On Hilton Head Island, summer tends to get all the hype. That’s when the beaches welcome people from around the world, when the hospitality industry kicks into high gear and when tee times become nearly impossible to find. But for my money, there’s nothing like fall on the island. Every season has something special that sets it apart, but fall in the Lowcountry is the time of the year that reminds me most of why I love living here.
Not only is beach space a little easier to nail down, there’s also more open spots on the pickleball courts for those who, like me, have recently discovered this wildly popular sport. And what’s more, the temperatures have fallen enough to let you enjoy these outdoor pursuits comfortably, while still remaining warm enough for a day at the beach. And you won’t find a more perfect environment for an evening drink around the fire pit than the Lowcountry in autumn.
It’s a time of year that begs you to get outside, not just because it’s so pleasant but because there’s just so much to do. The fall months are when the calendar fills up with festivals, from the Italian Heritage Festival and the Rock ‘n’ Ribs Festival to the Historic Bluffton Arts & Seafood Festival. Basically, if you’re bored in the fall around here, it’s your fault.

There are two things that have long defined Hilton Head Island. The first is the endless give-and-take between progress and preservation. Charles Fraser broke all the rules in creating a community that worked with nature rather than against it, sustaining as much of the island’s natural beauty as possible. But he also created a community that grew so popular, so quickly, that the question became how to accommodate so many new neighbors while still respecting the quiet tranquility of the island.
The second thing that has long defined Hilton Head Island is the unchained creativity of those who call it home. Fraser himself set the tone with his vision for Sea Pines, but entrepreneurs, artists, musicians and chefs soon followed, birthing a wealth of inspired ideas that have made the island stand as a world apart.
If you follow the threads of both those defining factors, it won’t be too long before you find yourself among the verdant fields and chairs of The Bank’s sprawling beer garden.
The preservation aspect of this new entertainment district/ beer garden/food court is immediately evident to anyone who once found themselves waiting in line at the drive through in what is now a shelter for outdoor seating. A former Bank of America, the property was purchased by Watterson Brands and Moon King Entertainment Group several years ago with the intention of preserving the structure, while allowing its Side Hustle Brewing Company brand to grow.
As for that creative streak that defines Hilton Head Island, you’ll see that in everything that the Watterson Brands and Moon King Entertainment Group did to transform the space.
“The original intention with the building purchase was a much larger entertainment development, but we pivoted from this plan for the immediate expansion of the Brewery,” said Billy Watterson, CEO of Watterson Brands. “Not only is the former use of the building conveniently on theme, but the space allows for patrons to experience the beer yearround in the way the brewers originally intended: a fun and family-inclusive atmosphere.”
The transformation from a utilitarian – yet architecturally intriguing – bank branch into The Bank is an exercise in creativity. The old safety deposit boxes line the entryway, their keys displayed in lucite above. At the wide bar in the center, Side Hustle Brewing Company offers a range of beers that play into the theme, from IPAs like Dank of America and Balance Transfer to the Blank Czech pilsner. Surrounding the space, where tellers once processed deposits, the familiar oven from Pizza Co. anchors a full-fledged dining experience alongside Mo’ Money Tacos and Bank Heist Burgers offering elevated pub fare.
The food and beverage trucks ringing the beer garden also lean into the financial theme – you can get a cocktail from the Armored Bar, an ice cream from Dollar Billy’s or seafood from All About the Benjamins to go with your comfortable spot in the grand sun-dappled lawn.
And nearby, where the old drive-through was now shelters revelers rather than account holders. Inside, where elevated hallways lead off to old mortgage lender offices, there’s still some creativity waiting to be expressed.
“We toyed with doing something up there like a speakeasy or a VIP experience where you could sort of look down on everything that’s happening,” said Watterson. “And there’s a big oak tree out front that we’d like to turn into a two-story treehouse bar.”
Even with the vision of turning the old Bank of America building into an entertainment destination fulfilled, the team at The Bank is still eyeing the next exciting idea. In the meantime, The Bank has quickly established itself as a gem of Hilton Head Island, with visitors stepping right off the Pope Ave. bike path to order a craft beer from inside or a cool cocktail outside.
“I think the remark I hear the most is ‘Hilton Head needed this kind of place!’ Which is a wonderful compliment, because there are so many impressive venues already here and have been for decades,” said Watterson. “I’m so pleased that my partners stuck by me and with the vision – which could have gone off the rails if it were not for everyone’s enthusiasm and dedication throughout.”

Great food tells a story.
The crispness and robust flavors of local produce paint a picture of the land where it was grown. The delicate lines of a demi-glace drizzle tell a story of a chef’s artistry, their journey as a chef shared with every perfectly seasoned bite. The terroir of a wine serves as a travelogue to the fields of France or Italy where its grapes were harvested.
Some stories, though, can’t be told by food alone. Sometimes, even in a place like Bistro 17 where each dish is a saga unto itself, stories need to be shared face to face over a glass of wine.
Owner Thomas Justice has quite a story to share. Born and raised in an area of Tennessee that didn’t offer much by way of culinary excitement, he made his way down to Hilton Head Island where he began his F&B career at Fitzgerald’s the lauded fine dining restaurant formerly in South Forest Beach. While he had no fine dining experience, he was able to land the job through a combination of two things: serendipity and his own incredibly photographic memory.
“We were talking during my interview and the owner noticed I was from Tennessee. He said, ‘I was up there a few summers ago and went to a lake.’ I told him, ‘Yeah, you went to Norris Lake, you stayed in a place called Deerfield and you rented from a guy named Rob Norris. On the first night of your trip you went to Walmart and heaped two buggies full of stuff,” said Justice, relating his unbelievable luck. “He looked at me and said, ‘How do you know all that?’ and I told him, ‘Because I was the cashier than rang you up.”
It wouldn’t be the last time Justice’s peculiar
talent for recall would land him a job. Years later, while applying for a job at the old Tony Roma’s, the person conducting the interview was also from Tennessee, and in fact had attended a party with both Justice and his sister at East Tennessee State University. Justice was just a teenager at the time, but he recognized the face right away.
“My memory is weird. I can tell you what the first electric bill I paid was to the penny,” he said. “I have a weird mind, and I’m missing 25 percent of it.”
He laughs when making the joke, but there’s a deadly serious story behind it. After a lengthy career in food and beverage, Justice had made his way into sales where the money was good, but the stress was sky high. Whether it was the stress of the job or just simply a twist of fate, on April 21, 2014, he woke to find his body shutting down on him.
“It was 1:30 in the morning and I woke up feeling nauseous. I went to the bathroom because I thought I was getting sick, and I started getting really hot,” he said. “That was the first blood clot. I hadn’t put it together at that point.”
Stepping into a cold tub, he quickly found that all the strength had drained from the left side of his body. With his phone in the other room, he couldn’t leave the tub to call for help. Fully conscious yet unable to move, he sat there in the tub until he was discovered, six hours later.
“Sometime during that time, the second clot hit and that’s when everything on my left side stopped working. At that point I had pieced it together that the only thing which could manifest itself like that was a stroke,” he said.
The stroke had completely paralyzed his left side, beginning seven grueling years of physical therapy that necessitated a move back to Tennessee. Just as Justice worked to regain his mobility, he found that the Volunteer State’s notoriously cold winters were hampering his progress.
“On my left side, I regained usage of my leg but not as much my arm. And when it would get cold, I couldn’t move around as well,” he said. “So I thought, why don’t I come back here where a cold day is 50 degrees. I can live with that.”
He returned to Hilton Head Island and, just as it had that day of his Fitzgerald’s interview, Thomas Justice’s incredible luck would drop another opportunity at his doorstep. Bistro 17 had just gone up for sale, he now had the opportunity to return to the culinary world, this time as an owner.
And his incredible mind played a role, as well, reminding him that what he was purchasing was already a wildly successful mainstay at Shelter Cove, with packed dining rooms, stellar reviews and a sterling reputation for its Continental-inspired cuisine.
“Not to let my hillbilly out here, but we have a saying in East Tennessee. If it ain’t broke, don’t fix it,” he said with a laugh. “Everything was good. All the food was superb. I met with all the employees the day I signed in the papers and told them I planned to keep them all and for everyone to keep doing what they’d been doing.”
Stop in Bistro 17 and you’ll see why his instincts said to keep everything the way it is. Two years into his tenure, you’ll still find the steak frites flying off the menu, enthusiastic Instagrammers posting their shots of the jumbo grilled shrimp and pianist tickling the ivories on the corner piano.
“A lot of people come in just to hear her play, have some dinner, relax, have a bottle of wine, and enjoy the view of the sunsets right out of our window,” said Justice. “I mean, you can’t get any better than that.”
It was a long road back, but with help from his family, his incredible memory, unbelievable luck and endless determination, Thomas Justice has found the next chapter in his story at Bistro 17.

In 1989, Congress proclaimed October as Italian American Heritage Month to commemorate the contributions of Italian immigrants and their descendants in the United States. In South Carolina, former Governor Nikki Haley took it a step further – with the support of the Italian-American Club of Hilton Head Island (IACHH) – and turned this proclamation into state law in 2015.
A non-profit service organization dedicated to promoting Italian heritage and culture, the IACHH celebrates “The Old Country in the Lowcountry ‘’ with two fun fundraisers in October.
Raise a glass and say, “Salute!” as the sun sets over the water on Wednesday, October 11 when A Zin Experience with Italian Flair returns to Shore House at the Omni Oceanfront Resort in Palmetto Dunes after a two-year hiatus.
From 5:30-8 p.m., sip zinfandels and Italian wines at numerous stations scattered around the deck manned by area experts and distributors and then place orders for your favorite new varietals. Just over a week later, the Coastal Discovery Museum at Honey Horn is home to a wine tasting, grape stomping, pizza eating, entertaining good time for all ages with the 13th Annual Italian Heritage Festival on Saturday, October 21 from 11 a.m.-4 p.m.
“People call constantly asking for the date so they can mark their calendars,” says Festival Chair, Paul Caimano, who expects thousands of attendees again this year. “Italians treat their communities like family. No one leaves our events hungry.”
Immerse yourself in an Italian cultural experience with food, wine, live music, dancing, shopping, friendly competitions and historical Centurion re-enactors in authentic military dress.
As in years past, food booths will line the pathways at Honey Horn with local restaurants serving up portions of their signature dishes, while volunteers prepare traditional Italian dessert favorites like manicotti, cannolis and zeppoles. Entertainment includes live music from the Hilton Head Plantation Big Band, as well as the ever-popular grape stomping and pizza eating competitions.

Records by creating and cooking the World’s Largest Meatball – a massive 1,700+ pound ball of meat and spices which was distributed to local food banks after the festival. This year, for the first time, a Roman Legion encampment will be on-site with soldiers available to answer questions and demonstrate ancient Roman games and exercises.
According to PBS, “The Roman Army was one of the most successful in the history of the world and its soldiers were rightly feared for their training, discipline and stamina. As a result, the army was a major player in Roman politics and maintaining its loyalty was an essential task for any Emperor.”
Other activities include educational booths, a Kid’s Zone, Italian arts and crafts and the famous Festival Silent Auction featuring an array of items such as rounds of golf, popular restaurant gift certificates, art, jewelry, gift baskets, boat rides, merchandise and trips.

Fall is a beautiful time of year, but it can also be a time when our health takes a hit. The days get shorter, the weather gets colder, and we’re more likely to pursue sedentary indoor activities. But there are plenty of things we can do to stay healthy and well during the fall season.
First, continue to prioritize getting to the gym. Lifting weights and getting some cardio in will not only keep your body strong but will also help you stave off the doldrums that can come with cooler shorter days.
Second, honor your body’s natural craving for seasonal foods. Being here in the south you might be more familiar with (and comfortable with) seafood and fruits. So don’t be afraid to mix it up and try something more hearty and savory.
Here are two very simple and very tasty recipes. These are packed full of fiber, vitamins, and tons of flavor!
Roasted
Ingredients:
1 butternut squash, peeled, seeded, and cut into cubes
1 onion, chopped
2 cloves of garlic, minced
4 cups vegetable broth
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Toss the butternut squash cubes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender.
In a large pot, heat 1 tbsp of olive oil over medium heat. Add the onion and garlic and sauté until softened.
Add the roasted butternut squash and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 10 minutes.
Use an immersion blender or a regular blender to puree the soup until smooth. Season with salt and pepper to taste.
Serve hot and enjoy!
Quinoa Stuffed Acorn Squash
Ingredients:
2 acorn squash, halved and seeds removed
1 cup cooked quinoa
1/2 cup diced apples
1/2 cup dried cranberries
1/4 cup chopped pecans
1 tablespoon maple syrup
1 teaspoon cinnamon
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Place the acorn squash halves on a baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes or until the squash is tender.
In a bowl, combine cooked quinoa, diced apples, dried cranberries, chopped pecans, maple syrup, cinnamon, salt, and pepper. Mix well.
Fill each acorn squash half with the quinoa stuffing mixture. Return the stuffed acorn squash to the oven and bake for an additional 10 minutes.
Remove from the oven and let cool slightly before serving.
Remember to breathe deeply, move intentionally, and enjoy what this season has to offer.

In this country, our heritage is often written in our food.
Whether it’s the robust zing of red sauce over linguine or the delicious spices of a fresh tamale, these dishes are how we as Americans honor and respect the places our ancestors call home. These are the flavors we add to the great melting pot.
For the native Gullah who call our area home, however, food is far more important than that. Robbed of any knowledge of their home country by centuries of enslavement, they instead created something new in the country of their birth. Their culture is perhaps the only one created entirely on U.S. soil, their cuisine a reflection of a culinary birthright they fought for right here in the Lowcountry.

As a steadfast advocate for the Gullah community in Town Council and as the namesake Chef B behind the Chef B’s Eatz food truck, it represents a perfect melding of Frazier’s passions.
“When I was younger… whatever I wanted to cook, my family made sure I had the ingredients,” said Frazier. “My dad used to joke that he never knew what color the rice would be when I get home. I was always in the test kitchen.”
It’s a singular story of American culture, one dazzles with its inspiring beauty, and tantalizes with flavors that sit at the crossroads of our epicurean country. And with her new restaurant, Ma Daisy’s Porch, Bridgette Frazier is helping tell that story like few before her have been able to.
“A lot of people think that soul food and Gullah cuisine are interchangeable, but it’s not the same thing,” said Bridgette Frazier. “We were cooking the same way here that we had been in Africa.”
She points to staples of both Gullah and southern cooking like okra and sweet potatoes as massive Gullah contributions to the art of cooking, both brought over from Africa by enslaved people and used in ingenious ways by cooks like her grandma, the namesake Ma Daisy. “Everything she grew, she cooked,” said Frazier.
Ma Daisy’s Porch will sit at the center of entire Gullah cultural hotspot opening this fall in Old Town Bluffton. In partnering with Watterson Brands, Frazier will put her grandmother’s food at the center of an entire experience that will incorporate a bakery, a cultural heritage center and a grand market giving local black and Gullah artisans a place to sell their wares.

It’s a gift she inherited from Ma Daisy, who would always have something going on the stove to go with the flavors of the produce she grew, pairing homemade blackberry wine with red rice and sausage.
“When I’m making a dish, I know it’s right because I can smell her kitchen and see her in my mind,” said Frazier. Of course, translating grandma’s home cooking to a full-sized restaurant at the heart of a massive cultural complex comes with its own speed bumps. “I never had recipes, because I’d always know dishes by taste. My grandma didn’t even have measuring cups in the house. You did everything by ‘a pinch of this, a taste of that.’”
And while Ma Daisy’s Porch will give Frazier a chance to finally share her grandmother’s cooking with Bluffton, and her culture with the entire world, it’s also giving her an opportunity to expand that culinary culture in new directions.
“I’m infusing the culture with new nuances, so we’ll do things like deviled crab eggrolls or Geechee surf and turf with braised oxtails and Lowcountry shrimp,” said Frazier. “It’s going to be keeping the culture alive, but taking it up a notch.” But what would Ma Daisy think about what her granddaughter is doing to her old dishes? “She definitely would have been for it,” said Frazier. “She was a culinary creator in her own way.”
