The Tahitian greeting for “hello” was my daily wake-up call when shooting our cover story on Tahiti, Mo’orea, and Bora Bora. While staying at the Conrad Bora Bora Nui, I’d rise with the sun and stroll the property, with ‘la ora na and māuruuru (thank you) my singsong salutes from happy Polynesians. The warmth of the locals and their language will forever stay with me. It’s during these indelible moments—often simple, authentic gestures—when travel transcends and connects. Within this rebranded issue of Ultimate Experiences, our goal is to celebrate the transformative nature of luxury vacations. Travel can be the ultimate teacher and is a catalyst to impactful

Elevated Design With the opening of Bad Harriet bar and new private suites at the Hotel Jerome, your next Aspen vacation is poised for fall play.

As local legend goes, writer Hunter S. Thompson used to belly up to the Hotel Jerome’s J-Bar around 11 a.m., order breakfast, lunch, and dinner all at once, and then write, open his mail, and hold court with various movers and shakers. Established in 1889, the Hotel Jerome has long been the town’s heartbeat—a Victorian hub of gossip, glamour, and haute hospitality for cowboys, politicians, CEOs, ski bunnies, and pro athletes. So when it was first announced that Aspen’s iconic landmark was undergoing a much needed facelift, the news was met with strong local opinion on just how to bridge past and present. Spearheaded in 2012, phase one of the project included redesigned rooms, a makeover of the lobby, restaurant, J-Bar, and the stylish Living Room, finished with vintage artwork. Fortunately for design buffs, phase two is equally impressive. Completed this June by Aspen-based architecture firm Rowland and Broughton, landscape architects Design Workshop, and interior designer TAL Studio, the Auberge Resorts Collection hotel celebrates several new spaces that honor historic legacies through architectural preservation.

NEW & NOTEWORTHY A speakeasy-esque underground bar and lounge, Bad Harriet is named after the wife of the hotel’s original developer and proprietor, Jerome B. Wheeler. BY SEA The brand’s 535-room Crystal Serenity® just emerged from its longest-ever makeover, which reimagined every single aspect of the onboard experience. The extensive renovation included upgraded rooms and dining venues, a natureinspired living wall, and chic, redesigned common areas, like reconfiguring the Lido Deck as well as more state-of-the-art technologies including unlimited, complimentary WiFi throughout the ship. The biggest change, however, was the transformation of Deck 10, where 36 new penthouses plus two penthouse suites have replaced verandah staterooms. The Schloss Gobelsburg winery, located north of Vienna at the heart of the Riesling-powered Kamptal region is a standout, he says. Lawson loves sharing his passion for wine with guests on-board. Take a Break Is vacation the new key to success? The Energy Project’s Andrew Deutscher explains how leisure travel and recharging may be the ultimate game changer. BY MARK ELLWOOD

Ten years ago, Andrew Deutscher was a high-paid, fastpaced TV executive. Jetting around the country handling broadcast syndication, he was barely at home for more than six weeks a year. Life was overscheduled and overwhelming.

“I probably used half my vacation time,” he recalls. He believed he was shouldering the workload just fine, aside from crippling stomach cramps. Everything, however, came into clear focus when he went through an energy management program. A new corporate initiative aimed at restoring work-life balance was personally bankrolled by Sony’s co-chair. It helped Deutscher realize he was at severe risk of burnout—those cramps, a warning sign. He resolved to make a change before it foisted upon him. Six months later, Deutscher was laid off. Instead of chasing another entertainment job, he joined the company that had run that life-changing session: The Energy Project. Today, he’s the firm’s managing director.

CORPORATE COACHING The Energy Project was founded in 2003 by journalist Tony Schwartz. The famous business book author and former New York Times columnist wanted to address the escalating pressures in the workplace from a human standpoint. Think of the Energy Project as a life coach aimed at corporations rather than individuals. Bluechip clients have included Apple, Intel, Google, and Albemarle chemical company. For too long, Schwartz noticed, companies had simply assumed the best way to wring optimal performance from every employee was longer hours. Time, in other words, was the only resource to mine. What about energy, or the capacity of someone to do their work, he reasoned? Energy is a vital resource that companies often overlook, or squander, in their employees. “If you’re more skillfully managing your energy, you can get more done, in less time, at a higher level of quality in a way that is much more sustainable,” Deutscher explains. The company’s mission isn’t just centered on efficiency, though. Its goals include improving overall health and relationships, both at home and at work. “Nice people can be mean when they’re in a depleted state,” Deutscher says. “They’re not trying to be jerks, but they’re under a deadline. When people are feeling triggered, the other person is often triggered, too. It’s a vicious cycle.”

VACATION: A CRITICAL COMPONENT One area under constant discussion is vacation. Since 1978, Americans’ vacation use has declined precipitously: on average, they take nearly one week less now than 30 years ago. Yet one study showed that workers who took 11 or more vacation days per year were far likelier to receive raises or bonuses than those chained to their desks. One tactic Deutscher suggests is activating an out-of-office email two or more weeks prior to vacationing. Give colleagues due warning you’ll be unplugged. Bookend the trip by keeping the first day back in the office meetingfree. “It’s re-entry,” he says. “If you were coming back into the atmosphere from outer space, you’d need a transition. It’s the same thing—a chance to a breathe.” Some companies like Virgin have experimented by offering unlimited vacation days, though it’s not a strategy Deutscher endorses. All too often, that undefined allocation means employees either take fewer days off, or end up working remotely when they’re supposedly on a break. Prioritizing vacation is a long-term safeguard against energy burnout. Schwartz takes a month-long vacation every year, and stresses that the value of personal vacation and leisure travel is

priceless. Vacation should be considered a personal reset, and when travelers take extended time off and return to the desk, they’re more productive, happier, and less likely to burnout. Deutscher also recommends adjusting daily routines to combat stress in the short-term. He advises structuring the workday to alternate between intensely focused, 90-minute sessions and brainclearing breaks, whether standing up to stretch or a five-minute walk in the sun or even a nap. The Energy Project’s focus on quality of life and job satisfaction is timely, given research around motivating millennial employees. But Deutscher says he’s found little difference between that generation and every other employee. “Flexibility, autonomy, a feeling of being valued? That’s not a millennial thing,” he says. “This idea is basically just allowing people to get work done in the ways they determine is best for them.” He pauses. ”It’s just treating them like adults.”

Given her father is iconic interior designer David Hicks and her mother served as a bridesmaid at Queen Elizabeth’s wedding, it’s intriguing when India Hicks describes her

everyday life on Harbour Island as “unexpected and utter chaos, with five children who are fairly savage, barefoot and wild, plus two rescue dogs, a smuggled tortoise, two stray cats, and an assortment of guests who come from all walks of life.” Yet the lifestyle icon, author, and designer wears her irreverent wit as naturally as her haute bohemian style. After studying photography, modeling for Ralph Lauren, and penning four books, India now runs her namesake lifestyle brand, a curated array of bags, beauty, and accessories from offices in NYC, L.A. and on the three-and-a-half mile long Bahamian island known for pink-sand beaches and charming, cottage-lined streets. A RUNNING START My favorite is the three-mile pink sand beach that temptingly lies at the bottom of my garden. Bond, my enthusiastic dog, and I will run quite often at the same time as the sun rises. BREAKFAST MEETING I tend to drink the Flu No Mo juice at Cocoa Coffee House (1 Bay Street), whilst shooing away the bloody chickens who try to share my avocado toast and face-timing some of my kids beginning their days overseas. SHOP AROUND When you arrive on Harbour Island, your eyes will alight upon a red awning with a gigantic white skull, welcoming you to The Sugar Mill (Bay Street), my personal favorite, because I am responsible for the collections inside. We try to have something for everyone. The kids can spend their pocket money on a pencil with a shark on the end, whilst their mothers are hopefully exploring the treasure trove of exotic finds that we stock from around the world. I’d also suggest that you nip in to Dake’s Shoppe (Crown Street) and the Blue Rooster (King Street at Dunmore) who also carry imaginative goodies. HOT LUNCH The Queen Conch (Bay Street), but always remember to ask for tourist strength when ordering the conch salad—it might blow your suntan off otherwise. AFTERNOON ADVENTURE Charter a seaplane and head to The Exumas to swim in Thunderbolt Cave. DRINKS & DANCING I’d start with an Afrohead at the bar at

ROMANTIC DINNER If we do go out, it’s never terribly romantic because David and I normally have several children in tow, but we do like Da Vine Wine Merchants (Bay Street) for their exquisite sushi. Sometimes, we treat ourselves to the private room upstairs, where we can play card games and squabble amongst each other.

WATCH THE SUNSET At Beyond The Reef (Bay Street) with a bottle of Kalik, a local beer. Later at night, this bar is rechristened ‘Beyond Belief,’ when the real action begins to take place. LAST CALL Dancing under the stars at Vic Hum Club (Barrack Street). It has an open dance floor that turns into a basketball court once the music stops at 3 a.m ... definitely an experience.

YNESIA? OUI! Spend a week island hopping around The Islands of Tahiti, and be forewarned: You may want to buy a sailboat and stay a while. BY ERIN LENTZ . PHOTOGRAPHY BY BO BRIDGES


Pierre exclaims and points toward Mount Tohivea. We’re on the island of Mo’orea. It’s 10 a.m. and the peak, bathed in mid-morning sunshine, is otherworldly—an emerald green protector of Cook’s Bay. A revered Polynesian term for energy and power, “mana,” is omnipresent here. During this magical week, I’ll island hop to Tahiti, Mo’orea, and Bora Bora, and discover each place’s energy is unique yet synergistic, much like every wave that tickles the Society Islands’ shores. A full Tahitian moon has applauded our trip—its serene glow has welcomed us after landing via an Air Tahiti Nui redeye, and earlier this morning, at dawn, its slivers of light danced upon the ocean. As Pierre (more on him later), further explains the history of Mo’orea and Tahiti, it’s obvious that Polynesian culture is vibrant and honored daily here. Our mission during this sun-kissed sojourn? To explore the overwater and undersea hidden gems of The Islands of Tahiti. Over the next few days I’ll learn how this Pacific playground will seduce most any adventurist. Polynesians, by nature, possess a silent strength. I’ll also discover that the land and sea— the mana—is the pulse of Polynesian living.

TAKE ME TO TAHITI

“Teahupo’o made me,” says Raimana Van Bastolaer. The legendary surfer greets us on the porch of his oceanfront home. It overlooks Tahiti’s Bay of Phaeton, located just a 30-minute boat ride from the famous wave that defines Tahiti’s surf culture. We’re en route to witness Teahupo’o in real time. Located at “the end of the road” on the southwestern side of the island,

Teahupo’o is remote and wild. When “firing,” it’s one of the heaviest and most dangerous waves in the world. Today, however, the swell is small. This means we can swim near its famously shallow reef, one that’s given Kelly Slater reason to pause. As we tour Van Bastolaer’s home— portraits of him and Slater proudly displayed on one wall, a row of 20 custom surfboards along another—he further explains Tahiti’s charm. “The wave and the people of Tahiti is what make me who I am,” he says. “I’m connected with people I would never usually meet. I’m so thankful to Chopes (Teahupo’o’s affectionate nickname).” Here, the world comes to him. Van Bastolaer takes Fortune 500 CEOs, adrenaline-seeking Facebook execs, and aspiring pros on guided surf safaris. This fall, he’ll lead a surf retreat on Taha’a with Laird Hamilton and Gabby Reece. After being invited to surf the beginner waves in front of his house some day, we take our leave and traverse further south: by car, then by boat—the only way to navigate the south side of the island. Tahiti Boat Excursion & Surf Captain Matahi Wasna, who’s steered boats for the Billabong Pro surf team and can snake his way through most any small channel or shallow reef, greets us. First up? A visit to an offshore spade fish farm. Local fishermen stand on the netting and separate the strong from the weak—pulling in the big ones and throwing back the little guys. Wasna’s meal tip: Serve these tasty fish sashimi style, with lemon, ginger, and white rice, and voilà—a Tahitian meal. As we motor to Little Pass, the water becomes a mesmerizing shade of aqua blue. Dolphins surface near the bow of our boat and we spy a Dakine surf team. Professional photographers have their lens trained on a local 12-year-old surf prodigy—a girl—whose style rivals that of her older male peers. After watching the wave riders and exchanging shaka signs with the Dakine surfers, we gun it to Teahupo’o. En route, Tahiti’s jagged peaks command attention. Often overlooked as simply a stepping stone to the rest of the Society Islands, Tahiti’s beauty is underrated. The largest island in French Polynesia and crowned by lush peaks, Tahiti’s south side is stunning. Teahupo’o breaks near a little fishing village of the same name. shore, I covet how simple life is here. Smiles are genuine. Time moves slowly. The ocean and the morning catch dictate the day’s rhythm. As they say here, la vie heureuse, “the happy life.” Finally, Teahupo’o appears. On this day it may be small, but its power is evident, felt in Wasna’s focus as he captains the boat. We watch a set move in while photographer Bo Bridges swims straight into the belly of the wave. This is a wave of consequence. On most days the reef is visible—jutting straight through the surface of the water. If a brave surfer falls (and they are all brave to be here, no matter the size of the swell), the menacing reef is always top of mind. But the beauty of how Teahupo’o breaks—its long, lookat-me lefts—will captivate anyone who respects the ocean. After cheerleading Bo (who can’t help himself and borrows a board for “research rides”) and local surfers, Wasna then takes us to one of Tahiti’s most remote snorkeling sites. A private guide helps us navigate a reef system to a hidden cave and waterfall. Once inside, you feel as if you’re locked inside a keyhole to the Pacific that very few have witnessed. After timing currents to the swim-through cave, we’ve worked up an appetite. Back onboard the boat, we lunch on tuna ceviche and sashimi, served with French rosé. It’s only day one, and already this experience is banked in my memory. Swimming near Teahupo’o and feeling the power of the Pacific has become a new mental happy place.

MO’OREA: PINEAPPLE, PLEASE

The following morning we take a short ferry ride to the island of Mo’orea. As I sip local coffee on the top deck, two elementary school students practice their English with me. One points to Mo’orea and says, “pretty.” Indeed. And an understatement. As the sister island to Tahiti, Mo’orea is known for its high, green spires, a bright blue lagoon, and vast pineapple fields. As the ferry approaches the small bay of Vaiare, the summit of Mount Tohivea is revealed and my iPhone repeatedly tries to capture its astonishing peak. After checking into the Hilton Mo’orea Lagoon Resort & Spa, we meet locals Teva and Joanna from Temoana Tours for a private boat outing. We first visit Mo’orea’s stingray and shark alley. As one of the first to arrive (go early to avoid tours), we snorkel with small black tip reef sharks. Curious stingrays swim right up to us. Afterward, we visit a tiny “motu”—or private island. up a lunch table right in the ocean while a grill chef cooks fresh-from-the-sea fish. We toast the day’s adventure with rum-inspired “Motu-hitos.” As tiny fish tickle our calves, we name this spot the planet’s top table. Afternoon calls for sunbathing and swimming off the deck of my overwater bungalow, a bucketlist check, prior to dining at Le Lézard Jaune Café (Mo’orea is nicknamed “yellow lizard”), which dishes some of the finest poisson cru on the island. The following morning, after paddleboarding around the resort, we meet the aforementioned Pierre Gitton, whose “Enjoy Mo’orea” tour includes a 4X4 safari to Mount Belvedere, ancient temples, waterfalls, and of top note, Mo’orea’s governmentowned pineapple fields. The fruit is divine, thanks to the island’s climate and sunshine, and Mo’orea produces 80 percent of the pineapple juice in French Polynesia. After walking the fields, Pierre splits open a pineapple—the piece de resistance to a day of inspired discovery.

THE BEST OF BORA BORA

Our dramatic approach to Bora Bora is almost as captivating as the famous Mount Otemanu. After a quick inter-island Air Tahiti flight, the remote island is only accessible via boat. Decompression begins prior to setting foot on this island’s iconic overwater bungalows; the seascape is a calming kaleidoscope of blues and greens. We take a sunset cruise en route to the Conrad Bora Bora Nui. A brand new yacht, which features a sound system to rival a movie theater and a crew that caters to every whim, strategically stops near the outer reef. We watch a massive swell as a falling, candy-orange sun is crisscrossed by seagulls. As we near the Conrad at dusk, we spy a sunken sailboat—a dramatic ghost swallowed by the ocean. Its mast sits eerily between water and air. Ghosts and gods are part of Polynesian culture. While staying at the Conrad, I’ll learn that according to local mythology, Pele—the fierce goddess of fire and volcanoes—was born on Bora Bora and Hiro is a worshipped divinity. According to Legends of Bora Bora Motu To’opua by Patrick Chastel, Hiro protected the great bay of ‘Amanahune by making it unapproachable by sea, yet due to heartache and fury over the goddess Hina, he “decapitated” Bora Bora’s main peak with a single sweep of his spear—giving Mount Otemanu its mesmerizing flat shape. The first European to lay eyes on this stretch of paradise was Dutchman Jakob Roggeveen in 1722. Captain Cook set foot on the island in 1769 and named it Bora Bora, which became a French territory in 1898. We arrive to the Conrad at dusk, and after a decadent tasting menu of French inspired fare at

Iriaitai restaurant, helmed by Executive Chef Kevin Mougin, I tuck in early, as the next day calls for deep-sea fishing and spa-ing. The following morning I bike through the resort at dawn. Following the scent of hibiscus, I ascend to the top of the property and discover an overlook that frames the bay and mountain. The view? Ethereal, formidable, and unforgettable. Hiro was onto something with his warrior wand. As I continue along the Conrad grounds I pass the chic lobby, the Banyan Tree restaurant, Tamure Beach Grill (with spectacular lunch tables tucked into the infinity pool), overwater bungalows with private plunge pools, the Tamari’i Kids Club, and finally, a pair of multi-level penthouses at the property’s edge. A former Hilton, the Conrad emerged from a multimillion-dollar renovation in April 2017. Today, the re-imagined Conrad is named after the late Conrad Hilton and celebrates a stylish sense of place. The resort bridges past and present by fusing Polynesian culture (don’t miss the art wall in the lobby that exhibits Bora’s history during WWII) with modern amenities. Hugging a private cove of turquoise water and surrounded by dramatic white sand and black lava rocks, the property features 114 private villas and suites, with 86 located on the water. Make time for a deep-tissue massage with local Tamanu oil at the hilltop Hina Spa, and whether romancing or traveling with a group of friends, book a private picnic lunch on the Conradowned Motu Tapu island. I was hard pressed to leave the resort’s private cove, but it’s suggested I rent a bike in Vaitape— Bora’s town center—and explore the main island. I pedal past ancient marae temples, shop local momand-pop boutiques, and discover plenty of comehither beaches. A stop at the seaside Snack Shack for French rosé and quiche is a must, and anglers, rejoice: Deep-sea sport fishing on Bora is rewarded with blue marlin, mahi-mahi, yellowfin tuna and barracuda. On what’s supposed to be my final night, I dine on our group’s hard-earned catch at Conrad’s Upa Upa Lounge bar. The chef indulges us with sea-tofork sashimi and locally inspired sushi rolls. As a band of talented Polynesians softly sings near our oceanside table, conversation turns from fishing to the potential of staying on the island one more day. I feel the ocean breeze against my skin, smell the salty air, feel the “mana” of the local music, and it’s quickly decided. Why leave so soon?

A Taste of Tahiti Pape’ete Food Trucks

The 20-mile tourist corridor known as Los Cabos is bookended by lively Cabo San Lucas to the west and the quieter town of San José del Cabo to the east. The area is famously known for its string of luxury resorts, stunning beaches, and world-class golf courses. Yet get off the beaten path and you’ll quickly discover another side of os Cabos one de ned by vast rugged landscapes, tight-knit communities, handcrafted mezcal, and plenty of remote ocean play.

CABO PULMO NATIONAL MARINE PARK Divers and snorkelers detour 60 miles north of Los Cabos to visit what Jacques Cousteau famously called “the aquarium of the world.” Unlike the rough, rocky waters found on the Pacific side of the Baja Peninsula, the East

Cape is home to the calm waters of the Sea of Cortez, making it a diving paradise. In 1995, the Mexican government designated a 17,500-acre area offshore from Cabo Pulmo a national marine park. One of only three living coral reefs in North America, this jewel of the East Cape is home to 800 species of marine life, including sea turtles, manta rays, sharks, and whales. Dive enthusiasts come to swim with the massive schools of Jack fish, which look like an underwater tornado when clustered together. The proximity of dive sites to shore ma e it easily accessible, and the locally owned town center means you’ll get an authentic, grass-roots experience. Pangas, traditional boats once used to fish these waters now take travelers snorkeling, diving and out to see the resident sea lion colony.

MOUNTAINS

SIERRA DE LA LAGUNA MOUNTAINS Cabo may be best known for its beaches, but adventure inland and you’ll find a desert oasis of tranquil solitude tucked away at the base of the Sierra de la Laguna mountains. Rancho Ecologico Sol de Mayo lies about an hour’s drive north of San José del Cabo, just past the village of Santiago off of Highway 1. Follow the signs for “cascadas”—waterfalls—until the road turns to dirt and dead-ends at the Ranchero. From the parking lot, follow the trail a half-mile until you enter the miragelike oasis, dotted with oversized palm trees and cacti. Leave early to avoid the midday heat and to have the towering waterfalls and watering holes all to yourself. You’ll feel like you’ve entered a natural waterslide park as you glide from one natural pool to the next. Before driving back to town, stop at the rustic Rancho el Refugio ecological reserve where local legend, Doña Luz, will demonstrate her traditional tortilla-making skills before serving a lunch of quesadillas.

LOS BARRILES Head north instead of south on Highway 1 from Los Cabos International Airport and you’ll discover Baja’s wilder side. The low-key town of Los Barriles, located 40 miles north of San José del Cabo off of Highway 1, is a great base for visitors who want to do more than catch some rays on the beach though the wide, at beaches are great for that, too . n the winter, os Barriles turns into a windsur ng and iteboarding mecca. On land, the area is a blast to explore by ATV, or opt for self-drive and guided tours to waterfalls, fruit orchards, empty beaches, and neighboring desert towns, like San Bartolo, where you’ll want to stop at local markets to sample its renowned preserved fruits and homemade sweets.

FOOD

HUERTA LOS TAMARINDOS For years, the sea stole the spotlight on most Baja restaurant menus. But in recent years, the Baja Peninsula’s fertile farmland has given rise to a handful of excellent farm-to-table restaurants. Huerta Los Tamarindos, a 17-acre organic farm and restaurant run by Chef Enrique Silva, is considered one of the farm-to-fork pioneers. Reached by a pockmarked dirt road just outside of San José del Cabo, the farm offers tours and cooking classes. Arrive early to learn about the dozens of


WELLNESS heirloom varieties of chiles, tomatoes, and other vegetables ahead of lunch or dinner served in a 19th-century stone house. The menu changes with the seasons, but favorites include the wood baked free-range organic chicken raised on the farm with s uash puree and mes uite grilled octopus served atop just-picked micro greens. Local chefs come to the restaurant for Silva’s birria de chivo, a typical dish of goat braised in a mix of chiles and tomatoes. Don’t forget to try Silva’s homemade, super smoky mezcal.

CULTURE

MIRAFLORES AND EL TRIUNFO Follow Highway 1 north into the mountains, away from the glitzy, resortlined coast, to discover dusty villages that ooze authentic charm. The sleepy pueblo of Miraflores lies 30 miles north of Los Cabos International Airport and is still home to ranchers, cowboys, and artisans, particularly its leather and wood workers. Many visitors come just to shop the leather workshop located on the way into town. You can watch as craftsmen stitch belts, wallets, purses, and intricate saddles. Drive another 90 minutes north and you’ll reach the colonial-era mining town of El Triunfo. When the mines closed in the 1920s, most people left town. But in recent years, El Triunfo has been experiencing a mini renaissance. Any visit should include a walk through the old mining grounds to see the brick ruins and old smokestacks— including one rumored to have been designed by famous French engineer Gustav Eiffel—as well as a stop at the new mining museum. A handful of new dining spots have made this a great day-trip. Even Cabo foodies are making pilgrimages for the wood-fired pizzas at El Triunfo Café and Sunday paella feasts at Bar El Minero.

FARM SPA AT FLORA FARMS Flora Farms became an instant destination dining spot when it opened its doors in 2010. A quick 10 minutes from downtown San José del Cabo, it’s the go-to Sunday brunch locale for locals and a coveted dinner reservation for out of towners. But what most people don’t know is that this organic farm offers more than just fresh food. The owners have quietly expanded over the years to include cottages, shops, and last year Flora Farms debuted the Farm Spa. The spa menu features plant-based therapies, such as a grounding garden massage using spruce and orange oils. Spa goers can also sign up for Pilates, yoga, and meditation classes as well as workshops on everything from nutrition to aromatherapy. Remember the “Afghan Girl,” with those haunting green eyes? If you’ve seen the 1985 National Geographic cover image of Afghanistan refugee Sharbat Gula, she’s pretty much impossible to forget. Steve McCurry is the talent behind that unforgettable moment—widely considered the most famous photograph in the world. His most recent muse? Travel. If travelers initially think of a journey to Australia as a once-in-a-lifetime, wish list check, the country’s otherworldly terrain and authentic communities quickly entice return visits. Today, reasons to create an escape plan to Australia are many, including breathtaking landscapes, only-in-Oz wildlife, a sophisticated food and wine scene, stylish places to stay, and endless options for adventure seekers. SYDNEY>BLUE MOUNTAINS

I started my Australian sojourn in Sydney. As the country’s largest city, its natural harbor rivals Rio or Cape Town. If you’re not adverse to heights, start your Sydney stay by climbing the Harbour Bridge—an exhilarating experience rewarded with a bird’s-eye view of the city. The iconic Opera House, opened in 1973, is impossible to miss (opt for a guided tour) and was named a UNESCO World Heritage Site in 2007. Spend a day at one of the city’s famous beaches, including Manly and Bondi on the ocean, or Balmoral within the harbor. And if seeing wildlife tops your wish list, experience “Behind the Scenes” at Taronga Zoo and get cozy with the koalas. One of my all-time favorite things to do in Sydney is taking a sunset ferry across the harbor for postcard-perfect views. Sydney also has a vibrant art scene, showcasing up-and-coming and established Australian artists. If you only have time to visit one museum, the Art Gallery of New South Wales

exhibits an excellent survey of Australian art—spanning from the 18th century to contemporary aboriginal works. And any visit to Sydney must involve restaurant hopping. For great views, try Café Sydney. Gunners Barracks is a lunch favorite, and for an unforgettable experience, arrive by seaplane and dine at Cottage Point restaurant. Book a table at the buzz worthy Fred’s in Paddington for a decadent dinner. WHERE TO STAY>Sydney is known for great hotels, including the Park Hyatt Sydney. As the city’s premier luxury property, it sits on prime real estate at the foot of the Harbour Bridge. I also love The Langham Hotel Sydney’s bright rooms and indoor swimming pool, as well as the Shangri-La Hotel, Sydney, which features exceptional views of the harbor from nearly every room. Before or after exploring Sydney, visit Emirates One&Only Wolgan Valley, a luxury lodge in the heart of the Blue Mountains and just a 2.5-hour drive west of the city.

SYDNEY>MELBOURNE

From Sydney, I traveled to Melbourne, Australia’s second-largest city and home to the best coffee and finest dining in the country. Explore the city’s extensive street art scene, including outdoor murals and local work. Adventure lovers, take note: Balloon over Melbourne early in the morning (simply unforgettable!), kayak down the Yarra river, or take a tram to St Kilda’s neighborhood. Culture buffs will want to visit the bustling Queen Victoria food markets, the Botanic Gardens, and the Shrine of Remembrance—a moving tribute to fallen Australian soldiers. Spend a day driving west on the Great Ocean Road, which hugs the rugged coastline and reveals the limestone towers of the Twelve Apostles. WHERE TO STAY> The Park Hyatt Melbourne and Grand Hyatt Melbourne, both superbly located in the city center and expertly managed.

MELBOURNE>KANGAROO ISLAND

After soaking up city life, I visited Kangaroo Island. Australia’s answer to the Galápagos, discover a natural wonderland of seals, koalas, birds, dolphins, and thousands of kangaroos. WHERE TO STAY> he nest place to stay on the island is Southern Ocean Lodge, an all-inclusive luxury resort just a one-hour drive from Kingscote airport. Surrounded by nature reserves, it’s built on a cliff overlooking the ocean. Lodge rooms are spacious, modern, and comfortable, and all frame views of the sea. Additionally, dining, service, and excursions at Southern Ocean Lodge are top-notch.

If you’re an early riser, traverse the beach boardwalk toward the sea and glimpse one of Australia’s most stunning sunrises. Hike the coastal clifftop trail from the property and view the Remarkable Rocks. Or, kayak and swim in the morning and then take the KI Food Safari. Visit Seal Bay or arrange bespoke island outings via the concierge. At day’s end, sip a glass of wine on the terrace or unwind with a massage at the lodge’s serene spa. My favorite experience? Enjoying drinks and canapes at sunset, with playful kangaroos all around.

KANGAROO ISLAND>THE OUTBACK

To truly understand Australia, you must visit its Red Centre. As the spiritual heart of the Outback and home to Uluru (Ayers Rock), Kata Tjuta (The Olgas), and ancient Aboriginal cultures, its iconic landscapes define the country’s remarkable terrain. No matter how well traveled, expect to be astonished by the majesty of Uluru. The world’s largest monolith is over two miles long and 1,000 feet tall. I loved the walk around Uluru, hiking through the Valley of the Winds at Kata Tjuta, and watching the monolith change color throughout the day. After dark, visit Bruce Munro’s “Field of Light,” an art installation (on view through 2020) that features 50,000 spindles of colored lights.

My last stop was the Great Barrier Reef. The 1,500-mile-long natural wonderland is one of Australia’s top draws. WHERE TO STAY> Just a one-hour flight from Cairns, Lizard Island is the premier resort on the reef. With 24 unspoiled beaches, excellent snorkeling and diving, and spacious, recently refurbished rooms and suites, the setting is unmatched. Expect all the facilities of a large resort, yet you could be whisked away to the outer reefs in minutes. Underwater play takes top billing; don’t miss snorkeling or diving with one of the resort’s expert guides. Swim with the turtles at low tide, snorkel over giant clams, kayak on glass-bottom boats, hike to the highest mountain on the island, catch the sunset, or simply laze on the beach. Dining at Lizard Island is impressive, but the staff is truly spectacular. A team of 105 professionals ensures every visitor feels as they were the only guest on property. The only complaint? This Australian journey went by way too fast! My one regret is needing more time to explore this country even further. As such, I’ve already mapped out a return visit: I want to hike in Tasmania, swim with whale sharks off the Ningaloo Reef, and explore Kakadu National Park.
