1 Lightl y brown the ba con over medium heat for 3 minutes o n each side. 2 Lightl y grease a medium saucepan or skillet. Add water t o half-fill the pan; bring to boiling. Reduce heat to simmering. 3 Break one egg in to a small dish. Carefull y slide egg into simmering wate r. Repeat wit h remaining eggs, allowing each egg an equal amount of space. Simmer eggs, uncovered, fo r abo ut 5 minutes, or until yolks are just set. 4 Meanwhile, In t he top of a double boiler, add the margarine or but ter, egg yolks, wate r, lemon jui ce, salt and pepper. Place over boiling wate r and co ok, stirring rapidl y, until sauce begins to thicke n (1-2 mins). Qui ckly remove from heat. 5 Top each E nglish muffi n half with 2 slices of ba con and an egg; spoo n t he sau ce over egg. Serve immediately.

1 Fill a large skillet half-full of water. Bring to boili ng; reduce heat to simmering. 2 Break one egg in to a small dish or cup; slide the egg into simmering wate r. Repeat wit h remaining eggs, keeping eggs separate. Simmer eggs. un covered, about 5 minu tes o r jus t u ntil yolks a re set. 3 Meanwhile fo r sa uce, in a small saucepan combi ne mayonnaise, milk, lemon juice, mustard, dill, and paprika. Whisk over medium-low heat u ntil heated through; do not boil. Remove from hea t. 4 Top one half m uffin wi th a slice of tomato. Add 1/4 of the spina ch; top wit h 1 Tbsp. of sau ce. T op with one poached egg and spoo n another 2 Tbsps. of the sauce ove r the egg. Garnis h with f resh dill. Serve immediately.

1 Heat oiled large pa n; cook onion and garli c, stirring un til oni on is translu cent. Add corn, potato, and sto ck. Bring to a boil; simmer, covered, about 10 mins.

1/4 cup b utter 1 large onion, chopped

1 In a large, heavy pot, melt bu tter and cook onion and le eks until softened b ut not b ro wned. Sti r in potato carrots a nd sq uash; cook, stirring f or 2-3 minutes. Pour i n st ock, cover and simmer fo r abo ut 20 minutes o r u ntil vegetables a re tender.

2 leeks (w hite part onl y) chopped 1 large potato, peeled and diced

2 Puree in food p ro cessor (o r carefull y wi th ha nd blende r) un til very smoo th (soup can be p repared ahead at thi s poin t, covered and refrigerated. Re heat befo re co ntinui ng wi th this recipe).

1 cup carrots, t hinly sliced or diced

3 Stir in cream t o desired co nsisten cy. Stir in wine (if usi n g) and heat un til very h ot bu t do not boil. Season with salt an d pepper to ta ste.

2 cups squash, di ced in 1/2 inch (1 cm) cubes

4 Garnish with a sp rinkle of chives or green o nions, or a little grated carrot a nd so ur cream.

3 cups chi cken s tock 1 1/2 cup ligh t cream 1/4 cup d ry whi te wi ne (op tional) salt & pepper

Variation: P umpkin Soup Instead of carrots a nd squa sh, use 3 cups of di ced ra w p u mpkin or 1 cup of cooked and ca nned pumpkin pureé. Omit wi ne. Add pin ch of n utmeg and cayen ne pe pper.

Garnish: chives o r green oni ons, chopped carrot, grated sour cream
