Watching the devastation that Hurricane Helene brought to our neighbors around the state and throughout the southeast has made think back to when Hurricane Matthew hit the island back in 2016. That was a surreal time – the first real hurricane impact I’d faced on Hilton Head, and I’ve lived here since 1989. If you weren’t here for Matthew, it’s hard to express how much anxiety we all felt. Watching the storm’s path from the comfort of our evacuation inland, all anyone could think of was the potential loss of homes and business we’d face when we returned. It almost felt like we were watching our entire lives fall apart in real time.

The real work began when we were finally able to return, which was only possible thanks to the heroic first responders who stayed behind. The sounds of chainsaws filled the air for weeks as cleanup efforts cleared the island of debris. And in between, we dealt with insurance companies and tried to get the island back up and running. It all seemed impossible at first, but every day brought a little more light to the end of the tunnel.

As we all saw each other through the aftermath, it was amazing to see the way this community came together. Friends helped friends, neighbors helped neighbors. Roving chainsaw crews formed to clear downed trees from the homes of strangers. And thanks to that spirit of the island coming together, what first felt like months of work became days. We were back in business far earlier than I or anyone else expected.

It’s a spirit that I think we should all try and recapture, especially now during the holiday season. This is the time to help those who are less fortunate, and to be grateful for what we have and where we live. Like those first responders who stayed behind and the chainsaw crews who helped us return to normal, we need to do something to make the world around us a better place.

It shouldn’t have to take a hurricane to bring the best out of people. Maybe this holiday season, we start being the kind of people we were when our neighbors needed us most.

MEXICAN with a Kick Kung Fu Cantina offers an East meets West fusion of flavors.

While it’s long entered the English lexicon as the term for a type of combat that looks really cool in movies, the phrase “Kung Fu” doesn’t actually mean what you think it does. The term “kung” (功) means hard training, skillful work, or endeavor, and “fu” (夫), means time spent. Together, they essentially mean “hard work.”

It’s fitting that his latest venture carries the name Kung Fu Cantina, as Marshall Sampson might just be the hardest-working man in the business. Well known among Lowcountry diners as one of the partners in Santa Fe Café, an institution on Hilton Head Island, his first bite of multi-restaurant kung fu came when he partnered with Billy Watterson and Watterson Brands for the launch of Pizza Co.

As that partnership proved so fruitful, Sampson also served as one of the many contributors at The Bank. Working hand-in-glove with Watterson Brands’ Moon King Entertainment Group, he was one of the epicurean colaborators behind the gorgeous beer garden and dining hall concept. He launched his latest venture, Kung Fu Cantina, with one of his partners from Santa Fe Café, Bill Alberts.

And that’s when the real hard work began.

“We just started lunch again at Santa Fe this week for the first time in five years, so I’ve been down there for lunch every day. I’m at The Bank in the morning to do the orders, I go to Santa Fe mid-day, then I’m here at night,” he said. So, when exactly does he sleep? “I get a good four hours.”

scheme offers your first hint that Kung Fu Cantina is a wildly different animal than either Santa Fe or Pizza Co. Sampson gives much of the credit for that to the team at Watterson Brands who helped him put a vision in place for the new restaurant. Their Vice President of Marketing and PR, Ally Hughes, created the eye-catching mural that stretches along one wall, and their whole team helped round out the menu.

Of course, it helps that their location in Moss Creek Village was famously upgraded by its previous tenant before bankruptcy forced them to close. “They put a lot of money into this place, so we just listened to everyone who had gone there to find out what they liked and disliked,” said Sampson. “The biggest complaint they had was the noise.”

Replacing the hard, reflective tiles that had lined the space and replacing them with sound dampening boards now softens the auditory experience while reflecting the restaurant’s hip, urban aesthetic.

“If you look out west there are a lot of restaurants like this,” he said. “We wound up going to a lot of different places, looking at a lot of different menus and seeing what was out there. And it just started clicking. We let the team go crazy in the kitchen with our ideas and they knocked it out of the park.”

Like most good ideas, the notion of remixing southeast and far east cuisine was developed around a bottle of tequila. Sitting around the campfire shortly after securing their Moss Creek spot, Sampson and Alberts had to figure out what exactly they were going to do.

“We didn’t have this on our radar at all. We were still pretty in the weeds with The Bank in January when they approached Moon King Entertainment Group, our investors threw out a number and they said congratulations.” said Sampson. Sitting around the campfire, a new pizza place was

eliminated. And while Sampson wanted to bring some Latin cuisine across the bridge, he didn’t want to do Santa Fe Café all over again.

“I believe Santa Fe is a one-off. I don’t know that I could ever try and replicate that. Some restaurants try, and sometimes it doesn’t work,” he said.

But then the type of brainstorming that can only happen around a campfire took hold, pointing Sampson and Alberts toward the fusion concept. “One thing popped in our heads, almost at the same time,” said Sampson. “That was the Mexican street corn with fried rice. And it’s the most popular thing we offer.”

The rest just came pouring out, from dishes that stay inside their lines like poblano soup and sushi to offerings that dance all over those lines, like the carne asada egg roll or the Mexican shrimp pad thai.

“We started out developing two menus, but then as we started researching we found that the common ingredients they have are uncanny,” said Sampson.

Marshall Sampson may not have originally intended to launch an entirely new restaurant concept, especially while still keeping two highly successful concepts in Santa Fe Café and The Bank. But a few shots of tequila and a lot of help from the team around him helped put him into position to make Kung Fu Cantina one of the most exciting additions to Bluffton’s restaurant scene.

And all it took was the right amount of Kung Fu.

The Joy

of Cooking

Mama Joy’s Kitchen has been the hottest restaurant in the Lowcountry – not to mention one of it’s most well-hidden jewels - for years. Now, we’ve all found the joy of her cooking.

One of the biggest things a restaurant can enjoy before it opens its doors is buzz. Sure, advertising and marketing will get people in the door and fannies in seats. But buzz? It’s like having a secret password that bores right into a restaurant patron’s fear of missing out and demands that they seek out a seat at the table. It’s the culmination of a whisper campaign that earns a restaurant instant clout from day one.

When she started on the journey to opening Mama Joy’s Kitchen in the former Beach Break Grill spot on Palmetto Bay Road, Joy Mitchell didn’t know she was creating buzz. She just knew she was creating food.

“I always used to cook for my friends late at night. We’d go out to the bar or something, and then I’d pick up food and just cook something up for everybody,” she said. “Around 2019 or 2020 when COVID hit, my friends started telling me to sell plates. I told them, ‘I’m not selling my food.’”

Her hesitance in the moment is understandable. She already had a full time job as manager of One Hot Mama’s, working under her friend and mentor Orchid Paulmeier, during one of the most tumultuous times in food and beverage history.

The late-night cooking, pouring out her soul into food to be enjoyed by her closest friends, was more of an emotional outlet than a side hustle.

“I’ve always cooked. Growing up, I loved cooking with my mom in the kitchen, and I just always enjoyed it. It always makes me calm,” she said. “And when I’m upset or something, getting in the kitchen always makes my day.”

Still, her friends were persistent. Because they had tasted Joy’s food, a rich menu of soul food staples that harken back to those days in the kitchen with mom, and they knew what

they were tasting. It was buzz. It wasn’t long before Joy was selling hot, home-cooked meals out of her house to a select group of friends on Mondays and Thursdays.

It was perhaps the longest soft opening in history. For two years Mitchell put out menus every week, fielding calls and orders from a large – and growing – group of friends until it got to be too much for her kitchen to handle.

“It felt like my house wasn’t a house anymore, so I got my retail license just as an opportunity came up in Ulmer Pharmacy,” she said.

For a year and a half – possibly the second-longest soft opening in history – Mitchell cooked her soul food in a small space at the back of Ulmer Pharmacy. The small core group of her friends was now joined by a savvy group of Bluffton foodies who knew how to find Mama Joy.

“I didn’t do a whole lot of marketing. I didn’t even put signs out,” she said. “And I didn’t really have a set menu because, being in such a small place, I didn’t have a whole lot of freezer space.”

It gave diners a chance to try a sampler platter of what would eventually become the menu at Mama Joy’s –Southern soul staples from fried chicken and mac and cheese to oxtails and meatloaf.

But there was one last stop on the road that runs from Joy Mitchell selling plates to friends and Mama Joy finally seeing her name up there on the sign. Before she took over the space full time, she made Sundays her own at Beach Break, with a special once-a-week country cooking menu. The menu changed every week, but never strayed far from the classics – smothered pork chops, red rice with sausage, collard greens.

Finally, the day came when Mama Joy’s Kitchen became a fully realized brick-and-mortar full-time operation. To the soul food classics, Mitchell added elements that made for, in her words, “A nice size menu with a little of everything.”

“If you want pasta, you can get a pasta. If you want a good old cheeseburger, you can get a good cheeseburger,” she said. “But if you want to get down and dirty and get a good hearty meal you can get fried pork chops, turkey wings… it’s a little bit of everything. And everybody who comes in says this food has so much flavor. You don’t have to shake salt and pepper on my food.”

It’s been a journey, but not Mama Joy’s has arrived and the entire island can learn about the best-kept culinary secret in the Lowcountry. And Joy Mitchell, who has always approached cooking as a way to unwind, de-stress and revel in indulgent flavors, is sharing that joy with everyone.

“It’s a lot of hard work, and it’s one of those things that if you’re going to do, you have to be dedicated to,” she said. “I just thank God. We started from a little savings account and me selling dinner out of my house. Building my business off of that, with no loans or grants or nothing, makes me feel very proud.”

As for the rest of us, we’re feeling the buzz of Mama Joy’s kitchen. And we’re feeling hungry.

SOUPER BOWL OF CARING

Nearly 30,000 people – many in the hospitality industry – are food insecure in Beaufort, Jasper and Hampton Counties, according to Feeding America, a nationwide network of food banks, food pantries and community-based organizations. This means one in seven children and one in nine local adults lack enough nutritious foods to fully meet basic needs due to a lack of financial resources.

Second Helpings is a nonprofit food rescue and distribution network striving to eliminate hunger and food waste in the South Carolina Lowcountry.

“Poverty isn’t what it used to be,” explains Marcus Tanner, Director of Operations at Second Helpings. “You could be in a restaurant and the person waiting on you doesn’t necessarily know where their next meal is coming from. Many are struggling to get by – they are just one car repair or major appliance repair away from devastation.”

“We are here to help, we’re not here to judge,” he adds.

Second Helpings is unique in that more than 400 volunteers in refrigerated trucks collect perishable food from grocery and convenience stores, farmers, the Lowcountry Food Bank and other outlets six days a week and then immediately distribute it to area food pantries, soup kitchens and senior programs. Calculated quarterly, the number of people an agency serves determines what percentage of the trucks’ inventory, measured in pounds, they receive. This method enables partnering agencies to provide 54,000 meals every week.

“If we have a great day, everybody shares in the joy,” says Tanner. “If we have a light day, everyone shares in the burden. But everybody gets a fair, equitable share of the truck.”

A former Marine who was stationed in the area from 2017 to 2019, Tanner and his family returned to Bluffton after his retirement in October of 2021. Soon after the move, a Second Helpings truck pulled up next to him at a stoplight which piqued his interest in the organization. A few days later, the opening for Executive Director popped up in a job search and the rest is history.

As Second Helpings has expanded, so has Tanner’s role with the non-profit and he was recently named Director of Operations. Among his numerous job duties are weekly visits with food donors, sharing how blessed Second Helpings and the community has been thanks to their donations.

“We want to let them know they are changing people’s lives,” Tanner says.

“Whenever you can put a name to the agencies they see every day on the ride home, and the food they pulled that day and put on the truck went to that agency, they know the food is going to those people who are our friends and neighbors.”

Tanner also oversees the Coligny Souper Bowl of Caring, with the 5th annual event taking place on Saturday, February 8, 2025 – the day before Super Bowl LIX kicks off in New Orleans.

This outdoor, dine-around event showcases about a dozen Coligny restaurants and other establishments set up in the plaza’s parking lot serving bowls of soup, chili and other cold-weather favorites, accompanied by live music.

Now a national initiative supported by the grassroots non-profit Tackle Hunger, the Souper Bowl of Caring began in 1990 in Columbia, South Carolina, with a youth pastor sending up a simple prayer: “Lord, even as we enjoy the Super Bowl football game, help us be mindful of those who are without a bowl of soup to eat.”

Since then, over $193 million has been raised to benefit soup kitchens, food banks, meal programs and hunger-relief charities across the country. On Hilton Head Island, the 2024 Coligny Souper Bowl of Caring raised $5,533 for Second Helpings which translates to 2,700 meals for local agencies.

“It’s one of my favorite events,” says Tanner. “It’s a great time of community and brings people together. What more can you ask for than to walk around and sample amazing food, hear live music and raise funds for an amazing cause?”

A New SEASON

You’ve heard about eating seasonally. Usually this means to eat according to what is naturally growing around you at that particular time of the year. However, I am going to ask you to think about eating seasonally a little differently today. Instead of looking at the world around you, let’s look internally and see what season in your own life you are experiencing. Does this change your nutritional needs? Absolutely!

First, let me start by stating: aging is not a bad thing! It is a natural process that every single one of us will move through. Some more gracefully than others, some with trepidation, others with unwavering energy. Let’s explore how we can allow our nutritional habits to evolve as our bodies grow, change, and age.

Second, let’s just address right upfront that one of the most significant changes of the aging process is a slow down in metabolism. This means our bodies require fewer calories to maintain the same level of activity. To manage weight and energy effectively, older adults should prioritize nutrient-dense foods that are rich in essential vitamins and minerals without excessive calories.

An athlete in their 20s might track macros, calories, and miles logged. What should we track as we age? Here are three things that will have a positive impact on our hormones, body composition, and energy.

Protein plays a vital role in maintaining muscle and repairing tissue. While as a young adult, we might think of protein as a way to ‘get toned’ or build muscle, as an aging adult protein becomes even more vital to prevent muscle

loss. A body that carries lean muscle metabolizes at a higher rate, and can stave off osteoporosis more effectively. Wise choices to keep protein intake high include lean meats, fish, eggs, legumes, and nuts.

Fiber is essential for keeping a clean digestive tract, which keeps both brain fog and constipation away. Coupled with adequate hydration, fiber is one of the most important components of a well functioning body from the inside out. Whole grains, fruits, and vegetables are all excellent sources of dietary fiber. This is also something that many of us will

choose to supplement to stay in front of any digestive issues.

Last but certainly not least, healthy fats are essential for aging with ease. Healthy fats, particularly omega-3 fatty acids, help to maintain heart and brain health. Prioritize foods like salmon, flaxseeds, chia seeds, and walnuts. Balancing fat intake by choosing unsaturated fats over saturated and trans fats can help maintain overall health.

Let’s embrace aging and growing as a natural process, and learn to let our nutritional habits evolve as our bodies evolve.

INGREDIENTS

1 tablespoon Butter

6 each Celery stalks, diced

6 each Carrots, large, diced

2 each Onions, yellow, diced

¼ cup Garlic, minced

1-pound Mushrooms, sliced

1-pound Lamb, ground

¾ cup Farro

2 tablespoons Balsamic vinegar

1 each Bay leaf

7 cups Beef bone broth

1 tablespoon Salt

2 teaspoons Ground black pepper

2 tablespoons Oregano, dried

½ cup Flour

1 cup Water

¼ cup Fresh herbs (thyme, rosemary, or sage)

2 cups Green peas

METHOD:

• In a stockpot, over medium-high heat, add butter. Then add celery, carrots, onion, garlic, and mushrooms. Sauté until softened, about 15-20 minutes, stirring occasionally.

• Stir in lamb, farro, balsamic vinegar, bay leaf, and bone broth. Bring to a simmer then set heat to medium-low, continue to simmer for 20-25 minutes, stirring occasionally.

• In a separate bowl combine flour and water, creating a slurry. To thicken the stew, slowly pour the slurry into the stew.

• Lastly, stir in fresh herbs and green peas and serve.

2025 Chamber Restaurant Week celebrates

another year of putting Hilton Head’s best food forward.

Now entering its 17th year, the Hilton Head Island-Bluffton Chamber of Commerce’s Chamber Restaurant Week has long brought out the best in area restaurants. Drawing in visiting foodies from all across the southeast, this one week, which falls on January 25-February 1 this year, serves as a chance to showcase our restaurants for an entirely new audience.

“We’ve been doing it pretty much since the beginning,” said Ian Mason, restaurant manager of Michael Anthony’s Cucina Italiana. “The concept of restaurant week is to really put your best foot forward at a time when we’re normally slower, and influence some local tourism from that 90-mile radius to come here and see what we offer. And it’s also great to drive that revenue for the servers. It’s a win-win-win all around for the town, for us, and for our employees.”

Like the 80 other restaurants participating in this year’s Chamber Restaurant Week, Michael Anthony’s will be offering a prix fixe menu of multiple courses that serves as an introduction for first-time visitors and a greatest hits menu for regulars. The menu at Michael Anthony’s hasn’t been set as Taste of Hilton Head was going to press, but Mason was able to provide some tantalizing possible items.

“We were able to do a raviolo one year, which we’ll probably do a version of this year because we finally have a kitchen that can do that at scale,” he said. “It’s a complicated dish. You’ll see them generally on a chefs table or maybe a wine dinner. To do something like that for Restaurant Week where you’re serving 25 to 30 orders a night is pretty ambitious. But they’re doing

it on our regular menu right now, so I’m excited to possibly do that.”

Stuffed with filling like black truffle parmesan ricotta and egg yolk, then topped with a sage butter or chanterelle cream, the massive raviolo will form one course. Another will be a protein – Mason is leaning toward Australian Wagyu – and a dessert, whether it’s a limoncello tiramisu or a hazelnut panacotta.

“Some of it may be high-end menu items we’re contemplating for next year, some if it may be the specials from the previous year that really hit a home run,” he said. “But it will be stacked with all the MVPs.”

Stellini, the iconic Italian eatery on the south end, will similarly have a prix fixe menu of MVPs on offer during Restaurant Week.

“Our Restaurant Week menu changes each year and has plenty of selections but some dishes are always featured including our Homemade Sausage Stuffed Meatballs, Mussels Bianco, Veal Rollatini, Grouper Piccata, Cannoli and Ricotta Cheesecake,” said owner Elise Parlagreco.

As owner of both Ela’s and Celeste, Earl Nightingale has two reasons to be excited for Chamber Restaurant Week.

“We love it. We’re very supportive of the chamber, and we think it’s a great thing,” he said. “We used to actually do restaurant week for the entire month of January.”

Having participated for the last 12 years, Ela’s has become a mainstay of restaurant week. This year, Nightingale says, they will be offering tasting menus that take some of Elas signature dishes – grouper, filet, scallops, short rib – and accompanies

them with three courses including an appetizer, intermezzo and dessert.

“We take our best entrees and essentially cut them in half, so instead of an eight-ounce grouper you get a four-ounce grouper teamed up with a filet,” he said. “So you basically get two entrees.”

Another reason Nightingale is so excited about this year’s Chamber Restaurant Week is that it will serve as a cotillion of sorts for his newest venture, Celeste.

“We didn’t participate for the last two years because the restaurant was so new, but this year we’re all in,” he said. Celeste will offer a similar tasting menu to Ela’s, but one that shows off its upscale coastal flair with items like red fish paired with jambalaya, etouffee or tuna crudo.

“You’re basically getting two appetizers, two entrees, and intermezzo and a selection of desserts,” he said. “We try to give you as many portions as possible.”

Another restaurant that has been a fixture during Chamber Restaurant Week is Fishcamp on Broad Creek, the CRAB Group destination famed for its seafood.

“Fishcamp on Broad Creek looks forward to the Chamber Restaurant Week every year,” said general manager Sarah Jobbins. “We love having the ability to offer our guests our most popular dishes at a discounted price to allow them to have our full dining experience.”

Offering a three-course prix fixe dinner for $40, this year’s menu has not been determined yet. However, the menu from last year gives a mouthwatering hint at what’s to come. For starters, it was calamari & pickles, Prince Edward Island mussels, lobster bisque or a house salad. On offer as entrees were roasted stuffed flounder, seafood pasta, Carolina shrimp and polenta, or the “cast net” boasting fried shrimp, oysters and flounder. A crème brulee and a key lime pie rounded out the desserts.

It’s a week that Jobbins looks forward to as a way to showcase the restaurant’s culinary capabilities. “It is also a great opportunity to encourage guests to choose to dine with us and promotes business in a historically slower time of the year which allows our staff to increase their sales to bring money to them as well as the business,” she added.

It’s the most wonderful time of the year! The winter season on Hilton Head Island is full of holiday happenings, cultural events, amazing performances, food festivals and community celebrations. The Salty Dog Café

Celebrate the season the Salty Dog way! Through January 1, South Beach Marina is transformed into a magical Christmas Village complete with thousands of holiday lights and décor, the “greenest” tree on the Island lit by wind and solar power, a chance of “snow flurries,” Santa sightings and more. The holiday lights go on around 5 p.m. daily.

Land’s End Tavern has been transformed into the Christmas Tavern, a Christmas Market-style wonderland of gifts, tasty holiday treats and beverages, iconic Christmas trains, festive tie dye, seasonal décor and more. Warm up waterside during Chili December where the Salty Dog will donate a can of food to The Deep Well Project for neighbors in need with every cup or bowl of soup or chili purchased.

Stop by for FirePit Fridays from 4-7 p.m. featuring live music from Dave Kemmerly on the waterfront while enjoying complimentary s’mores around multiple fire pits, $10 wood-fired pizzas and Happy Hour specials on Salty Dog beer and wines.

Island Rec Center

On Friday, December 6, Shelter Cove Park will be transformed into a Winter Wonderland from 4-7 p.m. This free family event features bounce houses, a parade, a DJ, the Golden Candy Cane Hunt at 5:30 p.m. and, possibly, an appearance from the Jolly Ol’ Elf himself. Food, drinks and some activities will be sold separately.

There is one day every year when Shelter Cove Park is guaranteed to see a winter storm. Bring out the entire family in cold-weather gear for inflatable rides, a snowfield and winter entertainment on January 25 during the annual Snow Day held from 11 a.m.-3 p.m. Admission is $10 for ages 2-17.

Just in time for Valentine’s Day, the Island Rec. Center hosts two Daddy Daughter Disco Dances on Saturday, February 8, at the Poseidon Rooftop Bar. Light refreshments will be served. Set in the 1930s, aspiring chorus girl Peggy Sawyer comes to the big city and soon lands her first big job in the ensemble of a glitzy new Broadway show. Can she make it in the big city? Celebrating the magic of show business, songs like “We’re In the Money” and “Shuffle Off to Buffalo” make this show a fan favorite and perfect for the whole family.

Throughout the month of February, the Native Islander Business and Community Affairs Association (NIBCAA) hosts the annual Hilton Head Island Gullah Celebration.
