Apple Cider Balsamic Glazed Pork Loin
Prep time: 10-15 minutes Cook time: 45-60 minutes
Servings: 6
• 1 Coleman Pork Loin (4 pounds)
• Salt, to taste
• Pepper, to taste
• 1 Tablespoon of Olive Oil
Glaze:
• 1 Cup of Apple Cider Vinegar Glaze
• 6 Tablespoons of Whole Grain Mustard
• 4 Teaspoons of Balsamic Vinegar
• 1 Teaspoon of Minced Rosemary
• 1 Teaspoon of Minced Sage
• 1 Teaspoon of Minced Thyme
• 2 Teaspoons of Minced Garlic
• Salt, to taste
• Pepper, to taste
• 2 Tablespoons of Olive Oil
• 4-6 Sliced Apples
Preheat the oven to 350 F and line the sheet pan with parchment paper. Set it aside.
Remove the Pork from the packaging and pat it dry with a paper towel. Season
To make the Glaze: In a bowl, whisk the Apple Cider Vinegar Glaze, the Mustard, the Balsamic Vinegar, the Rosemary, the Sage, the Thyme and the Garlic. Add the Salt and the Pepper, to taste. In a steady stream, slowly add the Olive Oil to emulsify while whisking.
In a large skillet, heat the Oil over Medium-High Heat. Sear the Pork Loin for 2-3 minutes on each side.
Move the Pork to a lined baking sheet and brush on about half of the Glaze. Roast for 30 minutes.
Remove the Pork from the oven and spread the Sliced Apples around the Pork Loin. Brush the remaining Glaze over the Pork and the Apples. Bake them for 20-30 minutes, or until the internal temperature reaches 150 F.
Let the Pork Loin rest for at least 10 minutes before slicing it.
Stuffing-Filled Pork Chops
Prep time: 10-15 minutes
Cook time: 30-45 minutes
Servings: 6
Stuffing:
• 1 Small Box of Biscuit Mix
• 1 Stick of Butter
• 2-3 Stalks of finely diced Celery
• 1 Finely diced Onion
• 1 Teaspoon of Poultry Seasoning
• 1-2 Cups of Chicken Broth
• 1 Bag of Cornbread Stuffing Mix
• 2 Eggs, beaten
• Salt, to taste
• Pepper, to taste
• 6 Coleman Natural Bone-In
• or Boneless Pork Chops
• Oil
• 1 Teaspoon of Minced Garlic
• 1 Teaspoon of Minced Sage
• 1 Teaspoon of Minced Thyme
• 1 Teaspoon of Minced Rosemary
To make the Stuffing: Bake the Biscuits according to the package’s directions, 1 day ahead. Dry biscuits will absorb more broth.
Preheat the oven to 350 F.
Celery and the Onions. Sauté them until the Onions are translucent, then add the Poultry Seasoning and half of the Broth.
Set it aside to cool.
In a bowl, combine the Stuffing Mix,the Crumbled Biscuits and the Eggs.
Add the Onion mix to the bowl and mix it well. Add the leftover Broth if the mixture is too dry and set it aside.
Slit each Chop on the rounded side, cutting almost through to the bone, to create deep pockets for the Stuffing.
Season the Chops with the Garlic, the Sage, the Thyme and the Rosemary. Fill each Chop with the Stuffing Mixture. Use toothpicks to keep the Chops closed.
Preheat the skillet with the Oil over Medium-High Heat and sear each Chop for 2-3 minutes on each side.
Once the Chops are seared, add the remaining Stuffing to the pan, cover it with the foil and bake it for 30-45 minutes until the Chops reach 140 F in the center. Remove the foil for the last 10 minutes to brown the top of the Stuffing, if desired.

An Evening Of Remembrance

It was a year to the day, October 7, 2024 after Israel suffered an act of terrorism causing some 1,200 heinous deathsand compared to the infamous attack more than a generation earlier on US soil.
The City of Hallandale Beach was to put on An Evening of Remembrance honoring the victims and survivors of the massacre of innocent civilians including women and, especially, children last year. The event was rescheduled for a week later, October 14, to occur at the Hallandale Community Center due to hurricanes.
It went off smoothly as Hallandale Police Department ensured safety as an estimated 150 to 200 persons attended the event that started shortly after 7 p.m. and ended about 2 hours later. The event commemorated the staunch resilience of the people of Israel to survive the unprovoked violence that occurred on October 7, 2023-truly a “day of infamy” like Pearl Harbor-and the continued aftermath involving the relentless shelling of Israeli cities by missiles of terrorists, Hamas, Hezbollah and other proxies of Iran.
In particular, the event highlighted paintings of 80 Israeli children ages 8, 9 and 10 as they expressed in a tangible way, in “The Light of Sderot: Worlds on Canvas,” what was in their hearts and minds. These paintings ranged in tone from smiley faces to rainbows to scenes

During their visit they presented this city with a key to the City of Hallandale Beach. Lima-Taub read a letter from the Vice-Mayor of Sderot which ended, “long live Israel. Together we shall win!”
Anabelle mentioned how proud and amazed she was at seeing Commissioner Lazarow standing courageously against imminent danger. At the Remembrance, Commissioner Lazarow advised people to “be smart” and remain safe by avoiding dangerous confrontation while expressing their solidarity for Israel.
Honored was Florida State Senator Jason Pizzo who was awarded for his steadfast diligence in support of the Jewish State. Mayor Cooper declared October 7 to be Senator Pizzo Day. She expanded that time frame to October 14, as well.

“An Italian Irish kid from New Jersey who was blessed to have a Jewish godfather.” He began by saying, “There is no generation where people have… had to hide who they are, where they are or what they are. This has never happened for another race, religion, culture or ethnicity...”

Emotively, he continued, “We must never forget, we must continue the fight for justice for our people, for erev (land of) Israel, and may the light of those we love/ lost never be extinguished.”
Lima-Taub corroborated this thought citing an example of courage where in 1982 Israeli Prime Minister Menachem Begin stood up to a US Senator, decrying, “I am not a Jew with trembling knees.” He and Anwar el-Sadat of Egypt was awarded the 1978 Nobel Peace Prize.
A poignant video was shown of Siberian-born Tzippy Holland, educator and founder of Bridge of Love. Born in Siberia in 1940, she’d experienced the Holocaust. In the video, she implored the audience to stay vigilant as to the escalating antisemitism happening worldwide, including at US universities.

legion of non-Jewish folks who are good Samaritans, who helped with the event and supported Israel. She thanks the Hallandale Beach Police Department which she lauded as stalwarts for ensuring safety for the local Jewish population. A line of more than a dozen honored folks were welcomed onstage to copious applause from appreciative attendees.
Capping off the evening was a performance by the Miami Ensemble Israeli Music Band.
Moderator Lima-Taub effectively encapsulated the evening’s premise as she said to the audience, “You come from a lineage of hundreds and thousands of years of survivors. This is the time to stand up. This is the time not to be quiet. This is not the time to be polite. We tried everything. Now is the time for us to stand up and speak up.”
Oh, a final thought by Tzippy Holland and then by John Lennon:
“I still believe that we have a lot of good people around and the world is still good. And, that we can still change all this hate. Everybody should love everybody.”

An Evening of Remembrance was the brainchild of Hallandale Vice-Mayor Anabelle Lima-Taub who had been born in Israel and is fluent in Hebrew. Many from the audience seemed familiar with a prayer and comprehended the Hebrew language. Doctor Gershon Fink was a special honoree who spoke a prayer asking for the safe release of the hostages. Doctor Gershon Fink is, in fact, a medical Doctor, according to Mayor Cooper.
The event took place October 14, 2024. It had been pushed back from a week before-October 7, the anniversary date of the terrorist attack due to Hurricane Helene.
Of the Hallandale City Commission, Vice-Mayor Lima-Taub took hold of the verbal reins as moderator, often preferring to ignore a pre-written speech to speak from the heart extemporaneously. And her inspired words on this emotive night flowed as from a spring of the soul. Also speaking eloquently with conviction were Hallandale Beach Mayor Joy Cooper and Commissioner Michele Lazarow.

Also honored was Ernesto Ackerman, President of Independent Venezuelan American Citizens. He is the son of a Holocaust survivor who passed away in 2022 just before her 100th birthday.
Mr. Ackerman is not immune to the threat of enemy fire. As a five-year old in 1956, he was en route to visit uncles and was unaware– as then there was no internet-- of imminent danger. “Just as the ship set sail, we saw the entire city of Haifa go dark. All the lights went out and we saw Mount Carmel disappear before our eyes,” he recalled. Like others present this evening, he noted the increasing antipathy toward Israel. “And now, the

“What is the core that bothers people so much about ‘pesky’ Jews?” she asked. “Jealousy,” a man from the audience blurted out. Lima-Taub noted that indeed, Jews are hated because of their “success.” It seems noteworthy that as about 15 million people of Jewish descent occupy the earth, it seems a disproportionate number have excelled in many endeavors, including Art and Science. She also noted to be alert to the term, “Zionist,” which has the connotation of “dirty Jew.”

10th Annual Veteran’s Day Salute
This year marks the 10th anniversary of the YMCA of South Florida’s Annual Veteran’s Day Salute, presented by Milner Technologies, honoring Former and Current Military Members. Hosted in partnership with the City of Weston, the breakfast is set for Friday, November 8th from 8:30 a.m. to 11:00 a.m. at Bonaventure Town Center Club, 16690 Saddle Club Road, Weston, Florida 33326.
“Our Veteran’s Day Salute is a tradition for the Y as we celebrate and recognize those who have served and are serving our country,” said YMCA of South Florida President and CEO Sheryl A. Mark Nutsch, who served in the Army as a Ranger Regiment and Special Forces Officer, deploying on multiple combat tours, is this year’s keynote speaker. Making Strides Walkathon
A sea of 25,000 people, many clad in pink, converged at an arena in Sunrise, Florida, recently to celebrate the Making Strides walkathon, a tradition in Florida and across the country to help thwart the deadly disease, Breast Cancer.
Presented by Seminole Hard Rock, the event took place on a crisp, drizzly morning at the Amerant Bank Arena, home of the 2023 Stanley Cup champion ice hockey team, the Florida Panthers. The event ran concurrently with the Susan G. Komen More Than Pink Walk in Hialeah, Florida, according to CBS News Miami where more than 6,000 people attended. The goal for fundraising was to raise $1,000,000 and $700,000, respectively. To date, more than $500,000 was raised in Hialeah, Florida.
Making Strides began shortly after 8 a.m. with a vibrant rendition of our National Anthem sung by a local music sensation.” Whereby many in the audience held their hands over their hearts. The emcees were Channel Seven’s Meteorologist Vivian Gonzales and Hard Rock Classic Casino General Manager Edward Aguilar who thanked all participants and organizers as well as supplied facts pertaining to Breast Cancer.
Representatives from the medical field included The Sylvester Comprehensive Cancer Center Miller Branch at University of Miami, the Cleveland Clinic and Hollywood Memorial Hospital.
Mr. Aguilar took to the microphone, “Together, while we have no cure yet, we have a lot of hope, and we have an unconquered spirit to continue the fight with you. Today would not be possible without all the help of the volunteers today and all the amazing organizations.”
Here are pertinent facts: About 42,000 women in the United States die each year of Breast Cancer. It affects one in eight U.S. women. It’s estimated that more than 160,000 cases of Cancer are diagnosed in Florida alone, and that Breast Cancer is the number one form of Cancer of Native Americans, according to Mr. Aguilar.
It is estimated that more than 23,000 in Florida alone will be diagnosed with Breast Cancer this year, of which 3,000 will die.
Breast Cancer is rare in men, accounting for about 1% of all Breast Cancer diagnoses. In the United States, about 2,650 men are diagnosed with Breast Cancer each year. Breast Cancer deaths have declined 40% in the past few decades.
2024 marks the 26th Annual Walkathon in Broward County, this year’s Making Strides of Broward County was presented by: Seminole Hard Rock Hotel and Casino Hollywood, Seminole Classic Casino, Seminole Casino Coconut Creek, along with other sponsors. This is the 12th year Seminole Hard Rock has participated in the Broward Making Strides event. On this 2024 walk they presented a grandiose check—literally, a four-foot-long check-on stage for a grand sum, $100,000. Hard Rock venues present were Hard Rock Hotel & Casino Hollywood, Seminole Classic Casino, and Coconut Creek Seminole Casino.
Several companies and teams were thanked for generous donations. Teams that raise $2,500 or more, collectively,
become members of the Pacesetters Team Club. Individuals who raise $1,000 or more are Grand Club members.

The Florida Panthers General Manager Bill Zito said, “Today is a day of fight, of commemorating the survivors and is also a day of thanks,” adding that his wife is a Cancer survivor. He extended a thank you to doctors, nurses, caregivers, family members and “to survivors for inspiring us.” Mr. Zito sashayed a bit, modeling a custom-made jersey which is to be auctioned off to raise funds for ACS.
Many attendees tacked messages onto a display to honor loved ones affected by Cancer. Music of the day was provided by four gentlemen who makeup - their name well suits the day — The Cure. Public Relations Personnel Amanda Jackson and Kimberly Pierce cheerfully filled us in as to Hard Rock involvement. For instance, did you know that Hard Rock has raised over $12 million for Breast Cancer research since the start of its PINKTOBER campaign. In 2023 alone, Hard Rock raised $1.3 Million for Breast Cancer research

Three top doctors via a news bulletin illuminate us as to Breast Cancer:
Susan Kesmodel, M.D., of Sylvester Comprehensive Cancer Center noted, “We are seeing a de-escalation of surgery for Breast Cancer. In many women with early-stage Breast Cancer, mastectomy is not necessary. She added:
• Surgeons increasingly look for options besides Mastectomy for Breast Cancer.
• Breast Cancer surgery is not one-size-fits-all but is increasingly tailored to the patient based on extent of the disease and tumor characteristics.
• Cosmetic surgery has improved dramatically. Women can now receive Breast Reconstruction during Cancer surgery with Lumpectomy (removal of breast tissue) or Mastectomy (removal of entire breast(s).

Mentioned Jose M. Net, M.D., “Routine Mammographic Screening is the best way to minimize your chance of dying of Breast Cancer. Early detection can help find tumors that are smaller, haven’t spread outside the breast and are easier to treat.” He added:
• Patients need to know their breast density, one indicator of increased Cancer risk. The FDA now requires that patients receive this information. Sylvester has provided it for 13 years.

Lluis Morey, Ph.D., member of Sylvester’s Epigenetics Program and Associate Professor at the Human Genetics Department at University of Miami noted:
• Of a handful of Breast Cancer variants, most are not aggressive and have a 90% survival rate due to treatment. Early detection is key.
• Understanding stem cells is important because if you identify and kill them, you might stop a tumor from growing.
• Breast Cancer deaths have declined 40% in the past decade, but a mortality gap persists between Black and White Women - a priority for Sylvester in highly diverse South Florida.
• Sylvester performs 31,000 Mammograms annually.
At Making Strides, a pink air-filled oversized chair provided a happy repast as kids of all ages bounced, flounced and even jounced—yes, that’s a word! —on it.
• Has cafes that offer a tempting hamburger on a pink bun infused with (yes, really!) beet juice. They say it’s healthy. “A burger with a cause.”
• Has “change for change,” whereby one can donate a portion of winnings from the casino to ACS and other charities.
• Is donating 25 “all-inclusive” stays at their hotel to Breast Cancer survivors, thrivers and caregivers.
• Offers a pink record of Inspirational songs from “all around the world.” It can be purchased for about $35. All proceeds go to ACS.

This reporter walked in memory of his beloved kind, loving, irreplaceable doggie, Daisy, who joined him for about seven Walk-a-thons for Charity.

Solar United Neighbors is a nonprofit organization that works in Florida and nationwide to represent the needs and interests of solar owners and supporters. Solar co-ops are part of the organization’s mission to create a new energy system with rooftop solar at the cornerstone. Solar United Neighbors holds events and education programs to help people become informed solar consumers, maximize the value of their solar investment, and advocate for fair solar policies.

Broward Center for the Performing Arts. Carter has a demonstrated track record of success in the performing
sector and has served as Interim Chief Financial Officer of the Broward Center since September 2023. Her appointment is effective immediately.
In this newly created role, Carter will oversee the financial operations of the Broward Center, guiding the organization’s business strategy, budgeting, and financial reporting, while supporting the
term strategies, instilling financial and operational discipline, and demonstrating strong and decisive leadership. Her extensive experience in managing complex projects and strategic planning will be pivotal in ensuring that the Center continues to be positioned as a leader in the industry.
“Catherine has a deep appreciation of our mission to engage the community through the arts combined with a true understanding of the complexities of our business. She brings extensive expe-
rience in financial leadership and an impressive background driving strategic growth,” said Ty Sutton, Broward Center President & CEO. “She is an invaluable member of our leadership team, and I look forward to our work together as we plan an exciting next chapter for the Broward Center.”
In this role, Carter will also provide financial guidance and oversight for the Center’s affiliated venues which include The Parker, an iconic theater in Fort Lauderdale which was fully restored in 2021, the Rose & Alfred Miniaci Performing Arts Center on the main campus of Nova Southeastern University in
Davie and the Aventura Arts & Cultural Center in Miami-Dade County.
“I have known and worked with Catherine for more than 20 years,” said Charles L. Palmer, Chair of the Finance Committee and long-serving member of the Performing Arts Center Authority. “She has been instrumental in the growth and success of the Broward Center. Catherine brings both financial acumen and innovative thinking to the performing arts industry and I am delighted that she will be here to help shape the organization’s future.”
Earlier in her career, Carter served as Associate Director at Procter & Gamble where she had financial responsibility for some of the company’s largest brands in the U.S. and Canada. Over the course of the past 15 years, she has been a strategic advisor to the Broward Center and several other arts organizations across the U.S. During this time, she also CoFounded VenueCube, a software company that simplifies and streamlines reporting for live events. Carter maintains a keen interest in the intersection between arts and technology that will serve her well in the new role.
Carter holds an M.B.A. in Finance from the University of Wisconsin-Madison and a B.A. in Philosophy from the University of Michigan-Ann Arbor.
