> Typical travel within India includes the usual “circuit” of Delhi, Agra, Jaipur, and Mumbai, the familiar five-star hotel stays and barreling from one destination to the other by rickshaw, car, or train. What is missing from these itineraries is a chance to see the most remote and staggeringly beautiful regions of India with the same relative ease. The village experience can be enhanced with a minimum three-night stay at Shakti 360˚Leti, a magnificent four-room mountain retreat perched at 8,000 feet in the Kumaoni foothills overlooking the Ramganga Valley, living up to its name with 360° views and floor-to-ceiling glass windows. There is no Internet, no cell coverage, and only solar power — a real opportunity to unplug and reconnect with nature. Situated in an ancient rhododendron forest, Shakti 360˚ Leti is about as off the grid as one can get. A 90-minute trek along a narrow trail to the hotel takes guests past waterfalls, brooks, and hills lined with rice paddies and rows of wheat. This location is so remote that supplies must be carried in on foot. For a totally different Indian experience, the state of Sikkim, which is the least populous and second smallest in all of India, is culturally and topographically similar to its neighbors Bhutan, Nepal, and Tibet. Perfect for the nature-lover, Sikkim has over 4,000 plant species and 450 exotic orchids, a diverse indigenous bird population, 650 kinds of butterflies, and endangered species like red pandas, snow leopards, and blue yaks. The likelihood of seeing the peak of Mt. Kanchenjunga, the world’s third highest mountain, is the same as seeing a tiger in the jungle… about 70 percent. Fluttering Buddhist prayer flags line the trail to Rinchenpong Monastery, home to the magnificent statue of Lord Buddha, revered as the Ati Buddha statue. Guesthouses in Bagdogra and Randhu Kandu are traditional, wooden Sikkimese construction, while Sandyang Lee is exclusive to Shakti and more modern in construction. This remote, fertile, and enchanted land facilitates learning about the region’s religious history and present day Buddhist and Hindu cultures. Finally, the Ladakh region of Jammu Kashmir, vernacularly referred to as ‘Little Tibet’ because the region is culturally, geographically, and anthropologically tied to Tibet, is a bastion of Buddhist calm amidst a dramatic moon-like, cratered landscape. > Jim Breuer, one of America’s best known Saturday Night Live comedians and named one of Comedy Central’s “100 Greatest Stand-Ups of All Time,” has written his first book I’m Not High: But I’ve Got a Lot of Crazy Stories about Life as a Goat Boy, a Dad, and a Spiritual Warrior. On the road touring for his book, Jim brought his comical stand-up skits to Orlando Improv on November 12-14. You just released a book on October 5th, how has the launch been? -I’m on my book tour now and I think I’ve accomplished everything I wanted to accomplish with it. There’s no cursing, nothing dark or ugly, and it’s a book that anyone can relate to. What inspired you to want to write a book about real life situations? -The honest answer is that, besides me being a comic I always had a deeper connection with people. I always thought I was more in tune with keeping my morals, God, and my faith stronger then any church goer ever did. The experiences in my life were the mission of the book.

How do you feel about the result of it? -Beyond ecstatic. The natural reaction from people is “It was not what I expected but wow, I can really relate.” When you write real life situations anyone can relate to it. I think it’s a book where the word of mouth will spread like crazy. Are you attempting to change your image as a comic? -Change to a degree. It’s not so much change, its something I’ve always been. I think now is a good time to let everyone know what else I have to offer. What do you have planned when your tour is over? -I’m really not sure, Music or TV. I prefer the all around family world where I can entertain 10 year olds to 60 year olds. My

I always had my eyes set on that goal and I realized really young that when you put your eyes on a goal and you stay there, it really does happen. <

And while the World Health Organization has declared an end to the H1N1 pandemic, the organization expects the virus to circulate for years to come and to continue affecting young people most severely. That means getting vaccinated against the flu is just as important as ever. Here are 3 new things you should know about this year’s flu vaccine that could help keep you and your family healthy throughout the season: 1. One shot — Last season, millions of people were vaccinated twice — first for seasonal flu starting in September and later for the H1N1 virus. This year, only one shot is needed for protection against both seasonal flu and H1N1. 2. Everyone 6 months and older — For the first time, the CDC is recommending universal flu vaccination — with everyone older than 6 months recommended to get a shot, including pregnant women. 3. Never too early (or too late), a shot now will protect you all season long. Most retailers will offer shots through the spring, or while supplies last. Health experts agree: It’s

best to get the shot early and be protected for the duration of the flu season, especially because flu season is unpredictable and no one knows when viruses will begin to circulate or when flu activity will peak. Who Should Not Be Vaccinated:
There are some people who should not get a flu vaccine without first consulting a physician. FluMist is an intranasal live virus influenza vaccine for healthy children and adolescents, ages 2 to 17 years, and

While most people will just require one dose of FluMist each year, children 2 to 8 years old not previously vaccinated with influenza vaccine need two doses at least 4 weeks apart. FluMist isn’t for everyone though.You should not get FluMist if you (or your children): • Are under 2 years of age • Are aged 50 years or over • Have asthma or other reactive airway diseases • Have chronic underlying medical conditions that may predispose you to severe flu infections • Have problems with immune suppression, including those with immune deficiency diseases, such as AIDS or cancer, and people who are being treated with drugs that cause immunosuppression • Are allergic to eggs or to a previous dose of the vaccine How many people die from seasonal flu each year in the United States?
The number of seasonal influenza-associated (i.e., seasonal flu-related) deaths varies from year to year because flu seasons are unpredictable and often fluctuate in length and severity. Therefore, a single estimate cannot be used to summarize influenzaassociated deaths. Instead, a range of estimated deaths is a better way to represent the variability and unpredictability of flu. An August 27, 2010 MMWR report entitled “Estimates of Deaths Associated with Seasonal Influenza – United States, 1976-2007,” provides updated estimates of the range of flu-associated deaths that occurred in the
United States during the three decades prior to 2007. The CDC estimates that from the 1976-1977 flu season to the 2006-2007 flu season, flu-associated deaths ranged from a low of about 3,000 to a high of about 49,000 people. What are seasonal influenzarelated deaths?
Seasonal influenza-related deaths are deaths that occur in people for whom seasonal influenza infection was likely a contributor to the cause of death, but not necessarily the primary cause of death. Death certificate data and weekly influenza virus surveillance information was used to estimate how many flu-related deaths occurred among people whose underlying cause of death was listed as respiratory or circulatory disease on their death certificate. How do the new estimates compare with the 36,000 figure that is often cited as an estimate of annual flu-associated deaths? The 36,000 estimate was presented in a 2003 study by CDC scientists published in the Journal of the American Medical Association (JAMA) using similar statistical modeling techniques, but only refers to a period from 1990-91 through 1998-99. During those years, the number of estimated deaths ranged from 17,000 to 52,000, with an average of about 36,000.The JAMA study also looked at seasonal influenza-associated deaths over a 23-year period, from 19761977 and 1998-1999. During that period, estimates of respiratory and circulatory influenza-associated deaths ranged from about 5,000 to about 52,000, with an average of

After an unfortunate loss in a long and hard battle with esophageal cancer, Pam’s father, Jack Wooldridge, passed away on March 19th 2010. In her father’s memory, Pam has taken her journey through this experience and turned it into a fund to help spread awareness for the disease. “I really wanted to start a fund for Thoracic cancer because I feel like it’s a disease that no one ever talks about. I think the numbers are higher than people realize. It is the unspoken cancer,” says Pam, “The thoracic is the lungs, esophagus, heart, and all the vital stems of living. As Pam continued with her story, she mentioned the many challenges she will be facing in bringing the community together to help raise money for awareness. “People usually don’t want to donate to these types of causes because they feel that any cancer related to the lungs and esophagus is a smoker’s disease and they brought it on themselves,” Pam stated, “my father was not a smoker nor was he ever exposed to any harmful chemicals.” Gary, Pam and The Capital Grille hosted Thoracic 100’s first fund raiser function on September 8th, 2010. Bringing in some of Orlando’s top community leaders, the first event held about 70 invitation only guests together to begin building a starting foundation for this organization. Although Esophageal Cancer awareness month is in April, Pam will initiate planning events within the next few months. Being at her father’s bedside for 8 ½ months and living through the pros and cons of what helped get through this process, her plan for action starts with reaching out to the community. “People need to know that if you or your loved one is going through any kind of life threatening illness, it’s important to never give up hope. > Born into a family of builders, designers and artists in Kansas City, Missouri, Carolyn was destined to become an interior designer, a career that is influenced by all three disciplines. Fluent in the language of architecture and construction, her designs reflect this wisdom. She joined the American Society of Interior Designers and became a licensed designer in 1975. Hired by Central Florida Lumber and Supply, she created a design department for builders and developers…Bay Hill, Knollwood, and Spring Lake Hills were some of the developments at that time. Her career progressed and she was tapped to head up the Jacobson’s Furniture and Design Department at the opening of their Longwood store. There, she wore three hats as Furniture and Accessory Buyer, Manager and Head of the Interior Design Department. She formed her own Corporation as Carolyn Franklin Interior Design in 1982 Famous for inspiring, motivating and guiding her clients from design concept to completion, Carolyn exhibits a joie de vivre each step of the way. Many trips to her favorite towns in Italy and France help her transform spaces with historical details For the past 7 years, she has written articles for a quarterly publication on design. She reads voraciously, belongs to three book club groups and scrapbooks for a hobby. Energy is her middle name.

Rest of Your Life: What can one do if arrested or “convicted” of a crime?

> The current economic downturn has played a major roll in all aspects of peoples’ lives. One area in particular is employment. From career professionals to day laborers; many are searching for employment wherever they can find it. While education is one factor for many, another very common issue is having an arrest or ‘conviction.’ A common question is “I made a mistake when I was younger and now I can’t find a job because of my arrest or ‘conviction.’ What can I do?” From a legal perspective; the first step is to realize that even without a ‘conviction,’ an arrest alone can show up in a background check. An individual may want to ask the Courts to “seal and expunge” the arrest. Florida Statutes §943.0585 and §943.059, set forth the criteria to be eligible for sealing or expunging. Sealing a record means that the public record of your arrest is ‘physically sealed’ by the clerk of the court and other agencies with similar ‘case’ information. Expunging a record means that the record is ‘physically destroyed’ and should not appear on background checks. However, one copy of your record is retained by the Florida Department of Law Enforcement and requires a court order to be disclosed. Likewise; where there is more than an arrest one must determine whether one has actually been ‘convicted’ or the ‘adjudication was withheld.’ Florida is a unique State which allows Courts to determine whether they are going to ‘convict’ a person who enters a plea or who is found guilty at trial.

There are many criminal charges under Florida Law. The least severe is likely a criminal traffic charge, which can not only affect your privilege to have a driver’s license; but may also be seen as a sign of poor judgment. Likewise, any misdemeanor can also result in negative consequences towards employment. The most serious of charges are felony charges. They have very serious consequences on one’s ability to find employment; and drug offenses, for example, maybe be seen by employers as a sign of a substance abuse problem. Felonies also affect one’s ability to seek government aid and the right to vote, among other consequences. If you meet the criteria and have a record sealed or expunged, no agency is allowed to disclose that you even had a record sealed or expunged. However; if you do not meet the criteria for sealing and expunging a record, there is still hope. One may apply for restoration of civil rights or seek a pardon. These alternatives involve a different process but may assist an individual in living a fruitful life; including obtaining gainful employment. > To save everyone a lot of time and effort, we need to move Halloween into November, so that the same day that we take down our Halloween decorations, we can replace them with Christmas lights. Or better yet, we need Halloween decorations that can double as Christmas decorations. My main point is that there is so much going on in our beautiful city that one simply doesn’t have time to waste! Let me fill you in on some of what you missed in the last few weeks as well as some upcoming events!

On October 9th, there was an awesome party at Bentley of Orlando celebrating the launch of Clive Christian luxury interiors. The exclusive event featured great food and drinks, as well as a celebrity auction raising money for the Dwight D. Howard Foundation. So you don’t think that Dwight is trying to raise more money for the Orlando Magic, here’s the full disclosure: The Dwight D. Howard Foundation helps to empower young people by providing grants and scholarships.
While I don’t need an excuse to visit a fabulous hotel, on the 4th of November, I checked out an awesome art event at the Waldorf Astoria that showcased the work of Roberto Gonzalez. I love the vibrant colors in Gonzalez’s work, and that he lives in Orlando!
The Grand Bohemian is a hotel for art lovers! On October 15th, the Bohemian in Downtown Orlando unveiled original works from Jean Claude Roy. I love Roy’s beautiful French landscapes, as they evoke a beautiful and sometimes whimsical world. Proving their excellent taste once again, Roy is one of the Kessler Collection’s signature artists, whose works are handled exclusively by the Grand Bohemian brand. No one is ever too young to ignore their body. And while certain men have politely told me that I spend ‘a little too much time’ getting ready, I know that every minute is worth it. By the way guys, if you can’t tell that I’m wearing makeup, that means my makeup is perfect. Still, I am always looking at the latest procedures that are available to enhance my appearance, which is why I couldn’t pass up the October 22nd “Evening of Beauty” at Newman Plastic Surgery. After watching demonstrations of the power of

I love listening to music, but I rarely go to see bands play – unless it’s Velvet Sessions. On the 28th of October, music fans in costume bought a few tickets to paradise for an intimate performance by Eddie Money. They really know what they’re doing at the Hard Rock Hotel – and I can’t wait for more Velvet Sessions next year!
If you love exotic and classic cars, then you were probably at the Winter Park Concours d’Elegance on November 6th and 7th. Before I started watching Top Gear, my main concern was miles per gallon and overall car cuteness - but now, Auto Expos like this really take my breath away. This year, the Concours d’Elegance featured Corvettes from 1953 to the present - fun! This month is a double issue, so I won’t see you again until 2011! “Art is Music to My Eyes” Rock Demarco

With year-round gorgeous weather, it is no wonder why several top entertainers and sports figures call Orlando home. But did you know Orlando is also home to the world’s fastest speed painting artist, Rock Demarco? World-renowned Demarco has perfected the “art” of creating vivid paintings of celebrities, Fortune 500 CEO’s and other popular figures in less than 10 minutes, while entertaining audience’s with rock music and
a lot of pizzazz. Think Alice Cooper meets Michelangelo and add some flare. “Art is music to my eyes,” quotes Demarco, a saying that has become his motto. Demarco discovered that art was his passion early in life, and often displayed this passion at a young age by drawing on his parents’ walls. Demarco continued to perfect his craft appreciating the complexity and beauty of paintings. It wasn’t until he was painting a mural in a bathroom when the client had an idea for him to be an opening

act for the introduction of a new CEO. The mission was to create a portrait of the CEO in less than 10 minutes. Mission complete. The crowd loved it and now just eight years later, Demarco’s name is synonymous with “World’s Fastest Painter.” “Painting a bathroom has taken me all over the world. It’s funny how one little thing can change the road of life.” From Mickey Mouse to Diane Sawyer, Aston Martin’s to Alice Cooper, Demarco has painted it all. In order to create a masterpiece in less time than it takes to make a grilled cheese sandwich, Demarco rehearses an image “over and over again” until he knows each stroke and every detail like the back of his hand. Sometimes the process of creating a studio piece can take months, but after perfecting it, he is able to “study” and prepare for the live painting shows. “I don’t get nervous when I perform. I get into a bubble and enjoy showing off and entertaining.” Demarco prides himself on creating a thrilling experience for the audience incorporating a rock and roll theme with music, costuming, and his signature style of art. This artwork style includes the use of vivid colors and is always on a black canvas. If you’ve seen him, you might have noticed his signature piece of costuming. “Three years ago I wanted to make the process of grabbing different brushes faster,” says the artist. What he created was an Edward Scissorhandslooking glove, one that he wears on his left hand with paintbrushes attached making it easier for him to dip into different colors and speed up the painting process. “I have some of the celebrities I meet put on the glove and pose. Its kind of fun.” This incredible talent has allowed Demarco to travel the world. He speed painted the Mona Lisa in Rome, performed at the
goodbye ceremony of the Philadelphia Spectrum, opened for Alice Cooper, and just recently entertained Orlando Magic fans at the first halftime show ever at the brand new Amway Center. “It was a blast. I am attached to that because I live here,” says Demarco. But as exciting as performing in front of his home crowd was, his “wow” moment came when he was a guest on Good Morning America and painted Diane Sawyer in six minutes, a segment that reached more than six million viewers. “I always told myself that if I saw a certain level of success, I’d give back.” As a spokesperson for Cystic Fibrosis and a supporter of several other organizations and foundations, Demarco’s paintings have raised more than one million dollars for various charities including Make A Wish and March of Dimes. “It’s a nice feeling.”

> Pastry Chef, Concept Development Parks and Resorts for Walt Disney (a global position), Stefan Riemer has seen his dreams of a “sweet career” come to fruition. While growing up in Berlin, Stefan developed a sweet tooth that wouldn’t quit. He helped his father at his ice cream factory churn out 25 flavors daily. His father hoped he would take over the family business, but Riemer’s love affair with American music and film led him to dream bigger than Berlin. At 16, Riemer scored an apprenticeship, and went on to Culinary and Pastry School in Brunswick, Germany. After graduating at age 23, he was a certified master pastry chef. His multi-cultural experience has given him a worldwide view of the vast world of dessert, including experience in Switzerland, Indonesia and India. “I wanted to experience different cultures in order to prove myself,” says Riemer. “I learned to respect different cultures and different cuisines.” After working for Austrian master pastry chef Erich Herbitschek, currently at Disney’s modern American flagship Victoria & Albert’s at the Grand Floridian, Stefan was offered a pastry chef position at Disney’s Yacht & Beach Club Resorts. In 2004, the American Culinary Federation named him Southeastern Pastry Chef of the Year. Stefan is also a certified sommelier and spirits expert, and has been featured on the Food Network, Travel Channel and the DIY Network. Portion control is one of Stefan Riemer’s main goals for his new responsibilities as Pastry Chef in charge of concept development. “Value should be in the quality, taste and service,” he says. He sees dark chocolate as a growing trend in America as it migrates from Europe. “In a couple of years, dark chocolate will be as prevalent here as it is in Europe.” Growing up in Europe, Riemer was always exposed to organic and seasonal foods. “It was important to me, as a child, to treasure food. As a chef, once you respect the ingredients, you will elevate the flavors in your dish,” says Riemer.

Riemer’s favorite spice is black pepper, and he works to incorporate savory spices into his decadent desserts whenever possible. “I love working basil and other fresh herbs into sweet things like lemon-basil meringue cupcakes that I enjoy with my family,” he says. Working at Disney has given Stefan Riemer a new perspective on how food is perceived. “At Disney, it’s all about joy and fun, even in food. We truly offer something for everyone,” he says. Riemer believes that food and beverage is a part of everyone’s life, but also has an emotional connection between family and friends. He cites ‘curry wurst’ and ‘Wiener schnitzel’ as two foods that remind him of his childhood, growing up in Berlin. “At Disney, our gests are here for a celebration, and part of that requires food.We hope they’ll remember their experience forever,” says Riemer. About 16 million people visit the world’s most popular tourist destination, Walt Disney World, every year. It sounds amazing, but the parks evolve with their guest’s changing tastes and desires. “The diversity of our Cast Members and our varied experiences make it fun and easy to further understand and react to cultural needs and trends,” says Riemer. Stefan Riemer continues to be a cuttingedge thinker, developing sweet treats and indulgences for everyone at the parks and resorts to enjoy. He responds to the needs of guests as well as the ideas of pastry chefs from the new Disney Resort & Spa in Ko Olina, Hawaii. He also works on menus for Disney Cruise Line, and researches industry trends with a focus on nutrition and products. “The pastry profession has changed dramatically, and we have become educators in our field,” says Riemer, “there’s more to baking than eggs, butter, flour and sugar!”<

The bottle is sealed using a traditional beer bottle style cap and allowed to mature for a minimum of three years. During the maturation period the bottle is handled and controlled by a process called ‘remuage’, a French term meaning to gradually turn and invert, bringing the sediment into the neck prior to its removal. Once the bottle is chilled, the neck is frozen and the cap removed; the carbonated pressure within the bottle forces out the ice containing the sediment and the bottle is quickly corked to contain the carbon dioxide within.

> With the holiday season just around the corner our thoughts of celebration naturally involve dining with family and friends. This year, instead of selecting classic red or white wines to accompany dinner, we suggest a change of pace and what better alternative than a bottle of delicious “bubbly” produced in the Champagne region of France, just a few miles northeast of Paris. Within the region, there are three areas, which grow the primary Champagne grape varieties Pinot Noir, Chardonnay and Pinot Meunier; they are Reims, Marne and Cote de Blancs. Bice Ristorante carries a good selection of Dom Perignon, Taittinger, Veuve Clicquot-Ponsardin and Piper Heidsieck. Many other brands can be found in other local restaurants and retail establishments. As with any wine, the quality is greatly affected by the weather of the harvesting season. Typically stored up to five years by the vintner, once released the wine should be consumed within two years. Most Champagnes are blended across production years but some of the more select quality wines are confined to a single vintage year; traditionally, production is called ‘Methode Champenoise’. Most dogs diagnosed with canine influenza experience a mild form of the disease.They usually suffer from a persistent cough that may last for as long as three weeks and may experience a yellowish nasal discharge that can be treated effectively with antibiotics. Most dogs have a soft, moist cough, while others have a dry cough similar to that induced by Bordetella bronchiseptica/parainfluenza virus infection. Dogs that experience a stronger version of canine influenza frequently have a high fever and exhibit increased respiratory rates and other indications of pneumonia. Currently, antibiotics treat this form of the disease successfully in about 95 percent of the cases.
CIV was first detected in 2004 in racing greyhounds in Florida. Investigators learned that this new canine influenza developed when an equine influenza virus adapted to infect dogs. This was the first time that an equine influenza virus had been found to “jump” from horses to dogs. According to Dr. Cynda Crawford of the University of Florida, College of Veterinary Medicine, canine influenza does not infect people, and there is no documentation that cats have become infected by exposure to dogs with CIV.
In May 2009, the U.S. Department of Agriculture approved the first CIV vaccine. The vaccine is useful for dogs that are exposed to high-risk environments like kennels, boarding facilities, dog parks or dog shows. The vaccine doesn’t prevent the disease, however, it decreases the disease’s severity. Ask your veterinarian whether your dog should be vaccinated against CIV.<
At present, canine influenza appears to be an airborne disease, much like kennel cough (Bordetella bronchiseptica). Physical contact between dogs does not seem to be required.
