PUBLISHERS NOTE

New Orleans is well known for Bourbon Street, Cajun cuisine, and debauchery. After a recent visit, I have to admit that I was able to partake in all three categories. As age has started to drain my endurance, however, I have become more interested in seeking out the local legendary restaurants than I am in being herded up and down the Bourbon Street bar scene. I haven’t been to the Big Easy in twenty-five years and wasn’t sure what to expect after the wrath of Katrina, but was pleasantly surprised to see it thriving. And yes, I did visit many fantastic restaurants, some of them world famous and all meeting expectations and living up to their billing. On the way back to the Island, I couldn’t help but think of what a good time we had and how many great meals my family and I enjoyed together. Another thought hit me as well. Our hometown, little Hilton Head Island, measures up to anyplace in the country, even historic New Orleans, for food aficionados. Publishing a food and beverage magazine requires my spending a lot of time at a vast number of restaurants and lounges, both for work and for pleasure. I know. Tough job, right? Anyway, spending this much time on both sides of the F & B industry gives you quite a perspective on the quantity and quality of the restaurants and lounges on this 12 by 5 mile island. While I may be a little biased in my praise of the local restaurants for both variety and taste, I think it is obvious to both locals and visitors that our Island establishments can go toe to toe with any area of the country and feel good about how they stack up. So venture out this spring. Enjoy one of the 250 plus dining establishments that dot this beautiful Island and experience a Taste of Hilton Head. Who knows? If this keeps up we may earn our own nickname.

When you’ve honed a winning recipe, you must resist the temptation to further tamper with the ingredients. This is the philosophy of partners Peter Kenneweg, Chuck Larson, Eric Spector, Tom Reilley and David Reilley who have 8

shared their winning recipe for an incredible Island dining experience at The Crazy Crab for more than 29 years with residents and vacationers at two locations on Hilton Head. According to them, the recipe for

success has been offering a broad menu of fresh, delicious locally purveyed seafood at great prices with consistently friendly service in two breathtakingly scenic restaurants. “Both locations have the same


menu, same casual family atmosphere and hours. We have basically any kind of seafood that you’d like – just about any type of fish, and you can get it broiled, steamed, grilled, blackened or fried,” said Larson. “Crab legs and steam pots are great sellers for us.” The Crazy Crab’s steamed seafood pot contains a seafood feast with onehalf of a Maine lobster, shrimp, Snow Crab legs and oysters served with a baked potato and corn on the cob. The lunch and dinner menus offer a wide variety of locally purveyed and seasonally available seafood including: flounder, crabs, scallops, shrimp, oysters, lobster and grouper cooked to your preference. For seafood lovers yearning to try something new, The Crazy Crab’s menu contains a glossary of more than 20 seasonally available fish that you really don’t see offered at other restaurants that includes: Redfish, Sea Trout, Swordfish, Sea Bass, Sheepshead, Cobia, Wahoo and much more. These unique selections are typically offered through daily menu specials, so diners to The Crazy Crab are often greeted with a pleasant surprise every time they return. Most entrée selections are served with a vegetable and baked potato or rice and an additional selection of side items are offered ala carte as well as salads, She Crab soup and New England Clam chowder. For those looking for menu selections other than the seafood variety, steak and chicken are included on the dinner menu and a wide selection of sandwiches and salads are offered on the lunch menu. The kids are sure to be pleased with the food at The Crazy Crab with a mix of seafood favorites like shrimp or fish and chips mixed with sure bets such as pizza, hamburgers, macaroni and cheese and hot dogs. In addition to a great meal, the kids are sure to enjoy the family fun mixed into the experience at The Crazy Crab with playground areas at both restaurants to enjoy before or after eating. And during the summer months, the staff at Jarvis Creek organizes crab

races on the patio for the kids. The partners were quick to credit their loyal and experienced staff that have been key in providing the quality and consistency in product and service they strive to deliver. “We’ve been fortunate to retain many of our staff for many years,” said Spector. “Many of our staff members have been here since day one,” Larson added. For value conscious diners each location offers Early Dining and Happy Hour specials from 4 to 6 p.m. daily. A recently pleased visitor quoted on TripAdvisor, “Our friends brought us here while visiting Hilton Head. We were seated by a window with a beautiful view. Our waitress was very friendly and knowledgeable about the items on the menu and did a great job answering questions we had. The seafood was fresh and well prepared. Check out their early bird specials. Portions are generous and the prices are reasonable. The she crab soup was rich and delicious! We are definitely returning here the next time we visit. Thanks for a great experience!” The Sea Pines location in the heart of Harbour Town offers diners the opportunity to be near shopping and entertainment happening throughout the summer and the pleasure of viewing the boats moored in the harbor as well

as Harbour Town’s 18th hole and iconic lighthouse. Larson noted that spring and fall are great times to visit The Crazy Crab as yachts traversing the coast make their way into the harbor to enjoy Hilton Head hospitality. Each evening is highlighted by a memorable sunset over the beautiful Calibogue Sound. The Harbour Town restaurant’s pinnacle annual event is the RBC Heritage Golf Tournament. The Crazy Crab offers the ideal location to relax and refresh after following an exciting day of PGA golf. Larson added that if your timing was fortunate, you might be able to rub elbows with a tournament competitor at their bar. The Jarvis Creek location features equally memorable sunsets and quieter more natural vistas over the marsh of Jarvis Creek. Bird watching is easy from the outdoor seating at the rear of the restaurant with views of Heron, Osprey and occasionally Bald Eagles. Diners are also treated to sightings of dolphins swimming in the creek. The quiet serenity of the atmosphere at Jarvis Creek reveals no trace of the tragedy of a fire that destroyed the original building in 1995. But the partners agreed that a devastating loss can turn into a triumph with optimism and perseverance. The new building that more than doubled the restaurant’s seating capacity, with a raised deck opening up the views and now offers more outdoor seating along the quiet marsh views of Jarvis Creek. “We reopened with a bang in February 1997. About 1000 people came to our Open House party. We have been busy since then,” recalled Kenneweg. Hours for both locations are 11:30 a.m. to 10 p.m. 7 days a week. “So, where do the locals go?” This question is asked countless times a day by visitors looking for the best places to eat, drink and be merry on Hilton Head. Generally off the beaten path and found by word-of-mouth, homegrown favorites offer a place to unwind with good food, cold drinks and an inviting atmosphere. It’s no accident that the DryDock Seafood, Grill & Spirits, tucked away in the Sapelo Building on Office Park Road, has all of these ingredients. 12

Born and raised in Philadelphia, owner Rob Arbogast began his long career in the hospitality industry at the tender age of 12. A family friend owned a boardwalk stand in Ocean City, New Jersey, and Rob spent a summer bussing tables and picking up recyclable bottles on the beach. While a student at Villanova University, he was “The Cheese Steak Guy” at The Corner, a campus sandwich shop and pizza place affectionately known as “The Crotch.” Later, he ran a TGI Friday’s in Fort

Lauderdale before heading up to Hilton Head Island in 1981 to open the Player’s Club Restaurant. Now a fitness center, he met wife Vickie at this local hotspot in 1993, right before it closed. Hired to develop and manage the original Boathouse and Marker 13 in 1987, Rob also spent a decade running fishing charters on his boat, The Sassy Lady. Tired of working for other people, he decided to open the DryDock in 1994. “Hard to find, but worth it,” this Island institution moved to its current,


yet still well-hidden, location near Park Plaza in 2009. Thanks to favorable online reviews and an emphasis on “fresh seafood, cold drinks and good times,” the DryDock kept its strong local following, while attracting a new crowd eager to try something different. As business took off, Vickie left her 25-year career in the mortgage industry to manage the restaurant. Overseeing the longtime staff, the Charleston native now spends her days waiting tables, wrangling wayward children, taking reservations and to-go orders, booking groups and providing directions. Open daily for lunch and dinner, patrons can enjoy reasonably priced, made-to-order dishes while seated on the outdoor deck, in the cozy, nautical-themed main dining room or in the private, 20-seat party room. Sports fans can claim a spot at the spacious indoor bar and lounge area to catch the game on one of several flat screen TVs or head to the outside bar. A large aquarium, shuffleboard table and assorted video games provide plenty of entertainment for the kids before or after their meal. In the kitchen, Chef Al Howard stays busy preparing the extensive menu of fresh seafood specialties and upscale tavern fare. Lucky 7 Lunch Combo Specials are available from 11:30 a.m.-2:30 p.m. with a selection of seven signature sandwiches, such as smoked BBQ, Philly cheese steak or grilled chicken, as well as garden salads and seafood baskets accompanied by homemade dressings and sauces. Pattied by hand, the Certified Black Angus hamburgers are considered by many to be the Island’s best, especially when topped with Rob’s own ketchup. From an array of appetizers, soups and salads to sandwiches, pizza toppings and entrees, seafood is the star of the show at the DryDock. Starters include She Crab Soup and Lowcountry Fisherman’s Stew, plus Hot Shot Shrimp, bacon-wrapped

blackened scallops, fried calamari and garden or Caesar salads topped with grilled, seared, fried or blackened ahi tuna, shrimp, grouper, scallops, mahi mahi or chicken. The Fish & Chips basket with handbreaded grouper is always a top seller or try a shrimp, oyster or clam Po’ Boy served on a hoagie roll with a side of tartar sauce. For heartier appetites, the DryDock Steampot includes a cluster of snow crab legs, two Jonah crab claws, mussels, clams, shrimp, smoked sausage, corn on the cob and coleslaw for less than $25. Make it a double and share the platter for under $45. Can’t decide? The Fin Fish and Shellfish Dinner offers a choice of grouper, mahi mahi, yellowfin tuna, shrimp, oysters or scallops prepared broiled, grilled, seared, blackened, Caribbean jerk or fried. On the other hand, the DryDock Fried Seafood Platter includes shrimp, scallops, oysters, clams and grouper served with coleslaw, hushpuppies and French fries. Bar pizzas, Grover’s Fries topped with blue and feta cheese, crumbled bacon and balsamic reduction, Stockyard Dinners of smoked BBQ baby-back ribs and hand-cut NY strip steaks round out the diverse menu offerings. “Hilton Head’s Home” for the

University of Michigan Wolverines (thanks to Turtle, the bartender), as well as the Miami Dolphins, the Philadelphia Phillies and the New York Yankees, Rob is quick to note that if you’re spending money in his place, he’ll find the game you want to see. Happy Hour deals are offered from 4-7 p.m. and the DryDock is the perfect place to watch March Madness, Major League Baseball, professional golf and other sporting events, indoors or out. The outside deck is a huge draw when the weather is nice and you’ll want to make plans to attend the annual St. Patty’s Day bash featuring Rob’s famed corned beef and cabbage accompanied by live music. Every Friday night for the past 8 years, Ritchie Dryer and Steve Richard have been rocking The Big Bamboo Cafe with Beatles tunes. They play Beatles and only Beatles to a crowd of all ages that relishes every note of these timeless classics. Both Ritchie D and Steve were playing in other bands years back when Tristan O’Grady, owner of The Big Bamboo Cafe, came up with the brainstorm of having a Beatles night. They dropped the "t" and added a "g" and thus the Beagles (also named after Ritchie's beagle) were born. It’s not hard to see why Tristan chose Beatles music, as the foursome are arguably the most commercially successful and critically acclaimed band in the history of music. Everyone knows the words to their unforgettable tunes like “I Want to Hold Your Hand”, “Eight Days a Week”, and “She Loves You” just to name a few. Ritchie says that while the kids love when they play “Yellow Submarine” (albeit not the musicians’ favorite one to play), some 20

other popular requests are "While My Guitar Gently Weeps” and “Norwegian Wood”. When the crowd wants to sing, they like “You’ve Got to Hide Your Love Away” and when they want to dance they prefer the earlier, faster tunes like “When I Saw her Standing There." He attributes the success of the Beatles to many things: "They wrote and created great music that pushed the boundaries of popular music in many directions that had not been done before. They were also good musicians and showmen and came along at the right time." When the Beagles started up, Ritchie and Steve knew most of the music so transitioned into a Beatles band with ease. They take up the roles of John, Paul, George, and Ringo admirably. Both musicians sing and play acoustic guitars and they occasionally bring in a drummer and bass player to add to the mix. Like the Beatles, the Beagles play everything from ballads to psychedelic rock. “We usually start the evening off

with mellower songs as the crowd tends to be families and early birders. As we transition into night, we will play the faster, older songs like Sergeant Pepper,” explained Ritchie. "We tend to play more early Beatles probably because those songs are more easily reproduced using only two vocals and two guitars." Like most musicians on the Island, Ritchie and Steve have played with a number of other bands over time including White Liquor, a local Rolling Stones band. When not playing the roles of John, Paul, Ringo, and George, they like to listen to and play mostly rock, but also jazz, country, blues, and classical. When they are not entertaining, they both have “day jobs”. “Friday night is really our night to go out and have some fun. Otherwise we may be home on the couch,” laughs Ritchie. On a cold and rainy winter afternoon, Tina Chestnut-Wingo sat with me by the fire at the Kingfisher Restaurant and talked about her life and her job. “I joined the Kingfisher 7 years ago as a bartender, but I wear many hats here – bartending, serving, tending to the plants and flowers, and taking care of my ‘family’ here at the bar,” she said with a smile. She is a person who never meets a stranger. Tina came to Hilton Head 28 years ago from Bloomington, Indiana. “I grew up surrounded by farmland, and we rode motorcycles, dune buggies, and horses.” When she was 21, she and her sister Kim decided that it was time to see the world, and with only a few dollars between them, they set out in her red and white Chevy Vega for Hilton Head where they knew several people. “We arrived with only

$20 to our name and were fortunate to get hired immediately with a cleaning service, where we worked 10 hour days, at times, 7 days a week.” Since those days, Tina has bartended and served at some well known places – Jim’s Paradise, the Quarterdeck, and Wingo’s, to name a few. “What I like best about my job is talking to people who come in, some for the season and others at around the same time each year,” Tina said. “Every day is different, and it’s a close atmosphere.” “My parents, Glenda and Larry Chestnut, come down to the island for the winter months - January, February, and March - and have been doing so for years,” Tina said. “They come into the Kingfisher in the evenings when I’m working and visit with friends they have made over the years who also

visit in the winter.” “To be successful at my job, I have to be a quick thinker and a good listener. I truly love talking to people and hearing their stories. And I have a few that I share with them as well!” When she’s not working, Tina spends time with her family's pets 6 dogs and 8 cats. “Obviously I love animals!” Tina said. “I love to garden and spend a lot of time doing it. And I love golf and other outdoor sports!” When asked what job she’d want if she could have any job in the world, Tina replied without hesitation, “This is it; I love what I do!” And she does it well. Herb Britton, Executive Chef at the Salty Dog, started in the restaurant business as a dishwasher at the age of 15 with the Chart House Restaurant in Annapolis, Maryland. He worked his way up to the kitchen, and was promoted to kitchen manager. That experience confirmed that he wanted to be a chef. Herb graduated from Baltimore International Culinary College. “I worked with some great chef instructors,” he said, “I grew up on the water, and found through experience that preparing seafood is my strong point. But I love cooking anything and everything!” “I came to the island in 2001 to work with Steamer Seafood, spent a little time at 211 Park, and soon found my way to the South Seaport Café, which later became the Wreck of the Salty Dog. I’ve been here for 11 years.” “My favorite dishes,” Herb said, “are seafood-related and regional. I have to brag that my crab cakes and my shrimp and grits are the best!” Herb has won the chili cook-off more than once, so it’s obvious that he is exceptional at preparing dishes other than seafood! 40

“I do all the cooking at home, and my wife Melanie and 9-year-old son Cole are my best recipe testers,” Herb said, “and we keep the recipes pretty simple. I like to cook using my smoker to prepare dishes that take more time, like pulled pork.” “In the warmer months, you can usually find me, with my family, in the pool or at the beach. I love to golf, fish,

and take my son crabbing.” “What I like best about being a chef is seeing people enjoy something that I have created. Talking to guests and meeting people through the food you have made is a great feeling.” Herb loves living in this area because of the proximity to the beach. “Working on the island, right on the water is the best office I could think of!” Herb agreed to share an uncomfortable or frustrating experience he’s had in his career. After thinking, he relayed the following. “When I was the grill cook for a restaurant back home, I had a gentleman that would come in every week and ask me to cut his New York strip steak right in front of him, grill it to medium, and make sure that it rested 10 minutes before serving it to him. A lot of times he would insist that I be at his table when he cut into it, to make sure it was cooked to perfection! I wanted to strangle this guy! In retrospect, I think that this experience actually made me a better cook because I never wanted the steak to be sent back.” The Salty Dog is located at the South Beach Marina in Sea Pines. Ah the spring. It is the season that everyone welcomes with open arms. As the warmer weather blows in, the tulips begin blossoming and the birds break into song. As we open our windows and embrace the sounds and scents of spring, the farmers are also excited as they can start to harvest their beautiful bounty of fruits and vegetables. It is market time and we are blessed that we have two fabulous ones in our Hilton Head and Bluffton backyards to visit every week. That they are both organized and run like well oiled machines is another feather in our cap. While they don't sell pigs or hogs like the Nursery Rhyme of old, their tables are laden with plenty to entice you. Farmer’s markets are one of the oldest forms of direct marketing by 42

small farmers. Their origins can be traced back 5,000 years to Egypt where farmers along the Nile brought their fresh produce to be sold. Now they are everywhere from the traditional “mercados” in the Peruvian Andes to the unique street markets in Asia. The largest market today can be found in Tokyo where there are 1,700 stalls. In America, informal markets have been around since the early settlers in Jamestown. The popularity of farmer’s markets has taken hold and researchers project a steady increase in numbers at 10% a year. What is driving this surge in popularity and can it sustain itself and the farmers? To use the old cliché that famer’s markets are a win-win is quite apropos here. Benefits are seen by all: farmers, consumers, the environment,

communities, and local economies. By cutting out the middleman, farmers see higher revenues and get direct feedback from customers. The consumer benefits by learning how the vegetables are grown or the meat produced and they have an improved diet through nutrition from fresh foods. The environment wins too as there is less packaging, fewer road miles, and with the emphasis on organic, the land fights fewer pesticides. The community and economy find an influx in numbers on market days and the money remains local. Best of all, farmer’s markets are a social haven which is food for your brain and they are kid friendly which is a great way to get your children excited about all the fun (and healthy) things they can eat. The Bluffton Farmer’s Market is in


their 5th season this spring with a Grand Opening on March 21st. Calhoun Street, in downtown Bluffton, will be transformed every Thursday into a bustle of booths brimming with our lowcountry’s yield. Area farmers will proudly sell their harvest and vendors will sell sweets and tasty treats. Kim Viljac, who runs the Bluffton show, said, “Whatever is local is welcome.” She described the Bluffton market as focused on agricultural and edible. “We don’t get into the arts and crafts because the streets of downtown Bluffton are lined with galleries and shops.” The Bluffton market got started when a number of people came together and wanted to create a local, non-profit organization that would benefit the community by bringing healthy and local to Bluffton. Aside from the food, the Bluffton market has live entertainment and every week they pair with a different local non-profit organization ranging from pet adoption to Alzheimer’s to Pink. They have tents with healthy outreach programs that cover the gamut including health screenings, how to choose organic vegetables, how to shuck oysters, and how to prepare and consume the products sold at the market. They also have children’s activities on select dates for the “Little Growers”. The Bluffton market famers represent three different soil categories: organic, naturally grown (organic but not certified), and traditional. Feel free to ask them about their growing practices as you feast your eyes on their red beets and radishes, the leafy greens, collards, cilantro, and onions. As it gets warmer and later into spring, the beans, peaches, blueberries, broccoli, corn, squash, tomatoes, and zucchini will be sold. Other agricultural products available besides fruits and vegetables include honey, eggs, and grass-fed beef. For those whose stomachs have been tempted, local vendors will sell seasonal delicacies like blue crab,

gumbo, she-crab soup, and shrimp. Kim suggests that first time market-goers stop by the welcome tent to learn the lay out, find out about specials and events, and buy market merchandise like a shopping bag if needed. Finally, she added that it helps if you do research and ask questions of the farmers: “How do I know when my tomato is ripe? Does this freeze? My collards are bitter; what can I do?” When you wake up Friday morning feeling all refreshed and healthy from the good food you ate from the Bluffton market, you can venture off to the Farmer’s Market Hilton Head Island at Honey Horn to put more fresh and local on the dinner menu. Spend the morning at the beautiful venue of Honey Horn Plantation where you can browse, chat, sample, and become educated. In its 3rd year, the Hilton Head market was the brain child of Pamela Ovens and a friend. “We wanted to start a farmers market for our community that did not take monies from grants or the town.” Pamela and her husband set up the tables at the wee hours on Friday mornings in anticipation of the arrival of the famers and vendors with their flowers, preserves, breads, pies, seafood, and produce. Pamela said that most of the same vendors from past years including the farmers, artisans, and even local authors will be returning and there will be some new kids on the block including Blondie the pastry chef and a woman who sells Greek Olive Oil. Their focus at the Hilton Head market this year is on organic foods. Most of their farmers are naturally

grown, organic, or learning to be organic. Jamie Vidich from Bear Island Farm has spent some time interning on an organic farm in Georgia this past year and Della and Sol Campbell who own the roadside stand on Spanish Wells Drive are now selling organic too. The process that a farm has to undergo to be declared organic is painstaking but worth the effort. The key is the soil which cannot be treated with pesticides. Pamela recalled the ecoli breakout a few years ago and said that was all caused because farmers were watering their crops from tainted river water. "That never would have happened with an organic farm," she said. Pamela offers some advice to market goers. "Number one is: don't overbuy. Everything looks so good that it is easy to take home more than you will use. Bring a basket or a bag to carry everything home in." She explained that all of the farmers around here are small scale and they all come themselves to the market. Ask them questions about their produce and ideas of how to use it on your dinner table. Don't be surprised if you rub elbows with some of our local chefs as many of them bolster their weekend menus with fresh fruits and veggies from the market. Both Kim and Pamela will tell you that one of the most unique aspects of attending a farmer’s market is the ATASTEOFHILTONHEAD.COM

opportunity to get to know the farmers and vendors who have rolled up their sleeves and worked their hearts out to bring to you the freshest and most delicious they have to offer. All of our local farmers accompany their produce to the markets. They are passionate about what they do and each has a unique story tell. Mary Connor, one of the triumvirates from Three Sisters Farm, described the process that a farm has to go through to be certified organic. First off, it takes three years before you get your actual certification. During that time, you have to demonstrate that you have not used any synthetic pesticides, herbicides, or fertilizers. You also cannot use any treated or genetically modified seed. “You have to keep precise records of everything you do, plant, and use, including dates,” said Mary. Your paperwork must be detailed and impeccable and will be reviewed before an inspector comes out and looks over everything from the soil to the water. Mary said the whole process makes farming more work and it is at a steeper price. Then why do it? “For us it is a viability issue. People who buy from us cannot come to our farm as we are not open to the public. Being certified organic gives our customers the certainty that they are buying what we say they are.” Aside from their spring assortment of lettuces, broccoli, greens, English peas, potatoes, onions, collards, kale, turnips, mustards, arugula, and squash, Three Sisters Farm has 10 acres of daffodils which they bring to market in early spring. The day before they go to market, the sisters are up at daybreak picking, washing, and refrigerating what they can. On market day, they are up at dawn again picking their flowers and then packing the truck. It certainly does not sound easy and in fact can get harder. “Sometimes you wake up in the morning on market day and a bug ate your food. Your whole market inventory is then off.” No one ever said that farming was easy. Pamela recalls that last year was a 44

tough one for farmers. “One of our farmers just pulled up in their truck one day and showed us how raccoons had taken a bite out of every one of their vegetables. The raccoons couldn’t just pick a few and get their fill, they had to ruin the whole crop,” said Pamela. Susan Brant, owner of Brant Family Farm with husband Don, can tell you many stories about the trials and tribulations of farming. After toiling over the soil for 6 years, The Brants have seen the ill effects of the weather, insects, animals, and weeds. "It can be treacherous," said Susan "We are on our 3rd type of fencing to keep the deer out and hopefully this will be the right one. We tend to believe it is in the Lord's hands. We chuckle every time we see something come out of the ground. We can plant the seed, but it takes the Lord's will for it to grow." The Brant's farm is certified naturally grown which means they follow the same practices as the certified organic, but do not have the USDA sticker. She expressed, "What we put in our bodies has a tremendous

effect on our health. With so many foods now being genetically modified, it really makes people think and pushes the scales toward buying organic." Like the Three Sisters, when the Brants set up shop at the local farmers markets they sell only what came out of their ground. The couple will harvest their produce the day before market to give them time to wash, prepare, and package everything. On market day, they are up at 5 a.m. to start loading the truck. "We look forward to market days and really enjoy the people," said Susan. She advises market-goers to look for cleanliness and freshness. "If you see something limp and tired, don't buy it. Also, if you see something that you think is out of season, ask where it came from." One visit to our farmer's markets and you will be hooked. You just can't beat the flavors and freshness and the camaraderie of the crowd is intoxicating. Pamela summed it up: "When you walk into the grocery store you have no idea how long those fruits and vegetables have been on the shelf. We are so lucky, because when you go to our market, you know everything was picked that morning. You can't beat that! On top of that we are like family and love what we do.” Just in case you have doubts about how much fun it is to visit a farmer’s market, you should google the “Bluffton’s Farmer’s Market flash mob”, where you can find a link to a video of a group of Sun City soul line dancers who rocked the market last fall. If you need a smile and a good laugh, definitely check it out. The Bluffton market is open every Thursday from 2 to 7 p.m. starting March 21st. On Hilton Head Island, the miles of white-sand beach, array of water sports, world-class golf and tennis, incomparable dining options and diverse shopping experiences usually receive top billing. However, the Lowcountry is also home to a vibrant and well-established arts community. Since 1996, the award-winning Arts Center of Coastal Carolina has showcased the talents of local, regional, national and international artists in a 45,000-squarefoot venue located at the entrance of Shelter Cove Harbour. From producing blockbuster Broadway musicals, comedies and dramas and presenting renowned performers, musicians and touring acts to hosting art exhibits, workshops and community outreach events, the Arts Center provides a diverse selection of entertainment and educational opportunities for all ages throughout the year. CHIX BISCUIT by Annie O’s

INGREDIENTS FOR BUTTERMILK BISCUITS 2 1/2 Cups flour 1 Tablespoon salt 2 1/2 Tablespoons baking powder 6 oz. Crisco 1 1/4 Cups buttermilk Mix first 3 ingredients, cut in crisco, stir in buttermilk, knead 4 or 5 times, pat out dough, cut and bake 12 minutes at 425 degrees. CHIX INGREDIENTS 4 Boneless, skinless chix breasts 1 Cup Texas Pete hot sauce 2 Cups buttermilk 3 Cups flour, seasoned as desired Marinate chicken overnight, dredge in seasoned flour, fry in 350 degree oil until internal temperature of 165 degrees.

SAUSAGE GRAVY INGREDIENTS 1 Pound fresh pork butt 1/4 Cup sage 5 Tablespoons granulated garlic 3 Tablespoons granulated onion 1 Tablespoon salt 1 Tablespoon black pepper 4 Tablespoons flour 4 Tablespoons oil 1 Quart milk Mix dry ingredients with pork, allow to sit overnight, grind meat, heat oil in heavy bottomed pot, add seasoned ground pork, when cooked stir in flour, cook 2 minutes, stir in milk, bring to simmer adjust seasoning, top fried chicken on biscuit, eat and enjoy. Serves 4

SHE CRAB SOUP by The Wreck at the Salty Dog INGREDIENTS 8 oz. Butter

2 Cups Heavy Cream

1 Carrot (Chopped Fine)

3 Cups Clam Juice

2 Ribs Celery (Chopped Fine)

1/2 Cup Sherry

1 Small Onion (Chopped Fine)

1 Tblsp. Crab Base

1/2 Cup Flour

Hot Sauce to Taste

2 Cups Half & Half

1/2-1 lb. Crab Claw Meat

A Food Journal Is Your Simple Ticket To

DIET SUCCESS BY CRAIG HYSELL

Changing the way you eat can often seem like an insurmountable ordeal. However, as human beings continue to prove over and over again, nothing is insurmountable given the correct amount of time, method and application. What’s the key to success when changing a diet for the long term? Patience. Small, incremental steps are much easier to manage than that “big leap” for most people. Baby steps aren’t as sexy as going “all in”, but they add up over time, and usually a lot sooner than we think. It’s like Abraham Lincoln once said, “I might walk slowly, but I never walk backwards.” Life is stressful enough without putting so much pressure on yourself to turn life 180 degrees immediately and expect it to stick forever. You’re not being fair to yourself.

So where should we start? Start with a food journal. Most of us have no idea what we are putting into our body on a daily basis. Keep a food journal for one week writing down everything that you put into your ol’ belly, including what you drink. The more you document, the more powerful the observation becomes.

Here are some quick tips:

What do you do after a week?

1. Be Honest. Write everything down. Everything. That’s the point. Who cares if you had pizza, ice cream, and a bottle of wine in one sitting? This is not a tool with which to you (or anybody else) will be using to judge you, this is only to assist you in making better diet decisions in the future. Be truthful or you are wasting your time.

Well, look it over. What can you cut back on? Then, simplify the question further, what is the ONE THING you feel you should cut back on immediately. Then, cut back on that ONE THING. Do not eliminate it, just cut back on it. Maybe eat or drink it twice a week instead of four. That’s it. Make it small, manageable and just outside your comfort zone. Keep your food log going for another week, note your successes after a second week as passed. Write them down! Recognize your achievements! Maybe you can take out your one thing another day AND cut back on something else the third week. Add in whole foods to replace items you cut back on. Do these small, measured steps for 6 weeks. (That’s just a month and a half!) Then look back on your progress. Hug your food log, thank Abraham Lincoln and give yourself a high five. Now, the big question is, what could you do if you gave it another six weeks…? Good luck out there!

2. Be detailed. You do not have to measure anything or weigh anything, but a “a fist sized portion of sliced oven roasted chicken on whole wheat bread with sprouts, avocado, extra mayo, and spicy mustard” paints a much different picture than just “chicken sandwich”. Drink out of water bottles and record ounces. Note amounts like “3 spoonfuls of Ben & Jerry’s New York Super Fudge Chunk,” or “2 handfuls of almonds.” 3. Note eating times. Record the time of day that you eat as well. Again, be detailed. “11:45 p.m.” paints a much clearer picture than “afternoon” when you look back on your journal a week later.

Festivals are among the events done best in the Lowcountry where a celebration is almost always underway. Locals and visitors regularly take to the streets, parks and waterways to enjoy life with the special varieties of cuisine, entertainment, arts and activities which define the friendly communities and their customs. Some of the most popular spring festivals are the Wine and Food Festival, Wingfest, the Bluffton Village Festival, the St. Patrick’s Day Parade and Shamrock Run, the Seafood Fest, the RBC Heritage Golf Tournament, and the Kiwanis Rib Burnoff. The 28th annual Hilton Head Island Wine and Food Festival brings together wine, spirit, and food lovers for a six-day event, beginning March 4, with events running through March 9. The Festival, held at the Coastal Discovery Museum at Honey Horn Plantation, provides wine lovers and gourmet foodies alike the opportunity to sample outstanding domestic and international wines and some of the Lowcountry's best cuisine. The annual Hilton Head Island Seafood Festival, April 56, sponsored by the David M. Carmines Memorial Foundation, helps raise money for the American Cancer Society, MD Anderson Cancer Research Center, and the Island Recreation Scholarship Fund. ISLAND WINERY Hot Sherry Pepper Sauce History For more than two hundred years, Sherry Pepper Sauce has been a well-kept Bermuda secret. In the heyday of the British Navy, Bermuda’s Royal Naval Dockyard was one of the busiest maritime bases in the world. Sailors coveted locally cultivated pequin peppers, which they would add to their barrels of sherry to create a seasoning to mask the taste of their less-thansavory ship rations. Becoming a favorite sauce among local Bermudians, they refined the recipe and soon began producing and selling it themselves. Nowadays, a bottle of Sherry Pepper Sauce can be found tableside in just about any restaurant in Bermuda and in nearly all kitchen pantries. Sherry Pepper Sauce is an essential ingredient in Bermuda’s world famous Fish Chowder. Hilton Head Island Sherry Pepper Sauce Although Bermuda is practically our neighbor – just a couple of hundred miles off the coast - here at Island Winery in Hilton Head South Carolina, we decided to adapt the recipe a bit to make it the perfect accompaniment to our Low Country cuisine. We started with our barrel aged semi-dry sherry. Then we infused the sherry with smoky chipotle and habenero peppers for several weeks to give it a little extra kick. Finally, we bottled it with a couple of pequin peppers to keep true to the original. And just to give it that special spice which Low Country cooking is famous for, we added some of the same Caribbean spices that were once traded in the ports of Charleston and Savannah centuries ago.
