ith the blistering summer months quickly approaching, we Arizonians have only two words on our minds, “Vacation Time!” But with hundreds of exotic places to choose from, where does one go to escape? For this answer I turn to Arizona native and Fine Artist, Lucy Dickens. Lucy and husband Richard chose to spend the summer of 2010 in the beautiful and enchanted country of Italy. Their vacation proved to be one of enchantment, exploration and creation, and one the high school sweethearts, and married couple of 23 years, would not soon forget. Their journey began in the imagination of Lucy many years ago, “I’ve always dreamt that one day I would walk the steps of Michelangelo, or stroll the vineyards of the Tuscan hillsides, so in the summer of 2010 my wonderful husband planned the excursion of a lifetime!” –Dickens. What makes this Italian holiday even more special was the desire of this celebrated Arizona oil painter to document the most captivating locations the only way she knew how; on canvas. Their adventure starts in the historic capital city of the Italian Tuscany region town of Florence; the birthplace of the Renaissance, as well as Leonardo de Vinci and of course, Michelangelo. “I knew Florence would be breathtaking, but I wasn’t prepared for all of the endless, captivating city and landscapes in this artist’s paradise. As beautiful as Florence was, this wasn’t our destination. From there we drove northwest to Vitiana, a tiny hilltop village in the Italian Alps. This would be our base camp. Each morning Richard and I took daily excursions around the quaint village walking down cobblestone roads that have carried many generations of Italian family members throughout the town. One morning we came across a charming little villa whose weathered exterior and modest ambience had all the

characteristics I was looking for, so it became my first painting. How many friends and family members did this provincial doorway welcome? This romantic postcard from a forgotten time was calling out for me to paint its picturesque facade, and I answered.” said Dickens As the Dickens’ journeyed on they decided to head to the popular tourist haven of Seinna, est. 900400 BC. This surprisingly large city is famous for its cuisine, museums and medieval cityscapes, however, this is not what Richard and Lucy were looking for. Outside Seinna the couple found the Chianti Vineyards region and there stumbled upon an image straight from the Garden of Eden. “It looked as though I was standing on the shore of a sea of red water. As far as I could look were thousands and thousands of red poppies! I’ve never seen anything like it. I didn’t know what to take out first, my camera or my sketchbook, but one thing I did know for sure, this was my next painting.” said Dickens Who wouldn’t want to spend the remainder of their vacation standing in a field of endless beauty? However, there was more of Italy to see. So Lucy and Richard headed to the seaside city on the cliffs, Manarola, which is one of five tiny towns in the section of the Italian Riviera known as Cinque Terra. Founded in the 12th century, Manarola is a typical Genovese hamlet. The multi-colored houses are perched on a steep, black promontory. The coastal city relies a great deal on fishing, but
because there is little to no beachfronts fishermen must hoist their boats over the edge and lower them carefully down to some of the most uncontaminated, pristine waters in the Mediterranean Sea. “With so many backdrops to choose from, I couldn’t decide what to sketch first. Then I came across this cliff side image. I was fascinated to see a local fisherman launching his boat down to the sea as his young son waited at the water’s edge. What a wonderful memory to capture on canvas.” said Dickens. As Lucy and Richard continued their European discoveries, it appeared the couple might have discovered more than just the mesmerizing Italian countryside’s. After meeting in high school, the pair became inseparable and married at the young age of 19. Soon after the Christian couple had two beautiful daughters (Alicia, 20 and Amanda, 17), began a successful Arizona demolition company (Dickens Quality Demolition), and have been happily married for 23 years. However, even the most devoted couples need a revitalization of sorts. So when the steaming summer months of 2010 approached Richard decided it was time to take his lovely, artistic wife to the place of her dreams. What they brought back was more than just gorgeous oil on canvas snapshots of the Italian cities of old, but a rejuvenation of love and affection that seems to grow stronger as it grows longer. 1. Start with a pop that has already been completely candy dipped and chilled as your base color. Dip pop 2/3 deep in second color of melted Candy Melts. Tap and chill until set.

Preheat oven to 350°F. Spray two 8-inch or 9-inch round pans or one 13 x 9 x 2-inch sheet pan with vegetable pan spray. In large bowl, combine cake mix, pudding mix, eggs, water and oil; beat at medium speed with electric mixer 2 minutes. Pour into prepared pans. Bake 30 to 35 minutes for round pans; 35 to 40 minutes for sheet pan, or until toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans to cooling grid and cool completely. Divide cake in half; freeze one half for future use. In large bowl, use hands to crumble cake until no large chunks remain. Add icing; mix with fingers until well combined. Form mixture into balls. Chill in refrigerator at least 2 hours. Melt Candy Melts according to package directions. Dip sticks into melted Candy Melts and insert into cake balls; let set. Wait until candy is completely firm before dipping the pops completely in melted Candy Melts.

Don’t go to bed unless you are sleepy.

If you are not sleepy at bedtime, then do something else. Read a book, take a hot bath, listen to soft music or browse through a magazine. Find something relaxing, but not stimulating, to take your mind off of worries about sleep. This will relax your body and distract your mind.

t’s safe to say that every single one of us has experienced nights of tossing and turning. You lie on your back looking up at the ceiling thinking about all the things on your to do list for the upcoming week. Before you know it it’s time to attack that list without the proper energy you need. We all have heard that a restful and full night’s sleep is one of the most beneficial things you can do for your body. I know I can tell the biggest difference in my attitude and the way I approach life when my sleep tank is full. The truth is plain and simple: we would all feel a lot better and have more energy to walk through our daily life with a smile if we could make good sleep hygiene a major priority in our lives. Here are some practical guidelines to ensure a great night’s rest!
Limit your intake of caffeine.
Okay don’t chew me out for this one. Hear me when I say if a deep and restful sleep is what you are after, caffeine is the enemy. If going without any is simply out of the question for you then your best bet is to only have it in the morning. All stimulants should be avoided in the evening, including chocolate, caffeinated sodas, and caffeinated teas. They will delay sleep and increase arousals during the night

Don't stress if you feel you are not getting enough sleep.
It will just make things worse. Know you will sleep eventually. Don’t keep looking at the clock over and over wondering when you will fall asleep as this creates stress and anxiety due to the possibility of facing the day without the proper energy you need.
Stay away from big meals at night.
Try to make dinner time earlier in the evening, and try to avoid heavy, rich foods within two hours of your bed time. Heavier fatty foods take more work for your stomach to digest and this hinders you achieving the quality rest that you desire. Also be cautious when it comes to spicy or acidic foods in the evening, as they can cause stomach trouble and heartburn.

Your bed is for sleep!
If you associate your bed with events like work or errands or even catching up on your favorite shows, it will be harder to wind down at night. Use your bed only for sleep. That way, when you go to bed, your body gets a powerful cue: it’s time to nod off. I hope that you find these tips helpful on your quest for great sleep. Sometimes it helps to remember that even the smallest and most practical steps have the power to make a big difference! Here’s to peaceful quality sleep, and also to waking up to a ton of energy to conquer the day and all that lies ahead!

3/4 cup water 1/2 cup low-sodium soy sauce 2 tablespoons sugar 1 teaspoon crushed dried thyme 1 teaspoon ground ginger 3 minced garlic cloves 2 - 4 pound boneless rump roast 2 1/2 tablespoons water
1/4 cup vegetable oil 2 cloves minced garlic 1 bunch broccoli florets 1 cup sliced mushrooms 2 medium carrots, sliced 1 large green onion, cut into 1 inch pieces 1 (12 ounce) package fettuccine noodles 2 tablespoons butter or margarine 2 tablespoons flour 2 1/2 cups milk 1 teaspoon chicken bouillon granules 1/4 cup parmesan cheese 1 (about 8 ounces) can drained and flaked salmon
In a medium bowl, combine 3/4 cup water, soy sauce, sugar, thyme, ginger and garlic. Pierce roast several times with a fork. Place roast in a large ziplock bag which has been set in a deep bowl. Pour marinade over meat in bag, close and refrigerate at least 8 hours or overnight. Preheat oven to 325. Place the roast on a rack in a shallow baking pan. Roast uncovered for about 2 to 2 1/2 hours, basting with marinade during the last 1/2 hour. Strain the remaining marinade and heat in a saucepan with 2 1/2 tablespoons water until boiling. Spoon over meat slices when serving. This is also delicious when roasted on a spit on an outdoor grill. 8-10 servings.

After peaches have baked 10 minutes, remove from oven and place dough mounds on top, spacing them at least 1/2 inch apart (they should not touch). Cool cobbler preferably on a wire rack for about 20 minutes until warm, then serve. Delicious!

Lonely and Not Alone
am usually a pretty happy and active person. Once in awhile, I have this feeling that makes me feel sad and misunderstood; maybe a feeling of abandonment but I don’t see that in my life. I have people in my life that I’m around enough and even those I love. I figured that it feels like loneliness. I guess I have so much going on in my mind and think differently than others that it feels like I am alone so much. Any ideas why I keep feeling this way?

Dear Lonely B, It’s normal for just about anyone to feel a periodic feeling of loneliness, even if they don’t think they are alone enough to feel that way. At some level, even when we’re around peers, companions and loved ones, we go through life on our own. Our thoughts are unique; our view of ourselves, our life and the world differs from every other individual. Keep in mind that there is value in these introspective experiences, even if they do seem painful or bittersweet. That being said, at times, we may feel that we or our situation is so different that others wouldn’t understand, or that they would think worse of us for expressing our thoughts and feelings. So if we are feeling too different and not understood, that can bring on those lonely feelings. Instead of making us feel bad, loneliness is an emotion that can be helpful by telling us that there are relationship issues that need to be addressed. Open communication can change everything. It’s hard to carry things inside that are meant to be shared. Our own filters of our feelings or experiences can be so internally focused that we may be missing out on a larger, fuller, different view. I suggest you find a caring, fair-minded person who you know, or maybe someone who can be unbiased and open-minded, such as a counselor, mentor, advisor or coach. Talk it out with them, part by part, piece by piece. Sometimes we have no idea how much we really have to say until we start. If you don’t feel comfortable talking to someone
about these thoughts and feelings yet, journal about it so you can become more understanding and accepting of them. Remember that everyone is a completely unique human being; there is no one who is just like you in the entire world. But just about everyone gets feelings of loneliness. Have a question for Chris? he God we celebrate on Easter describes Himself as love and compassion. He lavishes love. He graciously gives. He abundantly provides. He delights in giving mercy. Nowhere is that more evident than when this one and only God decided to be born in human flesh on Christmas and decided to die for us on the Cross at Easter. The giving of His life for us is the ultimate gift. This gift for the world is not deserved nor can it be afforded. Which points us back to His love, compassion, grace, blessing and mercy. That is the God we celebrate on the holiday that changed everything. Mark’s Gospel does a wonderful job of pointing out all these characteristics in this Loving God.
was humiliating. After a huge sin like this he must have thought he was disqualified and deserved to be discarded. But there is still work to be done by disciples, and Peter. There is forgiveness available for the “and Peter’s” of this world. There is grace to cover the failures of the “and Peter’s”. The blood of Jesus runs as far as the floppings of the “and Peter’s” of this world. We serve a God of second chances who forgives and starts the slate clean again and again. That is why we celebrate Jesus on Easter.

When Jesus rose early on the first day of the week, he appeared first to Mary Magdalene, out of whom he had driven seven demons. She went and told those who had been with him and who were mourning and weeping. When they heard that Jesus was alive and that she had seen him, they did not believe it. (Mark 16:9-11)
We celebrate the God of second chances. After Jesus rose from the grave defeating death and Satan and sin, He sends angels to His followers to alert them of His mission. The women followers are given specific instructions as to what they should do now that Jesus has risen.
“Don’t be alarmed,” he said. “You are looking for Jesus the Nazarene, who was crucified. He has risen! He is not here. See the place where they laid him. But go, tell his disciples and Peter, ‘He is going ahead of you into Galilee. There you will see him, just as he told you.’” (Mark 16:6-7)
Why point out Peter the way they do? Peter was a disciple and would’ve been included in the group, so why single him out like that? Because God is a God of second chances. The “and Peter” is for Peter. I can just hear the women looking Peter in the eyes and saying, “He specifically said for you to go to Galilee!” Peter’s response could have been, “are you sure? Did he really mention my name after what I’ve done?” Peter denying Jesus

You can understand why the disciples would not believe Mary’s news. First of all, the news is unbelievable. Jesus was beaten, tortured, mocked, spit upon, hung from a Cross and bled for six hours in the heat of the day. He then took His life back after three days, because He is God. Secondly, why tell someone like Mary? I mean seven demons, what a past?! Jesus would probably confide in people not as embarrassing and who certainly have their act together a little better than her. Mary would be forever known by her peers as “that woman”! You know, that woman with all those demons who left all those scars caused by all those choices and leaving all those consequences. But God is love and compassion and forgiveness and grace and delights in giving mercy. What better person to appear to, one who illustrates beautifully that we
