PUBLISHER’S NOTE This summer, it seems, has become a symbol for rebuilding and selfimprovement. As the temperature rises and the economy picks up speed, so too are the winter cobwebs being eagerly dusted away. Local establishments are working on face lifts and moving their business up to the next level to make your experience with them the best it can be. You can look at everything from our resorts to our hotels to our town to see that money and time are being invested in their future and ours.

One of our features in this issue is on Daufuskie Island where major renovations and investments have been going on for months. Both Melrose on the Beach and Bloody Point are making bold statements about their belief in their future with overhauls in the golf courses, grounds, restaurants, and accommodations.

Take a look at our local hotels. The Westin in Port Royal Plantation just finished a 30 million dollar cash infusion with the hopes of becoming a premier international destination for meetings and recreation. The Sonesta Resort, formerly the Crowne Plaza in Shipyard, also just spent 30 million in renovations on the guest rooms, the meetings spaces, and the grounds.. The Beach House, formerly the Holiday Inn Oceanfront, gave facelifts to their rooms, lobby, and Tiki Hut deck and built a new restaurant. The Omni in Palmetto Dunes has been working on phase I of their extensive renovation plan which was scheduled to be complete by this summer. They rebuilt their family pool, and reinvented the poolside bar, hotel entrance, meeting rooms, spa, and exercise facilities. The Marriott Resort & Spa in Palmetto Dunes also made improvements to guest rooms, pool areas, and restaurants.

Sea Pines is another great example of one of our famous Island destinations investing in their future and that of their property owners to the tune of 50 million dollars. They are completely redoing the Plantation Club, planning to build a new Harbour Town Clubhouse, and plans have been approved for a new two story Beach Club.

Mid-Island Hilton Head will soon have a whole new look too. What used to be our enclosed Mall at Shelter Cove is being transformed into an exciting mix of open air shops and restaurants, a Kroger grocery store, and waterfront apartments and park areas. The town of Hilton Head is also busy as they renovated the entrance to and facilities at Coligny Beach, are building bike paths on 278, and did an overhaul at the Bristol Sports arena. Many of our local restaurants are, of course, busy following suit and updating their facilities or moving to newer ones.

This shift into action is both encouraging and inspirational to me after so many tough years and I have even stepped outside of the box to update and modernize. I am proud to say that Taste magazine is now officially on Facebook and Twitter, so please give us a visit, a thumbs-up, and a tweet. Have a great summer and enjoy all we have to offer!

Captain Woody’s An Island Institution Sets Sail

Celebrating 30 years as a local favorite, Captain Woody’s Bar & Grill has a spacious new Hilton Head Island location, expansive outdoor deck bar and a new retail store accompanied by the familiar staff, signature menu and distinctive atmosphere.

“It was just time for a change,” explains owner Russell Anderson. “It’s a new opportunity. A door opened and we took it.”

Spending just a month preparing for the move, the longtime Palmetto Bay Marina restaurant closed on a Saturday evening in early March and reopened the following Tuesday at 6

Taking advantage of the all the freestanding building has to offer, Captain Woody’s hosted their final oyster roast of the season at the new site on March 9.

Established in 1982 by Woody Collins, Russell and his wife Shannon purchased Captain Woody’s in 1999.

Five years ago, the University of Kentucky graduates opened a second restaurant in Bluffton’s Calhoun Street Promenade.

offer the basics necessities of Island life – fresh seafood, cold beer and good conversation. Serving identical menus lunch through dinner, an eclectic crowd of fishermen, golfers, F&B professionals, residents and visitors can be found exchanging tall tales over He Crab soup, Grouper Melt sandwiches, fried oysters, shrimp and clams, Po-Boys, burgers and buckets of beer.

With the move to Target Road, an additional 10 seats were added inside the restaurant and bar area. However, Russell is especially excited about the extra space and entertainment opportunities provided by the new outdoor deck and bar.

Open daily starting at 4 p.m., follow the navigational markers to Bar 6, “Where the Land Meets the Water,” for its special menu, Happy Hour deals and live music featuring Mike Kobar on Saturday.

A sail overhead provides protection from the elements so patrons can chill out with a frozen drink, sample new menu items such as Kentucky Beer Cheese served with pretzels (a.k.a.

Bull Moose Beer Cheese, a staple of Russell’s college years), fish tacos, ultimate nachos or steamed shrimp while catching the game on one of several flat-screen TVs. Dogs on leashes are also welcome outside and the deck bar is a great place to order a pre-dinner drink while waiting for a table.

Upstairs, a new retail store offers a wide selection of logoed Captain Woody’s and Bar 6 T-shirts, visors, backpacks, as well as unique, locallymade merchandise like wine-scented candles.

Proudly serving 100% Wild Caught & Sustainable Seafood, the menu showcases freshly shucked, raw or steamed shrimp, clams and oysters; grilled or blackened saltwater fish; fried seafood platters; Fish & Chips; Shrimp n’ Grits; crab cakes; and Low Country Boil.

Filet mignon is now a permanent addition to the “landfood” portion of the menu, which also includes fried pickles and blackened beef fingers appetizers, a bone-in ribeye entrée, prime rib sandwiches, hamburgers, grilled sirloin salads, chicken melts, Reubens and chili. Both restaurants offer daily lunch and dinner specials and prime rib served with garlic mashed potatoes and the chef’s choice of fresh vegetables is available on Sundays.

One of the Island’s most kid-friendly establishments, the children’s menu comes with crayons so the little ones can color while waiting for their orders of cheese stix, peanut butter and jelly, fried shrimp, grilled cheese, hot dog or chicken fingers.

Another thing that hasn’t changed at Captain Woody’s is the eclectic collection of memorabilia decorating the walls, from autographed UK basketballs and other sports paraphernalia to fishing gear, nautical charts and local restaurant signage. In fact, even the restaurant’s captain chairs were brought over from Palmetto Bay. In addition to winter oyster roasts, other special scheduled events include the Annual Captain Woody’s Fishing Tournament in May and the return of the Golf Tournament this summer.

Crediting the smooth transition to the new location and longtime success of Captain Woody’s to hard work and a strong local following, Russell is quick to

acknowledge the importance of his dedicated employees.

“For the most part, it’s the family that we have in here,” he says. “You’re only as good as your staff and they make Shannon and I look good. They’re the ones who keep the great local crowd coming back and the vacationers coming back.”

“The change is good, it’s really good,” Russell adds. “This was truly a blessing in my eyes. I heard a quote a long time ago, ‘change is the process to survival,’ and that really stuck with me. If you don’t change it up, I think you get left behind.”

Of course, it is also said that the more things change, the more they stay the same.

“We’re the same Captain Woody’s as we were down at the marina – all you’re doing is walking in a different front door. We’re just going to keep it simple.”

Never Eaten Thai?

Ruan Thai Hut Give it a Try at

So the e-mail comes in from David (publisher of Taste of Hilton Head), Ruan Thai Hut is my assignment for the next issue. I’ve passed the location several times on Main Street, but haven’t eaten there in the 16 months I’ve been an island resident. But the deeper darker truth is that I’ve never eaten Thai food in my life — so a mild case of panic sets in. I don’t want to embarrass David by writing a bad piece, so I sheepishly begin to confess via return e-mail. As I’m typing, a thought crosses my mind for a story angle that could work. I’m guessing there are some other folks a little hesitant to try something new and I’m feeling brave today — so I offer myself up.

Ellis at the restaurant. I normally don’t eat while visiting restaurants to interview, but today we’re making an exception. I put myself in his hands and he suggests Chicken Pad Thai, which is medium rice noodles stir-fried with eggs, bean sprouts and green onions topped with crushed peanuts. It comes from the kitchen looking scrumptious with an exotic fragrance. I expected a different flavor due to the seasonings. It was subtle, unique and delicious.

Why hadn’t I tried Thai? I didn’t know anything about it and I wouldn’t have the slightest idea what to order.

The thought of not being able to understand the menu was intimidating.

I asked Ellis why he thought people are hesitant to try Thai food. He said

that some mistakenly believe that all of the food is spicy, explaining that traditional dishes from Thailand are spicier than they make them in the U.S., at Ruan every dish on the menu is created to order. I looked over the menu and saw what he was talking about printed in large type across the bottom, “Mild, medium, hot, very hot.

Please let your server know your spice level.” “Everything on our menu starts mild and then it goes medium, hot or Thai hot. Every once in a while we get the brave person who wants to go above Thai hot,” Ellis said with a

chuckle. “We have some things on the menu that have ingredients that are naturally spicy and those are clearly marked. But nothing is going to melt your face off.”

For those trying Thai food for the first time and looking for basic dishes, Ellis recommends Pad Thai, which is available with chicken, shrimp or pork, Mussaman Curry and any of the Stir Fry dishes. Kids can enjoy Pad Thai, Thai Fried Rice or eat “American” with Chicken Nuggets or Grilled Cheese.

I learned that traditional southern Thailand cuisine features local seafood like shrimp that are also native to the Lowcountry, making our area a great place to sample Thai. “Many of our dishes are as close to original Thai as you can get,” Ellis said. Ruan’s specialties include: Crispy Duck, a crispy roasted duck (in half) dressed with your choice of basil, red curry or honey sauce; Sammy’s Sizzling Beef, a plate of sliced marinated sirloin steak, complemented with sesame, pineapple, tomato, onion, and bell pepper; and Mango Sea Bass, a seared filet of Sea Bass in Ruan’s savory mango sauce.

The Ruan Thai Hut opened on Main Street in September 2011. Locals may remember it as the former Mangiamo’s restaurant, but would not recognize it from the remodeled interior. The bright, modern décor seats 40 and features artistic touches from Thailand, including

a large portrait of the present King and Queen of Thailand. Patio seating for 25 under roof with tropical plants and a large waterfall provide a lush scene for a family or business lunch and the perfect place to enjoy the day at dusk and into the evening. The intimate setting inside and out makes a perfect evening getaway for a date night.

The Ruan Thai Hut is the fourth Thai restaurant owned and operated by the Suphata family. The first location opened in October 2005 on Hilton Head Island at 811 William Hilton Parkway, next to Lava Fitness. Ruan Thai II is in Bluffton at 26 Towne Drive in Belfair Town Village.

Savannah hosts the third restaurant at 17 Broughton Street.

The menus are identical at the two island restaurants and both have an Early Dining Menu, Monday and Tuesday from 4:30 to 7:30 p.m.

The lunch menu offers 15 different entreés all under $10 that are available with vegetables, tofu, chicken, beef, pork or shrimp.

Ruan Thai Hut offers all day Drink Specials on Wednesdays that includes drafts for $2, domestic bottles for $2 and house wines by the glass for $4. Their wine list includes a wide variety of selections from California and around the world.

I thoroughly enjoyed my first experience with Thailand cuisine. I also found Ruan’s menu very detailed and

clear and I’m sure I could have ordered something on my own that I would have enjoyed. I believe those who have sampled other world cuisines and who enjoy Chinese and Japanese food will find pleasant similarities and contrasts to Thai food. Seafood lovers craving a unique and differing approach to local catch will also enjoy Ruan’s exotic fare. I also recommend Ruan to those looking for a temporary departure from island life without having to cruise over the bridge. I do enjoy seafood, so I believe I’ll try one of their intriguing fish dishes next time.

Starting out as a prep cook at Charley’s Crab in Troy, Michigan, Eric Seaglund worked his way up there over the years to Chef D’Cuisine. “I had a passion for cooking in those early days as well, and was told I had a natural talent, so I decided to pursue a culinary degree.”

With his culinary degree and work experience, Eric moved to Hilton Head when he was offered a promotion to Executive Chef of the former Charley’s Crab on Hilton Head Island. “I jumped at the chance to get out of the cold and into the sun,” he said. “It was a great opportunity for me to do what I do best, and I have a huge passion for the Low Country style of cooking.” In 2010, Eric was part of the concept change when Charley’s Crab became the Chart House on Hilton Head, and he is now Executive Chef.

Eric’s favorite dishes to prepare are “anything to do with seafood, especially Local!” “My favorite dishes consist of pairing Low Country ingredients such as grits, green tomatoes, local shrimp, or local oysters with the main dish,” he added. When you visit the Chart House, Eric’s personal creations will always have a CH next to the menu item.

lucky to be married to an Executive Chef. Her reply is always the same, “I’m the chef at home because my husband is always working.” When Eric has time to cook at home for his family, his specialty is salmon with several of his

favorite side dishes. “It’s a treat for the family when I cook! Our three sons particularly like when I grill burgers and add some cheddar and bacon.”

When he’s not working, Eric enjoys hanging out with his family. “We take trips when the restaurant is slow and the boys are out of school.” He loves to play golf and wishes he had the time to play more often. “My favorite times with my family are spent at the beach or at the pool – just to watch the boys have fun and to relax,” Eric shared.

The best thing about being a chef to Eric is making people happy and having guests return. “I love creating dishes for guests and having them ask me to come to their table so that they can tell me they have had an incredible dining experience.”

Eric sees his job as making people happy so that they enjoy everything and want to return. He also loves to teach at his monthly cooking classes.

“My guests have fun, and so do I!” Eric said he loves living on Hilton Head because “it is a place like no other when it comes to beauty and scenery.

Chance Dalton of Hudson’s Seafood House on the Docks

Born in Ohio, Chance Dalton moved to Hilton Head with his family when he was 7 years old. While a student at Hilton Head High School, he exceled in wrestling and cross country.

Dalton was ambitious and was thrilled to get a job working with Hudson’s at the young age of 15. As a valued employee who is well-liked by his co-workers as well as guests, he has climbed the ladder there for the last 7 years.

“My first job was driving a golf cart and taking restaurant guests from the parking lot to the restaurant,” Dalton said.

After several seasons, he began bussing tables and later was promoted to food runner. When he turned 21, he was promoted to bar back, and was later promoted to the position of bartender and server.

Dalton credits his outgoing personality to his experience at the restaurant. “I used to be shy when I was in high school, but this business has made me much more outgoing,” he said. While spending some time talking with Dalton at the restaurant and seeing him interact with guests and coworkers, it was obvious that he truly cares about people. “I never say no – no matter how busy we are or what people ask, I find a way to make sure that customers have a great experience when they are here.”

Some of the regulars know him by name and sit at the bar or in his section so he can wait on them. What makes Dalton happy about his job? “It makes my day when customers come in and say, ‘We’re on the island for 5 days and we’ve been here at Hudson’s for the past 4!’” He hears that a lot from golfers.

One reason that Dalton attracts golfers to return to sit in his section or at the bar is in addition to receiving great service, they can talk with him about golf. He’s a golfer himself, and loves to play the game when he has free time.

Also a college student, free time is somewhat rare, but Dalton says that working at Hudson’s doesn’t feel like work.

“It’s like a second family when I’m working.”

When asked what it takes to be successful in this business, Dalton replied modestly, “You have to be friendly and you have to smile, and you have to care.” And Chance Dalton is and does all of that!

ICED TEA Sweet or Unsweet

Summer demands drinks to linger over. The hot sun is far more bearable with a tall iced drink in hand, and there's nothing better to sip on a steamy afternoon than sweet tea. A southern favorite, sweet tea is generally brewed with enough sugar to give even Red Bull addicts ADHD. Most restaurants in the south, including fast-food and other national chains, offer a customer the choice of sweet tea or unsweet iced tea. It is a signature drink of the region to the point where the southern use of the word "tea" is largely used to refer specifically to cold sweet tea and not to hot or plain varieties. In non-southern states, many restaurants don’t offer sweet tea.

Sweet tea is a style of iced tea commonly consumed in the southern United States. Sweet tea is made by adding sugar to black tea brewing in hot water. The tea is served ice-cold and plain but may also be flavored - traditionally with raspberry, lemon, or mint.

In 2003, supposedly as an April Fool's joke, the Georgia House introduced a bill making it a "misdemeanor of a high and aggravated nature" to sell iced tea in a restaurant that did not also offer sweet iced tea on the menu. The bill never went to a vote.

In the early 1900s, sweet tea was an item of luxury because of the expensive nature of tea, ice, and sugar. Ice was highly valued since it had to be shipped from afar at a time when access to cool drinking water was already a luxury. In modern times, iced tea can be made in large quantities quickly and inexpensively.

The oldest known recipe for sweet ice tea was published in 1879 in a community cookbook called Housekeeping in Old Virginia by Marion Cabell Tyree, who was born in Texas. The recipe called for green tea since most sweet tea consumed during this period was green tea. However, during World War II, the major sources of green tea were cut off from the United States, leaving them with tea almost exclusively from British-controlled India, which produced black tea. Americans came out of the war drinking predominantly black tea. Sweet tea was once consumed as a punch mixed with hard liquor with flavorings of mint and cream, with mint julep being a close version of the punch drink with its similar ingredients.

Not surprisingly, like many American traditions iced tea has now been improved by the addition of alcohol - sweet tea vodka hitting it big on the cocktail scene. Sweet tea vodka is a fairly recent addition to the liquor lineup.

While still not quite as sweet as the real deal, the Arnold Palmer – a non-alcoholic drink consisting of half lemonade and half iced tea – hasn’t been the same since. The liquor-based version is affectionately known as a John Daly and replaces the iced tea with sweet tea vodka, of which there now are several varieties available.

The first sweet tea vodka to hit the market and still one of the most popular is Firefly Sweet Tea Vodka, distilled in Charleston, S.C. and flavored with tea leaves grown just five miles from the distillery. Firefly tastes exactly like a perfect glass of iced tea should taste. It's refreshing and sweet, and goes down easy. Of course, this is 70-proof iced tea, so gulping it like Nestea could yield some fairly interesting results. The clean flavor is good in a number of cocktails, according to bartenders, but the best way to drink it is in a tall glass of ice filled halfway with Firefly and topped off with water.

Sweet, unsweet or in a cocktail – it’s a southern tradition.

Sweet Tea with Vodka and Lemonade This is a perfect summertime cocktail. Because it's a combination of iced tea, lemonade, and vodka, we've dubbed it the tipsy Arnold Palmer.

Makes 8 Ingredients • *2 large tea bags for iced tea • ½ cup boiling water • 8 fresh mint sprigs • 4 cups lemonade made from frozen concentrate • *½ cup vodka • Ice cubes • 8 lemon slices *To streamline this recipe, you can use one cup Sweet Tea Vodka from South Carolina's Firefly Distillery in place of the tea and the vodka.

Preparation • Place tea bags in medium bowl. Add 1/2 cup boiling water. Let steep 4 minutes. Discard tea bags. Place mint sprigs in large pitcher; mash with muddler or handle of wooden spoon until slightly bruised. Pour in tea, lemonade, and vodka. Cover and chill.

• Fill 8 highball glasses with ice. Divide sweet tea among glasses. Garnish with lemon slices.

ORANGE GLAZED MAHI MAHI WITH FRESH PINEAPPLE SALSA & COCONUT CREAM Courtesty of A Lowcountry Backyard INGREDIENTS Fresh Mahi Mahi 2 Peeled and seeded oranges or 1 cup fresh squeezed orange juice 1/2 cup olive oil 1/2 cup brown sugar 1/2 fresh pineapple, peeled, cored and diced 1 fresh tomato, diced 1/4 red onion, peeled and diced 1 tablespoon minced fresh cilantro 1 fresh lime 1 finely diced jalepeno if you like a little heat 1 Can sweetened coconut Milk 1 8 oz. container of heavy cream FOR THE ORANGE GLAZE 1. Combine the fresh oranges (or 1 cup orange juice), the olive oil and brown sugar in a food processor.

2. Using the whipping blade (or chopping blade), mix ingredients until it emulsifies into a salad dressing consistency.

FOR THE PINEAPPLE SALSA 1. In a large mixing bowl, combine the diced pineapple, diced tomato, diced onion, cilantro, jalepeno, and juice of the lime.

2. Gently toss to combine.

3. Season with salt and pepper to your taste.

FOR THE COCONUT CREAM 1. In a food processor using the whipping blade (or chopping blade), whip the heavy cream until it peaks into whipped cream.

2. While the food processor is still running with the heavy cream inside, slowly add approximately 1 cup of the coconut milk until a thick coconut cream is formed.

TO PREPARE YOUR DISH 1. In a skillet, add about a tablespoon of olive oil and heat skillet to medium.

2. Season both sides of the Mahi Mahi with salt and pepper.

3. Cook on both sides until fish is cooked to your liking (you can cut into the middle to see if it is done enough).

4. Spoon on your orange glaze, turn fish over in the pan and spoon glaze on the other side.

5. Plate your fish and top it with the pineapple salsa. Finish the top of the fish with a drizzle of coconut cream. Enjoy!

INGREDENTS 1 Tablespoon vegetable oil 1 medium size onion finely diced Salt and pepper ¼ pound of good smoked bacon diced into small pieces 3 ounces Sambuca liquor 1 pound of fresh spinach washed and stems removed 4 ounces gruyere cheese cut into small cubes 12 fresh local oysters in the shell shucked 14 ounces béarnaise sauce 42

METHOD Heat the oil in a large sauté pan over maximum setting and add the onions. Season with salt and pepper and stir often until onions turn slightly brown and soft. Add the bacon and reduce the heat to medium. Continue cooking until bacon starts to render about 5-6 minutes. Deglaze the pan with Sambuca and ignite to burn off the alcohol, when the flames die down turn off the heat and drain off the fat in a strainer. Put a pot of water on to boil and cook the spinach for about 2-3 minutes. Drain and chop the spinach. Put onion and bacon mixture in mixing bowl and add-in the chopped spinach and gruyere cheese mix well and cover each oyster with spinach mixture. Bake in oven at 400 degrees for 8-10 minutes, remove from oven and top each oyster with béarnaise sauce.

Whether you are here on vacation or enjoy life as a local, the very best way to spoil yourself is to make choices that give you energy and allow you to feel great from sun up to sun down.

Here are a few simple things that can help you stay on track with your weight and exercise goals: • Success starts with the sunrise.

Your mother was right – breakfast is the most important meal of the day. But, do you know why? Your body has been fasting all night and will not start metabolizing until you eat something.

Starting your day with a plate full of protein, fat, and few clean carbs will not only get your metabolism started, but will also give you consistent energy throughout the day. So, what does that look like? Consider an egg white omelet chock full of vegetables, some wheat toast, and a handful of berries.

Throw some avocado slices or a ½ cup of Greek yogurt on the side and you are set.

• Hydrate, hydrate, hydrate! Water in general is the answer to a lot of health issues. The more water you drink, the more full you will feel throughout the day which can help you avoid snacking. If you imbibe, you will want to get a refill on your water for every alcoholic beverage you order.

You will thank yourself in the morning! A rule of thumb when choosing which adult beverage to indulge in: stick with the clear. Dark liquors have more sugars and can wreck your diet along with your next morning. (My personal favorite reason to stay hydrated? Water helps to rid your body of toxins making your skin look tighter and brighter. Who doesn’t want that?)

• Choose grilled or blackened from the menu.

We are so lucky to live in or visit this absolute chef mecca! Take advantage of the amazing cuisine and avoid the extra empty carbs of fried food. For example, fish is high in protein, omega 3’s, and the good fat. But don’t fool yourself: as soon as it’s fried all the benefits are outweighed by the bad fats.

• Plan your indulgences. This goes for every day life in addition to vacation time. If you have your heart set on the molten chocolate lava cake a la mode, you’ll need to save room for that.

Literally. That sick feeling you get after over-indulging is a physiological insulin response where your body is frantically storing fat instead of making it available for energy. Even the healthiest of meals can be undone by going overboard on the basket of free bread. Plan where you want to splurge, and then savor every bite.

Whether you are here for a few days, a few months, or for the rest of your life, we have access to amazing exercise and food options. So, get out there, take care of yourself, and enjoy the best of this island!

Daufuskie Island A Step Back in Time

As the wheels of progress and development constantly change the landscape of our lives, it is not an easy task in this day and age to find a piece of paradise and a well preserved part of our past. Daufuskie Island, Hilton Head’s quiet neighbor to the south, somehow has managed to defy the odds in the process of preserving its history and 48

ambience. To visit Daufuskie is to take a step back in time to a world with a slow pace and a carefree attitude.

Perhaps part of Daufuskie’s innocence and charm is due to the fact that there are no wheels that will get you there. There is no causeway, no bridge, no man-made link to the mainland. Only by taking a journey by boat can you

unlock and unbury the Island’s lore, secrets, and treasures.

What exactly will you find when you visit this small Island that measures only 8 square miles? Try and picture a day on a pristine piece of land that houses history and serenity. Visualize dirt roads and golf carts, not highways and 18wheelers. Imagine quaint cottages and

old schoolhouses and churches, not high rises and shopping malls. There is plenty of sun and sand with 3 miles of mostly uninhabited beach. There are world class golf courses and tennis facilities that sport sweeping views of the ocean and sound. If you beach comb for a shark’s tooth, you may find an Indian arrowhead instead. If you crave history, you will be like a kid in a

the past several decades, it has preserved much of the rich history and Gullah traditions that were once its backbone. Over the centuries, the Island has been home to Indians, European explorers, Union soldiers, and freed slaves. Because of its Gullah and Civil War history, Daufuskie was named as an historic district on the National Register of Historic Places.

candy shop. Just want to eat devilled crabs and oysters and sip cocktails all day long while gazing out to sea? That won’t be a problem either. Oh yea… and don’t be in a hurry. With a posted speed limit of 23 mph, you will not have much of a choice.

Daufuskie’s name is derived from the Creek Indians and means “sharp feather”. It is one of approximately 100 Sea Islands which dot the Atlantic Coast from northern Florida up through South Carolina. These southern Sea Islands have many stories to tell. African slaves were imported to them in the 19th century as laborers to work the cotton, rice and indigo plantations. The slaves developed the notable and distinct Gullah culture and language which became pervasive on Daufuskie. Most of the Sea Islands have now fallen victim to progress and profit and are known for resort, recreational, and residential development. While Daufuskie has also fallen prey to some development over

There are many options for transportation to the Island from Hilton Head marinas. Some services have set schedules while others will shuttle you over and cater to your time frame and destination. All require reservations and I suggest giving them plenty of advance notice, especially during tourist season.

Once you get to Daufuskie, you can stay for a day or a lifetime and you can choose recreation, relaxation, or a pursuit of the past.

Long time local, Wick Skurry, runs the public ferry service to Daufuskie out of Broad Creek Marina. A typical visit to Daufuskie for day-trippers that voyage over on Calibogue Cruises is as follows: Their ferry will leave Broad Creek Marina mid-morning and upon arrival at Daufuskie’s Freeport Marina, the passengers will be treated to a lavish lowcounty buffet prepared by Daufuskie native, Ernestine Smith. “She fixes her homemade fried chicken, pork chops, and other typical Gullah fare – all

unhealthy and all so good,” described Wick. Most visitors will then pick up a golf cart and design their own destiny.

An Island map directs visitors to treasures: human, historic, artistic, and edible. Paved and dirt roads will wind under moss draped Live Oaks and traverse paths once trodden by slaves, farmers, fishermen, and bootleggers.

One of your first stops should be the Daufuskie Island Historical Foundation’s Billie Burn Museum to absorb the history of the Island and observe centuries old mementoes and archives. The museum displays old photographs, Civil War paraphernalia, and even a stuffed 11 ½ foot alligator.

Treasures also include a copy of the original land grant from England’s King George II to Dave and Francis Mongin in 1735. David “Money” Mongin was a famous pirate hunter. As a result of reducing the pirate scourge, King George granted him control of Daufuskie. Legend has it that both Daufuskie and Hilton Head are home to untold buried treasures.

Your map will show that the Island is split into parts. There is the private Haig Point Club, the newly purchased and renovated resorts of Melrose on the Beach and Bloody Point, and the unincorporated western part of the Island which is where most of the history, including original Gullah homes built by freed slaves, resides. You should stop by Daufuskie’s oldest building, the First Union African Baptist Church, the two historic lighthouses built in the 1800’s, the tabby ruins, and ancient cemeteries.

There are tiny old schoolhouses to visit as depicted in Pat Conroy’s, “The Water is Wide”. One of these has been restored and added as an annex to the Billie Burn Museum to house the Gullah history, culture, and library. There are artisans that you can visit on your tour as well as the Bald Eagle’s Nest, Gullah church, oyster houses, or, of course, the beach. There are historic walking trails too. If you prefer to bypass the history and enjoy a day of sports and recreation, there is golf, tennis, equestrian, kayak and eco-tours, ATASTEOFHILTONHEAD.COM

boating, and fishing. When you get hungry, there is a choice of places to rest, recharge, and have a memorable meal.

Dining options on Daufuskie all boast a great location and offer everything from comfort food to southern and Gullah dishes to gourmet fare. Aside from restaurants at the resorts, there are some other options for visitors. One popular stop is long-time Daufuskie staple of Marshside Mama’s. A visit to Daufuskie would not be complete without a cocktail or meal at Marshside Mama’s, owned and operated by Beth Shipman for 16 years. Located at the public dock, Marshside Mama’s is a great destination for food, drink, and fun. The building that houses Marshside Mama’s was originally built for the native ladies to make their devilled crab before selling their delicacies to boaters from Hilton Head and Savannah. The famous Daufuskie Devilled Crab recipe has been passed down from generation to generation. Marshside Mama’s menu “changes with the tides”. Beth posts her fare on a blackboard every day and while the favorites like Low Country Gumbo, Beth’s own version of Shrimp-nGrits, and Ribs never change, the seafood special will vary according to what is in season. They have live music on weekends and Sundays all summer long and are a favorite stop for local

boat owners from Hilton Head and Savannah and overnighters on the Island.

Right next to the Freeport Marina where the public ferry docks is the Old Daufuskie Crab Company. The Crab Company has an open air set-up overlooking the water complete with picnic tables and an octagonal gazebo and bar. They serve lunch and dinner and have live music on the weekends.

The menu consists of fresh seafood caught right out of the river, Crab Boil, and of course the original Daufuskie Devilled Crab is made on site. When I asked Wick if he wanted to share the devilled crab recipe, he told me that there are only 3 native women who still know it, one of whom is like a mother to him, and they would kill him sooner than they would share the secret. If you need to jump charge your energy level, be sure to order a ‘Scrap Iron’.

The story behind the Scrap Iron is worthy of note. Back in the 1940’s there were thousands of descendants of freed

slaves living on Daufuskie. When the oyster industry died due to pollution from the Savannah River, there was only one way to make a living and that was by bootlegging. So the locals would make vats of moonshine, roll them down onto their boats, and take them over to Savannah to sell. Before the voyage, the natives put heaps of scrap iron on top of the barrels so that if they were questioned by officials as to the purpose of their voyage, they just claimed that they were going to sell their scrap iron to feed their families. Scrap Iron thus became synonymous with some mighty strong hooch on Daufuskie and is now the name for a power-packed cocktail.

Resort development found Daufuskie in the 1980’s when ocean front tracts were bought up with fervor.

Most of the developers went belly up, which begs the question, “Why?” Well, there are two theories here according to Wick. The more accepted one is that the great truth, as author Pat Conroy describes it, is that “The Water is wide”.

The cost of doing business on Daufuskie is very high because of transportation logistics. The second theory has to do with a “root” or hex put on the Island by Beaufort’s infamous Dr. Buzzard. If you have read or seen the movie, Midnight in the Garden of Good and Evil, you are familiar with the character of Minerva who was the voodoo priestess and ATASTEOFHILTONHEAD.COM

whose character was based on the real life wife of Dr. Buzzard.

Both Buzzards were African witch doctors living in Beaufort. The “root” or curse that Dr. Buzzard was said to have placed was that no white man would ever make money on Daufuskie Island.

Either way, there are some new developers emerging on the Daufuskie scene with great ambitions and visions for the future. They are working hard to turn their new resorts into the ultimate golfing and group getaways.

One of the new developments is Melrose on the Beach.

Jim Schead and partner JT Bramelet purchased the old Melrose property and are in the process of renovating the whole resort.

“We are excited about the changes that we are making and the future of the resort,” said Jim. One of the original eleven plantations on Daufuskie, Melrose was famous for its Sea Island cotton and thriving social life in the 1800’s. The plantation bears the name of a Scottish rose brought to the island by Captain Mongin. The main house, known as the Melrose Mansion, was surrounded by lavish rose gardens. Today, Melrose on the Beach encompasses over 700 acres that it graciously shares with nesting bald eagles and loggerhead turtles.

“It is a completely different atmosphere here now,” Jim enthused. For those who want to book a room, they have 2 to 4 bedroom oceanfront and ocean-view cottages. Their 52 room oceanfront inn, formerly the Melrose Mansion, is having a complete facelift and is scheduled to open in the spring of 2014. Weekly rentals include discounts on golf as well as access to the rest of their amenities for free. If you just want to visit them for the day, all of their amenities are available for a fee.

Jim expressed that the golf course looks great and the pool, grounds, beach club, restaurant, and outdoor tiki hut/bar were all being totally redone and would be up and running this summer.

Melrose has always been synonymous with great golf. Their Jack Nicklaus designed course was given 4 ½ stars by Golf Digest and was rated one of the top 75 in the nation. Other amenities at Melrose on the Beach include an equestrian center that offers carriage rides, pony rides, and beach and trail rides, 2 lighted tennis courts, horseshoe pits, a playground, and bocce ball. Their pool and restaurant are just 100 yards from the ocean and boast sweeping views. They serve a casual lunch poolside at the Canoe Club with plenty of options for sandwiches and salads. They also offer a formal dinner option with a full menu that always features a fresh seafood entrée. There is both indoor and outdoor seating for the dinner crowd. Melrose on the Beach provides water taxi service from Hilton Head and Savannah and also provides dock rentals for people with their own boats. They have new vehicles for land transportation and golf carts available to rent.

Bloody Point is another recently purchased waterfront tract that is being infused with cash and renovations. Bloody Point earned its name from the 18th century skirmishes that occurred there. The property is now owned by the McCarthy family, the largest “brick and mortar florist” in the nation. The McCarthy’s 52

have been visitors to Daufuskie for 25 years and when they heard that the Bloody Point property was going into a bankruptcy sale, they immediately snatched it up, sight unseen, with their love for the Island as impetus. “We had no idea how overgrown the golf course had become or the work the clubhouse needed,” stated Kevin McCarthy. Two years of hard work and planning later, the Bloody Point Golf Course will be in high gear this summer after being completely revamped by the Davis Love Group. The pool and tennis courts are also up and running now and they have spruced up their accommodations for overnighters.

“We have a direction and a goal to become a destination spot,” said Kevin.

“We are a family that has loved this Island for years and know there is something special here. We care about the future of this Island and are proud to be a part of that future.” Bloody Point, now with its own dock, has ferry service from Savannah and can arrange transportation from Hilton Head. They have hired Michael DeMarco as the new chef for the Eagle’s Nest Restaurant

which is nestled in their clubhouse. Michael cooks up both light and filling fare. His specialties include fresh scallops and gouda grits and a large variation of tasty salmon dishes. “We want our restaurant to become like ‘Cheers’ on the Island – somewhere that ‘everybody knows your name’, someplace casual, comfortable, and fun, yet professional and with exceptional food.” Kevin said they will run specials like Monday pizza night that you won’t find elsewhere on the Island. “We are trying to do things differently than what was done in the past.”

Bloody Point accommodations include a 7 bedroom cottage with spacious and colorful rooms and a refurbished 3 bedroom condo on the ocean. Their rates are seasonal and a minimum 2 night stay is required.

One development on Daufuskie that has defied Dr. Buzzard’s root and withstood the test of time is the private community of Haig Point. Known as Haig’s Point in plantation days, it now consists of lavish private homes and upscale amenities including golf, tennis, and equestrian facilities. On site are still extensive tabby ruins and a Gullah cemetery. As you boat over to Daufuskie from Hilton Head, you will pass by the historic Haig Point Lighthouse, built in 1873. Although still listed as an “aid to navigation”, the lighthouse is now privately owned and has been turned into a 2 bedroom guest house.

If you want to experience Daufuskie in more than a day, you can stay at one of the resorts or you can rent a cottage through Freeport Marina. For more and varied options on places to stay, you can contact Island Accommodations. They can set you up in a home, cottage or villa ranging in size from 2 bedrooms to 5 and in price. Summer rentals are generally by the week and they accommodate lots of families, groups, and reunions. Their Sandy Lane villas at Bloody Point are all adjacent for large groups and there is a private pool on-site.

According to owner Krissy Roberts, even though they do mostly weekly rentals in the summer, if something is available for an overnight last minute, they will accommodate shorter stays. She says that do lots of weddings and college and family reunions. Island Accommodations provides renters with a golf cart and a full list of suggested activities.

It is hard to believe that this little Island has so much going on, and it all goes on quietly and with great aplomb. Daufuskie is one of those hard to find black pearls. It is worth the effort to make the journey and experience this unique and removed lifestyle.

Kevin McCarthy describes his view of the Island: “The thing with Daufuskie is that there have always been two crowds. One cares about the golf courses going full speed ahead and the second is a destination crowd that just wants to get away. The cycles have stayed the same. The Island is on the ‘up’ now and is going in the right direction. It has been a big and lasting journey and I think people are more enthusiastic than ever about the future of the Island.”

And as Wick sees it, “Daufuskie does really well and it does it on its own terms.”

The Port O’ Johns Rockin’ the Docks on Daufuskie

Whether they are playing at Marshside Mama’s on Daufuskie Island or at the Freeport Marina down the road, the Port O’ Johns lure a rockin’ crowd that fills the dock slips, the tables, and definitely the bar. They play blues, classic rock, and modern country and their mix has been described as kick-ass, beer drinking, partying music!

Their fans come by boat and by ferry, from near and from far. But what sets these fans apart, is that they can’t come by foot or by car which is true testimony to the talent of the Port O’ Johns who they come to hear.

John Sturm, who plays the mandolin and blues harmonica in the band, describes them as definitely a “bar and party band”. Don’t expect touristy music. They play artists such as Zack Brown, The Allman Brothers, Muddy Waters, Junior Wells, Eddie

Money, and The Rolling Stones. Along with Sturm, band members include lead guitarist and singer John O’Gorman of Deas Guys and solo performing fame and co-owner of Okatie Ale house and Okatie Liquor, drummer Dave McKinley, and bass artist Mark Weikinger, aka Krash. When asked about the band’s name, John Sturm said that it started as a joke and just kind of stuck as the band consists of 2 and sometimes 3 Johns.

Playing on an Island only reachable by boat has its plusses and, well, let’s call them difficulties. “It’s an escape over there,” described Sturm.

“It’s the closest you can come to a pure getaway like a Key West but it’s more than that. It’s a little bit of extra all the way around: extra unique and extra work to get there and play.” Sturm played every Friday and Saturday at

Marshside Mama’s for 3 years, and is still making the trek regularly so he obviously must see the plusses as outweighing the difficulties like getting over there and transporting all of their equipment to and fro.

The Port O’ Johns started playing together 4 years ago doing open mic performances at a bar in Bluffton. They continue to perform their open mic acts at Cork’s in Bluffton every tuesday from 8 - 11 p.m., and they play at weddings, parties, and festivals. At press time, they planned on performances at the Daufuskie Crab Company at Freeport Marina on June 1st, June 8th, June 29th, and July 20th.

Beer, brewski, liquid courage whatever you may call it, beer is the most popular alcoholic beverage in the US today, according to the Brewers Association’s statistics. A light American lager no longer satisfies every taste.

And while the big players have seen consistent declines in their billion-dollar sales, regional craft breweries continue

to attract a growing fan base of quality, small-batch brews.

As defined by the Brewers Association, an organization of more than 1700 US brewery members, craft beer is beer not brewed by one of the big, "mega-brewery" corporations. A brewer of craft beer produces 6 million or fewer barrels of beer annually. Craft

brewers often use traditional methods to create malts and incorporate unique additions to enhance flavors. There is no longer a lack of diversity in the types of beer sold in our stores and restaurants.

be a part of the craft beer explosion on Hilton Head. Even though early on it was a tough sale, we are glad to have been early adopters. It gave us the reputation as the home for craft beer on Hilton Head and in Bluffton.”

Although for some beer lovers, there will always be a certain comfortable familiarity with macrobrews - like a Big Mac, you know what you’ll get – with craft beer, you get to taste something new and exciting. Craft beer is not for everyone, and you must be willing to taste a beer that might be your new favorite, or one you won’t try again.

And just because beer is or isn't craft beer doesn't mean that the beer is good or not.

Remember back in the nineties when beer brewed by small, independent brewers was called microbrew? It was a word that perfectly described the new kind of breweries that were gaining popularity then. Everyone knew that they could expect innovative and exciting beer if it had the microbrew name attached to it. The word “microbrew” is actually a legal term that describes the limited number of barrels of beer that can be brewed annually. Former microbreweries like the Boston Beer Company (Sam Adams) and Sierra Nevada with national distribution and plenty of brand recognition simply outgrew this description and stopped being “micro.” Then another term arose to replace microbrew – craft beer.

Besides the flavor, another reason for the recent popularity of craft beer is the higher alcohol content. Until April 2007, South Carolina capped the alcohol content in beer at 5 percent, so beer sold or served was not nearly as strong as today’s craft beer. With the lifting of that restriction, the craft beer business has boomed.

According to the Brewers Association, there are currently close to 2,000 craft breweries in operation across the nation, with an additional 900 in the planning stages, making great beer a more accessible treat for the 95 million beer lovers in the US. Americans have developed a discriminating palate, so if it's not world class quality, it won't survive.

loyal follower for life.” At his brewery, their concentration is on distribution; however, they have recently opened a tasting room where customers can sample and purchase beer to take home. They brew three core beers that are always available: American Pale Ale, India Pale Ale, and Coastal Wit. In addition they offer a seasonal beer every quarter. For summer, their seasonal beer is English Dry Cider, which Luman said is “crisp and refreshing, like the champagne of beer.”

Mellow Mushroom offers approximately 100 kinds of craft beer at their restaurants – some draft and some bottled. Owner John Boyce confirmed

that craft beer represents about 65 per cent of all beer sales in his Mellow Mushroom restaurants.

Seasonal Beers are some of the gems of the craft brewing world. While some are brewed annually, others are produced as one-time releases. These beers are often unique and showcase a brewer’s creativity and passion. They utilize ingredients and highlight flavors, such as pumpkin and chili beers. Some pumpkin flavor is present in most pumpkin ales, but most of the flavor comes from pumpkin pie spices added late in the boil. Pumpkin beer is popular in the fall season. In the winter months, one popular seasonal beer is chili beer, which is made by adding peppers to the mash or fermenter.

In the spring and summer months, seasonal beers are typically fruit beers, which can vary widely depending on the whim of the brewer. Raspberries, cherries, apricots and blueberries are the most commonly-used fruits added to beer, and many variations are

possible. Honey beers have honey added, which creates a dry, crisp beer with honey aromas – a favorite among people who live in the south, and especially in the warmer months.

Barrel-aged beers are typically barley wines or strong stouts aged for a few months or longer in oak barrels or used bourbon barrels. While aging, the beers pick up delicious vanilla and toasted coconut aromas, which are popular in tropical islands any time of the year.

The number of craft brewers has gone from 8 in 1980, to 537 in 1994, to 1600 in 2010, to 2,000 today, according to the Brewers Association. The majority of Americans live within 10 miles of a brewery. Truly craft brewers and craft beer drinkers are participants in a revolution. There has never been a better time or place to drink beer than in the US right now.
