around I had been involved in the whole thing a long time and I was happy to step back,” she admits.

THE LIFE OF BRYAN Indeed, since the turn of the Millennium, this creative force has opted for an entirely new change of tact - as a writer and director of tremendous regard, gaining real success with Beautiful Kate. As a result, this effortlessly likeable couple have managed to live their lives with an overriding sense of calm. And even the occasional anxieties haven’t stopped them achieving their dreams of working in the industry for many years. What probably stands Bryan and Rachel out most though, is a companionship and compassion that both still have for one another. For every loving look, there is a dashing bite of sarcasm and wit. “Rachel has been the person for me and she is my absolute life – I am so grateful.” The retort that comes back is typically blunt. “And Bryan is my husband… that’s all he is,” she laughs. “My husband and my slave!”

2015, I actually didn’t want to cast him. The producer on the film wanted to cast him and I had to do what I was told and put him in the role of Captain Foster! BRYAN: The truth of the matter is that Rachel begged me to play the part [laughs].

BRYAN BROWN QUICKFIRE Q&A Q: How does it feel to be married to each other but also to work together? BRYAN: It’s a difficult one being in a relationship with someone and then finding yourself in a creative position with them, because sometimes you don’t know where the boundary is in being brutally honest or softly professional. When it comes to creativity you really don’t want to be brutal, nor would you be that way with anyone else on a project. Just because you have license to speak your mind, it doesn’t mean you should. RACHEL: Also, when we worked together on An Accidental Soldier in

RACHEL: But yes, we do argue. However, I see that as more because we are happy to have each other to bounce ideas off. I respect Bryan’s opinion and also his sensibility and I hope that he does have some respect for mine, sometimes [laughs]. Q: But you do work together more often than not, don’t you… BRYAN: Well, every single time it has been enjoyable because she puts in a lot of preparation and work. Rachel has a wonderful eye for seeing beauty in things which someone else may very well overlook. RACHEL: For me, it’s always fantastic to work with someone who you are in sync with on creative and aesthetic levels, as well as having the same sensibilities. That person is always Bryan.

he Koningen’s closed their successful Noosa studio gallery in late 2004 heading off to Europe for a year of ‘all things Europe’ and a creative sojourn. One year turned into twelve years! Travelling through medieval Bruges (Belgium) with snow falling on the cobblestones, the town looked like it fell out of a storybook. Everyone says on holidays - ‘we could live here’ - well the Koningen’s did exactly that, waking each day on cobblestones, listening to the toll of church bells and bicycles - instead of the golden beaches and sunshine. Their story. Dianne says, “Intuitively we both felt Bruges was a place we could live for a few years. Svein had a yearning to return to his northern European roots, and with Svein fluent in Dutch, which is close to the Belgian Flemish

Wow too late now! We had leased a ‘Herenhuis’ - a gentleman’s residence, in what turned out to be the best street for an expat couple. When you walk out your door or bike to your market or café, you literally run into your neighbours, making it so easy to get to know the locals. Our social life turned around thanks to Erik, owner of the famous Lockedize Eat Cafe. Erik and his family welcomed us into their huge network. Belgium is famous for fabulous food, diverse beers, and is a chocolate heaven, with an intriguing history of famous artisans. The locals couldn’t comprehend our move to their

town. Expats don’t choose Bruges. Rather most head to Italy or France. Other than a few company and Embassy staff from other countries, we were an oddity. People were curious about us, fortunately after a short while, curiosity drew locals and visitors into the studio to see the paintings and meet this odd couple. The studio, which was also our home, became popular and we were accepted into the community.

Timing is everything and Belgium has become a leader of contemporary design in fashion and furnishing, Svein’s abstract paintings were perfect for this changing era of style. Fortunately, a Koningen artwork was often the first choice for locals and word spread far and wide.

brilliant crops of grape vines, lavender and sunflowers against the harsh outcrops and mountains inspired the Wilderness Series. Simply heading out the front door at 8am on weekdays inspired the ‘Street Scene’ painting. There were kids on bikes wearing headsets, heading off to schools jamming the street - danger time!. Bikes stop for no man in Bruges. Svein captured the morning school rush street frenzy perfectly on canvas.

Noosa and Bruges have much in common in many ways. They have a similar sized population and tourism is paramount. Consequently, they both have amazing gastronomique restaurants, Bruges water views are of canals rather than beaches - so although our dog Remi missed his Noosa River swims - he didn’t mind going to cafés and bike rides along canals. Dogs are allowed in nearly all cafés and restaurants. Remi loved Belgium! We quickly became totally immersed in our new life, with new friends, a changed lifestyle, and many old friends visiting us from Australia. Easily accessible museums and art fairs in Europe and UK gave Svein inspiration and a renewed creative vigour. The local urban environment and trips to the northern Provence and Italy were reflected in his paintings. The harsh summer light of Provence with

There are many levels of challenges when moving to another country but the most “gut wrenching” is that you never get over the distance from family and friends. This void and missing the sun-filled ambiance of Noosa and the its lifestyle remained. Twelve years on, Svein was yearning for the particular Australian light and open spaces. As artists often say, change inspires new creative juices. With his paintings being sold throughout the northern hemisphere, it was a very difficult decision to leave Bruges but the decision to return was made. The logistics of packing began in earnest in late 2016. Arriving initially in Melbourne on the first of January 2017, the full realisation of what another momentous change meant, set in. After a couple of false starts including a time in northern New South Wales, we and the Koningen studio are back on the beautiful Sunshine Coast.

The Space: Finding the right space for both Dianne and Svein and the Koningen ART had to have that essential creative ingredient... somewhere that inspires the artistic flow for Svein, a space for the living gallery, storage for the art works... a place that has a unique and welcoming ambiance. Finally, two years post Bruges, the Koningen’s have arrived back on the Sunshine Coast down the road from their original home in Noosa, in the tree space environment of Buderim. Close enough to play in Noosa and work in their environment - this new version of the `Koningen Living Studio Gallery’ is a perfect showcase for the stunning artworks by Svein. He’s not Italian he’s Australian But after completing his apprenticeship at Cradle Mountain in the 1980s, as a young chef, Mick Ikin started work at the Star Bar in Launceston where he decided Italian was for him.

he place was built to look like an Italian Tavern,” he said. “It had a big wood oven. You had to go in early in the morning to get the coals ready. That’s when I started doing Italian food.”

When Mick began cooking modern Australian food it was strongly influenced by European cuisine. He’s never been to Europe but the food of the Mediterranean has become his favourite and over the years Italian has become his niche. He has fine-tuned his ingredients, perfected his pastas and incorporated influences from France, Spain and the Middle East. His own style of modern Italian fine dining he now serves at the Noosa Italian (formerly Italian Marina) Restaurant and Pizza at Noosa Marina in Tewantin after cementing his place in Noosa on Hastings Street. After leaving Tasmania Mick worked at restaurants around Sydney’s exclusive northern beaches including Manly. About 16 years ago he came to Noosa for a holiday and didn’t go back. “I liked the climate,” he said. It wasn’t the surfing that attracted him, though. He tried it once in Sydney in 3m waves and after getting a battering decided golf was more his sport – when he finds the time. For 10 years Mick worked at Noosa’s landmark Italian Restaurant Lindoni in Hastings Street delivering traditional Italian cuisine in the Noosa institution located at the bottom of Seahaven. From Lindoni Mick moved along Hastings Street to Locale Restaurant where for four years he learnt “to do things that weren’t totally Italian”. At Noosa Italian he describes his food as 90 per cent Italian and 10 per cent mainly European-influenced. Mick has introduced his own dishes gradually to the restaurant’s clientele of loyal patrons and tourists. “I try things on the specials board. If they work they go on the menu,” he said. “I like it. We’re not the sort of place people come

to be seen. People come for the food basically.” Mick’s style marks a shift from the more rustic Italian prepared by the previous chef. He has introduced venison, goat and rabbit and sources local produce including Mooloolaba King prawns which he serves grilled with celeriac fritta, eggplant relish and green pea salsa. His spring menu combines a mix of new and old favourites, including his signature grass fed beef with truffled mushroom croquette, onion and horseradish puree, red wine jus and fried sage.

Room temperature raspberry soufflé Serves: 10 Time: 1 hour, plus cooling time Ingredients: 5 egg whites 250 g (9 oz) sugar 500 ml (17 fl oz/2 cups) cream 350 g (12 oz) frozen raspberries 5 egg yolks 35 ml (1 fl oz) lemon juice 4 gelatin leaves red or pink food colouring

Method: Whisk the egg whites with 35 g (1 ¼ oz) of the sugar. Whisk the cream with 35 g (1 ¼ oz) of the sugar. Heat 180 g (6 ½ oz) of the sugar with 250 g (9 oz) of the raspberries in a saucepan over medium heat until the sugar is dissolved. Whisk the mixture into the egg yolks with the lemon juice. Cook over a bain marie until slightly thickened. Add the gelatin and food colouring.

Allow the mixture to cool slightly over an ice bath, then whisk half the mixture into the egg whites and cream. Fold the remaining mixture in gently, then add the remaining raspberries. Pour into molds and set in fridge. To prepare the molds, use a dariole mold or ramekin, add a collar of doubled up foil and secure with rubber band. To serve, remove the foil from the soufflé just before serving. Serve immediately at room temperature

. . . g n i r p s r o f n e k Chic Organic chicken tagine with mograbieh & minted yoghurt Serves: 4 Time: 45 minutes Ingredients: 1 kg (2 lb 4 oz) organic chicken Maryland (4 pieces) 100 g (3 ½ oz) ghee 1 onion, finely chopped 2 carrots, finely chopped 1 celery stick, finely chopped 6 garlic cloves, crushed 4 bay leaves 1 cinnamon stick a few threads saffron 1 teaspoon ground coriander 1 teaspoon ground cumin

½ teaspoon turmeric ½ teaspoon paprika 1 handful dried apricot ½ preserved lemon, finely chopped 1 handful pitted olives 1 bunch coriander (cilantro) 100 g (3 ½ oz) mograbieh a few saffron threads 50 g (1 ¾ oz) ghee salt and pepper, to season micro herbs, to garnish halved cherry tomatoes, to garnish (optional) Minted yoghurt 1 bunch mint 100 g (3½ oz) yoghurt 1 garlic clove, chopped Sear the chicken with the ghee in a heavy-based pan over medium heat, then set aside. Sauté the onion, carrot, celery and garlic. Then add the bay leaves and spices and 500 ml (17 fl oz/2 cups) of water before adding the

chicken back in. Cook in a tagine or covered casserole dish over low heat for about 25 minutes. Add the apricots and cook for a further 10 minutes. When cooked, add the preserved lemon, olives and coriander. Place the mograbieh, 1 litre (35 fl oz/4 cups) water, salt and saffron in a saucepan. Bring to the boil and cook for 12 minutes. Strain and then sauté with the ghee. To make the minted yoghurt, pick the leaves from the mint and chop. Add to the blender with the yoghurt and chopped garlic. Add salt to taste and purée until smooth. To serve, place the mograbieh in a bowl, top with the chicken tagine and vegetables. Add dollops of the minted yoghurt and garnish with micro herbs and halved cherry tomatoes.

Whatever your personal reason, there’s one that I think is universal Flavour. Gone are the days where a sad salad or soft steamed carrots were our only options. These recipes use vegetables in a whole new way, adding so much life to your weekly menus.

Simple vegetable sushi Serves: 4 Ingredients: 8 sheets toasted nori 125g (4½ oz) baby spinach leaves 3 cucumbers, halved and sliced lengthways 3 carrots, peeled and grated or shredded using a julienne peeler 2 avocados, thickly sliced 2/3 cup (10g/¼ oz) mint leaves 2/3 cup (60g/2 oz) store-bought Pickled ginger water, for brushing soy sauce or coconut aminos, to serve wasabi, to serve Store-bought pickled ginger, extra, to serve Method: Place 1 sheet of the nori, rough-side up, onto a clean surface. Arrange a line of overlapping spinach leaves to cover one-third of the sheet, leaving a 2cm (¾ in) border at the edge closest to you. Top the spinach with cucumber, carrot, avocado, mint and ginger. Roll the nori to encase the filling, brushing the edge with a little water to seal the roll. Cut the roll in half. Repeat with the remaining nori sheets and fillings. Serve the sushi rolls with soy, wasabi and extra ginger Cooks notes: You can choose to add all kinds of fillings to this sushi, so everyone will be happy and satisfied. Or if you have a few options onhand, then each person can design their own combination! For each roll, you might like to add 2 slices smoked salmon, 45g (1¹€² oz) sashimigrade salmon or tuna or 3 cooked and peeled prawns (shrimp). You could also try adding 45g (1¹€² oz) cooked shredded chicken or 3 very thin slices of roasted beef fillet per roll.

A

ustralian native bees, commonly known as stingless bees, are much smaller in size to their European counterparts, AND, they don’t sting. Recent times has seen a surge in popularity and awareness, making native hives a highly beneficial addition to urban gardens, orchards and native forests. As an etymologist and consultant to the macadamia industry, Kin Kin Native Bees’, Chris Fuller, has long recognised the symbiotic relationship between native bees and our native macadamia crops and their importance as crop and orchard pollinators.

While there are in fact over 1000 native bee species, there are three main varieties of stingless bees that Chris nurtures on his property in Kin Kin. The most common variety, and the one that is widely found throughout the south east of Queensland is Tetragonula carbonaria. They are a small, unassuming black bee that make their homes in the trunks and cavities of trees and hollowed logs, their spiralling mass of resin and honey, a wondrous natural work of art. Native bee honey is called ‘sugarbag’ honey. It is a little more difficult to harvest than conventional honey, and the process does damage the hive, so Chris has developed methods to minimise damage to both the hive and the bees and to make harvesting a little easier. The honey itself has quite an intense tangy flavour, taking on the properties of the native flora from which it is harvested – and they love macadamia flowers this time of year. Due to a higher natural moisture content, sugarbag honey is prone to fermentation, which contributes to the flavoursome tang of this highly nutritious and medicinal ambrosia of nature. Sugarbag honey is also a little rarer in that only one kilogram of honey is produced per hive per year, compared to upwards of 20kg from a conventional hive depending on conditions. While Chris recently supplied sugarbag honey to chefs for the Noosa Food and Wine Festival, he is focusing on the medicinal properties of the honey as well as education, with some exciting plans and workshops on the horizon. A collaboration with Kabi Kabi local, Lyndon Davis, will see them exploring the indigenous history of this precious little native bee and its interwoven connection and importance to our environment. Meanwhile the best thing you can do for your garden is cultivate beneficial flora, and have your own native bee hive – Chris is only too happy to share his knowledge on how.

e all have a story to tell of a mulberry tree from our childhood, laden with those plump purple berries that are found in abundance in many backyards. Blue stained lips and fingers, often the telltale

wonderful flavours from your childhood, now is the time to indulge. Traditional favourites like mulberry jam, mulberry ice-cream or a luscious mulberry tart are at the forefront of my mind. But there is nothing quite as exquisite as a some local brie, topped with some mulberries and a drizzle of honey, and a glass of wine to celebrate the coming of spring. Peter, a dentist, strayed from his specialist field to cultivate their stock of mulberry trees from cuttings. From the first plants cultivated three years ago, the expansion continues, and there are now over 600 trees at various stages of growth and more in the making as every season comes to pass. Mulberries are a fragile fruit, so care needs to be taken with handling, and the primary season lasts just one month, which gives us all the excuse we need to indulge, and indulge well while the season is on! am a mother of two children and our third child is due in November. We recently spent 3 months on the road in our caravan travelling and relocating on a one way half lap from Perth in Western Australia to Noosa.

I have a background in fitness. I have been attending gyms and jumping up on stage for as long as I can remember, but it wasn’t until 2006, when I did my Les Mills Body Combat training that things got a little more serious. I then trained in Body Pump and became a Personal Trainer and well… as they say, the rest is history! I love motivating people. I love helping people. I love seeing people fall in love with themselves again and liking what they see. I love helping people understand that it isn’t just about exercising like a maniac at the gym and what you eat is what counts the most! I love seeing people change, grow and feel stronger, healthier and happier. I love educating people. That is a whole lot of love! I also love educating mothers like myself how to remove toxins and processed foods from their homes, creating a healthier environment for the whole family. Our supermarkets are full of rubbishy convenience foods and toxic health, beauty and laundry products. I have not always been this health aware. I have always been bought up to be active. My parents did a fantastic job at that. In fact, my father is 71 and still heads to the beach every morning for a surf or ski paddle and Mum is out of the house by 630am to walk the dog and then head for a swim. However, at around the age of 17 I was in serious trouble and was hospitalized with Anorexia Nervosa.

to get back on top of the world both health wise and emotionally. I don’t exactly recall the turning point but something clicked. I think deep down I was sick of wasting my life away. Over 10 years passed and I still had no chance of having children. The doctors wouldn’t even give me IVF and my body just was not working, not responding to other treatments, so was left undiagnosed. I began cutting out refined sugars, artificial sweeteners and many processed foods. I started reading more about how good food can support everything from your mental health, endocrine and immune systems and decided that most colours, numbers and preservatives had to go from my diet. By miracle I fell pregnant with my first child in 2013 and my second in 2016. What an absolute blessing. After each child was born I made more changes in and around the home to give us all a better chance of being healthy and staying above the wellness line. I began using beautiful essential oils and low tox products by Young Living around our home and within months halved our chemical use in the home, which was really exciting.

I was in and out of hospital for 4 years, hitting rock bottom at 20 years of age and 27 kilograms. I suffered heart failure and my parents got ‘that call’ and from there I went slowly all the way to 80 or more kilograms. It took a long time to get my head around eating, balance and reality.

As a chocoholic, I knew there had to be a healthier way to get my sweet fix so I began experimenting in the kitchen with healthy ingredients creating tasty and nutritious slices, bliss balls and chocolate based treats. I have now created hundreds of recipes of my own and share them via facebook, instagram and online with 6 E-books now available.

After many years I finally got the balance right and started to love myself again. It took a long time to accept who I was and to begin working on myself from the inside out. I was a smoker, so finally kicked that habit too. I was told I would never have children and I lost so many friends from being so unwell and isolated myself so it was time

So this is my story, promoting health, healthy eating and balance! Love yourself! We all get one shot at living (well in my case two!). Make it a good one! Live well, eat well, nourish your body, love your body and know that most of the time it will love you right back, if you treat it well.

Would you like a recipe that is healthy, easy, delicious and loaded with nutritional benefits all in one? I promise you will love it! I began creating healthy sweet alternatives about 7 years ago when I started to cut out a lot of processed foods, sugars and artificial sweeteners in a quest to be healthier, increase my chances of having children and living a longer and happier life. I was a self confessed chocoholic (eating Easter Eggs until my teeth hurt!) and knew there must be a better way to satisfy my sweet tooth more naturally. This recipe is loaded with flavour, richness, just the right amount of sweetness and will leave you guessing if it is really actually good for you or not!

Let’s have a look at the break down of the health benefits of our Jaffa Bliss Balls. Cashews: Contain high levels of iron, zinc and magnesium. Magnesium protects against high blood pressure and supports healthy muscles and bones. Contain monounsaturated fatty acids that promote healthy levels of good cholesterol in our bodies. Dates: Are high in fibre. Fibre is great for your digestive health by preventing constipation. Contain lots of disease fighting antioxidants. Are an excellent natural sweetener. Coconut: Is cholesterol free and low in sodium. Is a great source of minerals and fibre. Orange peel/Orange Essential Oil The orange skin has 3 times more Vitamin C than the flesh. The essential oil found in orange peel is made up of Limonene, a naturally occurring chemical that has been studied for its antiinflammatory and anticancer properties.

Jaffa Mini Bliss Balls

Ingredients: 1 cup soaked pitted dates 1 cup raw cashews (or ¾ cup cashew meal if your food processor isn’t up to it) 1 cup desiccated coconut 1 heaped tbsp. rice malt syrup 2 large oranges, finely grated rind only OR 8 drops of Young Living Tangerine or Orange Essential Oils 1 ½ tbsp cocoa powder 100g of melted dark chocolate (85% and over is usually dairy free/ vegan) Method: Soak your dates in a bowl of hot water for a few minutes to soften them, then strain and place into food processor or Thermomix. Add in cashews and coconut and blitz on a high speed for approximately 10 seconds to achieve a fine crumb consistency. Place into a mixing bowl and add rice malt syrup, cocoa powder and orange peel/essential oils, mix well and then taste. You may like more chocolate or more orange in your bliss balls. To check if your mix is ready to roll, press a heaped teaspoon amount in the palm of your hand. It should stick together. If it is a little crumbly, add a little more rice malt syrup. Press heaped teaspoon sized amounts in the palm of your hand, squeezing together and then form into balls by rolling gently. Place onto a baking tray lined with baking paper and freeze to set for a minimum of 20 minutes. Melt your chocolate in a double boiler on stovetop. Once balls are set, drizzle with chocolate and reset in freezer for a further 5 minutes. Store in an airtight container lined with baking paper in the freezer. There is nothing better than setting out early on a beautiful day for a drive to the country. One place to visit is beautiful Kenilworth, only 40 minutes from Noosa...

I

t’s always a good idea to pack an overnight bag when you venture out along the country road to Kenilworth, with thoughts of generous serves of country food swimming around your mind; and dreams of shopping in the cute township - and perhaps deciding to stay overnight and do the same thing all over again the next day. There’s so much to see and do in the town with its multifaceted array of cute boutiques, cafés, restaurants and bakeries, and of course, the country pub! And throughout the year the town plays host to some great events, a Kenilworth ArtsFest; Cheese, Wine and Food Fest; Sunshine Coast Ukulele Fiesta; Kenilworth Show and Rodeo, Campdraft; Quilt and Craft show and so much more. As I’ve wandered around the township talking to the locals, traders and visitors to the area, one thing has become apparent. The people who come to Kenilworth love the true country feel of a warm welcome, helpful and willing service - and the prospect of one-on-one communication, so lacking in big city shops and venues. The region is also a drawcard for those looking for a true country experience, with a good selection of B&B’s in the area, as well as natural wonderlands for campers to explore and enjoy. And, for those looking for a ‘farm to plate’ experience. On the edge of the shopping precinct, sits the iconic Kenilworth Dairy, Established in 1950, as one of the many rural chefs factories owned by the Kraft Corporation, until in the late 80s, when Kraft moved to centralisation and closed regional factories. At that time, two employees and a local businessman decided that perhaps some of the workers could buy the factory. And they did, renaming it to Kenilworth Country Foods, now Kenilworth Dairies. Now, times have changed - new owner but the dairy is still a local attraction for lovers of fine cheeses, yoghurts and the like. With an onsite café serving fresh lunches, morning and afternoon teas in the undercover entertaining area and surrounding gardens.

NS Sunshine Coast Art Trail

Outback revisited MICHAEL NICHOLAS FINDS THE OUTBACK FULL OF INSPIRATION FOR HIS PAINTINGS. THESE ARE NOT JUST BEAUTIFUL RENDITIONS OF STRIKING LANDSCAPES, BUT IMPART THE POWER OF THE LAND AND WHY IT HAS SPIRITUAL CONNECTIONS FOR SO MANY. And as with all good artwork, this passion is evident in the images and the inclusion of birds from brolgas to cockatoos, bring it completely to life. Michael is keenly in tune with his instincts and has strong personal spiritualism, which combine to bring a tremendous depth to his art. Michael was born in the UK in 1942 and emigrated independently to Australia aged just sixteen. He found work in mining and similar jobs, taking him to some remote areas which immediately captivated him. Joining the Queensland Police Force, he was posted to Cunnamulla in the west of the state where within days he met his wife; forged a life-long connection to the town and soon re-discovered his love of drawing and painting and decided that he would go back to college to study art. His career as a professional artist was established in the 1970s and went from strength to strength including being the Government appointed artist in residence at Girraween National Park, Qld. In 1995 a book called ‘I Love a Sunburnt Country’ was published, in which Michael illustrated Dorothea McKellar’s iconic poem ‘My Country’ to stunning effect. Around this time, he also took a couple of trips to the UK and Europe to experience the wealth of art galleries and collections there. Amongst many art awards, Michael was the winner of the Queensland Art Gallery Trustees Prize in 1982, which it transpired was the final one of these awards. This means that there are two of his works in the State collection, as well as in numerous regional galleries and major corporate and university collections.

In 2000 the Queensland Government commissioned Michael for a portrait of former Premier, the Hon. E.G. Theodore, for Parliament House and this led on to an entire project to paint all of the Premiers from 1860 to 1946, as well as several contemporary parliamentarians, including then Premier Peter Beattie. Portraiture became a major part of his work for both organisations and individuals, but following his intuitions Michael also completed poignant and expressive religious images and even a series of four bronze sculptures for a heritage walk in Brisbane. This breadth of talent keeps his artwork fresh and intriguing and he even fittingly designed ‘The Cunnamulla Fella’ which stands proudly in 2.5 m of bronze in Cunnamulla, forever cementing his ties to the town. Michael put his art ‘on hold’ for several years while he nursed his wife with a terminal illness. He has subsequently steadily regained his passion for painting, especially the remarkable scenery and bird life of the outback and has recently painted a whole new exhibition entitled ‘Outback Revisited’. And revisiting the bush, specifically Cunnamulla, has been significant in many ways, not least of all meeting his new partner there, who shares his deep understanding of and respect for the rural way of life and attachment to the very land itself. This collection of paintings reflects the essence of Michael’s art. There is a light and freedom in elegant brolgas in flight, bringing serenity, while a group of emus foraging below a rocky mesa, show a quiet reality. There are fabulously aged gum trees, gnarled and misshapen but beautiful, and put into perspective by passing flocks of black cockatoos or graceful egrets. These are everyday snapshots of the outback, but they convey the vastness and yet intricacies of this incredible landscape, as seen through the eyes of the artist. This allows us all to share the delights of the searing reds of boulders as much as the subtle, but alluring, grey/ blues of a brolga’s wings. It is easy to see the enduring bond Michael has with this land and why it continues to be his main artistic inspiration. n old London dealer friend, Johnny Barkes, sent out a massive Glover oil to his brother Edward, a Sydney art dealer. Edward in-turn placed it on consignment with Christopher Day, just after he moved into his new gallery in Paddington. I walked in to say hi to Chris, and came under the spell of a massive late Georgian masterpiece, around 5 feet X 8 feet in its frame. A doe-eyed cow stared out at me from the canvas, but it was the detail of flowers and foliage painted as fine and detailed as the foreground of any great Albrecht Durer. That just blew me away. The following year, when the doyen of Melbourne art dealers, Joseph Brown, offered me some cash and a Glover oil and a superb mintcondition Glover watercolour for a small Eugene Von Guerard oil of a Victorian station property, there was no way I was leaving his Collins Street Gallery without them. The Bristol Channel and Chepstold oil, and superbly conditioned and super fine Lake watercolour (illustrated here), were the two works. Although the Tasmanian output of Glover fetches the big money (he arrived here in 1831 aged 64yrs). His best and finest work is obviously his British and Continental works, done in his 30s, 40s and 50s. Leigh Murphy

ONE OF NOOSA’S MOST SIGNIFICANT AND ICONIC FREE ENTRY CULTURAL EVENTS, ‘FLOATING LAND’, RETURNS TO THE SUNSHINE COAST THIS OCTOBER IN ITS 10TH ITERATION SINCE 2001.

F

irst conceived as a biennial outdoor sculptural program - the first environmental art event program of its kind in Australia - Floating Land has continued to grow in reputation, cementing itself as an integral part of Noosa’s distinguished events calendar. Throughout its two-decade history, Floating Land has maintained a significant presence at the tranquil location of Boreen Point. Picturesque and peaceful; Boreen Point’s close-knit community has firmly embraced the event since its inception like a warmly welcomed friend. Installed along the foreshore of Queensland’s largest natural saltwater lake, Lake Cootharaba, will be multiple standalone installations poised to be

Kris Martin and Gabrielle Quakawoot’s canopy of bamboo stars; a plague of shimmering coral-like pods by Art forARTSake, and Karla Pringle and Ross Annels ceremonial sound synthesising platform are just a few of the thought provoking works created specifically for the event. Under the leadership of artist Leonie Barton who is known for her daily ritual of still-life compositions made from found objects, the art trail emphasizes the evanescent quality of these intricate works. Purposed to return to nature from whence they came, the art trail is intended to scatter and disintegrate, eventually leaving no trace of its existence. For the first time, Floating Land 2019 will also have a compelling presence at Noosa National Park. Visitors to this popular natural attraction will be presented with a unique opportunity to encounter art as an incidental experience while exploring the stunning landscapes of beach, surf and forest just meters from the bustling luxury of Hastings Street. Interdisciplinary artist and Wiradjuri man Brook Andrew, the first Indigenous artist to be selected as Artistic Director of the Sydney Biennale in 2020, will also feature at Noosa National Park among other places. His ongoing Travelling Colony project- a series of dazzling hand-painted retrostyle caravans resulting from a collaboration with local artists from the Noosa community, feature patterns that echo the marks Wiradjuri men painted on their shields. Engaging with Indigenous displacement, consumer culture and museum practices, the caravans will be used to present video recordings of Kabi Kabi / Gubbi Gubbi culture developed through an oral history project led by Noosa Council’s Heritage unit. Returning to Floating Land is projection artist James Muller, who like others featured in this latest iteration, has exhibited in previous Floating Land events to great regard. Muller’s epically scaled video projects majestically transform surfaces. For Floating Land 2019, his work will bring visually rich and profound stories of place to the natural environment via an outdoor cinematic experience. Floating Land’s 2019 by-line ‘point to point’ is an acknowledgement of the two anchor sites for this year’s event, but also a statement of provocation. Like the artists who have been invited and encouraged to develop projects that engage thoughtfully with the notion, audiences too will be encouraged to consider the way they move through a space, understanding that every journey leaves a mark. It is literally ‘that time of year again’, time to pack away your beanies and boots for another year as we bid a fond farewell to the dry, crisp, clear winter days… summer is here, or will be very soon.

H

ow do I know this (other than the obvious)? The number of patients swaying through our doors, affected by tick paralysis has exponentially increased in the last fortnight.

hind-leg weakness, difficulty standing, wobbly walking, inability to get up, respiratory difficulty and can progress to respiratory failure within a few short days. This time of year is a very dangerous time for our pets as the weather warms and the tick numbers rise amongst a population of very naïve canine and feline hosts. We, however are not naïve, ticks kill companion animals and they are not selective or seasonal. We need to be vigilant as we have the means to minimise the risk of our pets succumbing to ticks, •The first step is to check your pet daily (especially around the head and neck, ears and mouth but do not neglect the extremities). A thorough all over/ head to tail check is advised. •The second step is to consider the use of a tick preventative. I appreciated that this is a very sensitive area as social media documents the number or adverse reactions to these products and some of you have experienced this first hand… but ask yourself which is worse, the paralysis effects of the tick on your pet of the chance that a reaction may occur and undertake a thorough risk assessment taking in to consideration your geographic area and the density of the known tick population in that area, the coat on your pet, the size of your pet and your diligence in carrying out a thorough daily tick search. •The third step is to be informed on the signs and progression of tick paralysis, they should not be dismissed. Removing the tick does not stop the progression of the paralysis as the toxin, it is known to progress/continue for up to 48 hours after the tick is removed. If your pet is showing any signs that support tick paralysis please contact your veterinarian (even if you cannot find a tick) as it is important that we examine and treat your pet with tick antiserum as soon as you notice your pet is unwell.

The Ixodes Holocyclus tick is a relentless adversary whose neurotoxic effects incite an ascending paralysis. This particular tick is carried by our native species (who appear to have a degree of immunity), and it does not discriminate between cats, dogs or humans. So if you live in an area inhabited by native species there is a risk of your pet becoming a host to this parasite. The clinical signs of tick paralysis include retching/vomiting,

s he begins his third decade as a full-time artist, Michael also begins the next chapter in life and work. With a beautiful new studio in Sunshine Coast’s calming hinterland, he finds daily inspiration in the light and nature surrounding him. With his mind free to wander and his brush relaxed and ready to flow, Michael’s new paintings reflect a deeper maturity. Bold movement, big brush strokes and the use of materials such as bitumen for the tension it builds has defined his abstract style to date so we asked how this latest series, Panorama, differs from previous work. Michael said: “Panorama builds directly from previous work rather than differs from it. It evolved from techniques developed after a visit to India several years ago when I produced paintings inspired by the colour and subtle texture of the stunning stone structures, the earthy colours and the many dry lake beds. I wanted to convey the feel of the place in the work so this time I’ve layered in the shimmer of subtle light and purer washes of warmer colour to convey how I feel in my new location. To me the sheerness makes the paintings feel lighter and richer than previous works and I am enjoying the new direction.”

Vlad and Kylie Kis... Our Story

I

t all started back in 2006 when the couple spotted a raw slab of 180-year old Australian Red Cedar at a Woodworking Expo. “Vlad was looking for a table to create in memory of both his father and father-in-law who had passed away,” Kylie said. “He turned the rough slab into a stunning coffee table – a family heirloom.”

For Vlad and Kylie Kis, a table is much more than a flat surface. It’s somewhere people gather and memories are created. Vlad is a carpenter with 30 years fit-out experience, and a passion for solid timber joinery, building furniture using recycled, salvaged timbers and slabs. His first factory opened in 2006 with his organisation and team servicing many commercial and residential locations throughout Sydney. After relocating their young family to the Sunshine Coast for a healthier work life balance, the entrepreneur couple minds started planning with Kylie completing her executive MBA at the Sunshine Coast University and Vlad registering for the Maleny Wood Expo. A new business was born with numerous custom orders coming from the Maleny Wood Expo. The duo have suppliers all over Australia and are ready to build and service the Sunshine Coast. Vlad is currently working with a local client, using their own timber slabs to build a family dining table, office desk, front door and various other detailed joinery items. D

on’t stop to count the spots, just SWIM!!!” shouted Shelley, our marine biologist guide. I kicked my fins and began swimming alongside the Whale shark – the biggest fish in the sea. Finning along, parallel with its pectoral fins and just a few metres distant, I watched as it gulped in huge quantities of ocean, and saw how its gills rippled as it expelled the water, sieving plankton through its gill plates. Sunshine spangled the thousands of white spots – like blotches of paint – along the eight metres of its back and steel-grey flanks. Its huge, perfectly-muscled body barely moved as its tail – taller than a man – propelled it with a lazy but relentless efficiency. I swam alongside, close enough to see the details of its spots, then pulled back to get the mind-boggling perspective of its size compared to my fellow swimmers. Eventually – after around 15 minutes – Shelley called, ‘”Stop swimming!” and eight swimmers in the middle of the ocean came together, laughing and gasping in awe. This was the opening scene of a six-act performance, hosted by Whale shark swim operator, Live Ningaloo, with half a dozen sharks as protagonists. We’d set out early from Exmouth on Western Australia’s remote coast, driving 20 minutes to Tantabiddi boat ramp. On boarding Wave Rider, Live Ningaloo’s custom-designed boat, the crew had given us a safety briefing and the lowdown on how best to interact with the behemoths we’d come to see. Although they grow up to 18 metres in length, Whale sharks are filter feeders, mainly eating plankton and anchovy-sized baitfish: they’re harmless to humans. Nevertheless, swimming with an eight tonne fish has its obvious hazards. All 11 Ningaloo shark swim operators abide by some of the strictest tourism guidelines in the world, designed both to protect swimmers and minimise disturbance to the sharks. Swimmers can snorkel alongside the sharks but must not approach within three metres or forward of their pectoral fins, and must remain at least four metres behind the tail. A maximum of 10 swimmers can enter the water at a time. Most operators take up to 20 guests, dividing them into two groups, which take turns swimming. In contrast, I chose to go with Live Ningaloo as they take a maximum of 10 guests, which gives each guest every opportunity to swim. After a preliminary snorkel to test our masks, during which we saw a sleepy green turtle, we motored out past the reef to deep ocean, spotting Common and Australian Humpback dolphins along the way.

orking with the Bespoke design and colour development team at the Home of RollsRoyce, Goodwood, Mr. Fux challenged the designers to match the exterior colour to a vibrant orange ladies wrap that caught his eye in South Florida. He purchased the wrap and had it delivered to the Rolls-Royce Bespoke Collective. Working together for nearly a year, the teams delivered the perfect surface application of more than seven layers of finish polished by hand for multiple hours in the Surface Finish Centre.

The exterior even features black Cullinan wheels and pinstripe wheel centres in the bright ‘Fux Orange.’

The carefree nature of the area is mirrored by the gentle wings of the pelicans and seagulls, as they soar high above before coasting in to the shoreline in search of the prime position for sleeping or checking out the chance of catching a fish down below; as those wishing to spend some time on the water hire kayaks,

paddle boards, small boats and pontoons from the local boat shed operators. If not so inclined, you can still enjoy the river by hopping aboard the ferry for a leisurely cruise. There’s even a sunset cruise available at The Jetty, where you can take a bottle of wine and a few nibbles along for the ride. The ferry provides glasses for you ease. Noosaville has always been a must-visit destination for great shopping and dining possibilities - and now it’s getting even more exciting. There has also been an exhilarating number of new restaurants opening in Noosaville to join longtime favourites like Flux and Thomas Corner , Noosa Boathouse and Waterfront. My wife, Councillor Ingrid Jackson, has just announced she won’t be standing for another term on Noosa Council. This will disappoint the many people who have commended her efforts to improve transparency and governance in the Shire. “I will look back on my brief political career not with undiluted affection but as an important time in my life when I sought to make our community a better place and contributed what I could to doing just that,” Cr Ingrid says. RICHARD (he’d be embarrassed if I mentioned his surname) is a neighbour, a prominent figure in the local community, a true humanitarian and a man of irrepressible good humour. I occasionally 112

run into him on our morning walk and Richard is always carrying a bag in which he collects discarded bottles, the proceeds going to charity. He was inspecting the love locks on a Noosa pedestrian bridge the other day when a passer-by jocularly called, “Don’t jump!” “Round here I’m much more likely to push,” Richard riposted. NOOSA Council, guardian of everybody’s favourite holiday spot on Queensland’s Sunshine Coast, is threatening to erect a ‘no vacancy’ sign, claiming that overtourism has become a burden. Even though Melbourne trams still bear huge ‘come join us’ invitations, mayor Tony Wellington says the Shire is having trouble managing the number of visitors. He told the Sunrise TV program there’s ‘growing resentment’ among residents as tourists, some of them quite poor, flock into town and stickybeak for free. It must be getting serious: locals complain hardware stores have sold out of pitchforks. OLD NOOSA. From a letter to the editor of the Maryborough Chronicle, Wide Bay and Burnett Advertiser, 1 November 1877: “The township consists of a small, narrow ridge, containing in all about 45 or 50 acres of ground and the lake on both sides. As to bathing - O Christopher! - that is out of the question. You would not be safe one minute for sharks of the worst kind. Then, Sir, as to the general residents, there are about 13 all told, who, I am quite sure, would live comfortable and happy were it not for the tendency of human nature to poke its nose into other folks business.”

MORE OLD NOOSA. “There are three or four land dummiers [fraudulent land salesmen], a sawmill proprietor or two, a couple of publicans, a commission agent and grammar schoolteacher, whose elegant attainments are lost amid the rude bull punching associations of the place. Now, Sir, I think I have said almost enough about Noosa this time, but if you should have cause to go to Brisbane, by way of Noosa, I trust you will not be stuck on a sandbank for three days as I was the last time I went down.” SEVENTY years ago this month, along with my mum, dad and baby sister, I arrived in Sydney on the SS Georgic so beginning our relationship with Australia. Over the succeeding years, various other branches of the family followed so that, today, half the clan lives here and half in the UK. The Georgic, the last ship to be built for the White Star Line, had been bombed in World War II and I have a photo of it semi-submerged in the Red Sea before it was refloated, towed to Bombay, given a strong steel band to hold it together and pressed into use as a migrant ship. It completed only a few voyages before being despatched to the wrecker’s yard in Japan to reappear as razor blades.

USHFIRES at Peregian in early Spring signalled the start of a hot and dangerous summer in Noosa Shire – enough to make even the most hardened climate change denier think twice. However it was more than the fires that concerned emergency service personnel. One of my field agents, anxiously eyeing the red glow nearing his home, was told by a police officer that the dislike Sunshine Coast and Noosa councils have for each other had resulted in mixed messaging as they made uncoordinated public pronouncements about the fire. The phony war between two adjacent local governments continuing to swirl even in the most trying circumstances.
