Welcome to the Passion issue. There’s a sign on a wall, as you take the Story Bridge off-ramp into the Valley, that says “The more I think about it, the bigger it gets.” That phrase gets me thinking every time, because if you’re passionate about something (like most of us are), your ideas tend to grow and grow, becoming more intense over time. Ask anyone who has started a business, pursued a career or had a burning desire for something – it’s all-consuming and almost impossible to not think about. This feeling of intense enthusiasm is how I define ‘passion’. And Brisbane is filled with talented people who give their dreams, businesses and families their all. It keeps them awake through the night, gives them purpose and fuels a fire inside their bellies when they start kicking goals. We’re extremely fortunate at Style that we meet so many people who are passionate about what they do. It’s awesome! You can hear it in their voice and see it in their eyes when you meet them. They’re inspiring, driven, exhilarating to be around... and there’s so much we can take away from their stories. People like LINDSAY BENNETT, Festival Director of MERCEDES-BENZ FASHION FESTIVAL, who along with his team have poured a whole lot of love and energy into bringing us what I’m sure will be the best festival yet. J OSH PITER MAN Beautiful: The Carole King Musical
Turning dreams into realities is something many of us can only hope for. But for these three creatives, failure was never an option, and transforming childhood imaginations into booming careers was all they ever thought about. While facing endless setbacks on the journey to achieving their goals, it was an incredible drive and hunger to be successful that brought them over the line to see them where they are today. A
t the age of 16, Josh auditioned for his school musical, Fame, realising then and there he was born to perform. Since then, he’s performed in hit stage shows such as Hairspray and Cats, which scored him a Green Room award for Best Supporting Actor In A Musical. His newest adventure, playing the role of Gerry Goffin in Beautiful: The Carole King Musical is one of his most challenging yet, telling the story of a character so close to his heart. A friend in the musical industry suggested he audition for the role after seeing the show on Broadway. After looking into it, Josh fell in love with Gerry, the music, and Carole King herself. He was already familiar with Carole’s music, but like so many people, didn’t realise how extensive her work was. “I had no idea how vast her songbook was – I especially had no idea that she wrote ‘The Locomotion’.” The show has just landed in Brisbane and is already blowing away audiences. And now that he’s completely settled into the role, Josh feels personally connected to his character after telling his life story on stage over and over again. “There’s always an extra level of respect I feel I have to give to Gerry because I value his life so much. He was a really complex and troubled man, but PAGE 10
a true genius too – that deserves some tender care when playing him.” While performing the same show for nights on end can become boring for some, Josh believes it’s the feeling he gets when singing and acting that inspires him to get on stage every night, exploring his character further and pushing his performance to the limit. He claims hard work and a great love for what he’s doing are the most important things that keep him going each day. “There’s always an element of fear and an element of fearlessness in everything I do as an artist. It’s striking that balance of being scared enough for it to really matter and being free enough to do my absolute best performance.” Previously performing in Brisbane with The Ten Tenors, Cats, and West Side Story, Josh loves the laid back nature compared to the hustle and bustle of Melbourne and Sydney, and obviously, the fabulous weather. He also takes the opportunity while he’s here to visit his favourite place on earth, Byron Bay. Beautiful is sure to inspire everyone who sees it, with Josh describing it as, “so uplifting, you can’t help but feel like taking on the world after watching it.” Recently taking away the Best Musical Award at this year’s Helpmann Awards, it’s a must see for lovers of darn good music. C H LO E & K ATE Jericho Road Clothing
S
isters Chloe and Kate are co-owners of up and coming Brisbane label Jericho Rd Clothing, known for its quirky and out of the box designs. The idea to launch a fashion label was brewing long before the launch of Jericho Road Clothing, as the sisters had always dreamed of starting a business together. After contemplating the idea for quite some time, they were encouraged and convinced by family and friends, as well as other up and coming businesses pushing their way into the fashion world. “We’ve started to draw a lot of our inspiration and motivation from other small business ladies doing amazing things.” Both Chloe and Kate have always had an affinity with fashion, arts and craft, and entrepreneurial projects, with
both of them running small businesses alongside their day jobs in the past. It was only when they focused on fashion as a business in itself that they really started to feel like they’d found the right path. Just like most, a lot of determination and many hours of hard work was the key to Chloe and Kate’s success, with both of them working around full-time jobs to get their business up and running. “We’re not going to lie, it’s certainly not an easy gig, and there have been many times where we’ve felt like throwing in the towel. But, it’s all been worth it.” What’s next for Jericho Road Clothing? They’re hoping to expand their stockists nationwide, as well as open up more pop-up stores throughout the east coast.

A
fter attending her first ballet at the age of five, Natalie realised early on that she had a true passion for dance. She studied ballet throughout her childhood years, before attending the Queensland University of Technology after completing high school. While ballet was always her passion, the move to QUT allowed her to fall in love with the contemporary style and choreography, quickly realizing it was a core talent of hers, and spent her early days freelancing with companies all over the world. But after having her second child, she began to want a company to work with regularly, to really connect with an ensemble of dancers. Fast forward to the present, Natalie has now been with Expressions Dance Company for nine years, STYLEMAGAZINES.COM.AU
appointed as Artistic Director in 2009. She’s always dreamt of creating beautiful work with beautiful dancers creating performances that connect through emotion to an audience. With a career spanning over 30 years and having choreographed more than 170 professional works for some of the world’s leading dance companies, Natalie still finds a way to stay inspired. “I am attracted to human stories and find inspiration in poetry, paintings, family and observation of life.” Natalie is currently creating a new work with EDC, Everyday Requiem, which will be at QPAC in October. It holds up a mirror to this amazing journey called life and the human experience. It focuses not just on the milestones, but the joy and beauty to be found in the every day. PAGE 11

he much loved Moreish Café in Stones Corner is back and better than ever with a fresh new look and modern fusion menu. When a devastating fire gutted their kitchen, owner Jeff Zaphir took it as an opportunity to give the café a complete revamp, banishing their industrial and monochrome interior and replacing it with a welcoming and open space. Filled with an abundance of lush greenery and a crisp white and grey backdrop, the muted and clean canvas gives a fresh and friendly vibe to the busy cafe. The almost ‘clean slate’ feel of the new space allows the vibrant and delicious menu, a mixture of fresh ideas and old classics, to stand out on the plate, making the experience both a tasty and visual delight. We were spoilt for choice when we checked out the amazing new menu, co-curated by Jeff and head chef Daniel Christie, who has 20 years of culinary experience behind him and an eye for impeccable detail. Everyone’s brunch time favourite, eggs benedict, kick started the breaky feast. A house made hollandaise is easy to tell, and this one definitely was. Light PAGE 16
in texture and not too salty, it was a definite standout, and no way in hell from a packet. Accompanied with crispy bacon and perfectly poached eggs, it’s a must try if you’re the type of person who always orders the same thing. Next was a kitchen special - red velvet pancakes with Persian floss. Moist, thin, and layered with cream, they were a pancake fiend’s dream. Garnished with edible flowers and strawberries on the side, it was almost too pretty to eat. If super sweet breakfast isn’t your thing, try pairing it with the beetroot latte. The last dish was one for the health freaks and those silly enough to believe calories count at breakfast. The buddha bowl offers all the green goodness you could ask for like broccoli, spinach, and kale, as well as house made beetroot falafel, which was absolutely delicious. A little pot of culture The guys who brought you Rick Shores have hit the streets of Brisbane.
D
escribed as a neo-Chinese dining hall, Little Valley draws inspiration from a number of Chinese cuisines, taking an approach that pays respect to traditional origins. The multi-regional menu takes a modern approach, re-designing the traditional dishes we know and love to make them fresh and exciting. An example of this is the Potato and Truffle Spring Rolls, which take the traditional dish that we all know and love to another level. Instead of being filled with vegetables, they’re filled with creamy potato and dusted in rock salt. Other standouts on the menu include the Cured Scallop with Spiced Pumpkin Seed and Chilli Oil, the Half Twice-Cooked Duck with Fermented Plum, and the Dry Fried Beans with Mustard Greens, Salted Pork and Soy. The drinks menu was created with the same creative flair with over 100 different wines available, as well as an impressive list of signature cocktails. These too were created to include a contemporary Asian twist, like the

Waking Panda (Absolut Vodka, Elderflower, Mandarin and Citrus) and the Beijing Sling (Beefeater Gin, House Cherry Vermouth, House Spice, Pineapple and Citrus). The space itself is epic, with the original structure almost 100 years old. It’s been taken back to its original bones with all walls being taken down, allowing the exposed bricks and steel to become features of the restaurant. Just like the menu, the space aims to blend the old with the new, creating a chic, airy, and bright space for guests to enjoy. They’ve also added gold bar light sculptures to mimic bamboo scaffolding, which completely lift the building and add a wow factor to the dining experience.

Citrus Delight Take your taste buds to France. Inspired by his Grandfather’s passion for cooking, Gert Pretorius aims to bring energy and creativity to his kitchen. The recipe he’s sharing with us is one of the first items he added to the Madame Rouge menu after becoming head chef – a rich and lemony French style tart, complimented by a flaky and buttery pastry.
CLASSIC FRENCH TARTE CITRON
Ingredients For the pastry: 125g unsalted butter, cool 85g icing sugar, sifted 250g plain flour, sifted 2 large eggs, beaten, keep separate
For the filling: 9 large eggs 1 egg yolk 390g caster sugar 300ml thickened cream Zest & juice of 5 large lemons 50g caster sugar
Method For the pastry: Cream together the sugar and butter. Using a whisk or fork mix in flour until mixture resembles breadcrumbs. Add one beaten egg and mix until the crumbs just come

What has fuelled your passion to want to be a chef? I spent a lot of time in my grandfather’s kitchen as a child. His passion for cooking and food has always inspired me. Who would you most like to cook for? Paul Bocuse, Rick Stein, Dominique Crenn, Massimo Bottura, Anthony Bourdain. What would you serve them? Coal grilled, fresh caught fish, roasted fennel, Australian asparagus and samphire, and a lot of chardonnay. These are all people who appreciate the simplicity of good produce. A good party is always better when spent with people who love food and drink as much as you do. Favourite ingredient and why? Citrus. The wide range of flavours can complement pretty much everything, sweet and savoury. I love the freshness it imparts to any dish.
together. Do not overwork. Form pastry into a disc, cover in baking paper, refrigerate for oen hour. Pre-heat oven to 170C. Roll out pastry between two large sheets of baking paper to 3-4mm thick. Grease a 27cm loose-bottomed tart tin. Line the tin with the pastry, being sure the pastry is even all around and pressed into the corners. Prick the base at equal intervals with a fork. This will allow the steam to escape the bottom of the tart, giving a crisp pastry base. Crumple up a piece of baking paper larger than the tart tin, uncrumple and place on top of the pastry, fill with baking beans. Bake for 15 minutes, until the sides are light golden in colour. Remove the baking paper and beans. Brush a thin coat of beaten egg on the pastry, return to the oven, bake an additional five minutes. Turn the oven down to 120C, open the door, leaving tart shell inside for a further 20 minutes.
Most memorable meal? Many of my childhood meals were enjoyed over an open fire. I don’t have a most memorable meal, but rather a most memorable meal style. Eating around a camp fire, the embers crackling and light aroma of smoke has had a huge influence on the flavour profiles I most associate with. What do you bring to the Madame Rouge kitchen? Energy and creativity. I have an amazing team behind me at Madame Rouge, and I hope they can feed the energy I bring to work to create the dishes that make me proud. Why did you choose this recipe to share with Style readers? This is one of the first items I added to the menu after becoming the head chef. It was immensely popular with our customers.
For the filling: Whisk together the eggs, egg yolk and sugar in a heat proof mixing bowl until well combined. Mix in the cream, zest and juice of the lemons. Over a double boiler, heat the mixture, stirring occasionally, until the mixture reaches 60C. Strain the mixture through a fine sieve into a pouring jug. Skim off any foam from the top of the liquid. Carefully pour into the baked tart base. Bake at 120C for 10-15 minutes, until the centre of the tart has just set. Allow to cool for two hours outside of the fridge, then cool for at least another six hours in the fridge.
To serve: Slice the tart into wedges. Sprinkle with a thin layer of sugar; use a blow torch to lightly caramelise the top, serve with vanilla or lemon ice-cream.

I find it challenging when told “you can’t do that!” It reminds me of when we first started Vita, or Fone Zone as we were known back then. Everyone told us it wouldn’t work and no one would ever go to a shopping centre to buy a mobile phone. I immediately wanted to prove them wrong. Which I did. I always say, “There’s always a way, you just need to find it.” I think that, as well as being surrounded by a strong team, inspires and drives me to keep pushing to set the bar even higher. I’m extremely motivated by talented people and really love to help PAGE 24
others to be the best they can be – that’s where I get my buzz. Vita has recently launched SQDAthletica, bridging the gap in the activewear market when it comes to men’s only activewear brands. SQDAtheltica is about encouraging men to take accountability for their own wellbeing, and to get out and do some form of exercise to fuel their body and mind. I’m really looking forward to building our presence as a leader in this sector, as well as continuing to grow our established suite of brands by continuing to push through boundaries.

I’m always pushing for change, and find I get bored very easily. I need to constantly be moving forward and working towards something. A few years ago I was setback in my own career and decided I would not go back to the corporate sales life. I decided the only way forward was to set my own path, so decided to look for solar opportunities to pursue. I’d been interested in solar for many years simply due to seeing a number of installations around Brisbane, and wanted to build a company around a product that was great for the environment, but also sold itself. We decided to believe in the product itself and trusted that being different was more important than being better. In order to do this, we had to out think the competition, analysing them to make sure we were different, rather than a direct copy. “We operate differently” was spread across the first ever website that went live for Instyle Solar, with a financial focused sales approach being the key difference that set us apart. People buy them because the end goal is a lower electricity bill, not because of how they look.

FASHION AND GLAMOUR AT ASHGROVE St Finbarr’s Primary School at Ashgrove is becoming world famous for their annual Fashions on Parade fundraiser – okay, maybe not world famous, but famous in Brissie! Now in its 15th year, the event has grown to see approximately 500 guests each year. And it’s no wonder - the fashion parade is held on a full sized catwalk and features around 30 models, women, men and kids. That’s a lot of fashion! Spider veins are small, red thread veins under the skin’s surface, predominantly found on the outside of the thigh but can occur anywhere on the leg. If you’ve recently developed some, and are considering treatment, here are some ways to ensure you see optimum results. Have an ultrasound examination in order to identify if any underlying reticular veins are causing the spider veins. Failure to treat these correctly can lead to “matting,” where new, very fine veins form. Ensure your doctor is notified of any medications or supplements you take, as even fish oil can interfere with treatment. Compression stockings should also be worn for at least five days and nights. No one likes to wear them, however they do mean better results. Over time, new veins might develop and you may need a maintenance session after a few years to keep those legs looking perfect.
We all have goals. However, sometimes our behaviour is self-sabotaging and we create hurdles for ourselves in achieving those goals. Self-sabotaging includes procrastination, addictive behaviours, and even forms of self-harm, and while these behaviours initially seem purposeful, they invariably undermine us when repeated. The reality is, at times we unconsciously engage in unhelpful behaviours without full awareness. We are not sure why, but it may be to reflect previous hurts or disappointments. To interrupt self-sabotaging actions, we need to be attentive to warning signs that start the downward spiral and increase awareness of unconstructive thoughts, emotions, and actions. With deliberate practice, based on feedback, we’ll get stronger at responding in ways based on a commitment to our values and goals.

Melasma is known as hormonal pigmentation or cholasma. It is a chronic condition that results in patchy pigmentation that is often symmetrical, commonly presenting on the forehead, cheeks and upper lip. Melasma is a complex type of pigmentation which has to be treated in a special way to inactivate the pigment producing cells before any peels or laser are performed. Melasma treatment is a medical solution, not a cosmetic one, and should be treated by specialists. The best method of treatment is with a combination of topical prescription creams, oral tablets, and with gentle chemical peels and laser. The most important treatment is sunscreen and sun protection, as without these, pigmentation will often continue to worsen and not improve. It is recommended to book an appointment with a specialist to determine the best course of treatment which will be tailored to your individual needs.

Tooth sensitivity has various different causes, and can be a sign of something more serious. Enamel can thin due to teeth grinding, a high acid diet, or gastric reflux, and may result in the nerve endings in the tooth becoming exposed and then reacting to cold, acidic, or sweet foods and beverages. Tooth sensitivity may also be due to decay or a leaking filling. Teeth grinding or clenching can sometimes cause sensitivity, and can sometimes be a warning sign that sleep apnoea may be an issue. Although there may not be a lot of obvious tooth wear, the extra forces applied to the teeth during sleep could cause the tooth nerves to become hypersensitive. e are all prone to health issues from time to time, whether it’s seasonal flu related conditions, infant illnesses, or age-associated health problems. Many of us also have parents who are in their later years and may not be able to easily tend to themselves when ill or drive at night to seek medical treatment. So what can you do if your condition is not life threatening, but you can’t wait until your GP clinic opens? Talking Travel with Tess Willcox What do you do and where are you from? I am the CEO of World Resorts of Distinction, which is a Resort Creative Agency focusing on sustainable luxury. I grew up in Margaret River, and moved to the Gold Coast 15 years ago. How did you get into the industry? After graduating with a Bachelor of Communications, I actually applied for the junior position in the company I now own. Always having a desire to travel the world and to somehow work in the industry, I fell into my dream job and worked for 15 years to get to where I am now, which is CEO and owner of the business. Your philosophy on life? Leave regular behind to explore the outskirts of extraordinary. Why is the eco-travel category so important to you? I’ve always lived my life as a bit of an eco-warrior, but as I get older the pertinence of healing our planet becomes paramount. The more I learn, the deeper the call to nurture the planet and encourage everyone to do the same through whatever platform is available to me. Travel is a nonnegotiable in my life, and so finding a way to do something that was such a core part of my being, in a way that was regenerative to the planet was essential. What criteria determines what an ‘ecofriendly’ destination is? Every destination has the capacity to be eco-friendly, it all 5 tips for a great trip? • Don’t over-research. Too many people travel knowing everything about the destination and leave nothing to chance. My advice is to book a ticket and let the rest be guided when you are there. • Interact with the locals. There are extraordinary people with wonderful stories all over the world. Get to know them and uncover the beauty of their lives, it will make your experience far richer. • Travel as sustainably as possible. What has been a game changer in the travel industry? Our client, Soneva, founded by Sonu Shivdasani and Eva Malmström Shivdasani in 1996 has been a game changer for the entire industry. Sonu and his team have singlehandedly pioneered the sustainable luxury path and continue to be innovators and game changers in terms of concept, design and sustainability. In 2016, Soneva pioneered the global hospitality industry by publishing the first ever Total Impact Assessment (TIA) tool, which was developed in-house. The TIA measures the impact of a company’s eco-essentials to avoid disposable plastic when you travel. • Dine where the locals dine, and drink where the locals drink • Pack your bag, then halve it. Next biggest travel trend? Conscious Travel. Not just in terms of environmental sustainability, but social responsibility as well. Ensuring that travellers engage and interact with locals and communities rather than being purely resort bound. What are the hot destinations right now? Maldives, Morocco and Sri Lanka.

Firstly, Samoa is one of the most untouched, beautiful island destinations in the world. It should be high on everyone’s bucket lists. Secondly, the Anambas Islands which are home to Bawah Reserve. Actually considered Indonesia, but 160 nautical miles North East of Singapore. I recently spent 4 days here and it blew my mind in every way possible.
