December for many is a time for selfreflection. Some reflect upon their accomplishments and failures in 2022, relationships with others, lessons learned, positions chosen or changed, personal views on the coming 2023 where they will do better and hence live their lives better, and the like. Robert L. Rosen put it this way, “Self-reflection entails asking yourself questions about your values, assessing your strengths and failings, thinking about your perceptions and interactions with others, imagining where you want to take your life in the future.” It is always good to reflect upon on our lives - looking in the proverbial mirror – to determine how we can be better and do better for ourselves and all the people we love, serve and interact with.

For those of the Christian belief December brings self-reflection upon one's relationship with the One who brings to the world peace and goodwill. Whatever the source, Christmas has a way – for the most partof making the grouchy pleasant, the harsh kind, and the temperamental composed. What is it about Christmas that creates this phenomenon? Does it come from placing one’s life in the hands of another who is said to be all-powerful, all-knowing, and allpresent that draws a person to this power, a power that can even save you? For the Christian, Christmas is a time of contentment and peace, and self-reflection.

There is also reflection within our Gold Canyon community as we ponder the relentless changes – under the banner of progress – that moves us ever forward like it or not. That change began many years ago in Gold Canyon and it was the reason why ADOBE was created. It was the idea of

ADOBE's founding mothers and fathers that as the community changed - never imagining what it would be like in 2022 – the association would do everything possible - working in partnership with the county – to guide and direct that change to the point where all development from every perspective would make the community better. After 33 years ADOBE still stands strong as the only Gold Canyon association that has endured these 33 years to work feverishly in developing Gold Canyon for the betterment of all. All members of ADOBE and the ADOBE Board of Directors are committed to this unwavering task. We kindly invite all citizens to become part of ADOBE as we work together for the purpose of making everyone’s life better as we live, work and play within the shadows of the God-given magnificent Superstition Mountains.

You are reminded of the ADOBE Membership Meeting scheduled for January 19,2023. The meeting is being held at the Gold Canyon Best Western, with social time beginning at 6:15pm and the meeting at 7pm. Ms. Terri Sue C. Rossi, VP of Water Resources for the Arizona Water Company will be the presenter discussing all things water. This is your chance to hear firsthand exactly what the water situation is in Arizona 2023. A Q&A will follow the presentation. Got questions about water here in Gold Canyon? Attend our meeting and receive answers.

The ADOBE Board of Directors wishes all citizens of Gold Canyon and beyond a very Merry Christmas and Glorious New Year.

TIPS & HINTS ON LANDSCAPING

ECHINOPSIS HYBRID

We are getting to that time of year when the Echinopsis cacti start to put on a show. Formally called Trichocereus or Lobivia most of these giant flowering cacti have been grouped in the genus ‘Echinopsis’. The Latin name is derived from echinos (hedgehog or sea urchin) and opsis (a reference to the plant’s dense covering of spines). Many collectors and growers still use the outdated nomenclature, and the common names are even more confusing. Flying Saucer, Hedgehog, Sea Urchin, Easter Lily and Torch cactus are all used by us common folk indiscriminately on any large flowering cacti. Not wanting to get into the weeds on this debate, I will stick with Echinopsis Hybrid.

The flowers are the big deal with this genus. Up to 15 inches in diameter, with a riot of colors ranging from snow white to red, yellow, orange and pink, they are always a pleasant surprise as they magically appear from nowhere.

Native to South America, they do quite well in our part of the Sonoran Desert, preferring sandy or gravelly soil and growing on the sides of hill in rocky crevices. They do not tolerate wet feet. They can be planted in pots or directly in the ground and will do best if they can get afternoon shade during June through September. Cutting off the spent flowers may result in greater flowering.

Since many of the Echinopsis must be pollinated by another plant, they have been profusely hybridized, resulting in the wide range of colors.

Draw backs with this genus is that the critters love the flowers for food as much as we love to look at those flowers. The flowers mostly open at night and last but a day.

If you are interested in this plant, I highly recommend that you do a quick search on the internet by typing in ‘Echinopsis’ hybrid in your browser. Prepare to be wowed!

OWNER - SMILING DOG LANDSCAPES

The Superstition Mountain Museum’s free lecture series “Legends and Lore of the Superstitions and More,” is scheduled to begin on Thursday, January 5, 2023. The series brings together local scholars, personalities, historians, artists and authors to introduce attendees to the rich culture of our region.

Lectures are held Thursday afternoons at 2:00 p.m. in the Museum’s outdoor amphitheater. To enjoy the presentations fully, attendees are requested to: Bring your own lawn chair; Don’t forget a hat and sunscreen; Please, no smoking; Please don’t leave your dog in vehicle; Coffee and cookies will be available for purchase with all of the proceeds going to the museum for continuing educational programs; Come early and have lunch on the grounds. Food will be available for purchase.

The featured presenters and dates this year are

January

5th - Teton Ken | The Lost Dutchman and His Mine

This year’s annual lecture about the Old Dutchman Jacob Waltz and his infamous gold mine will be presented by our own Dutchman “look alike in residence,” Teton Ken. Learn just who Jacob Waltz was, where he came from, the facts regarding his life and death in Phoenix, and just how the clues (and gold found under his bed) have kindled a flame of interest that has only grown over the years into a mother lode of history and mystery. Teton Ken knows his history. For many years, Teton Ken has packed gold hunters, hikers and television crews into (and out of) the Superstition Mountains. He worked at Apacheland Movie Ranch and is an accomplished actor. During the winter season,Teton Ken and his animals can be found at the museum on weekends giving burro rides and throwing into the mix a few songs and stories.

January 12th - Jodi Akers and Kathy Schuster| Saving the Apache Trail

Jodi Akers and Kathy Schuster will present "Saving the Apache Trail." The Apache Trail has been closed for the past three years because of a rockfall on the most scenic section of the road. The

rockfall was the result of more than six inches of rain falling in one day after fire crews extinguished the Woodbury Wildfire, prompting concerns over soil stabilization and continued flooding. The Arizona Department of Transportation then closed the road indefinitely without a real explanation. Jodi Akers, a longtime resident and Apache Trail business owner and Kathy Schuster, a partner in Apache Lake Resort, will provide details of the ongoing effort to reopen Apache Trail through to Roosevelt Lake. County officials, state representatives and grass roots community support and lots of money will be needed to save Apache Trail.

January 19th - Steve Renzi | Black Cowboys

Western historians estimate that two out of every eight cowboys on a cattle drive were black men. They were also miners, soldiers and farmers in the West. After the Civil War, many ex-slaves found themselves freed with no place to live or job opportunities, so many headed out West. The first cowboys were young men; Anglos, Hispanics and Black freedmen who were hired to help round up rogue longhorn cattle who were running wild in the Texas chaparral country. This is where the story begins. Black men and women were part of the struggle in the settlement of the American West, but their story has largely been forgotten and ignored. Steve Renzi, a University of Arizona graduate with a degree in history, believes that every generation must learn about who and what came before them or else the lessons learned are lost. As a writer and photographer with a teacher’s certificate in secondary education, Renzi is always searching for new ways of exploring our history. He has been published in more than 200 magazine and newspaper articles and is currently a writing and photography teacher, as well as a basketball coach. This presentation was made possible through the Arizona Humanities AZ Speaks Program.

January 26th - Native American Storytelling

Listen and follow the stories of Coyote and other traditional characters as they weave scenes of the past. These stories not only paint beautiful settings but blend life lessons with the beauty that surrounds us. The Museum Ampitheater provides an excellent environment for attendees to immerse themselves in the narratives. This lecture is scheduled in conjunction with our Native American Arts Festival on January 27-29. Celebrate the unique spirit of the American Indian this weekend and enjoy the dance, music, art and food at the festival. The Native American Festival is made possible with an Arizona Commission on the Arts grant. The Native American Festival hospitality tent is sponsored by Bashas’

The Superstition Mountain Museum

The Superstition Mountain Museum's Holiday Boutique returns in December and is sure to make your holidays bright. The weekend of Saturday and Sunday, December 10th and 11th, means big holiday shopping and savings opportunities for visitors to the Museum. It also is a great opportunity to keep the family in the Holiday Spirit and enjoy all of the oldfashioned decorations that blanket the barn and museum.

On December 10th & 11th, the Museum will host an OldFashioned Christmas in the Barn Holiday Boutique featuring artists and crafters displaying and selling their unique handmade items. Tables will be placed amidst the decorations and on the museum patio and grounds. Come and share the festive mood that will prevail and you just might find the perfect Christmas gift for someone (or yourself).

The Big Trains will be running and a free Ore Stamp Mill demonstration is scheduled for Saturday, Dec. 10th, at 11:30 a.m. Admission to the Holiday Barn Boutique, ore mill demonstration, and parking are free.

MOMENTS TO CHERISH

In December we celebrate, create and share the joy that comes from the traditional holiday spirit. We celebrate the holidays for family, joy, tradition, love, memories, laughter, friends and good times. The holidays are not only about getting together to appreciate what we’re thankful for, but also to cherish each other.

The definitions of cherish according to Merriam-Webster dictionary: 1a: to hold dear 1b: to keep or cultivate with care and affection and 2: to entertain or harbor in the mind deeply and resolutely.

To hold dear: We learn that family, parents, siblings, and even friends, are to be held close, to be loved and cherished. But sometimes these are the very people within our circle that we take for granted.

To keep or cultivate with care and affection: Every person has a different way of showing their love, kindness and support for one another. Some express it verbally; some with a smile, hug or kiss; some by showering the other person with gifts. We spend time and energy expressing our affections toward others, but we must endeavor to cultivate true affection for others by learning and listening.

To entertain or harbor in the mind deeply and resolutely: Memories of loved ones, friends, and places allow us to hold these close.

Take the time to make this year the best year for what is important to you. These little things that don’t take much time can mean a lot to the person receiving them:

Sit down next to someone you haven’t seen in a while and ask how they are

• Give someone a hug

• Cook someone a meal out of the kindness of your heart

• Make someone smile by a creating a simple memory or good deed

• Write an old-fashioned handwritten letter

• Send a card that can brighten someone’s day

• Donate time to a charity

• Make a phone call or FaceTime someone

• Take a walk with a friend

Challenge and motivate yourself to learn one new thing from everyone in your immediate circle, family and friends

Appreciate those who matter to you now - not when they’re gone.

In doing just one of these simple things, you will find the common thread. It’s a feeling of gratitude. Of thankfulness. Of being grateful. The feeling of gratitude is often times NOT about those big, in your face times where it’s like a blinking bar sign that screams “BE GRATEFUL”. Gratitude, feeling gratitude, having gratitude, living a life of gratitude - it’s found in the minutia of our days. The little things. Often the instances that we overlook. Gratitude is all about cherishing the moments - both big and small.

This holiday season, Let this be your gift.

Living Proof

Some memories live on and are a precious gift, when you find that your soul is in need of a lift.

Old photos and cards saved from years gone by, may bring laughter and smiles or an occasional cry.

These fragments of time like awakening from a dream, reminds us of how rich our heritage has been.

Family, friends and others who shared in our life, some good, some a challenge, some even forged in strife.

But through it all, like pieces yet to be, we see the foundation in our memories reverie.

Past, present and future are stitched together in time. Showing that our life is less a puzzle, but more a beautiful rhyme!

HEALING NATURALLY HAVE A HOPEFUL HOLIDAY SEASON

My husband and business partner, Peter, shares this holiday message with you:

“Hope,” wrote Emily Dickinson, “is the thing with feathers that perches in the soul.” For too many people this holiday season, that “thing” seems to have flown away. And why not? Turn on the nightly news or connect to social media and you’ll find that that old news adage is still alive and well: “If it bleeds, it leads.”

Every day we’re broadsided with more bad news: the stock market is falling and the cost of living is rising, political and social divisions in our country are getting deeper and wider, terrorism has struck again somewhere in the world, a new health concern has been reported in the latest study.

Hope is a precious commodity that seems to be in short supply these days. Webster’s dictionary defines the verb as “to long for with expectation of obtainment; to expect with desire.” Some people are afraid to long for good things. They figure if you never expect anything you’ll never be disappointed, which I guess is true, but I’d hate to live that way. Even if my hope is foolish, give me false hope over genuine despair any day.

Not surprisingly, scripture has a lot to say about hope. In a passage from the Bible one writer explains that, “faith is being sure of what we hope for and certain of what we do not see.” It’s hope that gives birth to the faith that can sustain us. In that context, the American Heritage dictionary offers this definition of hope: “The theological virtue defined as the desire and search for a future good, difficult but not impossible to attain with God’s help.” That’s a good thing to remember as

we approach the religious holidays of several faiths in December.

Whatever my circumstances are today, they will change tomorrow. They could be worse. But hope allows for the possibility that they could be better. And that makes facing even the toughest days easier.

Here’s Dr. Marcantel’s prescription for the holidays:

Turn off the nightly news and watch It’s a Wonderful Life instead

Find a positive-thinking friend or family member to spend some quality time with and bask in that most valuable gift of all – unconditional love.

Allow yourself to imagine all the good things that will come your way in the future (planning how to get them comes later).

Let hope sing in your heart again. Hope is the thing with feathers

That perches in the soul, And sings the tune without the words, And never stops at all, And sweetest in the gale is heard; And sore must be the storm

That could abash the little bird That kept so many warm. I’ve heard it in the chilliest land

And on the strangest sea; Yet, never, in extremity, It asked a crumb of me.

WHY SCHOOL CHOICE IS IMPORTANT,

Part V: More on the Accountability of Choice

One of the many points brought up by critics of ESA, homeschooling, and school choice in general is one of accountability; not financial accountability, but academic accountability. Without clear academic standards, explicit lessons teaching those standards, and regular testing to measure how well the material covered in those standards is being absorbed and retained by the students, how can we really be sure that our children are learning and receiving a quality education? If a child is taught at a private institution or is homeschooled, what is to stop parents or unqualified instructors from teaching religious doctrine or other non-academic material to them? Is this what ESA monies—our taxpayer dollars—will be supporting?

I mentioned in a previous part of this series that money from Empowerment Scholarship Accounts or ESAs are given to parents in a manner similar to WIC funds. They are given monthly per need and are only allowed to be used on approved goods and services. One could question whether or not parents receiving WIC funds are really making good choices in buying nourishing food for their children. Generally, however, we do not, because we trust that parents who love and care for their children will make the right decisions about feeding them. Academically, we have to make the same assumption. In my experience, every parent that I have worked with wanted their child or children to have a rich, well-rounded education that will prepare them for higher education as well as for the rest of their lives. Rather than seeing fixed academic standards with accompanying lessons and assessments as being evidence of accountability, many parents see them as too restrictive and smothering to their children’s educational process.

The ultimate question with educational accountability is, “To whom are educators accountable?” In public schools, they are accountable to the state and the standards that state officials set. They are not accountable to parents. It is this disconnect that is causing consternation in many homes across the country. While some parents may not have training to be educators, they do understand their children and what their children need. Parents have the right to choose educators that bring out the best in their children, especially if their children do not always respond well to what is offered in public schools. Such parents want educators who are accountable to them and the standards they set.

Let parents be the ones who are accountable for their children’s education, just as they are accountable for their upbringing, character, and well-being. It is my belief that if we trust parents to advocate for and make educational decisions for their children, we will raise a generation of better-adjusted, self-reliant and freethinking individuals; better able to make practical and creative decisions in life. Education is best fitted to the student, and not the other way around.

REAL ESTATE FOR YOU LORIBLANK

THE TOP REASONS TO PAY OFF YOUR MORTGAGE BEFORE YOU RETIRE

As you get closer to your retirement age, you should try to discharge as much of your debt as possible. Unfortunately, many people close to the age of retirement still have a significant mortgage balance they need to pay off. What are some of the top reasons why you should pay off your mortgage before you retire?

Your Portfolio Might Not Generate As Much Interest

You may have a very low rate on your mortgage, which means that your money is better served in the stock market; however, as you approach the age of retirement, your portfolio might not generate as much interest because you are shifting more of your assets into less risky investments. As a result, you might want to pay down your mortgage faster, as the interest rate between your mortgage and your portfolio is no longer as large.

Free Up More Cash

You should also try to pay off your mortgage because you will free up more cash. You want to enjoy your golden years, but if you are still spending thousands of dollars every month paying off your mortgage, your money will not go as far. You may not be ready to tap into those retirement accounts just yet, so you can generate more cash by paying off your mortgage now. Try to pay off your mortgage before you retire to maximize your golden years.

Tap Into Your Home Equity Later

Do not forget that your house can also be a very important retirement asset. If you are concerned about running out of money and your retirement account, you can tap into your home equity as an extra source of cash; however, what if you still have a mortgage on your house? You might not have as much equity to use. While you are still making money now, you should try to pay off your mortgage.

Pay Off Your Mortgage Before You Retire

Clearly, there are a lot of reasons why you should try to pay off your mortgage before you retire. When you retire, your income may drop significantly, so you should try to pay off your mortgage while you still have the flexibility to do so right now.

ADVICE CAN HELP WHEN MAKING CHARITABLE GIFTS

Now that it’s the holiday season, gifts are probably on your mind – and you might intend for some of those gifts to go to charities. Although your intentions are good, you could be shortchanging both your recipients and yourself with your method of giving. But with some guidance, you can make choices that work well for you and those charitable groups you support.

Of course, you could simply give money to these groups. However, by donating other types of assets, can you increase the value of your gift and gain greater tax benefits, too?

It’s certainly possible, but your ability to gain any tax advantages depends somewhat on whether or not you can itemize deductions on your tax return. Due to legislation passed a few years ago that significantly increased the standard deduction, many people may no longer be itemizing. But if you still itemize, you can generally deduct up to 60% of your adjusted gross income for cash donations to IRS-qualified charities.

Another contribution strategy involves donating other assets, such as stocks. You could donate stocks directly to a charitable group, but you might gain more benefits by making an irrevocable contribution to a donoradvised fund (DAF). Again, assuming you can itemize, you can deduct the full fair-market value of the asset, up to 30 percent of your adjusted gross income, and your contributions can be invested in mutual funds or similar vehicles. The contributions have the opportunity for growth, and distributions to the charity are tax-free. You can then decide, on your own timetable, which IRS-qualified charitable groups you would like to receive the money. Furthermore, if you

donate stocks that have risen in value, you won't incur potential capital gains taxes that you would have when you eventually sold the stocks. These taxes can be considerable, especially if you’ve held the stocks for a long time. (You’ll want to consult with your tax advisor on how charitable gifts can affect your taxes, especially if you’re thinking of using a donor-advised fund.)

These charitable donation methods are not secrets, and they are available to many people – you don’t have to be wealthy to employ them. Yet, here’s an interesting statistic:

Those who work with a financial advisor on charitable strategies are more than three

times as likely to donate non-cash assets such as stocks than those who contribute to charities but don’t work with an advisor, according to an August 2022 survey from financial services firm Edward Jones and Morning Consult, a global data intelligence company. These findings suggest that many more people could be taking advantage of tax-smart charitable giving moves – if only they had some help or guidance.

Also, by getting some professional financial assistance, you may find it easier to implement your charitable giving decisions within your overall financial strategy, which is designed to help you meet all your important long-term goals, such as achieving a comfortable retirement.

Your instinct to help support charitable groups is a worthy one – and by getting some help, you can turn this impulse into actions that may work to everyone’s benefit.

Holiday Donation Drives at AJ Public Library

Assist the Area’s Homeless and Underserved:

Genesis Project Sock Drive – Socks are one of the most requested items among the homeless population who may walk for miles daily leading to socks that are worn, dirty, and damp. Not only is this uncomfortable, it’s unhealthy and many don’t have the luxury of washing or changing their clothes. Through December 9th, the library will collect new, white crew socks for the Genesis Project — a faith-based community effort dedicated to feeding, clothing, and hydrating the hungry and the homeless of northern Pinal County.

To learn more about the Genesis Project visit their website: www.genesisprojectaz.com

Paws & Claws Care Center Supply Center

Drive – For the fourth year, the library joins with Apache Junction Animal Control Paws & Claws Care Center to collect donations for the city’s homeless pets this holiday season. December 5th – January 3rd, the library will collect cleaning and pet supply donations for animals at the city’s open-admission shelter. The shelter serves a vital role in rescuing pets in need and among its many services it offers housing and second chances for abandoned pets, none of whom are turned away. It also protects public health and safety by enforcing laws and ordinances, responding to complaints of animal abuse, and working with a dozen rescue and welfare partners to find loving homes for homeless animals.

Want to participate, but don’t know what to donate? PCCC provided a wish list:

• Kitty litter

• Cleaning supplies

• Canned food (cat, dog, puppy, and kitten)

• Peanut butter

• Poop bags

• Leashes & collars

• Nylabones

• Kong toys

• Cat and dog treats

• Dryer sheets

AJUSD OVERHAULS PROGRAM TO BETTER ASSIST SPECIAL NEEDS STUDENTS

Letron Alexander, the new Director of Special Education, is responsible for working strategically with members in and around our district to create effective and efficient systems that encourage learning and empower students to achieve. His focus is to empower AJUSD staff to implement new strategies that engage students, and improve their wellness and learning while improving current and new systems that help the SPED Department perform well operationally.

Joining Alexander are John Shirk, SPED coordinator and William Shultz, program coordinator. Alexander added that the department could not function without the support of two major players, Cynthia Garcia, SPED secretary and Maila Lewis, administrative analysis.

“Providing our services in-house allows AJUSD the ability to critically and more intentionally, direct our spending related to SPED resources,” said Alexander. “There are several other advantages for AJUSD to design and implement its own level-C programs, but the major advantage is that it affords our students the ability to receive a much more personalized, tailored approach to their education from members who care about the students in this community.

The move toward in-house special education programming is expected to benefit the students and the community according to Heather Wallace, AJUSD superintendent.

“We are bringing in people who want to be a part of AJUSD and are personally invested in the learning that takes place in our community,” said Wallace. “With out-sourcing the emphasis is often based on a company’s profits and bottom line. By focusing on what we can do in-house we can provide practical, quality services that will not only help our students, but will create a dynamic program that will benefit our community as well.”

Registration is currently being accepted at Apache Junction High School, Cactus Canyon Junior High School, Desert Vista Elementary School, Four Peaks Elementary School and Peralta Trail Elementary School. For more information visit www.ajusd.org or follow the district on social media.

IN THE KITCHEN WITH MARSHA

CHEESY GREEN BEAN & RICE CASSEROLE

Want to switch up the old “Green Bean Casserole” everyone makes. Give this one a try! There is a lot of flavor here. For one, the sauce is rich, creamy and delicious. It’s made with ready-to-go convenience ingredients if you choose to make it that way.

SAUCE —

• 4 slices bacon, finely chopped

• ½ c frozen diced onion

• 2 garlic cloves, peeled

• 6 oz. white mushrooms, chopped

• 1 tsp Italian seasoning

• ½ tsp cayenne pepper

• Kosher salt and black pepper

• Two 10.5 oz cans condensed Cream of Mushroom Soup

• 1 c vegetable broth

• 8 oz Velveeta cheese, cut into cubes

• 1 ½ c grated cheddar cheese

CASSEROLE —

• Two 8.8 oz packets of microwaveable white rice

• 3 c frozen green beans

• 1 small jar of diced pimientos

• 1 c grated cheddar cheese

• 2 c fried onions (such as French’s)

Preheat oven to 375 degrees. Make the sauce: In a medium skillet, cook the bacon over medium-high heat until most of the fat is rendered and the bacon is golden. Pour off most of the fat. Add the frozen onions (or fresh chopped), grate in the garlic (or use a garlic press), and add the mushrooms, Italian seasoning, cayenne, and salt and pepper to taste. Stir and cook until the mushrooms are starting to get tender, 4-5 mins. Reduce the heat to medium, add the soup and broth and stir and cook until very hot, 2-3 minutes more. Add the Velveeta and cheddar cheeses and stir until they are melted. Taste and adjust seasonings.

Assemble the casserole: Pour the rice (no need to microwave the rice first) into a 9”x13” baking dish. Add the green beans (right out of the bag) and the pimientos; stir to mix everything together. Pour the sauce on top. Lightly give everything a stir. Sprinkle on the cheddar and the fried onions. Bake until golden on top and bubbling around the edges, about 30 minutes. (Watch the top so that it doesn’t get too brown). Optional: Sprinkle with parsley on top.

Cranberry Orange Pecan

LAYER CAKE

It is cranberry season and this moist cake has plenty in it along with a cream cheese frosting! Makes a great Holiday cake!

INGREDIENTS - CAKE

• 2 c fresh or frozen cranberries (I use fresh)

• 1 package Duncan Hines White Cake mix

• 1 c water

• 1/3 c vegetable oil

• 3 eggs

• 3/4c toasted pecans OR walnuts, chopped very small

• 1 Tblsp finely shredded orange peel

FROSTING —

• 1 - 8oz package of cream cheese, softened

• ½ cup butter, softened

• 1 tsp vanilla extract

• 4 ¾ - 5 ¼ cups powdered sugar

TOPPING:

• ¼ c chopped pecans, toasted

• ½ - 1 cup fresh cranberries (optional)

Preheat oven to 350 degrees. Grease and flour two 8” or 9” round cake pans. Coarsely chop cranberries, set aside. In a large mixing bowl combine cake mix, water, oil and eggs. Beat with an electric mixer on low speed until combined. Beat on medium speed for 2 minutes, scraping sides of bowl occasionally. Fold in the cranberries, pecans (or walnuts) and orange peel. Divide batter evenly between prepared pans. Bake 25-30 minutes for 9” pans or 30-35 minutes for 8” pans or until a wooden toothpick inserted in the center comes out clean. Cool in pans on a wire rack for 10 minutes. Remove cake layers from pans. Cool completely on wire rack.

FROSTING:

In a large mixing bowl beat cream cheese, butter and vanilla with an electric mixer on medium speed until light and fluffy. Gradually beat in enough powdered sugar to make frosting spreading consistency.

Place one cake layer on a serving plate. Spread with some of the cream cheese frosting. Top with second layer. Spread top and sides with remaining frosting. Sprinkle with 1/4 cup pecans and decorate with frosted cranberries (optional).

To make frosted cranberries, mix ½ cup water and ½ cup of white sugar in a sauce pan. Bring to a boil and then turn down and simmer 3 minutes. Remove from heat and stir in the fresh cranberries (as many as you want to decorate the cake). With a slotted spoon, remove cranberries and place on a cooling rack that is placed on a cookie sheet or has parchment paper underneath to catch the drips. Make sure they are NOT touching each other. If the rack grates are too big, just place on a parchment

lined cookie sheet to dry for about an hour. If you dry them too long, they will not be sticky enough for the sugar to adhere and you will have to wet them again. (I learned the hard way)! Then put about 1/4c sugar in a bowl and roll the cranberries in the sugar to coat.

Store cake loosely covered in the refrigerator. Before serving, let cake stand at room temperature for about 30 minutes.

Recipe is from a Better Homes and Garden magazine from 2012.

CONTAINER GARDENING WITH THE GOLD CANYON GARDEN CLUB

The Gold Canyon Garden Club’s November meeting was a great demonstration on Container Gardening. It was given by a member of our club who also is a member of the Superstition Mountain Master Gardeners. We have other Master Gardeners in our organization who provide us with great advice and encouragement. When you see opportunities to be part of a Master Gardener demonstration take advantage of their experience and education. You will learn something about gardening in the South West.

Selecting the perfect container is first on the list of creating a container garden.

Terra Cotta, Plastic and Ceramic are the three main choices. Terra Cotta provides good air and water circulation and its thick wall protect the plant from extreme heat. It requires more water and salt stains can result on the container. The container can be sealed with a terra cotta sealer that prevents salt staining. Coat it inside and out following the instructions and it won’t develop a salt stain.

Plastic is lightweight, flexible and available in many colors and can be recycled. It does not provide much insulation from the sun and roots can be damaged in the heat.

Ceramic absorbs excess moisture and needs adequate drainage holes in the bottom of the container. A ceramic drill bit can be used to provide the necessary holes making this container a beautiful addition to your garden. A paper coffee filter or some screening can be used at the bottom of the container as a filter so your soil doesn’t was away.

Decide where you want your container placed before you fill it so you are not hauling a heavy full container garden around your yard. Consider the light needed for your selected plants and place the empty container where it will stay. Full sun means partial shade in our Sonoran Desert. Flowering plants need 6 hours of winter sun.

A quality potting soil is best for a container garden. Use amended native soil on cactus

and succulents. Pumice should be added to cactus and succulent soil to provide drainage.

Choose plants in proportion to the container with strong color and a healthy root system. Plants of various heights provide an interesting design. Thriller, spiller, filler is a reference to choosing plant shapes to enhance a container. Look for buds, not blooms and each container should have similar needs for water and light. Hydrate plants and seedlings and allow them to drain before planting. Set plants at the same level in the pot and gently loosen their roots. For a fuller look, stuff the plants closer together. Using small tools gently press the soil around the plants to keep air from reaching the roots. Water plants thoroughly.

Top dress a container garden with pebbles, glass, bark etc. You may enjoy accessorizing the container with painted rocks, garden jewelry, small toys or any decoration appropriate to the theme of the container.

Water plants per their needs gently with a watering can, wand on a hose or drip irrigation. Flush salts out routinely.

Fertilize a container every few weeks with an all-purpose fertilizer. Flowering plants need more phosphate for flowers, root, and stem growth.

IPM, Integrated Pest Management, can be supplied with soapy water containing 1 teaspoon of dish soap per gallon of water. Monitor the plant and repeat before trying any other chemicals. Be kind and protect pollinators and birds.

We thank the Master Gardeners and other members of our community who have helped monitor our Butterfly Garden near Dinosaur Park. We couldn’t do it without you. Feel free to take a stroll through the Garden anytime during daylight hours.
