hen you’re at a restaurant that has a sommelier, you should rely on him or her,” Kevin Pelley, a luxury specialist for National Distributing Company, advises. “They generally have an idea of what’s drinking best. People may feel like they don’t want to bother them, but the sommeliers are the experts of the wine list. You shouldn’t hesitate to ask them for help.”

“A sommelier should be able to ask six to eight questions and then be able to choose a bottle of wine for someone,” said Eric Renaud, head sommelier at Bern’s Steak House. “They’ll listen to what you have to say and be able to develop ideas of what wines you would like.”

“I like to encourage people to try something new,” said Gregory Mayer, the wine director at Haven Restaurant. “It’s exciting to introduce people to some of the more esoteric wines. As sommeliers, we have all had our ‘aha’ moment with wine. For me, it was how the flavors of wine and food built

“You can find good quality wines at every price,” said Madonna Metcalf, owner of Wine Madonna. “I encourage people to always do blind tastings so that they don’t have preconceived notions about the wine. When you taste the wine, you should pay attention to triggers, like how does it smell to you, how does it look when you swirl it, what is the color and what do you taste when take you a sip. Once you start paying attention to your triggers, it will help you to identify other wines you’ll like.”

“Don’t get caught up in ratings,” cautions Renaud. “Try different wines. Rate them yourself and write your own review. Then read professional reviews and see how yours compares with theirs. You’ll find that your reviews are similar to one reviewer, and then you’ll know that person has tastes similar to yours and might be someone whose reviews you want to follow.”

Twice as Nice

Tampa, prepare to meet the Bella twins. Nikki and Brie Bella, two of the WWE’s biggest stars, helped bring wrestling to the mainstream on the E! series “Total Divas.” This October, they’re launching their own series, “Total Bellas,” filmed right here in Tampa, home of Nikki and her fiancé, WWE legend John Cena. The sisters sat down with TAMPA Magazine to share their local favorites and one particularly tasty dessert.

Nikki: The best part! [I get] the Granny Apple Pie – every time, people ask me, don’t you want to try something else? No. I’ve never tasted a better apple pie. I get some champagne, too, and I’m just so content in there.

Favorite place for a long walk: Brie: My husband and I loved whenever we could stroll on Bayshore Boulevard. It’s so beautiful.

It’s so fun to look at all those oldfashioned, huge homes.

Something out-of-towners might not know about Tampa: Bern’s Steak House has the biggest wine cellar in the United States.

“Blue Tang” Paracanthurus hepatus is a species of Indo-Pacific surgeonfish. A popular fish in marine aquaria, it is the only member of the genus Paracanthurus.

In 2003, the release of the movie “Finding Nemo” had many aquarium enthusiasts and novices clamoring to add a clownfish to their collection.

Unfortunately, the movie, which had a message of conservation, actually led to the depletion of the species in places like the Great Barrier Reef. Because the reef and the clownfish are dependent on each other, when the clownfish started to disappear, the reef began to suffer.

Now experts fear that the blue tang could suffer the same fate due to the success of Disney’s summer hit, “Finding Dory.”

“Fish that have been removed from the ocean can have a hard time adjusting to tank life, and overfishing of popular species, like blue tangs, can wreak havoc on a reef’s ecosystem,” said Zachary Ostroff, curator at St. Petersburg’s Secrets of the Sea Marine Exploration and Aquarium.

Blue tangs are actually one of over 70 species of surgeonfish.

They live in coastal waters, coral reefs and inshore around rocky or grassy areas and can be found in waters from New York to Brazil. Blue tangs have sharp teeth and use them to feed on algae from rocks and coral. According to the The Nature Conservancy, this makes them especially important for the health of reefs because blue tangs prevent algae from overgrowing and suffocating the coral.

devastating to the reefs and the fish that live there. According to National Geographic, 90 percent of the tropical fish that enter the U.S. each year are caught illegally with cyanide.

Each live fish caught using cyanide destroys about a square yard of coral. Even in lower doses, cyanide can cause coral bleaching and interfere with the coral’s biology – meaning other fish, including the blue tangs left behind, suffer.

Fortunately, thanks to research and efforts by companies like Oceans, Reefs & Aquariums and Proaquatix, as well as researchers at the University of Florida, the number of species of saltwater fish that are tank bred increases each year. Clownfish have been among the easiest fish to breed, and this summer, researchers with the University of Florida’s Tropical Aquaculture Laboratory in Ruskin successfully bred a Pacific blue tang in captivity.

“We worked with Rising Tide Conservation and the SeaWorld & Busch Gardens Conservation Fund to find a way to successfully breed Pacific blue tangs,” said Craig Watson, director of the UF Tropical Aquaculture Laboratory. “It was a delicate, time-intensive endeavor, but it was one that has paid off.”

The next step will be for the UF researchers to help commercial producers replicate their success. The best thing you can do as a fish lover is asking where the fish you are buying comes from. If it’s not tank bred, don’t buy it.

T

hey lurk within the waves of Tampa Bay. Their teeth glisten in the Florida sun as they meet their prey.

Sharks traditionally signal danger and terror. But for the Los Angeles artist Shark Toof, they mean something more.

“The shark is the perfect conduit to invite curiosity, provocation, unrest and optimism,” the artist said. “They carry the weight of the two percent.

They are the minority.”

Unlike many artists, Shark Toof focuses on one subject. Sharks populate his murals and canvases yet are interpreted differently in each. In one painting, a shark with Mickey Mouse ears snacks on an unlucky Donald Duck. In others, the shark is held back by a physical barrier, biding his time before striking.

The artist says the pop culture imagery helps make his portrayal of the feared shark, done typically with acrylic and spray paints, more digestible.

“People should leave my work remembering what it was like when you had the moment of confidence and inner strength, even as the underdog or the unpopular,” Shark Toof said.

Beginning in November, Shark Toof’s work will be on display at South Tampa’s CASS Contemporary Art Space & Studio in a show titled “Red Everything.” Gallery co-owner Cassie Greatens said she wanted to work with Shark Toof after seeing how people responded to him at the Art Basel festival in Miami.

“His art is perfect for the Tampa Bay area,” Greatens said. “Being that we are a water city, we feel that people are connected to his work.

Whether it makes them smile or feel a bit frightened, there is definitely an association with our place in the state and Shark Toof’s work.”

Shark Toof named the show after the Chinese saying “hong hong huo huo,” translating literally to “red, red, fire, fire,” which means an expanding and prosperous life. He says his positive relationship with CASS made this collaboration possible.

“Working with CASS has been very symbiotic from our first meeting,” the artist said. “I had entertained a solo show with them in my head for some time, and this show itself will have textures, actions and reactions.”

“My color system for fashion and makeup is entirely based on your present hair color,” Kirsh said. “Your hair is what frames your face – your eyes, your smile – and you’ve got to work it to pull everything together and look your most beautiful.”

Every drastic change in hair hue – say from light blonde to dark brunette – requires a change in clothing and makeup shades. Kirsh says paying attention only to skin tone is the biggest beauty mistake people make.

TM: WHAT IS YOUR FAVORITE THING ABOUT TAMPA?

TM: DO YOU HAVE ANY GUILTY PLEASURE FOODS?

VJ: Being a military kid, I grew up living in a lot of different places, but I really love the neighborhood feel. Tampa is a growing city and a developing city, but it still has that small-town feel to it. I knew more of my neighbors after living here for two weeks than I did six years living in San Diego. I knew two people in my neighborhood [in San Diego] who I think lived in the same house. I move here and there’s people coming up to my door, introducing their kids, bringing over some food, just normal Southern hospitality-type stuff. You can’t put a price tag on that. I never felt like they were bugging me though.

It’s really just the size of the town, the speed of the city. It’s very comfortable for us.

TM: IF YOU WERE TO SEND ME TO A TACO PLACE WHERE WOULD THAT BE AND WHAT SHOULD I ORDER?

TM: IF YOU HAD AN UNLIMITED SHOPPING SPREE AT ONE STORE, WHAT STORE WOULD THAT BE? VJ: I do all my shopping online [laughs]. I use Trunk Club. They ship you a variety of stuff, it’s not just one brand. They use a lot of different vendors, so that’s been super convenient. You can go through the site, see what you’re interested in, select it, and then they send it to you. Whatever you don’t like you put back in the box and send it back.

They only charge you for what you keep, so it’s pretty convenient.

VJ: Cask Social Kitchen, I have to send you to Cask [Editor’s note: Jackson is a partner at Cask]. We actually just started Taco Mondays because everyone does Taco Tuesdays. We have this whole branding thing that says, “Why wait ‘til Tuesday?” Our chefs have done a really good job with our tacos, but there are so many places. There’s a place near Cheval [Golf and Athletic Club] called Mekenita Mexican Grille. There’s plenty in South Tampa – like Catrina’s right on South MacDill Avenue. I like the hole-inthe-wall spots that aren’t really commercialized. I like the places that are more authentic.

TM: OUTSIDE OF THE RESTAURANTS THAT YOU HAVE OWNERSHIP IN, WHAT IS YOUR FAVORITE LOCAL RESTAURANT? VJ: I’d probably say Ulële and Del Frisco’s Grille.

Kona Grill as well. Kona has the best happy hour.

It’s really affordable, and you get some great food there. Also Cappy’s Pizza.

TM: WHAT IS YOUR FAVORITE ACCESSORY ITEM?

TM: FINISH THIS SENTENCE. I CAN’T GO TO BED UNLESS I...

VJ: Set my alarm. I have to make sure I don’t sleep in. My body’s on a clock, especially during the season. The last thing I do before bed is check the alarm to make sure I wake up [on time].

VJ: It would have to probably be my watches. I don’t have a huge collection, but there’s not many times [I’m not wearing one]. Whether it’s an athletic watch or a fashion watch, and whether I’m doing something nice or traveling, I rarely leave the house without a watch on.

2 NIXON WATCH “I’m a pretty simple watch guy; Nixon can be dressy but it can also be very casual as well.”

TM: WHAT IS THE TREND YOU ARE LEAST INTO THESE DAYS? VJ: The super long T-shirts – those shirts that go down to your knees. There’s a difference between a long-line shirt and mid-thigh. There are kids walking around with long-line shirts down to their knees. It’s a dress!

TM: HOW WOULD YOU DESCRIBE YOUR PERSONAL STYLE? VJ: I would say casual. I’m more into comfort than I am fashion. I want things to be nice and to fit me well, but I’m definitely into comfort. If I can wear some nice shorts, a tank top and flip flops, that’s kind of my thing with all the warm weather we get. When I do get dressed up, I want things to be masculine but not too dry. I like wearing warm, comfortable fabrics.

VJ: Oh, for sure. I’m a foodie. I’m a big time foodie.

I do try to, obviously, do everything in moderation, but I have a weakness for tacos.

TM: WHAT ARE FIVE THINGS YOU COULD NEVER LIVE WITHOUT? VJ: Family is number one. My phone. I can’t act like I’m not going to need that – I’m an Android guy. Car. I like cars. I don’t have a collection or anything, I just have two vehicles, but I do like cars. I spend a lot of time looking at cars online when I’m bored. The fourth thing would be AmazonSmile [a program where Amazon donates a portion of the price of your purchase to charity]. And, finally, my DVR. I watch everything recorded.

TM: WHAT’S YOUR FAVORITE TV SHOW AT THE MOMENT? VJ: I’m a “Game of Thrones” guy. I watch a lot of HGTV. I like to do a lot of handiwork around the house. I spend a lot of time at Lowe’s. They know me by name. I love doing little projects like that, stuff in my yard, in the house or with the kids.

Gasparilla Music Festival. I love Curtis Hixon Park. I think it’s a great venue.

TM:: WHAT IS YOUR SOCIAL MEDIA APP OF CHOICE?

TM: WHAT DID WINNING THE NFL HONORS SALUTE TO SERVICE AWARD MEAN TO YOU?

VJ: Twitter, just because of the fact that you get more links to real news stories than you do on Instagram. Instagram is fun because it’s all pictures, but my favorite is Twitter because I follow so many different things, especially what’s going on in the city. I follow a lot of news channels and finance channels.

VJ: Oh it’s humbling, for us to be such a young foundation – going on four years old now – it’s a pretty big recognition. For me, it’s about bringing awareness to our causes, having people really think about the families, how deployments affect them, how the kids are, about their mental and physical health and their education. We really focus on ways to get involved with that.

TM: WHAT DO YOU DO WHEN YOU GET A DAY OFF? VJ: Family time, first and foremost. I’m an entrepreneur, and I have a few businesses locally – I’m a partner here at Ferg’s Live. I’m also an ownerpartner in Cask Social Kitchen on South Howard Avenue. I own a real estate company over on Henderson [Boulevard]. I’m not going in and working six or seven hours a day, but we have team meetings, and I think it’s important for me to stay involved and keep a pulse for what’s going on. It’s nice for them to see that I care. I get reports and emails whether I show up or not, so I keep track of the business, but it’s nice to go in there and get in the mix.

TM: WHAT INSPIRES YOU THE MOST?

TM: YOU TRAVEL A LOT. WHAT’S YOUR FAVORITE CITY TO VISIT AND WHY?

VJ: I would have to say I’m motivated by opportunity and how fortunate I am and not taking that for granted. I grew up doing a lot of work with less fortunate people at the Salvation Army [and other similar places]. My dad and I would go out and do work on the weekends for charity events, cleanups, things like that.

VJ: I like New York. Whenever we get a chance to go up and play, it’s a one-of-a-kind city. Just to see the energy all day and night – it’s non-stop. It’s literally a city that doesn’t sleep. I feel like, when I’m there, there’s so much energy, so many cultures.

Chinatown, Little Italy, SoHo, TriBeCa – there’s so many little niches in that city. You get so many different pieces of the world in one place.

TM: DO YOU HAVE ANY WEIRD HIDDEN TALENTS? VJ: I can ride a bicycle backwards. My grandfather taught me that when I was seven or eight years old.

I have a strong memory, as far as recall goes. I can hear a song once or twice and pretty much pick up the lyrics or see a movie one time and be able to pick up quotes from it. My recall memory helped me a lot in school. That’s probably why I did so well. I could read a chapter and pull it all right back out for the test.

I couldn’t do it without a great staff, a great team of board members and awesome volunteers that help our programs. We’re very organic. It’s about activity.

All our programs I’m involved in personally. I’m out there selling T-shirts, shaking hands, doing stuff. You can check on our website [jacksoninaction83.org] for all the events we do, from the baby showers to our reading program. The Buccaneers have been so supportive by allowing us to do tours once a month with kids in grades three through five who come if they’re showing progress in their literacy and things like that, so it’s a lot of fun.

Davidoff of Geneva, the foremost purveyor of luxury cigars in the world, has partnered with Jeff Borysiewicz, owner of Orlando-based Corona Cigar Company, to create Davidoff of Geneva Tampa, “the ultimate cigar experience,” where every detail is hand selected for its quality, rarity and flavor.

Borysiewicz sat down with TAMPA Magazine to discuss picking the right ‘stick’ and pairing it with a drink that complements and invigorates it.

“If you walked in a cigar store and I asked you ‘what kind of cigar are you in the mood for,’ generally we ask mild, medium or strong,” Borysiewicz said. “Even if you’ve never smoked a cigar before, you know whether you want something mild, medium or strong. It’s like asking if you want chicken wings – mild, medium or hot. Start with the cigar first, then start selecting different spirits.”

Though an expert staff is on hand to guide you through the overwhelming selection – you could visit over 100 times and never try the same thing twice. Only you know what kind of pairing you’re in the mood for.

Drink: Laphroaig Single Malt Scotch For those that appreciate a full-body combination of spirits and cigars, the Davidoff Escurio fits the bill. The cigar features Brazilian tobacco in the blend, which makes it a little stronger. It pairs nicely with Lahroaig Single Malt Scotch, which is also about as full-bodied as you can get when it comes to single malt scotch. It is very distinctive - the whiskey itself smells like a campfire.

PAIRING 5 Cigar: Davidoff Nicaragua

Q: Tell us about your background and journey to Noble Crust?

Q: What is the inspiration behind your recipes?

A: After attending Le Cordon Bleu in Orlando, I moved to New York City where I worked at Todd English’s Olives, Torrisi Italian Specialties, and Parm.

At Olives we were next door to the Union Square Farmers’ Market and I was introduced to tons of new ingredients and developed a passion for rustic Italian food. TJ Theilbar, a founding partner of Noble Crust, and longtime friend in the industry had followed my career to New York and persuaded me to come back to Florida to open Noble Crust.

What went from an idea of a, “little pizza place,” transformed into what we are today.

A: I reinterpret traditional Italian dishes by using Southern ingredients – country ham on pizza instead of prosciutto – or I take traditional Southern dishes and give them an Italian spin like topping fried green tomatoes with agrodolce.

A: Our location. We are central to both sides of the Bay and have become a destination to diners all over Tampa Bay. Q: What is your favorite feature of your restaurant?

A: The open kitchen allows me to see guests having a good time.

Start with the Jumbo Lump Crab Cake, seated on candied tomato jam, Grilled Caesar Fonduta, which is meant to be dipped in the Caesar dressing and eaten with your hands, then on to the Braised Lamb Shank served over a fragrant saffron risotto and finished with a lemon and garlic gremolata and finally the decadent Godiva Chocolate Pyramid.

Diners took it easy at the Bahama Breeze Reggae Fest Rocky Point’s Bahama Breeze restaurant celebrated the sounds, tastes, sights and vibes of Jamaica all summer long with Reggae Fest.

Every Saturday, Tampa’s top reggae talent entertained guests on the spacious waterfront patio with live music and sounds of the islands.

In addition to dancing and celebrating a “don’t worry, be happy,” carefree attitude, guests also enjoyed pop-up rum punch bars, games, giveaways and more. Inside, diners were treated to signature reggae playlists from Gary Gunn, a world-renowned artist and music curator.

by Executive Chef Antoine & Vincent Ludcene. He loves to offer a wide Jackson variety of dishes, so you can find OWNERS everything from Chicken ‘N Waffles to Crab Crusted Grouper, flatbreads, salads, and pastas on our menu.

Q: How would you describe the food at Cask?

A: Our food is new American fare with a bit of a Southern twist.

Chef Antoine makes great seafood dishes, and we put our own spin on them with items such as the Cask Low Country Carbonara.

Our menu features everything from tuna and scallops to meatloaf and vegetarian selections. We truly have something for everyone.

A: The Loft Lounge provides a cozy, intimate atmosphere for all types of gatherings from baby and bridal showers, wedding dinners, birthday parties, and corporate events.

There aren’t enough words in the dictionary to describe the spectacular desserts created in the Harry Waugh Dessert Room at Bern’s Steak House.

With its cozy atmosphere and superior service, it is no wonder that hundreds of people from all over the area gather there to celebrate special occasions throughout the week.

You don’t even need a particular reason to treat yourself to a visit to the Dessert Room – hanging out with friends or co-workers is reason enough.

Members of the TAMPA Magazine staff met up one evening to share their favorite desserts and after-dinner drinks and learn a little bit more about the legendary Harry Waugh Dessert Room.

In the late 1970s Bern Laxer, founder of Bern’s Steak House, returned from a European vacation with more than just souvenirs and memories.

While dining at his friend Harry Waugh’s home in London, Laxer was impressed with his formal drawing room and the idea of a place to retire for after-dinner drinks and desserts. He enjoyed it so much that he wanted to share the experience with guests of his restaurant back home.

Like most buildings and homes in South Tampa, Bern’s Steak House did not have any room to expand on the ground, so Laxer built up – adding a second floor. When he was finished, the Harry Waugh Dessert Room was larger than all the main dining rooms combined. Climb the opulent stairs and you’ll find 48 private booths, a piano lounge area, a pastry kitchen and storage for an extensive selection of after-dinner wines, scotches, whiskies, cognacs, ports and madeira wines, as well as a cage of rare liquors and the exclusive Bern’s Blends Whiskies.

The dessert room does not take reservations, so it is recommended that you get there early. If you are eating at Bern’s, your server will ensure your afterdinner table is ready for you. About 90 percent of the diners at Bern’s end their evening with one of the 40 different desserts or 14 homemade ice creams they serve. On an average weekend night, Kim Yelvington, Executive Pastry Chef, and her team of 20 pastry chefs make more than 1,000 desserts, many of which could pass for works of art.

CAPPUCCINO BERN’S STEAK HOUSE It takes 10 weeks to make this cup of java. A blend of finely ground, freshly roasted coffee beans are soaked in Kahlua and other flavored liqueurs for 70 days before they are ready to be brewed into the tastiest cappuccino in Tampa.

If more than 40 pages of desserts and drinks seems a bit daunting, don’t worry – the servers in the Dessert Room are certified dessert and whiskey experts.

“Everyone goes through five weeks of training and has to work for a period of time at every position in the Dessert Room,” said Dessert Room Manager Karli Geer. By the end of their training the servers can expertly flambé your Bananas Foster or Baked Alaska on one of the five custom built flambé carts or guide you to the perfect after-dinner drink to accompany your sweet treat.

TRIO OF LIQUID CENTER CAKES A variation on the beloved volcano chocolate cake, this trio of chocolate cakes is filled with warm centers of dulce de leche, hazelnut, and white chocolate and paired with small scoops of homemade banana caramel, Caramelia crunch, and vanilla bean ice creams.

Beautiful to behold and divine to taste, many of the dessert recipes were developed by Laxer himself after much trial and error. Legend has it that he spent seven years developing the recipe for the Macadamia Nut Ice Cream and experimented with 300 different recipes before finding the perfect combination of ingredients.

Classics like the Banana Cheese Pie and Cheesecake Gert have been around before the Dessert Room was even a concept, while newer creative concoctions combine innovative twists to create unique favorites like the Strawberry Key Lime Tart and the Granny Smith Apple Pie with a caramelized apple filling.

In addition to being pampered by the wait staff while indulging your sweet tooth, you can listen to your favorite music performed by the talented nightly pianist. Private booths have their own sound systems so diners can hear him tickle the ivories – you can even use the booth’s private phone to call in your request. “He plays by ear,” said Geer. “Even if he doesn’t know a song, he can listen to it and then play it.” The most requested songs each night? Anything

by Billy Joel, Elton John’s “Tiny Dancer” and Queen’s “Bohemian Rhapsody.”

Your favorite song played just for you while receiving five-star treatment and enjoying a luscious last course and one more toast to the evening? It doesn’t get any sweeter than that.

ESPRESSO COFFEE Coffee beans are roasted daily at Bern’s and brewed with the minimum amount of water for maximum flavor.

KITCHEN WIZARD: Ken Schwartz and the magic behind creating destination dining Written By Derek Herscovici

O

ne of the most sought-after restaurant designers in the world, Ken Schwartz has made a living turning the abstract visions of iconic chefs into savory, fully functioning realities. Along the way his Tampa-based firm, SSA Foodservice Design + Consulting, has become the vanguard of adventurous eats, reputed as much for its dependability as its creativity.

“It doesn’t matter who our client is, we ask them two things: their vision of the guest experience and what they really think the guests are experiencing,” Schwartz said. “It’s our job to get those two things to be one.” said Schwartz.

Schwartz grew up alongside the familyowned restaurant supply company his great-grandfather founded in Ybor City in 1897. Displaying a knack for inventing and design at an early age, he attended a technical high school and studied architecture “four hours a day for four years.”

“I actually designed my very first home—it got built for somebody—while I was a junior in high school,” he said.

Schwartz’s family eventually sold the restaurant supply business, but he followed his passion in college, studying architecture, economics and accounting, eventually selling his post-graduate businesses to start SSA in 1993.

SSA’s big break was the redesign of the Don CeSar Hotel on St. Pete Beach, which lead to work on the Hilton Clearwater Beach, then designing the new Columbia Restaurant in Celebration, Florida. Thanks to the success of that restaurant, Schwartz was tapped to design the new 15,000 square-foot kitchen of the original Columbia in Ybor.

“After we did the addition to the Columbia in Ybor City we realized [that] not only were people beginning to enjoy our style of service and really our expertise, but that there was a much

greater opportunity out there outside the Tampa Bay area,” he said.

The Hard Rock Café selected Schwartz to work on its Orlando franchise, which, at nearly 140,000 square feet, can seat 2,000 people at once and is SSA’s largest project. Today SSA has designed 70 different Hard Rock Cafes in far-flung places like Anchorage, Brussels and Saipan.

Since then, SSA has built a staggering resume extending from the Bay Area to around the globe, including hospitals, military bases, sports venues and airports, each project more unique than the last.

An SSA signature is its one-of-a-kind “bespoke elements,” singular features combining theatre and engineering for

an unforgettable experience. These range from massive seafood boilers to Korean barbecue tables to “fire pits” with skewers that orbit a flame like planets in a model solar system. All are imagined and created with SSA’s inhouse fabricators and engineers.

“The stuff we’re proposing, when a client says, ‘this is great, I want to do it,’ we have to be the people who figure it out,” Schwartz said. “These things didn’t exist before.”

While researching concepts for Ulële, Tampa restaurateur Richard Gonzmart asked Schwartz if he could create a fire pit similar to one he had seen at famous steakhouse Queue de Cheval in Montreal. Schwartz said he could, as he had actually designed the one at Queue de Cheval, a client of SSA. The most challenging restaurant Schwartz said he designed is actually three: Bourbon Steak, Bourbon Pub and Michael Mina’s Tailgate, all created with celebrity chef Michael Mina and housed inside Levi’s Stadium, home of the San Francisco 49ers.

Though Bourbon Steak and Bourbon Pub operate as a normal restaurant on most days, during “event” days like home football games and concerts, all three restaurants operate as part of the Tailgate, feeding sometimes 3,000 people in a three-hour span.

“We were asked to cut a million dollars out of the project,” Schwartz said. “In looking at ways to cut, we wanted to eliminate those solid-fuel cooking stations for something that we could use with gas to cook a lot of product but still create that kind of live cooking theater.”

The colossal rotisserie has become an icon for pilgrimaging celebrity chefs who come to take pictures beside it.

SSA gets all of their clients through word-of-mouth, something Schwartz attributes to the humility he learned years earlier.

“We’re not there to shove our ideas down anyone’s throat,” Schwartz said.

“We’re there to help create an incredible guest experience and help facilitate the client in getting from a conceptual place to where their vision is up and running.”

Best place to watch a Lightning game with friends: Hattricks It’s close to the arena and is always a good time, full of passionate fans looking for a high five and a celebratory cheer.

Best place for a healthy meal: A DIY bowl or fresh pressed juice from Fresh Kitchen, and I’m set.

Favorite weekday breakfast spot: Swami Juice has the best acai bowls. They’re always quick and delicious!

Favorite Asian food: Thai 5 Food Truck is incredible. It’s a Sunday ritual – crab rangoon, shrimp fried rice, a blanket and Netflix.

Best barbecue: I consider myself an expert in this category. 4 Rivers Smokehouse all the way – their sides are A++. My mouth is watering thinking about them!

Favorite pizza: Eddie & Sam’s New York Pizza is the best! No. 1 is the lasagna pizza, buffalo is a close no. 2.

Favorite place for a craft cocktail and cocktail of choice: I love starting my night out with a Smooth Criminal at Hyde Out. Sweet but not too sweet, just how I like it!

Favorite place for special family occasions: Armani’s. My wife and I had our wedding reception there, and it will always be near and dear to our hearts. It’s still the closest thing to a five-star experience in Tampa! Plus our waiter of 18 years is still there!

Favorite local store: Schiller’s Architectural & Design Salvage. It’s a unique antique store specializing in items like reclaimed lumber and antique collectibles. Half of our office and most of our home is filled with cool stuff from Schiller’s.

Favorite exercise class or gym: I work out with Tina Bozman at Pulse Personal Training by Alejandro on Manhattan Avenue. She is a friend, trainer, dietician and psychiatrist all in one.

Favorite place to catch live music: Curtis Hixon Waterfront Park. There’s nothing better than live music in the heart of our great city! I can remember when I was kid and downtown was not the place to hang out. Now we look for reasons to go downtown.

Favorite beach spot: Bob Heilman’s Beachcomber Restaurant. My father used to take us there when we were kids, and I have carried on that tradition with my children.

Favorite Bay-area beach: It’s a toss-up between Clearwater and Pass-a-Grille.

I like them both equally, it just depends on where our friends are at the time.

Favorite place across the bay: The Don CeSar Hotel. Many of my friends and I put on a wiffle ball fundraiser for four years benefiting All Children’s Hospital and have many great memories in that hotel.

Favorite place for authentic cuisine: Whenever I want to be reminded of home, I go to So Gourmet Bakery on South Dale Mabry and indulge in one of their fabulous French quiches, croissants or pastries.

Favorite weekday breakfast spot: The Grind in Westchase is the perfect local spot to grab a quick coffee and healthy breakfast prior to work.

Hidden gem restaurant: Terra Sur, a Peruvian café in Carrollwood. Try the sangria and the ceviche – it doesn’t disappoint.

Best fine dining spot: For special occasions, Restaurant BT is an easy choice with its unique ambiance, awe-inspiring presentation and fresh French-Vietnamese flavor.

Favorite place for a healthy meal: Swami Juice has the best acai bowl. Any time I am in South Tampa, I have to have it.

Favorite museum: The Dalí Museum in St. Petersburg. We’re fortunate to have the largest collection of Salvador Dalí’s work in the United States right in our own backyard.

Martinis for Moffitt Annual soirée supports life-saving research at Moffitt Cancer Center

More than 1,000 people attended Bay Area Advisors’ flagship fundraiser event, Martinis for Moffitt, on August 6 at the Straz Center.

Guests enjoyed signature and specialty martinis and drinks, food from some of Tampa’s top restaurants and live entertainment throughout the evening.

In addition to networking, socializing, and dancing, the evening included a silent auction with plenty of exciting items to bid on - everything from gems to jerseys. Martinis for Moffitt raises money for Moffitt Cancer Center’s critical cancer research programs.

Since its inception, Bay Area Advisors has raised more than $800,000 for Moffitt Cancer Center, including their Advanced Prostate Cancer Collaboration initiative and their Adolescent and Young Adult Program.

From hurricanes at the 2012 Republican National Convention to Cuban sandwiches on the campaign trail, Tampa is a unique test on the road to the Presidency.

A litmus test of national diversity, social mores and political disposition, as well as crucial fundraising grounds for both sides of the aisle, today Florida and Tampa in particular commands the most electoral

votes of all swing states. In every year except 1992, when George H. W. Bush edged Bill Clinton by less than two percentage points, Florida has picked the winning candidate in every election regardless of party since 1964.

The facts make plain what strategists have known all along: whoever wins Florida wins the White House.

Teddy Roosevelt and the Rough Riders

John F. Kennedy November 7, 1963 Kennedy’s second visit to Tampa may be remembered for iconic photos of the dashing young president greeting thousands of supporters, but behind the scenes every moment of the fivehour trip was fraught with danger.

President Roosevelt and the Rough Riders The story of Theodore Roosevelt’s triumphant return to politics after years “roughing it” in North Dakota can be directly traced to his victories in the Spanish-American War. In 1898, when the United States and Spain declared war on each other, Roosevelt left his job as Assistant Secretary of the Navy to form the First U.S. Volunteer Cavalry Regiment, known as the “Rough Riders.”

The Regiment arrived in Tampa in May 1898 before departing for Cuba, where Roosevelt’s famous charge up San Juan Hill, and later the siege of Santiago, turned him into a war hero at home.

He returned a decorated veteran to become Governor of New York, then William McKinley’s vice president, before assuming the presidency in 1901.

Threatened by angry segregationists, angry pro-Castro Cubans and angry anti-Castro mobsters, like Santo Trafficante, Secret Service lived a virtual nightmare trying to protect the President.

The centerpiece of the visit, a motorcade route through downtown and Grand Central Boulevard, was the most demanding security task of the trip.

Retired Tampa policeman Russell Groover, who worked security detail that day, said thousands of regional lawmen and military personnel “stood in every building along the route, on every floor and every roof.”

Four days later Kennedy would be assassinated in Dallas; Tampa officials voted to rename Grand Central Boulevard in his honor.

Nixon’s “Southern Strategy” earns the support of the KKK

Controversy between Richard Nixon and Kennedy during the 1960 election seems tame compared to the politics of today, but back then public perception could swing on a dime.

Part of the Republican Nixon holds a model of the space shuttle and its Party’s “Southern Strategy” transport plane while standing with Governor Claude was to incite voters against Kirk and Congressman Bill Cramer at the airport in St. integration and play upon Petersburg. the more undesirable characteristics of Jim Crow holdouts like Tampa. William J. Griffin, a high-ranking “Grand Dragon” in the Ku Klux Klan, brought a wave of scorn on Nixon after openly supporting him instead of Kennedy. During the first nationally televised presidential debate, Kennedy grilled Nixon on the endorsement; Nixon’s rejection couldn’t shake the public’s unsavory perception of him.

“I don’t give a damn what Nixon said. I’m still voting for him,” Griffin said. “We would vote for Nixon even if we weren’t klansmen. Millions of klansmen will back him too. We are an American organization, and we picked the Nixon-Lodge ticket and we’re going to vote it, just like any other American organization would.”

At 74 years old when he visited Tampa in 1985, Ronald Reagan knew he had more in common with the nation’s grandfathers than its youth. Discussing tax reform with nearly 3,000 senior citizens inside Tampa’s Curtis Hixon Hall, the former Hollywood star snuck in a reference to an old, broken down car President Regan at the GOP Convention on July 17, 1980 on “The Jack Benny Program,” a 1930s radio show.

“I seem to remember one time when the Maxwell car on the “Benny” show ran out of gas,” said Reagan. “Jack Benny’s line was, ‘I don’t understand; the gas gauge says it’s full.’ And then it was Rochester, his sidekick there on the show, who says, “Well, it’s painted that way.”

“Well, my friends, today we have a Maxwell car tax code,” Reagan continued. “It’s painted fair and simple, but, in truth, it’s unfair, unjust and complicated to the point of absurdity.”

Reagan would win all but one county in Florida by a landslide.

1992 Clinton Bill Clinton, Jimmy Buffett and Stephen Stills Downtown “I want a saxophone player in the White House,” Jimmy Buffet said during the mini-concert he and Tampa son Stephen Stills held at a downtown Bill Clinton rally in 1992. “I’m tired of Republicans in the White House. I haven’t been invited in 12 years.”

2012 Obama Order the “Obama” The year was 2012, and Barack Obama was hitting the reelection trail across Florida. Though his visit to Tampa had been widely publicized, Willy Barrionuevo had no idea that the president’s itinerary included a stop at his restaurant, the West Tampa Sandwich Shop.

Despite the young candidate’s star power, Buffett was the undisputed highlight of the event, even managing to burn incumbent VP Dan Quayle in the process.

Barrionuevo said in a 2013 Tampa Tribune interview that the staff only had minutes to prepare for the arrival of the the president’s motorcade, including allowing Secret Service to sweep the area and block off the roads around the restaurant.

“Some people claim that there’s a woman to blame, but I know it’s not Murphy Brown’s fault” Buffett sang in an altered version of “Margaritaville,” mocking Quayle’s recent speech chastising the television character’s choice to become a single mother.

In addition to ordering the specialty honey Cuban sandwich and a tripleta (a ham, pork and steak sandwich), Obama picked up 17 sandwiches for security. Today you can order the honey Cuban and tripleta combo just by asking for “the Obama.”

President Clinton welcomed at a joint session of Florida’s legislature

Clinton had summoned his folkiest firepower for the rally, vowing to tighten the embargo on Cuba, fighting offshore drilling and ending “trickle-down” economics. Clinton roused the Tampa crowd against Bush, saying “The economy of Florida is in shambles, and yet they say if there is one big state in America we can depend on, it’s Florida – they’ll just knee-jerk and vote Republican.”

The surveys ask the doctors to nominate peers who, in their judgment, are the best in each of 52 specialties. We then tally the votes and select a vote threshold for each field.
