Thirty Years of Good Food El Taoseño is a family-owned and family-operated restaurant. By Yvonne Pesquera | Photo by Chad Lewis
I
n 1983, Arturo and Connie Archuleta first opened El Taoseño on the west side of Paseo del Pueblo Sur. But as word of their good food spread among locals and visitors, the Archuletas set their sights on a larger property that had come up for sale: the bowling alley across the street. Today, Diana (Archuleta) Gonzales, who is the manager, remembers when her family restaurant, El Taoseño Restaurant, was once a bowling alley, skating rink, and later became a dance hall. “My mom and dad bowled here. I would come for the home fries and a Coke,” she recalls. The Archuletas moved into the present-day building in 1993 and in one area of the restaurant, a large section of the original bowling alley floor is still visible. Longevity is definitely a point of pride for the Archuleta family. When asked how long their family has been in Taos, Gonzales and her brother Fred Archuleta, who is the general manager, respond: “Forever.” Within the restaurant itself, all of the brothers and sisters have worked there –– Yolanda (Archuleta) Muñoz, Orlando Archuleta, and Leonard Archuleta –– as well as spouses and children. Several members of the wait staff and cooking crew have been with the familyowned business for over 20 years. “Sometimes family businesses can be hard,”
says Gonzales. “But we work really well together.” Referring to his father, Arturo, who passed away 13 years ago, Fred Archuleta says, “Maybe this was his way to keep us all together.” And what keeps the business thriving for so long is the quality of food they serve. “We serve the kind of food you make at home,” says Gonzales. “Everything is fresh and the food is consistent.” El Taoseño is known for its award-winning red and green chile; both come from the Hatch Valley. Fred Archuleta says the best part of managing the restaurant is seeing new and repeat customers come in. “We know so many of the locals,” he says. “But it’s also great when visitors say: ‘We stop here every time because this is the best.’” El Taoseño is looking toward a busy summer with remodeling upgrades and special functions in its private party room. As the town of Taos continues to grow and welcome newcomers, the Archuletas plan on continuing to be a part of the Taos character. “We serve good food at reasonable prices,” says Fred Archuleta. “That was Dad’s advice. And that’s what we do to keep people coming back.” El Taoseño Restaurant is celebrating 30 years of business. Look out for specials and promotions later this summer.

y Quintanilla’s simplicity is complex. He talks as easily about wild mushroom risotto with white truffle oil and Parmigiano Reggiano as he does about his double-delights — Natalya, 9, and Tatyana, 6. He babies his sauces and coddles his daughters, bringing to each unmitigated love and attention.
Jason Smith, one of his cooks, says Ky is “so Zen” — an unflappable center amidst the kitchen chaos that is the second nature of fine dining. Quintanilla is the young, 30-something, executive chef of Taos’ highly regarded Lambert’s Restaurant, who seems equally unflappable amidst the new digs on Bent Street, where it reopened just weeks earlier, April 5.

uintanilla’s face brightens perceptibly discussing the amenities of his new facilities with practically double the space — the Apple Tree kitchen he says was designed for a high-volume as well as a high-end culinary product. Pointing to his dry pantry, he notes there’s nothing canned, just the basics — bags of sushi, bomba, and Pakistani basmati rice, polenta, cases of organic eggs (local, Estancia, N. M.), boxes of organic garlic and onions, lots of grains. “It was pretty primitive for what we were trying to execute,” he says of Lambert’s original 1989 kitchen, carved out of corners and tucked away in the old Randall homestead on Paseo del Pueblo Sur. They can do big parties now, he says, and still provide the “consistency” of excellence so many customers cited in a survey a few years back, taken by then-M’aitre D’ Tom Rogers — their number-one reason for returning time and again. Proof that you may indeed go home again, or do a 360 in Taos, is the fact that Quintanilla, Rogers, Ken and Sara Draim, Michelle Myers, Sammi Kennedy, Pamela Maestas and Shambu (doing service and music) are all former Apple Tree employees who are back in their old haunt of years past. Quintanilla started at Apple Tree in 2000 as a prep cook and by 2004, at age 25, he was named executive chef. Shortly thereafter, “because I thought it was a bit much,” he left and studied under Zeke Lambert until 2008 when Zeke and Tina sold it to Taos Restaurant Group (Joseph Wrede, Nat Troy and Mike Yaccino), working at Joseph’s Table on Taos Plaza, also part of TRG’s Taos triumvirate (The Old Blinking Light, Joseph’s Table and Lambert’s). A Taos High graduate of 1994, Quintanilla went to NMSU-Las Cruces for filmmaking/ directing, then UNM-Taos, but hooked a
detour to New York, attending Culinary Institute of America in Hyde Park, followed by a few year-stint as Ronnie Lee’s exec chef and GM before coming to Apple Tree. And the rest is, as they say, proof in the pudding. “I’m most turned on by being able to grow,” Quintanilla says about the move to Bent Street. “I felt I was getting stagnant — no foot traffic. We couldn’t handle more than 12 to 15 people in the bar, where now we can do 40 or 42 people.” Many a Lambert’s aficionado has dined at the bar in lieu of a table, and that time-tested ambiance is still a focal point, both upstairs in the Tree House lounge and downstairs inside, and out in fair weather under the apple tree - only more people now will be able to take advantage of it. The former Apple Tree’s nichoed dining rooms stand up well to Lambert’s renowned candle-lit islands, typically two-and fourtops with freshly rebuilt bancos and inviting decór, all Vee Yaccino’s interior design. Newly available is the singular Governor’s Room overlooking the Gov. Bent House courtyard, a private dining sala immediately east of the downstairs bar, with a harvest table that seats from 6 to 10 (or 12 if you’re really chummy). “As well as being able to provide for 25 new employees, I feel fortunate in moving to this location, with the word-of-mouth and loyal local clientele following us here. “Every night’s been so busy,” Quintanilla says. ‘The bar has seen big crowds, eating three-course meals out on the coffee tables, just like the old place.” Beyond being as good as before, Quintanilla hinted broadly that Pastry Chef Michelle Myers’ renown adds a whole new and exciting element to Lambert’s (desserts to die for — count on it). “We wanted to remain exactly the same Lambert’s yet have room to grow.”

L
a Cueva’s name means “The Cave,” but this cozy restaurant in the heart of downtown Taos doesn’t look like a cave at all. The bright-colored walls, an old kiva fireplace and the wood floors make it inviting and comfortable, without trying too hard. The restaurant is small inside, with just five tables, but Juana and Horacio Zarazua, the owners, have just opened the patio for the summer. With the new arrangement the place gains seven more tables, under colorful umbrellas, to dine al fresco. “We also decorate it with candles at night,” said Juana Zarazua. “The plants provide a nice touch of green, now that all the flowers are starting to bloom. We want to make the restaurant inviting, like someone’s own casa.” The food also resembles the one you can get at your home — supposing mama or grandma had collected as many recipes as the Zarazuas did, and were such skillful chefs. Their most popular dish is the chile relleno,
made from scratch with Hatch green chile, stuffed with cheese and smothered with red and green sauce. It’s served with rice, beans and pico de gallo (onions, tomatoes, cilantro and jalapeno). “We don’t use anything frozen,” said Horacio Zarazua. “We buy fresh chiles, clean them by hand and make sure that they are cooked just right.” That’s the reason why the chile relleno tastes delicious, so soft that it melts in your mouth with cheese and everything. “The process takes a lot of work, but our patrons appreciate the difference,” said Zarazua. Sometimes vendors from a large food distributor approach him, Zarazua tells me, and offer La Cueva a good deal on frozen chile, explaining that it would save the cooks time and effort. “I always answer ‘gracias, pero no,’” Zarazua said. “No matter what you do, frozen foods never have the same texture and flavor as fresh meals.”

he menu includes Mexican and New Mexican plates. Cochinita pibil is one of the specials today. The shredded pork is wrapped on a banana leaf and has a tangy flavor after being marinated in three kinds of juice — lime, orange and lemon. Like most dishes, it is served with rice, beans and corn or flour tortillas. The dessert department is as well stocked as anyone with a sweet tooth could wish for. The little chimichangas make good use of the omnipresent flour tortilla. They are stuffed with mango and cream cheese and then deep-fried. “We serve them with vanilla ice cream to set off the flavors,” Zarazua said. According to Treska Stein, a native of Germany, yummy is the best word to describe the sweet chimichangas. “I have tried several dishes at La Cueva and love them all,” Stein said. “The burritos are excellent too. You can also order food to go and they are very efficient and fast.” The Zarazuas and their employees do deliveries around town, mostly to businesses. The service is free. La Cueva opened its doors in March 2011. Both Horacio and Juana Zazueta are experienced chefs, having worked at The Old Blinking Light, Graham’s Grill, Relleno’s and Antonio’s. “It was about time for us to open our very own restaurant,” Zarazua said. The Zarazuas want to spread a healthconscious message. Their chiles rellenos, tacos, tortillas and sauces are all gluten-free and there are several vegetarian entrees. They are planning a new summer menu which will include fresh salads, Mexicanstyle prime ribs, dulce de leche and their
signature coctel de camaron, a shrimp cocktail with tomatoes, onions, jalapeño, lemon juice, cilantro, avocado, ketchup and orange soda. “We want to capture the spirit of summer in Taos,” said Juana Zarazua, “and translate it into healthy food choices. We are in love with this town and it is always an inspiration for our menus.” The couple is originally from Guanajuato, Mexico, but they have lived in Taos for 15 years. They have three daughters and the eldest helps occasionally in the restaurant. “We are very grateful for all that we have received here; therefore, we really want to give back to the community,” Zarazua said. “That’s why we keep our prices down and as affordable as we can.” The most difficult part of the restaurant business, they both said, is the long hours, particularly in a place that is open every day, from 10 a.m. to 9 p.m. “One of us is always here,” said Juana Zarazua, “so if there is a school event for one of our daughters, we need to take turns to attend. It means a great deal of commitment.” “There are no work-free holidays for us,” said her husband. “When other people take days off, in Christmas or New Year, we work extra hard. But we love the restaurant business and it keeps us going.
