Truffle hunting near Certaldo, Italy.

Cultural Immersion “TARTUFO!,” exclaims Lucca. He saunters through the forest,

bright blue eyes as crisp as the morning air; a mop of curly hair channeling a blonde Slash from Guns ‘N Roses. Cradled in his callused hand is a small yet pungent Tuscan truffle. His father, Luigi, the professional hunter of the bunch, only speaks Italian. With stern yet encouraging commands, Luigi leads a hunting dog through the Natural Reserve of Truffles. During a trip to Tuscany, while producing a story, I went truffle hunting with this local family. After foraging, I followed Lucca to the town of Certaldo. He walked me to his mother’s kitchen, named Cucina Giuseppina. Every bit the no-nonsense Italian cook, Giuseppina shaved our truffles while Lucca served red wine crafted by his own hands—his reserve Chianti named “The Poet.” This was true farm-to-table dining, a three-course meal of meats, cheeses, eggs, and dessert shared with a proud local family. Afterward, I lined my shopping bag with kitchen utensils, Lucca’s reserve wine, housemade jalapeno jam, and local olive oil. They all helped me carry a little piece of Certaldo home, and today, when I cook in my own kitchen, a soup ladle decorated with “Cucina Giuseppina” nourishes my memory.

It’s not just moments like these, but the people met along the way, that define true cultural immersion. Checking In andBeyond Phinda Private Game Reserve BY SCOTT GUMMER IN ZULU, THE WORD FOR “THE RETURN” IS PHINDA. It was an appropriate name for the andBeyond Phinda Private Game Reserve, which, since its founding in 1991 in the eastern South African province of KwaZulu-Natal, has revitalized local communities and restored a vast expanse of derelict farmland to its natural splendor. The founders’ vision was to offer luxury eco-tourism as a means to fund their stated mission—Care of 14

the Land, Care of the Wildlife, and Care of the People—and by any measure, Phinda (pronounced PIN-duh) and its six main lodges has been an unequivocal success. Phinda’s latest major renovation is the just reopened Mountain Lodge. Toward the north of the 70,560-acre reserve you’ll discover the six-suite Vlei Lodge, set on the edge of a wetland (vlei), and Forest Lodge, with 12 suites featuring floor-to-ceiling glass in the heart of a rare sand forest. To the south, Rock Lodge has six suites blended into the hills. Nearby, Mountain Lodge was Phinda’s first and oldest accommodations; now, thanks to a fresh rethinking of its form and function, the flagship lodge is state of the art—with an emphasis on art. The largest of Phinda’s lodges and one of the most popular with families, Mountain Lodge reopened in mid-August. The local Zulu culture and nearby Indian Ocean inspired the design, from blue hues to intricate beadwork and baskets and handmade herringbone tiles. tranquil, and the main lodge is intriguing, with open decks that provide views of the Ubombo mountain range, the Lebombo foothills, and the surrounding Zululand bush. The staff is welcoming, and the rangers and trackers are literal walking encyclopedias of bush knowledge. From aardvarks to zebras, the abundance of wildlife is astounding. Additionally, Phinda was the first private game reserve in KwaZulu-Natal to bring back the “Big Five,” the quintet of prized viewing: lion, leopard, rhino, elephant, and Cape buffalo. What’s more, there are 436 bird species, myriad butterflies, majestic trees, and color-drenched flowers. Considering that an African safari truly is a once-in-alifetime journey for most Americans, choosing a place like Phinda nearly guarantees an incredible stay. Michelin’s love affair with Hong Kong has been well documented: The red guide has consistently honored the island with dozens of stars, making it one of the most dynamic and diverse culinary destinations in the world. Deciding among its 63 starred restaurants, however, is the biggest challenge any visitor will face. Start at the InterContinental Hong Kong to scratch two big names off your culinary cheat sheet: Rech by Alain Ducasse is one of the city’s most thrilling French fine dining experiences, while Yan Toh Heen is one of the world’s finest Cantonese restaurants. And there’s no better way to work off your last great meal—and build up an appetite for your next one—than by exploring the burgeoning cultural districts of Hong Kong. The city has a thing for turning old municipal buildings into modern attractions, whether it’s the PMQ—the former Police Married Quarters, which is now a bustling hub of designer studios and stylish restaurants—or the Tai Kwun Centre for Culture and Arts, the historic Central Police Station compound that has been transformed by starchitects Herzog & de Meuron into a series of indoor and outdoor art galleries, performance spaces, shops, and restaurants. The merging of history and modernity is a recurring theme here, as there’s also the vividly modern Xiqu Center, with dramatic curves that serve as the backdrop for traditional Chinese theater performances, and Wan Chai, which has been reborn with the addition of the avant-garde Hong Kong Arts Center and the Academy for Performing Arts.

Macao may be known as an entertainment capital, with glistening high rises, but this peninsula on the western side of the Pearl River Delta is also a place of mixed heritage and storied history, where one of the world’s oldest Taoist temples and the ruins of the 17th-century Ruins of St. Paul’s lie just a few miles apart. With influences from both the Portuguese (whose presence in Macao started in 1577) and the Chinese, there’s ample culture to explore, whether it’s the varied architecture at the Historic Centre of Macao or the many examples of modern and traditional art at the Macao Museum of Art. Designated one of UNESCO’s 26 Creative Cities of Gastronomy, the destination is also home to its own fair share of Michelin eats. Start your visit with a few stars and head to one of Macao’s hottest Michelin restaurants. For something refined and French, it’s the twostar The Tasting Room, where Chef Fabrice Vulin’s vegetable-forward

cuisine is plated with beautiful orchids and other dramatic accoutrements; if traditional Chinese is what you’ve come for, a reservation at The Eight— where 40 kinds of dim sum are served—is a must. But Macao is more than a fine-dining mecca. The high-brow guide has also tipped its hat to dozens of local street vendors, from Lord Stow’s Bakery (famed for its Portuguese egg tarts) to Sei Kee Cafe (for the best pork buns, bar none). Polish it all off the way locals do—with tea—at the Lung Wah Tea House, where the owner buys fresh produce from across the road and serves Yunnan’s finest pu’er.

SPOTTING WILDLIFE IN THE YOU YANGS The bushland of You Yangs Regional Park, located 45 minutes west of Melbourne, is home to more than 200 bird species as well as one of Australia’s healthiest populations of wild koalas, and Swain Destinations is the founding sponsor of the Koala Clancy Foundation. In an effort to protect these iconic marsupials, Janine Duffy, cofounder of Echidna Walkabout, started a citizen science research project identifying individual koalas by their noses. WILDLIFE CRUISING IN GIPPSLAND Explore the rugged coastline of Wilsons Promontory National Park by boat. WITNESS THE PENGUIN PARADE Every year, more than 700,000 people witness the famed Phillip Island Penguin Parade. A state-of-the-art visitor’s center debuted in July 2019 and features a new theater area plus dining, retail, and research facilities. Home to Australia’s largest colony of little penguins, the enhancement of the site added nearly 15 acres of habitat, creating homes for an additional 1,400 breeding penguins. 5. HIKE TOWER HILL Located between Warrnambool and Port Fairy, this extinct volcano is now home to a landscape full of wildlife. Originally the land was inhabited by clans of the Gunditjmara nation. Today, the visitor center offers guided interpretive walks of varying difficulty levels. The strenuous Journey to the Last Volcano loop traverses the rim of one of the crater lakes and rewards hikers with panoramic views of the reserve. 6. TREKKING IN THE GRAMPIANS Grampians National Park is known for its sandstone peaks and ancient Aboriginal artwork. One of the best ways to take in its splendor is by hiking the Grampians Peak Trail. The

first 22.3-mile section was recently finished and takes three days to complete—with camping options along the way. Begin your trek at Halls Gap, take in the famous Pinnacle Lookout, and enjoy 360-degree views from the summit of Mt. Rosea. The entire trail will consist of a 13-day circuit and should be completed in late 2020. 7. EXPLORE THE TWELVE APOSTLES Arguably Australia’s most famous road trip, the Great Ocean Road is a 152-mile stretch from Torquay to Allansford near Warrnambool. Of all its wild beaches, rugged coast, and cascading waterfalls, the 12 Apostles reigns as the main attraction. You can view it from the clifftop, from the beach, or from above via helicopter. From the 12 Apostles, it’s less than a half-mile walk along rugged cliffs to see Gibsons Steps—86 steps that lead to a wide expanse of beach. Hop in the car and its less than a five-minute drive to Loch Ard Gorge, a sapphirehued inlet with a storied seafaring past. 8. GLAMPING IN WILSONS PROMONTORY There’s no need to rough it in the bush. Wilsons Promontory National Park offers a glamping alternative to traditional camping. Located within walking distance to the beach, tents feature all necessary comforts, including a queensized bed, mini fridge, a private ensuite bath, and a timber

deck. Glampers also have access to a BBQ area as well as a communal kitchen equipped with a four-burner gas cooktop, fridge, coffee machine, and microwave. 9. VIEW KOALAS ON FRENCH ISLAND Animal lovers flock to Phillip Island to see its famed Little Penguins. But few realize one of the most robust koala populations in Victoria is just a 30-minute ferry ride in French Island National Park. A network of well-managed tracks starting at the Tankertson Foreshore Reserve makes it easy to explore the area on foot or bike. Increase your chances of seeing these nocturnal animals by camping overnight. 10. SWIMMING ON THE MORNINGTON PENINSULA Get up close with the Mornington Peninsula’s resident marine life. The Nile in Style With the debut of Uniworld’s new S.S. Sphinx, Egypt’s famed waterways are getting a dose of luxury fit for a pharaoh. BY JACKIE CARADONIO “IT IS SO PEACEFUL CRUISING THE NILE,” says Hani Kamona. “It feels

as though time has stopped—or even gone backward to those ancient times when the pharaohs were making their great civilization.” Kamona, an Egyptologist since 1997, talks about his country much in the way that a poet describes a beautiful landscape—full of vivid descriptions and lyrical imagery. His love for his home is no doubt intensified by the way he experiences it from day to day: Kamona has been sailing

the Nile River with Uniworld since the cruise company first started operations there back in 2006. And with next year’s launch of the brand’s newest Egyptian vessel, Kamona will soon show off his country in a whole new way—the most luxurious the river has ever seen. A Jordan Sojourn that Egypt’s next wave of tourism is rising high. After years of struggle caused by the Arab Spring, the country is back in business, and it’s better—and safer—than ever. “Egypt gained back 80 percent of its guests compared to 2010’s numbers,” says Kamona. The trip will take travelers from the capital city of Amman to the high deserts, ancient monuments, and Biblical sites of Petra, Jerash, and Madaba. SOUTH AFRICA’S ROOTS RUN DEEP. Today, the country

is an exciting blend of art, culture, and natural beauty, but if you go back 20 years—or even 2,000 years—you’ll find the same was true then. As a hotbed of vibrant civilizations for centuries, South Africa is a place that speaks to all of us. Here’s how to see it all. It’s only fitting to start where it all began—at the Cradle of Humankind. This UNESCO World Heritage Site (which celebrates its 20th anniversary as a World Heritage Site in December) just outside of South Africa’s largest city of Johannesburg is where scientists unearthed the oldest known hominid fossils, dating back 4.5 to 1 million years ago. An adventure through the site’s limestone caves paints a colorful picture of our early ape-like ancestors—and the common history we all share as human beings. Head next toward Soweto, the famously vibrant township where Nobel Laureates Nelson Mandela and Desmond Tutu made their homes. An example of South Africa’s tumultuous past, this neighborhood suffered greatly during apartheid, only to rise up— much like its famous denizens—as an example of courage in the face of prejudice. Back in Johannesburg (or Jo’burg, as locals call it) for the night, drop by the former home of Mahatma Ghandi for further inspiration. It was at this stable house, which is now a museum,

where the social activist developed his philosophy of satyagraha, a form of active yet peaceful resistance to political injustices that Ghandi would enact against British rule in India. In the morning, it’s further exploration of Guateng. Head south of Jo’burg for a day with the Zulu, Xhosa, and other Ubuntu groups of the Lesedi Cultural Village. This is no tourist attraction—the residents of this village will welcome you into their homes and share centuries-old cultures and rituals. Symphony of Nature Roam this seductive land and encounter majestic wildlife through the lens of photographer, filmmaker, and author, Pete McBride. FOR MOST AVID TRAVELERS, VISITING AFRICA JUST ONCE IN A LIFESPAN WARRANTS BUCKET-LIST BRAVADO. For

National Geographic photographer, filmmaker, and author Pete McBride, touching ground on African soil has happened 11 times, and counting. “For my first story with National Geographic, we flew a replica WWI open cockpit biplane from London to Cape Town, shadowing the first African air passage of 1920,” says McBride. “We tried to mimic their route as a way to show the advancements of Africa and aviation. Those early aviators made the journey in 43 days (following

mostly the railroad) and crashed twice. In 1998, it took us 58 days, we crashed once, were detained, and got intercepted by fighter jets. Yet, we also got a firsthand, open-cockpit view (at 63 mph) of the entire eastern side of the African continent. The place and all its richness in culture, language, wildlife, and wonder got under my skin then, and has never left.” McBride has since traveled to this enchanted part of the world—at once beautiful and brutal in its cyclical nature of life—for several projects and assignments, many of which have been anchored in conservation. “I’ve produced stories on Northern Kenya, gotten involved in community

conservation with local tribes, and have taught student workshops in Tanzania, in addition to looking at glacial loss and climate change at the summit of Mount Kenya,” he says. “I’ve stepped in the footsteps of Diane Fossey while following gorillas in Rwanda. I’ve also been deported from the horn of Africa—the Djibouti/ Somalia region—while documenting a legal narcotics story. Every trip has been magical, awe-inspiring, frightening in spurts, and humbling.” Here, McBride captures and explains Africa’s wild heart, which pulses to the beat of the animals and tribes that have roamed its lands long before a plane dared fly over its vast landscapes.

They were reaching out to their Mai spirit, Ngai, who brings rain and sustenance. OKAVANGO DELTA, BOTSWANA > “I once watched in amazement, through my camera whirring, a hungry lioness plunge across a river in a desperate attempt to steal a kill from a group of wild dogs. The dogs fended her off, but ultimately, her hunger and tenacity won her some scraps before the hyenas arrived. It was a classic symphony of silence and sounds in the African wilderness. First, the warning ruckus, then all went hauntingly quiet before the chase, which turned to sudden chaos. Then, during the kills, quiet again. The animals did their territorial ballet of strength and numbers.”

NORTHERN KENYA > “A group of Moran Samburu warriors dance and sing with deep guttural, rhythmic movements as they celebrate the rains and their livestock. These warriors of the northern reaches of Kenya have learned to work with their livestock in and around wildlife, trying to manage longer droughts, a more recent occurrence linked to a changing climate. We slaughtered a goat this night and I was offered the honor of drinking blood from its neck. The tribes in northern Kenya are tough, nomadic, and resilient. Many live off a mix of blood and milk and can walk or run marathon distances daily. They are also remarkably fun, festive and welcoming— and their singing is ethereal and raw.”

SAMBURU VILLAGE, KENYA > “As the Milky Way quietly sweeps overhead, the muffled chatter of Samburu villagers discuss their day and share stories of life in northern Kenya: herding, cattle clashes, wildlife encounters, nomadic living, waiting for the rains. In this region, the community works closely with a group called Northern Rangeland Trust to protect their land from overgrazing, poaching, and promoting sustainable, small tourism programs. Through conservation initiatives, it enables communities, and particularly women, to have an economic voice and protect the region’s greatest asset—wildlife.”

INTO EAST AFRICA During a firsthand account of this enchanted land, a wish-list trip becomes an experience to mentally revisit, with memories of nature at its finest. BY JENNIFER ANN

’d been dreaming of a trip to East Africa for years—a bucket-list check imagined as a soul-stirring, immersive journey. As I prep for the experience with African Travel, Inc. which includes stops in Nairobi, the Maasai Mara, Singita Grumeti Reserve in Tanzania, and the famous Ngorongoro Crater, I anticipate celebrating community, culture, and the Big Five. Yet after what I first thought of as a once-in-a-lifetime trip, I quickly discover I can’t wait to return.

NATURE IS HARD AT WORK HERE, AND AS THE CHEETAH PAUSES TO CATCH HER BREATH, I REALIZE WE, TOO, ARE BREATHLESS IN HER PRESENCE. A NAIROBI WELCOME

First up is a visit to the David Sheldrick Wildlife Trust. Established more than 40 years ago as a rescue and rehabilitation facility for orphaned elephants and rhinos, for $50 a year you can adopt one of these beautiful creatures, and I have an opportunity to interact with my own foster elephant, Larro. Next, I head to the Kazuri Beads Factory. Swahili for “small and beautiful,” Kazuri was started in the 1970s as a place for single mothers to find employment; it’s since become an artist haven where women thrive. Each unique piece of jewelry and pottery has been handcrafted by women employed here, and as I hold these gems in my hand, it shows. Then it’s off to the Giraffe Center. Located on the estate of Betty LeslieMelville, Giraffe Manor Hotel offers a truly unexpected experience. Not only can you feed Rothschild giraffes by hand, but if you place a pellet between your lips, you’ll receive a giraffe “kiss” as they gently grasp it with their tongue.

THE MAGIC OF THE MAASAI MARA

The following morning, I awake before my alarm goes off, flooded with excitement about the next adventure: my first safari, in the Maasai Mara, with two nights at Karen Blixen Camp. Upon arrival I’m greeted with freshly squeezed juice and the sound of hippos playing in the Mara River. Tents are both eco-friendly and luxurious, with private outdoor showers and every amenity needed for a comfortable bush experience. When I’m not in awe of nature during dawn and dusk game drives, there’s time to enjoy a spa treatment, lounge by the pool, or simply gaze out at the river from my tent’s private deck. The land is brown and vast, sprinkled with quirky trees that have as much

personality as the animals that seek shelter beneath them. Elephants parade with their calves; a pride of lions unsuccessfully tries to conquer a hippopotamus; a tower of giraffes graze on tree leaves; and a dazzle of zebra befriend a lonely wildebeest. Just when I think the safari experience couldn’t be more, we break during a morning game drive and are surprised with a breakfast feast served in the middle of the Mara. Later, as we toast a Kenyan sunset with sundowners served around a roaring bonfire, a hyena scurries past, carrying his dinner into the distance as dayglow pink and orange hues collapse into the horizon.

TANZANIA’S SINGITA GRUMETI RESERVE

Leaving the Mara is bittersweet, but Singita Grumeti Reserve in Tanzania awaits. I’m welcomed at the airstrip with a refreshing drink before continuing by jeep to Singita Faru Faru, a haven for honeymooners, couples, or anyone looking for a quiet retreat in the heart of the Serengeti. I also spend two nights at Singita Sasakwa Lodge, ideal for families and those desiring more space. Cottages are like a private luxury oasis, with individual plunge pools, made-to-order meals, and impeccable service. The terrain at Singita Grumeti Reserve is vastly different than Kenya’s landscape. Tanzania’s tall grass make this safari experience a lesson in patience, which pays off. We watch a family of female lions lazing in the grass as their cubs play, while dad surveys the area (and us) from a distance. Zebra frolic about, giraffes saunter in slow motion, and

water buffalo take mud baths before gathering together under a shady tree. We spend over an hour tracking a cheetah as it hunts for dinner, an unlucky impala. Nature is hard at work here, and as the cheetah pauses to catch her breath, I realize we, too, are breathless in her presence. The following day, I learn firsthand of the Grumeti Fund Community Outreach Program, which supports families in nearby local villages. Children invite us into their homes, and as they sing their welcome song, I’m overwhelmed by this small but significant encounter.

NGORONGORO CRATER + ARUSHA COFFEE LODGE

The next morning brings a visit to The Manor at Ngorongoro. Located in the middle of an expansive coffee estate, cottages are set amongst a lush green landscape and flowering gardens, and a horseback ride takes me through beautiful coffee fields. I find the Ngorongoro Crater, a UNESCO World Heritage Site, is home to an abundance of wildlife. Thousands of pink flamingos soar over the water’s edge in the distance and my Big Five checklist is complete when I spot a black rhino. Prior to journeying home, I lunch at Arusha Coffee Lodge and think about how this journey to Africa is an experience that’s hard to relay. Its magnificent physical terrain mines an emotional landscape impossible to capture via words. It’s a place I’ll return to, if not physically, but emotionally, for the remainder of my life. As I leave, I am filled with the voices of children singing welcome songs: “Jambo, Jambo bwana, Habari gani, Mzuri sana ... ”

SLOVENIA, ONE OF EUROPE’S HIDDEN GEMS,

is quick to seduce sophisticated travelers in search of new horizons. A few fast facts: This compact, green, diverse, and beautiful country was first to declare independence from the former Yugoslavia in 1991. Slovenia’s small size (roughly the same as New Jersey), combined with its superb infrastructure, means getting around is a cinch. What’s more, the Alps, Adriatic, wine country, and Eastern plains are all less than a 90-minute drive from the capital of Ljubljana. As someone who’s been to over 100 countries, I believe we follow our passions via travel, so here are my suggested journeys for outdoor enthusiasts, food and wine aficionados, history and culture buffs, and the spa seeker. 60

THE ADVENTURIST

Due to Slovenia’s varied terrain, the country offers endless options for travelers seeking active pursuits. Start in the Alps, a gorgeous haven for hikers of all levels. One of my favorite spots? The Upper Savinja Valley, home to Logarska Dolina and the so-called “pearl of the Alps”—a narrow glacial valley with several natural wonders, soaring snowcapped peaks, and endemic flora and wildlife. Kranjska Gora, Slovenia’s premier ski destination, begs for challenging mountain treks during spring and fall. Additionally, hikers can traverse sections of Europe’s major trails that wind through Slovenia, including the E6 Baltic to Adriatic path, or the Via Alpina, a network of five long-distance alpine hiking trails, part of which runs from Monaco to Trieste. And if you are feeling especially ambitious, tackle Mt. Triglav, Slovenia’s highest mountain (and tallest of the Julian Alps at 9,396 feet) and a rite of passage for both locals and visitors. If water is your adventure muse, raft such rowdy and fast rivers as the Soča. The river winds through Slovenia and northeastern Italy, and a breathtaking float down this ethereal waterway reveals blue-green waters cascading from the Julian Alps. If two wheels are your preferred mode of transport, cycle and mountain bike through green valleys, up and down challenging Alpine foothills, and slower-paced paths near Lake Bled and the Krka Valley. Finally, for an adrenaline boost, try ballooning, canyoning, or


paragliding near the mountain towns of Bovec or Bohinj. Slovenia is also known for its caving, canyoning, and rockclimbing. Yet the ultimate thrill in Slovenia? Ziplining down the world’s steepest descent as you fly over Planica Nordic Centre, which features the longest ski jump in the world.

THE EPICURIOUS

Long before slow food and farm-to table menus were popular, Slovenian chefs were way ahead of the curve. The country’s top toques have a serious obsession for fresh, locally sourced, seasonal ingredients. Slovenian cuisine, by virtue of the country’s location, borrows from its Austrian, Hungarian, Italian, and Croatian neighbors. The result: Unique dishes and innovative flavor combinations you’ve likely never tasted before. Despite its small size, Slovenia houses 23 distinct culinary regions. Begin your food and wine trail in Ljubljana, where you’ll discover such excellent restaurants as Restavracija Strelec. Located in the city’s castle tower, expect fantastic views of the city. to the right place. Award-winning Slovenian wines are attracting fans worldwide. More than 20,000 wineries can be found in Slovenia, so expect a vineyard for every discerning oenophile. The country’s terroir produces bright red wines like Teran, in addition to superb whites, sparkling wines like Zlata Radgonska Penina, and fruit-flavored brandies. Although there are many celebrated wine regions, I recommend the Vipava Valley and Goriška Brda for the quality of wines coupled with outstanding dining and places to stay (see sidebar). What’s more, elevate your wine experience with helicopter flights, biking to various wine tastings, and meeting regional winemakers at their estates.

THE CULTURE & HISTORY BUFF

Launch your cultural pursuits in Ljubljana, Slovenia’s manageable, livable, and charming capital. Because of the city’s relatively short distances, plan to navigate its storied streets via foot, bicycle, or public transportation. Ride

the funicular to the top of Ljubjlana’s castle for panoramic views of the city and an overview of Slovenia’s history. Wander through Old Town (aka Staro Mesto), the most regaled part of the city that hugs the banks of the Ljubljanica River. Explore the area’s charming old squares, wooden shop fronts, markets, and historic churches. Connecting Old Town with Ljubljana’s commercial center is Prešeren Square, a favorite meeting point of city residents. Make time to stroll along the river, down the grand avenues, or, better yet, take a boat ride for a new perspective on Ljubljana’s neighborhoods. Throughout the city you’ll notice the distinctive architecture of native Slovenian Jože Plečnik, a student of Viennese master Otto Wagner who designed a series of buildings and public works in a unique amalgam of Art Nouveau, Art Deco, and Arts & Crafts movements. Two not-to-miss Plečnik masterpieces include the National University Library. Completed in 1941, it features grand colonnades (one of Plečnik’s signatures) and distinctive main doors. The Dragon Bridge commemorates the 50-years reign of Austro-Hungarian emperor Franz Joseph and is adorned with dragon statues. Additionally, Ljubljana is home to several interesting museums, including the National Gallery of Slovenia and


the Museum of Modern Art. Outside the city, witness the aweinspiring Predjama Castle, a one-of-a-kind fortress built into a cave; the medieval town of Ptuj; Radovljica, a well-preserved village with a colorful main square; and Piran, Slovenia’s Adriatic gem and a beautiful city rich in history, with a bell tower reminiscent of St. Mark’s Square. Lastly, no trip to Slovenia is complete without experiencing Lake Bled, Slovenia’s most beautiful alpine lake. Visit Bled Island on a traditional boat called a pletna, and then enjoy views from the castle located high above the lake. Soil to Spoon: The History of Flora Farms

DUST SWIRLS AROUND OUR CAR AS IT BOBS AND WEAVES ALONG THE DIRT ROAD, NARROWLY MISSING DEEP HOLES AND BOUNCING ALONG AT A CAREFUL CRAWL. We’re enveloped in a brown fog, which adds a hint of drama—not to mention uncertainty as we squint through the haze—to our culinary pilgrimage. It has only been half a mile since we turned off the main road just north of San José del Cabo, and already we’re in another world, trading the smooth concrete of the coastal highway for a dirt path surrounded by scrubby brush. It’s ironic that this trail—unruly and unpaved as it is—leads to Flora Farms, the restaurant that not long ago paved the way for Cabo’s modern culinary movement. When we’ve finally made it to the end of the road and the dust settles, we discover a lush oasis. Gone are the thirsty desert landscapes; in their place are acres of healthy farmland punctuated by long stretches of grass—they almost look like verdant catwalks—and slender palms. The mango trees are in full bloom, their massive fruits tugging at the branches from which they precariously dangle, and the garden’s herbs are bursting from the ground like brilliant green bouquets. There’s an ice cream cart and a sprawling lawn perfect for picnics, and in the distance, a collection of stone buildings connected by streams of twinkling lights is buzzing with action as dinner is about to begin. If there was a heaven for foodies, I’m pretty sure it would look like this.

When Flora Farms opened in 1996—then, just a little organic restaurant called Café Flora—it was something of an outlier in the local culinary scene. Back in those days, Los Cabos (which comprises San José del Cabo and Cabo San Lucas) had a good enough reputation as the south-of-the-border vacation spot, with its unrivaled luxury resorts and pristine Sea of Cortez beaches. But what you ate and drank when you got to whichever five-star beachfront property you were staying at typically looked the same: margaritas and guacamole, tequila and tacos. Delicious, yes, but hardly a study of Mexico’s diverse cuisine. With the arrival of Flora Farms, however, travelers who had been religiously coming to Cabo for decades had a new lifeline to the culture of their favorite destination. Who knew that juicy heirloom tomatoes, giant eggplants, and mouthwatering figs could be grown right there on the edge of the beach? And with those fruits of the earth came ample opportunities to explore Mexico’s finest flavors: sweet corn with cotija cheese, chicharron with spicy honey (from on-site beehives), and quinoa cooked with succulent papaya and shrimp. In this coup of culinary greatness, Executive Chef Guillermo Tellez—a Charlie Trotter protégé and Michoacán native—is the renegade at the helm. He strides through his gardens with a pile of picks fresh from the earth—Persian limes, broad leaves of kale, and fragrant basil—right into the kitchen where the staff is busy preparing everything under the sun: Neapolitan-style pizzas with house-made mozzarella in the wood-fired pizza oven; freshly baked bread and carrot-almond ice cream for the Flora market; and mesquite-roasted chicken and rabbit rillettes for the dozens of tables outside, where hungry guests are sipping—what else?—margaritas. But here, they’re made with pineapple-infused mescal, cilantro, and jalapeño.

The Next Factor: Top Tables

Tellez says he’s “living the dream” at Flora. “We’re taking it to the next level,” he adds—and he’s right. In the 23 years since the farm has opened, it has led the charge for other Cabo restaurants to forge new territory, too. But only recently has the movement reached a critical mass. Just down the road, Acre Baja is the newest straight-from-the-soil eatery where every last ingredient is hecho en Mexico, from the mescal to the salsa, and served in a chic setting filled with rough-hewn wooden tables and banquettes topped with patterned pillows (made by local artisans, of course). En la Cocina A few miles west, at Los Tamarindos, Chef Enrique Silva operates one of Cabo’s biggest working farms, producing everything from pasillo peppers—which he dries in the sun for his vegetarian chile relleno— to cauliflower, which he mesquite-bakes and pairs with pepita aioli. Set on a sugarcane ranch from the 1800s, his restaurant serves locally-sourced perfection down to the last detail: Pork shank and Rock Cornish game hen come from nearby farms, while the green mole sauce and achiote are crafted only from ingredients Silva can grab just outside his kitchen. Down the golden corridor— the stretch of highway named for the glittering resorts that line it on either side—luxury hotels are getting in on the movement too, serving up dishes with deeper roots than ever before. At the new Montage Los Cabos, mescal is putting new spins on fresh ingredients with plates like the suckling pig al pibil—an international twist on the classic Yucatán dish, cochinita pibil—and the castacán tacos, a transformation of one of Mexico’s most classic dishes with crispy pork belly and peanut-chipotle sauce. My favorite, however, turns out to be the simply executed hiramasa de baja, a seared avocado hot and soft with just the right richness and consistency, topped with plum aguachile sauce. For the freshest seafood, we head next to the local market—that is, the fish market at the Waldorf Astoria Los Cabos Pedregal’s El Farallon Restaurant. There, we select our catch, which is weighed on an old-

fashioned scale and then paired with our choice of accoutrements: sea bass with chimichurri, red snapper with fragrant ajíllo, and shrimp with a tangy tequila sauce. At Las Ventanas al Paraíso, A Rosewood Resort, meanwhile, we discover a traditional Tlaxacalan barbacoa. It’s a throwback to an ancient pre-Hispanic ceremony in which the natives wrapped meat in Maguey leaves and heated it for hours in an underground oven. When the free-range lamb is unearthed from the beach after seven hours of smoldering, it’s a tender and sweet history lesson for our taste buds.

Top Toque: Chef Enrique Olvera

But it’s all the way on the west end of the corridor where we discover Cabo’s most effective blend of culinary authenticity and creativity. Chef Enrique Olvera became a celebrity for his Mexico City restaurant, Pujol, when word of his famous mole madre sauce, which has been cooking continuously for more than six years, made it onto the worldwide foodie radar. His fifth restaurant, Manta, located in The Cape, a Thompson Hotel, is a true testament to the all-encompassing culture of Mexican cuisine. Everything, from the vintage tortilla presses lining the entryway to the handmade ceramic tiles on the floor, nods to Olvera’s mother country. When we arrive just before sunset, a stream of golden light stretches through the floor-to-ceiling windows to cast an angelic glow on the cooks working with careful focus in the open kitchen. Manta means “blanket,” and it’s clear that Olvera intends to envelop his guests in worldly comfort from their first taste. Yet, nothing here is strictly about the classics. Fish tacos are dressed in black miso, scallops are cooked in shiso, and a variety of moles that look nothing like the traditional brown sauce arrive at our table one after the other. Olvera says he’s eschewing the stereotypes of his own native cuisine with such dishes and yet everything is somehow distinctly Mexican, whether it’s the tortillas made from handground bolita corn or the tres leches cake served with tamarind. It’s an education of the palate, as we parse the flavors of each dish, surmising the origins of each ingredient, whether from Oaxaca or Osaka. That it all pairs well with a margarita is no coincidence. This is, after all, Cabo.

CORONA DEL MAR, CA. with Lindsey Ueberroth, CEO of Preferred Hotels & Resorts. 2020 WISH-LIST TRIP: A trip to explore Croatia and re-visit Yugoslavia tops my list. My grandfather was Serbian so I have a lot of interest in visiting the country of my lineage. MY DREAM HOTEL SUITE: I have stayed in countless incredible suites, and the most memorable are those designed as minihavens where you can truly relax, take care of yourself, and have easy access to all of your favorite things without ever leaving. For me, this would be a suite complete with a workout room, massage room, movie screening room, Jacuzzi, and a balcony with an inspiring view.

NEVER THOUGHT I’D SEE: Myself spending a personal vacation in the most remote parts of the Amazon helping repair broken water wells for an amazing organization called Wine to Water. I spent five days working 12 hours a day doing manual labor. I didn’t have access to electricity, cellphone, internet connectivity, or running water and slept in a hammock. It ended up being one of the best and most rewarding vacations of my life. Being disconnected and working alongside locals and a team of incredibly passionate, generous people bonding together for a great cause made me appreciate not only everything I have in life but also the joys of traveling and connecting with other cultures in a different way.

I’D MOST LIKE TO DINE WITH: Oprah Winfrey. She is an inspirational female leader, and it would be incredibly interesting to hear about the experiences and people she has had the opportunity to interview over the years. WHEN I’M NOT WORKING, YOU’LL FIND ME: If I am not traveling for fun—which I like to do often— you’ll either find me enjoying downtime in my home watching movies and relaxing with my dog, Piper; in summertime, with friends and family in California either at the beach in Laguna Beach or relaxing along Lake Arrowhead; and in winter, skiing (anywhere!).
