RESERVING FOOD CAN be a mystifying and daunting endeavor if you’ve never done it before. But have no fear. Maine has many resources to help you get started. Learning some of the myriad methods for preserving produce, meat, and dairy allows us to have access to locally sourced food year round, despite short growing seasons and cold winter months. Here are some resources to get you started in basic food preservation skills.
UNIVERSITY OF MAINE COOPERATIVE EXTENSION The Cooperative Extension provides up-to-date information on food preservation based on university research. Their website is full of resource sheets and how-to videos and they offer a series of hands-on workshops on basic food preservation. For those who want to take their food preserving to another level (and volunteer their expertise to help others learn) check out the 5-month Master Preserver program. FRINKLEPOD FARM Frinklepod Farm is a small diversified farm in Arundel growing vegetables, fruits, herbs and flowers, and distributing with a CSA model. homeowners needing to replace their existing boiler, the payback is fairly fast. Cost of purchase and installation can range between $9,700 to $20,000. Perhaps the most difficult aspect of pellet boilers is pellet storage. Pellets are bulky and need to be stored close to the boiler. There are a variety of different types of pellet storage systems available, ranging from a fully automated hopper to purchase of bags of pellets which are added manually to your boiler. In short, pellet boilers offer benefits on many levels. Not only do they provide an economical way for Mainers to heat their homes (though the initial investment is considerable), they also provide Maine with a way to bolster its economy and utilize an abundant natural resource which can be sustainably managed. If history has taught us anything, there is never an energy panacea, but for Maine, with our combination of cold winters and vast woodland, the pellet boiler may offer a long-term sustainable path towards energy independence. The furniture we breathe HOME FURNISHINGS AND INDOOR AIR QUALITY

BY HEATHER CHANDLER OME IS OUR respite; a place where
we feel safe. So it may be surprising to learn that indoor air can be two to five times more polluted than the air outside our homes and in some cases even more so. The U.S. Environmental Protection Agency (EPA) estimates that the average person receives 72% of their chemical exposure at home, making indoor air the primary source of environmental pollutants for most of us. So where do these pollutants come from? The primary sources of indoor air pollutants are building materials and finishes, household cleaners and furnishings. All of these are known to emit airborne chemicals, called volatile organic compounds (VOCs) into the air. And exposure to VOCs has been shown to contribute to a wide range of health concerns; including neurological and reproductive issues, cancer, respiratory ailments, heart conditions and more. The vast majority of home furnishings (including upholstered and composite wood furniture) contain potentially harmful materials that can off-gas chemicals and release particulates into the air we breathe. Formaldehyde (commonly used in plywood frames and composite wood furniture), flame retardants in foam cushions, glues, dyes and fabric stain treat-
ments have all been found to emit pollutants into our indoor environments. And exposure to these toxins can cause short and long term health concerns. Even if you don’t have an immediate reaction to a new piece of furniture, it’s important to note that toxins accumulate in the body. So while one individual exposure may be small, over time the impact of repeated exposures can cause health concerns and even escalate our sensitivity to all chemicals.
LET’S TALK ABOUT FORMALDEHYDE Formaldehyde is one of the leading sources of pollutants in furniture. Our memories of formaldehyde may date back to high school science labs. Recognizable by its distinct, pungent smell, formaldehyde is commonly used today to bond the adhesives in pressed wood products. It’s found in particle board, hardwood plywood paneling and medium density fiberboard used in shelving, cabinets and furniture. Medium density fiberboard (commonly used in drawer fronts, cabinets, and furniture tops) has a higher adhesive to wood ratio than other pressed wood products; as a result, it is among the highest formaldehyde-emitting pressed wood products. When We Were the Kennedys by Monica Wood is the bestselling memoir of growing up in the paper mill town of Mexico, Maine. Wood is nine years old in 1963, when her father dies suddenly. The personal story of a family’s grief is beautifully portrayed. The story of the factory (also a character) leaves you thankful for progress like environmental protection and also pining for the sense of community in a simpler time.
If I Built a House by Chris Van Dusen is a follow-up picture book to his popular If I Built a Car. You’ll delight in the Seussical rhymes and cool retro yet futuristic illustrations. The book is a great tool for encouraging kids to use that free app they already have—it’s called imagination.
Paris Was the Place by Susan Conley is a novel about an American woman living in Paris in the late 1980s. Willie Pears’ life gets complicated teaching at a detention center for immigrant girls, falling in love, and caring for her very sick brother. Conley’s detailed imagery of Paris provides the perfect backdrop for exploring themes of belonging, love, and loss.
Moonbird: A Year on the Wind with the Great Survivor B95 by conservationist Phillip Hoose is the biography of a single bird, a rufa red knot shorebird that was banded in 1995 as B95. Young (and not-so-young) adult nature lovers will marvel at the perseverance of this small bird, who continues to be spotted on his amazing migration from the tip of Argentina to the Canadian Arctic. The species is in danger of extinction, but B95 offers hope that we can make a difference in our interconnected world.
The Waffler by Gail Donovan is a chapter book for the early reader set at an elementary school near the water in Portland, Maine. Fourthgrader Monty just can’t make up his mind about anything. Naturally, his twin sister doesn’t have this problem. You’ll route for Monty (and his pet rat) as he navigates a blended family, a tough teacher, and being true to himself.
A House in the Sky is a collaboration between Amanda Lindhout and Portland writer Sara Corbett that tells Lindhout’s incredible story of being captured and held hostage in Somalia for 460 days. The book is skillfully written as a suspenseful page-turner yet at times difficult to read given the horrible events described. This intimate account of a young woman’s trauma provides insight into the power of resiliency.

year on record in the United States and recent increases in droughts, wildfires, coastal super storms, and other extreme weather events, climate change is on the minds of many people these days. However, the topic can often be overwhelming, confusing, and discouraging; leaving us feeling helpless and ineffectual against this multifaceted global problem. The goal of this article is to make the issue less daunting and more understandable by giving a basic overview of climate change science, discussing the impacts that are happening already and predicted to occur in the future, defining key terms, outlining what’s currently being done on a larger scale to both mitigate and adapt to climate change, and listing easy steps we all can take to reduce our carbon footprint.
The three primary GHGs are carbon dioxide CO2, methane, and nitrous oxide. Carbon dioxide is the most prevalent GHG emitted into the atmosphere by

CLIMATE CHANGE SCIENCE If you’ve ever been in a greenhouse, you know the air is quite warm. The sun’s heat is able to enter the structure, but the majority of it gets trapped inside. On a much larger (and more complex) scale, this same principle forms the foundation of climate science. When the sun’s energy reaches the Earth’s surface, about 30% is reflected directly back into space and the rest is absorbed into the Earth’s system. During this absorption process, the planet releases some of the energy back into the atmosphere as heat. Certain gases in the atmosphere—called “greenhouse gases” (GHGs)—absorb this released heat, which slows or prevents the loss of the heat to space, and then re-emits the energy in all directions; warming the Earth’s surface and lower atmosphere. The U.S. Environmental Protection Agency (EPA) poses a great analogy: GHGs are like a blanket, because they make

a large margin (i.e. CO2 represented 84% of GHGs emitted in the U.S. between 1990 and 2011); this is why reducing CO2 is predominant in climate change conversations and efforts. However, the other GHGs are equally concerning for different reasons; i.e., one molecule of methane is 25 times stronger than CO2, and the impact of one pound of nitrous oxide is 300 times greater than one pound of CO2. Nitrous oxide has also been linked with a number of adverse effects on the respiratory system and is one of the air pollutants regulated by the EPA under the Clean Air Act. The earth’s climate has changed many times throughout its history. According to the EPA, climate changes prior to the Industrial Revolution in the 1700s can be explained by natural causes; however the recent changes in climate cannot be explained by natural causes alone. The scientists from the IPCC* have determined with very high confidence that most of the observed increase in global average temperatures since the mid-1900s is due to an increase in GHG emissions from human activities. The majority of GHGs come from burning fossil fuels; although defor-
estation, industrial processes, and agricultural practices also contribute. The sources of GHG emissions in the US are electricity generation (33%); transportation (28%), industry (20%), heating for commercial and residential buildings (11%), and agriculture (8%). Even as one individual, there are things you can do in all five of those areas to help reduce emissions.

CLIMATE CHANGE IMPACTS It is almost impossible to predict precisely what will happen as global temperatures increase; not only are the types and severity of impacts dependent on how much the temperature actually increases (depending on emission levels, global temperatures are predicted to rise 1.1 – 6.4 ˚C by the end of this century), but scientists also don’t know exactly how various factors and impacts will affect and exacerbate others. Having said that, each time the IPCC releases a comprehensive report, the projected likelihood of impacts and the scientific confidence backing the findings both increase.
