his year marks the 12th anniversary of the SunriseGuide. In the early years, I often joked that the books were like my children. From conception and planning to eventual release, about nine months goes into creating each one. And along the way incredible amounts of energy, some pain, some elation, and lots of support from friends, advisors and the community culminate in the release of a bundle of love. Love in the form of the passion, compassion and, in some cases, sacrifices that the owners of the small businesses featured in these pages make to create something better for Maine. Love in the form of the products, services and gathering spots they bring to our community to help us all live better. And love in the form of the changes that we are inspired to make in our own lives and in how we interact with the environment around us. The lens through which we approach the creation of the SunriseGuide has always been love.

E

ATING LOCAL ALSO means eating in season, which in Maine provides great opportunity for a varied diet and also a challenge to figure out just what to do with the bounty (or perhaps, in late winter and early spring, the scarcity) that the local harvest provides. Here are some ideas to guide you through four seasons of eating what is ripest and most available all year long. All of these recipes feature produce from Maine, but many of the other ingredients—like dairy, honey, maple syrup, flour, sunflower seeds, even sea salt—are also produced in Maine and can be found at your local farmers’ market, natural food store or co-op, if not direct from the farmer. Take on an extra challenge and see how “local” you can make your plate! Or simply savor the seasons and enjoy all that Maine farms—or your own backyard garden—have to offer.

Spring: naturally fermented rhubarb pickles Sure, rhubarb makes for a great pie, but it can also make a yummy crisp and crunchy pickle! Rather than relying on vinegar and sugar for the brine, these pickles feed off the salt and honey in the recipe, creating beneficial bacteria that also preserves them (still best to keep them in the fridge once they’re done fermenting). These are great chopped up on salads with tender spring greens and herbs. ½-¾ pound thin rhubarb stalks, washed and dried (enough to fill a one-quart mason jar) 1 star anise 1 tsp whole cloves 1 cinnamon stick 4-5 juniper berries (optional) ½ tbsp raw honey ½ tbsp salt filtered water Chop the rhubarb into 4-5 inch long sticks. Add the spices to the bottom of your mason jar. Pour in approximately ½ cup of warm water, then add the salt and honey. Stir to dissolve. Pack the jar with the rhubarb so that the stalks are standing up vertically in the jar. They should fit in tightly so that they do not float when you add the rest of the water. Fill the jar with water until the top of the rhubarb is covered, making sure there is still an inch or two of head-space at the top of the jar (the rhubarb will produce gas as it ferments, and it will need somewhere to go!). Cover tightly and leave in a warm place (a sunny window or the top of the fridge works well). Remember to release the air from the jar and then twist the lid tight again 2-3 times/day. The pickles will fizz and bubble – this is normal, and fun! They are typically ready in 2-3 days: try one, and if it has the right balance of sweet, crisp, tart, and tangy from the fermentation process, then they are good to go. Store in the fridge to halt the fermentation.

Use less plastic in the kitchen Tips & tricks

W

E’VE HEARD by now of the dangers of BPA and other toxic chemicals leaching from plastics and into our food—not to mention all that waste that is produced from plastic bags, bottles, packaging and more. Chances are, you’ve taken some steps, such as replacing plastic water bottles with metal or glass, to reduce your use of plastic. But plastic has an inevitable way of “leaching” its way into our lives, particularly in the kitchen. It’s true plastic wrap, plastic baggies, plastic food storage containers and the like offer a convenient, sanitary, inexpensive way to store food and keep it fresh. But if you’d prefer to keep plastic out of your life, and particularly away from your food, here are some handy swaps for your whole kitchen. Phase out the plastic storage containers, and start using glass and stainless-steel food containers instead. Swap out plastic wrap and use reusable beeswax-coated cloth wrap instead. Find it at your local natural food store. Aluminum foil is another great alternative to plastic wrap. While it is not entirely eco-friendly, it is more reusable than plastic wrap and can ultimately be recycled. Or use parchment or wax paper. For a quick-and-easy food storage solution, just use two plates: invert one on top of the other, and voila, leftovers ready to be set aside for another day. (This method should not be used for particularly perishable items or raw meat). For a lightweight, portable cutlery option, pick up a set of reusable bamboo flatware. Use reusable cloth produce bags (also found at your local natural foods store). Since they are more breathable and absorb moisture, cloth bags can also help keep your produce fresh longer. If buying canned food, make sure it is labeled as having BPA-free lining. Buying bulk, and using paper or reusable bags to do so, helps avoid plastic food packaging. Grow your own food! This can be as simple as a few herbs on your windowsill or a full-blown backyard garden. Whatever your growing capacity, you bring your food one step closer to home and one step away from cellophane-wrapped heads of lettuce and plastic bags of carrots. Use wooden or metal kitchen utensils, and opt for wooden cutting boards. You can also find mixing spoons and spatulas made from silicone rubber, which is safer to use than plastic. Did you know food can be frozen in mason jars and Pyrex storage containers? Remember to leave room for expansion, and wait until your food is frozen to screw glass jar lids tight (or you risk broken glass). Take just a few of these steps, and you’ll be well on your way to a healthier, more sustainable kitchen! SG 12

If you need to replace an aging furnace or boiler, it may be helpful to step back and survey the many options now available for primary and secondary heating. Newer technologies like ductless heat pumps change the equation for many homeowners—prompting them to use this highly efficient option as an important heat source along with a furnace, boiler or woodstove. Efficiency Maine periodically updates its Heating Cost Comparison Chart to reflect price fluctuations. The calculator lets you adjust the cost of each heating unit so that you can compare what annual costs might run in your setting. Looking to implement an efficiency upgrade or install a new renewable energy system in your home? There’s no need to go it alone. There are several rebates and financing options to help you make your home more comfortable year-round and start saving today. EFFICIENCY MAINE IS THE FIRST STEP Efficiency Maine is an independent administrator of energy efficiency programs that acts as a clearinghouse to help homeowners and businesses upgrade their energy efficiency and heating/cooling systems. The Efficiency Maine website offers a database of contractors who provide services for weatherization and insulation; renewable energy sources, like solar, geothermal or wood pellet systems; and high efficiency oil, propane or natural gas furnaces. Efficiency Maine also offers financing programs for energy saving improvements with loan amounts ranging from $1,000 to $15,000. According to Efficiency Maine, the most common use of the loans is to improve air sealing, attic insulation, basement insulation and boilers. Most of the loans fall in the $5,000 – $12,000 range, with no upfront costs.

Natural healing practices A primer

NTERESTED IN TRYING an alternative therapy to enhance your well-being or to help treat a particular ailment? It can be confusing to navigate all the different options, so here is an overview of some of the most common natural healing practices. Some of these require or offer a professional degree similar to the education and licensing an MD must acquire, whereas other practices require a certificate-level training and are often used to complement an alternative practitioner’s offerings. Though each of these practices uses different methodologies and originates from different parts of the world, they all look at a patient’s health through the same lens, emphasizing a holistic approach that uncovers and treats underlying causes rather than a set of symptoms. If a certain practice resonates with you, we recommend reaching out to a practitioner in your area to learn more and ask any questions you may have (many offer free initial consultations). The link at the end of each description is another good place to start. Read on, and be well. Acupuncture is a branch of Chinese medicine first body and alleviate pain. The increasing scientific practiced over 2500 years ago and today widely used across Asia and much of the rest of the world. In China especially, acupuncture is integrated into the mainstream healthcare system, and it is now even used in certain hospitals in the US, primarily to help post-operative patients with their pain. It involves the stimulation of specific points—often, but not always, using thin needles inserted in the surface of the skin—to regulate the systems of the

evidence as to its effectiveness has contributed to acupuncture’s rise in Western countries, and some health insurance plans now cover acupuncture as a treatment for particular conditions. It may be used to relieve a wide variety of conditions, from stress and anxiety-related issues to muscle and joint pain to digestive disorders. www.nccaom.org

Ayurveda is one of the world’s oldest holistic

health systems, originating in India over 5000 years ago. It is based on the five elements of nature—air, space, fire, water and earth—and the belief that all people reflect nature and therefore contain the characteristics of these five elements in varying proportions. Certain elements dominate in each person, and this determines their dosha of origin—characteristic tendencies or energies most natural to an individual. The Vata dosha reflects tendencies characterized by air and ether, like a light physical build and a changeful, easily inspired nature; the Pitta dosha is characterized by fire and water, including traits like a warm body temperature and strong leadership skills; and the Kapha dosha is characterized by water and earth, with traits like calmness and a tendency to be solid and muscular. An Ayurvedic practitioner thoroughly evaluates a patient, accounting for both physical and emotional states as well as diet and lifestyle. The practitioner can then determine imbalances in the elements at work in the patient’s constitution; attempt to find the root cause of the
