PUBLISHER’S NOTE TASTE OF HILTON HEAD
So I admit that I am not the most technical person in the room at any given time. Somehow I conveniently missed out on that brain upgrade and my kids failed to teach me out of sheer frustration (which is how I think most parents learn). Ultimately I have a love/hate relationship with anything that is technically driven…computers, phones, etc.… One of those 'Cant' live with em/ can't live without em' relationships. On the love side, I love what technology can do and how simple it makes most things. Information is accessed in a heartbeat, messages can be sent from anywhere at any time, shows and movies can be recalled at the touch of a button. Heck, even this magazine is a product of today’s technology. On the hate side, the constant changing, upgrading and overall frustration of trying to keep up with things drives me crazy. Every time I get the hang of a new gadget, program, or process it changes and I am forced to readapt and relearn. This is always for the better, they say, but for us not-so-tech-savvy it is a constant struggle. Obviously, technology is front and center in our daily lives. We live in a world that has been trained to rely on 'the latest and greatest' for almost everything we do. I get it, but that doesn’t mean you should forget the human aspect of life as well does it? I mean everywhere I look people are constantly on the phone or searching for something on their phone or computer. When driving, I know some people that will use their GPS to go from the south end of the Island to the north end…really? I don’t want to minimize what technology does, but I do like to think about some of the things that we as a population are missing like face to face conversations with friends and family. I like the rule that says when eating a meal, every person needs to shut off their phones and put them in the middle of the table. No texts, no alerts, no emails - what a concept! I also encourage participation in activities that promote some type of physical or recreational effort. Try leaving your phone in the car for an hour while you walk the beach. Who knows? You may enjoy it. All of my best memories have little to do with technology. Enjoying my kids sporting events and family vacations, all of the good times spent with friends past and present. These snapshots have nothing to do with electronic devices. This spring try turning your phone or computer off on occasion. Take time to actually talk and listen to people. Don't feel guilty if you missed a call or didn't return a text or email within 30 seconds of receiving it. Remember when we only had land lines and if someone called you and you weren't home you just plain missed the call?! It's okay. Life goes on and maybe with technology tuned out on occasion you will have more time to smell the roses and take in our beautiful Island scenery.

Congratulations on recently being voted Hilton Head’s Best Mexican Restaurant. Can you tell us more? Since opening in late 2014, we have been working hard at delivering an unparalleled Mexican food experience to Hilton Head. 2015 was really our first full year in business on Hilton Head and we were thrilled and honored to receive this Best Mexican Restaurant distinction!

Wow, You must be really proud of your Q: team. This is a big accomplishment for us and I’m extremely proud of our team and all the hard work they have put in to Holy Tequila to get us on the map. It’s great that our concept and cuisine has been so well received and we are excited to keep innovating and delivering delicious and affordable food that people love and keep them coming back week after week. What makes Holy Tequila and the food so Q: great? We take a fresh approach to our food and Mexican in general. We’re working hard at creating a gourmet quality niche in this segment that is a far cry from the
numbered chalkboard items covered in mystery sauce people have come accustomed to at more traditional Mexican restaurants. We are setting ourselves apart from other restaurants with an unparalleled dining atmosphere, leading edge service and a chef inspired menu featuring gourmet quality ingredients to create an assortment of dishes with a perfect balance of Mexican influence and new American flavors— all for around an $8-$10 price point. Furthermore, we offer a localized menu that allows us to celebrate the regionally sourced ingredients and local flavors of the lowcountry. Every golfer has four-color, surround sound memories of their best rounds and greatest shots –including, perchance, that elusive Hole in One. It is a time honored tradition that he who sinks a Hole in One is thereby awarded with the privilege of purchasing all the drinks for the rest of the happy foursome. The ball becomes a piece of historic memorabilia and the story behind the feat becomes etched in the golfing annals of all present. These shots and stories are what keep golfers going back for more and what make golf so unique. If the walls could talk at the British Open Pub, the stories of some of golf’s greatest victories and most heroic shots at one of golf’s greatest tournaments would come to life. This golf history at the British Open Pub will beckon you back for further looks and inspire continued conversation. Add to this the entire package of cold drinks and unforgettable food, and a visit to the British Open Pub will be a Hole in One for the whole family. The British Open Pub is the vision of Damian Hayes, a local since 1981 and avid golfer. Damian came here to visit his brother one weekend and never left. He worked in the bar management business on the Island for many years, all the while with a mind toward opening a golf themed restaurant one day. His vision came to fruition in 1998 when he remodeled a coffee shop in Wexford Plaza, turning it into the perfect 19th hole. “Originally I was going to do a Master’s theme and name the restaurant ‘Amen Corner’”, commented Damian. “But there really was nothing different there, so I went with the British Open theme which gave it the perfect twist and the opportunity to fill a unique niche with the menu.” The Pub has become a Hayes family affair with wife Andrea as manager, daughter Brooke as manager of catering from afar, and high schoolers Ali, Skylar, and Evan helping out with busing tables and whatnot when they can. From the moment you walk inside the British Open Pub, you feel at home. The rug is a Scottish tartan plaid of blues and greens, the tables are a deep wood, and the seat cushions are comfy red leather. The warm colors are complimented by the
golf art and memorabilia that adorn the walls and are the pride and joy of the owner. Damian could tell you a story about every one of the signed prints from past British Open champs. His pursuit of these signatures has been dogged over the years and includes tales of his wife befriending Seve Ballesteros and a twice signed print of Arnold Palmer on the bridge at St. Andrews. Aside from the golf collection, flat screen TV’s displaying the day’s competitions dot the restaurant while some of the booths have private TV’s to tune into your own event. The Hayes family opened a Bluffton location in Sheridan Park in 2011 which boasts all of the amenities of the Wexford location as well as big outside patio and an indoor fireplace. It is easy to see why the Hayes’s expanded to Bluffton, as the entire package is so tastefully done. Corey Butler, the Hilton Head chef, has been serving up his popular dishes for 8 years and some of the staff has been there since day one. “I have been blessed with this place. My staff is consistently excellent and we really don’t have any slow months,” said Damian. But it is not just the good service and ambiance that draws a crowd, all of the food served is high quality from the deli meats to the fresh fish to the Angus beef. When discussing his menu, Damian infused, “There is not too much we don’t have.” Aside from their signature British dishes of St. Andrew’s Fish & Chips made with fresh cod and Specialty pies including steak and mushroom, Beef Cottage, and Lobster Pot Pie, they offer a bevy of burgers,
“Sandwedges”, and salads (From the Green). Their ribs are super popular and have won local awards and all of their beef is Certified Angus which means it is in the top 8% to achieve this lofty standard. They have nightly features like Prime Rib Wednesdays, Live Maine Lobster Thursdays, and of course Fish & Chips Fridays. There are some yummy desserts like the Homemade Chocolate Bread Pudding and Skylar’s Favorite Chocolate Cake is made daily by a local baker. For the kids, they offer a “Junior Golfer” menu that comes with crayons and includes Chicken Tenders, Grilled Cheese, and Cheeseburgers, among others. Don’t miss the British Open Pub brunch on weekends with bottomless mimosas and bloodies starting at 11 a.m. on Saturday and 9 a.m. on Sunday. The meal begins with freshly baked scones and progresses into choices that include The California Benedict, Seve’s Omelet (feta, olives, and tomatoes), Basil’s Banger & Beans (English sausages wrapped in puff pastry with gravy, eggs, baked beans, and toast), as well as the traditional breakfast classics. The 19th hole at both Hilton Head and Bluffton locations boast that they are the only Titliest Bars in the world. This translates to 1,300 Titliest golf balls that are inlaid inside the bar and flank autographed portraits of British Open winners. It is truly a sight to behold. Behind the bar are many shiny taps overflowing with favorites like Guinness, Stella, NewCastle, Magner’s Cider, and Tennents Lager. They carry the finest ales and single malt scotches produced in England, Ireland, Scotland so all
thirsty golfers will be satisfied. Damian is a big champion of giving back to the community which he does in the form of whopper scholarships for local students. For the past 18 years, the Pub has put on a charity golf tournament which Andrea facilitates. From the proceeds, they award $20,000+ annually in scholarships to between 3 and 6 students. They also donate money for clubs and the like to The British Open Pub Junior Golf program at The Island Recreation Center. This spring, stop by the British Open Pub during the masters to catch the action with fellow golf fans. Roars and cheers can be heard all around the Pub as if you were walking Amen Corner behind the leaders. Also, if you stop by during the Heritage, you will be sure to chance upon many caddies and even some pros. It’s the cliché to end all clichés: “The island’s best-kept secret,” but how else could you describe Sunset Grille? For 21 years, this small but beautiful spot at the back of a winding road in a RV Resort has thrived on a whisper campaign carried out by food-savvy locals. Eschewing traditional advertising for the most part, Linda and Hugh Lockman relied instead on word of mouth to bring patrons in the door, not a small feat when that door happened to be about as far off the beaten path as you can get on Hilton Head Island. “For years people would bring guests out here not telling them where they were going. You’d see their face when they got to the window, just saying ‘phew,’” said Linda. Those windows form a stunning panorama that alone would justify Sunset Grille’s remote location. As the restaurant sits in a spit of land jutting out into the still waters of Hilton Head Harbour’s mouth, with Skull Creek flowing along one wall, the tall windows frame the dining room with one of the most fascinating views on the island. “We’ve seen times where the rainbow starts on one side and ends on the other,” said Hugh. “During a private party a while back, we were watching the sun set on one side and the full moon rise on the other.” It’s hard to overstate how magnificent the view is from 16

Sunset Grille’s perch on the edge of the world. But it’s equally hard to overstate what a small part it is of the restaurant’s overall appeal. “The view’s just the icing,” said Linda. “It’s darn good icing, though.” As glorious as the view is, pretty sunsets alone will not keep customers coming back for 21 years, nor will it send them off after their meal with the urge to share this secret spot with others. For that, you have to have an exceptional menu, and Sunset Grille happens to have one of the best. “Really, our holy trinity is Hugh’s house-smoked salmon, our fried oysters and our shrimp and grits. If we ever took those off the menu, people would stop coming,” said Linda, adding that she has 20-year customers who have never ordered anything else. “Apart from that, we change it up as much as possible. We like to offer great fish as it comes in; it would be
stupid not to, being where we are.” That’s not to say it’s all seafood at Sunset Grille. Everything from duck breast to lamb shanks finds a home on the menu, and we can attest to the sublime flavors and textures of the coffee rubbed NY strip steak. Every dish is the unique creation of a couple fascinated by food, who will pore over magazines and binge on cooking shows looking for the next spark of inspiration. Their culinary chops pair equally well: Linda was in charge of the dining in Wexford before the couple embarked on their journey at Sunset Grille, while Hugh had a lengthy career in wine and spirits. “Hugh was in the back at first, but then we switched,” said Linda. “With his wine knowledge, it made more sense for him to be out front.” Under Hugh’s care, the restaurant’s superbly crafted wine list has gained just as much of a reputation as the food. That’s not to say the pair sticks to their own lanes when it comes to the food and the wine. Hugh’s mastery of the smoker has raised the salmon to legendary status, while Linda was in the midst of planning a Sicilian wine dinner when we spoke, inspired as she was by a recent trip to Sicily. The magic Hugh and Linda work in the kitchen and at the bar is so effective, in fact, it’s posing a serious threat to the restaurants’ “secret” status. Hugh’s Bloody Mary Mix was recognized by Garden & Gun as one of
the best in the South, and the Lockmans have been invited out to Bouchaine Vineyards to take part in a special chef series of wine and food tastings. If Sunset Grille’s culinary reputation has spread from the editor’s desk at Garden & Gun clear across the country to the rolling hills of Napa Valley, it’s safe to say we can drop the “best kept secret” moniker. “The cat’s out of the bag, so to speak,” said Hugh. It helps that in the 21 years since Sunset Grille opened, the island has caught up to the Lockmans somewhat. “At the time we were way out here, because it was before the Cross Island Bridge. People said ‘What the hell are you thinking opening a restaurant in a RV Resort?’” said Linda. “Then the Cross Island opened up, Bluffton went boom, and suddenly we’re centrally located. Before we were out in the boondocks, and now we’re right in the middle of things.” It doesn’t hurt, too, that the restaurant finally received a parking lot, having somehow operated for nearly 19 years with a handful of spots to call its own. “That was a real thorn in our side,” laughed Hugh. So while it’s safe to say that we can cast aside the term “best kept secret,” when it comes to Sunset Grille, there
needs to be a few secrets left, right? “We have regulars who came back to see their favorite people. That’s the biggest secret of all – just surround yourself with good people,” said Linda. While all the credit in the world can go to the view, the food and the immense care the Lockman’s take in creating an unforgettable dining experience, in their view their biggest secret is their staff. “They’re more family than employees. You treat people good, they treat you good. It’s a simple philosophy,” said Linda. With a laugh, she added, “It’s dysfunctional, but it’s a family.” Dysfunctional or otherwise, it’s a family that has come together at a little restaurant on the edge of the map and created something special: Hilton Head Island’s worst-kept secret.

Chaun Bescos The Reins behind Red Fish Kitchens BY RISA WILLIAM McMILLAN

His name is Chaun, not Shawn. Ch as in Chardonnay. Ch as in Red Fish’s chargrilled chicken. With 22 years of cooking under his belt and etched in his brain, Chaun builds his dishes based on taste and fresh ingredients. His experience and knowledge are his guides as he maneuvers his way through running the kitchens at both Hilton Head and Bluffton locations of Red Fish. As head chef of these local favorites, he is quite literally the reins behind the restaurants. Chaun grew up on the big Island of Hawaii on an organic farm. He carried his family roots with him and starting working as a chef at age 15. He pursued the field in college and studied at the Western Culinary Institute in Oregon. His career began with Doubletree/Hilton Hotel chains where he worked his way up the ladder over the course of 8 years. In 2003, Chaun followed his mother to Hilton Head and became chef at the Old Oyster Factory. The owner of the restaurant eventually moved him into the kitchen at Alexander’s and finally over to Red Fish where he opens one of the locations in the morning and closes the other at night. Through the years, Chaun has become an encyclopedia on local fish. Because Red Fish has perfected the art of ‘ocean to table’, Chaun is hands on in the processing of the fish from the butchery to the cooking. “When they talk about slow food or farm to table, it is about whole food and minimizing the process. You cannot minimize the steps from ocean to dinner table any more than we do at Red Fish,” said Chaun. “We have a great team of sous chefs and line cooks and it takes all the parts to make the whole. It’s a lot of fun.” Chaun does all his cooking by taste – no recipes or cookbooks lying around. He has built a rapport with local farmers through the years and now adapts his dishes to the catch of the day and what was just harvested from the ground. “The farmers send me photos of what they have and I tell them what I want. We rotate out our nightly specials based on what comes in that day.” Aside from churning out amazing seafood dishes, Chaun is hands-on with smoking and curing their meats including their 22

yummy brown sugar bacon. Spring diners at Red Fish can look forward to Chaun working his magic with the likes of Cobia, Wahoo, and Blackfin Tuna. Other favorites include his Maple Brined Berkshire Pork Chop and local oysters when in season. When he finds time away from the restaurant, Chaun is spending it with his wife and two babes, ages 3 and 1, and growing mushrooms. “It’s almost easier to do the restaurants than the kids,” Chaun said with a chuckle. He has started to take his 3 year old on his mushroom foraging expeditions. “I am excited about this new era with the mushrooms,” said Chaun enthusiastically. His plan is to grow oyster mushrooms off of cardboard and use them at Red Fish in his dishes as well as finding medicinal uses for them. Like his cooking, he has a hunger for growing and learning. If his success in the kitchen translates to his mushroom growing, Chaun will have a fun time meshing the two professions.

March has always been a time for celebration on Hilton Head, and the Carmines family at Hudson's has been planning its annual Seafood Fest for months. The common thread will be that you will not go hungry or thirsty at these 'all you can eat' affairs. According to Andrew Carmines, event coordinator with his wife Erin, "This festival has grown into a lot more than seafood. All the events have a unique twist. There will be tons of great food and nobody will have any trouble finding a cocktail." Aside from the food events, the festival will feature some lowcountry experiences on the water during the day. One experience will teach how to shrimp and crab and participants can have their catch cooked for them that same night. There will be educational seminars as well. Thursday night's event will be Meat Madness, put on by the Serg Group outside at Sunset Landing at the Boathouse. Festival goers will flit 34

between different meat stations set up on the water. All carnivores will receive a fork, knife, napkin, and beer stein at the door and when any of the above paraphernalia is lost, hands will become the utensil of choice. "This event is going to be so outrageous and fun. The point is that at some point you will lose something and will have to eat with your hands," said Andrew. Beers and bourbons will flow while Cranford Hollow will be on hand to boost the merriment. Honey Horn will be the setting for Friday night's Oyster Roast and Pig Picking party. Five different barbeque chefs, amateurs and pros alike, will come together in this fabulous setting to roast their own whole hog in their own unique way. "This is going to be a spectacle," commented Andrew. There will be pork bellies, Boston butts, barbeque galore and all the trimmings. "Each hog is cooked differently. One chef starts smoking his hog the night before while another hangs his from a tree." This is another ‘all you can eat’ event and Service Brewing Company out of Savannah will be sponsoring the event and providing the beer. Aside from the pig pickin’, local oysters will be sliding and entertainment jamming. Saturday afternoon is the signature
Seafood Fest event from 11 to 5 at the new Shelter Cove Park. Twelve restaurants will participate with chefs serving up delicious samples of their favorite seafood fare. There will be tents on hand from Hudson's, Crazy Crab, Red Fish, Old Oyster Factory, Alexander's, Lucky Rooster, and Serg Group to name a few. "This is a great way to spend the afternoon with your family," said Andrew. “There will be a rock climbing wall, bungee jumping, and all sorts of kid's activities.” Seafood Fest is hosted by the David M. Carmines Memorial Foundation. It helps to raise money for MD Anderson Cancer Research Center, the Island Recreation Scholarship Fund, Coastal Discovery Museum, Port Royal Sound Foundation, and the American Cancer Society. The David M. Carmines Memorial Foundation was established by the Carmines family, owners of Hudson's Seafood House on the Docks restaurant, in memory of their son, and the seafood festival is the organization's main fundraiser. Mark your calendars for Sunday, May 1st, when the 12th annual Yacht Hop will transform Harbour Town Yacht Basin into a party for the ages. Revelers will bop and hop from Yacht to Yacht and enjoy good drink, food, and fun. It is a merry event laced with laughter and good cheer with the proceeds going to one of the worthiest of all local causes, Hospice Care of the Lowcountry. Twelve years ago, the Yacht Hop started in Wexford with 4 yachts and this year they are expecting 25. The growth and popularity are not surprising given that it is one of those outdoor parties that is anticipated for months. It is an event that encompasses and celebrates our beautiful Island and the generosity and fellowship of our residents. What better way to help Hospice than by celebrating life? Everyone loves to stroll through Harbour Town and take in the exquisite boats. Yacht Hop gives the opportunity to actually board those boats and not only enjoy their craftsmanship, but hob nob with their owners and other guests. Participating yachts will be decorated to 38

the nines and each glamorous vessel will feature a local chef preparing samples of his signature dishes. There will be two cash bars on land and one on a yacht at the end of the docks. The Headliners will entertain as hoppers meander along the docks and decks. In a nutshell, Yacht Hop is one of those super fun, feel good parties. If you think you have to don your finery for the festivities, fear not. No tuxes or little black dresses required. On the contrary, flip flops and shorts abound as well as nautical fare. There is even a bit of friendly competition for the Best Dressed Nautical so you may see a few Skippers, Gilligan’s and Mary Ann’s frolicking about. “That is the beauty of this event,” said Darlene Shuetz, Director of Community Relations for Hospice Care of the Lowcountry. “It’s not like dressing for the ball. Guys can wear shorts and the girls wear sundresses and flip flops.” There is a live and silent auction as well as another competition, based on monetary contributions, for the Best Yacht Hopped. should do the trick: The money that this event raises for hospice goes directly to patient care. Last year they banked $140,000 which translates to a whole lot more medical equipment, services and help for the patients. “The money goes to bridge the gap between what Medicare pays and the services we provide,” explained Darlene. “Sometimes our nurses make daily visits to patients and Medicare is only required to pay for one visit every 2 weeks. To the staff, it gives them the tools to really make a difference at the end of life. It enables them to offer the extra services and be able to go above and beyond. What is important to one family might be different to another. An annual rite of spring, the weeklong Hilton Head Island Wine+Food Festival returns to Harbour Town, March 7-13. With wine dinners and educational seminars, tastings and cultural happenings, the 31st annual event begins with Wine & Cinema featuring “The Year of the Comet” at Bluffton’s Custom Audio Video showroom on Monday and builds up to Saturday’s Public Tasting, renowned as one of the oldest wine festivals on the East Coast. Led by experts in their field, this year’s educational offerings include, “Zing” Food and Wine Together, Crystal, True Persuasion, Wine Maker for a Day, AVV (Alexander Valley Vineyards) and a Banfi Brunello Tasting/Seminar. The tickets have been purchased, friends have been gathered, the weather forecast has been checked and the perfect outfit has been picked out as one of the oldest wine festivals on the East Coast. with over 250 Chards, Zins, Merlots, Cabs, Pinots, Burgundies and Syrahs from around the world to try and a mere three hours to do it. If you don’t have a sommelier on speed dial, don’t panic. Taste asked Festival Director Jeff Gerber for tips on navigating the Public Wine Tasting, one of Hilton Head Island’s most popular annual events. The professional “Wine Bubba” and longtime food and beverage industry veteran served up some guidelines for making the most of the experience. KNOW BEFORE YOU GO First, look over the WineFest program and decide where to start and what not to miss. A little planning goes a long way, whether you are a wine authority or wine tasting newbie. Gerber generally begins with white wines then moves on to lighter reds, like pinots, followed by heavier reds. “I try to stay away from the sweet wines, like dessert wines, until the very end because the sugar can really mess your palate up,” he explains. However, a wine tasting is as individual as the thousands of participants in attendance. Love a buttery Chardonnay or an oaky Cabernet? Then you might pit Old World against New World wines and decide which you prefer. Or, you could explore a particular region or country, like the Pacific Northwest, Italy or Spain, and its various varietals. Just don’t get carried away. “If you plan ahead too much, you make it harder than it has to be,” adds Gerber. “With wine, I like to think of it as the thrill of the hunt.” ARRIVE EARLY Gates open at 11 and this is a chance to check out various special events, such as the Grey Goose Bartenders Challenge with the Island’s best mixologists and celebrity guests creating signature vodka cocktails or the Sysco Outdoor Gourmet Challenge where local chefs teach you how to make their best dishes, before the crowds arrive and the wine starts flowing. PACE YOURSELF You don’t chug a bottle of wine at dinner and, as Gerber points out, “more about quality than quantity.” If you don’t
want to be poured into a taxi at the end of the day, think of the 250 bottles as an opportunity rather than a challenge. “People who buy wine for restaurants don’t drink 100 wines in one day,” he says. “I’m not saying I haven’t been that guy, but part of it is just about pacing yourself. I equate it to exercise – you don’t run five miles the first day, you just run a little bit.” Take a break now and then to listen to some smooth jazz, indulge in gourmet delicacies, bid on award-winning wines at the silent auction, check out the highly competitive Waiters Race or simply sit back, relax and enjoy the view of the Harbour Town Yacht Basin. Even if you only try 30 wines – a respectable amount, in Gerber’s opinion – you have essentially spent the equivalent of two good bottles of wine for your ticket. ASK THE EXPERTS The representatives on hand from domestic and international vineyards are passionate about their product and eager to share their expertise. They can tell you all about the grapes used in their wines, the type of soil they are grown in, the primary tastes and overtones and make suggestions based on your preferences. Once you know what you like and why you like it, “then you become a better consumer,” Gerber adds. “When you go to the wine store or out to dinner, you can say, ‘I like Old World Cabernets where the tannins are a little softer or I like Cabernets from California.’ Then you can try new things and it makes it easier for people to make great recommendations and going out to dinner more fun.” Your newfound knowledge is also sure to impress friends and family. TAKE NOTES AND/OR PICTURES The thrill of finding your new favorite wine will wear off quickly if you can’t remember its name. Don’t be afraid to write down what you learn and snap a picture of favorite bottles. Now that you have a plan and know what to expect at the Public Tasting, grab that souvenir wine glass and enjoy all the world of wine has to offer. How and what you taste is completely up to you, just don’t be afraid to try new things or learn something new. “There are so many great wines in the world,” concludes Gerber. “The best one is the one that makes you happy.”

You might recognize that she is young by looking at her, but you would never guess 22 after speaking with her and listening to her sing. With a maturity beyond her years and a vision that reaches beyond the norm, Sara Burns is a confident young adult who sings with sass and soul. Penetrating the local music scene a few years ago as a young, solo, female artist, Sara could be seen as pioneer on the Island for women in the industry. She has since mentored other young female talents like Taylor Kent and enjoys teaming up with them when she can. Wherever she sets up camp, Sara wows local audiences who marvel at her rich tone and professionalism.
Sara grew up on Hilton Head and started singing and playing guitar in her Youth Group Praise Band. She finished high school in 3 years after which she went to USC -Columbia where she majored in accounting and graduated with a 3.89 GPA. She cut her first EPA as a senior at Hilton Head High and her first CD, “Girl on the Run”, in Nashville during the spring of her senior year of college. Sara now splits her time between Nashville and Hilton Head; she lives in Nashville in the off months writing music and being a background vocalist for recording studios and returns to Hilton Head in the spring and summer to perform at venues such as Hudson’s, Old Oyster Factory, and Sea Pines Beach Club. While country might fit her voice which is full of low tones and raspy soul with a hint of twang, Sara prefers not to define herself as modern country as she does not like where it is headed. “I’m not sure I want to position myself in that genre. The songs are all about drinking beer. Hopefully it will circle back to more meaningful songs,” said Sara. So disillusioned with the current state of country music, she just released a song that parodies the intoxication of the industry and the stereotype of what Nashville represents titled, “Beer on your Boots”. Artists that Sara likes to sing include the Dixie Chicks, Shania Twain (her inspiration when growing up), Joni Mitchell, John Denver, and Jim Croce. The artists that she most emulates are the classic country artists like Dolly Parton and Loretta Lynn. “Loretta Lynn was sassy and strong when most women were singing about heartbreak. She wasn’t like that.” “Girl on the Run” is an apt name for her first CD as it describes her drive and her willingness to defy the norm. The title song is a self-reflection where she underlines her free spirit and perseverance. All the songs on the CD are original and showcase a strong and rebellious Sara Burns. “I want to change the style of songs. I don’t want to be grouped in with others. So many country artists just churn out the same sounding music. That’s not for me,” she said. Indeed Sara’s CD is full of variety and showcases her talents on multiple levels. “Nashville is overrated – it is not what people perceive. Everyone is the same and has the same dreams. It is not a place to become a name in the music industry but rather a place to make connections in the recording studios,” she continued. You hear it all the time, “Summer bodies are made in the winter”. But what does that mean, anyway? What does having a summer body, a beach body, a bikini body mean to you? There is definitely a lifestyle that comes with living on an island. Especially during the long summer days and hot summer nights. Over the last few years my idea of what having a beach body means has changed a great deal. Let me explain. In the past, my younger self thought a beach body was something to be seen. A way to look in shorts or a bikini. A certain shade of tan. A little lift in the back of my calf muscle. Perfectly highlighted hair. Maybe even that certain brand of sunglasses to top off the look. But as I’ve experienced more of life, and been out there living more summers, I know in my heart that a summer body is something that one feels, not something one sees. A summer body is confident to try new things. A beach body is one that has the energy and stamina to jump on a paddleboard for the first time. Or join that tennis league that you’ve been thinking about. A summer body has the energy to chase grandkids around all day and have banana pancakes ready first thing in the morning. A summer body has rested enough to be ready to go all out, 100%, in whatever adventure or opportunity awaits. And, yes, those things are earned year round by building a lifestyle that creates a strong, resilient, rested, and rejuvenated mind and body. So, what can you be doing now to create habits that support having that summer energy all year long? Here are three tips, and three resources to make it happen. 1. Prep food ahead of time. This habit will literally change your life. Carving out 20-30 minutes in the evening to prep food for another day will create a lifestyle centered on living your best life. When you prep food for another time, you are building a safety net for yourself to have something healthy in a moment’s notice. Life is busy and before you know it you are starving. Instead of reaching for fast food or a vending machine snack, you will have a 56

healthy meal or snack ready to go. My favorite prep ahead meal is Banana Pancakes. These make a fantastic grab and go breakfast, and also travel well for a snack in the car if need be. • Set your griddle to medium high heat. • Mash 2 ripe bananas. • Whip 5 eggs in with the bananas. • Gently stir in 2 cups of oatmeal, then let mixture set for about 5 minutes • Cover mixture with cinnamon, the stir in. (Use as much as you’d like!) • Pour ½ cup dollops on to the griddle, and flip when the sides set up. • You can then freeze them and toast them when you are ready for a snack. Top with a tablespoon of almond butter for a truly delicious snack. • (1 serving = 1 pancakes) 2. Go public with your goals. People have mixed feelings about social media and the general lack of privacy associated with Facebook, Instagram, etc. However, I see some really positive benefits to these platforms. They allow you to connect with people instantly and easily. INGREDIENTS Serves: 4 Sautéed Shrimp: 1 pound shrimp uncooked, peeled (tail on) and deveined 3 tbsp. olive oil 1 clove garlic, minced ½ tbsp. blackening seasoning Smoked Gouda Cheese Grits 1 quart chicken stock 1 cup heavy cream 2 cups Freeman’s Mill grits (local stone ground NOT instant) 1/4 pound butter 1 can creamed corn (14-16 ounces) ½ pound shredded smoked Gouda cheese The Gravy 1 Portobello mushroom cap, sliced 8 strips applewood smoked bacon, diced 1 tbsp. minced garlic 1 tbsp. minced shallots 3 tbsp. butter 2 cups chopped fresh spinach 2 cups heavy cream Salt, pepper and hot sauce to taste 60

To Make the Grits: 1. Run the chicken stock into a thick-bottomed saucepan and turn on high until boiling. 2. Mix in the grits and stir like crazy. 3. Reduce to a simmer and allow to cook for 40 minutes, stirring occasionally. Move on to make the gravy and shrimp (below) for the time that the grits are cooking. 4. Add cream if more liquid is needed. 5. Tumble in the butter, add creamed corn. 6. Drizzle in the rest of the cream and stir until everything comes together like a happy family. 7. Shake in the shredded cheese and stir very well until it's all nice and smooth. To Make the Gravy: 1. While your grits cook, bring a large saucepan to medium heat. 2. Add bacon and cook for about 3 minutes. 3. Add garlic and shallots. 4. Saute and add butter. 5. When the butter is melted, and shallots are somewhat opaque, add the mushrooms, scallions and spinach. 6. Saute for 2 minutes. 7. Pour in heavy cream and let simmer while stirring. 8. When reduced by 1/3, add salt and pepper to taste. To Make the Shrimp: 1. Heat the olive oil in a skillet over medium heat. 2. Add garlic and sauté for one minute. 3. Add shrimp, turning to cook evenly, and cook until the shrimp is cooked through and no longer opaque. 4. Sprinkle with blackening seasoning and stir to coat evenly. 5. Remove from heat and set aside until ready to plate. Put it all Together: 1. Warm the shrimp (if it has cooled - be careful to not overcook!) 2. Place heaping mounds of grits into bowls (preferred) or onto plates. 3. Spoon the sauce on top of the grits. 4. Place the desired amount of cooked shrimp on top. 5. Enjoy!

It’s that time again! The Island Recreation Association and Hargray Communications are proud to present the 21st annual Wingfest! Make plans to attend the annual 2-day event at the Shelter Cove Community Park on Friday and Saturday, March 18 and 19. Finger-licking good wings are donated and prepared by local restaurants and home cooks. The festival is recognized as one of the area’s most popular events as it enters its 21st anniversary. To compete for the 2016 Best Wings of Hilton Head award, local restaurants will prepare and serve their best wings to locals and visitors. Of course the chefs break out their very best wing recipes for the event. All proceeds from the event go to the Island Recreation Association Children’s Scholarship Fund, which helps provide financial aid to families in need. The fund ensures that every child is able to participate in the organization’s recreational and child care activities to keep them fit and active. Local restaurants donate over 6,000 pounds of chicken wings and their chefs prepare them in a variety of unique flavors for this event to compete for the Best Wing of Hilton Head award. Professional judging of the best wings and sauces starts at 1:30 p.m. on Saturday, and folks are encouraged to vote for their favorites before 4 p.m. “It’s a huge, all-day event, just nonstop and full throttle,” said Joe Cain, the Island Rec Center’s hard-working
and dedicated special events director. “I fully expect 5,000 people to attend during the two-day event, as we are expanding our marketing regionally.” “Wingfest is one of Hilton Head’s biggest parties, and the community always kicks in to help, according to Hillary Kerr, Marketing and Development Director for the Island Recreation Association. More than 75 volunteers will assist in the festival. “Wingfest has become the traditional kick-off to Hilton Head’s spring, and everyone lends a hand.” At last year’s Wingfest, for the judge’s choice award, 1st place award went to Wild Wing Café of Hilton Head; 2nd place to GW Southern Catering and BBQ, and 3rd place to CocoNutz Sportz Bar. For the people’s choice award, 1st place went to Reilley’s Grill and Bar; 2nd place to CocoNutz Sportz Bar, and 3rd place to Absolute Islander Wing. It seems like a no-brainer now that if you pair outstanding food with an expertly crafted selection of outstanding wines, you’ll wind up with a successful restaurant. But five years ago, when Pour Richard’s opened, the dining scene in Bluffton was a far different place. For the most part, it was not seen as a town welcome to the many epicurean delights of fine dining. “I helped Charlie open May River Grille, and that was Bluffton’s first ‘let’s go dress up and get a $60 bottle of wine’ kind of restaurant,” said Ally Rogers, co-owner of Pour Richard’s. “There was nothing like that. There was casual, but nothing higher end.” Despite the town’s reputation as a haven for casual dining, Rogers and coowner Richard Canestrari knew that there was a market out there for highend cuisine, provided it was given the proper Bluffton spin. “We’re not fine dining; I mean, I have concrete floor here,” said Rogers with a 76

laugh. “I like to say it’s a place for eating foie gras in your flip flops.” Fine dining or not, Pour Richard’s emphasis on fine wines and foodiefriendly dishes was viewed at the time as a gamble. Clearly, it’s a gamble that paid off, as the cozy spot right on the Bluffton Parkway became ground zero for an epicurean revolution in Bluffton. A devoted following quickly developed, proving that dishes that transcended “food” and became “cuisine” could find a home in Bluffton.
Their gamble worked before, so now Rogers and Canestrari are rolling the dice on a complete “refresh” of Pour Richard’s, which will have just been completed by the time this edition of Taste hits the streets. “It’s time to modernize the place a little bit,” laughed Rogers. While the revamp included some paint and some tweaking, this was more than just a renovation. When Pour Richard’s reopened in February, it became more than just the place to enjoy a bottle of wine and an elegant night out. It became the place to grab a bottle of wine and some mouthwatering food for a night in. “We’re cutting dinner hours down to Wednesday through Saturday, but we have these big beautiful deli cases coming in, along with slicers and Panini grills so we can do really good prepared food to go,” said Rogers. “ I like to walk in somewhere where I can grab a bottle of wine off the wall and
go to this beautiful case and say, ‘Give me those stuffed lamb chops, and give me those au gratin potatoes — I want to go home… and eat in my pajamas.” Basing their decision on a string of take-out friendly restaurants they’d visited while traveling the country, plus a surprisingly high amount of to-go orders from their devoted fanbase, Rogers and Canestrari are reinventing Pour Richard’s as Blufftons go-to spot for to-go excellence. The same painstaking attention to the finest ingredients are still there, but now they’re just a little more portable. “I think Bluffton has tried it a couple of times, but I think it’s ready for that again,” said Rogers. “From 10 a.m. on, you can just walk in and get food for dinner or lunch and take it with you.” While this new shift in focus away from dinner won’t necessarily turn Pour Richard’s into a lunch place (Rogers said they weren’t planning on printing separate menus), it will give hungry patrons a few more hours of daylight to
enjoy one of Bluffton’s favorite spots. “If you walk in and you want to have a glass of wine and some charcuterie, or you see Richard is preparing some kind of crazy meatball bolognaise, and you want to sit down and try that, it’s totally an option.” This new interpretation of Pour Richard’s as a haven for high-end cuisine as well as a spot for some quick take-out puts a fresh spin on the
Bluffton mainstay, and that’s exactly what Rogers was hoping for. “I think this is a great way to reaffirm our niche. It’s important to reinvent yourself,” she said.

Spring in Bluffton The spring breeze off the bluff brings a tantalizing scent of Bluffton cuisine. BY BARRY KAUFMAN
There’s no bad time of year to be a foodie in Bluffton. With all due respect to the island’s exemplary restaurant scene, out here on the mainland there’s a fascinating culinary culture being built around the bounty of the river, the abundance of our farms and the brilliance of our chefs. And while it’s on full display all year round, something about the way spring rolls in gently through Bluffton just coaxes out some of its finest flavors. It’s probably no coincidence that this seasonal awakening coincides with the return of the Farmers Market of Bluffton’s spring market. The winter market this past January proved remarkably successful, but it’s hard to beat the atmosphere of this iconic Thursday event in Bluffton’s old town. It’s not just the fresh, local produce, although there’s certainly plenty to be had from small family-run farms all over the Lowcountry. It’s also the opportunity to discover all the flavors of local vendors, from artisanal cheeses to locally raised beef and even locally produced Indian cuisine. And while the Farmers Market provides a weekly opportunity to surround yourself with Bluffton’s delicious bounty, there’s no single greater celebration of Old Town than Mayfest. Called the Bluffton Village Festival by a handful of people, the town’s most iconic event returns on May 7 this year from 10 a.m. to 5 p.m. The area’s finest restaurants and vendors come out in force during Mayfest to flood Calhoun Street with a sampling of the finest food you’ll ever set to your taste buds. And if your foodie flair runs more to the 78

competitive side, there will be a chance to gorge your way to greatness in the annual pie eating contest. Between the Ugly Dog contest, the art vendors and the endless entertainment, Mayfest celebrates Bluffton like no other event. But only one event was built from the ground up to showcase Bluffton’s sophisticated food scene, and that’s Taste of Bluffton. The third annual Taste of Bluffton makes its return to Calhoun Street at this year’s event, held from 11 a.m. to 5 p.m. April 9. For Bluffton restaurants, there’s no bigger stage for whipping up a delicious dish. Admission is free to join the people’s choice judging of more than 50 area restaurants, from seafood to BBQ and beyond. Beyond the chance to prove their mettle in the people’s choice voting, restaurants will compete in the chef’s chop challenge and the waiter’s race, while area fire fighters will crank up the heat for the fire fighter chili cook-off. And spring will soon give way to
summer, where the big foodie events will take the form of the Bluffton Sunset Parties. Serving as a spring preview will be Pizza & Pasta Palooza, which brings together the area’s finest Italianinfluenced restaurants to celebrate the
old country in delicious style on May 20. With stunning river views from Bluffton’s Oyster Factory Park, this event will serve as a succulent appetizer to an even more delicious summer to come for Bluffton’s foodie scene.
