The Bavarian

Soul food has a different meaning at The Bavarian Lodge & Restaurant in Taos Ski Valley. Gourmands relish the Swiss/Bavarian/ German delights offered smack in the middle of the Southwest, and outdoors people crave the high-mountain passes – maybe it’s the altitude. Whether it’s the “Bavarian experience” offered by owners Thomas and Jamie Schulze or the mind-blowing wilds of the 10,020foot elevation lodge — foodies and nature freaks both head to the Bavarian for their alpine fix. Ask any regular what their favorite dish is and you’ll likely hear — “Oh, the goulash and bread” or “Hands down, the wienerschnitzel” or “No doubt about it, the spätzle” (sounds like “spats-lay”).

Actually, all three of those favorites are usually mentioned by the same person in the same sentence. (This reporter’s favorite is the goulash and the “cheese” spätzle — more on that later). “Goulash is offered on both the winter and summer menus,” Schulze says, smiling reassuringly. “And we offer the traditional German specialties on both menus, too.” But the heartier sauerbraten and lamb shanks you’d expect are usually only on the winter menu, simply because the often subzero weather in our New Mexican Alps calls for such rib-sticking fare. And you’ll always find exquisite American taste-bud tamers like buffalo rib-eye steak in the summer, filet mignon in the winter and hamburgers year round.

Spätzle – German gnocchi?

If you’re mad for Gruyere cheese and look for any excuse to eat it, spätzle is the ticket. A kind of pasta, it’s made in-house all day long (probably by the same young lederhosen clad laddies and lasses saucily serving your table — squeezing the dough through a colander, in between the salate and dessert courses — but I digress). “Actually, yes, you could liken spätzle to gnocchi,” Schulze says, “but a little lighter. It’s one of our handmade recipes that uses semolina wheat flour and water. “You grate the dough through this big grater over a rolling boil of water and after boiling 2-3 minutes you pull it out and plunge it into ice water to cool it down immediately. “For the cheese spätzle you make a cheese sauce of sautéed shallots and garlic in butter with Gruyere and heavy cream. (No wonder I love it.)” But it’s the goulash that has often tempted me to go undercover just to get the recipe. No need, says Jamie. She offers it to the public gratis. There’s nothing like a steaming bowl of that bloody-red, grainy goo of beef, pork, potato and paprika to set your heart to singing, “The hills are alive with the sound of music …” More soul food — Benedictine beer Just when you think you’ve done it all, along comes beer “for the body and soul” — made by Benedictine monks in Bavaria. One of the abbey breweries, Andechs, sits

at the foot of the “Heiliger Berg” (Holy Mountain) in Bavaria, where some 30,000 pilgrims trek each year (puts a New Mexican in mind of Chimayó). Thomas Schulze has, gasp, picked up the Weltenburger Kloster (monastery) and the Andechs Monastery brew lines, being the first to do so in the U.S. he says. And what of Späten’s Optimator? “Oh, we’ll still have it,” Schulze says. But after introducing Späten brews to U.S. customers, and watching them become available everywhere (Spáten is even going to start brewing in the U.S., Thomas says), he decided to import the Benedictine monks’ draughts. “The beers that the Monks at the Andechs Abbey produce are considered by the beer community to be some of the world’s greatest beers; with their Doppelbock scoring 99 points on ratebeer.com,” according to press Schulze forwarded by email.

Well all the more reason to get up early on a Thursday (or a Friday, Saturday, Sunday or Monday) and head out for a hike to Williams Lake before the monsoons roll in. Even if they do hit mid-hike, there’s that big steaming bowl of goulash and basket of hot rosemary bread waiting to bring life back to chilled fingers and cheeks — and maybe even a tankard of monks’ brew

— the perfect way to end a day feeding body and soul.
