Making your descent to the base of the mountain is an adventure in its own right, with a speedy luge ride down a nearly 2.5-mile track full of hairpin turns. Though the local ferry can take you to islands like Somaemuldo and Heuksando, nearby Deungdaeseom is a far more enchanting destination, especially for its disappearing point of entry: The isle, known for (and named after) its hilltop lighthouse, is accessible only via a rocky walkway from the mainland—but only twice a day, during low tide. Although Egypt is larger than Texas, most of its population resides in a narrow ribbon of land along the banks of the Nile River. Chances are your journey will begin in Cairo, the country’s capital and a sprawling city of 20+ million residents. Because Cairo is so spread out, here are my insider tips so you can find your bearings.

Begin your visit in Tahrir Square. Facing the plaza is the famous Egyptian Museum, which houses the finest survey of the country’s ancient civilization, including the dazzling treasures from Tutankhamun’s tomb. History buffs flock to the National Museum of Egyptian Civilization and its recently opened Mummies Hall, while culture connoisseurs should explore Cairo’s wealth of Islamic art and architecture. Among the hundreds of city mosques, my two favorites are Ibn Tulun—a gem of classic ninth-century Islamic design and the oldest mosque in Africa—and the ornate Mosque-Madrassa of Sultan Hassan, one of the largest in the world and best visited in the morning, when the light illuminates its cavernous interior. Before rushing to see the monuments at Giza, first visit the archaeological sites of Saqqara and Dahshur to fully appreciate the genius of ancient Egyptians as they perfected the centuries-old pyramidal shape. In Saqqara, marvel at the Step Pyramid of Djoser, the oldest large-stone building in the world. Additionally, the royal tombs and underground galleries dating back almost 5,000 years are equally impressive. Saqqara is also notable for recent discoveries of buried temples, tombs, and sealed wooden coffins unearthed in new excavations. Located nearby, the so-called Bent and Red Pyramids of Dahshur are two failed attempts prior to the perfect geometric shape and proportions achieved years later at Giza.

The Pyramids of Giza, the only wonder of the ancient world still standing, are located on a plateau on the edge of Cairo. No matter how many pictures you may have seen, the monuments still impress and fascinate. Enormous “houses of eternity” for ancient pharaohs, the pyramids’ impregnable tombs are filled with treasures preparing rulers for their journey to the afterlife. The Great Pyramid of Cheops is the tallest, measuring nearly 450 feet. Nearby is the Sphynx, a mysterious representation of a human face and a lion’s body. Giza is one of the best expressions of the talent and wisdom of Ancient Egypt, considered one of the world’s greatest civilizations. This rich culture invented hieroglyphic writing, the solar calendar, medical surgery, irrigation, make up, toothpaste—and yes, pyramids—to name just a few firsts. Beyond historic monuments in and around Cairo, shop the bustling Khan el-Khalili bazaars in search of handicrafts, jewelry, and spices. Sail the Nile in a felucca of your own. Walk through Zamalek and Gezira islands. Dine at one of Cairo’s many restaurants with river views. Stop for a traditional “qahwah” (coffee in Arabic), or savor mint tea and pastries in a traditional café. What’s next? The new Grand Egyptian Museum is scheduled to open later this year. Visitors will find a state-of-the-art space displaying 100,000+ ancient treasures, including the anticipated debut of the entire collection discovered in Tutankhamun’s tomb for the very first time. The Cairo Eye is scheduled to open in 2022, offering indelible city views from 400 feet high.
LIFE IN LUXOR
Besides Cairo, the other must-see destination in Egypt is Luxor. With the largest concentration of ancient ruins in the Nile Valley, the city is considered the world’s largest open-air museum. Luxor is also known as the start and end of Nile River cruises. For more than 500 years, Luxor was the capital of ancient Egypt’s New Kingdom—its spiritual and intellectual center. Start in the East Bank with a visit to Karnak, a vast, 100-acre temple complex where successive pharaohs enhanced the existing structures for centuries. Highlights include the Great Hypostyle Hall, displaying 100+ massive columns carved with hieroglyphics; an entrance path flanked by sphynxes; and the Temple of Ramses III. Gain a new perspective of Karnak during the evening “Sight and Sound” show, which celebrates the monuments at night. Smaller in scale but well worth visiting is Luxor Temple, located near the city center. The West Bank of the Nile is justly famous for its many archaeological sites, but especially for the Valley of the Kings and Valley of the Queens, where ancient Egyptian pharaohs were buried in elaborately decorated tombs. Every tomb is different and typically shows the path of the pharaohs to the underworld. Rulers were buried with furniture, food, jewels, and even pets. Although there are more than 60 tombs, only a few are lit and open to the public. In the Valley of the Kings, the tomb of Seti I features a magnificent astronomical ceiling

and breathtaking interiors, while the tomb of Ramses III is lauded for its rich and brilliant decorations—expect well-preserved murals painted more than 3,000 years ago. Don’t leave the Valley of The Kings without visiting the tomb of Tutankhamun, who died at age 19 and was buried in great haste. This small tomb is fascinating because its contents were found intact in 1922 by Egyptologist Howard Carter. While exploring the Valley of the Queens, don’t miss the remarkable tomb of Nefertari; its vibrant colors and detailed paintings are amazing. While discovering the West Bank, visit the Temple of Hatshepsut—a grand and majestic complex set dramatically against a mountain. Lastly, the Colossi of Memnon—two giant statues sitting peacefully in an open field in the countryside—have been impressing visitors since Roman times.
ALL ABOUT ASWAN
From Luxor, continue south to Aswan, Egypt’s southern gem. A pleasant and unhurried city located along the edge of the namesake dam, Aswan was an important trading post in antiquity. To this day, Aswan’s bazaar is the best in Egypt (outside of Cairo). As the Nile narrows, the green riverbanks disappear, replaced with Aswan’s dramatic granite rocks and hills. In ancient times, this is where Egypt ended and Nubia began. Visit the lush gardens of Kitchener’s Island, enjoy views of the river from Aga Khan’s
Mausoleum, or sail the Nile in a traditional felucca at sunset. The star attraction in Aswan? The Temple of Isis on Philae Island, a unique blend of Egyptian and Greco-Roman architecture built over a span of 700 years. In the Roman era, this was the most important pilgrimage center in northern Africa and the last functioning temple of ancient religion. And take note: Don’t leave Aswan without seeing Abu Simbel and the colossal statues of Ramses II, one of the most striking sites in Egypt. Abu Simbel is roughly 175 miles south of Aswan, and can be easily visited in a day with round-trip flights and plenty of time to explore the temples. What makes Abu Simbel even more impressive is that during a massive operation undertaken by UNESCO in 1965, the entire temple complex and giant statues were cut into blocks and raised 200 feet. Abu Simbel was thus saved from the rising waters of Lake Nasser when the Aswan dam was built. Unbelievably, this is just a small taste of all Egypt has to offer. The country truly is one of the world’s greatest destinations, and today there are more enticements than ever before. And among all its archaeological wonders, one thing to consider that’s also set in stone? Once you’ve experienced Egypt, you’ll most definitely want to return.

“BLESS YOU, GRANDMOTHER STONES,” whispers the local abuela. As red-hot lava stones invoking the earth’s four elements are added to the center of my private temazcal cermony, I take a deep breath, wipe the sweat from my face with a fan of local aloe leaves and organic honey, and hesitantly watch the abuela’s assistant close the door. With the exception of a tiny hole in the roof of the small temazcal, or steam house, it’s pitch black and nearly 105 degrees. I’ve intentionally placed myself in this slightly uncomfortable setting, and the desired healing effects are quickly taking hold. As the abuela, or spiritual grandmother, eventually celebrates the final and fourth “door”—a passageway to the four directions of north, south, east, and west, I feel elated. Mexico’s Chablé Yucatán has quickly become my new happy place—a source of energy, reflection, and renewal during a challenging year for us all. Seasonally inspired menus feature such standouts as the Xilotes salad (greens and herbs are sourced from the property’s ka’anche), arroz con venado, or underground cooked venison risotto, and escolar with chile crust, roasted pineapple, and pumpkin purée. A mezcal tutorial with bartender Rudy reveals my favorite tasting tip: “Kiss the glass, lips closed, so as not to overwhelm the palate.” That evening, after a decadent dinner at Ixi’im, I walk the property under a massive super moon. Australia is home to some of the world’s most incredible walks. A dozen of the best have been curated under Great Walks of Australia, and five of those traverse the World Heritage-listed wilderness areas of Tasmania. One of the most popular, the Overland Track, spans 40.4 miles from Cradle Mountain to Lake St Clair. Fit travelers can tackle the traverse in six days, or you can break it up into shorter, leisurely walks that allow you to really appreciate the scenery, including wallabies, eucalyptus forests, and three of Tasmania’s largest waterfalls.
WILDLIFE LOVERS
Take a four-day road trip along Australia’s Nature Coast, which combines the Sunshine Coast and Fraser Coast on the country’s east side. The spectacular drive navigates 47 state and national parks, reserves and forests. Expect whale watching experiences and more than 125 miles of pristine beaches and waterways. Depart from Brisbane and stop in the Australia Zoo for a photo op with a cuddly koala. If you’re lucky, you’ll also spot the shy creatures in the eucalyptus trees of Noosa National Park the following day. Bird lovers should hit the Noosa Bird Trail to look for great egret, mangrove gerygone, and brown honeyeater. On World Heritage-listed Fraser Island, you can pet a dingo and feed kangaroos. Finish the trip at Tin Can Bay, one of the few places in Australia where wild dolphins can be hand fed in their natural environment.

Queensland is a fishing paradise. Base yourself on Hamilton Island—a jumping off point for exploring the Great Barrier Reef—and join Renegade/Quest Angling Expeditions for a full-day fishing trip. You’ll cast in the outer Whitsunday Islands and inner and outer reefs, and if successful, can hook black marlin, sailfish, tuna, coral trout, and Spanish mackerel. Afterward, the chef at Hamilton Island resort will cook your catch for dinner. End the trip in Hervey Bay, home to some of the best fishing on Queensland’s east coast. Australia’s Northern Territory is rich with aboriginal culture— one of the oldest continuous living cultures on Earth. In the state capital of Darwin, numerous galleries are dedicated to Indigenous art. A 2.5-hour ferry ride from Darwin delivers visitors to the Tiwi Islands, locally known as the island of smiles. The Tiwi people are renowned for their unique style of art, including bold textiles and intricate carvings. A Tiwi local can guide you around the Patakijiyali Museum, where you’ll enjoy a tea ceremony with the Tiwi women. Drive three hours south to Katherine, where you can learn about the aboriginal concept of dreamtime and meet aboriginal artist Manuel Pamkal at the Top Didj Aboriginal Culture Experience.

South Australia’s vineyards put Australia on the wine map, particularly the Barossa Valley. The wine capital of Australia lies one hour from the state’s capital, Adelaide, and is home to more than 80 cellar doors including Penfolds, Henschke, and Wolf Blass. Shiraz is the star grape, but the region also produces excellent Cabernet Sauvignon and Chardonnay. Compare regions by taking a 45-minute drive from Adelaide to the vineyards of the McLaren Vale wine region, where you can practice blending varietals in The Stables Wine Immersion Centre at d’Arenberg winery.
GOLF FANATICS
Some of Australia’s top fairways are all easy day trips from Sydney, allowing golfers to combine time on the links with sightseeing in the city. Located just minutes from the city center, The Lakes Golf Club is considered one of the country’s most prestigious private courses and also showcases some of the best harbor views. Twenty minutes away, set on the rugged cliffs of La Perouse, the NSW Golf Club is one of the area’s more challenging courses; a backdrop of beautiful Botany Bay distracts even the most focused golfer, making play both challenging and rewarding.

A Matter of TASTE Silversea’s S.A.L.T. culinary program is showing passengers the world through a delicious new lens. BY JACKIE CARADONIO
LAST JUNE, THE SILVER MOON MADE ITS LONG ANTICIPATED DEBUT INTO CRUISING SOCIETY WHEN IT SLIPPED INTO ATHENS’ PORT OF PIRAEUS. It was the first day of the
rest of the ship’s life—and the same could have been said for the 500-plus passengers who would join the all-suite vessel’s inaugural itinerary, a 10-day roundtrip journey through the Greek Isles. What was on the horizon for this first-of-its-kind sailing was more than simply a return to cruising after a long hiatus, forced by the global pandemic; it was even more than the unveiling of a brand-new ship from Silversea, stunning as it was, with balconies from every suite and custom handmade Lalique crystal shimmering throughout. What was most remarkable about the Silver Moon, as it pulled away from the port and sailed through Saronic Gulf into the Aegean Sea, was that it marked the debut of Silversea’s S.A.L.T. initiative, a culinary program that promises to take at-sea culinary immersion to unseen depths. If it all sounds dramatic, well, just go with it. Anyone who cruises will tell you that all the fanfare and excitement comes with good reason: S.A.L.T. (short for “Sea and Land Taste”) is elevating the cruising gastronomy game in a way that has never been attempted. It’s more than just food, although you’ll find plenty of locally sourced ingredients in the seven restaurants onboard. More so, it’s the ability to touch, smell, and taste the culture of each destination on every itinerary, both onboard and off.

“The opportunity we saw [with S.A.L.T.] was to create something new that connected the culinary experience to where we’re going in the world,” says Adam Sachs, S.A.L.T.’s director of programming. Sachs, a former editor in chief of Saveur magazine, used his journalistic background to build programs around the world that tell what he calls “great food stories” about the origin of culinary traditions, how food is grown, plus the chefs and producers who influence local cuisines. “This is the kind of work I’ve always done as a food and travel writer and editor,” he says, “and it’s that curiosity and hunger for experience (and just hunger in general) that I’m excited to bring to this role.” The heart of S.A.L.T. is in the S.A.L.T. Kitchen, the S.A.L.T. Lab, and the S.A.L.T. Bar—all new food-andbeverage concepts that have launched with the Silver Moon and will be replicated on future ships, including the Silver Dawn, which is set to debut in November (see sidebar). In the S.A.L.T. Kitchen, what’s on the menu is a direct reflection of what’s happening just beyond the ship’s hull, with the menu changing at each port of call. Iconic dishes inspired by local traditions and ingredients will reflect each location—whether it’s tapas in Barcelona, sambal matah in Bali, or cured pork apáki in Crete. Says Sachs: “The questions we’re always asking are: What are the unique flavors of this region and port? What would we most like to eat here? What can we put on the plate that really conjures a place and speaks to what makes it delicious and distinct?” The S.A.L.T. Bar complements those dishes with its own rotating list of cocktails incorporating fresh ingredients and regional spirits. On the inaugural sailing last June, for instance, the bar menu included the Symposia Spritz (a refreshing aperitif using Assyrtiko white wine from Santorini and the Greek spirit tsipouro) and From the Flames (a smoky tipple combining ouzo from Lesbos with mezcal and pineapple, and topped with a feta brine). The S.A.L.T. Lab, meanwhile, is a test kitchen where passengers can explore the stories and recipes of each locale more in-depth, through cooking demos, ingredient tastings, and intimate talks led by guest experts and food historians. It’s all about getting to know destinations, and culture, in a deeper, more meaningful way— through food. Still, S.A.L.T.’s biggest moments happen beyond the table—and beyond the Silver Moon—on curated excursions that expose passengers to the people, places, and, most of all, tastes, they wouldn’t find on any other trip (let alone another cruise). On sailings from Dubai to Mumbai, passengers are welcomed into the Abu Dhabi home of Um Yousef, who shares the

local hospitality and Emirati cuisine rarely experienced by tourists. During the 14-day Mumbai to Singapore itinerary, stops in the Sri Lankan capital of Colombo offer the chance to cook with celebrity chef Dharshan Munidasa, who shares the recipes for garlic chili prawn and pepper crab at his acclaimed restaurant Ministry of Crab. And a stop in Sicily on the 11-day Venice-to-Rome journey explores the ancient Carricante vines and the wine they produce on Mt. Etna. On the Silver Moon’s inaugural Greek Isles journey in June, Sachs was on board to watch his vision come to life, joining passengers on S.A.L.T. expeditions like a private lunch at acclaimed chef Ari Vezené’s new restaurant in Santorini, and participating in S.A.L.T. Lab demos making kakavia, an ancient fish soup, and kleftiko, a traditional recipe for slow-cooked lamb. There was cheese-making in Mykonos, wine tasting in Cypress, and in Crete, a visit to a biodynamic farm in the mountains, where guests picked ancient varieties of olives and gathered around a wood-fired hearth to make local classics like lambo antikristo and stuffed zucchini blossoms. The food, of course, was delicious, but, says Sachs, it was more than that. “It’s one thing to read a restaurant menu and hear that the ingredients come from a nearby farm,” he muses. “But it’s another experience altogether to go spend the day on that farm, to get to know the farmers and what makes the food and people here unique—and then sit down for an unforgettable meal you helped prepare.”
A NEW DAWN
When the Silver Dawn debuts this December, it will be the second Silversea ship to offer the S.A.L.T. program—and the first to introduce passengers to OTIVM. Inspired by the Roman philosophy of caring for the body and mind, the new wellness concept will bring the essence of Italian luxury to the high seas, with a new collection of elevated therapies, as well as a network of thermal areas reminiscent of the indulgent Roma baths. OTIVM will extend beyond the spa walls as well, with OTIVM Soft Touch mattresses and redesigned pillow menus in the suites and indulgent self-care upgrades on the pool deck.
