Preface Dear Readers, First, let us thank you for holding in your hand a SwissTasting® product. It is an honor for us to share a part of our heritage with you.

Cheese conservation Cheese is a living product ; its conservation is therefore limited in time. It is important to buy only the amount corresponding to your needs and desires to prevent it from losing quality. To ensure the best conservation possible, be careful not to pack the cheese in a plastic wrapping that does not allow it to breathe. You should always store it in a cool, ventilated place (refrigerator) and separate the cheeses to avoid odor and taste transfers.

Tasting objectives A tasting is above all a pleasurable experience to see if you like a cheese or not. However, tasting has other functions. It allows us, in particular, to evolve and implicitly improve our ability to judge the intrinsic characteristics of a cheese by putting into words the feelings and smells we experience. Finally, the tasting also provides a good reason to share and socialize around a common passion. This allows us to exchange, debate and sometimes to win tasting arguments. However, we must remain humble, sometimes accepting our ability to be wrong. Just like reading a book or listening to a song, there may be important dierences in perception and interpretation.

Tasting evolution The easiest way to evolve your tasting techniques is to try them out as often as possible. It is, therefore, very important to : -

Taste types of cheeses from all regions and all price ranges Talk, discuss and share with other people Taste good and lesser cheeses in order to compare Keep your sense of smell constantly alert to store a maximum of aromas

It is important to note that the molecules present in cheese are the same we find everywhere in our environment. Some aromas may, therefore, be similar.
