Though owner and chef Jennifer DeBow has been a part of the Taos restaurant scene for many years, it wasn’t until two years ago that she and her husband, builder Genaro Jimenez, took the plunge and built in their current location, giving her a sprawling kitchen in which to make her magic while offering customers cozy indoor and breezy outdoor seating areas. DeBow, after all, grew up on Long Island and fondly recalls the many Italian meals of her youth. “But here’s the thing — though Italian can be haute cuisine, the best memories come from the comfort of a good pasta or a great slice of pizza from the neighborhood shop,” she said. “I’m very nostalgic about this food and in developing our menu, I sought to re-create those memories. Every dish we offer reminds me of my favorite dishes and restaurants.” Let yourself adopt those memories as your own as you swoon over the tastes, smells and ambiance of Mondo Italiano. That, after all, is what DeBow wants you to do. “As much as my food is personal to me, I want to make it personal to you, too.” And she has set the stage well for you. Once you’re greeted and seated, take in the funky overhead lighting, the retro serving

area, the de rigueur red-and-white checked tablecloths, the flickering candles. You’re on Little Italy’s Mott Street, ready to enjoy your culinary journey. Begin your dining experience with Taos Fire House wings, prepared using the original recipe from the Bellissimo family at the Buffalo, New York, Anchor Bar. “Our wings are fried and then covered in butter and cayenne pepper sauce, and served with a side of carrots and celery sticks with either blue cheese or ranch dipping sauce,” the native New Yorker noted. Or maybe you’re hankering for some calamari fritti, fried Calabro mozzarella sticks or garlic toast. In a nod to her adopted New Mexican home, you’ll also find jalapeño poppers and fried avocado amongst the offerings on the enticing appetizer menu. Ready for the main event? Dig into a plate of luxurious fettucine al fredo, its sauce of heavy cream, egg yolk, Parmesan and nutmeg elevated beyond these simple ingredients into pure heaven. “It’s definitely our bestseller and can be enhanced with the addition of chicken, shrimp, ahi tuna or Norwegian salmon,” said DeBow. Equally delicious carbonara and primavera pastas are available, as are your favorite baked dishes such as eggplant or chicken Parmesan, lasagne bolognese and baked manicotti. Maybe you want to keep it simple and just order some spaghetti and meatballs. Mondo has you covered on that, as well. If it’s seafood you’re craving, DeBow’s contacts in the food industry ensure you’re getting the freshest. A lush shrimp Bruno — shrimp that’s been lightly floured and sautéed until golden, and finished in a lemon and white wine Dijon mustard sauce — is another of DeBow’s favorites. “Shrimp Bruno was made famous at the Palm Restaurant in New York City,” she recalled. “This recipe has shown up on menus around the world and ours is the original, and we think the best second only to the Palm’s.” If you’re not drooling by now, don’t worry — there’s even more on this extensive menu including salads, sides, heroes (that’s New York-speak for a hoagie or a sub) and, most recently, a changing menu of juicy half-pound Angus steak burgers that will satisfy the most devoted meat eater in your family. Then, of course, there’s pizza. Chicagoans may argue the point, but there’s nothing like a New York slice with a tender yet sturdy crust that lets you fold it and eat it the New York way while still corralling all those toppings you couldn’t resist adding. No forks or knives necessary here; in fact, they might be heresy. “Our pizzas and calzones are hand-rolled and made-to-order,” said DeBow, noting they offer dozens of toppings and selections of cheese from which to choose. “A large pie with multiple toppings may take 25 minutes to prepare and bake, so if you’re eating in, then enjoy one of our appetizers or salads while you wait. If you want to take out, or just want your pizza ready when you get here, then we welcome you to phone in your order. “And if you have special dietary needs, please let us know,” DeBow added. “We have gluten-free and vegan options throughout the menu and will gladly accommodate your requests.” With your meal you’ve probably enjoyed a selection of craft beers, exclusively Italian wines and wine cocktails, but now it’s time for an espresso and dessert including such standards as cannoli di ricotta, New York cheesecake and tiramisu. However, Mondo’s gelato shop may be what ultimately tempts you with its two dozen creamy, dreamy flavors and a toppings bar with all your favorites. The choice is yours and DeBow certainly doesn’t apologize for making it hard to choose. “This is as close as I can get to giving locals and visitors an authentic peek into the best of New York’s Italian cuisine,” DeBow smiled. ‘Howdy neighbor’

Taos Diner is a must-do weekly for locals and sometimes a daily stop during visitors’ stays. This longtime Taos staple has a family atmosphere that welcomes all comers with open arms and “howdy neighbor” camaraderie. The food is exactly what you’re hungry for any and every day of the week. It is the go-to place for all your special needs – particularly helpful for travelers trying to stick to their diet regimens. Got celiac issues? There are two Taos Diner locations and both have the same menu including lots of gluten-free options, such as the red or green chile, pancakes and bread. Really unbelievable, but true. Just ask for gluten-free. Vegetarians and vegans can find a number of plates at the diners, so everyone has plenty of choices. Dropping the potatoes and toast? Just ask to substitute fresh or steamed veggies to round out your meal. You’ll feel well taken care of and walk away “full, full, full,” as one happy Yelp reviewer put it last winter. If you’re thinking about heading out to the gym or maybe going skiing or hiking first thing in the morning, fuel up and kill hunger pangs with a delicious, steaming hot bowl of pecan and raisin or cranberry walnut oatmeal. The house chai will thrill you all over as well as the lattes and cappuccinos – perfect to help brave the elements. Probably most important to both visitors and locals is owners Annie Powell and Jay Powell’s commitment to serving humanely bred and processed animals such as locally sourced beef from West Best in Jaroso, Colorado and Larry Roybal in Cerro, New Mexico; Kyzer pork; organic-fed, freerange local eggs; and duck eggs from Three Guys Farms in Monte Vista, Colorado. Big sellers are the giant breakfast burritos smothered in red, green or

Christmas (the New Mexican favorite featuring both red and green chile sauce side-by-side). They are stuffed with meat of choice, scrambled eggs and home fries, which many folks halve, taking the rest home for later. Also bestsellers are the generous buttermilk biscuits that come with everything. Other favorites are the Charles Breakfast Burrito (named after a local 18 years ago) or Copper John’s Eggs (named after copper artist John Nettles). But hands down, the homemade corned beef hash is by far one of the most popular plates. Try pairing it with eggs overeasy and mix it all up. Delish! Frequently chosen for Best of Taos awards the Taos Diner I at 908 Paseo del Pueblo Norte, was originally bought by the Powell’s in 2004. Taos Diner I is located on the north side of Taos, a couple driveways from the Taos Pueblo traffic light on Paseo del Pueblo Norte. Taos Diner II opened in 2010, at 216 Paseo del Pueblo Sur on the south side of town, just up from Smith’s Food & Drug. Both places serve breakfast, lunch and brunch, from 7 a.m. to 2:30 p.m. every day of the week. Annie Powell maintains the diners’s popularity is, of course, the great food but more than that it’s the employees. “They’re the rock stars over there. They pretty much run the whole thing,” she said. Taos Diner I’s longtime favorite employees include Robert Lujan (a waiter who started 14 years ago, when he was 13), and Kristin Gossner, who’s been there 17 years – “Forever. It’s embarrassing,” she said of being a fixture at the original Taos Diner. Gossner’s son, Victor Jacquot, just started bussing and is a bright and shining addition to Diner I. Lujan likes the Diner because of the good vibe and the fact you can order anything you want from good ’n’ greasy to healthy and organic. Another big plus at the north side Diner I is Annie’s Taos Market located next door, featuring a wide range of organic and locally sourced meats and produce. Employee Melissa Winters at the southside Taos Diner II said the food is fab. “I not only work here, I eat here,” she said happily. Besides organic coffees on tap in both Taos Diners, you’ll also find cold brew coffee. A few years back they added homemade kimchi and Dragonfly baked goods from the ovens of everyone’s favorite local baker Karen Todd. But that is not to diminish the popularity of Priscilla “The Cinnamon Roll Lady” Marcus’ gigantic cinnamon rolls. (Lujan swears Priscilla is his grandma — she said she’s everyone’s grandma). If you are looking for an elegant and delicious way to warm up, stop by Donabe Asian Kitchen in downtown Taos on Paseo del Pueblo Norte next to the Taos Inn. The curries and other delights are spicy and sweet enough to heat up the body and soul on a cold winter night. Located in an historic abode, Donabe is one of the newest additions to the Taos restaurant scene, taking Asian cuisine to a new level of freshness and sophistication. Why Donabe?

The word Donabe means earthenware pot in Japanese. Donabe chef and managing partner Marshall Thompson founded Marshall’s Great Noodle Stand at the John Dunn House Shops 11 years ago. He has carried favorites from the noodle stand into the new brick and mortar restaurant and expanded into new types of cuisine. “We were looking at the style of food we wanted to do, and all three partners, including Chris Bogden and James Gerken, picked up on the interest in hot pot meals. At our noodle stand, we did more Thai-type stir fries, but at the restaurant, we are focused on Japanese/Korean. We rely on local potters from Paseo Pottery to provide us with beautiful pots that enhance the beauty of the food.” Donabe is committed to using every local resource possible, including pottery. Because some of their authentic food ingredients come from far away, like the rice noodles from Thailand, the restaurant owners are always looking for ways to offset their carbon footprint. Cooking in earthenware pots connects the restaurant to the history of local food. Thompson explains that ceramics have always been important here as a tool of cooking. Historical approaches are appropriate as Donabe is located in one of the oldest surviving buildings in Taos. It was built by Arthur Manby, a notorious figure in Taos’s history of the late 1800s who met a gruesome end. “There might be a ghost floating around,” says Thompson. “Some of the staff have noticed things that seem unexplainable.” 64

The word Donabe means earthenware pot in Japanese. The historic adobe with its thickly plastered adobe walls offers the perfect backdrop to present some of the oldest cuisine in the world. The wood floors add atmosphere to the restaurant that opens to two outdoor patios used for warmer weather dining and connect the restaurant to the Stables Gallery and Taos Center for the Arts. The space continues to evolve with gorgeous art on the walls. Just like the food ingredients the art is local, representing prolific local artists from the collection of Gerken. Delicious tastes

On a recent visit, the red curry was pleasantly spicy with complex layers of flavor. Like many of the dishes, it can be made gluten free using rice noodles. The spring rolls with shrimp were fresh and served with chile sauce for dipping. There are savory sandwiches like the tender pork loin (pork bánh mì) that come with fries and spicy sambal sauce. The staff is polite and professional; our bartender came by to see if the mojito made with sake and champagne was to our liking. Unique in the Taos food scene

Since opening a year ago, Donabe has gained a reputation for offering local, creative Asian-inspired food. Everything is made to order using local ingredients from sources like Salazar Meats, Mendez and Copper Pot Farms. “Eleven years ago, I went shopping at the Taos Farmers Market for ingredients for the noodle stand,” says Thompson. “I tried the locally grown carrots and was blown away by how much better they tasted having been harvested fresh from a nearby farm. We started using local ingredients and the menu grew organically.” That commitment to use local ingredients has blossomed at Donabe, and almost all of the food is made from scratch. The appetizers and meals often include a local twist, using not only Thai red chiles but also local green chiles and jalapeños from the farmers market. “That is what TAOSMENUS.COM

elevates the food at Donabe beyond the typical Asian food choices,” says Thompson. “Fresh local ingredients create elegant and interesting dishes.” Some people say that the chicken wings are the best in town. Another local favorite is the build-your-own bowl, allowing you to customize your meal to include your favorites — a generous portion is presented in a pottery bowl. The foundation of the bowl is a choice of noodles or rice, which is topped with a choice of coconut, beef pho, chicken or vegetarian broth. Next is the protein with chicken, pork, shrimp, beef, soft-boiled egg or tofu. The dish is finished with roasted veggies, steamed greens, cucumber kimchi or a variety of other veggie and nut toppings or a chicken gyoza dumpling. The menu changes seasonally, featuring a new dinnertime ramen as the year moves from winter to spring. Look for new choices including a local yak steak. Community support for the journey

“It’s been a journey from the noodle cart to creating a full restaurant,” says Thompson. “People have really responded to our local choices and our commitment to make food from scratch.” This is Thompson’s 16th winter in Taos. Since he showed up with two suitcases and little more, the community has embraced him and his exploration into creating unique and delicious food in Taos. Thompson has worked hard and brought everything he’s learned to the journey and is grateful that the community has responded with love and support.
