Special guest Sydney Fashion Blogger - Antoinette Marie was eager to join in the festivities and loved the Noosa vibe, as she joined Secrets Managing Director and Co-Founder, Jane Meredith in making the rounds of the guests throughout the night for 'selfies'. Local jazz band, Corcovado Duo set the scene as they played under the magical and iconic Hastings Street fairy lights. Popular catering company The Rolling Dolmade were unhand to provide guests with a tempting array of fine foods and desserts to complement their seemingly endless glasses of bubbles. True Noosa style was had by all!

Summer's here and the living is easy… Once again I have blinked and the last twelve months have just faded away. Christmas and the Festive season is almost here, and, as in previous years I am unprepared. The brain can eventually use protein and fat if there are no stores of carbohydrate, but this is very inefficient and places stress on the body. Without them, we can’t think, can’t create, can’t retrieve memories or regulate our mood. That’s why we become moody when we don’t have carbs. Having met whilst chefing and waitressing in Brisbane respectively (Tara used to make excuses to go and work in the area of the kitchen where Jeff was stationed so she could eye off her future husband over the big soup pots), Tara and Jeff are certainly passionate and knowledgeable when it comes to eating well. Even holidays revolve around trying out new dishes and new restaurants, with LucyBelle, their four-month-old daughter, now by their side. “Both Jeff and I went in to our careers to help people live a healthier happier life. People might be surprised, but we eat cake, chocolate, and more cake! The perception is that we eat lentils, mung beans and green smoothies, but it’s far from the case. We enjoy all foods and have a wonderfully healthy relationship with food. And this is important. “What we strive for is to use food to provide happiness – fresh, whole foods, which make you feel good because you have chosen to eat healthily, and because they contain vital nutrients which your body needs to create balance. And if you are active and a healthy weight, and want to eat a row of chocolate on a Friday night – go for it! Chocolate can be good in such a situation, as it gives pleasure.“

• Find out what eating pattern makes YOU happy and work with that – There is no point being on the latest mass produced eating plan that all your friends are on if it makes you cranky and tired. • Eat lots of fish – Fish is vitally important for our brain cells. Aim for two to three serves of fish per week. • Consume tahini and sesame seeds – Tahini is a paste made from sesame seeds that contains tryptophan which gets converted to the feel good hormone serotonin. Sprinkle sesame seeds on your stirfry, toss them through your salad, or sprinkle them on top of your banana and wholegrain toast for a power-packed mood-boosting snack. • Snack on bananas – A banana a day keeps the bad moods away. High in calming B vitamins, and also a tryptophan source (which converts to the happy hormone serotonin in the brain), bananas are a supersonic snack. Further, they are a great source of long lasting carbohydrate, which is very important for stabilising mood.

The Noosa International Food and Wine Festival (NIFW) is hitting top gear for the 2015 event, bringing more than 250 of the best in food, wine and lifestyle to Australia’s iconic festival location: Noosa Heads, on Queensland’s Sunshine Coast, May 14-17. This year foodies will have the opportunity of an early Festival program announcement and access to prerelease tickets before Christmas. Tickets will be available from December 12, exclusively to the Festival’s loyalty group, the Chilli Club, which anyone can join, before tickets go on sale to the general public on January 5, 2015. “In 2015 we’re focussing on new trends and spearheading some original new events, such as a Wild Food Dinner, new and exciting food trails, lifestyle discussions, putting the industry’s trending topics front and centre,” said Festival Director, Jim Berardo. Next year’s line-up is bringing together more of what festival goers want; we’re delivering more events on Noosa Main Beach, more

competitors a chance to test themselves beyond the traditional 1km and 2km distances. Choose your own wave start group, find a training partner or friend and take up the challenge together. The main event, Noosa 2.0 (2km) is the main event and will be contended by some of Australia’s most talented pool and open water swimmers. The Noosa 1.0 (1km) short course swim is a perfect introduction for less experienced ocean swimmers in the calm, sheltered waters of Noosa. This 300m Kids Dash is a great opportunity for kids to get involved in open water swimming - it's a free, fun event for kids aged 8 years and older. Every participant receives a Finisher's Certificate signed by event ambassador Michael Klim. In the Teams Charity Relay, teams of three will go head to head in a 3 x 300m course with celebrities and multisport athletes from around Australia, including Michael Klim. All groups, including corporate teams, swimming clubs and training squads are encouraged to enter and all proceeds from entries will go to the winning team’s charity of choice.

iselle Alford was nurtured by nature and parents who understand the importance of living well. Her father Gary Martin is a naturopathic doctor, his focus on lifestyle and natural healing has helped turn around the lives of thousands of people. Gary co-founded Living Valley Springs Health Retreat on 145 acres of pristine countryside in the UNESCO listed Noosa Biosphere Reserve in 1990. It is now Australia’s leading wellness centre with a team of 50 plus personnel. Giselle shares her father’s passion for life balance and natural nutrition. She was appointed executive manager of the retreat two years ago but she didn’t step into the top job by accident, she did the hard yards in the family business from the tender age of 15. “I grew up on the property so it is our home as well as our business,” she says.“We moved here from Sydney when I was 10 and set up the retreat with three other families, it was quite a commune. We were home schooled but at 15 years of age I decided to join the workforce. “I had always helped in the organic vegetable garden and worked

alongside my mother in the kitchen. In the early days we were vegan and later became vegetarian so I knew the importance of creative cuisine. I was ready to try my hand at producing nutritious meals that would satisfy our guests.” Giselle designed and supervised the construction of the kitchen. She developed the menu, produced the first Living Valley Springs cook book and worked as a nutritional consultant in a number of health food stores. In 1998 she was contracted by

the Sheraton Hotel Group to demonstrate her unique style of cuisine to their chefs. She then established a Living Valley Springs buffet in the Sheraton Brisbane. “The healthy buffet proved to be a great success with Sheraton guests. I was slightly intimidated by the massive kitchen and the professional chefs, I don’t think they were impressed about having an 18-year-old girl telling them how to prepare the recipes,” she says. Giselle has worked in every section of the retreat from cleaning and maintenance to reception. She studied beauty therapy, remedial massage and set up this section of the retreat. At 19 years of age Giselle married and for the next 10 years took a step back from the business to focus on raising her three children.“We live on the property so we are always involved but we have the benefit of a healthy lifestyle and one of the rewards is energy,” she says. “Living Valley Springs has helped thousands of people overcome everything from addictions, arthritis, allergies, asthma, diabetes, obesity, depression, MS, chronic fatigue syndrome, infertility, prostate problems and other illnesses. Comprehensive, yet simple and effective health programs restore wellness and energy, people are educated and empowered. “I want to bring this to the wider community and now cover a school program on healthy eating. It isn’t complicated or expensive; I focus on eight laws of health. The first law is good air. Clean fresh air that is free of pollutants is our birthright. “Water is an essential element. Drink six to eight glasses of water a day and introduce hydrotherapy into the daily routine. This can be as simple as finishing a hot shower with a cold shower or taking a swim. “Sunlight is important. People have become afraid of sunlight but 15 to 20 minutes a day of sunlight on the skin will improve vitamin D levels. This is important for a number of reasons including healthy bones.

“Rest is essential; early to bed and early to rise is a wise old rule. We all need eight hours of sleep each night. Sleep before midnight is the most beneficial. We are designed to go to sleep soon after dark and wake up at dawn. The closer we can get to this the better. “Nutrition is very important. We are what we eat; nobody can survive on processed food, sugar and damaged fats. An eating plan based on low carbohydrate, high protein and good fats leads to good health. “I am now working on a new book with a 21 day plan that everyone can follow. It has immediate results in health, vitality and weight loss. The principles are similar to the Paleo diet. “The power of positive thinking should never be underestimated. Attitude is divine power; positive people attract positives in their lives. 9 Tips your naturopath wants you to know‌ about flawless skin and how to prevent the appearance of wrinkles. Will Shannon, shares his insights into how to prevent the appearance of wrinkles and get flawless skin at any age. "We seem to be on an endless search for skin perfection. What few Australian women realise is that flawless, wrinkle free skin is achievable without the need to blast your face with chemicals," Will says.

1. Use Jojoba Oil. Jojoba Oil is golden with little odour as it comes from the Jojoba Seed which makes up about 50% of the content. It can be used as a makeup remover, a lip balm and occasionally as a hair treatment. Massage in Jojoba Oil into any dry spots for some extra hydration.

2. Take Magnesium. Magnesium is a muscle relaxant, sometimes used to relive constipation and also in cases of people suffering depression. It will help release the muscles holding chronic states of tension, which in the face, will reduce the signs of wrinkles.

3. Drink Water. Although an easy one, you must drink at least 2 litres of water a day. We breathe out half a litre of moisture a day, and our bowels need 1.5L of water just to function properly each day.

4. Take Circulatory Supplements. Cayenne pepper, ginger & garlic are all good for the skin as they drive circulation around the body help to prevent cold hands & feet. Use such supplements to boost your memory, as it is difficult for the heart to drive blood (against gravity) to the brain, and are very good for the skin. Nervous states shut down peripheral circulation which will ultimately have an effect on your skin.

5. Avoid Botox. My advice would be to avoid Botox as it is the

most deadliest poison for the skin. Your body needs to eliminate the poisons via the blood stream which can potentially cause more health challenges. Botulinum toxin is from a bacteria that used to grow in rancid meat. It inhibits nerve function, and hence the nerves that control that muscle can't fire. Botox dampens the muscles that fire in the face to produce emotion, hence you feel, and look, less emotional.

6. Get Rest/Stress Less. Meditate, enjoy your time with friends and family and get proper amounts of rest. Resting and stressing less relax the nervous system which in turn allows the body to get into deeper states of relaxation to heal itself - letting your skin bounce back quicker each day.

7. Take Horsetail. Forget inorganic silica, take horsetail herb which is full of copious amounts of horsetail making the skin, hair and nails very bright. Horsetail has traditionally been used by herbalists and it's great for the kidneys and for flushing excess oedema (fluid retention) away safely and naturally. Even if you don't have fluid retention take it for a safe, and naturally healthy glow.

8. Use a Dry Skin Brush. The skin is sometimes called the third kidney and has to eliminate 1 billion skin cells a day. Brush the dead skin away to reveal a cleaner layer underneath. Brush towards the heart every day in the bath or shower to give your skin a helping hand.

An adventurer who has devoted his life to humanitarian causes around the world, Tim Humble is now looking to equip fellow wayfaring beardsmen for the road less travelled, as Coco Seymour-Griffin discovers.

Tim Humble is a non-conformist, a thrill seeker, a lover of humankind. He is also the proud owner of one very rad beard. A humanitarian assignment photographer serving the needs of international NGOs (non-governmental organisations) and causebased initiatives, Tim grew up as a third culture kid in Papua New Guinea, living there for a total of seven years.

A

s a result of his time in PNG, Tim cultivated a lifelong interest in crosscultural communication and an affinity with people from various backgrounds, not to mention a compulsive nomadic streak. A renegade? That’s Tim, but with a totally sensitive side. This dude is into conscious living in a big way.

Having worked in countries spanning the South Pacific, South East Asia and Africa, with such agencies as Adventist Development and Relief Agency (ADRA), Metamorphic International and Rotary International, Tim has had a direct hand in helping to improve the quality of life for many. This includes the implementation of such basic essentials as clean water, sanitation, micro-enterprise, health education,

HIV/AIDS awareness and tobacco control – all things we take for granted here in Australia. Producing compelling images of development projects as a humanitarian photographer since 2001, Tim is a kind yet funky individual who enjoys his freedom as much as he enjoys living in Noosa and being a father to his two girls, Sierra (8) and Lilly (9). “My driver in life is to give back,” explains Tim. “With my father a pastor, he worked on various missionaries, and we were always moving around. As a result, I became very open to change and to helping others.” Having been introduced to photography by his father, who used to take slides of the countries and people they visited, Tim was always artistic and altruistic, excelling in art through school and gaining a BA in International Development and Visual Art from Avondale College on the NSW Central Coast. “During my degree course, my college had a link with ADRA, and I was placed with them on a study tour. It blew my mind – the context, the work, the perspective. Later that year, they were looking for someone to provide them with an image for their new brochure, and came to me. This marked the start of my career in aid.” Spending many years in Laos, Myanmar, Thailand, Cambodia, Kenya and PNG, Tim revelled in the adventure and impactual nature of his work – witnessing first hand the

continued from previous page: changes achieved by the charity projects he worked on, improving facilities, shifting poverty mindsets and introducing education. “The water projects were my favourite as they gave such real results within a relatively short space of time. To see the joy on children’s faces as they drank clean water without having to walk for several kilometres to get it, is a vision you don’t forget. One elderly lady told me she felt like she had a river outside her front door after her village’s new well was installed. She couldn’t believe it. All her life, she had never had clean water close by. “Some things are so simple to fix too, it can just be a question of instilling leadership and initiative.

One such village in Myanmar for example, had been suffering an ongoing life-threatening problem every wet season when the village would flood. Due to the sanitation, many would become sick, and kids and the weak would die. After a key figure from the area was trained by one of our projects, he returned to the village and solved the issue by mobilising the community to dig drainage. Having been ignored by their government for so long, it was an incredible accomplishment – that the populace had gone from being passive to proactive. “And in terms of my images, inspiration was all around. I loved capturing people in context to their surroundings. Each picture told its own story.” It’s this adoration of independence from authority that has kept Tim rooting for the underdog, supporting the downtrodden and raging for the minority. And whilst this energy has predominantly been applied to his charity work overseas, in the last year it has taken a little twist, moving closer to home with the formation of his group, 80 Beards and The Wayfaring Beardsmen. A community formed to connect fellow reactionaries, 80 Beards (short for Around the World With 80 Beards) is Tim’s new brainchild, an adventure travel portal serving like-minded, multi-cultural, world curious, non-conformist bearded men who strive to live a life less ordinary. With beards very current at the moment on the hipster scene, it’s a unique proposition for a niche group, but one that offers excitement and experience (both things that Tim craves), while drawing on his skills achieved to date. “Having a beard is the antithesis of the corporate clean-cut image. It’s about being an individual. It’s about being a man. An outlaw? Maybe!” Providing such trips as motorcycle tours and white water rafting in South East Asia, La Tomatina (the tomato festival) in Spain, Octoberfest in Germany, and safaris in South Africa, Tim aims to integrate his experience in travel, adventure and photography in order to bring a unified buzz of mini-revolution to the fore. It’s a welcome challenge to the traditional version of success. “As Mahatma Ghandi said, ‘Be the change that you wish to see in the world’. Embracing difference is good. Helping others is essential. Being grateful for all that we have and all that we are, is imperative. We have opportunities that many do not have. We must seize the day and make the most of every minute. FIB # 1: Eating Carbs at night will make you Fat FACT: As one of the most controversial food groups around, carbohydrates rarely get a good wrap! Manly people believe that eating carbs at night is a real ‘no, no’ but Emily insists this is not the case, “eating carbs at night won't make you fat, nor will it stop you losing fat, it all comes down to what you eat and how much you eat each day,” she said. FIB # 2: Long, slow Cardio Sessions are the best for Burning Fat FACT: Contrary to popular belief, embarking on a long slow cardio session is not the best way to lose fat. Rather, Emily insists that High Intensity Interval Training and weights are the way to go.“Weights and high intensity training for a shorter period of time is definitely the most effective way to burn fat. You’ll burn fat for up to 24 hours after you finish training compared to only around an hour or two after slow cardio,” Emily said. FIB # 3: If You Want to lose fat - then eat Less! FACT: “When it comes to getting your fat percentage down, you don't necessarily need to eat less, sometimes you may even need to eat more!” said

Emily. What you eat is so much more important than how much you eat. Giving your body a good balance of nutrients is far more important than the size of your meals. FIB # 4: Eating Fat will make you Fat FACT:“Fat will not make you fat, good fats give you energy, help rebuild cells and helps to produce hormones,” says Emily, who advises that you should avoid consuming saturated fats (excluding coconut oil) and trans fats.“Also avoid low fat foods as they are usually choc-full of sugar and chemicals.” FIB # 5: Women Bulk Up if they Lift Weights FACT: Weights shape and sculpt your body, whilst also burning fat and unless you’re taking some serious supplements, they will never make you look masculine or bulky. According to Emily, it takes a lot of deliberate effort with your training and diet to get even close to bulking up, so unless you’re trying to get bulky, you simply won’t be able to. FIB # 6: You Need to Crunch your way to Rock Hard Abs FACT: Want awesome abs? “You can do all the abdominal work you like, but if you don't eat clean and do full body exercises to remove the layer of fat that covers your abs, then you’ll never achieve the desired definition,” advises Emily. FIB # 7: Strength training is Dangerous FACT: Whether you’re strength training or doing cardio, all exercises are dangerous if they’re not done correctly. As long as you learn proper technique strength training, it is completely safe and a really important part of any fitness plan. FIB # 8: The Scales tell All FACT: The scales only tell you how much your total weight is, not how lean you are. So the best way to track progress is by how you look, how your clothes fit and by taking a measure of your total body fat. FIB# 9: The longer you Sweat - the better you'll Get FACT: When it comes to exercise it’s all about quality, not quantity, says Emily. “Overtraining can actually cause your body stress, and it can even go into fight or flight mode which can cause it to store fat. Focusing on efficient workouts, good nutrition, adequate sleep and rest will give you the best shot at getting the best results. FIB #10: You Burn more fat on an Empty Stomach FACT: This is really a personal preference. A lot of people don't tend to train as vigorously when they have an empty stomach and tend to binge after training. Fuelling your body a few hours before exercising with nutritious food will have a much greater impact on your fat burning potential as you have more energy to push through your workout. Go slowly, connect eyes and breathe. 7. See each other clearly - Take the time to really listen to what they are saying (like you used to do) and get to know a whole new person. 8. Remove your exits - long term relationships can get leaky, where we drain energy away from the relationship. This can result in the 'invisible divorce'. Too much TV, work, talking with friends, focusing on the kids, porn - all of these factors can negatively effect our relationships. 9. Plan a sex date - set up a regular time to be sexual. he Noosa River forms the natural artery through the heartland of the region and provides a haven for safe swimming and waterbased activities. Shady banks provide perfect picnic spots or departure points for leisurely cruises through myriad tributaries, wetlands and lakes that lead to the mystical black waters of the Everglades. Wildlife abounds especially in this protected habitat. Across the river on the North Shore, a four-wheel drive will take you along a pristine beach past the coloured sands of Teewah, the time-worn shipwreck of the Cherry Venture and eventually to World Heritage-listed Fraser Island via a short ferry ride. Closer to Noosa the Noosa Marina is a destination you shouldn’t miss. Christmas can elicit many thoughts and emotions for different people depending on what their perception of the holiday season is. hristmas can be one of the most stressful times of year due to the pressures we place on ourselves to have the “perfect” day. Our expectations, perceptions and the way we manage our stress can change an entire experience from one person to the next. For example, if we have two people thinking about the same Christmas Day lunch. Let’s call them Bob and Jane. Bob might be very excited, thinking “how great is this, the whole family together again, I can’t wait to use the new BBQ”; whilst on the other hand, Jane might be thinking “oh great, I have so much cooking and setting up to do, where am I going to find the time to talk to the family and get everything done”. Suddenly Jane’s stress levels are rising just thinking about the day ahead. The feeling of stress that Jane is experiencing has been triggered by her thoughts about the event (Christmas lunch). So what are some ways of managing stress? It is not realistic to say that we can avoid all stress, however here are just a few suggestions to help you through the holiday season. Firstly, Identify early triggers: Now is a good time to start thinking about what triggers stress for you. This way, you will be able to know early on what strategies you can use if you begin noticing your stress levels increasing. For example, if the thought of being couped up in the kitchen preparing the days food elicits stress for you, consider what other options might help alleviate some of the pressure. For example, delegating tasks, prep-work the day before, asking

others to bring a plate of food, or scheduling in breaks during your preparation time to have a few minutes to yourself. Relaxation: Controlled deep breathing is a simple way of reducing some of the physiological symptoms of stress. To begin, get comfortable (sit, stand or lay down), and take a deep breath through your nose for a count of 3 seconds, hold for one second, and slowly exhale through your mouth for 4 seconds. If you find it difficult to breathe in for 3 seconds, work to what is comfortable for you. Like all new skills, practice is essential. Keep in mind that relaxation does not have to just be about structured deep breathing, it can be anything relaxing for you. Some other suggestions include: yoga, tai chi, massage, listening to music, going for a walk, having a bath or shower, or sitting peacefully. Finally, focusing on what is within your control: As much as we may like to, we cannot control everything that is going to happen these holidays. What we can do though, is focus on what we can control and make the most of those experiences. Remember to look after yourself over the Christmas holidays, get plenty of sleep, stay active and to continue to eat nutritionally between all those amazing Christmas treats. Mikaela Rain knew what she wanted and didn’t hesitate. Graduating from the most prestigious cooking school in the world, and going on to represent Australia in the international arena, she is one high flyer who has the world at her feet. And all at 24 years old.

she has forged. Winner of the 2007 Queensland Tourism and Hospitality Awards when she was just 17, second at the 2009 National Culinary Trophy, and prestigiously awarded high honours (an elite accolade granted to only a handful of the absolute finest chefs) at Le Cordon Blue Cooking School in Paris, you could say that Mikaela has an explosive talent when it comes to food. “My background in food actually began in my grandmother’s bakery under her house in Sydney. After my grandfather [the renowned world champion boxer, Jimmy Carruthers no-less] retired, he and my grandmother, Myra, began a chain of vegetarian health food shops called Carruthers – Food for Thought. This was long before health food was the hip thing. In fact, their stores were just one of two places in the whole of Sydney serving fresh juice – hard to believe these days! “As I child, I would wake up in the early hours of the morning and stumble down to the bakery. I would sit in the warmth of the kitchen and watch my family making all sort of sweet and savoury delights.” It was the best foundation for developing an innate sense of culinary mastership for Mikaela, with a respect for fresh ingredients and attention to detail formed right there and then. Moving to Noosa when she at primary school, Mikaela lapped up the change in scene, and as the family travelled, her exposure to different cultures and dishes further inspired her creative spirit and sense of flavour. “Devouring crab in Hong Kong, and fish fresh from the reef in Mexico, life was an adventure of change and growth. It showed me that our journey in life is really what we make it. We are all capable of creating magic.” Attaining a much-coveted schoolbased apprenticeship at foodie mecca Riverhouse Restaurant (now River Cottage) in Noosa, with chef David Rayner when she was just 15, Mikaela took her first step into her culinary career with gusto. “It was a massive learning curve for me! Writing a new menu every day from the local produce available was some of the best training an apprentice could wish for. I remember on my trial day at Riverhouse, one of the chefs made spaghetti bolognese for our staff meal. I thought it was the most amazing thing I had ever tasted! It was worlds away from any other bolognaise I had eaten before; so rich and flavoursome. After that, I was hooked.” After completing her apprenticeship in two years, Mikaela knew that she favoured working with pastries – the

organisation, precision and artistic nature of pastry-making complimenting her personality. So in a in a brave, courageous and confident move, she looked to the sky and applied to the most illustrious pastry training school in the world. She got in. It was time for Europe. “I packed my life into a 20kg suitcase and bought a one-way ticket to Paris. I didn’t know anyone in France, and could not speak a word of French, but Le Cordon Bleu was calling.” And so started a love affair with sweet treats, which saw Mikaela rise like a star into the stratosphere. Excelling at every stage of the highly intensive course (which was taught in French by French chefs), Mikaela exhibited a natural raw talent which, combined with her artistic eye, created a formidable fusion of flair that proved to be an unstoppable force. Completing the course in eight months instead of the usual 12 (having been accelerated), and smashing every assessment with top marks, Mikaela was awarded an internship at one of the most esteemed French patisseries, and soon found herself working with the globally renowned world champion pastry chef, Emmanuel Ryon. “It was a pinch-me moment. I was living my dream, making sweets in one of the most distinguished cities in the world with one of the most famed chefs in the field. And all the while, fluently chatting away in French, a language I had taught myself.” Exhibiting a Parisian accent, it wasn’t long before Mikaela began to feel like a local, and after her internship finished, she was offered a place at a prominent fine dining restaurant in the city feeding the likes of Mick Jagger. After nearly two years there, it was time for a change, so Mikaela snapped up a position as a pastry chef for celebrated department store, Le Bon Marche, and also started branching out into food journalism and photography. Mikaela Rain was on fire. As a result, it wasn’t long before the Australian team of the Asian Pastry Cup (an international competition for the best pastry experts) came knocking, approaching Mikaela to see if she would help them compete in Singapore. With her comprehensive experience and ability to speak French, Mikaela assisted in taking the team to victory. The side reached third place and qualified for a spot in the Pastry World Cup. After four intensive years in France, Mikaela felt ready to come home to Australia in search of a new challenge, and so returned to Noosa to regroup and plan her next move, helping run Costa Noosa in Sunshine Beach in the meantime. With her credentials, the world is her oyster, but to Mikaela, she is just the same as everyone else. “I believe everyone has the ability to make their dreams comes true. If you are willing to risk putting yourself out there, and not worry about failing, you open yourself up to the things you never thought were possible. Once you realise you are in control, you can achieve anything. ”This February marks my ten year anniversary of working in hospitality. Who knows what my next step will be. After such a busy time in Europe, I am now hanging back, listening to the universe and thinking about the direction I will go in. All I know is that it will be another thrilling, exciting adventure of delicious delights. And I can’t wait.”

The quaint timber mill town that Eumundi was in the early 1900’s has gradually morphed itself into an eclectic melting pot of post hippie baby-boomers and interstate migrants who have discovered the hidden gem it has become.

No visit to Eumundi would be complete without a visit to the original hotel at the corner of Etheridge Street and Memorial Drive in Eumundi has been a focal point in Eumundi on and off since 1911. The property was reborn in 1926 after a major fire and over the years seen several revamps. Fresh now Som Tam (Green Papaya & Mango Salad) Ingredients: (serves four) 2 cloves of garlic, peeled 3-5 birds eye chillies Teaspoon of dried shrimp (optional) 1â „2 cup of snake beans cut into 2cm lengths 1 carrot, julienne 1 1â „2 cups of green papaya, peeled and cut into julienne 1 cup of mango, peeled and cut into thick slices Juice of 2 limes 2 tablespoons of fish sauce 2 tablespoons of palm sugar Small handful of cherry tomatoes, washed and halved Small handful of unsalted peanuts, roughly chopped Method: 1. Take a mortar and pestle and pound the garlic and the chilies until they come to a paste. Add the shrimp (if using) and the green beans and pound them just a little so you squash them without turning them into a paste. Add the carrot and then the papaya and continue to pound away, this will bruise the papaya so it can take on the flavour of the chilli and garlic. 2. Now add the lime juice, fish sauce and palm sugar and take a spoon and stir the ingredients through so the flavours are even throughout. 3. Have a taste, the flavour should be hot, sour and salty, if you feel the flavour is uneven add a little more lime juice or fish sauce or chili to balance it out. 4. Finally fold through the mango, halved cherry tomatoes and the chopped peanuts, stir once more and serve immediately.

How do you know it’s christmas?

Cherry Sangria

1 lime 1 litre lemonade 300g pitted cherries, halved

Serves: 6 Preparation Time: 15 minutes plus minimum 1 hour refrigeration time

Method: 1. Combine the wine and sugar in a large jug. 2. Thinly slice the orange, lemon and lime and add to the wine mixture. 3. Stir in the cherries and chill for at least 1 hour (or up to three days). 4. When ready to serve, add the lemonade and serve over lots of ice.

Ingredients: 750ml red or white wine (a spicy shiraz or fresh sauvignon blanc is perfect) 1/4 cup caster sugar 1 orange 1 lemon

Mango Bellini

The perfect summer season party starter. Ingredients: 1 mango, peeled, flesh removed and roughly chopped 1 bottle of cold Proseco (750ml) or other sparkling wine Method: 1. Pop the roughly chopped mango into a food processor and blitz to a puree, if it becomes very thick you can add a small amount of the Proseco to loosen it up a little. 2. Take a sieve with a bowl that will fit comfortably under it and use a spoon to push the pureed mango through the sieve to remove any fibrous pieces (you can discard the fibrous pieces). Cover the bowl with cling film and allow to chill in the freezer. 3. Once the mango is very cold but not frozen take approximately 3â „4 cup of the puree and place it into a jug, slowly add the Proseco while stirring to combine. 4. Serve immediately in chilled champagne glasses.

Toast all spices and blend it.

Green chilli mayo

Hot smoked Ocean trout Cure ocean trout with 7 spiced salt overnight. Rinse with water and dry with kitchen towel. Hot smoke for approximately 15minutes (depends on fish size) Cool it down in the fridge.

2 egg yolks 400ml canola oil 30ml rice wine vinegar 2 cloves garlic ½ tblsp coriander seeds ½ tblsp fennel seeds 1 ½ green chillies 1 bunch coriander ½ bunch mint salt to taste Toast the fennel and coriander seeds in a pan, add to blender with the chilli and garlic, put the vinegar on top, then the yolks. Blend until warm. Slowly add the oil, adding hot water to loosen if it is getting to thick. Add the coriander and mint, blend until the mayo goes bright green. Season and keep in the fridge to serve.

Crispy leek Finely chiffonade white part of leek and pour over hot water then rinse with cold water. Dry then - Deep fry at 300F until golden brown.

As a serve, Warm the fish in the oven for 3 minutes. On the plate, put green chilli mayo and beetroots. Place the smoked fish on top and crispy leek around. Garnish with coriander leaves.

Tom (28) and Sam (25) are the sons of Jim Barry Wines Managing Director Peter Barry and grandsons of the Clare Valley legend who started the wine company in the 1950s. Pounding the streets in Europe selling wine when the announcement was made, Tom and Sam said they were "blown away" by the news. "It's an important week in the family as our grandfather Jim died 10 years ago this week on October 14," Tom said. "He'd be very proud. "This wine is a modern take on the classic Australian blend, Shiraz/Cabernet. Jim Barry Wines has been making this blend for many years, so when given the opportunity to make our own wine we thought it only fitting to have a

crack at making it in our own style. "From the outset we have had a clear style in mind for this wine. This has influenced our viticultural and winemaking decisions over the past five years." This is the second major accolade for Tom, who was named Young Winemaker of the Year at the Gourmet Traveller WINE awards in Sydney this time last year. The Barry Brothers Cabernet/Shiraz also won a trophy at the Brisbane Wine Show earlier this year and joins a prestigious stable of other Jim Barry trophy winners, including the multi- awarded Lodge Hill Riesling and Armagh Shiraz. This research, partnered with Haymes’ own colour direction, forms the five trends that make up the 2015 Colour The inspiration behind the 2015 colour forecast comes from an overriding awareness that people need to feel comfortable and secure within their home. Throughout each forecast look, the varying materials and colour palettes used reflect this concept of wanting to feel safe and relaxed within a space, providing a tranquil and soothing setting. Today more than ever, we are eager to re-connect with the world around us, taking in our natural surroundings and giving back where we can. With this, comes a strong need to

belong to a community in determining ones sense of self, currently demonstrated in the blurring of cultural differences and family trends over time. Inspired by a bracelet Jan Sinclair had seen on her sister, she and husband Jeff made a quick trip detour in Tanzanian to find the source of these beautiful pieces.

LOVE OF ART THE LURE OF THE SUNSHINE COAST HAS PERSUADED GARY MYERS TO OPT BACK INTO THE GALLERY SCENE Another adventure for Australian landscape artist Gary Myers began this time last year with the opening of his new Maleny Art Gallery. To coincide with the gallery’s first birthday Gary has released his first book entitled MALENY POP OUT PRINT BOOK. This is a wonderful coffee table book depicting 40 local scenes as seen through the artist’s eyes. But this book comes with a twist. The book has been designed so any or all of the images can be removed, framed and hung on the wall to be admired by all.

Gary’s heritage in the area dates back four generations to the early1900’s. He opened his first gallery in the area in 1990 directly across the road from his present location, which is upstairs at 23 Maple Street, as part of the new Maleny Community Centre redevelopment. He is renowned for his colourful and engaging landscapes. With a skill base dating back to his first lessons in oils in the mid 60’s Gary is able to take his interpretation of our wonderful Sunshine Coast to a visually stunning conclusion. If not out collecting more inspiration, Gary can be found at his easel space in the gallery happy to share a few tips with other artists, visitors or anyone interested, which reflects his attitude to painting “ just front the canvas, paint and enjoy “.

african adventure Ellie Sinclair Guy has an amazing sense of adventure coupled with the desire to make the world a better place. She travels from her Noosa home to exotic African locations to help endangered animals survive in the wild. She recently celebrated her 66th birthday and shared her cake with the elephants.

E

llie and her husband Al have now visited Africa as wildlife volunteers eight times. Their passion for the protection of animals is shared by Ellie’s niece Lucy who has accompanied them on three visits. Ellie says their latest African adventure took them to Namibia and Zimbabwe. “Our first destination point was the N/a’an ku sê Foundation. This award winning sanctuary was founded in 2006 to protect and improve the lives of the people and wildlife of Namibia. “The vision is to make it possible for humans and wildlife to live and thrive together. The mission is to conserve the land, culture and wildlife of Namibia and rescue species threatened by an ever-shrinking habitat,” she says. “The sanctuary is an hour by road from the Namibian capital city of Windhoek. We chose this volunteering position because we knew we could give hands on care to a wide variety of orphaned animals. “The species we encountered included baboons, cheetahs, ostrich, meerkats, too many others to mention and an aardvark named Barky. Barky was a high spot on the journey as the chances of meeting an aardvark are slim, they are shy, nocturnal and live in burrows underground. “We fell in love with Barky, his mother was shot and killed when he was very young and he was brought to the sanctuary. He lives with the volunteers and is taken out on daily walks. Because he grew up in the sanctuary he has to be taught how to survive in the wild and is now learning to dig for ants and termites. Walking Barky and helping him find food was a once in a lifetime experience. “Walking baby baboons was another highlight, they like to swing and hitch a ride on volunteers’ shoulders, long hair becomes a rope for the baby baboons to swing on. As

an ensuite bathroom and a wooden deck. The luxury service includes meals and drinks; dinner is cooked over a fire under the stars. This is glamping in style. “Our weeks of hard volunteering work had improved our fitness levels so we put our energy to good use by climbing Dune 45, the world’s second highest sand dune. After this we headed to Swakopmund. The seemingly endless golden sand dunes in this region are a dramatic contrast to the red sands of Sossusvlei. We had heaps of fun riding quad bikes up and down the sand dunes. “We then drove north to Damaraland where we saw the very rare and elusive Desert Elephant. This adventure ended with a visit to Etosha National Park. It proved to be the Massai Mara of Namibia with an amazing variety of animals; up to this point the diverse scenery and dramatic landscapes were the major attraction. “We said goodbye to Namibia and headed for Kariba in Zimbabwe for a 10 day journey down the Zambezi River. The 300 kilometre canoe journey would take us to the

many animals as possible are returned to the wild although some have to stay at the sanctuary where they are kept in comfort for the rest of their days. “This part of Africa is very hot during the day but night temperatures can drop to zero. The volunteers’ quarters are unheated and the showers only have cold water. On this occasion we decided to hang the expense and upgrade to one of the six luxury guest villas. It was a decision we would not regret. Hot water, electric blankets, central heating, supplied hot water bottles and fluffy gowns were very much appreciated at the end of a hard day,” Ellie says. The next leg of the journey included a tour with Wilderness Safaris. Ellie says the safari can take up to eight people. “Luckily only one other person joined our trip so there was plenty of window space. We drove from Windhoek to Sossusvlei, the first stop was Kulala Adventurer Camp. “It is an amazing sight, this sand in this area is terracotta red and the camp consists of six domed tents. Each tent has

border of Mozambique. Having paddled the Zambezi many times before we were prepared for what was ahead of us and keen to get started. “No glamping on this trip, it was an expedition paddle. We had to carry our camping equipment, food, drink and essentials on board the canoes. There are no toilets or hot showers, it’s back to nature with a spade, paper, matches and a tin bucket filled with Zambezi River water for washing. “At sunset we set up camp on islands in the middle of the river between Zimbabwe and Zambia. Hippos, crocs and elephants were in abundance. There were far more than in previous years, even our guide commented on the increase in numbers. “Al was in good hands as I steered our Canadian canoe. Experience gained over many years with Mosman Rowing Club in Sydney and racing outriggers in our hometown of Noosa came in handy.” After the river trip Al flew home to attend to work commitments but Ellie stayed behind and met up with Lucy in Zimbabwe. They had volunteered to work at Imire Rhino and Wildlife Conservation, a 12,000 hectare property with wildlife and cattle.

They take only 10 volunteers at a term so it’s a closer community than the N/a’an ku sê Foundation group of 54 volunteers. “Days were spent walking three rhinos, walking or riding three orphaned elephants plus the baby elephant Katunga or rounding up cattle on horseback, we loved herding the cattle. The workload included cleaning out the elephant and rhino shelters, piling hay bales and delivering food to all sorts of animals. We pulled down of old barbwire fences, shovelled buffalo poo into bags for the Imire vegetable garden, cut down lantana bushes and a myriad of other jobs. “On the second day Lucy arranged a surprise party for my 66th birthday. The volunteer truck met with the elephants and their handlers out in the bush. I was to have the first of many rides on Mac, one of the elephants I read about on the Imire website. Afterward handlers, volunteers and elephants shared a large birthday cake. It was marvellous.” Ellie is now back home in Noosa but is already planning a return trip to Imire with Al and Lucy in 2016.

In fact, it’s a journey they live each day, as Coco Seymour Griffin reveals.

“Our mission is to inspire people to live a simple, wholesome life, starting with the food they eat,” nods Jemma Edwards, half of the earth-loving duo who founded one of the last remaining organic produce farms on the Coast. “I wake up each morning excited to feel the touch of nature between my fingertips.”

ogether, we are passionate about creating and fortifying a sustainable food economy for the benefit and security of future generations,” adds Craig Hubbard, the other half of the dynamic pair. “We must eat more green-rich wholefoods. They are the foundation of health and wellness.” It’s a message that we are starting to hear more and more. Feed your soul, nurture your spirit, and respect your body. You can only expect to feel as good as the nutrients you consume, after all. Fresh must mean freshly picked, not freshly placed on a supermarket shelf after having been in a cold room for a year. A buzzing hive of vision and insight, Shambhala Farm, the 10acre organic vegetable farm nestled in the Noosa Valley, lives and breathes its ethos, offering organic, local and sustainable foods, whilst simultaneously pioneering a way of life based on the concept of wholesome living. With an established growers co-op, creating partnerships with other organic and local farms, offering an educational program to boot (including a calendar of workshops for children), its effects reach far beyond just that food, pulling together a like-minded community, empowering change and encouraging a commitment to green living that is almost palpable. “The vision for Shambhala started eight years ago when we moved from Sydney to the foothills of Maleny, with a desire for a simpler more sustainable life,” explains Jemma.

“We home-birthed our two children, and spent five years raising them in our rammedearth, solar-powered property on the banks of the Mary River. We grew our own veggies, chopped wood to heat the water and ran our truck on veggie oil. We made our living selling wholefoods and freshly milled flour at the markets under the name Maleny Wholefoods. During this time, Craig apprenticed with Jim Hunt, an organic farmer of 40 years, who taught him the principles and practice of organic, sustainable farming. The seed of the farmer was sown!” It was on a solo pilgrimage through the Himalayas six years ago however, that Craig experienced the vision for a Shambhala way of life, and cultivated the desire to share it. “I was building earth houses in an orphanage when it came to me. On my return from Nepal, Jemma and I began creating the concept of Shambhala living, based on simple, wholesome principles.” After both embarking on a yearlong yoga teacher-training program, which allowed Jemma and Craig to further refine their philosophy for the farm, the time came to share their Shambhala concept. The family purchased a property in Doonan, moved into a tent and began growing organic greens – Shambhala Farm was born! “For Craig, this allowed him the full expression of his dharma (life purpose),” smiles Jemma. There was much work to do, and it wasn't long before their first WWOOFers (Willing Workers on Organic Farms) arrived. “Over the next few years, together with many travellers and volunteers, we laid the foundations for what Shambhala Farm is today,” smiles Jemma. “It was a big job and we had many ups and downs, such as the time we flooded two summers running and lost almost everything – our possessions, our crops, our income. But out of the ashes, new transformations came. We believe it was all part of our journey of learning.” Life partners, parents,


business partners, co-creators and leaders of their family and their shared ideology, Jemma and Craig met in their twenties and quickly became inseparable, finding a common sense of values and a mutual dedication to following their path. With Jemma born in Toowoomba and raised on her grandparents’ dairy farm, her love and passion for wholefoods was nurtured when took over the job of cooking for the family (with her sister) when she was 12. Meeting Craig, a Sydneysider who had spent much of his younger life on the south coast beaches of NSW, and had developed a level of self-discipline and personal drive through his intensive training in martial arts, acupressure and Chinese medicine, the two knew they were destined for each other. A subtly powerful combination exuding an aura of peace and calm, Jemma and Craig couldn’t wait to have a family together, and Isaiah, now 7, and Kaia, 5, sealed their love, whilst also becoming a further catalyst for living consciously. “Having kids changes everything – how you feel inside, how you express yourself, your values,” explains Craig.“You really have to analyse how you want to live because you are raising a person and being an example to them and their next generation.” Never faltering on their mission to model their ethics, Shambhala Farm soon became renowned as a centre of farming excellence, building up a loyal staff of over 14 (who radiate a love for their employers rarely seen) and growing 40 different crop varieties. It is obvious they revel in their daily intent – with their life their work, and their work, their life. “Understanding the origins of our food allows us to make informed choices about our health and wellness. It also gives us a connection to the earth and the rhythms of nature. Eating a green-rich wholefood diet means you can tap into the energy of food in its natural state, feeling full of vitality as result. A special reputation for performing early English polyphony, masterpieces of the Renaissance, bringing fresh insights into Baroque and early Classical music and a diversity of 20th and 21st-century music, is drawn from the passions of Founder and Conductor Harry Christophers CBE. The Queen of Heaven program features an unmissable new version of Allegri’s famous Miserere alongside James MacMillan’s own setting of the text and glorious music by Palestrina. The name - The Sixteen - reflects the ensemble’s origin. The choir was formed in 1979 with 16 graduates from the Magdalen College in Oxford singing the music of 16th century composers. It might be the luck of the Irish but Dublin born and bred Laughlin Rigby has the best job in the world. Laughlin moved to Noosa from Ireland just over a year ago to head up the marketing depar tment at Sunshine Coast Destination.

Domestic tourism is very strong and recently increased by five per cent; international tourism is up by 9.4 per cent. We plan to focus on other international markets in the very near future. “When I worked with Irish Tourism we developed The Gathering to give people a reason to visit. Ireland is a very popular tourist destination but for people who have to travel long distances, say from Australia, Canada or

Etihad and Emirates airlines have made Australia a one-hop stop with gateways in regional airports in almost every country in the world. I have been here just over a year and my mum has been to visit three times. She flies from Dublin to Abu Dhabi on to Brisbane and straight up to the Sunshine Coast. “There is nowhere else on earth
