> If you’re looking for a lakefront setting for all seasons, planning a romantic getaway or family vacation, conducting conferences or business meetings or wishing to experience a memorable marriage ceremony celebration, this place provides the perfect setting. The Village of Elkhart Lake is pristine, beautiful and charming destination on the shores of a crystal-clear lake located in the heart of Wisconsin’s Kettle Moraine State Forest. Situated about an hour’s ride north of Milwaukee and two hours from the state capitol in Madison, the Village of Elkhart Lake is a year round oasis not to be ignored. This approximate 300 acre, 120’ deep natural spring-fed lake, about a mile wide is basically surrounded by three fabulous resorts and numerous other ancillary lodging and entertainment venues, certain to satisfy the wants and desires of all visitors, regardless of age or persuasion. Air Tran Airways offers non-stop service from Orlando (MCO) to Milwaukee (MKE)… the flight takes approximately 2 ¾ hours and can be upgraded for an additional nominal fee. Our visit began with a walking tour of each of the three primary resort properties. These tours were all encompassing and each required approximately one hour so that all elements of the facilities were reviewed, giving us insight into both the history of the resort as well as the features each provide. Although too numerous to detail, we were introduced to the dining, recreational and Spa facilities as well as the room and condominium accommodations.

The Osthoff Resort, originally constructed in 1885, was completely rebuilt in 1995 and quickly established itself among the top echelon of luxurious properties. By keeping with the original styling and preserving its rich history, guests can enjoy the spirit of days-gone-by with the modern convenience and luxury of a AAA Four Diamond hotel. The Siebkens Resort is a landmark, turnof-the-century resort purchased in 1916 by Laura and Herman Siebken. Currently owned and operated by the fourth generation of the Siebkens family, guests will find relaxed surroundings abundant with antiques. The Siebkens Resort with its beautiful landscaping and sandy beach features one, two and three bedroom condominiums, all with full kitchens thereby offering amenities allowing for more of a family style experience. “Two Hearts are One”

During the summer months beginning in 1908, to add some spice to their lives, hotel operators, realizing that the state left law enforcement up to the local officials, brought in slot machines and gambling became openly active. This source of entertainment survived for the next 20+ years when police raids became a nuisance and by 1945 most illegal gambling establishments were shut down. Then in 1952 with Elkhart Lake teetering economically, local business leaders formed a coalition of volunteers supported by the Governor, to organize road racing on a 6.5mile periphery around the lake. Normally held on Sunday afternoons, the races were attended by upwards of 50,000. Later that year three races were conducted on Saturdays and Sundays containing a total of 238 cars. Over 100,000 spectators attended these races. Talk about Elkhart Lake getting ‘Back on Track’! Some of the activities we tried:
Neither of us had ever been fly-fishing and I wasn’t about to attempt it but good old Sven decided to give it a go! He was picked up and taken to the private and secluded waters of the Kohler River Wildlife area in the beautiful Kettle Moraine in Sheboygan County. water resistant overalls with rubberized boot feet), Sven ventured out into the cool waters to try his luck. The beauty of this is that all the trout and smallmouth bass one catches are trimmed, dressed and filleted and ready for either grilling or that famous and traditional “Friday Night Fish Fry” at area restaurants and pubs. (Be sure to bring sunscreen, sunglasses, camera and rain gear) www.tie1onguideservice.com As he was leaving the water Sven heard some “mooing” coming from the nearby bushes. Being a curious sort he discovered a baby calf, all alone, apparently separated from its mother. Being so close to the road and afraid he might be injured or killed, Sven picked up this little guy (all 90 lbs. of him) and carried him back to the farm about 500 yards away. We were assured the calf would grow up to a life of happiness as a stud. (I’m certain that Sven, the animal lover would have brought the calf home otherwise!) The untouched photo that we titled “Two hearts are one” is priceless. We found this little place called “Two Fish Gallery” tucked away in a colorful, early 20th century mission style bungalow on Rhine Street surrounded by a magical garden with whimsical works of art displayed throughout the lovely grounds. Sven and I tried our hand in a “pottery class” taught by owner/artist Patrick Robison. As Sven excelled creating a few beautiful works of art, I on the other hand was still trying to get the bubbles out of the clay! Artist Patrick Robison patiently guided me and amazingly the wet ball of clay slowly transformed itself into a… well OK, a lopsided piece of art. Nevertheless, it’s exciting to see the simplicity of fashioning a lovely piece of art using some basic and rudimentary tools not gen-

erally considered when viewing the finished product. This was certainly a worthwhile endeavor and also a lot of fun. The Two Fish Gallery & Sculpture Garden features fine art and crafts by regional and national artists. Showcasing special exhibitions and classes, the gallery and gardens are open year-round. I purchased this beautiful “bird house” created by Patrick’s lovely wife Karen, to put on my Christmas tree. For more information please visit: www.twofishgallery.net Next we took a relaxing pontoon boat tour aboard the ‘Elkhart Queen’ a 30-passenger vessel operating between Memorial Day and Labor Day. Our captain and tour guide expertly offered his knowledge of the history and legendary stories that the lake possesses in an approximate one-hour ride along the shore, viewing many of the magnificent homes and breathtaking natural surroundings visible from the water. Those wishing for a bit more privacy may rent the boat by the hour or can plan a great party with family and friends. We had to see how that famous Wisconsin cheese is made so we toured the last cheese factory in the U.S. that produces the larger wheels of cheese, some weighing up to 12,000 lbs. Henning’s Wisconsin Cheese is a fourth generation family owned and operated cheese factory based in rural Kiel,Wisconsin that features an on-site cheese store and museum. Over the years, Henning’s Wisconsin Cheese has received many national and international awards thanks to

Master Cheesemaker Kerry Henning whom handcrafts Henning’s Cheese. “Let it be said that it’s no easy feat to graduate as a ‘Master Cheesemaker’” says Kert, Kerry’s brother, whom eloquently explained all the nuances of cheese making. “You won’t buy a half pound of sliced American but will be offered tastings of the many award winning Cheddar and Colby cheeses produced in flavors ranging from basic Cheddar and Colby, to fruity concoctions containing blueberries, cinnamon apple, mango, cherry and cranberry.”

Well, despite all of this, the restaurant here at the golf club still succeeded in putting out one fantastic ‘Friday Night Fish Fry’ for all of us!
I can still remember the amazing, bold and salty taste of the 6 Year Extra Sharp Cheddar Gem, the peppery and slightly spicy Peppercorn Heritage Cheddar, and the mind blowing Mango Fire Heritage Cheddar made up of white cheddar cheese mixed with mango and habanero - WOW!
We also had the opportunity to spin a few laps around ‘America’s National Park of Speed,’ a scenic 4-mile, 14 turn track. Although the village no longer permits open road racing which was banned in 1955, this “Road America” facility, located on 640 acres has become one of the country’s premier racing venues attracting 700,000 visitors a year from every corner of the world. Economic impact studies show that $70 million dollars are generated annually. Road America is a great place to hold ‘group events’ offering high-speed excitement and trackside fanfare. We were also impressed that with all the cheese being processed, we did not sense anything in the way of an offensive odor. Every year Universal Studios proves why they are all things Halloween. I had the honor of meeting one of the creative designers for the theme park’s annual Halloween Horror Nights and if you think this year was a showstopper…wait until 2012! In case you missed it, on September 23rd, famous killer icons crept and slashed their way into Central Florida, filling a maze of eight haunted houses and live shows. Lady Luck encouraged thrill seekers to take a gamble inside the world of haunted houses set
back in time to reflect the roaring 20’s with gangsters and ghouls of the night. Heart racing, nail biting, screaming adventures typically aren’t my cup of tea but the twists and turns of this five week tradition, proved a success as thousands of fear enthusiasts from around the globe packed Universal Studios. Thrill seekers of the air, land and water were in attendance for the annual Luxury Lifestyle Jet Port Reception marking the first of many events lined up for the Festival of Speed October 7th-9th. Vintage and contemporary aircrafts were on display with exotic cars typically seen on the silver screen. High performance custom motorcycles, cars, boats and planes were set inside an aircraft hangar which for many

was the ultimate chest of toys for “big kid” high rollers who enjoy the luxury lifestyle. The evening included delectable cuisine alongside exotic vehicles with an open bar and a live and a silent auction to benefit Arnold Palmer Hospital for Children. Although the 6th Annual Festival of Speed at the Ritz-Carlton Orlando, Grand Lakes was a wash out due to the rain that lingered over Central Florida during the three-day event, it has been rescheduled for November 13th so mark your calendar! New to the Central Florida circuit is Food & Wine Weekends at the Waldorf Astoria Orlando. This year, there’s been even more to savor as Waldorf Astoria Orlando presented Food & Wine Weekends, Sept. 30 – Oct. 30, 2011. We joined in to celebrate fine wine and the culinary arts, including Grand Pairings wine dinners at the famed Bull & Bear restaurant. Wine connoisseurs were also on hand to walk guest through the pairing of flavors to match the most delightful cuisine. A portion of the proceeds for the Grand Pairings event benefited the Bridges of Light Foundation. To top it off each guest was treated to a gift bag filled with gift certificates for dinner and spa treatments, golf discounts and specialty one of a kind chocolates made by the Waldorf Astoria pastry team…Yummy! One man that knows exactly how to satisfy any craving is internationally acclaimed Chef Roy Yamaguchi. In celebration of Roy’s 10 year anniversary in Orlando, this legendary Chef and Roy’s Restaurants Founder / owner joined Roy’s Orlando Executive Chef Mac Lynch and his talented Executive Chefs from Roy’s Tampa, Roy’s Sarasota and Roy’s Jacksonville. This celebratory 5-course dinner, paired with wine by Stag’s Leap Wine Cellars was out of this world.Their Hawaiian fusion expertise on October 10th was a true reflection of the unique quality found at each individual Roy’s Restaurant. From the Olive Oil Poached Octopus Salad to the Trio of Crab Tortellini, Peppercorn Crusted Ahi Tuna, Autumn Spiced Pork Shank and Chocolate Beignets…every course had a distinct taste that was as good as it looked. page. There you will get a glimpse of various fashion shows, trunk shows and VIP events that took place October 9th-15th. Circa 1926 Restaurant featured a private showcase of couture designs by Legacy Style which was produced and hosted by yours truly, Talitha Vickers. The dueling runway show was the highlight of the storyboard whimsical evening where guests were delighted by up and coming designers Jasion Radcliff and Andrew Brown’s creations. The night began with a cocktail hour that featured sketches of couture gowns. The artwork came to life during the fashion show as diverse models from around the globe were flown into Central Florida to embody global couture. Models literally returned to the drawing board as they posed as living art as framed canvases after dessert. Guests enjoyed smoking cocktails, over 40 appetizers by Executive Chef Jason Jessmore, a dueling couture runway show by Legacy Style and an overflowing Champagne / dessert room before featuring a live charity auction sponsored by Vitamin Water Zero, Ferrari Maserati of Central Florida and Opici and locally made GT Vodka to name a few. Not to be outdone, Luma put on a fashion show display with Orlando native designer Joy Cioci. Cioci recently debuted her second collection during New York Fashion week. Luma, known for being the hot spot on Thursday evenings lit Winter Park on fire with their 2nd Annual “Fashion Fete” VIP event on October 13th. The event produced by Jane Layne Events previewed Fall /Winter runway-worthy designs from Cioci’s collection styled by Tammara Kohler of Fused Fashion. The look of the evening was modern cinema as the 40’s girl was splashed with a fashion forward contemporary 2011/2012 look. Orlando Style and Peroni sponsored the event where donations helped benefit The American Heart Association’s Go Red For Women Movement. Many guests wore hip chic hues of red in support of the cause. Guests were treated to an array of passed hors d’oeuvres and complimentary Van Gogh Crystal Apple Martini’s and Peroni Beer. Runway show on October 15th featured an opening performance by the Orlando Ballet that kept everyone on their toes in anticipation of the fall trends. The celebration of local fashion boutiques and the design community had a refreshing vibe and synergy at the hands of creative director Anna Nash. Models were elegant, trendy and chic as they represented the essence of classic Winter Park designs for the 5th annual runway show. Last but certainly not least, a one of a kind food and beverage extravaganza was held October 22 in Winter Park’s Central ParkWest Meadow. The Cows ‘N Cabs inaugural culinary fundraiser was hosted by Food Network’s Adam Gertler host of the” Kid in a Candy Store” television show. The westernthemed event featured a live auction, entertainment and a band with proceeds benefiting the Coalition for the Homeless, Community Outreach and the YMCA of Central Florida. Guests participated in wine and craft beer tastings and gourmet delights from 4 Rivers Smokehouse and 4 Rivers Sweet Shop, Luma on Park, K Restaurant, The Ravenous Pig, Citrus Restaurant, Sweet Traditions, Meat House Grocer, Cocina 214, Cress Restaurant and Pizzeria Valdiano. Taylor Lautner was born on February 11, 1992 in Grand Rapids, Michigan and was raised in a Roman Catholic home with his sister, Makena in the small city of Hudsonville, Michigan. At the young age of six, he began to train in the martial arts, which picked up quickly and soon thereafter was invited to train with the seven-time world karate champion, Michael Chaturantabut. When Taylor turned eight, he represented the United States in the twelve years and under division in the World Karate Association, where he later became the Junior World forms and Weapons champion. At twelve years old, he was a three-time Junior World Champion. At the encouragement of his martial arts trainer, Taylor entered the world of acting at the age of seven. He and his family traveled back-and-forth between Los Angeles, California and their home in Michigan so that Taylor could audition for acting roles. When Taylor turned ten, his family made the decision to move permanently to LA. In 2001, Taylor landed his first TV-film role in the movie Shadow Fury. He later appeared in small television roles on The Bernie Mac Show, My Wife and Kids, and Summerland. He also did several voice-over roles in the animated TV-series Danny Phantom, Duck Dodgers, and What’s New Scooby-Doo?. In 2005, he landed a role in the comedy film Cheaper by the Dozen 2, as the character Elliot Murtaugh, and later that year received his first breakout role as the lead actor in The Adventures of Sharkboy and Lavagirl 3D. What is this food coma you ask? Don’t act so surprised. We’ve all experienced it, especially on Thanksgiving Day. Scientifically, it is a rush of blood to your stomach and intestines to aid in digestion, which decreases the blood flow to other areas, causing feelings of lethargy. Simply stated, it’s that “I need a nap” feeling you get after eating a large meal. Not to mention the overwhelming need to unbutton your pants. There are ways to deal with this holiday “gremlin,” and I’m here to share just a few tips.
If you can’t avoid dessert, just have a sliver of a slice or 3 bites to satisfy the sweet tooth. Large amounts of food can cause fatigue, but sucrose is the main culprit. When eaten, insulin is released to help break down the sugar. When insulin increases so does serotonin and melatonin… making you very sleepy.

> In 1987, my Franciscan winemaking predecessor Greg Upton created a stir in Napa Valley by fermenting Chardonnay using only the wild, native yeasts from the vineyard, emulating the great wines of Burgundy. Even now, many winemakers in California consider this a lost art —too risky, too arduous to attempt. The wine was called, appropriately, Cuvée Sauvage. It was quickly recognized as a landmark for Napa Valley, and opened an exciting new chapter in Franciscan’s portfolio of handcrafted wines. I am honored to continue Greg’s inspired creation. For Cuvée Sauvage, we start with our finest lots from cool Carneros. We don’t add yeast—we just put the juice in barrels in a special corner of the cellar and wait. And wait. Unlike cultured yeasts, wild yeast comes in many strains, reflective of the vineyard terroir. They work in a relay, and as one strain finishes, another starts, each adding its own personality to the wine, giving layers of complexity to each lot —which is why we go to the extra effort of “going wild.”
Each barrel has a distinct aroma and flavor profile.Thus, Cuvée Sauvage offers a unique opportunity to exercise the art of blending. Only 10% of the barrels make the final cut. I consider 2007 to be a very good vintage. The dry winter season led to a small crop, offering excellent flavor intensity with bright fruit and richness on the palate. > Weddings are as old as time. For centuries, couples across the world have participated in this special celebration. Yet, weddings always feel fresh and exciting, and never grow old. Each year, new and stylish trends are seen at weddings for the first time. In September, Orlando Style had the opportunity to learn about current and upcoming wedding trends for 2012, at a wedding showcase hosted by the Hilton Orlando. As a bride-to-be myself, I was especially excited to attend this event with my mom. The talented hosts at the Hilton Orlando taught us how to create a classic wedding with a modern and fresh twist. Some top wedding trends this 2012 to be on the lookout for: Transformative Lighting and Innovative Décor:
the room, which created an exciting and modern theme with a swanky vibe. The next night, the hotel joined with Occasions by Shangri-la and Greenery Productions to create a remarkable evening. After enjoying appetizers in a stunning room that was Indian themed, guests then moved into a magnificent ballroom that had a unique and breathtaking tropical setting. The creative team used uplighting to paint the walls with a bright red hue; a “wow effect” instantly occurred as guests entered the room. They also used green uplighting to illuminate the creative décor—such as the palm trees, bamboo shoots, tapestries hanging from the walls, and an indoor waterfall. These effects made guests feel as if they were in a different part of the world. Combining uplighting with décor is an easy way to highlight a theme, while creating a room that guests will be talking about for years to come. A New Twist On Food:
Gone are the days of simple centerpieces and draped walls during a wedding reception. Now, brides can transform a room to resemble any theme—or even country— that they desire. Intertwining uplighting with innovative décor is a hot trend this 2012 wedding season. Created by beams of light projected from the floor to the ceiling, uplighting is a stylish and easy way to add bursts of color to a room. Additionally, this visual effect helps establish the theme by illuminating the décor and setting the mood of the room. Traditionally, a bride chose between plated meals or stand-alone buffets for the wedding reception. At the wedding showcase, we learned about a new option for brides. Referred to as “action stations,” this option provides a fun and modern approach to serving dinner and desserts at weddings. Dinner Meets Modern:
Action stations are similar to buffets, but with a unique twist. Imagine a room filled with multiple food stations, each with a dedicated chef. When a guest approaches the station, the chef creates a personal and memorable experience. Depending on the type of dish, the chef might cook on site, assemble the dish in front of the

guest, or highlight the dish and explain its ingredients. During the wedding showcase, the Hilton Orlando showed us some of their popular action stations. I quickly learned why actions stations are becoming a stylish trend at weddings. At one of the action stations, for example, a chef pan-seared individual filets of mangrove snapper. The guests had a delightful time learning about the ingredients from the chef, while watching him create this delicious dish firsthand. At another action station, a chef assembled “edible martinis” at an ice bar; this fun dish included a delicious appetizer inside of a martini glass, and was lightly spritzed with blueberry vodka. Dinner stations are a new, stylish trend that I predict will become a wedding favorite. Dessert Redux:
Dessert action stations are also becoming very trendy, and can instantly update a classic wedding. For instance, one of my favorite action stations at the wedding showcase featured “wedding cake push pops,” which including yellow cake with a Meyer lemon filling, and a vanilla buttercream. They were assembled by Chef Anna Young, under the direction of Master Pastry Chef Thomas Huebner at the Hilton Orlando. As Chef Young explained, “I want [guests] to eat something that is going to trigger a memory…a really good feeling.” Farm to Fork Ingredients:
In recent years, many Central Florida residents and restaurants have started cooking with fresh, local ingredients. This
trend has also influenced the types of foods being served at weddings. As explained by Executive Chef Louis Martorano at the Hilton Orlando, serving “farm to fork” ingredients at weddings is a very popular and growing trend. In fact, many brides have started requesting that all or most of the ingredients for the rehearsal dinner and reception come from local sources. At the Hilton Orlando, for example, brides can now create wedding menus where all of the ingredients come from farms located within 100 to 150 miles of Central Florida. Brides can even request that all fish and seafood be caught off the Florida coastline. A New Year Brings New Wedding Trends:
This upcoming wedding season, plan on seeing new ways to add a modern twist to a classic wedding. The wedding showcase at the Hilton Orlando, led by Director of Local Catering Teresa Bernstein, and her amazing and very talented staff, showed us a multitude of popular trends for upcoming weddings. We also experienced first-hand why the Hilton Orlando is a perfect venue for brides. Weddings are no longer oneday events; many brides plan an exciting itinerary for guests throughout the wedding weekend. Built in 2009, this spectacular hotel offers the unique capability of being able to host all of the wedding events on-site. The Hilton Orlando boosts a variety of beautiful spots for the wedding, rehearsal dinner, wedding brunches, bridal showers, and other wedding festivities. For instance, it has a multitude of elegant ballrooms to choose from, which can accommodate weddings of

all sizes. The hotel also has three wonderful restaurants on the property, all which are perfect for wedding events. The Hilton Orlando’s convenient location, outstanding service, creative and talented chefs, and very accommodating staff makes it an ideal wedding spot. Also, wedding guests will have a wonderful time staying overnight at the Hilton Orlando. The hotel offers 1,400 hotel rooms, including executive rooms and suites. Having stayed at the hotel overnight myself, I was very impressed with the elegance of the guest rooms. Luxurious and top-rate, the guest rooms at the Hilton Orlando are a perfect spot for guests during a wedding weekend. Also, guests are sure to enjoy the magnificent spa on property, which offers a variety of services to choose from. They also will have a fabulous time at the hotel’s stellar pool area. It includes a variety of fun features, such a fabulous resort pool that is perfect for families, poolside cabanas to relax in, and even a lazy river! I am so excited for the upcoming wedding season and can’t wait to incorporate these modern twists on classic themes into my ‘own’ upcoming wedding in Orlando this 2012. Foster a pet with special needs, like a young animal or one recovering from illness or surgery. These pets need a little more one on one attention. You and a pooch can paw your way around as a pet visitation program team member. These pets will bring comfort and holiday spirit to sick children, brain-injured patients, and senior citizens.

For future veterinarians, a hospital helper is a great start into the animal care health profession. You get to experience it all, from cleaning cages to wrapping surgical packs. If you like teaching, become a “creature teacher.” You can teach children about responsible animal care in camps, shelters, and classrooms. Even if you’re not a natural with Fido or Snowball, assist in the office, or put your party animal skills to use by helping plan and execute a charity event, so these animals can have a second chance in life. These are only a few of the many positions available. Volunteer programs are available for all ages, so the whole family can volunteer together, and it doesn’t require a lot of your time. At animal organizations, like the SPCA, you can help by giving as few as 8 hours a month. Sign up by attending an open house event, complete an online volunteer orientation, and fill out an application. If your volunteer position requires additional training, the organization will gladly provide it.
