The countdown to 2022 is on! We’re just days away from celebrating the end of 2021 and diving headfirst into the New Year, but first, we’re winding the clock back to explore some of the best events to take place in the City Beautiful this November. Here are all the highlights, just in case you missed it! Outdoor fun and family activities drew thousands of Central Floridians to Lake Eola from November 6th-7th for Fiesta in the Park! Now in its 50th year of existence, Fiesta in the Park is the largest arts & crafts festival event series in Orlando. While live entertainment at the Walt Disney Amphitheater was a highlight of the free event series, the real stars of the show were the hundreds of artists and crafters that came from all over the United States to display and sell their original work. Spanning the entire walkway of Lake Eola, the fiesta proved to also be the perfect opportunity to obtain one‑of‑a‑kind gifts for the holidays. Following last year’s record-breaking festival, Electric Daisy Carnival (EDC) returned to Orlando for its 25 anniversary celebration with the best in electronic dance music, full-size carnival rides, performers, and unforgettable art. From November 12th-14th, EDC featured scores of the world’s top dance-music artists alongside plenty of fun-filled festivities on stages that represented a distinct union of technology and nature. From the stage decor and sound to the pyrotechnics and performers, many unique elements go into bringing the world of EDC to life and the 2021 show was no different.

Now in its thirty-fifth year, The Festival of Trees transformed the Orlando Museum of Art into a glittering wonderland filled with sparkling trees, vignettes, and stunning décor for visitors of all ages. From November 13th-21st, the museum showcased designer Christmas trees of all sizes, holiday vignettes, custom hand designed wreaths and table décor, a gingerbread village, tabletop displays and much more. Made possible by Council of 101 and designed to the theme “Sparkling Holiday Traditions”, each of the designer trees showcased the stylings of Orlando’s finest artists. The 9-day event kicked off with a glamorous gala and the festival fun continued with daily musical performances, family-friendly
entertainment and delightful programs for all ages throughout the week. Each piece was available for purchase with all proceeds benefiting the Orlando Museum of Art. On November 13th, more than 3,000 beer lovers came together to experience unlimited tastings of craft and premium beers from local breweries and around the world at the 6th Annual Orlando Beer Festival. Located in Festival Park, attendees of the festival also enjoyed a wine tasting experience, beer pairing demonstrations, a complementary photobooth, tasty eats from the Food Truck Court and live music to keep the party going all afternoon! VIP ticketholders enjoyed a wide range of added benefits including early entry to beer tastings, commemorative gifts, exclusive food samplings and much more. Proceeds from the event benefited the Central Florida Brewer’s Guild. Taking place Thanksgiving weekend and inviting attendees to discover the world around them, FusionFest 2021 is one of Downtown Orlando’s most unique cultural celebrations. In addition to a cornucopia of dishes from around the world, the two-day event featured interactive experiences and contests celebrating fashion, music, dance, short films and more, all designed to honor each person’s heritage while exploring how we influence each other and create our own unique identity. Representing 160 different heritages, FusionFest 2021 was free to attend with food, beverages and merchandise all available for purchase as attendees celebrated diversity, inclusion and collaboration in Central Florida. November was the last month to enjoy the EPCOT International Food & Wine Festival so hopefully you managed to get your visit in! Presented by CORKCICLE, the festival invited theme park visitors to take a fun and flavorful taste tour journey across six continents. It was truly a delicious celebration filled with global marketplaces, live entertainment and more. From amazing performances like Voices of Liberty, Mariachi Cobre and the Jammin’ Chefs to entire menus of family fun like Remy’s Ratatouilleinspired scavenger hunt and Emile’s Fromage Montage, there was something for everyone to enjoy.

There is something about the holiday season that awakens within us a love of the classics, from the timeless elegance of winter fashions to sipping hot chocolate in front of a cozy fire. THE HISTORY OF
Tea
The first sip of tea brings many positive qualities to those who enjoy it; A warm and earthy flavor, medicinal benefits, a source of social gatherings and so much more. However, where did this gift from earth originate? The true origin of tea is shrouded in mystery. Legend has it that in 2737 BC, Chinese Emperor and herbalist, Shen Nung, was sitting under a tree while his servant was boiling water, when a leaf from a tea plant known as Camellia sinensis fell into the water. Shen Nung was intrigued by the concoction and thus, tea was born. The rest of the world did not learn of China’s tea secret until the early 1600s when Dutch traders started importing it into Europe in large quantities. In 1662, the Princess of Portugal, Catherine of Braganza, married the newly restored monarch, King Charles II, and became the Queen of England, Scotland and Ireland. Due to this union, Portugal provided several shipments of luxury items, one of them being a chest of tea since the drink was a popular beverage amongst Portuguese aristocracy. It has been said that Queen Catherine popularized the drink among British nobility and, subsequently, to the wealthier members of society. It was at this time that the invasion of tea in the country had well begun. Tea rose in popularity and in response to the new demand, the East India Company established a monopoly in the UK on the import of tea and placing its first order in 1664. However, high taxes on black and green tea meant that only the wealthier classes could afford social tea drinking and became an activity associated with luxury.
By the 18th century, Britain’s demand for the beloved social drink was so strong that people began to smuggle it into the country in significantly larger quantities than the amount that was imported legally. Eventually, in 1783, this led to the tea tax being lowered from 119% to 12.5%, virtually relinquishing the illegal smuggling trade overnight as the new lowered price meant that it was no longer profitable to smuggle. Drinking tea became an everyday part of life, regardless of wealth or social status, causing revenues to grow higher than ever before. Statistics show that, to this day, about 84% of Brits drink tea on a daily basis.
What Is an Afternoon Tea? Afternoon tea is a British tradition of sitting down at around 4 p.m. in the afternoon to indulge in tea, sandwiches, scones and cakes. Afternoon tea became fashionable in the early 19th century, thanks to Anna, the Duchess of Bedford. It was never intended to replace dinner but to fill in the long gap between lunch and dinner at a time when dinner was served as late as 8 p.m. As we all know, lifestyles have changed drastically, and schedules are busier and more unpredictable, making it nearly impossible to sit down for tea in the late afternoon. In more recent times, many save this ritual for holidays and special gatherings. The tradition is still quintessentially British, and many Brits still make time to sit and enjoy the propriety and civility of the quaintest of English dining customs.

FEATURED RECIPE BISON/BEEF SHORT RIB recipe by CHEF GRANT KELLS
INGREDIENTS 5-6 Bison or Beef short ribs, 10-14oz each 1.5 tsp. each salt and pepper 2 tbsp. olive oil 3 garlic cloves, crushed 1 large brown onion, chopped 2 celery ribs, chopped 2 carrots, chopped 2 tbsp. tomato paste 2 cups (500mL) dry red wine 2 cups (500mL) beef stock/broth, low sodium 2 sprigs thyme (optional) 2 bay leaves
INSTRUCTIONS Preheat the oven to 160°C/325°F. Sprinkle salt and pepper all over the beef. Heat oil in a large oven-proof pot over high heat. Add half the ribs and then brown aggressively all over (about 5-7 min. in total). Remove and repeat with remaining ribs, then remove from pot. Turn heat down to medium. Add onion and garlic into the same pot and cook for 2 minutes. Add carrots and celery; cook for 5 minutes until carrots are softened and sweet. Add tomato paste and cook for 1 minute. Add wine, broth, thyme and bay leaves. Stir until tomato paste is completely dissolved. Return beef into liquid, arranging them so they are submerged. Cover with lid and transfer to the oven and cook for 3 hours, or until the meat can easily be pried off the bone with forks. Remove beef carefully, keeping the meat on the bone. Cover to keep warm. Strain all liquid in the pot, pressing juices out of the onion, carrots, etc. Return sauce to pot and bring to simmer, stirring occasionally. Adjust as necessary; simmer to reduce/thicken, add water to thin, season with salt and pepper, if needed. Place beef on a serving plate and spoon the sauce on the beef. Serve!

Though cold and refreshing in Florida weather, this drink combines the pine of Christmas trees and bright cranberries with the warm, spiced flavors of mulled wine and gingerbread. INGREDIENTS 2 Rosemary sprigs 1-2 small dashes Angostura Bitters .25oz (1/2 tbsp.) Cinnamon Cordial 1 bar spoon (1/2 tsp.) Pineapple Juice 1oz (2 tbsp.) Cranberry Juice 2oz (4 tbsp.) Tanqueray 10 Gin .75oz (1.5 tbsp.) Q Ginger Beer
INSTRUCTIONS Take the first rosemary sprig, tear into small pieces and drop into the small empty shaker tin. Next, add the bitters, cinnamon cordial, pineapple juice, cranberry juice and gin. DO NOT add the ginger beer yet or the carbonation will splash your drink EVERYWHERE. In a large shaker tin, add some ice and pour the contents of the small tin into the large tin. Set the mouth of the small tin into the mouth of the large tin, giving a smart tap on the top to seal the two tins together. Quickly and vigorously shake the cocktail until both tins turn cold, approximately 8 seconds. Separate the tins and strain the drink through a fine mesh strainer into a large cocktail glass. Pour the ginger beer over the top of the cocktail, allowing it to mix with the rest of the drink. Finish it off with the second rosemary sprig to garnish after hitting the sprig against the back of your hand to help express the oils. For a large batch at parties, simply multiple the ingredients by the number of people. Then, combine all ingredients in a large bowl with ice and stir, allowing whole rosemary sprigs to steep in the liquid. CREATE YOUR OWN CINNAMON CORDIAL: Place 2 cinnamon sticks in 16oz of water and boil the water until it turns dark brown and reduce by about half. This should take 15-20 min. Turn off the heat and discard the sticks. Add 480g sugar to the water and stir until the sugar is fully dissolved. Pour the mixture into a ball jar and tightly seal the lid. Let the mix cool to room temperature before using it and store it in the fridge.

ou’ve heard about it, you’ve seen it as a garnish and maybe you indulge in it from time to time. The infamous and most
coveted culinary item in the world – Caviar. Associated with pure luxury, this delicacy of sturgeon fish eggs is rare and lavish. All fish eggs are known as roe and although all caviars are roe, not all roes are caviars.
Caviar comes from 27 different species of sturgeon, but the market is dominated by Beluga, Sevruga and Osetra. Beluga caviar is the largest, rarest and the most expensive earning its nickname as “black gold.” The highest quality caviars come from eggs harvested from wild female sturgeons found in the Caspian Sea or Black Sea as they move from saltwater to fresh tributaries to lay their eggs. Every type of caviar has its own unique qualities; For example, Beluga caviar is smooth and buttery with a nutty flavor similar to hazelnut. Glistening caviar eggs can range in color from a deep black to a greengrey hue. True caviar is known for its “Caspian pop”, which is when you can feel the eggs burst in the mouth. Caviars, are divided into two grades depending on qualities such as size, color, firmness, taste and aroma. Grade 1 caviars are known to be the firmest and richest eggs while Grade 2 caviars are slightly lower in quality.
Caviar is a very nutritious food, packed with proteins, amino acids, iron and vitamin B12. Every step in getting caviar to the consumer is part of a delicate, time-consuming and labor-intensive process. The demand for real sturgeon caviar always exceeds the supply.
PROPER CAVIAR ETIQUETTE Now that we understand what caviar is, the question now becomes; How is it properly consumed? As a luxury delicacy, it must be consumed with class and etiquette. When around friends and family, you may not have to worry as much about how to eat caviar with proper etiquette. However, if you're in a fine-dining environment, you may want to follow a few basic protocols. It’s recommended to refrain from indulging too much when served caviar as an hors d’oeuvre, no matter how much you might be tempted by its luscious flavor. It’s considered gauche to eat more than two ounces, which amounts to about two spoonfuls. Make sure not to chew the caviar, as you will lose a lot of the flavor that way. Instead, use your tongue to feel the beads of fish eggs and taste the buttery fat. Finally, always remember to take small bites. It’s an expensive product and meant to be savored and enjoyed. Start with about a half-teaspoon and embrace the experience of the flavor and texture.
Some experts believe that the best way to taste caviar is to place a small dollop onto the top of your hand between the index finger and thumb. When you eat something with your hands, your brain automatically suppresses the flavor signal associated with what your skin tastes like. This means that you’ll taste only the food itself, ensuring that you can enjoy the delicate flavor of the caviar that you’re testing out without having to resort to an inert spoon. This method originated in Italy during the Renaissance period when it was not recommended to share spoons and was considered a legitimate way to serve the delicacy. If you’re having caviar at a fine dining restaurant with people who may not know about the tradition, take the time to share your wealth of caviar-based knowledge. Sometimes, though, it may be a better idea to stick with the caviar spoon or other customary methods.

THE THREE MOST COMMON WAYS OF CONSUMING CAVIAR IN A FINE DINING ENVIRONMENT The first and most common method of consuming caviar is to keep it in its original container, chilled and served on a bed of crushed ice in a crystal bowl. It is eaten with a special spoon made of bone or mother of pearl, as a metal spoon is said to alter the taste.
The second most common way of serving caviar is as an appetizer served on what’s known as a blini, which is a small, warm Russian buckwheat pancake typically rolled together with sour cream. The final method of serving caviar is by combining it with neutraltasting foods, always ensuring it is a simple combination that highlights the flavor and keeping in mind that the caviar is supposed to be the “pièce de resistance” of the meal.
There are many different options of neutral-tasting foods, but some of the most popular ones include toast points or crackers lightly coated with unsalted butter, stuffed potato skins with smoked salmon, cucumber slices, or the most expensive way is usually by serving it on oysters. A lot of these options are traditionally garnished with sour cream, fresh herbs, lemon wedges, chopped onions or hard-boiled eggs.

What inspired you to go on your new adventure? When I slowly started to lose my interest in law enforcement, I decided to try and follow my true passion by approaching a clinic in my area that had a strong standing for hormone-replacement treatment. The owner didn’t have anybody doing sales, marketing, or any type of outreach for the company. I told him that if he matched my salary at the time that I would work for him and help his company grow, to which he agreed.
The clinic at the time had about 800 clients, which is generally a good number. However, after I started working for him and used my presence on social media to market his company, we went from 800 patients to a bit more than 4,000 patients in nine months, quadrupling the clinic’s net profit.
The owner was so impressed and happy with my efforts that he decided to award me with 20% of the company. I would now become a business owner. Due to this, I slowly took on more of a managerial role and continued to grow the company with a more hands-on
approach.

unfavorable practices in the clinic. I approached the owner about them, and my request
for
an
immediate
stop
on
those
practices
was
denied.
After
these
irreconcilable differences that I could not simply look past, I gave up my rights to the 20% ownership that I had previously been given for my hard efforts and decided to walk away.
This was the moment I decided to open my own clinic. I continued to push myself and educate myself as much as possible and become as much of an expert as I could possibly be in this field. I went into education courses around the world and was usually the only non-medical business present. I learned that most medical issues could be linked to a decline in hormone production.
Who do you believe are your biggest competitors? And, how do you differ from them? I don’t think that we have anybody that I would really consider competition. I’m not saying that there aren’t other clinics that do hormone therapy, hormone optimization and peptide therapy because there are very good clinics out there with very good doctors, and I applaud them for what they do. Many clinics are in a medical gray area on the outskirts of the normal, mainstream medicinal world, yet they are almost acting like mainstream medicine anyway because they’re still pushing drugs. They’re not pushing a desired effect. They’re not pushing for a way of living.
I feel like the medical world is very cold and is not a very friendly industry. It lacks a refined customer-service approach and is very impersonal. We have taken a very cold and unpleasant process and turned it into a family environment where we really want people to feel like we are there for them.
We care about their health. We care about what’s going on in their lives. We want to hear somebody tell us that they had sex with their spouse seven times that week. We want to hear comments where our patients feel like we helped save their marriage or that they have the gained the energy to “play with my kids again.” We want to hear that they don’t feel tired all time, and that they just got new promotions because they can think better and they wake up in the morning excited about life. I truly believe that this is where Aspire Rejuvenation differs from the rest. We focus on building relationships with our patients, we educate them, and we give them information and never push products that aren’t essential.
We are creating a beneficial lifestyle that doesn’t just stop at the medications. We offer diet, nutrition and counseling. We refer people to coaches and trainers. Not just on

physical
side
but
the
mental
side,
too.

you

somebody’s

What is the biggest challenge you have faced on this journey? How did you overcome it, and what did you learn from it? When I left the old company. I started my new company in Orlando and I attempted a partnership with an investor who opened a sister clinic. The initial idea was to join them and

time
they
were
being
run
somewhat
in
conjunction with each other but still as separate entities. The whole idea was for he and I to start a 50/50 corporation. Discussions continued along the way, and paperwork kept stalling,
which
eventually
led
to
the
deal
falling
through.
Although
this
was
a
disappointment at the time, I know it to be a blessing in disguise as his company ended up closing doors after only five months.
I learned a very valuable lesson about paperwork, documentation and contracts. I am republishing a book later in 2022 called, LEO to CEO (Law Enforcement Officer to Chief Executive Officer), where I am highlighting and elaborating on all the challenges that I have faced along the way but also how I was able to apply some of the skills that I had learned as a police officer that helped me excel as a businessman. As an entrepreneur from law enforcement, I think people don’t give enough credit to law-enforcement officers and even military personnel. There are key skills that you learn in those professions, such as dealing with high-stress situations that for me have been completely indispensable in the position I currently find myself.
My biggest lesson building this company was just maintaining and staying true to my vision. I went into crazy debt to build this company. I took everything that I made at the previous
company
and

the
combination
of
my
determination
and
the
complete
support of my wife, we managed to turn Aspire Rejuvenation into what it is today.
I see you’re a fit and healthy individual yourself; how does your facility play a role in your fitness regimen? II believe that leading by example is a huge thing. I live the anti-aging lifestyle. I live the regenerative medicine lifestyle, and, with my bodybuilding and fitness background, it is something I have a strong passion for. I do testosterone optimization therapy, and I’m on thyroid-optimization

If I was not doing what I preached, it would look a bit odd to me. I wouldn’t be able to promote the lifestyle, and I wouldn’t be able to look at what I’m doing in a positive way. If I didn’t live the lifestyle that I promote, I would feel like a con. I always joke and say I think I’m a bad businessman because I don’t really care how much money we make; I care about how many people we help. But, then again, I think some of the biggest corporations in the world started with someone that just wanted to help and just do the right thing. People want to make fast money, but fast money burns out fast. I want to grow my company the right way by making people’s lives better and sometimes even saving them.
What would you like every potential future client to know? I want to assure and have everyone understand that the moment someone walks through the doors of our clinic to speak to any member of the Aspire team that they are cared for. We care about their well-being. We care about what’s going on in their lives and that they’re not just going to be a number. They’re not just going to be a refill where we get some money in our pockets. We are true to the philosophy of trying to improve as many lives as possible. That’s our goal! The more people we help, the larger we can grow, which, in turn, will allow us to help even more people. The money is of little concern. Yes, I want to have a nice lifestyle and have nice things, of course! Everybody does. However, I would never be able to sacrifice my morals or beliefs and push these products down people’s throats just to make a quick buck. I truly believe in this product and my carefully selected team. I would love every single person to at least come and try, come see what we can offer. Should we not be able to offer you anything, don’t despair. That would be a great thing because it means that you’re in perfect health, and our team will beam a smile as you walk out our door.

BCI's THE NEWEST TECHNOLOGICAL & MEDICAL CONTROVERSY By now, most people have heard about the newest and most controversial innovation coming to the market. Not to fret if you haven’t - this topic is consuming the world of science and hitting news outlets around the globe at a rapid pace. This innovation is none other than Brain-Computer Interfaces, otherwise known as BCIs. BCIs are devices that allow their users to communicate or control external computer devices by reading brain signals through a device implanted in the brain. Research on BCIs started at the University of California back in the early 1970s when the development of BCIs was primarily focused on applications that could help restore damaged sight, hearing and movement. The goal was to assist individuals experiencing medical impairments or difficulties. However, it has recently become a frontline topic in the technological world ever since Elon Musk entered the industry, announcing a large investment of $100 million in an innovative technology known as Neuralink. There are several different devices with different methods of adaptation. Musk’s company procedure requires a surgery that implants its “neural lace” technology electrodes in the brain to measure signals. To insert the Neural Lace, a tiny needle containing the rolled-up mesh is placed inside the skull. The mesh is then slowly unveiled upon injection to encompass the brain. This allows for a much more accurate and in-depth collection of neural signals from the brain than non-invasive alternatives.

This connection could tap into increased memory storage, enhanced machine-learning capabilities and telepathic-type communication without the need to speak. It could also be used to improve a user’s experience when it comes to using multimedia, VR or video game devices. The mission is to develop BCIs that improve human communications considering AI. Regina Dugan, who led Facebook’s secretive Building 8 hardware lab, presented Facebook’s plans for a game changing BCI technology that would allow for more efficient digital communication. According to some experts, the combination of humans and technology could be more powerful than artificial intelligence. For example, when we make decisions based on a combination of perception and reasoning, neurotechnologies could be used to improve our perception of a situation and aid us in making decisions. This could help us in many different situations. However, there are many different reasons as to why this technology is becoming controversial. The most debated being the possibility of these devices being hacked and potentially causing these contraptions to develop the ability to alter or take away the free will of the individual using the device. Posing the question; Where is the line drawn between the individual being aided in a decision as opposed to the contraption making the decision for them? This technology has already produced miracles, restoring the hearing, vision and motor skills of many impaired individuals around the world. With many positive features, it also has the equal capacity to be dangerous. The functionality of the human brain is still something that we are far from fully understanding. Many think that we have made great progress, but not enough to fully understand the overall effects and influence that BCIs could have on the human brain.

After several months, this event is still the talk of the town.

This extravagant event was full of unimaginable beauty and creativity not just from Pierre Britt himself but also from all of London House’s creative minds that came together to put on a show to remember. Pierre outdid himself by body painting live nude models, painting the London House culinary team’s kitchen uniforms and finishing his huge canvas of a young Queen Elizabeth II during the art-dinner experience. This masterpiece was later auctioned off, leading to a fun, playful and intense bidding war between London House owner, Adrian, and a London House member. The piece was sold for $30K along with multiple other canvases and custom-painted designer handbags that had been exhibited and displayed throughout the club. A portion of the proceeds were later donated to the ‘Give Kids the World’ charity. One member even commissioned his sport coat to be painted by Pierre, then and there, for an additional $1,000 donation! The creativity did not stop there. Many hours were spent setting up the perfect ambiance for this dining experience showcase, from artistic lighting like dark rooms set up with lots of haze, glow-in-the-dark smoking centerpieces and spotlights on the live performances. Chef Grant designed a fully interactive four-course dinner, providing guests with edible paint and brushes. The Pastry Chef, François, also participated by sculpting a dessert live in the main dining room during the proceedings. After it was completed, it was deconstructed and served to guests to complete the evening. London House guests experienced all of this while enjoying the sounds of a live performance from a Bossa nova band and singer, which is Pierre’s music of choice while painting. The night was a shining experience for absolutely everyone involved, from London House team to the members and their VIP guests. When asked how the experience went, Pierre said, “It was, for sure, one of the best nights of my life! It was very special to be able to work in synergy with the team at London House to produce a perfect creative merger between the art, the music and the cuisine. The whole experience was sheer beauty and elegance, and I cannot wait for our next event together coming up after the new year!”

fashion
world

a

industry.
Unfortunately, in last few decades, a sector known as 'fast fashion' has taken over and dominated the industry. Fast fashion is inexpensive clothing produced rapidly by massmarket retailers in response to the latest trends, typically replicating high-fashion runway collections, often taking as little as 15 days for a garment to go from the design stage to being sold in stores. Some of the biggest players in the fast fashion world include Zara, UNIQLO, Forever 21 and H&M.
There are approximately 80 billion new pieces of clothing purchased every year, 400% more than just 20 years ago. The average American today generates 82 pounds of textile waste each year. Fast fashion items are not designed to last, and the production of said items are having huge impact on global economics, human rights and climates around the world.
The environmental impacts of fast fashion include the depletion of non-renewable resources, emission of greenhouse gases and the use of massive amounts of water and energy. The fashion industry is the second-biggest consumer of water and is responsible for 10% of global carbon emissions. This is more than all international flights and maritime shipping combined or as much as the entire European Union uses in one year. According to the UN Framework Convention on Climate Change, the fashion industry’s emissions will skyrocket by 60% by the year 2030. It requires about 700 gallons of water just to produce one cotton shirt, and textile dyeing is also the world’s second-largest polluter of water since the water leftover from the dyeing processes are often dumped into ditches, streams or rivers.
Fast fashion is not just a detriment to the environment but also has stronghold on the use of cheap labor. The textile industry has long been known for being the darkest corner of the economic world. Slave labor, child labor and other horrors like wage theft, exploitation and inhumane working conditions are very common, especially in developing countries such as Argentina, Bangladesh, Brazil, China, India, Indonesia, Philippines, Turkey and Vietnam. Rapid production means that sales and profits supersede human welfare.

HOW TO HELP?
One way that shoppers are trying to reduce their consumption of fast fashion is by buying from secondhand
sellers that usually have a significant markdown from the garment’s original price; this makes normally unobtainable quality a more attainable achievement for the consumer. Another solution that is currently gaining traction is that of renting clothing. Although these options are becoming increasingly popular, none of these developments alone will fix the problem.
The best advice comes from Patsy Perry, who is the senior lecturer in fashion marketing at the University of Manchester. She pushes the philosophy that, “Less is always more” and that in order to help with the environmental and social issues caused by the fashion world, it is advisable for the buyer to be very selective with the products they purchase. Making sure that the garments are of utmost quality, ensuring the longevity and lifespan of every item purchased. Selecting each individual item wisely could maximize the diversity in one’s wardrobe without the need of having multiple items of the same kind. By purchasing less quantity of better quality allows the consumer to allocate larger funds to each individual purchase, knowing that the items will not have the need to be replenished as often. Hence, why, when it does come to buying an item, high fashion may just be the way forward.

The Z06 is set apart by its beating heart – the all-new 5.5L LT6, the highest horsepower, naturally-aspirated V-8 to hit the market in any production car, ever. An all-new flat-plane crankshaft design entices drivers to push the tachometer to a lofty 8,600 rpm, creating 670 hp. Engineers spent two years crafting a distinctive, rich exhaust tone unlike anything ever heard from a Corvette. The sound and appearance of the Z06 take direction from Corvette Racing. The direct knowledge transfer from the track to the street has never been more evident. The Z06 chassis has underpinned Corvette Racing’s C8.R since it began competing in 2020. Thanks to a shared chassis, similar engine architecture and exterior proportions, the C8.R has been referred to internally as the Z06 hiding in plain sight. “Racing was the reason the Z06 was developed in 1963, and it continues to support development of the road models that make
them better on the street and the track,” said Tadge Juechter, executive chief engineer, Corvette. “It also means we’ve tested the Z06 on the best tracks around the world, from Circuit of the Americas here in the United States, to the Nürburgring in Germany.” The Corvette C8.R shined during IMSA’s 2020 sports car championship series, capturing six victories and seven pole positions, and setting the fastest class race laps in six events. During the 2020 series, Chevrolet won the GT Manufacturers title – its 13th since 2001. Jordan Taylor and Antonio Garcia and the No. 3 Corvette C8.R crew won the GTLM Drivers and Team championships. NEW ANTIVIRAL PILLS TO TREAT CORONAVIRUS ARE SHOWING PROMISE BY PRIYANKA RUNWAL
Years before the rise of the COVID-19 pandemic, virologists started a quest to find drugs called antivirals that can protect people against emerging coronaviruses. The journey has been slow and failures have been frequent. But with Britain’s authorization this week of Merck’s new drug molnupiravir, and a cash infusion into antiviral R&D, the outlook for these treatments is getting much brighter. Unlike vaccines that can prevent infection, antivirals act as a second line of defense, slowing down and eventually arresting progression of a disease when infections occur. They’re also important when effective vaccines aren’t available against viral diseases, as is the case for HIV, hepatitis C, and herpes. But developing antivirals is an expensive and difficult endeavor. That’s especially true for acute respiratory diseases, for which the window for treatment is short. In the case of SARS-CoV-2, the coronavirus that has unleashed the devastating COVID-19 pandemic, researchers have resorted to repurposing old drugs or compounds that were being tested against other diseases. “That’s typical,” says Katherine Seley-Radtke, a medicinal chemist at the University of Maryland, Baltimore County. “Every time a new virus emerges or an old one re-emerges, you pull out what’s there in the cupboard to see what works.” So far remdesivir, originally developed by biopharmaceutical company Gilead Sciences for hepatitis C and Ebola infections, is the only antiviral drug approved by the U.S. Food and Drug Administration to treat COVID-19. It must be administered via injection while a patient is in the hospital, although there isn’t consensus regarding its ability to treat COVID-19.

Experts think oral antivirals like Merck’s are set to be the most promising tools to work alongside vaccines at combating the pandemic. Provided they are affordable, antivirals could be especially important among people who remain unvaccinated either out of choice or due to limited access and economic constraints. “People don’t mind taking pills,” Seley-Radtke says. “You can stockpile them. You don’t need specifical conditions to store them. You can ship them all across the world.” In June 2021 President Joe Biden announced an investment of more than a billion dollars to advance the development of antivirals for COVID-19. As part of the same plan, he also promised an additional $1.2 billion in funding toward discovering new compounds that can treat SARS-CoV-2 as well as other emerging viruses with pandemic potential. “Finally, the government and funding agencies are taking it seriously,” Seley-Radtke says of antiviral development. “We cannot continue to sit back and wait for the next pandemic to occur. We have to be proactive. We have to be prepared.” As of now, there are a handful of other experimental antivirals in early stages of clinical trials, and at least a few others might join the list. “We’re experiencing an opportunity to test antivirals for an acute respiratory disease unlike any we’ve ever had,” says Sheahan. “Getting antivirals approved is worth celebrating. Getting more than one approved for a single disease will be even more amazing.”

Dr. Lipkin has done extensive research at Harvard’s Forsyth Institute in the Department of Cytokine Biology and had his research published in the American Journal of Pathology. Dr. Lipkin is a Gator and Magic sports fan. He enjoys exercising at the gym, visiting our local theme parks, playing classic video games and spending time with his wife, Amy, and two daughters, Alexis and Emily.

Dr. Aaron E. Isler, D.D.S., M.S. is originally from Detroit, Michigan.
He attended Michigan State University and then University of Michigan , School of Dentistry where he received his D.D.S. degree. He then attended the University of Florida , School of Dentistry where he received his Endodontic certification and a Master of Science (M.S.) degree in Oral Biology. He also completed an Endodontic fellowship at the University of Florida. Dr. Isler has done extensive research on rotary files and the effects of endodontic irrigants on microbial growth. Dr. Isler had his research published in two articles in the Journal of Endodontics and is an Adjunct Clinical Professor at the University of Florida School of Dentistry, Department of Endodontics. Dr. Isler is an avid sports enthusiast. He’s a fan of any Detroit sports team, all the Orlando sport teams and the Gators, Spartans and Wolverines college teams. Dr. Isler enjoys attending sporting games, playing ice hockey, playing golf and spending time with his family, especially his daughter, Olivia.

Viscogen Gerald R. Mattia D.C., Director Gerald R Mattia D.C. has been practicing chiropractic for forty-five years. Even before that his life has not been ordinary. At the age of fifteen he had been given 6 months to live. “I was born with a severe heart condition called aortic stenosis.” People suffering from this condition have an aortic valve in their heart that gradually degenerates and therefore the heart cannot function properly. Heart surgery in the sixties was not as successful as today. He also had bad allergies. His mother was not ready to give up. On a friend’s recommendation, she took her son to a chiropractor. “The aortic valve stopped closing by 92 percent and my allergies were gone,” Dr. Mattia said. He was able to live the age of 35 when he received his first new aortic valve and the success rate of heart surgery was higher. Dr. Mattia became a chiropractor because of this. He earned his chiropractic degree from New York Chiropractic College and opened a practice in 1977. Dr. Mattia practiced in New Jersey from 1977 to 2001. During that time he received many awards: Chiropractor of the Year 1996 and Sports Chiropractor of the year several times. He was appointed to the Board of Chiropractic Examiners, on which he served for six years, by the governor of New Jersey. He was also a board of director for the International Chiropractic Association and the Northeast Regional Director. Dr. Matta has been the president of International Chiropractic Association Sports Health and Fitness Council from 19962011 during which he joined Arnold Schwarzenegger every year in Columbus, Ohio for the ICA Fitness Symposium. The Symposium is held in conjuncture with the Schwarzenegger Fitness Weekend. In 2001 Dr. Mattia retired from his NJ practice and moved to Florida to begin semi-retirement. But the quiet time did not last long. All during his career Dr. Mattia has taken care of many athletes from middle school to professional. His love for sports has helped him understand that spinal care for athletes is required for better performance and

When asked to share some memorable cases in her career, Dr. Nguyen spoke about a case of a young mother who was legally blind due to mature cataracts and insurance delays. By the time this young mother was referred to Dr. Nguyen, many had feared that her sight was permanently lost. Dr. Nguyen performed the cataract surgery and soon after, the mother was able to see! Roger L Weeden Generational Lawyer, Champion of Liberty In 1836, Roger’s Great Great Grandfather, Joseph E. Weeden was admitted to the practice of law in New York City, and later became the pioneer attorney in the Village of Randolph. “Mr. Weeden is considered an excellent lawyer, a strong advocate, and a conscientious adviser. The success that has attended him during his professional career has been due to untiring energy, constant industry, and close application to business. His personal integrity is irreproachable.” The History of Cattaraugus County, New York, 1879. In his well established practice, Roger has carried on this incredible legacy of advocacy and instilled the same in his son, Attorney Alexander Weeden. Through his Capital case work, Roger has become skilled at accessing funds through the Justice Administrative Commission to assure his defense team has access to its own forensic experts, psychologists, reporters and investigators and are able to match whatever resources the government may attempt to bring in the prosecution of his clients. Roger firmly believes in a quote from the revered attorney, Clarence Darrow, “You can only protect your liberties in this world by protecting the other man’s freedom.” Over the last several decades, Roger has taken on and tried some of the most difficult, complex and serious cases in Central Florida, including over thirtyfive homicide cases. Most notably, he has twice represented women falsely accused of murdering their husbands and obtained jury acquittals for both. Roger has obtained acquittals based on self-defense and absolute innocence.
In his most recent Capital trial, the jury returned a verdict for Life in less than 45 minutes. Although a lawyer may not use the allure of past successes to suggest promises of similar results, it clearly suggests a certain knowledge, experience and skill level, which Roger has and brings to every case, whether it be a homicide, drug trafficking or simple theft. Roger’s skills as a criminal defense attorney have been recognized by his peers within the Central Florida Association of Criminal Defense Lawyers, who in 2017 bestowed on him the Joseph W. DuRocher “Foot Soldier of the Constitution” award, recognizing his significant achivements in defense of the wrongfully accused. As evidenced by his community involvement in social justice matters, Roger is a firm believer that a Champion of Liberty must be an advocate in arenas in and outside the courtroom. In that regard, he is a member of the Lawyers Committee for Civil Rights, he is President of the Local Chapter of the National Lawyer’s Guild, he is an active member of the National Police Accountability Project and has recently been selected by Floridians for Alternatives to the Death Penalty to serve on their Board of Directors. Roger has a Bachelor of Arts from the University of Florida and a Juris Doctor from DePaul University in Chicago. He is a member of the Florida Bar, the Illinois Bar, the Federal District Court and the Federal Eleventh Circuit Court of Appeals.

Stephanie Heald, PhD One to the First Power
There have been several famous individuals credited for the quote, “People don’t care what you know, until they know that you care.” Regardless of which author you choose to recognize, this quote holds a special message. In 2000, new college graduate Stephanie Heald entered a fifth-grade classroom and wasn’t exactly sure what she was doing, but she knew she it was her calling to make a difference for those in her presence. Dr. Heald first began developing, “One to the First Power” in 2013 after she witnessed an incident where her vehicle was struck several times in crossfire. It was then that she decided to share her own message in hopes of making a positive impact in the world. As a classroom teacher, an administrator for several high stakes’ nationwide education initiatives, to now an Assistant Professor in the field of higher education, Dr. Heald has truly seen the power all
individuals have in impacting others, ultimately making the world a better place. Educators particularly have the power to make a difference for their students, families, and communities, and once they understand the power they have in their role, they can elevate learning experiences. Kelly Mansour, DMD Pediatric Dentistry of Central Florida Kelly Mansour joined Pediatric Dentistry of Central Florida, a well established, private pediatric dental practice, in 2010. Originally founded by Dr. John Bishop and Dr. Carlos Bertot, she was one of the first, board-certified female pediatric dentists in the Greater Orlando area.

Dr. Kelly Mansour moved to Orlando with her husband, Dr. David Mansour, directly after completing her pediatric dental residency at the University of Florida, Shands Hospital. She has been a Florida Gator from the very beginning. She graduated with a Bachelors degree in Food Science and Human Nutrition with a specialization in Dietetics from the University of Florida. As an undergraduate student, she was a member of the prestigious Cicerone student ambassador organization in addition to being the University of Florida’s female mascot, Alberta! She was a 4-year varsity letter winner as Alberta and participated in everything from local weddings to National Championship games. She was inducted into the University of Florida’s Hall of Fame for her academic excellence and leadership and was her graduating class’s student commencement speaker in 2004.

Ms. Pace began her legal career in 1999 when she moved to Central Florida. Ms. Pace was an Assistant State Attorney in Orange and Osceola counties where she tried many cases ranging from misdemeanors to felonies. In 2001, Ms. Pace continued her trial practice while working with a local Plaintiff personal injury law firm. During her tenure as a Plaintiff 's personal injury attorney, Ms. Pace predominately handled nursing home negligence and medical malpractice cases. Ms. Pace then took her savvy trial skills to one of the largest statewide insurance defense firms. For almost 16 years, Ms. Pace’s practice consisted of an array of cases involving automobile accidents, first party property, premise liability, trucking, legal malpractice, and construction defect litigation. As a shareholder, Ms. Pace was a member of the firm's transportation and construction defect practice groups. She also presented on many legal topics at claims conferences and seminars for a variety of insurance companies. Three years ago, Ms. Pace became a partner at O’Connor & O’Connor LLC. Ms. Pace joined the firm in October 2018. Ms. Pace now focuses her practice on premise liability, automobile negligence, wrongful death and other liability related cases. She represents several

Beth Steele BETH’S BURGER BAR Beth Steele is an Up-State New York native who now calls Orlando, Florida her home. She has earned the nickname “Wonder Woman,” from her friends and family, due to her tenacious and relentless pursuit for excellence in her personal and professional endeavors. In 2011, due to her mother Joyce Steele’s passing from cancer, Beth created a non-profit organization named Shades Hopes Dreams. Shades Hopes Dreams is an organization which encourages everyone to boost the fight against cancer. Seeing her mom go through so many triumphant highs and gut wrenching lows throughout her battle with cancer is what gave Beth the inspiration to help so many others. Shades Hopes Dreams is the result. Beth aspires to help improve the hopes and dreams of the men, women and children who are suffering from the disease. Inspired by her mother’s strength and passionate spirit, Beth was once again motivated to stand out from the crowd. Her vision was to create a restaurant that boasted a highly
customizable build-a-burger menu along with refrigerators full of domestic and imported beers and wines. The idea of the burger bar was derived from Beth’s habit of customizing her burger orders at other restaurants. In December of 2012, Beth opened her first restaurant in Downtown, Orlando and named it “BETH’S BURGER BAR.” It did not take long for Beth’s Burger Bar to be recognized by the community as the place to go get the “Best Burger in Town.” In 2013, Beth’s Burger Bar won an award from A-List for “Best Local Burger.” The accolade was followed by several other awards throughout the years, such Orlando Magazine’s “Late Night Dining Award” from the years 2016-1018 and “Foodie Awards” in 2017. All of the burger bar’s success and admiration from the community led to her opening several other locations. Residents of Central Florida and visitors alike can now enjoy Beth’s Burgers at four different locations; The City of Edgewood, Lake Mary, Lake Cay and the Orange County Convention Center. Beth has also made it a personal goal to continuously give back and make a difference in her community and bring joy to people’s lives. She accomplishes this goal by participating in the organization Big Brothers & Big Sisters and hosting monthly charity events at her Beth’s Burger Bar locations. Beth also participates in and donates to other charities such as M.S, Autism, Orlando Strong, Tough Biker and local schools. When Beth is not out conquering the work force or fulfilling peoples search for the best burger in town, she can be found in the middle of the sea enjoying her favorite hobby; offshore fishing. Beth has made it a mission to try and land a record breaking Swordfish. Beth’s current record is a beastly 461 pound swordfish…evidence she truly is the “Woman of Steel”.

News and highlights of the past year By Riesa Pascal
After a year like 2020, I think we were all a little nervous going into 2021… fortunately, it’s not exactly hard to outshine a year with a global pandemic and lockdown so let's hope the trend of improving upon 2020 continues in 2022! With that being said, the ball drop is right around the corner so let’s gear up for the New Year by taking a look at the top news stories to come out of 2021.
VACCINES With last year being all about the Coronavirus, it’s only appropriate that we kick off our 2021 reflection with mention of the vaccine rollout! This year the US entered a new phase of the ongoing COVID-19 pandemic with several vaccines becoming FDA approved and in many cases, mandated around the world. With the rollout, the world saw confirmed cases begin to plateau and decrease though coronavirus variants have prompted health officials to advise folks to continue to take appropriate precautions. CAPITOL RIOTS On January 6th, a mob of MAGA supporters attacked the United States Capitol in Washington, D.C. seeking to overturn Trump’s defeat in the 2020 presidential election. A week after the riot, the House of Representatives impeached Donald Trump for incitement of insurrection which made him the only U.S. President in history to have been impeached twice. Fortunately for Trump, he was acquitted by the Senate the following month and just a few weeks after Joe Biden and Kamala Harris made history by becoming the oldest U.S. President to take office and the first female, black and Asian American vice-president, respectively. PRINCE HARRY AND MEGAN MARKLE INTERVIEW In early March, The Royal Family was left reeling after Prince Harry and Meghan Markle dropped bombshell accusations against Buckingham Palace in a tell-all interview with Oprah. Meghan Markle tearfully revealed to the tens of millions of people watching that the stress of royal life made her suicidal when she was five months pregnant. She dramatically claimed Archie was denied the title of prince because he is mixed-race and said Kate Middleton made her cry before she married Harry. On a positive note, the couple also revealed that they were pregnant with their second child, a girl whom they went on to name after Queen Elizabeth’s nickname, Lilibet.

KIM KARDASHIAN AND KANYE WEST DIVORCE After almost seven years of marriage and amidst months of speculation, Kim Kardashian officially filed for divorce from Kanye West. The reality TV star sought joint legal and physical custody of their four children and fortunately neither party contested the prenup that was in place. The couple wed in May 2014 just a year after Kim divorced her second husband Kris Humpries. BEYONCÉ MAKES GRAMMY HISTORY During the 2021 Grammy Awards, Beyonce made history when she became the most-awarded woman in Grammy history. The 39-year-old singer broke the record for most wins ever by a singer in addition to most wins by a female artist with a whopping 28 awards. Although Beyonce stands alone with the most wins as a singer, the 28th win tied her with renowned record producer Quincy Jones. DEATH OF DMX Speaking of Grammys, the world was shocked to learn that Grammy-nominated rapper DMX had died at just 50 years old on April 9th. The rapper, born Earl Simmons, spent a week fighting for his life after suffering a 'catastrophic' heart attack and reported overdose. Though best known for iconic songs such as 'X Gon' Give It To Ya,' he also earned more than 40 film and television credits, proving himself to be an equally talented actor. He remains the only rapper in the world to have had his first five albums debut at No. 1, even beating rap superstars like Jay-Z, Kanye West, and Eminem. DEATH OF PRINCE PHILIP Unfortunately celebrity deaths are a given within any year and 2021 was no exception. On the exact same day the world said goodbye to DMX, Queen Elizabeth also had to say goodbye to her beloved husband of 73 years. Prince Philip passed away peacefully at 99 years and was the longest-serving consort in British history and the oldest serving partner of a reigning monarch. Other notable deaths from the year included Alex Tribek, Dustin Diamond, Larry King, Cicely Tyson, and Biz Markie among many other famous faces. BILLIONAIRE SPACE RACE With a combined net worth of $400 billion, Jeff Bezos, Elon Musk and Richard Branson all decided to invest enormous sums of their wealth into chasing their individual space travel dreams. Virgin’s Sir Richard Branson beat out his competition to become the first private industrialist to send himself into space in his own vehicle, but Bezos went 13 miles further in Blue Origin just 9 days later. In October, Blue Origin welcomed William Shatner on board for a second launch which made Shatner the oldest person to ever go into space.
