PUBLISHER’S NOTE Every year when spring rolls around, I feel like I get a shot of adrenaline. The winter months tend to wear on me and I always feel a little lethargic. Something about cold weather and me just don’t get along. Fortunately, winters here are short and compared to most of the country, very mild. That said, I still can’t wait for spring and all it brings. Getting outside to exercise, play golf, tennis, hit the beach or whatever gets you going, spring always jump-starts my energy level. Another favorite of spring is all of the annual events that go hand in hand with this time of year. If you’re into college basketball, is there anything better than March Madness? Does anything top strolling the course at Harbour Town to see world-class golf? How about celebrating St. Paddy’s day on Pope Avenue taking in our annual parade? Does that not catapult you right into spring fever? How about attending the largest Wine tasting on the east coast or our annual Wingfest? Both are island traditions that are not to be missed. Another sure sign of spring is the buzz of activity around the island. The volume of people on the roads, the shops, the beach and the restaurants increases daily. This is a good thing and one that we as locals look forward to every year. The beginning of tourist season is much anticipated and appreciated as it jumps start the economy and gets the island rolling every year. These are just a smattering of some of the many things that I can’t wait for every year. The common denominator of all these events is being outside and enjoying the amazing background of Hilton Head’s natural beauty. It is easy to take the beauty of our surroundings for granted after you have lived here for a number of years. Somehow, however, spring rekindles my appreciation of the island and reinforces why I live here. So join me in welcoming back springtime and enjoying and appreciating all the gems that help make our home a unique place to live. We have culture and traditions. We have great restaurants and chefs and we sure know how to have fun. So get out this spring and enjoy all the island has to offer and get that adrenaline flowing.

For both the longtime patrons and staff of the Old Oyster Factory, the restaurant’s silver anniversary is a celebration of unparalleled views and relationships that stand the test of time. Opening in April of 1989 and built on the site of a former oyster canning facility off Marshland Road, the spacious, multi-level establishment is renowned for its extensive dinner menu of fresh seafood and steaks, panoramic views of Broad Creek and signature service. Regular visitors to Hilton Head make it a point to stop in every chance they get to enjoy their favorite dishes and catch up with staff members who remember their names, faces and stories. After high school graduation, Jessica Lemek began working as a hostess at the Old Oyster Factory. Twenty-two years later, she manages the restaurant and simply can’t imagine working anywhere else. “I just loved it so much, I never left,” she says with a laugh. ”I’ve been here 8

that long because of the owners. They’re a great company to work for.” Behind the scenes, Lee Webb, Jr., spent his first week at the Old Oyster Factory washing big pots before moving over to the line. In addition to his former day job cutting meat at a local grocery store, over the course of 25 years he worked his way through various positions and now runs the kitchen alongside Chef Andy Love. Both employees credit the lessons taught by founding partner and Executive Chef Franz Auer for their career success, as well as the restaurant’s popularity. “Customer service, consistency, presentation – those were his number one goals,” explains Lemek. “People know when they come in the doors, they will get the same service they got last year and the year before that and the year before that. Then, the food tastes just as good whether it’s a slow or busy night. It’s always consistently good.” “I can honestly say the consistency
that we try to maintain has a lot to do with us still being in business,” adds Webb. “Franz had real high standards. I came up under him, I know what it should look like and I know what it shouldn’t look like.” In addition to classic favorites, such as the pan-seared Crab Cake Dinner, Potato Crusted Black Grouper, Broiled Dayboat Scallops, Mediterranean Grilled Salmon, Seafood Medley, Oven Roasted Bourbon Chicken and Filet Mignon, a separate menu is devoted exclusively to seasonally fresh catch
specials ranging from swordfish, tuna, tilapia and stuffed flounder to cobia, tilefish, halibut and snapper. Whether served by the dozen or halfdozen, raw, steamed or baked, from local waters or as far away as Connecticut, oysters receive top billing at this waterfront restaurant. House specialties include Oyster Rockefeller baked with smoked bacon, spinach and béarnaise or Oyster Savannah with shrimp, crabmeat, smoked bacon and topped with cheddar cheese. The specialty cocktail menu even features an Oyster Factory Shooter with an East Coast oyster topped with house made cocktail sauce and fresh horseradish finished with a shot of Smirnoff Citrus Vodka. The perfect place to relax and enjoy the view before, during or after a meal, the bar and lounge offers an extended Happy Hour from 4:45-8 p.m. with $2 off the recently reinvented bar menu. Small plate options now include Grouper Bites, Fish Tacos, Fried Green Tomato Sliders, Tuna Nachos, Coconut Shrimp and baskets of fried shrimp, oysters or chicken fingers with fries. The extensive wine list has earned the Wine Spectator Award of Excellence and most selections are available by the glass or bottle. Another recent addition at the bar is the large craft beer menu highlighting select draughts and bottles from around the world. With both indoor and outdoor dining, weather permitting, the Old Oyster Factory is one of the Island’s most family-friendly restaurants. Young Deck Hands have a choice of chicken fingers, fried fish or shrimp, pasta or pizza while Junior Sailors can opt for larger portions or select grilled items served with rice and veggies. Popular with all ages, the homemade Key Lime Pie, New York-style cheesecake, chilled Mascarpone Soufflé and Chocolate Fantasia -- a chocolate chip cookie topped with vanilla ice cream and whipped cream surrounded by a moat of semi-sweet Belgian chocolate and toasted almonds – are sure to satisfy any sweet tooth.
Large groups are always welcome and, thanks to its waterfront setting, extensive menu, professional service and assorted private dining areas, the Old Oyster Factory remains a popular destination for rehearsal dinners, wedding parties, family reunions and corporate events. Reservations are now accepted through Open Table or use call-ahead seating to get your name on the list. To accommodate hundreds of hungry patrons, 18 servers work the floor with another 15 or so people manning the grill, fryer, steamer, pantry and dishwasher in the kitchen. Rose, yet another longtime employee, is largely responsible for shucking the oysters – a job she took over when her aunt retired. “They always give us what we need, I’ll give them that,” says Webb. “I’ve never filled out an application since I’ve worked here – I had no reason to. They’re like a family.” “Twenty-two years is a long time,” adds Lemek. “I’ve been here that long because of the owners. They treat us so well that there are a lot of us who have been here at least 10 years. Nobody wants to leave!” “I feel like they raised me and turned me into the woman I am today,” she continues. “I think everybody should try working in food and beverage just once. I’ve met so many people.” In fact, Lemek named her daughter after a little boy who came in the restaurant every year with his family. Although Taylor recently graduated from college, he still stops in annually for a good meal and good conversation. And yet another family tradition will continue this summer when Lemek’s daughter starts working at the hostess stand. The Old Oyster Factory is located at 101 Marshland Road, overlooking Broad Creek. He was a businessman who united with a marketing whiz wife. He had a dream, a vision, and a location where he could pull it off. Thus John Boyce, owner of Mellow Mushrooms on Hilton Head and Bluffton with wife Kim, hung up his suits in order to chase his dream of owning a pizza place. When John was a child, he used to travel to Hilton Head by boat with his grandparents. It is said that his grandfather was the first person to buy gas at Harbour Town marina, so I guess you could say his love for the Island was nurtured at an early age. John moved here for a few years as a teenager and 12

worked in the restaurant business on the Island and at Haig Point on Daufuskie. “He got a good feel for the Island and the whole restaurant scene back then,” explained Kim. John eventually joined the business world and moved to Atlanta where he met Kim and the two were married in 1995. The couple moved to Nashville but felt the tug of the Island pulling at them. With the world at their feet, he and Kim chose to move to Hilton Head. “When Hilton Head gets in your blood, you just have to follow it,” commented Kim. “Over the years, John noticed that the Island did not have a lot of casual dining. He wanted to become the Wild Wing of pizza here.” The couple had eaten at a Mellow Mushroom in Atlanta and saw that as a perfect fit for the Island. They started their locally owned and operated franchise in 2002 and have been in the fast lane ever since. “If you are given a good recipe for success and do it
Aside from a wide choice of pizzas and toppings, Mellow Mushroom has calzones, hoagies, a kids menu and even a make your own salad option with a choice of 55 toppings. “If they want something on their salad that exists in my kitchen, they can have it,” explained Kim. People can choose from popular menu pizzas like Cosmic Karma with Pesto or they can build their own. All of their vegetables are cut fresh daily and the meat is cooked thoroughly, drained, and the fat is cleaned off. They have a daily special board as well as monthly specialty flavored pizza like Thai and Bootleg Bacon. “We have a little of everything for everybody,” said Kim. The Boyces opened up their second location in Bluffton in 2011 and Kim refers to that branch as “steady Eddy”. Once again, the Boyces used their business acumen to seize an opportunity. They bought the building when the real estate market was down and now it is a coup for them. right, you will do well,” explained Kim. You cannot argue that Mellow Mushroom has a flawless formula for success, but it is the extra mile that the Boyce’s go that sets them apart. “We strive for excellence in our food quality, facility, and employees,” said Kim. “You just can’t quit caring.” She made note of their great management staff in both locations giving all the credit to Easton Hampton in Bluffton and long time employee, Melvin Monroe, on Hilton Head. Melvin has been with the Mushroom almost since day one and has worked his way up from the kitchen to running the place. “It’s awesome. The pizza is great, the staff is great, and it’s a great place to work. The people that work here stay here,” commented Melvin. Kim explained that as a Mellow Mushroom franchise, they carry all the same food, recipes, and menus as created by home office, but can customize their own bar and build the restaurant around the community’s wants and needs. So while they are given the recipe for deliciously consistent pizza, they can still have the bragging rights to the rest of their successes. Their brand new Park Plaza restaurant, built as a result of Harris Teeter’s expansion, is a stone’s throw away from the old location. It is similar square-footage wise, but feels bigger because it is broader when you walk in and the bar area is roomier and inviting. It is spotless, has great ambiance, and there are 21 televisions with sporting events broadcasting from all corners inside and out. The outdoor seating is much larger at the new location and there is also an outdoor bar and fire place. In essence, it has everything you would want in your favorite pizza hang-out. There is even a trolley in the back for birthdays and private parties that seats twelve. Anyone who is a parent on this Island knows that Mellow Mushroom is a go-to destination for team parties, class events, and post-sporting event food for the family and celebratory refreshments for the parents. What people may not realize, is that the restaurant is becoming popular for Wedding Rehearsal Dinners. “Destination Weddings is becoming big business and we are seeing more and more groups that will throw their event on our patio,” said Kim.
Asked which season is their most successful, Kim shared that summer is the best monetarily, but there is good to every season. “We love the fall when the F&B people can get together and watch football. The spring is fun with the Heritage and is a good kick-off to the season and during the winter it is nice to have a break.” As for entertainment, the Boyces prefer to keep it low key. “We want to be more of a hang-out with friends and talk place so we don’t do live music. We do, however, do lots of sports and football and are proud to have just become the local home of the Georgia Bulldogs.” With eleven years of success under their belts, the Boyces have enjoyed a pleasant ride following John’s dream. “My favorite part of owning this restaurant is watching the kids grow up around here. I have watched kids go from kindergarten to walking in the door with their first date. It is a joy to be part of this community,” Kim said with a smile. Where the South Pacific meets the Carolina Coast According to legend, ex-fighter pilot Jimmy Phipps fashioned a quasi-Quonset hut overlooking the Pacific Ocean during World War II. Catering to war-weary servicemen, The Big Bamboo offered a taste of home, good conversation, cold drinks and the sounds of Big Band music. Fifty years later and half a world away, two former Disney set designers transformed a second floor space at Coligny Plaza into a replica of the fabled Tarawa bar and grill. “Where the South Pacific Meets the Carolina Coast,” brothers Tristan and Kieron O’Grady purchased The Big Bamboo Café in April of 2000 and transformed it into a local favorite. Hospitality Superman You may have met Tobey Brown at the The Crazy Crab, or at Crane’s, or The Sage Room. He shares his time among all three, doing different jobs at each, and is truly a hospitality superman. He never meets a stranger and told us at Taste how he handles it all, and what he likes about the variety of experiences. Tobey started serving at the Crazy Crab twenty years ago. “It was my first job on the island,” he said, “and although I would leave Hilton Head in the winters to travel and work in other parts of the country - Aspen, Key West, and Maui - I would always come back in the summer to Hilton Head, and my job at the Crazy Crab.”
Tobey first learned about Hilton Head while he was working in a restaurant in Vail, Colorado. “I sometimes hung out and snowboarded with this guy, Edwin McCain, who played guitar at the bar where I worked. He convinced me to come to Hilton Head during the summer, because ‘that’s where the action is’.” He was right! I continued to travel back and forth from Hilton Head to the Colorado mountains for 6 years before finally calling Hilton Head home. And, he added with a smile, “I think that dude, singer/songwriter, Edwin McCain became somewhat famous.” To avoid burnout so common in this business, Tobey began bartending at Crane’s Tavern in 2003, while continuing to serve at Crazy Crab. “I thought it would be great to mix things up a bit, and adding bartending in a fine dining atmosphere was good for me.” “The Sage Room has been one of my wife’s and my favorite restaurants,
and several years ago, I began serving there as well. I really like that all three restaurants are different, and this offers me a change of pace and environment every day.” “Some people perceive my schedule to be totally insane; but I wouldn't have it any other way! I can't stand monotony and believe that variety is the spice of life.” Tobey said with a smile that one of the challenges is to keep up with his schedule, what day of the week it is, and which “costume” to wear before leaving the house. When asked what the worst part of his job is, he said, “Basically, if I don't work...I don't get paid! It's a business model I hope to eventually change.” “I think the best part of my job is I know that every day at work is going to be different.” It's like a game. “I've always been a bit of an adrenaline junkie, and although going to work isn't really an adrenaline rush, it's that unexpected aspect that really drives me.”
Tobey is a pro at what he does, at each of the restaurants, and he said the secret to being successful in this job is to “keep it real.” “I am nice, and treat people the way that I expect to be treated. I don't try to remember everyone's name or their favorite drink, but I do recognize that people like to be acknowledged. They appreciate someone who is respectful, upbeat, and who offers great service.” Another advantage to Tobey’s job is having his days free. “I'm a huge outdoors guy and having my days off allows me to play! Most days I’m walking, riding my bike, on my paddle board, or at the gym. I think that the 95 job thing is so over-rated.” ”My dream job would be to do something that involves travel to some exotic areas of the world, combined with my other passion, health and wellness.” But for now, Tobey is grateful for the variety of experiences he has daily.

She and her husband moved to Hilton Head in 2008, and prior to joining ELA’s in spring 2013, she has worked for the Hilton’s HH Prime, for Food Network’s Robert Irvine, for Street Meet, and for Haig Point. Chef Meagen’s culinary training has been through hands on real world experience. She graduated from the University of South Carolina, but hasn’t had the desire to attend culinary school. “I originally thought of cooking as the best way for me to support myself while I attended university. After collecting a solid culinary skill set, I admitted to myself that I loved cooking, and that’s what I wanted to do. Since that day I have sought out every opportunity to learn all aspects of the industry. I try to learn something new every day.” “My current position with ELA’s has elevated my appreciation for fresh seafood and quality steaks. I start every shift by inspecting our fresh seafood to ensure that it is to the quality that our customers expect,” she said. “My favorite part of my job is creating different specials, and my favorite dishes on the menu are the Lobster Carbonara and the Grilled Swordfish.” She also enjoys creating lighter meals with lots of flavor, and utilizes local product whenever she can. The spring ushers in much excitement to the Island every year and part of that anticipation and celebration comes in the form of our Hilton Head Island Wine & Food Festival. It began as a herald of the spring, a “coming out” party for those ready to hang up their winter parkas. In its 29th year, it is now a beacon for the Island, sending off beams throughout the entire southeast that we have arrived; we are knowledgeable, we are fun, and we are a destination for gourmets and connoisseurs alike. So let’s pull out all the stops and the corks and get this party started! Event chair, Tami Bream, effused with enthusiasm about this year’s plans. “We are at the tipping point right now. People are really starting to recognize us as a force to be reckoned with. While we have always been popular as a golf and tennis and beach destination, we are now a great place for foodies and we have a fantastic showcase for that with the festival,” she said. Another boon for the festival this year has been a nice cash infusion from town bed tax monies which is clear evidence of the merit of the event to our tourism industry. sponsor of Taste of the South Magazine which Tami said “puts us on a whole new level”. No ordinary festival, our Wine & Food Festival spans months and sports numerous events and tastings. The International Wine Competition, which is in itself an acclaimed and sought after event for vineyards to gain recognition for their grapes, was held back in January. The rest of the festival takes place in March with the culmination on March 15th with the Public Tasting at Honey Horn Plantation. The entire week leading up to the public tasting is teaming with events for people to become educated about wine tasting, wine pairing, and wine purchasing. The Great Chefs of the Island Wine Dinners will start March 10th and will match the talents of our best local chefs with vineyards for unforgettable culinary experiences. There will be four Wine Knowledge Sessions during that week that will provide an affordable opportunity for wine lovers to learn about all things wine. The Grand Tasting, which is an upscale event on March 14th at Sea Pines Country Club, will feature
premium wines and hors d’oeuvres. On hand will be Eric Asimov, chief wine critic for the New York Times. “Eric is one of the most influential people in the wine world,” said Tami. He will be a presence at the event and sign his new book, How to Love Wine. The Public Tasting on the 15th will feature over 400 wines to taste, gourmet treats, races, demonstrations, and auctions. Learning is a recurring theme at the festival this year. “The real focus of the public tasting this year is on education,” said Tami. “We want to teach the tactile component of wine -How it feels in your mouth, how to smell it and taste it.” There will be another visiting celebrity on hand at the festival in Christy Jordan of SouthernPlate.com fame. Known in the southeast for the down home way she presents food, Christy will hold cooking demonstrations and sign her new cookbook. HARD TO FIND, BUT WORTH IT! “So, where do the locals go?” This question is asked countless times a day by visitors looking for the best places to eat, drink and be merry on Hilton Head. Generally off the beaten path and found by word-of-mouth, homegrown favorites offer a place to unwind with good food, cold drinks and an inviting atmosphere. It’s no accident that the DryDock Seafood, Grill & Spirits, tucked away in the Sapelo Building on Office Park Road, has all of these ingredients.
“Hard to find, but worth it,” this Island institution, which opened in 1994 moved to its current, yet still well-hidden,location near Park Plaza in 2009. Thanks to favorable online reviews and an emphasis on “fresh seafood, cold drinks and good times,” the DryDock kept its strong local following, while attracting a new crowd eager to try something different. The Irish culture is definitely doing something right. Look at all the things they have going for them: Food and drink, lore and legend, music and mayhem, and of course an entire day every year to celebrate their culture. Talk about Luck of the Irish! My personal favorite Irish charm is my ‘entitlement’ to at least one “mulligan” after an errant tee shot during every round of golf. Better yet, if I’m playing with my father, the mulligan rule holds true for as many holes as I want. In many circles, the date of March 17th is as well known as July 4th and December 25th. Not even Easter gets its own date! Think about March 17th.
Every year millions of Irish and Irish-ish, and Irish wanna-be's are granted a free day pass to join in the Holy Tradition of drinking green beer to excesses all in the name of Saint Patrick. Please to note it’s Paddy, not Patty, for short. Ever. Children are let out of school to march in parades and those that aren’t, skip school anyway to go and watch. While most people on Hilton Head see March 17th as an excuse to wear green and more importantly drink green beer, wear festive plastic and paper green hats and beads, and act… well… Irish, there are actually numerous Reilleys and O'learys and Clearys and Sullivans that spend the day celebrating their culture and their
Irish heritage with traditional foods, stories, dances, and jokes. The history of St. Patrick is worth learning so you can at least know what you are celebrating every year and speak intelligently on the subject. For starters, the real St. Patrick was not even Irish. He was born in Great Britain around A.D. 390 to an aristocratic Christian family with a townhouse, a country villa, and plenty of slaves. It is said that as a boy, he was not even interested in Christianity. At 16, Patrick’s country life took a turn for the worse as he was kidnapped and sent to Ireland where he was forced into a life of slavery tending sheep on a chilly mountainside. religion and after he escaped back to Britain on a pirate ship six years later, he became a priest. With a voice in his head, Patrick returned to Ireland for the rest of his life in order to spread Christianity among the pagans. His chosen path was no walk in the country, as he was beaten by thugs, harassed by the Irish royalty, and admonished by the British back home. It is said that he used a shamrock to explain the Christian concept of Trinity – the Father, the Son, and the Holy Spirit. For thirty years, he established monasteries, churches, and schools and baptized all of his converts. Upon his death on March 17th, he was canonized by the local church and then was for the most part forgotten. Slowly, over the centuries, mythology grew around Patrick and he was eventually named the patron saint of Ireland. ‘St. Patrick’s Day’ was actually an “invention” by Irish Americans and first publicly celebrated in Boston, in 1737, where there resided a large population of Irish immigrants. Heavily Irish cities like Charleston and Savannah joined the fun with banquets every year. The first parades were held during the U.S. Revolutionary War when Irish soldiers were fighting the British on US soil. It was not until 200 years later that Dublin rolled out its own green parade carpet in honor of St. Patrick in 1931. Hilton Head is never one to miss out on excuse for a party and thus our own St. Patrick’s Day Parade is in its 31st year now. Our parade is no afterthought, but is the real deal and takes a full year of diligent planning to pull off in style. We have had Budweiser Clydesdales, Shriners, bands, floats, and Irish dancers. We have dogs and dignitaries, loud sirens and leprechauns. Our parade is the premier family event on the Island every year and has even gained the distinction of being recognized as one of March’s Top Twenty Tourist Events in the Southeast. The Irish heritage and culture is all about tradition. When you think of Irish food, you picture corned beef and cabbage. Though cabbage has long been an Irish staple, corned beef 42

became a substitute for Irish bacon when NYC immigrants adopted the less expensive custom from their Jewish neighbors. Irish Stew is another staple, but one that you will more likely find in homes rather than restaurants. Most traditional Irish foods use simple, basic, and cheap ingredients -- a reminder of the fact that they originated in a less affluent past. The pig was always a celebrated way to feed many families and few parts went uneaten. The potato, of course, has been a major force in Irish history and theTayto, an Irish brand of potato crisps, is traditionally used to soak up the alcohol after a night out on the town. An Irish meal, of course, would not be complete without a pint, preferably of Guiness. For many years the Irish considered Guiness to be not so much a drink or even a food, but a whole food group all of its own. While it may not be traditional in cooking in the sense of going back centuries, it has been used for quite a long time in stews and as a marinade. As for Irish Whiskey, It is a fallacy that they use lots of it in their cooking as they prefer to just drink it. Irish lore and legend is full of tales of pots of gold, leprechauns, shamrocks, and the Blarney Stone. Leprechauns are associated with cranky little men known for their trickery which they used to
protect their treasure. Leprechauns, in truth, have nothing to do with St. Patrick, but have become a symbol of March 17th. It has long been told that St. Patrick once stood on a hilltop with a wooden staff and banished all snakes from Ireland. Since the Island nation was never home to any snakes, the banishing was a metaphor for the eradication of pagan ideology and triumph of Christianity. The shamrock was a sacred plant in Ireland that symbolized the rebirth of spring. It was worn as a symbol of pride and also of displeasure with English rule. The Blarney Stone is said to give the gift of eloquence in speech to all who kiss it (easier said than done for to reach it is a feat in itself). OCD Band

Hilton Head’s OCD Band has been jammin’ and makin’ music at Island restaurants, clubs, and festivals for four years. With their Classic Rock theme, OCD’s five member band will rev you up with artists like Eric Clapton, Stevie Wonder, U2, Bon Jovi, and Tom Petty. Combining their musical talents, they easily crossover from genre to genre and will throw in some modern, blues, alternative, country, and they will even give you a little reggae music if you’re in the mood. It’s all about fun to OCD. All five musicians in OCD have transplanted here from various parts of the country: Connecticut, Ohio, Georgia, and Michigan. Todd Toho plays the lead guitar and rhythm post and offers up some mean background vocals. Sean Biggins slams out acoustic guitar and is lead vocalist. Scott Standen mans the drums, while Dr. Dave Washack (chiropractor) thumps on a six string bass, and Rob Cobia keeps the rhythm flowing on electric guitar. With the merging of these five well respected local musicians, the OCD band has quite a following. In the lead post, Todd Toho has been playing the guitar for 22 years. He started playing in bands on the Island in 44

2000 and met fellow OCD band mate, Rob Cobia, in his first band here. “We always talked about our love for music and putting a band together,” said Todd. “We never really thought it would happen, but it was a nice dream. Then as years passed, Rob knew someone and he knew someone else and then the dream just started to become a reality. It just happened. We are very blessed.” Todd left his day job a year ago to pursue his music full time and besides OCD, he plays in an additional five local bands, including La Bodega, 4 Piece & a Biscuit, Big B and the Stingers, and Dos Amigos. Their name came about as a result of a chain of e-mails going around between them with possible band name suggestions. One of the guys responded to the e-mail and said his OCD was kicking in and the name just stuck. “Short and easy,” explained Todd. With the exception of Todd, the OCDers all have families and day jobs, but love the musical outlet that they can find together on weekends. According to Rob, “We all enjoy playing music and I love the camaraderie of being with the guys.” Rob is an appraiser with Coastal Property Appraisals and while his wife,
Laura used to get up and play Tambourine in my and Todd's old band Traynrekk, now she stays home with Cassie (daughter) and son (Noah). Rob refers to his music as a “healthy hobby”. “My wife is a good sport when I head out at night. She just tells me to be careful,” said Rob. Oldest daughter Cassie is also a budding musician and Rob said the boys will even learn the Taylor Swift song of her choice for festivals and Cassie will take the stage for the vocals. With their amazing musical talent, OCD can adapt to any crowd, venue, or occasion. They can speed it up or slow it down. They can rock the likes of Wild Wings, the Smokehouse, and the Boardroom, or play family friendly for weddings, private parties, and Shelter Cove and Bluffton festivals. You can follow OCD and where they will play next on their Facebook page and they also take e-mail addresses during every gig and will send out a blast with their schedule. They are happy to take requests when they are playing and if there is something that you think they should learn you can message them on FB and they will put in their repertoire.

Spring is here and it’s a time of new beginnings, fresh perspectives, and perhaps even a re-commitment to your health and fitness goals. With the New Year in full swing now you may be someone whose resolution is a distant memory. My beef with resolutions is that they are generally a broad sweeping idea to change something big. In my experience that’s a recipe for disaster. Committing to smaller incremental steps is a more sustainable way to tackle change. Keep it simple, my friend! In the spirit of keeping it simple let’s focus on liquid intake alone this month. Our liquid calories can get off track and out of hand quickly because we are not always aware of exactly how much we are consuming. There are a few simple ways to keep your liquid intake in line with your goals. If you are interested in losing weight staying hydrated is of utmost importance. To be at your best you need ½ your body weight in ounces of water every day. For example, a person weighing 150 lbs will need 75 ounces of water every day. Proper hydration levels can help to control your appetite, keep your internal organs functioning properly, and even help to keep your skin looking clear and fresh. It may be difficult to get all of these ounces in at first. You might feel full, or feel like you are racing to the restroom all day. Creating a game plan to ease in to this requirement will 46

be beneficial. For example, commit to a 3 day plan of getting ¼ of your requirement, then increase by 8 ounces each day until you are at your goal. Some of us find it very difficult to walk away from soda, sports drinks, and energy drinks. The high concentration of artificial sweeteners in these beverages is actually addictive. You crave more when you drink more. To overcome that cycle, slice up 2 lemons and 1 lime in a large pitcher and fill it with water. When you are craving a sweet drink go to this all natural alternative. A tip here: after dinner stick to unsweetened water or try a nice warm cup of green tea. The warm beverage is actually an appetite suppressant and green tea can stimulate your metabolism. I’ve saved the big gun for last: coffee. You are probably waiting for me to rant about why you should skip your coffee but surprisingly I’m going to be fairly gentle on this one. Coffee is a great way to start the day if you can do two things: 1) keep the cream and sugar in check and 2) commit to moderation. An 8 ounce cup of coffee contains 135 milligrams of caffeine which is almost 4 times as much as the same serving size of tea. In addition, coffee can act as a diuretic which increases dehydration. So while it may help curb a headache and give you an energy boost, it’s working against our goal of proper hydration levels. To avoid these negative side effects you’ll need to
commit to no more than 1-2 cups per day maximum. Instead of cream and sugar consider adding 2 ounces of almond milk and 1 packet of the natural sweetener Stevia to your 8 ounce cup of joe for a healthier way to enjoy this beverage. The simple fact is that hydration is a critical yet often overlooked component of overall health. Commit to small and sustainable action steps to keep this very important piece of your well-being in line. Keeping it simple can place all of your goals within reach! The sound of bagpipes and blast of a cannon firing over the Calibogue Sound signals the starts of the 46th Annual RBC Heritage Presented by Boeing. A player and fan favorite, South Carolina’s only PGA Tour event returns to the Harbour Town Golf Links in The Sea Pines Resort, April 14-20.
At last year’s tournament, Irishman Graeme McDowell began the final round four shots behind leader Charley Hoffman. Finishing the day at 2-underpar, McDowell went on to beat Webb Simpson in a one-hole playoff to earn his first Tour victory since the 2010 U.S. Open. In addition to watching the biggest

The Art Market
On April 26-27, more than 90 artists and artisans from around the country will display and sell their original works during the 14th Annual Art Market at Historic Honey Horn. With entries ranging from photography, oils, watercolors and wood to glass, mixed media and clay, this prestigious outdoor fine art and craft show is judged by an expert panel. In 2013, Fred Johnston of North Carolina took home Best of Show for his clay pieces with Wayne Werner of Maryland placing second with jewelry and A.B. Word and B.L. Bryant receiving the third place award for pastel/drawings. Held under majestic live oaks on a 68-acre historic property, The Art Market is presented by the Coastal Discovery Museum. Rib Burnoff
According to the South Carolina Barbeque Association’s website, South Carolina is the only state in the nation to feature all four types of barbeque based on the type of sauce – vinegar and pepper, mustard, light tomato and heavy tomato. It is also noted that Spanish adventurers established the nation’s first colony on Santa Elena (now Parris Island) in the 1500s. There, Native Americans were introduced to pigs and the Spaniards were introduced to slow cooking with smoke. This makes Beaufort County the birthplace of barbeque in the United States. Before hitting South Carolina’s BBQ Trail, stop by Historic Honey Horn on May 17 for the 18th Annual Kiwanis Club Rib Burnoff. From pit to plate, the Island’s best chefs, caterers and amateur grill masters will serve heaping helpings of ribs and BBQ to suit every taste from noon to 4 p.m. Blind judging and popular voting determines Rib Burnoff champions. Last year, Sea Eagle Market was rated best barbeque by the judges in the professional category; Smokehouse took the top spot as determined by the popular vote; and Hawg Heaven secured the amateur division title. SOFT-SHELLED CRABS! What’s in Season?
A Spring and Early Summer Delicacy BY LOUISE LUND
Could there be any more highly anticipated treat in the spring season than soft-shell crabs? This is the time of year when a hard-shelled blue crab becomes a soft-shelled one. ‘Soft-shell crab’ is a culinary term for crabs that have recently molted their old shell and are still soft before their shells start to turn hard again. The season starts in early April and runs through summer. In early spring down the East Coast, a mass exodus of blue crabs surface from hibernation beneath the ocean floor. Crabbers know that shortly after molting, the crabs will bury themselves in mud or hide in eelgrass. So before this can happen, crabbers quickly harvest them by dropping their pots into the bay, pulling them out a few days later, and bringing them back to 62

the dock. Here the crabs are transferred to shallow slough trays, which are constantly irrigated with bay water. They are closely monitored for the moment when they molt their hard winter shells. As the hard shell breaks off - the term often used is that the crabs have "busted" from their shells - the crab is left with a paper thin exterior, more like skin than a shell. Within 2 to 3 hours, their shells start to turn hard again, so timing is everything. In this small window of time, the crabs are removed from their tanks and either frozen immediately, or packed and air lifted live to fish markets. Once molting is complete, most of the crab is edible. If the crabs are left in the water, after only a few hours they begin growing
another hard shell. They are closely monitored in holding tanks until the molting is complete. All this must happen quickly as the crabs can only survive a short while out of water. Seasonal soft-shell crabs are a popular restaurant item, but because of the need for precise harvesting and shipping, the markup is extraordinary. Fortunately, soft-shell crabs are easy to prepare at home. They take only minutes to cook, so they're traditionally pan-fried or sautéed. Because the crabs need direct heat to give them their outer crispness, they should not be boiled or steamed like hard-shell crabs. When buying soft-shell crabs, live ones are the best but they're often difficult to find. To select the tastiest, use your nose. When fresh, they smell clean, like sea mist. All too often, softshell crabs are over-battered and over-fried. At that point the crunch comes entirely from the fried batter, and the delicate flavor is lost. Locally, Hudson’s Seafood House on the Docks, has built their own flowthrough system with shedding boxes to manage the molting process. Andrew Carmines, General Manager of Hudson’s says, “Last year alone we were able to shed approximately 6,000 crabs, most of which were served at the restaurant, with some being available for wholesale and retail.” If you have never had soft shell crab, this is the year to try them. You will fall in love with this delicacy.

SOFT SHELL PREPARATION: Remove belly plate, lungs and eyes. Dip in egg wash* mixture. Cover the crab thoroughly without pushing out the juices. Pan sauté until golden brown. Be careful not to cook too long as soft shells have a tendency to pop if overcooked. *Egg Wash Whisk together: 6 whole eggs, 4 egg yolks and 6 tablespoons buttermilk.
BEET SALAD INGREDIENTS: 6 beets (3 red, 3 gold) 2 cups loosely packed arugula 1 cup loosely packed mixed greens 1/4 cup goat cheese Black pepper and kosher salt to taste Your favorite balsamic dressing 2 tablespoons Extra Virgin Olive Oil
PREPARATION: Preheat oven to 350º. Rub beets with olive oil, salt and pepper. Place on a baking sheet and roast for 2 hours or until soft. Place beets in a paper grocery bag and close top so it is air tight. Peel beets and discard skin. Cut into desired size cubes. Season with salt to taste. Arrange arugula and mixed greens on a plate, top with beets, goat cheese and soft shell crab.
