“I am Independent!” After a hematoma in the brain nearly took his life, Bill Ellithorpe, 93, found solace at The Bridge in Alamosa. “I had a pretty serious physical problem when I came here” the lifetime Center farmer said, “and since then, I’ve prospered.” Ellithorpe has lived at The Bridge for just over a year, but still makes nearly daily trips to the family potato operation. His son Eric (Ric) Ellithorpe now oversees the operation that includes 21 circles (1/4) sections of farmland and a warehouse operating as Aspen Produce.

“He and I pioneered the potato operation here in the valley,” said Bill who still owns four quarters himself. “I started with nothing and built it up.” Farming was his livelihood, but mining is his passion, still owning a few claims in Saguache County. Partnering with his brother Bob, who discovered the largest gold specimen in Colorado history, the pair pursued both gold and silver. The specimen, which now sits at the Denver Museum of Natural History, weighed 141 pounds and contained 26 pounds of gold, valued today at around $500,000. Ellithorpe was married to his first wife for 50 years and they had five children. He has been married to Corrine for 12 years and has two stepchildren. “It’s a good place to be,” Bill said about The Bridge. They have everything I need and they take care of us quite well. Albuquerque-native Gabriel Farkash, the executive chef at Martyrs Steakhouse, came to Taos 13 years ago attracted by the many outdoor options that the town offers. “I like snowboarding, fishing and hiking, and Taos is the perfect place to do all that,” he said.

“I try to accommodate them to the fullest,” he said. “I make sure that our clients are happy with whatever they order. That doesn’t happen all the time, but I’d say that it happens more often than not.”

Farkash started his culinary career as a dishwasher and prep cook, then became a line cook and finally a chef. In Taos he worked at Apple Tree and Sabroso before being hired by Martyrs Steakhouse a year ago. The current menu at Martyrs features seasonal seafood and the restaurant’s signature tender steaks, but Farkash’s style goes well beyond grilled meat. In fact, he said, it is “very eclectic.” He considers himself a fan of fusion cuisine. “I like to make Thai, Korean and Mexican food,” he said. “I also love French cuisine, of course, because that’s where many old-school techniques

But if I had to choose, I’d probably go with French and Japanese fusion cuisine because it’s both tasty and beautiful.” Since the visual appeal of a dish can be as important as the quality of the ingredients, presenting food in a beautiful manner is one of Farkash’s main goals as a chef. “I enjoy creating food that looks as good as it tastes,” he said. “Presentation is very important, more so in a nice setting like the one we have at Martyrs Steakhouse.” Another goal he has is catering to his patrons’ dietary needs.

The ingredients he uses are about 90 percent gluten-free. “We now have rice flour tempura and rice flour pasta and there is always a vegetarian or vegan dish available,” he said. “I follow the same rules for them — they must be both attractive and healthy.” Farkash is also willing to create individualized dishes when people ask for them. “When a patron feels like eating something in particular and I have the ingredients, I’ll make it, though it may slow down things a bit,” he said.

“I try to stay inspired, not tired,” he said. “And I do my best to stay positive too. When everyone in the kitchen is happy, when there is a good flow, the food comes out better.”

“We have a lot of hardworking individuals, detail-oriented servers and, above all, great creativity going on in the kitchen,” he said. “We also use the finest ingredients we have and keep things interesting. I honestly think this is one of the best places to eat in Taos.”

Among his many culinary inspirations Farkash cites his own Hungarian heritage. “My grandma used to make these wonderful Hungarian dishes with lots of dumplings and paprika and I learned to cook them from her,” he said. “Chicken paprika with dumplings is one of my favorites.” Farkash’s wife, Ana Rugelio, is from Mexico and also an inspired cook.

That’s the reason why his family comes here quite often. “And then I can see them,” he said. “A big challenge in a chef ’s life is the long working hours we all have. I work between 50 and 60 hours every week, and that includes holidays, when I can only be with my family at night. But I love what I do and having satisfied clients makes it all worth it.””

Walking into the cozy side room bar of Sabroso Restaurant and Bar in Arroyo Seco on a Wednesday night is like stepping into an Old World living room. Folks sit on overstuffed couches around thick wooden coffee tables, sipping beverages and munching while local favorite Jimmy Stadler sings an Elton John tune, lost in the song like the Piano Man himself. When an unsuspecting newcomer, i.e. me, walks into the place, people glance and smile, knowing looks on their faces.

Over the near-decade that Wooldridge has been the restaurant’s executive chef and manager of operations, mixing hearty-withgourmet and hometown-with-high-class has become this seasoned professional’s signature stamp. For Wooldridge, who once trained with former White House pastry chef Roland Mesnier, and who himself served as executive chef at both the Marriott and Hilton hotels in his hometown of Washington, D.C., hands-on cooking, flavor

“... no one else has a wood grill in town.” “Ah yes,” they seem to say, “The work-aday world. I knew it once. Give her a few minutes, however (and one of those super fresh-squeezed margaritas that are a Sabroso’s specialty) and she’ll forget all about what went wrong at the office.” Besides the cozy atmosphere and, of course, Stadler every Wednesday, a glance into the restaurant’s moderately sized kitchen reveals Sabroso’s silver bullet — a 1,200-pound ceramic wood-fired grill that takes up a large portion of the kitchen’s north-facing wall. Most of Chef Timothy Wooldridge’s cooking is done right there. Applewood is his preferred fuel. “[Applewood] burns very hot so it sears the meat really well on the outside,” explains Wooldridge, who grills everything from hamburgers and filet mignon to fish and poultry on the massive unit. “The grill heats up to about 700 degrees when it gets going and gives [meats] a unique, smoky flavor ... no one else has a wood grill in town.”

consistency and building relationships with patrons and suppliers alike are priorities. This includes, of course, growing some of his own herbs and veggies in the restaurant’s garden, picking Greengage plums from Sabroso’s patio grove for specialty sauces and jams and buying locally whenever possible for the restaurant’s lively, rotating menu. “My lamb comes from El Rito and my beef and poultry come from Colorado,” says Woodridge. “I get my striped bass from a friend who grows it near Alamosa. His operation, [Colorado Catch], is totally sustainable. I drive to the farm and get it fresh.” And for Wooldridge, whether it’s cooking up scrumptious meals in the restaurant’s kitchen, picking parsley and other herbs out back or taking a little R ’n’ R time to ski, having fun is the secret to this chef ’s success.

“I smoke my pork ribs in that (smoker), my bratwurst (Wooldridge makes his own) and my bacon. I also smoke fish and all kinds of stuff,” Wooldridge says proudly. When it comes to specialties of the house like those fall-off-the-bone ribs or Wooldridge’s crisp and slightly-spicy calamari strips, Sabroso’s is a meat-lovers paradise (although vegetarian options are available).
