BEHIND THE SCENES
Behind the scenes of our cover shoot with McKinney’s Jewellers was a charming celebration of elegance. Set on the beautiful Noosa River aboard a stunning Italian-style wooden boat from Noosa Dreamboats, we captured the jewellery’s beauty in the warm afternoon light as dusk approached. With fashion from Calexico, Silk Laundry, and Mitchell Ogilvie, and featuring the lovely Beatriz and Layton, we showcased how McKinney’s can add a touch of sophistication to life’s special moments.

November is here, bringing an issue full of exploration. This month’s cover features a partnership with the beloved Queensland heritage brand, McKinney’s Jewellers. Style and McKinney’s collaborated to create a beautiful narrative reflecting life’s special moments, shot on the Noosa River to showcase their incredible collection in the best light. Our gorgeous Portuguese cover model, Beatriz, effortlessly embodies luxury in their pieces. I must admit, I have a serious girl crush! A special mention to the lovely Layton, who helped bring this magical shoot to life.
Inside, the team and I spoke with some seriously cool creatives: the husband-and-wife duo behind En Gold, fashion curator Shannon Thomas, and creative director Sarah Munro of Sarah & Sebastian. Their stories of building successful businesses are nothing short of motivating, and I hope you’ll find them inspiring too.
If, like me, you’re refreshing your summer wardrobe, you’ll love our bathers and sunnies edits to get beachready. Plus, our interiors edit inspired by the Italian countryside is packed with home styling pieces we’re loving right now. If you need some self-care, it’s time to indulge. Check out our beauty and wellness feature, book in with the experts, or read their tips on taking care of yourself this season. Go on, you deserve it!
For foodies, we’ve wrapped up some must-try spots, reviewed Massimo’s delicious Italian fare, and profiled Michael Tassis, the culinary mastermind behind some of Eagle Street’s top restaurants.
If you’re dreaming of a getaway (I know I am), flip to the back to transport you to the Sunshine Coast, Byron Bay, and New Zealand. We’ve curated travel guides just in time for the holiday season.
Grab a coffee, or a cocktail, get comfy, and let this issue spark your curiosity and inspire new adventures. Enjoy the read!

TIMELESS TREASURES, ENDLESS HORIZONS
Jewellery is much like a piece of music or a particular fragrance – it has the uncanny ability to deliver you right back to a special moment in time. This deep bond between jewellery and emotion lies at the heart of McKinney’s Jewellers, a family-owned luxury brand that has been a cherished part of Queensland since 1884.
The modern muse embodies a stunning blend of effortless charm and timeless elegance, beautifully captured in McKinney’s exquisite jewellery. From the moment you set eyes on a piece, confidence radiates –wearing it brings an undeniable sense of assurance, knowing you possess something truly special that will be admired for its beauty.
As McKinney’s celebrates its 140th anniversary, the sentimental value of their jewellery resonates deeply, becoming cherished milestones for families across generations.
This milestone year marks a legacy of craftsmanship that tells a story of romance and artistry. Born from humble country store beginnings, McKinney’s has evolved into a fifth-generation family business, where jewellery transcends mere adornment. With a master jeweller on-site, every creation is a testament to their commitment to quality, ensuring that each item is truly one-of-a-kind.
“If you don’t know your jewellery, know your jeweller.”
– JOHN MCKINNEY, 1976
Standout pieces are the strands of Australian South Sea pearls, renowned for their radiant lustre and individual
characteristics. McKinney’s takes pride in sourcing these pearls from Australia’s only independently owned farm, nestled in the pristine waters of north-east Arnhem Land.
McKinney’s artfully balances modern trends with its rich heritage, fusing contemporary materials and designs with the classic elegance that clients adore. Each piece is bright, ethereal, and distinct, ensuring that McKinney’s jewellery stands out.
As the festive season approaches, we invite you to explore their stunning gemstone rings and timeless diamond necklaces, perfect for adding sparkle to your celebrations. Statement pieces like elegant drop earrings to elevate your style, making you shine with sophistication.
From exquisite diamonds to rare Australian South Sea pearls, each item is a timeless treasure destined to become cherished heirlooms.

Master of Minimalism
INTERVIEW KIRI JOHNSTON
What inspired you to create Sarah & Sebastian I’ve always been interested in design and enjoy creating things with my hands. I studied design at university and when I couldn’t find jewellery that resonated with me, I started making my own with my co-founder Robert Sebastian. The pieces we made were unique and different from what was available in the market and it struck a chord with those around us. Walk us through a typical day in your life, how do you juggle it all I start early with a dip at Clovelly Beach, which sets the tone for the day. After that, I head to the office as our jewellers are arriving. My day is a mix of collaborating with the design team on upcoming collections, working with brand on shoots and campaign direction, and attending meetings with our CEO and the broader team. In the evening, I generally like to relax and cook dinner with my husband. How do you strike a balance between work and personal life After dedicating so much time to building the business in the early years, work-life balance has become essential to me, and I try to embed this value in our culture. I love travelling, and most weekends, you’ll find me exploring the Australian coastline. Swimming and diving are particularly meditative for me, they help clear my mind and inspire me. Do you have a current or all-time favourite piece from your collection Emeralds are my favourite gemstone and my current favourite piece celebrates this – the Encrustacea pieces from our Pillar Collection. How has your background influenced your decision to create a jewellery brand Growing up in Australia near the ocean has definitely shaped my perspective and values. Australian nature inspires our jewellery, with each piece reflecting its organic forms and colours. This connection to nature has also instilled a strong commitment to environmental responsibility and conservation, which is central to our brand ethos. What are three non-negotiables you live by in business Trust your instincts, be adaptable and evolve, grow with purpose and stay true to your values. Was there a pivotal moment where you realised the brand was truly taking off Our 10-year anniversary was a significant milestone for us. It was the first time we brought on a CEO and made a formal commitment with a million dollar pledge to support ocean conservation, a cause that’s very important to me. Reflecting on that moment made me realise how far we’d come and filled me with pride for what Robert and I had built together.

I’m fickle with my favourites and ironically, don’t own much jewellery since I’m constantly test-wearing our latest collections. Right now, the Urchin Lace Armour Ring from our Obscura Collection hasn’t left my hand, and I’m always receiving comments about it.

Lazy Girl Hacks
TIP: IF YOU HAVE YOUR BROWS, LASHES, AND LIPS DONE, YOU CAN SAVOUR SOME EXTRA MINUTES OF PRECIOUS BEAUTY SLEEP AND STILL WALK OUT THE DOOR LOOKING EFFORTLESS – NO BROW GEL, GLOSS, OR MASCARA NEEDED.
Lily, the founder of brow and lip studio Brow Posse, understands the significance of quality over quantity. With a niche but carefully curated treatment menu, she focuses on a handful of services she has truly mastered, including brow shaping, brow laminations, and lash lifts, ensuring she delivers outstanding, personalised results for each client.
Established in early 2024 and nestled in the vibrant South City Square hub of Woolloongabba, Brow Posse combines Lily’s two passions – interior design and beauty – and is housed within the beautiful SOJA STUDIOS.
Rejecting a one-size-fits-all approach, each treatment is customised to the individual with a focus on long-lasting, lived-in beauty rituals that make you look polished without the daily effort.
Following an educational trip to Vancouver to learn from an expert, Lily recently introduced Brow Posse’s newest service: lip blush. This semi-permanent tattoo procedure subtly enhances lip colour and definition.
So, lazy girls: if you’re all about looking great with minimal effort, Brow Posse is the shortcut to a flawless, low-maintenance beauty routine.
FRESH N’ FESTIVE
The party season is upon us and with so many occasions to dress for, it can be overwhelming finding fresh looks that make you feel fabulous. To simplify your styling, we’ve compiled some essential tips and tricks to elevate your hair this events season. Plus, we share two easy looks you can do by yourself at home, ensuring you stand out at every event.
CUTS N’ COLOUR
Chin-level bobs are trending in 2024, featuring longer layers for versatile styling. Complementing this look, copper and auburn tones add warmth and vibrancy, creating a fresh, modern appearance that’s effortlessly chic.
DAY TO NIGHT
Start with a sleek blowout, then switch to a chic low ponytail with a smokey eye, or embrace loose waves pinned up with faceframing strands. Perfect for any evening!
FACE SHAPE
Oval faces can rock any style, heart shapes look great with thickness at the chin, round faces benefit from longer cuts or voluminous pixies, while square shapes shine with wispy layers. As for diamonds, try a sleek ponytail or textured bob
Two looks to try for your next event
LOOK ONE:
CLASSIC CURLS
Elevate your event season with classic curls that exude elegance and sophistication. Start by applying a heat protectant to keep your strands healthy. Once styled, finish with a shine spray to make your curls shimmer under the lights. Perfect for Christmas parties, holiday galas, or New Year’s Eve celebrations, your look will turn heads. Use a texture spray to prolong the life of your curls. Remember, a quality styling tool is essential; the GHD Chronos glides through hair effortlessly. Don’t compromise on your tools — old, worn-out devices can lead to uneven heating and less-than-perfect results.
COMMON MISTAKES
A gorgeous outfit and flawless makeup can be overshadowed by air-dried locks or a messy ponytail. Remember, a little attention to your hair can make all the difference in your look.
LOOK TWO: TEXTURED TWIST PONYTAIL
This textured twist ponytail is a musttry for the festive season. To create this chic style, divide your hair into two stacked ponytails for added volume. Leave some pieces out at the sides, then wrap a section of hair around the base of the top ponytail to achieve a French twist effect. Secure everything with a few bobby pins, and you’ll be ready to impress! If you prefer not to style your hair yourself, visit the wonderful team at Cameo Rose for all your colouring, cutting, and event styling needs! You won’t be disappointed.
SMILING WITH STYLE
What comes to mind when you think of the dentist? A cold, clinical space? Adore Dental is the boutique clinic redefining that experience.
You know what they say: “You’re never fully dressed without a smile.” But growing up, Dr Ellie Kim experienced firsthand what it’s like to feel insecure about your smile. From a young age, she learned that dental care is about more than just health. “It’s about how you see yourself,” she says. “Your self-image shapes your confidence.”
Armed with this personal insight and a genuine passion for dentistry, she opened Adore Dental – a far cry from the dentist visits you may have dreaded in the past. “With Adore Dental, I wanted it to feel more like a boutique hotel, where you feel warm, welcomed, and excited to be there,” she says. Walking through the front doors, the relaxing but stylish environment is immediately apparent, as is the focus on comfort, care, and quality.
Dr Ellie has a special interest in cosmetic dentistry, particularly in nonprep veneers that don’t require any tooth shaving, delivering natural and long-lasting results. In addition to cosmetic treatments, the team emphasise general and preventative care, educating patients about their oral health and creating personalised preventative plans for long-term wellbeing. Having recently won the Brisbane’s Young Entrepreneur Start Up 2024, Dr
Ellie stays at the forefront of the latest advancements in her field by not only attending courses overseas in places like New York, Korea, Mexico, and the U.S., but also by educating and speaking at global dental conferences. This ensures her patients receive the most up-to-date, world-class care.
Case and point? Adore Dental’s use of digital smile design, a cuttingedge technology that creates a virtual representation of your ideal smile before any work begins, allowing patients to visualise the end result upfront before committing to anything, something Dr Ellie finds “very empowering.” Additionally, the clinic is among the few in Australia that meet the growing demand for natural, aesthetic results.
With a foundation built on open communication, empathy, and respect, Dr Ellie Kim and the rest of the dedicated team at Adore Dental places their patients at the heart of everything they do, ensuring everyone leaves feeling comfortable to flash their pearly whites.

Seoul Sisters
Meet the sister duo bringing K-Beauty to Brisbane.
When Sol uprooted her life from Seoul to Brisbane in 2015 at her sister Naomi’s suggestion, she was surprised by the state of the local beauty industry. “There were outdated nail products and limited treatment methods of an overall low quality,” she recalls. Seeing a gap in the market and an opportunity to introduce trendier, more premium treatments like those she experienced in South Korea, Sol opened her first salon in the CBD, Sol Beauty Studio.
Unlike Sol, who had shown a strong passion for beauty since childhood, Naomi had never been interested in the industry. After falling in love with Brisbane during a working holiday trip thirteen years ago, Naomi decided to settle down and pursue a career in hospitality and commercial cookery. That is, until Sol invited her to open a second salon with her in Newstead earlier this year. Since then, Naomi hasn’t looked back.
Bringing Korean beauty philosophies to an Australian market
wasn’t without its challenges, but the sisters quickly garnered a loyal clientele who resonated with their concept. “When we opened Sol Beauty, we wanted to recreate a 100 per cent authentic Korean nail salon experience,” Naomi says. Taking the time to create a welcoming atmosphere that “is more like catching up with friends” than going to an appointment, Naomi and Sol carefully designed a space that is both comfortable and stylish. With plush boucle lounge chairs at the pedicure stations, stunning interiors, and an adorable bichon frise named Tofu, it’s the kind of environment you’d happily spend hours in.
What truly sets Sol Beauty Studio apart is its unique blend of Korean beauty treatments and carefully sourced products, all brought directly from Korea. From LED white light eyelash extensions, perfect for those with sensitivities to regular glue, to a fresh, monthly-updated nail art menu, the salon offers a distinctly premium, K-Beauty-inspired experience in the heart of Brisbane.

In today’s healthcare landscape, there is a growing emphasis on holistic care—understanding both the mind and body as a whole. This approach is crucial when addressing pelvic health, a critical yet often overlooked aspect of well-being that can affect people of all ages and genders. HERE COMES THE SUN
Dermatologist and Owner of Bespoke
When it comes to top skincare tips from dermatologists, sun protection and respecting the skin barrier are paramount. The most important thing we can do to optimise skin health and prevent unwanted changes such as pigmentation and signs of ageing is to protect our skin from the sun every day, 365 days a year. I know it sounds boring and not particularly sexy, but every other skincare step becomes insignificant if we aren’t paying attention to this fundamental one: sun protection.
I’m often asked, “Why do we need to protect our skin in winter?” In Australia, around 80% of UV light reaches the earth’s surface, even on cloudy days. That means blue light, UVA, and UVB are still reaching your skin in sufficient levels to cause ageing, even if they’re not necessarily contributing to skin cancer development during winter. You’ll still make enough vitamin D in winter if you expose your forearms to the sun for about 20 minutes, three times a week. UV exposure not only leads to skin hyperpigmentation, roughness, and wrinkles, but it can also trigger inflammatory processes that worsen conditions like rosacea. So, sun protection is a no-brainer! The best sunscreen is the one you’ll use daily. Remember to apply your sunscreen at least 20 minutes before you go outside to allow it to absorb and work effectively. And don’t forget to reapply every two hours if you’re outdoors, or after swimming and towelling off at the beach. The correct amount to apply is one teaspoon for every body part. These tips are essential to ensure your sunscreen delivers the full protection promised on the packaging.
To maintain glowing, youthful skin in later life, starting early is crucial. Unprotected sun exposure leads to the breakdown of the skin’s collagen and
other plumping fibres, which eventually results in fine lines, wrinkles, fixed redness, and brown spots. The sooner you adopt daily sun protection habits, the longer your skin will appear youthful.
Aside from sunscreen, other important sun protection measures include covering up with appropriate clothing, wearing hats and sunglasses, and seeking shade when the UV index is high.
Skincare is another valuable way to maintain youthful, healthy skin. Choose active ingredients that support collagen production to prevent fine lines and sagging. Key ingredients include bakuchiol, retinoids, niacinamide, astaxanthin, ascorbic acid, and AHAs like lactic acid. Hyperpigmentation is a common concern, and many ingredients can help prevent and treat it, including green tea, liquorice root extract, resveratrol, and ferulic acid. DNA repair enzymes are another ground-breaking skincare ingredient that aids in antiageing by supporting the skin’s ability to repair its DNA daily after exposure to environmental stressors like UV radiation, pollution, cigarette smoke, and even stress.
RECLAIMING BALANCE
Did you know that metabolic health plays a crucial role in your overall wellbeing, influencing everything from your energy levels and mood to weight management and disease prevention? That’s where Sharon Carius, the owner and founder of WNutrition Pty Ltd and Metabolic Health Hub, comes in.
With the rise of quick-fix pharmaceutical solutions for issues like weight management, diabetes, and menopause, many people are turning to medications as a first resort instead of addressing the root causes of their health problems. Sharon Carius, a clinical nutritionist and founder of Metabolic Health Hub, champions a different approach: reintroducing natural foods and awakening the metabolism, allowing the body to repair itself, reclaim health, and restore vitality in a sustainable way.
Sharon’s philosophy stems from a deeply personal place. After struggling with her own health issues, she sought various dietary solutions but found little success until discovering the transformative effects the Metabolic Balance® program. This program, which is scientifically tailored to an individual’s blood biomarkers, medical history, and physical measurements, focuses on identifying the right foods to restore balance and promote long-term health. Inspired by her own health journey, Sharon now dedicates her career helping others heal through the power of nutrition.
Operating through her business, WNutrition, Sharon is one of Australia’s leading Metabolic Balance® practitioners and has achieved some amazing results with her patients. Her practice is based within the Metabolic Health Hub, a multi-modality clinic that brings together allied health professionals to provide comprehensive, holistic care. This includes experts such as Christin Zeller of Bright Side Family Acupuncture, Julie Archard of Northside Nutrition, Psychologist Mette Parkinson Gilligan, Laura Winton of Core Nutrition Brisbane, and Michele Pocknee of Michele Pocknee Therapies.
The collaborative environment at Metabolic Health Hub allows patients to benefit from a team-based approach, where different health modalities work together to provide personalised, informed, and impactful solutions. Whether patients are looking to manage chronic conditions, or simply enhance their overall wellness, Sharon’s expertise in clinical nutrition, paired with the diverse skills of the Hub’s specialists, ensures that each individual receives the tailored support they need to achieve their health goals… naturally.

INTERVIEW YANA VAN DER BYL
What are some natural ways to boost the immune system during the holiday season First and foremost, get outside and soak up some beautiful sunshine! We absorb the majority of our vitamin D from sunlight, so enjoy that natural boost (while being sun smart, of course!). Keep your pantry stocked with immune-supportive foods, like fresh fruits and vegetables that are rich in micronutrients like vitamin C and polyphenols – think berries, cacao, green tea, pomegranate. Seafood is another great option, providing zinc, which is essential for immune function. And if you’re starting to feel a little under the weather, garlic and honey are powerhouse remedies – garlic has potent antimicrobial properties. Are there specific herbs or supplements you recommend for managing holiday stress Herbal teas are a wonderful way to manage stress, not only because they encourage you to take a few minutes to relax, but also because you can get blends that contain adaptogenic herbs like liquorice root, ashwagandha, and rhodiola, which support adrenal health. Medicinal mushrooms are also great adaptogens to consider including daily. When it comes to supplements, it’s always best to consult with a practitioner to
get individualised advice to ensure you’re reaching dosage requirements and absorbing the nutrients, but a high-quality magnesium bisglycinate powder and activated B vitamins are generally a great choice for stress management. How can I support digestive health during heavy holiday meals It may sound simple, but slow down when you eat. Chewing properly releases salivary enzymes which help to break down the food you’re eating, missing this first step of digestion can lead to bloating, indigestion, gut pains, and gas. If you are able to, add a source of bitters to your meal as bitter foods stimulate digestion – think rocket, leafy greens, radicchio, grapefruit and citrus. Pairing these foods with heavy or oily meals can ease the heaviness. Try peppermint tea after meals for bloating and fresh ginger and lemon tea for indigestion or nausea. Additional tips Throw the shame in the bin and let go of the guilt! Focus on eating nutritionally dense meals when you can and always have a source of protein to help with blood sugar balance, but don’t feel guilty for indulging that little bit extra. Holidays are meant for enjoyment, not guilt.
TRAINER TO THE STARS
INTERVIEW NATALIE MCGOWAN
Hollywood’s go-to fitness and wellness trainer Jay Cardiello, known for working with stars like Jennifer Lopez, Kendall Jenner, and 50 Cent, has a deep love for helping others transform their lives, both physically and mentally. With Australia’s rising obesity rates, Cardiello is teaming up with KAILO to launch a 12-week transformation programme focused on mindset reprogramming and sustainable change to support long-term weight loss.
What are your top three tips for weight loss that people may not expect Focus on sleep – a good night’s rest is essential for weight loss, as it regulates hormones and metabolism. Don’t restrict yourself too much – over-restriction leads to unsustainable results and can trigger bingeing. It’s about moderation, not deprivation. Finally, move throughout the day. It’s not just about workouts. Walking, stretching, and staying active outside the gym can burn calories and boost your metabolism. What advice do you have for anyone feeling unmotivated in their weight loss journey You can start small and give yourself grace. You don’t have to overhaul your life in one day. And remember, it’s okay to have setbacks – it’s part of the process. What role do nutrition and exercise play in achieving sustainable weight loss They’re both crucial. Nutrition plays a more significant role in fat loss – what you put in your body fuels your workouts and determines your energy levels. Conversely, exercise helps build muscle, improve metabolism, and support overall health. The key is consistency with both. How do you believe physical fitness impacts mental health, and what strategies do you incorporate into your training to promote mental wellbeing Fitness and mental health are deeply connected. Regular physical activity releases
endorphins, reduces stress, and helps with focus and self-confidence. In my training, I incorporate mindfulness techniques, like breathing exercises and meditation, to help clients connect with their bodies and stay present. I also encourage them to set achievable, short-term goals, which can help boost motivation and self-esteem over time. What’s a common misconception you hear from your clients about weight loss The most common misconception is the idea of quick fixes. Many clients believe drastic diets or high-intensity workout programs will yield immediate results. The truth is that long-lasting change takes time. Sustainable weight loss comes from consistency, not extremes. It’s about creating healthy habits that you can maintain over the long term. Why did you choose to partner with KAILO and what can people expect from the programme KAILO aligns with my mission of making fitness and wellness accessible to everyone. Together, we created a program that’s accessible, sustainable, and can impact people’s lives. The programme is designed to transform both the body and mind. It includes quick, effective workouts that can be done anywhere, along with nutritional guidance that promotes real, lasting results. We also focus on mental health strategies to help participants stay motivated and build resilience.

This interior style blends timeless Italian charm with a modern Australian touch. Think warm terracotta, earthy tones, rustic stones, curved lines, and raw linens—each element capturing the effortless elegance of the Italian countryside. Three guiding principles: let every piece exude understated sophistication, balance simplicity with subtle drama, and let natural materials take centre stage.

TWO HEARTS, ONE VISION
Rooted in heritage, crafted with heart. En Gold, a beloved, Melbourne-born furniture and homewares brand, weaves together Filipino artisan craftsmanship and modern design. Founded by husband-and-wife duo Steffanie and Matt Ball, this conscious brand embodies Steffanie’s cultural legacy. Now based in Cebu, the husband-andwife duo oversees every detail, ensuring authentic, quality pieces that bridge tradition and contemporary style.
What’s the best advice you’ve received that’s helped shape En Gold’s success The best advice we received was to stay authentic and true to our vision. When you’re growing a business, it’s easy to be swayed by trends or what others are doing. But staying grounded in our core values—creating meaningful, handcrafted pieces and celebrating artistry—has always been our compass. How has your relationship evolved through the journey of building En Gold together Our relationship has deepened in ways we never expected. Starting En Gold was a major test for us, especially since we did it while raising two young children. We faced countless challenges—late nights, tough decisions, and moments of doubt. In many ways, the journey of building En Gold has brought us closer as partners, both in life and business.
What’s a memory from this journey that always makes you smile When we travelled to a small village in the Philippines for the first time to meet a group of artisans. Our kids were with us and seeing them interact with the artisans was a special moment. It reminded us of why we started this journey – to connect with and celebrate craftsmanship from around the world. It felt like a full-circle moment for our family and our brand. What’s something you admire most about each other, both as partners in life and in business Steff: What I admire most about Matt is his unwavering dedication. He’s the rock of our family and our business. Matt: Steff is the heart of everything we do. She’s always across every aspect of the business while still being an amazing mother—packing lunches, making time for cuddles, and never missing a beat.
THE FRENCH CONNECTION
WORDS CAROLINE ATTWOOD
Originally from Paris, chef Clément Chauvin made his mark on the Canberra culinary scene as the sole owner and Executive Chef of the award-winning Les Bistronomes – a staple for well-heeled politicians and media
Taking on a beloved Brisbane institution is no mean feat, but Chauvin brings a steady, experienced hand to the table.
While many of the familiar dishes remain, such as the double crab soufflé, traditional French escargot, bouillabaisse, and steak frites, Chauvin has brought his own unique modern twist to classic French fare.
New dishes include Le Duo D’agneau de Printemps (spring lamb two ways), Le Pithivier (roasted pumpkin and mushroom pie topped with sage and brown butter crumble), and Le Boeuf-en-Croûte (beef Wellington with a rich red wine jus). The accompanying creamy buttered mash is worth a trip to Montrachet alone.
For dessert, Chauvin introduces his signature Soufflé à la Passion – a passionfruit soufflé with a chili explosion and coconut sorbet. It’s a fitting analogy for Chauvin himself: passionate, traditionalist, but with a refreshing joie de vivre that breathes new life into an old classic.
MANGIA MANGIA!
WORDS NATALIE MCGOWAN
With a fresh fit-out and all-new menu featuring classic Italian dishes with creative twists, five years after its opening, Massimo Restaurant & Bar has reasserted itself as a quintessential Brisbane foodie destination, perfect for a work lunch.
A great work lunch hinges on several key factors. First, the restaurant should be centrally located to eliminate any commute time. Next, the service should be efficient and attentive, ensuring your break doesn’t stretch too long. And last but certainly not least, the food must be exceptional, providing an escape that feels a world away, even though you’re just minutes from the office. On this rainy Tuesday afternoon, Massimo delivered on every front.
We were seated by the riverwalk, an ideal people-watching spot, and decided on drinks: the Prima Donna, a refreshing and zingy cocktail with watermelon and liquid sherbet, and Bellissima, a bright, citrusy number, because a mid-arvo tipple never hurt anybody. We were among the first to try Massimo’s new menu and check out the revamped space, which flawlessly encapsulates that flirty, Euro-holiday vibe and heroes a very Italian colour palette of olive green, Aperol orange, and ocean blue – the ideal atmosphere to forget about work for an hour.
The menu still boasts classic Italian dishes – house-made pastas, fresh seafood, and mouthwatering antipasti – but this time, there are a few inventive, modern twists throughout (think cacio e pepe spaghetti-filled croquettes and lasagne bites…drool). Ultimately, we settled on the Pronto Banquet, which
was very reasonably priced at $54 per person and was perfect for sharing –because at an Italian restaurant, family style is always the way to go.
As the name of the banquet suggests, the food started arriving promptly after ordering. Pronto indeed! To start, we enjoyed focaccia with whipped ricotta dip and oysters topped with tomato and limoncello granita. Then came the aforementioned cacio e pepe croquettes, which were an absolute delight, and calamari paired with a decadent, slightly spicy nduja cream – simply delicious.
The stars of the show were the mains: a tender loin of eye fillet in a flavourful beef jus and a rich, robust ragu di agnello cavatelli (slow-cooked lamb ragu). These were accompanied by an iceberg salad, beautifully rounding out the meal with some much-needed freshness, and some crispy roast potatoes for a few extra carbs, because why not? To finish: cannoli, of course. It didn’t disappoint.
So, city slickers, if you’re looking to spice up your nine to five, Massimo is calling your name with an Italian feast that’s well worth lingering a little past your lunch break for. Your boss will understand.
THE TASSIS TAKEOVER
Michael Tassis is a busy man. With a hefty portfolio that currently boasts seven restaurants – plus four more in the works – the secondgeneration restaurateur is navigating one of the busiest periods of his career to date.
We’re waiting for him to arrive for the interview at Opa, the well-loved Greek restaurant on Eagle St, when an associate of his lets me know how rare it is for Michael to have a spare thirty minutes. “He’s a hard one to catch,” she says. I feel honoured.
“Everything wasn’t meant to happen so close together,” Michael admits once getting settled near the bar area. “There’s a lot going on, but I knew that they would’ve been big opportunities to miss, so I just went for it.” The ‘everything’ he’s referring to is the opening and planning of several new venues, including Fatcow on James St, a luxe steakhouse; Longwang, Tassis Group’s first foray into Asian cuisine; Dark Shepherd, a Mediterranean-inspired, lambfocused restaurant arriving at The Star Brisbane; Pompette, an elegant French champagne
bar and restaurant also coming to The Star Brisbane; and two cutting-edge tenancies on the new Kangaroo Point Green Bridge –Stilts, a Brisbane-first, above-water dining destination, and Mulga Bill’s, a stylish, all-day eatery. And that’s all just this year. It’s now clear why he’s been particularly hard to pin down lately.
Hospitality runs in his blood, and it runs deep. Growing up in a Greek family, Michael was always surrounded by family and food –something he attributes his love of hospitality
“I THINK IT’S SURREAL – WE USED TO
ALWAYS LOOK AT MELBOURNE AND SYDNEY, BUT I THINK THEY’RE LOOKING AT US NOW.”
to. “I remember for family meals, the amount of food coming onto your table…. it was a lot. That’s probably why you see a lot of banquets on my menus as well. It’s all about sharing,” he says.
His journey in hospitality officially began when he left school at Grade 10 to help his family at Paragon Seafood Restaurant on the Gold Coast. In 2010, he launched his first venture, the iconic George’s Paragon Seafood Restaurant on Eagle Street, which laid the foundation for a string of beloved eateries, including Massimo, Yamas Greek + Drink, Fosh Bar & Restaurant, and Rich & Rare. It’s an impressive resume. Out of his restaurants, however, he doesn’t play favourites: “that’s like asking if I have a favourite child,” he jokes (for the record, he doesn’t have a favourite child either).
As we wrapped up our chat, I was curious what Michael thought of the Brisbane dining scene, given his major role in shaping it. His answer? We have seriously upped the ante.
“I think it’s surreal – we used to always look Melbourne and Sydney, but I think they’re looking at us now,” he says. One thing is abundantly clear: Michael Tassis’ hospitality empire is only helping take us to new heights.

CATCH SOME RAES
Luxe, stylish, cool: three words that are synonymous with the Raes on Wategos brand. A renowned boutique getaway attractively located by the pristine stretch of sand and clear blue water at Wategos Beach, Raes is arguably one of Byron Bay’s biggest drawcards. Now, the iconic coastal hotel is about to unveil its second property.
Raes on Wategos is gearing up to unveil an exciting new addition later this year: a second property located just a one-minute stroll from the original hotel. This extension will feature ten exquisitely designed suites and a range of indoor common spaces, including areas with inviting open log fireplaces for cosy gatherings. The grounds will be framed by lush tropical landscaping and host two standout lap pools – a 16-metre pool with a cascading waterfall and a 12-metre solar-heated pool, complete with a cabana and a chic lounge area for ultimate relaxation. Located less than 100 metres from the original Raes on Wategos, guests at the new property will also have access to the main hotel’s superb amenities, including the renowned two-hatted Raes Dining Room, helmed by Executive Chef Jason Saxby, the stylish alfresco Cellar Bar, and the luxurious Raes Spa.
“Our vision for the expansion is to honour the legacy of our original property while introducing new features and unique offerings that our guests will love,” shares Jordy Catalano, Managing Director at Raes.
Designer Tamsin Johnson’s creative approach infuses the new property with an eclectic blend of vintage and custom elements, capturing a seamless mix of Mediterranean flair and coastal elegance, according to Catalano.
As for dining, “Guests of our new property will enjoy a number of dining offerings, including poolside dining, where guests can enjoy a cocktail and
their favourite summer snacks—think chilled local seafood, freshly shucked oysters, and a killer swordfish katsu sando,” says Jason Saxby, Executive Chef at Raes, promising a feast that perfectly complements the luxurious new setting.
Jason’s top Byron Bay tips:
I love a long lazy lunch at Frida’s Field. The guys at The Hut do a great job of setting a high energy in their beautiful little hinterland restaurant as well. For dinner, I usually recommend Bar Heather, which has been a great addition to the local scene – it feels like a piece of the city in Byron. Moonlight is also a great place for some Japanese and killer drinks. As well as restaurants, there’s also a wave of fantastic smaller outlets popping up, including Eclair at the Bay and Masa Bakery, who are doing great things with pastry at the moment.
Jordy’s top Byron Bay tips:
Start with breakfast at High Life, and then enjoy lunch at The Hut or Doma. For dinner, you can’t go wrong with Mullumbimby Continental, Pixie, or Bar Heather. The Farm is great for families –there’s a working farm, chickens roam freely around the property, along with a restaurant, café, and produce store. I always recommend hiking Minyon Falls and a swim at Whites Beach. But of course, you can’t get a better spot than Wategos beach at sunset, watching the dolphins play along the horizon.
“Every
turn has something even more breathtaking than the one before.”
SOUTH ISLAND SOJOURN
New Zealand’s South Island is nature’s Instagram filter, featuring soaring peaks, shimmering lakes, and surreal landscapes. In 15 days, I hiked, sipped wine, and discovered hidden gems that made me fall in love with this magical place. Here are some highlights.
We kicked off our adventure in Christchurch at the Mayfair Hotel, the ideal spot for launching a South Island escape. Think modern luxury with a hint of Gatsby glam—plush velvet sofas, moody lighting, and great cocktails to set the tone for what lay ahead.
After picking up our car, we drove through Arthur’s Pass, feeling like we’d stepped into a postcard with the Southern Alps towering above us. This scenic drive took us to a clifftop beach shack on the West Coast, where we enjoyed ocean views and a starlit outdoor tub — such a perfect way to unwind after a long day.
At Punakaiki, the Pancake Rocks were a standout. We watched waves crash through blowholes in a breathtaking display. From there, we explored Hokitika Gorge, crossing a 90-metre suspension bridge over striking teal waters—such a stunning colour from the glacial flour.
Franz Josef greeted us with misty mountains and a cosy log cabin that felt straight out of a storybook. After a rainy hike, we settled by the fire with glasses of red wine—an ideal way to relax.
Next up was Wanaka, a picture-perfect town where we spent a few days soaking in the scenery and recharging—just what we needed at the halfway point of our trip.
The highlight, though? Doubtful Sound. Boarding the Fiordland Navigator with RealNZ felt like entering another world, surrounded by deep waters, towering cliffs, and cascading waterfalls. It was wild and breathtaking, with the outside world fading away as we sailed deeper into nature. The meals on board were excellent, but the views were unforgettable.
Queenstown brought us back to reality, offering a winter wonderland of gondola rides, great meals, and day trips to Arrowtown and local wineries. We wrapped up our time there with a soak in the Onsen Hot Pools, overlooking the Shotover River.
Our final stop was Mount Cook, where the snow-capped peaks were stunning. The Hermitage Hotel gave us front-row views of this natural beauty. We finished our adventure at Lake Tekapo, where the charming Church of the Good Shepherd, nestled among mountains and shimmering waters, provided the perfect grand finale.
