Master of Minimalism

What inspired you to create Sarah & Sebastian I’ve always been interested in design and enjoy creating things with my hands. I studied design at university and when I couldn’t find jewellery that resonated with me, I started making my own with my co-founder Robert Sebastian. The pieces we made were unique and di erent from what was available in the market and it struck a chord with those around us. Walk us through a typical day in your life, how do you juggle it all I start early with a dip at Clovelly Beach, which sets the tone for the day. After that, I head to the o ! ce as our jewellers are arriving. My day is a mix of collaborating with the design team on upcoming collections, working with brand on shoots and campaign direction, and attending meetings with our CEO and the broader team. In the evening, I generally like to relax and cook dinner with my husband. How do you strike a balance between work and personal life After dedicating so much time to building the business in the early years, work-life balance has become essential to me, and I try to embed this value in our culture. I love travelling, and most weekends, you’ll find me exploring the Australian coastline. Swimming and diving are particularly meditative for me, they help clear my mind and inspire me.

Do you have a current or all-time favourite piece from your collection Emeralds are my favourite gemstone and my current favourite piece celebrates this – the Encrustacea pieces from our Pillar Collection. How has your background influenced your decision to create a jewellery brand Growing up in Australia near the ocean has definitely shaped my perspective and values. Australian nature inspires our jewellery, with each piece reflecting its organic forms and colours. This connection to nature has also instilled a strong commitment to environmental responsibility and conservation, which is central to our brand ethos. What are three non-negotiables you live by in business Trust your instincts, be adaptable and evolve, grow with purpose and stay true to your values. Was there a pivotal moment where you realised the brand was truly taking o Our 10-year anniversary was a significant milestone for us. It was the first time we brought on a CEO and made a formal commitment with a million dollar pledge to support ocean conservation, a cause that’s very important to me. Reflecting on that moment made me realise how far we’d come and filled me with pride for what Robert and I had built together.

I’m often asked, “Why do we need to protect our skin in winter?” In Australia, around 80% of UV light reaches the earth’s surface, even on cloudy days. That means blue light, UVA, and UVB are still reaching your skin in su ! cient levels to cause ageing, even if they’re not necessarily contributing to skin cancer development during winter. You’ll still make enough vitamin D in winter if you expose your forearms to the sun for about 20 minutes, three times a week.

UV exposure not only leads to skin hyperpigmentation, roughness, and wrinkles, but it can also trigger inflammatory processes that worsen conditions like rosacea. So, sun protection is a no-brainer! The best sunscreen is the one you’ll use daily. Remember to apply your sunscreen at least 20 minutes before you go outside to allow it to absorb and work e ectively. And don’t forget to reapply every two hours if you’re outdoors, or after swimming and towelling o at the beach. The correct amount to apply is one teaspoon for every body part. These tips are essential to ensure your sunscreen delivers the full protection promised on the packaging.

To maintain glowing, youthful skin in later life, starting early is crucial. Unprotected sun exposure leads to the breakdown of the skin’s collagen and

Taking on a beloved Brisbane institution is no mean feat, but Chauvin brings a steady, experienced hand to the table.

While many of the familiar dishes remain, such as the double crab sou$é, traditional French escargot, bouillabaisse, and steak frites, Chauvin has brought his own unique modern twist to classic French fare.

New dishes include Le Duo D’agneau de Printemps (spring lamb two ways), Le Pithivier (roasted pumpkin and mushroom pie topped with sage and brown butter crumble), and Le Boeuf-en-Croûte (beef Wellington with a rich red wine jus). The accompanying creamy buttered mash is worth a trip to Montrachet alone. For dessert, Chauvin introduces his signature Sou$é à la Passion – a passionfruit sou$é with a chili explosion and coconut sorbet. It’s a fitting analogy for Chauvin himself: passionate, traditionalist, but with a refreshing joie de vivre that breathes new life into an old classic.

With a fresh fit-out and all-new menu featuring classic Italian dishes with creative twists, five years after its opening, Massimo Restaurant & Bar has reasserted itself as a quintessential Brisbane foodie destination, perfect for a work lunch.

A great work lunch hinges on several key factors. First, the restaurant should be centrally located to eliminate any commute time. Next, the service should be e ! cient and attentive, ensuring your break doesn’t stretch too long. And last but certainly not least, the food must be exceptional, providing an escape that feels a world away, even though you’re just minutes from the o ! ce. On this rainy Tuesday afternoon, Massimo delivered on every front.

We were seated by the riverwalk, an ideal people-watching spot, and decided on drinks: the Prima Donna, a refreshing and zingy cocktail with watermelon and liquid sherbet, and Bellissima, a bright, citrusy number, because a mid-arvo tipple never hurt anybody. We were among the first to try Massimo’s new menu and check out the revamped space, which flawlessly encapsulates that flirty, Euro-holiday vibe and heroes a very Italian colour palette of olive green, Aperol orange, and ocean blue – the ideal atmosphere to forget about work for an hour.

The menu still boasts classic Italian dishes – house-made pastas, fresh seafood, and mouthwatering antipasti – but this time, there are a few inventive, modern twists throughout (think cacio e pepe spaghetti-filled croquettes and lasagne bites…drool). Ultimately, we settled on the Pronto Banquet, which

was very reasonably priced at $54 per person and was perfect for sharing –because at an Italian restaurant, family style is always the way to go.

As the name of the banquet suggests, the food started arriving promptly after ordering. Pronto indeed! To start, we enjoyed focaccia with whipped ricotta dip and oysters topped with tomato and limoncello granita. Then came the aforementioned cacio e pepe croquettes, which were an absolute delight, and calamari paired with a decadent, slightly spicy nduja cream – simply delicious.

The stars of the show were the mains: a tender loin of eye fillet in a flavourful beef jus and a rich, robust ragu di agnello cavatelli (slow-cooked lamb ragu). These were accompanied by an iceberg salad, beautifully rounding out the meal with some much-needed freshness, and some crispy roast potatoes for a few extra carbs, because why not? To finish: cannoli, of course. It didn’t disappoint.

So, city slickers, if you’re looking to spice up your nine to five, Massimo is calling your name with an Italian feast that’s well worth lingering a little past your lunch break for. Your boss will understand.

THE TASSIS TAKEOVER

Michael Tassis is a busy man. With a hefty portfolio that currently boasts seven restaurants – plus four more in the works – the secondgeneration restaurateur is navigating one of the busiest periods of his career to date.

We’re waiting for him to arrive for the interview at Opa, the well-loved Greek restaurant on Eagle St, when an associate of his lets me know how rare it is for Michael to have a spare thirty minutes. “He’s a hard one to catch,” she says. I feel honoured.

“Everything wasn’t meant to happen so close together,” Michael admits once getting settled near the bar area. “There’s a lot going on, but I knew that they would’ve been big opportunities to miss, so I just went for it.” The ‘everything’ he’s referring to is the opening and planning of several new venues, including Fatcow on James St, a luxe steakhouse; Longwang, Tassis Group’s first foray into Asian cuisine; Dark Shepherd, a Mediterraneaninspired, lamb-focused restaurant arriving at The Star Brisbane; Pompette, an elegant French

champagne bar and restaurant also coming to The Star Brisbane; and two cutting-edge tenancies on the new Kangaroo Point Green Bridge – Stilts, a Brisbane-first, above-water dining destination, and Mulga Bill’s, a stylish, all-day eatery. It’s now clear why he’s been particularly hard to pin down lately.

of food coming onto your table…. it was a lot. That’s probably why you see a lot of banquets on my menus as well. It’s all about sharing,” he says.

His journey in hospitality o ! cially began when he left school at Grade 10 to help his family at Paragon Seafood Restaurant on the Gold Coast. In 2010, he launched his first venture, the iconic George’s Paragon Seafood Restaurant on Eagle Street, which laid the foundation for a string of beloved eateries, including Massimo, Yamas Greek + Drink, Fosh Bar & Restaurant, and Rich & Rare. It’s an impressive resume. Out of his restaurants, however, he doesn’t play favourites: “that’s like asking if I have a favourite child,” he jokes (for the record, he doesn’t have a favourite child either).

As we wrapped up our chat, I was curious what Michael thought of the Brisbane dining scene, given his major role in shaping it. His answer? We have seriously upped the ante.

“I think it’s surreal – we used to always look Melbourne and Sydney, but I think they’re looking at us now,” he says.

One thing is abundantly clear: Michael Tassis’ hospitality empire is only helping take us to new heights.

Raes on Wategos is gearing up to unveil an exciting new addition later this year: a second property located just a one-minute stroll from the original hotel. This extension will feature ten exquisitely designed suites and a range of indoor common spaces, including areas with inviting open log fireplaces for cosy gatherings. The grounds will be framed by lush tropical landscaping and host two standout lap pools – a 16-metre pool with a cascading waterfall and a 12-metre solar-heated pool, complete with a cabana and a chic lounge area for ultimate relaxation. Located less than 100 metres from the original Raes on Wategos, guests at the new property will also have access to the main hotel’s superb amenities, including the renowned two-hatted Raes Dining Room, helmed by Executive Chef Jason Saxby, the stylish alfresco Cellar Bar, and the luxurious Raes Spa.

“Our vision for the expansion is to honour the legacy of our original property while introducing new features and unique o erings that our guests will love,” shares Jordy Catalano, Managing Director at Raes.

Designer Tamsin Johnson’s creative approach infuses the new property with an eclectic blend of vintage and custom elements, capturing a seamless mix of Mediterranean flair and coastal elegance, according to Catalano.

I love a long lazy lunch at Frida’s Field. The guys at The Hut do a great job of setting a high energy in their beautiful little hinterland restaurant as well. For dinner, I usually recommend Bar Heather, which has been a great addition to the local scene – it feels like a piece of the city in Byron. Moonlight is also a great place for some Japanese and killer drinks. As well as restaurants, there’s also a wave of fantastic smaller outlets popping up, including Eclair at the Bay and Masa Bakery, who are doing great things with pastry at the moment.

Jordy’s top Byron Bay tips:

Start with breakfast at High Life, and then enjoy lunch at The Hut or Doma. For dinner, you can’t go wrong with Mullumbimby Continental, Pixie, or Bar Heather. The Farm is great for families –there’s a working farm, chickens roam freely around the property, along with a restaurant, café, and produce store. I always recommend hiking Minyon Falls and a swim at Whites Beach. But of course, you can’t get a better spot than Wategos beach at sunset, watching the dolphins play along the horizon.

SOUTH ISLAND SOJOURN

New Zealand’s South Island is nature’s Instagram filter, featuring soaring peaks, shimmering lakes, and surreal landscapes. In 15 days, I hiked, sipped wine, and discovered hidden gems that made me fall in love with this magical place. Here are some highlights.

We kicked o our adventure in Christchurch at the Mayfair Hotel, the ideal spot for launching a South Island escape. Think modern luxury with a hint of Gatsby glam—plush velvet sofas, moody lighting, and great cocktails to set the tone for what lay ahead.

After picking up our car, we drove through Arthur’s Pass, feeling like we’d stepped into a postcard with the Southern Alps towering above us. This scenic drive took us to a clitop beach shack on the West Coast, where we enjoyed ocean views and a starlit outdoor tub — such a perfect way to unwind after a long day.

At Punakaiki, the Pancake Rocks were a standout. We watched waves crash through blowholes in a breathtaking display. From there, we explored Hokitika Gorge, crossing a 90-metre suspension bridge over striking teal waters—such a stunning colour from the glacial flour.

Franz Josef greeted us with misty mountains and a cosy log cabin that felt straight out of a storybook. After a rainy hike, we settled by the fire with glasses of red wine—an ideal way to relax.

Next up was Wanaka, a picture-perfect town where we spent a few days soaking in the scenery and recharging—just what we needed at the halfway point of our trip. The highlight, though? Doubtful Sound. Boarding the Fiordland Navigator with RealNZ felt like entering another world, surrounded by deep waters, towering cli s, and cascading waterfalls. It was wild and breathtaking, with the outside world fading away as we sailed deeper into nature. The meals on board were excellent, but the views were unforgettable.

Queenstown brought us back to reality, o ering a winter wonderland of gondola rides, great meals, and day trips to Arrowtown and local wineries. We wrapped up our time there with a soak in the Onsen Hot Pools, overlooking the Shotover River.

Our final stop was Mount Cook, where the snow-capped peaks were stunning. The Hermitage Hotel gave us front-row views of this natural beauty. We finished our adventure at Lake Tekapo, where the charming Church of the Good Shepherd, nestled among mountains and shimmering waters, provided the perfect grand finale.
